he recent performance of the Scream Big Band in the Amphitheatre at Noosa Botanic Gardens was not only a visual and musical delight - but the enthralled and appreciative audience also added to the sense of excitement. he Gympie Music Muster has announced country music golden girl Sara Storer as this year’s Ambassador for the Muster’s 'Buy a Bale' Charity helping drought affected farmers. The announcement follows Storer’s impressive comeback at the Golden Guitar Awards earlier this year, winning three awards including Female Artist of the Year and Album of the Year, after a six year hiatus to have a family and write and record her hit album, Lovegrass. 'Buy a Bale' couldn’t have picked a better ambassador than Storer, who having grown up in the Mallee region in rural Victoria, the same region as collaborator John Williamson, knows all too well the trials and tribulations of living on the land. Since January, 'Buy a Bale' has distributed 80,000 high quality hay bales across QLD and NSW - providing stock feed to approximately 700 farmers, benefiting both the recipients and the farmers who sell their hay to the charity. Kent Morris, a farmer from Mitchell in Queensland, was so moved by Buy a Bale’s contributions to his farm earlier this year that he penned ‘The Day the Saints Came’, a touching poem describing his plight:

On this occasion, a large crowd of more than 450 toetapping music lovers, warmly applauded the 17 members of the Band, who volunteered their performance to assist in the raising of funds for improved technical facilities at the Amphitheatre. SCREAM vocalists Alan Winter and Tanya McFadyen delighted the crowd with their renditions of swing, jazz and originals, whilst the Big Band also featured the talents of their solo musicians. As the Friends of Noosa Botanic Gardens’ inaugural ‘Music in the Gardens’ event – the afternoon not only showcased the stunning Amphitheatre setting on the shores of beautiful Lake Macdonald, but made visitors aware that the gardens, as well as being a botanic treasure – are also a Noosa community performance venue with great potential to attract a variety of events. It was a lot of fun... a really brassy and reedy onslaught. And yet, words still seem to fall short in describing this so enjoyable performance.‘Music in the Gardens’ will be back later in the year, so if you couldn’t get there this time make sure you come to the next event. You won't be disappointed!

It’s not about the hay, or the trucks loaded with feed, But standing by a farmer, in his hour of need. For the gift is more than stockfeed, the gift you give is hope, To stand behind a farmer, when he needs help to cope. When the grass it has returned, to the verdant western plains, When the stock they are content, as they forage and they graze. When the farmer thinks with kindness, back to that grateful day, When in his pit of deep despair, the saints had come with hay. A

t 32 years of age Catherine Alcorn is a late bloomer, Australian audiences wonder why she didn’t hit the headlines earlier but she was doing other things until she hit the Sydney scene with The Divine Miss Bette four years ago. This year sees Catherine launch new shows and take on the roles of Noosa Long Weekend Inaugural Ambassador and the Ballarat Cabaret Festival Ambassador.

Since producing Sydney’s Third Annual Slide Lounge Cabaret Festival in May, Catherine continues to perform in the critically acclaimed stage show Go Your Own Way:The Story of Christine McVie. She teamed with renowned director Paul Capsis to create her new show Nothing But A Song and her performance wowed audiences at the Adelaide Cabaret Festival world premiere in June. Catherine grew up in the Sydney suburb of St Ives. She moved to Wagga Wagga to attend university and completed a degree in acting and a Diploma of Education. She then travelled to Canada and later to Britain where she worked as a nanny and a teacher while accepting a few gigs in London clubs and bars. On her return to Australia in 2007 she took up a teaching post. Catherine then decided on a career

Distance and of course I said yes, it is in my show. Christine told me that she knew the writer of this song, the Grammy Award winner Julia Gold. She then invited me to meet Julia. “There I was in New York, drinking Veuve Clicquot in Julia Gold’s home with Christine Lavin. That was an amazing New York moment, a magical close encounter,” she says. The serendipity continued when Catherine returned to Australia. While producing Divine Miss Bette, Catherine met Steve Ostrow, a former New York resident who now lives in Sydney’s Elizabeth Bay. Catherine says she couldn’t believe she was about to meet the man who introduced the young Bette Midler to Barry Manilow. “Steve became my classical vocal coach,” she says.“My happenstance goes on; I attended a studio taping of So You Think You Can Dance to support my friend Sally Hare who was competing in the show. It was the episode that featured Robbie Williams. His management team attended the event I was hosting at Slide that night and I met Robbie’s songwriter Guy Chambers. “Guy told me he had recently met with Christine McVie, it was yet another connection. Now the Noosa Long Weekend is looming I have discovered Fleetwood Mac’s producer Dennis Dunstan now lives in Noosa and I am about to meet him. It’s a charmed life,” she says. Catherine’s star continues to soar, she won the 2014 Glug Award for Best Cabaret Performer and performed alongside Molly Ringwald, Kate Ceberano, Teddy Tahu Rhodes and Paul Capsis in the Adelaide Festival Opening Night Gala Concert.

change and accepted a PA position with Channel 9. This led to involvement in TV production and a stint on Oprah’s Ultimate Australian Adventure. After a couple of years as a freelance television producer, Catherine produced The Divine Miss Bette. The show was a sell out success. Catherine says she leads a charmed life. “I feel as if everything is falling in to place,” she says. ”I am so privileged and fortunate. Life has shown me some amazing experiences; it’s as if I am exactly where I am supposed to be now. “In my shows I channel particular artists; these include Bette Midler and Christine McVie of Fleetwood Mac fame. As my journey progresses I keep meeting people who have a strong connection with these artists. “I went to a friend’s wedding in New York State and then went to New York. I flew in and went straight to a club near Broadway where they hold a weekly open mic event called Jim Caruso’s Cast Party. The formula involves all sorts of stars who take the stage and perform. I decided to join in sang Bette Midler’s big hit Dr Long John. “After the show a woman came over and introduced herself as Christine Lavin, she is a big time songwriter and comedienne who works with a number of stars including Sutton Foster. Christine asked if I sang From a

