Embassy XO A quiet Margarita and a cooling ale in the bar was the perfect start to a wonderful night's dining at Embassy XO in Sunshine Beach, for new Noosa property owners, Sandra and Gary Kuppe.

It was a fun festival once again this year at the Noosa International Food & Wine Show, with winemakers, chefs and food media turning out in force to tempt attendees. We caught up with local chef, Matt Golinski; and Chef Steven Snow and his family, who were up from his Fins Restaurant & Bar at South Kingscliff. Entertainment proved very popular with the crowds, with American tribute band The Blues Brothers rocking the house.it was a bit sad to hear of the festival's demise but hopefully Chef Matt Golinski & Editor Kaylene Murray someone will take up the mantle, and it will reappear on our events calendar again in 2016. Perhaps in its original form, where the focus was more on Noosa regional chefs and food producers. It might be time to get back to basics and rediscover where the whole idea came from, promoting our region to the rest of Australia. Here's hoping it does stay in Noosa.
Belinda Herford, Noosa-based modern artist, and husband and fellow artist, Gordon, proudly opened her 11th solo exhibition titled “Me We” a collection of what Belinda describes as ‘Lifeforce Portraits’

ith the Moét flowing, avid art lovers were treated to a feast of the senses with eight beautiful artworks. Titles such as “Brave”,“The Haunting”,“Vow” and the title piece “Me We” (sold to a collector in New York pre-show), offering tempting glimpses into Belinda’s unique and intriguing method of delivery of her concepts. This series of large modern figurative oil paintings on Belgian linen depict interaction between individuals that also invite the viewers interpretation. “Me We” Lifeforce Portraits Exhibition is showing now at Poeta Herford on Hastings, 62 Hastings Street Noosa from 10am to 6pm Monday to Saturday until July 31st. All welcome.

The Noosa Jazz Festival is a must in the winter diary for its heady mix of atmosphere, excitement and soul, but it wouldn’t happen if it weren’t for Vickii Cotter, who’s been adapting her winning Byron Bay Bluesfest event skills to the local four-day celebration. Coco Seymour-Griffin reports.
J
azz: it’s that fusion of rhythm, swing and blues that you can’t help tapping your foot to. Uplifting, with a nomadic edge, it’s the music of a renegade mindset that doesn’t like to be hemmed in by rules and formality. Free-spirited and experimental, jazz is the thinking person’s companion, offering warmth on a cold winter’s night, and light relief after a long day. So, when I meet Vicki Cotter, director of the iconic Noosa Jazz Festival, I am not surprised to find a woman driven by creativity, passion and artistic endeavour, much like the musical form itself. “Growing up, I aspired to become a famous musician,” smiles Vickii. “When I was seven, I started

playing the piano, and would open the sliding doors in our lounge room so that record company executives walking down the street in Hawker ACT could discover me! “I realised pretty quickly that this was an unlikely way to achieve my goal (as no one ever walked down our street, let alone someone in the music industry), so when I was 14, I started figuring out what I needed to do to get into university to study contemporary music. I therefore practiced piano every day, and had two separate jazz piano teachers and two vocal teachers, attended a music theory class, and undertook harmonica lessons (with Juzzie Smith, who now plays the festival). By the time I was 15, I was in a covers duo, had a manager and was performing around venues in

Canberra. I also played the piano at the Canberra Rex Hotel.” After a year off travelling around the world when she was 18, Vickii begun her undergraduate degree course in contemporary music at Southern Cross University, and soon found herself surrounded by fellow talented musicians.

However, as she moved on to her second year at university, things took an unexpected turn.
“After being admitted as a solicitor, I moved into private practice, but quickly realised I absolutely hated every single second of having to go to court! It dawned on me pretty quickly that law was not for me.”
“In my second year of my music degree, I met a lady called Sally McPherson who was a music lawyer and taught the music business course. She became my mentor, and as a result, I decided that after my music degree I wanted to go on to study law to help

Luckily for Vickii, timing was her friend, and Sally, who was now the General Manager of the Bluesfest in Byron Bay, was looking for someone to help her with artist

But it was the Noosa Jazz Festival that won her heart when she took over the directorship in 2013. Since then, she hasn’t looked back. Originally founded in 1991 by the late Frank Johnson (who had a dream to hold a jazz party over two days –centring on Hastings Street and the local restaurants), the Noosa Festival is now in its 24th year, and has grown and spread, encompassing Sunshine Beach, Noosaville and Tewantin into the festivities, attracting musicians from all over the world.

“I was there in a heartbeat! And that’s how I fell into festival and events! I went on to work with the Bluesfest for five years. It was an amazing time. It taught me so much about producing, event management, project management, ticketing and stakeholders. I loved it.”
From the Bluesfest, Vickii had worked with Events NSW as the Executive Producer of Vivid Sydney, and then as the Executive Producer of Crave Sydney International Food Festival, where she produced the acclaimed ‘Breakfast on the Bridge’ event. After this, she became the first CEO of the Gympie Music Muster (when the event was restructured),

event to continue to grow and prosper for the region for another 24 years. We still have a way to go as we need to continue growing, but it’s good to have a goal to aim for. I believe in dreaming big and then making a plan on getting there, doing something towards that goal each day. Life is short. Believe in yourself, take fewer things seriously, be kind, laugh often, take more chances and enjoy the good times.”

The Pomona King of the Mountain Festival held in the Noosa hinterland town of Pomona is a fun-filled event for the whole family, ending with the International Mountain Challenge where competitors run up the face of Mount Cooroora. The festival program includes a 3km family fun run, heritage markets, the primary school relay, tug o war, mountain dash, skate park competition and jam session, pram push, live music, rides, side show alley and a food court. The main race at 3pm is a steep, almost vertical climb up the mountain and back. Entrants come from around Australia, New Zealand, the Pacific Rim and the UK to compete in this gruelling challenge.

The Noosa Strade Bianche is a gravel "fondo" for vintage steel-framed bicycles, with 3 rides from the Noosa Marina through the beautiful Noosa hinterland. It is in the vein of the famed L’Eroica in Italy (L’Eroica means ‘heroic’, a celebration of the heroic era of cycling). Noosa Strade Bianche – Gran Fondo is a 133km loop ride through picturesque country roads, stunning vistas and country towns, with challenging climbs and descents, and sections of ‘strade bianche’ (‘white’ or unsealed gravel roads). En-route, there are country cafes, bakeries and pubs. The Gran Fondo and the 89km Medio Fondo leave Noosa Marina on Sunday 9 August at 7am. The 33km Piccolo Fondo on Saturday 8 August from 7am is an ideal introduction to the ‘strade bianche’, or gravel roads. All participants must ride steel-framed road bikes, fitted with downtube shifters.

With inspiring and electrifying songs, and an incredible five-piece band, they are certainly proud to be ‘doing it for the girls’, putting a modern take on classic songs that have stood the test of time from many genres of music.

And it’s all taken off rather quickly – from an idea in April 2014, to forming a trio that September, to a plethora of gigs and appearances across the Coast today. It’s certainly been an exciting year for the award-winning singers who have each enjoyed thriving careers as performers in their own right prior to coming together as The Kitty Kats, including singing for numerous branded television advertisements and backing for various global music artists, as well as a plethora of industry and academic accolades. “Our journey so far as The Kitty Kats has been very rapid!” smiles Renae. “We began rehearsing in November 2014, and have now been performing publicly together for three months!
“Our first gig was for International Women’s Day in March 2015 at the ‘Local Women Rock’ event. We have since performed in many venues, and have more wonderful upcoming gigs booked in addition, including The Caloundra Music Festival in October 2015 and a gala performance at Jupiters Casino Gold Coast in March 2016. We will be holding a three-day performance workshop as a part of the Caloundra Music Festival Fringe Festival in late September, also. “What has been particularly amazing is the huge amount of support from members of the local community. We have been very fortunate so far, and are grateful and proud of what we have achieved in such a short amount of time. With Renae and Michelle having shared the stage at the Kangaroo Point Jazz ‘n’ Blues Festival in Brisbane in 2003, and at The Majestic Theatre Jazz ‘n’ Blues Music Marathon in 2012, some might say it was meant to be that they would come together eventually. But it wasn’t until they met formally in April 2014 that musical sparks flew. “When we got together, Susanne suggested (half-jokingly) that we should form a vocal trio as it was something neither of us had done before. It sounded creative and fun! We wanted the trio to be a ‘feature show’, performing at theatres, concert venues, auditoriums and festivals. Susanne wondered if Michelle might be interested in joining the group, so we asked her, and she agreed!” Choosing a name that they felt portrayed both the strength, unity
and fun-loving nature of women, The Kitty Kats was formed, and it wasn’t long before the group was being propelled forward with speed by it’s own momentum. “It has taken considerable focus and discipline on our parts to keep up with it!” says Renae. “Social media is probably the most powerful tool we have utilised to get the word out, and through this medium we have been able to keep our followers informed of every step of our journey so they have felt a part of our progress … which they are!” With time the trio’s greatest challenge with regard to keeping up with the growing demands of the band, The Kitty Kats have nevertheless risen to the challenge without hesitation, true professionals as they are.

Nourishing Foods 8-10 Months

The first months of Lucy-Belle’s eating adventure included delicious delights such as avocado, banana, sweet potato and steak. As her skills have progressed and digestive system has matured, we have introduced some exciting foods to the mix, some of these being foods which it was previously recommended to avoid until over 12 months of age. Food such as nut pastes, egg yolk and dairy products before the age of 12 months were once thought to increase the risk of developing food allergies. However, research now shows that the earlier the baby is exposed to these foods, the less likely it is that they will develop an allergic reaction. The eight month mark is a good time to introduce these foods, after they have been eating solids for a couple of months.
Quick Tips • If there is a family history of allergy, it is important to speak with your doctor before introducing these foods • Introduce only one of these foods per day so that in the case of a reaction, you will know which food is the culprit • Feed in the morning so that you can monitor any reactions throughout the day • Monitor closely for the following symptoms of allergy - red rash, swelling of the lips, eyes or face, watery/itchy eyes or nose, diarrhoea, vomiting or wheezing
EGG YOLK Egg yolk is highly nutritious, containing vitamins, minerals, protein and healthy fats. Introduce egg yolk rather than whole egg to begin with, as the yolk does not contain the common allergenic proteins. Make sure the yolk is

NATURAL YOGHURT Natural yoghurt is packed full of calcium and protein, essential for growing bodies. It is also a fabulous source of good bacteria for a healthy digestive system which can help build strong immunity. Babies born via caesarean section miss the opportunity to get their vital dose of good bacteria via the birth canal, so yoghurt can be very beneficial for these babies. • Look for a natural yoghurt which will contain fewer hidden nasties and more good bacteria • Avoid yoghurts with added sugar in the ingredients list • Avoid yoghurts sweetened with honey, due to the risk of botulism • Try Barambah Organics or Jaalna available from supermarkets Lucy-Belle loves: Yoghurt stirred through her porridge in the morning or as a mid-meal snack
NUT BUTTER (approximately 9 - 10 months) A natural (smooth)nut butter such as peanut, almond, cashew or macadamia, is a great source of healthy fats and protein for growing bodies. Look for a smooth nut butter using only nuts and avoid those using salt, sugar and vegetable oils. Whole nuts should not be given to babies as they present a choking hazard. Lucy-Belle loves: Nut butter on a slice of good quality toast such as sourdough for breakfast, or dolloped on slices of banana for a snack. If you have any concerns introducing these foods, consult your doctor. NS One of the most common topics of conversation I see in online mother’s forums and hear within playgroups is that of weight. Specifically, pre-pregnancy weight, pregnancy weight changes, breastfeeding as a form of weight loss, and post-baby weight changes, to name a few. Plus celebrity baby body bounce backs do not appear to have helped the self-esteem either. It is amazing how much pressure we can put on ourselves regarding our standards of beauty in general, but particularly post childbirth. Not only are we now looking after a baby and trying to maintain some sense of normality in our own lives as parents; but now we also have external pressures to slim down, which seems to be emphasised as much in magazines as parenting articles.