She has headlined at some of Australia’s top festivals including Noosa Long Weekend, Adelaide Cabaret, Idolize Spiegeletent Perth Fringe, Ballarat Cabaret and New Zealand’s Right Royal Cabaret event. Last year Catherine toured Hong Kong as a featured artist with the inaugural Adelaide Cabaret Festival Roadshow. She has performed with and supported iconic Australian artists Christa Hughes and Trevor Ashley. Catherine is regularly invited to perform at various industry and benefit events including Light The Night, Trevor Ashely’s Showqueen for World Aids Day, Covergirl at Slide and the Sydney Theatre Awards. As the creative director of Sydney’s Slide Lounge, Catherine produces major events including the Annual Slide Cabaret Festival, The Stroke of Midnight: A Midnight Variety Spectacular, Monday Night Live: Cabaret Open Mic Night and a variety of fundraisers . As a songwriter, Catherine topped the Triple J Unearthed Dance Charts with her band The Gauge Breakers at number one for Electric Funk and third for Next Town Sentrino. L’eroica (the heroic) vintage cycling carnival in the Italian town of Gaiole, Tuscany. The Noosa Strade Bianche Cycling Festival limits entries to steel-frame bicycles fitted with down tube gear shifters. The courses incorporate large sections of gravel ‘white’ roads, including challenging climbs and hair-raising descents. Three bike rides of varying difficulty take in the Noosa River and hinterland, and a popular bike show - more than 150 riders and 100 vintage show bikes are expected to take part. Strade Bianche literally means ‘white roads’ in Italian and refers to unsealed gravel roads like those found in the famous

Sydney based Emma Pask has headlined the Noosa Jazz Festival with the legendar y James Morrison and his band for more than a decade. When Emma married her Uruguayan-born fiancée Rodrigo (Rod) Ocano last year they held the elegant affair at Hidden Grove on Noosa’s Main Beach.

Leading lady of jazz considers Noosa her second home...

mma has been performing since she was 16. James Morrison discovered her mighty talent when he visited high schools to encourage young Australian musicians. She first sang on stage with his band that night and has been touring with Morrison around Australia and overseas ever since.

James says she is the greatest gift to Australian jazz vocals and Emma says James is like another big brother. “He is involved in every aspect of my life and was one of the major elements in organising my wedding,” she says. “When I was a teenager I wanted to be a singer, before that I was the chubby kid at the back who was too frightened to open my mouth. My parents have always been supportive of my career. My dad always thought I had star potential, he is very knowledgeable about music but he generally doesn’t sing. My mum has a beautiful voice and knows all the songs from my favourite era of Swing.” Emma says appearing on the The Voice was fantastic but daunting.“The show lifted my profile and led to opportunities including my first Christmas album recorded in 2013. Now I am busy with major Australian events and overseas bookings.

“In the months before the Noosa Jazz Festival, I will travel to Switzerland to perform at the Ascona Jazz Festival. I performed there last year, they must have liked me because I have been invited back as the headline artist,” she says. To date Emma’s illustrious career has seen her perform the Bridal Waltz at Nicole Kidman’s and Keith Urban’s wedding in 2006. In the same year she won the Mo Jazz Vocalist of the Year Award. She is a regular guest on national TV shows and has entertained numerous VIPs including the late Diana, Princess of Wales and Princess Mary of Denmark. Emma’s voice is featured on television commercials, movie soundtracks and voice overs. She has performed for audiences of up to 80,000 people. She sang at The Queen Elizabeth Hall in London with the BBC Concert Orchestra, in China with The Shanghai Symphony Orchestra and in Auckland with the New Zealand Philharmonic. International performances have taken her to Rome, Cape Town, Uruguay, Kuala Lumpur, Laos and Singapore. She has performed at the Sydney Opera House and Melbourne’s Myer Music Bowl. The success of her first two albums Emma and This Madness called Love, led to the release of her third solo album Some other Spring. International acclaim has not spoilt this Bondi girl. Emma has a natural, unpretentious and positive attitude. She works extremely hard as does husband Rod. Emma says they keep similar hours as Rod works in the hospitality industry. “Our lifestyles mean we have to take care of ourselves. We both like to keep fit and live a healthy lifestyle. “We live in Bondi so we swim across the bay most days; I do some cardio vascular exercise and always warm up for about 15 minutes before a performance. I have a wonderful physiotherapist Jim Bostock, he is based in Brisbane but I see him at least once a year for a tune up. The 23rd Noosa Jazz Festival is set to hit the headlines...Be there or be square.

his year’s Noosa Jazz Festival features an outstanding line up of international artists. Headline acts include Vince Jones, Grace Knight with Scream Big Band, Galapagos Duck, Greg Gould and The Chase, Laura Bernay, the Australian Army Band Brisbane, Juzzie Smith, Feel the Manouche, Ange Takats and Carl Wockner. The Noosa Jazz Festival has grown from a community event to a sophisticated celebration of jazz and progressive music. I’m addicted to the climate and beaches. “For me, jazz is the highest form of musical performance because you compose spontaneously. It should flow from the deepest part of your emotional experience and be transformed into melody and rhythm. When four or five people are doing that together and feeling each other’s emotions it’s ecstasy,” Steve says.

Laura and Andy Wortlock are living the dream in Hervey Bay. This talented couple combine hard work and romance with adventure and ethics. The story so far could make a feature film about art, travel and the opportunity to create a niche business while helping people in developing countries.