Goals.
S
o, as many of us do, we set a vague goal to “lose weight starting today”. However, how often have we given up on our diets or "healthy lifestyle change" because of a slip up? A glass of wine turned into two bottles, or that one chip that turned into a packet? How many times have we said to ourselves, "I’ll get back on track on Monday"? The large proportion of us seem to share similar goals of dieting to lose unwanted weight, do more exercise (or start in general), or look fantastic in that cocktail dress that we may wear once in our life, but now is the epitome of our being. However, when it comes down to the crux of it, why do we set these goals in the first place? Is it because the parenting magazines told us this is what we want? Or external pressures from people in our lives? Or is it about a lifestyle change to become healthier? The reason behind why we set our goals and what motivates us to work towards achieving them are important questions to ask of ourselves. Without this understanding, goals can become difficult to achieve. This is where the concept of values comes into play. Values are best described as how we aspire and desire to live our life, what is important to us, and what motivates us everyday. Values come in many forms such as: adventure, courage and love. How values and goals differ from one another, are that goals have an end point or a measurable outcome and values are never finalised.

Where we can often go astray in goal setting is that we do not always have a clear picture of why it is we want to achieve them. Is losing weight important because you want to look great in a dress that you will wear once? Or, is that you value fitness and self-care, and losing weight or starting an exercise regime allows us to keep up with the kids and have more energy? The clearer the picture is of what we value in life, the easier it is to ask ourselves – what have I done today to service my values? This might include replacing the third cup of coffee with water, or spending an extra 10 minutes walking with baby. These actions service both your goals and continuing to live life according to your values (for example) of fitness and self-care. A commonly used method to help construct and set solid goals is called SMART goal setting. When using the SMART method, ask yourself the following: “Are my goals” – Specific: What do you want to accomplish? This is where you add as much detail as you can for your goal. For example, instead of “I want to lose weight” – specify in
more detail – “I want to lose five kilograms in three months, by increasing my exercise to walking three times per week for 30 minutes a day”. Measurable: How can you measure your progress? For example: “I will weigh myself and take weekly measurements each Monday at 7.30am”. Achievable: Goals are designed to push us, however we need to make sure that they are achievable and attainable. Stating that you will run for one hour every evening after work, when you have never run or exercised for one hour can set us up for failure. Instead, aiming to increase our exercise gradually would be more realistic. For example, “I will go for a 30 minute power walk, three times per week on Monday, Wednesday and Friday at 6pm”. Realistic: Are your goals realistic? For example, Although we might feel motivated to exercise more times per week than our goal specifies, realistically, we know that we can dedicate ourselves to at least three days consistently. The SMART method allows you to revisit and revise your goals as you continue to achieve what you set out to do. Timely: When will your achieve this goal? Setting a time frame helps to keep us motivated and goal orientated. “I want to achieve this goal by 30th of September 2015”. As you can see, as we start to base our goals on the guiding principles of our values, we will always be working toward living a more fulfilled life. Fundamentally, the question to ask ourselves each day is this:“what have I done today in service of my values”.Taking some time out of our week to really explore what is important to us in life, and working our goals out from here is a great place to start. Winter UV exposure could lead to vision loss, cancer... Queensland residents are being warned to be more vigilant about protecting their eyes in winter as lower sun angles and UV exposure on unprotected eyes put them at greater risk of cataracts, and skin cancers around the eyelids.
A
group of Queensland optometrists is calling on locals to protect their eyes from potentially dangerous UV exposure, even though the sun may not be at its strongest. “Eyes are exposed to UV radiation every day of the year, especially somewhere that gets yearround sun like here, and winter can be a more dangerous time than any other because of the lower angle of the sun in the sky,” says Andrew Gospos, of Medispecs Optical in Robina. Despite UV levels being higher in spring and summer, eyes are naturally shaded during the hotter months as they are deep set - and thus partially protected when the sun is high in the sky. However, this means there can be more direct exposure on winter days when the sun sits lower. Patrick Egan, from Murwillumbah Optometrist, says the risk is compounded by a more casual attitude towards sunsmart behaviour as the weather cools. “People relax their guard in winter, thinking that the ambient temperature is equivalent to UV levels,” says Egan. “Summer messages for UV protection such as wearing sunglasses and hats are not in the front of their mind, but UV rays are still present and can still do harm.” “Virtually everyone living here is out and about a lot, leading active lifestyles, so everyone is at risk of UV exposure,” adds Gospos. “Even people who are just out taking a walk on the beach every morning need to be aware of it.”