Having it all... L

aura Wortlock is the daughter of famous Australian artist Ashleigh Manley. She was brought up with an appreciation of the finer things in life and a strong work ethic. Laura attended St Hilda’s School on the Gold Coast and went on to study contemporary art and communications at Griffith University. Wider horizons beckoned and Laura moved to Sydney. She then worked in Singapore for a while before accepting a position with Dinosaur Designs in Melbourne. Laura says she then decided to pursue her interest in watercolours and moved to Vancouver to study the subject. “I guess I was following in my father’s footsteps,” she says. “I learnt as much as I could in Canada and then an opportunity arose to work in New York. While working in New York I reconnected with Andy, we had met in Melbourne but the romance blossomed in the Big Apple. “We travelled together and met lots of artisans from and all over the world. We decided it was time to return to Australia and plan our future. We lived in Hobart for a year, had our wedding there and then went to look after my parent’s gallery in Hervey Bay while Dad was exhibiting in Dubai. “We were still deciding where we wanted to be at this point. We were walking along the beach when it occurred to both of us that this was the perfect place. We love living and working in a regional environment and have now bought a house. The first stage of renovations has begun,” she says. Laura and Andy reacquainted with some of the artisans they had met on their travels and launched their handmade accessories label Once Was Lost. The online store and visual journal showcases their thoughtfully curated collection of artisan wares. Laura says Andy’s parents contributed to the collection when they brought home handmade scarves from Nepal. “Everything came together as we focussed on finding beautiful pieces with a sensitivity to honest craftsmanship. “During our travels, an appreciation and love for all things handmade grew. We found our path created a business built on respect for lovingly and skilfully made products. We work with ethical and fair trading artisans to combine the beauty of handmade pieces and traditional production methods with a simple, understated design aesthetic. “We work closely with the artisans that produce our range and love developing lasting, meaningful relationships with people that share our commitment to quality craftsmanship. Authenticity, creativity and an uncomplicated approach overflows into the design of each Once Was Lost piece,” she says. The collection features hand woven scarves from Ethiopia, cashmere scarves woven in Nepal, sterling silver and waxed cotton bracelets from Spain plus canvas and leather bags handmade in Thailand. Celeb Hairstylist, Peter Butler for Moroccanoil gives our readers the insider tips on how to look as good as Kate Upton did at the 2014 MTV Movie Awards. “When envisioning the hair look that I wanted to create to compliment Kate’s Versace minidress, I was inspired by the works of Helmut Newton and Guy Bourdin, as well as the strong and powerful 80’s woman a la Cindy Crawford and Jerry Hall- I wanted big, polished hair.” Peter said of his overall inspiration. Hair Prep/Style: • To create lots of volume, hold and

lift, I began by applying Moroccanoil Root Boost to the roots of Kate’s damp hair and then blanketed her locks with Moroccanoil Volumizing Mousse. Using the Moroccanoil Paddle Brush, I blow dried the hair in large sections. • Next, I divided the hair into 2” sections, misted with Moroccanoil Luminous Hair Spray, and wrapped each section around a 2” barrel curling iron to create a rough wave. • To create a tighter curl and additional bounce, I divide the hair at the top of the head into 3 sections and curled each with a 1” barrel iron from front-to-back (bang-to-crown). • Once the curls cooled, I brushed out all of the hair using the Moroccanoil Boar Bristle Brush and created a deep side part with a comb. Finishing Touches: • Using a dime-sized amount of Moroccanoil Treatment Light, I massaged the products between my hands and then began applying it directly to the hair from the ends up to smooth the entire look. For added shine, I sprayed two pumps of Moroccanoil Glimmer Shine into the air and wafted it over Kate’s hair. • Lastly, I ran a wide-tooth comb through the waves to separate them into a natural look and in true 80’s fashion I blasted the style with Moroccanoil Luminous Hairspray. he Noosa River forms the natural artery through the heartland of the region and provides a haven for safe swimming and waterbased activities. Shady banks provide perfect picnic spots or departure points for leisurely cruises through myriad tributaries, wetlands and lakes that lead to the mystical black waters of the Everglades. Across the river on the North Shore, a four-wheel drive will take you along a pristine beach past the coloured sands of Teewah, the timeworn shipwreck of the Cherry Venture and eventually to World Heritage-listed Fraser Island via a short ferry ride. he event brings together a remarkable collection of vintage and reproduction wooden boats of all shapes and styles from all over Australia for a social day celebrating the history of Noosa and its waterway. Regatta spokesman Don McBryde said the event had originally begun with a small group of locals getting their old boats together for the 10th birthday of the classic “Riverlight” passenger ferries which began running up the river in 1998. Each year the event has attracted more interest from classic boat owners of all persuasions.“It seems to be just as good an excuse to start the “putt putt” boat as it is to polish one of the many beautiful Italian style speed boats”“The day is really about boat enthusiasts sharing their passion in relaxed and beautiful surroundings” The regatta begins with the flotilla gathering for morning tea and briefing at the Noosa Marina and presentation of the Noosa Ferry Community Award before heading upstream past Richard Branson’s Makepeace Island to Lake Cooroibah. The downstream run takes in the beautiful Noosaville foreshore before all entrants gather at Woods Bay Noosa Heads to picnic in the park. hey say it's a small world, and we proved it recently, when attending an Argentinian style barbecue on the property of Savannah Lamb in Clare Valley, South Australia. When on this windswept hillside, who should we find taking solace in the raging fire to escape the steadily dropping temperature, but ex Noosa chef, Justin Miles (executive chef at Relish, Noosa Springs Golf Club). Justin left Noosa about four years ago, and is now living in SA and executive chef/manager at the award-winning Windy Point Restaurant and Café high on the hill at Windy Point just 15 minutes from the heart of Adelaide. Justin said that he is happy in his new home and loves the S.A. food culture and all the local produce that he has to draw upon for his menus. He also said that Savannah Lamb is always on his menu. We were all there to learn about The Future of Food from one of the world's most innovative farmers, Joel Salatin (USA). And, to 'kick the dirt' and experience the regenerative agriculture movement on a farm that is at a critical stage in its transition from a conventional broadacre wheatsheep operation to one where its diverse products are marketed directly to its consumers, and where multispecies livestock systems are profitably improving the land in a sustainable setting.. We did invite him back to Noosa - and hopefully he and his family will be holidaying up north in the near future to catch up with old friends and colleagues. Rainforest caviar

T

racy and Gerard Mackle moved back to the farm in Queensland after spending years in the fast paced corporate world. Tracy says she was working in Children’s Services for a not for profit organisation and Gerard was a logistics manager in WA. “We longed to return to our roots in Queensland so we made the move and started up Coonowrin Finger Limes in the Glass House Mountains,” she says. The idyllic farm captures views to Mount Coonowrin or Crookneck as it is known locally. “We have a shared interest in bush tucker so we decided to plant finger limes. They were an obvious choice as they are native to South East Queensland and Northern New South Wales. There are around 80 varieties in the wild. The farm now has 170 trees with three varieties. We plan to increase the number of trees in the near future. “Local fruit shops have been a great support, they have promoted the product and generated interest. As the farm grows we will be able to supply more fruit shops in the Sunshine Coast region but we aim to remain local.” Tracy is passionate about finger limes and welcomes every opportunity to share information about this natural beauty. She says finger limes are known as rainforest caviar. “It's easy to see why. The perfectly formed beads of wild lime are sought after by chefs and keen cooks,” she says. “Finger limes have a dark, thin skin and grow on a thorny bush. Inside the finger limes are little pearls or vesicles that

can be squeezed out but there is little or no juice. The flavour and acidity varies. “One variety has a very herby flavour and goes well with savoury snacks like cheese. Other varieties may be sweet or tart and acidic. Leading restaurants use finger limes to add extra zest to oysters, seafood and Thai salads. These little gems are great in champagne cocktails; they create a lava lamp effect.” Celebrate slow food and local produce with a glass of sparkling wine and a dish of oysters with finger limes and lemon grass. Ingredients 2 dozen freshly shucked oysters Fresh coriander sprigs for garnish Dressing 1 lemongrass stalk 1 birds eye chilli (seeds removed) 2 finger limes (seeded) 1 tbsp palm sugar 1 tbsp coriander (finely chopped) 2 limes (juiced) Method Mix all of the ingredients together and serve a little on each oyster, top with coriander

Knife, fork and festival vibes: are young Australians catching on to foodie culture? Words: Lizzy Keen

“That’s a ver y good question,” ponders Guy Grossi, hair ruffled from the midday Noosa heat, the naked sunlight illuminating the Courier Mail Annexe like a rice-paper lantern. He pauses. “Young people in Australia can enjoy our food diversity. Here you can have a high-end establishment at one end of the street, and fish and chips at the other,” he explains with hands manoeuvres.

C

afé culture is made up of hip young people. Come to Melbourne, I’ll show you where the cool kids go.” And sheepishly,“I know because I am always there.”The joke nearly slips away for the fear of questioning the street cool of Australia’s top Italian food ambassador. “Nearly got you there,” he chuckles with an accompanying schoolyard nudge. Italian rogue can often get the better of you. The Noosa International Food & Wine Festival is one of the world’s best, boasting a smorgasbord of globally acclaimed chefs, fresh produce and an embarrassment of great wines. However, for the younger generation, a ‘festival’ typically constitutes twelve hours of short shorts and mosh pits, events laden with rib-rattling sound systems, and a-couple-toomany. And as for food, Viva la Mie-Goreng remains a common student mantra. But with the rise of MKR, Masterchef and #foodporn, is Australia’s food culture catch up to the younger generation? A day on the festival green will help establish that. The festival’s vibe is certainly more splendour than grass, with families, friends and couples drinking in the sun amongst the gentle ebb and flow of the crowd with nary an intoxicated frivoler in sight. There are certainly more pinstripes than muscle tees, and there’s no need for jumping fences or sneaking drinks; there’s more award winning wines in here that a bum bag could dream of hiding. This vibe is definitely different for the young people who have come. Anna, Shane, Reid and Vic from Coolum, aged between 23 and 30, came for the atmosphere. They like the live music, the great wine and beer and awesome food; a distinctive experience. “We’re definitely outnumbered by the older generation, but the festival caters for us younger people,” explains Anna. “It’s not like a music festival, where you wear short shorts and go crazy. But you do have to be prepared to spend some money.” Kurt, Bec, Shana and Tyson from Mackay and Brisbane aged between 20 and 23 also came for the “unreal atmosphere” and good food for the second year running, and not the last. They too believe the festival is a different experience to others. “But it makes sense,” says Shana. “It’s a very classy sort of place, with nice wine. It’s not for partying. It’s for having some drinks and a good time.” Clearly an enviable event for those saving for Summafield Dayz. Despite the lack of youth numbers, the festival isn’t all-adult behaviour. An early cooking demonstration with Siglo’s Ian Curley and Coda and Tonka’s Adam D’Sylva, between flashes of flaming red spicy crab and beef fillet swimming in pepper sauce, is like watching siblings seeking quiet revenge. Ian teases with repetitive questions and Adam dips his finger into unknowing Ian’s sauce. And at presenting the dishes, Ian smiles, “And the best bit is, we don’t have to clean up.” Spoken like a true youth. The Noosa Food and Wine really sets to impress all ages. From morn till violet-sky dusk the

Grand Marquee is humming with producer-buyer conversation, offers of handmade chocolate, pillows of warm bread, antipasto delights as well as the morning’s catch so fresh the crusted salt glimmers on the scales as if winking at by passers. The factor of age dissipates at the mere whiff of the street stalls of local and national chefs. Dishing the dirt on the top #Foodfails. With idiot proof recipes, a list of the most common cooking faux pas and how to avoid them, HelloFresh shows Aussies how to say sayonara to heinous “food fail” hash tags

T

hought you couldn’t destroy pasta or rice? Think again. According to online grocery and recipe delivery service HelloFresh, some of the most common food fails in the kitchen are far simpler than that rainbow cake you saw on Pinterest. For the domestic duds out there who are no stranger to the “food fail” hash tag, HelloFresh provides simple, delicious recipes and the matching ingredients to ensure your weeknight dinners go from #fail to #fab in 30 minutes or less. 1. Using a pot that cramps your style: According to Tom, boiling pasta in a pot that’s too small is destined for disaster. “You don’t want to be breaking down your noodles to fit them in the bowl. Regardless of the shape or size, if there’s not enough room and water in the pot, your pasta will end up gluggy and sticky,” says Tom. To ensure the perfect batch of pasta, fill a large pot with around five to six litres of water and bring it to a rapid boil. Add two tablespoons of salt, then the recommended amount of pasta according to the packet and stir intermittently until it is al dente. 2. Slicing and dicing with the wrong tools: To become a master of the slice and dice, you need the right knife. From flattening baguettes to squishing tomatoes, the wrong knife can wreak havoc in the kitchen. “Selecting the right knife ensures you have the upmost control of the blade and are the most efficient when you chop,” says Tom. Invest in a good quality chef’s knife to tackle most of your chopping, slicing, dicing, and mincing jobs, opt for a small, slim paring knife for jobs such as peeling, pitting and select a serrated knife for bread and smooth-skinned items like tomatoes. 3. Gluggy Rice: No matter how delicious your sizzling stir fry is, if you get the rice wrong, the whole dish can be a disaster. “Make sure you rinse your rice before you cook it to remove any additional starch and make