Children are particularly in danger of UV exposure, according to another optometrist in the group, Andrew Bowden, from Envision Optical in Burleigh. “Kids are especially at risk because they spend significant time outdoors playing and wear sun protective lenses much less commonly than adults do,” he says. UV damage to eyes is cumulative and irreversible, and is believed to contribute to several serious eye conditions that can result in vision loss, including cataracts and corneal degeneration. It is also considered a cause of skin cancer around the eyes and eyelids, which accounts for 5-10% of skin cancer patients. “You can protect your eyes from UV exposure by wearing high quality sunglasses that block UVA and UVB whenever you are exposed to sunlight all
year round,” says Gospos. “Make sure that you get good quality sunnies for the kids too. Lenses that have a UV resistant coating on the front and back offer excellent protection.” Bowden adds that all Queenslanders should put on their sunglasses when they are outdoors for any length of time. “They should also ensure that if they wear prescription glasses, the lenses have UV protection built in as a standard feature,” says Bowden. “Given the amount of outdoors time we spend here, plus the in and out of office moments throughout the day that all add up in the long term, UV protection is essential in your glasses.” With an estimated 3 million people going blind every year due to prolonged UV exposure, it’s important for everyone to take further steps to look after their eyes, they say. With fabulous food offerings and a cheeky glass of wine to start, Executive Chef/owner Shaun Presland(who had flown in from Sake in Sydney for the event) challenged Brisbane Sake Head chef Daisuke Sakai to a 'sushi off' as a teaser for what is to come. Good fun but the chefs were serious about the contest. To be fair it did look like a tie to me! With a plethora of food-indulgent events being held all over Brisbane and regional venues, you won't want to miss a moment. Mia Welsh is not only carving out her dream life, but also filling the bellies of fellow Noosa locals with fine Mediterranean cuisine. Now there’s no need to go to Italy, for Italy comes to you, as Coco Seymour-Griffin discovers.

s I chow into my super ragu cuisine made with free range Tasmanian beef, Italian tomatoes, red wine, kale, silverbeet, broccoli, zucchini, celery, carrot, onion, basil, garlic and extra virgin olive oil (among other fresh ingredients), I am instantly transported back to Italy – to my favourite little locals Roma ristorante that I would frequent when popping over to the continent on mini-breaks from my then-London life. The smell, the taste, the experience – the bolognaise sauce stirs up memories of ancient piazzas, azure Mediterranean waters and late steamy nights under the light of the moon. But where actually am I? In my Noosa kitchen on a school night, having just served up Mumma’s Sugo’s latest dish of the week – one which I collected on my way back from the school run this morning. So, not only do I have Mia Welsh (the founder of Mumma’s Sugo) to thank for my mental vacation to Europe, but also for my night-off cooking – for it has been her hand that has toiled to prepare this dinner, and her magic which has made it taste so good. 33 years old, half Sicilian, half Aussie, born in Melbourne but raised in Noosa from the age of four by a ‘mad Italian father’ and a ‘lovely Australian mum’, Mia has been surrounded by flavours that most of us only dream of from a very young age. “My father was an Italian chef. We owned Oscars Place on Thomas
Street in Noosaville for many years. I was brought up in restaurants, eating my family meal amongst customers, and taking pizza to school everyday to trade for Vegemite sandwiches!” laughs Mia. Moving to London at 17, Mia completed a professional cookery course, travelled through Europe extensively, explored Asia and moved to Rome some time later to live with an Italian family. “It was here that my passion for Italian food came alive. The mama of the house taught me all she could about the basics of Italian cookery and how to create real flavour in food, including the importance of using the freshest of produce and keeping it simple. I was hooked. I wanted to share what I had learnt. “So, I came home from Rome, married my gorgeous man, Christian, and became pregnant with my first-born, Micah, all the while planning how I was going to manifest my vision. Christian worked away, so I wasn't able to work, but after our second son Asher was born, we decided he needed to find a job back in Noosa, and I was able to begin the process of seeing my dream of sharing good food come to fruition.

“Having become a mother, I wanted to love on other families through my dishes. My mission was to help busy working mamas and papas feed their families well, keeping it super fresh, wholesome, and quick and easy to prepare. And so, Mumma’s Sugo (mum’s sauce) was born.” Being a stay-at-home mum, Mia started by cooking just the one pot while her eldest was at kindy and her then six-month-old had his daily nap. “I sent a text out to my local church family, and the first five litres sold in about five minutes! The following week, I made a bigger pot, and the same thing happened! I was shocked. It grew from there through word of mouth, one pot at a time. About a year later, I got to the point where I had to decide whether or not to take it to a commercial level. So, I hoped for the best and jumped right in. I now cook around 100 litres of sauce a day out of a commercial kitchen in Coolum Beach, and Mumma’s Sugo is continuing to grow rapidly through my stockists (The Bent Banana in Peregian Beach and Belmondos Organic Marketplace in Noosa), via social media and more importantly, through recommendations.” Bubbly, loud, energetic and a lover of all things food, Mia’s persona is as heart-warming as her meals, and it is clear to see she loves what she does. “I love that food is an expression and extension of me. Sri Lankan Curry of Petuna Ocean Trout 30 Minutes Prep Time Serves 4 Ingredients: 50ml oil 1 medium onion, peeled and roughly chopped 2 cloves garlic, peeled and roughly chopped 1 x 5cm pandan leaf, roughly torn 2 sprigs curry leaves 2 green chillies, split lengthways ½ tbs fenugreek ½ tbs fennel seeds 1 tsp chilli powder 2 tsp cumin powder 1 tsp coriander powder 1 tsp turmeric 1 cinnamon stick, broken into pieces 500ml coconut milk Fish frame from a white fish 10 x 180gm Petuna Ocean Trout (skin on) 100ml oil, to cook the fish salt and pepper fresh coriander, raita, steamed rice and limes to serve Method; Heat the oil in a large pot over medium heat and add the onion, garlic, pandan leaf, curry leaves and green chilli. Fry until the onions are translucent. Add the dry spices, coconut milk and fish bones and stir to combine. Leave to cook until the mixture has reduced by half. Remove the curry from the heat and strain it into a separate bowl. Set aside until ready to serve. To cook the fish, heat the oil in a pan over high heat. Add the salt to season the pan. Gently place the ocean trout fillets in the pan, skin side down, and leave to cook for 2 – 3 minutes, or until the skin is crispy. Turn the fish and cook the other side. Once cooked, remove from heat and serve. Transfer to a tray, keep warm. To serve, place a piece of ocean trout on the plate, skin side up, and drizzle with the strained sauce. Garnish with coriander sprigs and serve with raita, steamed rice and a couple of lime halves.

Add the lemon zest, peaches and thyme sprigs, reduce the heat and simmer for 10 minutes covered with a cartouche (see Lyndey’s note) or until the peaches are just tender. Remove the peaches from the liquid and set aside to cool before peeling, halving and removing the stones. Slice each half into quarters and then into four wedges, or cut into random shapes if you prefer. For the coconut and almond crumble, toss the flaked almonds in a small frying pan over low heat for 3 minutes or until just starting to colour. Add the coconut and continue to toss for a further 2 minutes or until the flaked almonds and coconut are a light golden colour. Remove to a small bowl. In the same frying pan, add the butter, sugar and ground almonds and cook for 4 minutes until the butter melts and the mixture colours slightly. Remove from the heat and stir through the almonds and coconut then set aside to cool. For the raspberry sauce, place the raspberries, icing sugar, lemon juice and 2 tablespoons water in a small saucepan. Bring to the boil over high heat, mashing the raspberries to a purée. Reduce the heat and simmer for 1 minute. Push through a sieve to remove the seeds. To serve Sprinkle each of four plates with the coconut and almond crumble. Top with the peach wedges and teaspoon-sized dollops of crème fraîche. Drizzle over some raspberry sauce, dot with whole raspberries, scatter over the thyme flowers and serve immediately. Wine This is not overly sweet, so try a late picked riesling.
Lyndey’s note... A cartouche is a circular round cut from baking paper, just large enough to cover the pan. The cartouche will help the top of the peaches stay submerged and cook evenly.

Christina says; "There is something about slow cooking that takes me to my happy place. I do mine in my slow cooker which is one of the best inventions for busy people who want to still eat beautiful home cooked meals. I turn my slow cooker on before I head out for work and when I get home with the kids in tow, tired and hungry, we are greeted with a smell that can only be described as heavenly. While everyone gets ready for dinner I quickly whip up some polenta and within 30 minutes we have some amazing slow cooked comfort food for dinner and are left with very full bellies. Next time you’re after some comfort food that will warm you from the inside and take you to your happy place give this dish a try!" Prep Time: 15 mins Cook Time: 3 hours Serves: 6 Ingredients: 6 Lamb shanks 2 red onions, roughly diced 1/2 cup of sultanas (you can use raisins) 3 Tbsp of Buderim Ginger Original Ginger Marmalade 1 Tbsp of Tomato sauce 2 Tbsp of Worcestershire sauce 200ml of Stout 1 Ltr of chicken stock 1/2 small bunch of mint, sliced 3 Sprigs of rosemary
2 stalks of spring onions, thinly sliced 3 Garlic cloves, roughly chopped 3 Tbsp of olive oil 1/2-1 Cup of cider vinegar Salt & pepper to taste Method: Step 1 Heat half the oil in a large casserole dish over a medium heat. Add your onions and a good pinch of salt
and pepper and sauté until caramelised. Next add the Buderim Ginger Marmalade, tomato sauce, Worcestershire, sultanas and stout and give it a good stir, allow to simmer away until needed. Step 2 Heat the other half of the oil in a large frying pan over a high heat. Place the shanks in the frying pan making sure that you don’t over crowd it (cook them in batches if you need to), browning them all over. Once browned add the rosemary to the pan for a minute or so and when it becomes fragrant turn the heat off. Step 3 Gently place the shanks and rosemary into the casserole dish, pour over the
stock, cover with a lid and turn the heat to as low as possible (this is where I place it all in my electric slow cooker, turn it on and then leave them to cook all day) and cook for 3 hours or until the meat falls off the bone. Step 4 Very carefully remove the lamb shanks from the casserole dish (or slow cooker) and place on your serving platter in a warm spot until needed. Using a stick blender
(you can use a normal blender, although I find it much easier with a stick blender) blitz the sauce until it becomes smooth. Then turn the heat up high and reduce the sauce to just over half. Step 5 While your sauce is reducing place mint leaves, spring onions and cider vinegar in a bowl and set aside until needed. Step 6 Once your sauce is reduced ladle over the lamb shanks. Sprinkle over your pickled mint leaves and spring onions. Pour the remaining sauce into a gravy boat and serve on the side.