sure you drain it thoroughly before cooking,” says Tom. He recommends using the absorption method when cooking rice where a measured amount of water is used so that by the time the rice is cooked, all the water has been absorbed and trapped steam finishes the cooking. 4. Taking on Pinterest: So you’d like to attempt those chocolate covered kiwi popsicles, while trying your hand at a tiered rainbow cake? Heck, why not chuck in some waffle iron cookies while you’re at it? Tom reveals that one of the major food fails of all time is trying to replicate dishes you’ve seen on Pinterest or Instagram that are clearly way out of your league. “If you’re no Martha Stewart, set yourself some realistic cooking and baking goals that you can work on achieving over time,” Tom says. 5. Sad, soggy salad: It goes without saying that no one wants to feast on limp lettuce and lousy looking leaves, so you must treat your greenery with care, advises Tom. “After washing, opt for a salad spinner to ensure your greens are dried thoroughly. When dry, place them in your salad bowl and remember to only dress your greens right before serving as oil quickly effects the surface of leaves, often making them turn dark green and droopy,” says Tom. Finally, use less dressing than you think you’ll need and to pour it down the sides of the bowl and gently toss with salad servers before serving. 6. Cooking with a cold pan: If you’re a little too eager to get your food sizzling before your pan reaches optimal heat – you’ll pay for it in your post-cooking wash up. “If the pan and oil isn’t hot enough, whatever you’re cooking will stick, you’ll risk parts burning and you’ll have a nightmare scrubbing job once you’re done,” cautions Tom. “Make sure you heat your empty pan for at least one to two minutes before you add butter or oil. You’ll know when the pan is ready when you can hold your hand about three inches above it and feel the heat radiating from the surface. Oil will shimmer when it’s hot enough and butter will melt and foam, then you’ll know it’s time to get cooking,” says Tom.

7. Too much action with the tongs: The more you poke, prod and turn meat, the more moisture it loses – so you should really only be turning it once or twice, advises Tom. “People become over eager turning and moving their meat on the pan, which is the main cause for moisture loss.” You’ll know when you’re meat is ready for turning by giving it a little nudge. “The meat will move freely from the pan when it’s adequately browned. If it sticks, allow it to continue cooking and gently re-visit it in a minute or so,” says Tom. 8. Swapping up a storm: We’ve all seen recipes inviting the substitution of certain ingredients due to necessity or fancy – but such swaps do not always end well. “Generally I’m in favour of free-styling in the kitchen but it’s good to have some idea of the likely outcome,” says

Tom. Swapping herbs can lead to a pretty confronting end result, for example a Caprese salad with mint instead of basil is not so good! 9. Rushing to the finishing line: “Cooking should be fun and something you can easily weave into your everyday life, no matter how busy you are,” says Tom. “Opt for simple recipes that use fresh ingredients to maximise flavour and delegate, delegate, delegate. Get someone to help you chop the veggies while you prep the meat, or ask for help whipping up a salad while you focus on the main,” says Tom. Ingredients 100 ml (31/2 fl oz) coconut cream 40 g (11/2 oz/1/3 cup) good quality unsweetened cocoa powder flesh of 1 ripe avocado, roughly chopped 8–10 medjool dates, pitted zest and juice of 1 orange 1 teaspoon vanilla extract shredded coconut, for sprinkling Method Made entirely with natural, nutrient-rich ingredients, this decadent, creamy mousse satisfies those sweet cravings.

If you have a food processor that does not tend to blend well, soak the dates for a few hours before using; this will help the mousse achieve a smoother consistency. Go ahead, indulge – your body will love you for it. Serves 4 eGF, DF, VEG, V Pour the coconut cream into a small saucepan and warm ever so slightly. Stir in the cocoa powder and whisk until smooth, then leave to cool. Put the avocado, dates, orange juice and vanilla in a food processor with a pinch of sea salt. Add the cooled cocoa mixture and blend for 1–2 minutes, until completely smooth. Spoon into four 150 ml (5 fl oz) dessert cups. Sprinkle with the orange zest and shredded coconut and refrigerate for an hour or so, until well chilled. The mousse will keep covered in the fridge for up to 2 days; garnish with the orange zest and coconut just before serving.

Beef & lamb meatballs with coconut

Ingredients 150g minced beef 150g minced lamb 3/4 cups desiccated fine organic coconut 1 teaspoon ground coriander 2 cloves garlic (finely chopped) 1 teaspoon ground ginger 2 stalks fresh coriander (full stalks including roots, finely chopped) 2 medium eggs 1/2 lemon (juiced) 1 teaspoon black pepper (ground) olive oil (enough to cook the meatballs in)

Method Mix all the ingredients (except the olive oil) by hand Shape into small meatballs Heat the oil to medium hot in a saucepan deep enough to fry the meatballs in small batches Fry the balls (a few at a time) until golden brown Drain on paper towel Serve as a side to a really great green salad or as a snack at one of your parties

Bring to the boil and then reduce to a simmer for 30-40 minutes or until liquid is syrupy. It will continue to thicken as it cools. Leave to steep, then when guests arrive add the wine and gently bring to below simmer point before serving.

A brush with Royalty... A Sunshine Coast artist is about to unveil his Archibald Prize portrait of HRH Crown Princess Mary of Denmark.

T

om Macbeth is a extraordinary talent, his photo-realistic portraits are amazing. One would imagine this internationally recognised, multi-award winning artist has devoted his entire life to painting but in fact his outstanding ability is a recent discovery. Remarkably, he took up painting just under 5 years ago.