even artificially flavoured syrups – which are definite nono’s if you’re trying to watch your waistline so make sure you know exactly what’s in a smoothie before you start sipping! 3. RAW FOOD DIETS “I’m all for eating food in its most natural state,” says Leech. “Raw food diets are generally very fresh fruit and vegetable heavy and discourage the consumption of processed foods, which is excellent,” he adds. Guy points out however that cooking food can be more nutritious and at times even safer. “The lycopene in tomato and the beta-carotene in carrots are released during cooking,” says Leech. “Furthermore, cooked foods can be easier to digest and cooking meat and fish kills certain bacteria that could otherwise result in an upset tummy or in extreme cases, food poisoning,” he adds. 4. ALMOND MILK Almonds are full of nutrients such as Vitamin E, Magnesium, Zinc, Potassium, Iron and Calcium , they are reported to help lower cholesterol and are suggested improve digestive health, needless to say Leech is a huge fan of them. Likewise, he considers almond milk to be an excellent cow’s milk alternative especially for using in smoothies and as an accompaniment to homemade muesli, he does however warn that there are a couple of drawbacks. “Almond milk doesn’t have as much calcium or protein as cow’s milk,” he points out. “Processed almond milk can also be packed with extra sugar and preservatives, so make sure you read the ingredients and nutrition panel carefully,” he advises. Fresh is always best though, so Leech recommends buying a nut milk bag, blending up some fresh almonds and making your own nutritious almond milk from home. 5. MUESLI Cleverly marketed to the health conscious crowd, muesli can be packed with goodness while also being chock full of fat and sugar. “Many people think they’re doing the right thing by swapping up their sugary cereals or fatty fried breakfasts for a portion of muesli in the mornings,” says Leech. And, according to Leech, the type of muesli on the shelves today provides a poor choice for those looking to shed fat and maintain a healthy weight. Instead of giving up muesli completely, Guy suggests making it yourself. “A mixture of oats, sunflower seeds, a small amount of dried fruit and macadamia nuts, make for a delicious and nutritious muesli sans the unhealthy fats and sugars,” says Leech. Guy Leech warns Aussies about the “healthy” food fads that can lead you astray From juice cleanses to raw food fasts, super-foods to super-smoothies, we’re in an era that bombards us with the latest food fads and figures daily. But according to Australia’s number one fitness guy, Guy Leech, with so much praise for all this delicious and nutritious food, it’s hard to know when you’re getting too much of a good thing. Looking at some of the most popular health foods on the market today, Guy offers tips on how to consume them sensibly. 1. JUICING With so many “juice cleanses” on the market it’s hard NOT to think that drinking juice all day is good for you. Guy points out though that even 100% freshly pressed juice still contains a heap of sugar and hardly any fibre when compared to whole fruits. “Try to keep your juice drinking to one cup per day,” advises Leech. “Particularly when paired with fresh vegetables, juices are a great way to consume nutrients, however sipping on juice all day is a really easy way to stock up on the calories,” Leech says. Another thing to remember is that pre-packaged juices are nutritionally similar to soft drinks so the best way to consume juice is by juicing your own fruit at home, that way you know exactly what’s in it. 2. SMOOTHIES If packed with the right stuff, smoothies can be a great way to consume a whole lot of nutrients in the one hit, however smoothies can go from good to bad real fast warns Leech. “Just like making your own muesli, it’s better if you whip up your own healthy smoothie from home,” he advises. he’s a UK-qualified architect, fourth generation builder, interior designer and the owner of popular Noosaville boutique Coco & Bliss. Sarah qualified with a Master of Arts in Architecture from the Royal College of Art in London in 1986, and has cemented herself in Queensland's property scene over the past nine years. Sarah Waller Design is responsible for the design of everything from simplistic single-storey abodes to rambling Sunshine Coast hinterland homes, since Sarah’s Australian arrival in 2006. And as if designing the million-dollar homes wasn’t enough, Sarah can offer an inclusive package – a ‘one-stop’ shop. In essence, her speciality is that she can project manage across the key areas of building and designing striking homes. Sarah is one of only a handful of women in Queensland who has an Open Builders licence, giving her authorisation to build just about anything operating under Sarah Waller Building Pty Ltd. The design and building companies have just completed a holistic service to plan and construct a five-bedroom home on acreage overlooking the Noosa Valley Golf Course in Doonan. Designed for Darren, Nicole, their three schoolaged children and family pug Stella, Sarah was commissioned to create an open plan stylish
home, which was child friendly without comprising on the design. “I achieved the brief via a careful selection of hardwearing, but beautiful materials in an array of greys to complement the clean lines of the design,” she says. Together with optimising its elevated position for seclusion and privacy from the street, the result was a beautiful and meaningly family home with individual spaces as well as a large open plan and airy family areas. Sarah says she is only as good as the subcontractors she employs, and thus engages the best, those who know her expectations and high standards. “Among my approved list of contractors is my husband Paul Blatchford of Blue Coast Electrical,” she said. “We work well together, and have worked on major projects including this Doonan home and others currently under construction on the Coast”. Together with her flair for interior design and as owner of Coco & Bliss, Sarah assists in finding a sense of home style to meet her clients’ desires. With a list of stunning projects on the drawing board, including two Doonan homes, as well as houses in Noosa Waters and across the Sunshine Coast, Sarah is currently working on her very own hinterland dream home, which due for completion later this year.

Build your own fire pit and enjoy the backyard all year round…
Jason Hodges offers five simple steps to build your very own fire pit. 1) Choose the right spot It’s important to choose a spot that is far enough away from plants, fences, trees or anything flammable. Consider the wind and the direction it will blow smoke from the fire. You should also be able to walk around the fire with ease. 2) Start digging! Dig a circular hole for the base of the fire – a three foot diameter
creates enough space for a good sized fire while keeping everyone close enough to be able to chat. 3) Prepare the base Level out some road base and compact. Once this is complete, spread sand throughout the trench and level. Sprinkle some neat cement over the levelled sand pad as this will help keep everything in place once you finish building and hose down your fire pit. 4) Start building Use concrete blocks to start constructing the wall around the pit. Choose a block that enables circular walls or has speciality corner units to save you cutting the units. My first choice would be Adbri Masonry’s Miniwall blocks, a great choice for DIY. They are easy to stack, do not require any mortar or glues and give a great finish. For square and rectangular pits, use Versawall. 5) Build your fire Construct a tepee by stacking wood and kindling in the centre of the pit. Light the fire and enjoy all winter long! Tips and Tricks to make your house seem bigger…
While modern home design favours large open spaces, there’s plenty of ways to make the most of your space if you live in a smaller home - without spending on costly renovations.