T o m had done some drawing with pastels back in 20012003 after seeing an artist use them on a sidewalk. “I had no idea pastels were more commonly used for impressionistic style work and, with no teacher at hand, I developed my own techniques to achieve photo-realistic detail.” Within those two years, Tom won a number of awards both here and overseas for his drawings and was honoured with the title of Master Pastelist. In 2003, tragedy struck and Tom's wife was diagnosed with cancer. He set aside his art to care for his wife. Following her passing just one year later, Tom became a “Mr Mom”, turning his attention to raising his three children and focussing on his career as a Regional Manager for a construction materials company. Following his wife's death, Tom didn't return to his easel for

another seven years. Then in 2010, at the age of 49, he picked up a paintbrush for the first time. He remembers that “it was quite daunting as I had no idea what I was doing.” But unperturbed, and with his sights set high, he entered his first oil painting into the Archibald Prize. His sitter was Professor Mike Archer, the world renowned palaeontologist who is attempting to clone the Tasmanian tiger to bring it back from extinction. Within two years, Tom did indeed make the Archibald Prize exhibition with his portrait of Jessica Watson. As one observer of the exhibition put it:“She looks completely at ease, confident and capable in her domain. The environment of the sea has left its indelible marks on her, from her squinting expression – eyes gazing into the sun or perhaps towards far away landmarks and future expeditions – to the bleached white of her hair and its dampness as it clings to the side of her neck. Both her determination and the crisp smell of salt water on a clear but windy day leap out out of the canvas. It is a powerful and mesmerising portrait.” Sittings with many prominent people show Tom’s extraordinary ability to capture the likeness and the personality of each subject. His well-known sitters include triple world surfing champion Mick Fanning, legendary Antarctic explorer Syd Kirkby, Australian High Commissioner and Press Secretary to Queen Elizabeth II, Mr John Dauth, and professor John Dalgleish Donaldson, father of Princess Mary. “I love painting portraits as you get to meet people you wouldn't ordinarily meet” says Tom. One memorable sitting was with multi Aria award winning singer/songwriter Mark Lizotte (aka Diesel). Tom had been a fan of Diesels music for many years and after the sitting had a brief acoustic jam session with him. His latest and most prestigious sitting to date is Crown Princess Mary of Denmark for this years Archibald Prize. The sitting took place over a couple of days at the Palace in Copenhagen, as a sojourn in the middle of his round-the-world honeymoon with his new wife Carolina. He says things came together in his life when he met Carolina. “This is another wonderful stage in my life. Carolina is an incredible person with the ability to view life from angles few of us ever get to appreciate. We love living in our new home here on the foothills of Mt Cooroy. I now paint full time and love every minute of it,” “The portrait sitting itself was quite casual and Princess Mary was very gracious. We did some sketching and discussed how she would like to be portrayed along with the message she wanted to express. It became evident during the brainstorming session that she has reached a point in her roles as both Crown Princess and mother-of-four where she is more confident, and has more clarity, about the part she will play in the future of the Royal Family, of Denmark and on the world stage. And thus the subject of “Transformation” became the core theme for, and the resultant title of, the painting” “The portrait took about three months to complete and it is now ready to be unveiled,” Tom says. It will be entered in to the 2014 Archibald Prize which opens in July. Local VIP art lovers will have a sneak peek at the portrait, when Tom opens his 'pop-up' gallery in Hastings Street for a 'one night only' private exhibition on the 26th July. Small Scale – Big Impact!

Michael Whitehead Known for his big, bold, heavily layered canvases, small paintings are not something that immediately brings the name Michael Whitehead to mind. In July however, Jive Art will be featuring a collection of his small scale works in response to the many requests received from those of us who don’t have large walls to fill.

M

ichael resisted the call for small works until recently when he scaled down for several international exhibitions – including one in Germany and another for Jive Art to exhibit at the Asia Contemporary Art Fair in Hong Kong. Since finding that he didn’t mind the constraints of size as much as he thought he might, and being inspired by the reception the pieces received internationally, Michael has painted a small scale collection for his ‘home’ gallery at Jive. Joking that Jive’s team wanted to title the exhibition Mini Michaels, Jan Sinclair of Jive Art says: “He has actually followed his time honoured practice of titling the Exhibition after a song title – in his case: Crazy Little Thing!” She adds that: “Michael’s work has long been a favourite of our clients and while many already own very large works, the demand for small scale paintings has always been there and

the few we do get always sell quickly. Because Michael has been in heavy demand over the last 3 or 4 years to meet the Exhibition schedules of his interstate and international galleries as well as Jive, we hadn’t been able to get him to focus on a completely smallscale exhibition series. Fortunately the real constraints of the size of Hong Kong apartments helped us convince him that the time was right!” Michael has been a well known local artist since 2002 and since 2008 he has become a celebrated national and international contemporary abstract artist. From a modest start selling his art direct, Michael’s work was sought by the founder of an exciting new contemporary art space on Hastings Street which opened in late 2004. Sold a little over a year later to its current owners at Jive Art, Michael’s work has continued to evolve and his reputation as a collectable artist is firmly established. His following has grown enormously through a world class Gallery network dedicated to nurturing his career and sharing his works with established collectors, as well as first time art buyers. The film program serves up a range of cinematic fare, from Peter Greenaway’s much loved and wickedly sensuous The Cook, The Thief, His Wife and Her Lover 1989 and the spiritually nutritious Babette’s Feast 1987 , to Morgan Spurlock’s biting gonzo doco Supersize Me 2004 and highpressure competitive baking in Kings of Pastry 2010. A recipe book-come-exhibition catalogue will be published in association with ‘Harvest’, including essays by Gallery curators interspersed with stunning food photography and recipes from noted International and Australian chefs, among them René Redzepi of Copenhagen’s worldrenowned Noma and Peter Gilmore of Sydney’s iconic Quay restaurant. Garden Expo flourishing after 30 years… One of Australia’s largest gardening events, the Queensland Garden Expo, is this year celebrating its 30th anniversary, and expecting over 35,000 gardening enthusiasts and horticultural experts from across Australia and New Zealand to the Nambour Showgrounds between 11th-13th July.

fter planting the seed to build a successful gardening event in 1985, organisers could not have imagined that 30 years later the Expo would offer an action-packed program including 125 free lectures and demonstrations across eight stages, as well as more than 360 exhibitors and displays by over 55 nurseries selling over 40,000 plants per day. Event manager, Marion Beazley believes the strength of the event, which started as a one-day event with 30 exhibitors and 300 visitors, lies in its ability to attract both the most avid and the most amateur gardeners. “People of all ages and skill levels flock to the Expo and

South Australia never ceases to amaze us with their innovative food and wine producers. On our recent visit to Australia's leading, bi-annual food and wine event, Tasting Australia 2014, we were given just such a rare oppor tunity…

A 9 course degustation dinner in a Limestone Cave!

A dining adventure...

T

o coincide with Tasting Australia, Maxwell Wines opened its McLaren Vale Cellar Door to guests for several sold-out mushroom-themed events. The menu and the details of the events were kept secret, so that guests would feel a sense of discovery and adventure on the day. Adding to the adventure, was the knowledge that our 9 course degustation luncheon would be held in a 40 metre hand-carved limestone cave. We began by the crackling fire in the cellar door with a first course of Pickled Mushrooms and scorched Tallegio matched with a glass of Maxwell Envious Sparkling White. This definitely brightened our mood, as our hosts Max and Jeremy Maxwell, explained that Maxwell of McLaren Vale was established in 1979 on 80 acres set above ancient limestone, and in close proximity to the moderating effects of the Gulf of St Vincent. Perfect conditions for their vineyards to produce small batches of the highest quality grapes, full of intense character. As we ventured forth for a winery tour that also included our 2nd course chef Tom Boden appeared from the winery's laboratory in his white coat looking every bit the mad scientist - bearing his concoction of Shitake & Wood Ear Broth in glass beakers, which we enjoyed with a 2009 Maxwell Little Demon Verdelho. Guests giggled excitedly in anticipation of how this day would continue to unfold. Mark explained the cave's history to us. In 1916, a local gentleman Mr. F.P. Shipster (and owner of the land at the time), was inspired by a visit to Paris, and commissioned the tunnel to be dug so he could propagate mushrooms and supply them to the Adelaide and the Queen Adelaide Club. One day he allowed friends to inspect the mushrooms and on their way out they left the series of sliding doors open; a hot wind blew in and destroyed the entire crop. Shipster didn't have the heart to start over, so the tunnel fell into disrepair until Mark and the team at Maxwell Wines began trialling different types of fungi and found great success from Oyster and Shitake varieties. Thus the idea for a themed dinner was borne. Tom has a great pedigree in food, he worked for 18 years in kitchens throughout the UK, Caribbean & India for Taj Group Hotels including sous chef for a Michelin star restaurant ‘The Black Rat’, where he learnt a lot about foraging and cooking mushrooms. Now at the helm of Maxwell’s Ellen Street Restaurant he has his own ready supply of mushrooms to use in his culinary creations. Next, we set off down the gently sloping, gravelled road to arrive at the Lime Cave - where the temperature and lighting dropped to create an intimate atmosphere. On entering we found long tables draped in white tablecloths

and set with crystal glassware, fine china, silver cutlery and candelabras which offered romantic lighting. By now guests voices had dropped in respect of the almost etherial atmosphere - as their expectations soared with excitement. The elements for the remaining seven mushroom inspired courses were plated up in a small kitchen at the head of the cave, and then carefully presented to eager guests. Subsequent dishes continued to tantalise and amaze us all. They included a Porcini Panna Cotta with 2012 Maxwell Adelaide Hills Chardonnay; my favourite of the day, Duck Liver Parfait, Liqueur Mead jelly, mushroom duxelle and lavosh presented with Maxwell Honey Mead; then a plump Barbecued SA King Prawn with a raw mushroom salad, oregano, thyme & sumac served with 2013 Maxwell Where’s Molly Rosé; Seared Ox Tongue with Kohlrabi and Shitake Remoulade and 2012 Maxwell Four Roads Grenache; Confit Chicken Wing with Chorizo, Pine Mushroom & Jus Gras with 2006 Maxwell Little Demon Cabernet Merlot; Ribeye Of Veal Porcini Ragu & Celeriac with 2003 Maxwell Ellen Street Shiraz; and finally to finish off this absolutely delightful dining experience, Crème Fraiche Sorbet, Dulce De Leche and Chanterelle mushroom salt and the Maxwell Classic Tawny Port 10yrs old. At the end of the luncheon, guests were invited to delve deeper into the cave to view the mushrooms they had eaten at lunch, growing happily in the darkened tunnel corridor. Provenance confirmed! We ended our day once more in the heart of the winery's Cellar Door, by the fireplace and sipping a warming glass of Maxwell Spiced Mead, before setting out on our journey back to Adelaide. As we all shared the highlights of the day on the trip home, we realised that we had been privy to an exceptional experience. Boat builder Julian Griffiths has released Kato into the care of her owner. The 60-foot catamaran was commissioned by motor racing legend Tony Longhurst who plans to take his family on a sailing adventure in the custom built craft.

J

ulian says it took 14 months to build the brand new Shionning G-Force 1800 design. “We worked with five boat builders and a specialist interior designer to complete the million dollar plus twin-hulled sailing masterpiece,” he says. “All the work was sourced locally; it was great working with my former apprentice and now leading hand Max Marian and bunch of guys who have sailed together since we were kids.” Julian has been building boats for more than 25 years. He learnt his craft at Norman Wright and Sons in Brisbane and honed his skills at other boat building yards before launching Noosa Marine. The master shipwright has been responsible for some of the best boats on the water. Major projects include the G Force 15 Mojo, four Pescott design Whitehavens and the supervision of the construction of ten 33-foot Farrier trimarans. Noosa Marine is making a big splash in international waters as commissions roll in from many ports some as far away as the USA. Julian says every commission is a challenge in the pursuit of perfection. “Kato has set a new benchmark, I believe we have excelled and the owner is delighted. The Noosa Marine team is passionate about every boat we build. It’s more than a business, we live to build boats and sail,” he says. Kato’s mid-May launch in the Noosa River attracted a crowd. Julian says it was amazing to watch.“Kato is the biggest boat ever launched on the Noosa River, she was held tight on the slings as the 11 tonne vessel slid into the water for the first time. “Kato is so sleek and stylish; it has everything anyone could imagine. She is technically advanced, strong and seaworthy. The light weight composite material and lithium batteries are part of the reason she sits so well on the water. This boat floats beautifully and the 75HP turbos make her impressively quick in the sea trials,” he says. The Kato commission was to create a performance based catamaran to sail from the Gold Coast to Lizard Island before embarking on a world cruise. The 59ft x 27.8ft catamaran is handcrafted, no moulds were used. The vessel very comfortably accommodates eight passengers.