arrod Sanfilippo managing director of Burbank Homes gives us some helpful tips on making a room feel bigger that can be as simple as de-cluttering a central area and investing in good storage. “Start by having just a few larger ornaments on display, rather than lots of smaller ones - and colour match any groups of items to create a more streamlined appearance”, says Jarrod. “Vertical storage such as floor-to-ceiling cupboards will draw the eye upward and extend the height of the room”, he adds. The next step is to brighten cramped spaces to make them feel more open and airy. Lighter colours reflect and amplify light, whereas darker colours will absorb it - often creating a more closeted atmosphere. “Many people know that light or neutral coloured walls and floors help make a room seem larger, but another idea is to choose furniture within one or two shades of the wall colour to make it blend in with its surroundings and take up less visual room.” If you’re not keen on matching your furniture to your beige walls, look for pieces made of glass, lucite or other transparent materials which blend more seamlessly into a room and heighten its sense of space. While a light or neutral colour palette can work wonders in a smaller house, the prints and patterns in a room also play a role in how spacious it feels. Using striped patterns and large floor tiles will help lengthen the appearance of a room, but going overboard with prints can backfire and make a small room feel claustrophobic. Play it safe by adding texture with rugs and throws to build a perception of depth. And, as a final tip, when choosing furniture opt for light, airy pieces over heavier or bulky options. “Many of our more compact Burbank display homes are styled with Scandinavian-inspired pieces which are ideal in small spaces,” Jarrod says. To get the look, choose pieces with a light structure and tapered, exposed legs to help streamline your room and showcase it in its most spacious light.

Not only for the great blockbusters that Karen Quinlan has brought to Bendigo (and the added economic boost), but having worked there many years ago, I developed a love for their art collection and the building itself. Who would you identify as an exciting emerging artist/s on the Australian scene Nina: It’s hard to pinpoint a single artist these days as there are so many emerging young artists that are creating amazing works. I would have to say one I have kept an eye on for the last few years is Kate Beynon as well as Michael Cook, although I wouldn’t classify him as emerging but rather underrated. How do you renew your enthusiasm Nina: I have to say, attending conferences is a great way to connect with colleagues and I also sit on boards in the sector. The experience of living in the Eastern Highlands of Papua New Guinea as a child during the 1970s has had an enduring influence on Noosa artist Ulrike Sturm. The works in this exhibition are an exploration of the artist's memories of this experience, using the technique of hand-cut vinyl.

In 1994 the Commonwealth Government formally recognised Australian South Sea Islander (ASSI) people as a distinct cultural community. Twenty years on this exhibition brings together ASSI artists to creatively explore the hidden and difficult stories associated with ASSI heritage; to promote their unique culture; continued ties with their ancestral islands; and search for family and identity. e u l B p e e The D With a devotion to the ocean, award-winning leading marine photographer JUSTIN BRUHN spends his time capturing some of the most incredible snapshots of the sea world Australia has seen. But behind the pretty images, there’s a message that Justin wants us all to take seriously, as Coco Seymour -Griffin finds out.
As I scroll through the online portfolio of Justin Bruhn’s underwater images, I am in awe of their beauty. A lover of all things ocean-inspired, Justin’s gallery sets my heart racing, and immediately I feel like throwing on my scuba gear and winging my way out to the deep blue.

riginally from Adelaide, Justin was always attracted to working with marine life. Travelling the world in the late 90s working as a dive instructor, he soon found himself in Cairns teaching people to dive on the Great Barrier Reef, with his passion for underwater photography blossoming from there. “Working as a dive instructor, I used to borrow the Sea & Sea MX10 hire cameras whenever I had the opportunity, and I loved it. I adored getting up close and personal with the marine life.” Evolving gradually into a selftaught professional photographer, Justin began capturing images of divers and marine creatures at such iconic dive sites on the Great Barrier Reef as the ‘Cod Hole’ and ‘Osprey Reef’, and soon realised his calling in life. “I became acutely aware of how endangered the marine life
was,” explains Justin. “As a result, I wanted to capture worthy images in order to expose this vulnerability, and to get the marine conservation message out there as much as possible. I knew I could give the general public (who might never put on a wetsuit and go diving) the opportunity to see how beautiful the underwater world was, and hopefully in doing so, inspire them to become part of the marine conservation solution. In this way, Pure Underwater Imaging was created.” And it didn’t take him long, with Justin basing himself on the Sunshine Coast and soon becoming an award-winning leader in his field, and the first photographer to ever be accepted into the David Hart Galleries. “This was a big break as it gave me more credibility in the industry,” says Justin. “It gave me a great amount of exposure just when I needed it.” Having now forged a partnership with the Australian Marine Conservation Society in addition, Justin is on a roll. But it’s not all been warm waters and sunny days. It’s a job that has also had its fair share of nerve-wracking moments. “As an underwater photographer, I have to be able to ‘read the play’, and be comfortable to get myself in a position to capture the optimum shot,” explains Justin. “This can mean

fighting a strong current, or diving solo in order to have an image clear of other divers – but that’s all part of the job. The bronze whaler shark image in my gallery portfolio entitled ‘Determination’, for example, was actually a true deep-water close encounter with a predatory shark when I was diving in the Poor Knights Islands in New Zealand.” Another time, Justin found himself swimming in the company of others, when he thought he was alone. “I was snorkelling at Lady Elliot Island looking for

photo opportunities, when I suddenly felt a presence in the water. When I turned, I saw the breathtaking sight of a mother humpback whale and her calf swimming along side of me. I swam with them for about 20 minutes before they moved back out to sea. It’s moments like this that make me feel very fortunate to do what I do.” So what for the future for Justin and his fight for the ocean? It’s clear he only means to shout his message louder as his voice gets bigger. “In years to come, I would like to be sharing my
knowledge and skills in underwater photography with marine conservation photography tours, while directing my own marine conservation project in Australia,” nods Justin. “I feel privileged to be able to align myself with such an important purpose. “Success to me is achieving the goals that I set for myself, no matter how big or small, and not giving up. I think if you are passionate about something and you spend enough time doing it, eventually you are going to get somewhere.”