The interior fit-out features three queen suites, two single suites and two bathrooms. The air-conditioned craft has a large galley finished in oak timber veneer. There are fridges and freezers designed to keep food fresh for the family for weeks. This sailing home has luxurious lounge and dining areas, a washing machine, a tumble dryer, televisions and all the other gadgets one would expect to find in multi-million dollar mansion or a five star hotel. As Kato sails into the sunset Julian and his team have embarked on the building of a 63-foot catamaran designed to top even this benchmark.

or the first time in the 37-year history of the National One-Act Playwriting Competition, a panel of industry professionals chose the top 3 scripts from over 80 entries received from all over Australia and beyond. The panelists included renowned playwrights Stephen Carleton and Helen Howard, and Director, Actor, Educator and former QTC board member Kate Foy. After an agonising wait, the 3 finalists were announced last month. They now face another long wait to find out who the winner is, and to receive their share of $6000 prize money. The plays are now in rehearsal ready to make their stage debut in July. The winner will receive $3000 for Best Play, courtesy of major sponsor Bendigo Bank, second place $2000 and $1000 for third. The 3 finalists are: Michiko Parnell from Western Australia with a black comedy, Instructions for Two or More Players, Michelle McCormick also from Western Australia for her Tragicomedy The Invitation, and local Noosa Councillor Frank Wilkie with the drama The Devil’s Dance. This is Wilkie’s second time as a finalist. The winner will be announced when the plays are presented at Noosa Arts Theatre for a 3-week season, as part of the 2014 Noosa Long Weekend Festival. One lucky playwright will also take home the coveted Nancy Cato Audience Choice Award. The winner of this award receives a Publishing Contract with publishing sponsors Maverick Musical & Plays, plus a cash prize donated by the family of the late Nancy Cato who was the first winner of the Competition. This is one of the only competitions of its kind in Australia, where the playwrights actually get to see their new work come to life on stage, with the One-Act Play Festival being one of the most popular productions on the Noosa Arts Theatre calendar each year. “The audiences love it, because they get to vote, and it is a real thrill for the writers to see their plays brought to life on our stage. Before leaping to conclusions, Noosa Style caught up with the exuberant Rafael Gallet, conference operations supervisor at Outrigger Little Hastings Street Resort and Spa who, coincidently hails from Sao Bernardo do Campo, just outside of Sao Paulo in Brazil.

...find a Brazilian in Noosa! Brazilians are renowned for their flamboyant personalities, love of carnivals and soccer and Rafael (Raff to his friends) is no exception.

ince joining Outrigger 18-months ago, Raff’s professional work ethics, trademark smile and a tango in his step are perfect traits to handle the demands of working in the conferencing industry. No day is the same for Raff who juggles back-to-back events but still has time to ‘tango’ with Noosa Style. Why Noosa? I moved to Australia in 2006 after finishing a degree in hotel management but found that hanging out with fellow Brazilians around Australia didn’t help my English. When a career opportunity came up at Outrigger Little Hastings Street, I didn’t hesitate. I am now speaking English with a real Aussie accent! What is a typical day at work? No day is the same – just like in the movie, Forrest Gump. ‘Life’s like a box of chocolates’. Weddings, big corporate conferences or smaller meetings…you need to be at least two steps ahead. I always arrive earlier to say hello to my workmates, then check emails. Then it’s time to meet with the food and beverage manager, go over menus and function timings before the fun begins…that’s heading upstairs to check on events, touch base with the event organisers to make sure

everything is running smoothly. At the end of the day, I triple-check everything for the next day’s round of meetings and conferences, attend to last minute requests and then head home (after a surf ). A memorable moment at Outrigger? How can I forget?! Last Christmas we had a full house for lunch but there was no Santa and more kids at the lunch than we had expected – there were heaps! I had to find Santa quick so ran down the street, begged some friends in the industry for a suit and did what had to be done. It was a dodgy suit, which I wore (just quietly). But let me tell you - it made the day for all the kids. Everybody on the day was full of happiness. We had such a good time and I did receive special thanks from all the families. It was fun and rewarding at the same time. What are the challenges and highlights of working in the event business? The biggest challenge with events is definitely to be two steps ahead of your client needs; to be there most of the time, and if not, at least reachable and have someone on site to be your backup. It is also important to be innovative and creative to make each event special. The highlights are the people you meet thr ough your career; the different characters who will challenge you, teach you, develop you, test you, touch you, annoy you - all this and more makes you a better human being. Your advice to anyone wanting to work in the hospitality industry?

Be committed to hard work and take pride in what you do. Do not hide your personality but rather, tailor it to blend with each client and brief. Be at least one step ahead of your client and continually study and learn about the industry to improve yourself and your professionalism. Be friendly, treat everyone really well, don’t drop the ball if things are not going right and never give up. Most importantly, have fun at all times! Where do you see yourself professionally in the next few years? To be a business development manager and I’ll then aim for a sales and marketing role when I finish my masters degree. What’s your top 6 tips for Noosa? Coastal walk through Noosa National Park, beside Outrigger; stand up paddle boarding through the waterways; shopping and people watching on Hastings Street; have a massage or spa treatment; dine at View on Little Hastings Restaurant & Bar for extraordinary contemporary dishes and everyone must try surfing at least once in their lifetime Are you planning any trips to Brazil? Yes I am. Last time I went back was February 2013 for Carnaval and I plan to return again for Carnaval in 2015. In one word, describe yourself. Flamboyant! So while Raff may be over 14,000 km from his homeland, he always brings a little piece of Brazil to his busy role that touches so many conference organisers, delegates and staff from near and far.