VIVID City Escape... Sydney We hadn't visited Sydney for some time. So with only two nights available to us we took the plunge, and booked our flights to savour the delights that Sydney always has on offer... Our own personal Amazing Race.
W
e had accidentally booked during the annual Vivid Festival, a time when some of the key buildings and landmarks in the city are transformed into a canvas of art, music and light shows. What a brilliant festival… Arriving on a early flight we dropped our bags at The Westin in Martin Place and walked to the city centre to our favourite shopping haunts... the heritage arcades, with their plethora of trendy little boutiques, jewellery shops, chocolate shops, art galleries and antique parlours all vying for space with quaint tea houses and quirky cafés. A quick lunch at The Vienna Café (an old habit) on the second floor of the Queen Victoria Building, and luscious take home box of treats from the Adriano Zumbo kiosk for later on. A quick look in The Art of Dr Seuss gallery then a dash down to the Queen Victoria Basement to check out the bargains. That evening we walked to Darling Harbour to watch the Vivid Festival dancing water and laser light show,

before continuing on the Star Casino to attend the 40th Anniversary of The Rocky Horror Show. What a fun night. Craig McLachlan definitely hasn't lost his appeal or wicked sense of humour. Next morning a Sydney Harbour EcoHopper Combo Pass, which included an attraction ticket option gave us 7 ferry stops that we could use at any time for the next 24 hours, as well as discounted entry to either Taronga Park Zoo or the Sea Life Sydney Aquarium. A great buy. A pleasurable couple of hours 'on safari' visiting Taronga Park Zoo, checking out the Gorilla enclosure to see the new baby, watching the Elephants going about their business, the Orang Utans just hanging out, and Giraffes checking out the city skyline. A great place to visit for those of us who are animal lovers. Evening arrives and it’s time to tackle one of Sydney’s multitude of dining options, we decided on Sails on Lavender Bay to take advantage of their fantastic position on the water at McMahons Point, a short 8 minute ferry ride from Circular Quay and time to enjoy the sensational views of the Harbour Bridge and Sydney Opera House magically light up for the Vivid Festival. Offering full water views over the bay through floor to ceiling glass walls, Sails on Lavender Bay is a stylish 'oasis' of dining pleasures, with a staff who are quick to assist whilst keeping a discreet distance, making conversation easy for diners wishing a little romance in their evening. Head chef Nathan Darling has great credentials, having worked with Rick Stein at Bannisters previously. He has designed a menu for Sails that showcases high-end produce in the best possible fashion. His technique is impeccable Some of the stars of our evening were the 'evening special' entree of Grilled Prawns with saffron butter; the Barramundi with pine nut, caper and currant salsa; also loved the side dish of Cauliflower 'mac and cheese'; the flaming Vanilla Creme Brulée with banana and parsley ice cream, peanut and popcorn praline was a showstopper! The menu is admirably supported by an extensive wine list, many available by the glass. By the time we were ready to leave, the evening ferry ride had become a little chilly - but the fabulous dining and adventure of it all was well worth the minimal hardship. Making our way back to Circular Quay we were again mesmerised as the city, Opera House, Art Gallery and Customs House were once again transformed by projected moving artworks. The stylish restaurant seats 150 comfortably in a bi-level format, with no table being too close to another, so that intimacy is ensured for conversations.
An adjacent private dining room seats 40, which is perfect for those seeking the perfect corporate or private celebration location. Although celebrity chef Matt Moran oversees the restaurant, it is executive chef Ben Russell who creates the magic in the kitchen on a daily basis, with a menu that offers diners the freshest of local produce available each season, and where innovative cuisine is the order of the day. Each season the menu is changed to reflect what produce is at its optimum, with dishes created to showcase what local boutique producers have on offer. A special Winter Lunch Offer is available daily and includes two courses (an entrée and main) with two complementing wines (one per course) to accompany for $59. With the option to include an array of sides (at extra cost) and of course, who can resist dessert in Winter? This is perfect for those wanting to enjoy a fussfree luncheon whilst taking in the river views. The menu on the day we visited offered diners an entrée of Mooloolaba Albacore Tuna Tartare with green peas, anchovy and egg matched with a 2014 Symphony Hill Pinot Gris from the Granite Belt, and a main of Beef Cheeks slow-cooked and served with soft polenta and parmesan, accompanied by a 2012 Symphony Hill Cabernet Sauvignon. My partner was delighted with both the dishes and the Queensland wine matches. I decided to delve into the al a carte menu which offered one course for $38/two courses for $58/ three courses for $72. After eliciting menu suggestions from Neville our waitperson, I chose the Blue Swimmer Crab with silken tofu and puffed rice, which Head sommelier Ian Trinkle paired with a glass of 2013 Dr Mayer Remstal Riesling; then chose the Flathead which was steamed and served with diamond clams, green olives and lemon, which was ably matched by a glass of L'esprit del Horizon Blanc. With sides of Witlof and pear salad with candied pecans and blue cheese, and a metal bowl of Hand-cut chips, our luncheon became a feast. For dessert we chose to share a lighter than air… luscious Banana and Chocolate Soufflé with banana custard and a glass of Campbells Muscat. What a way to end a splendid meal. The wine list boasts more than 400 local and imported wines featuring iconic Australian labels including some Queensland wines, as well as a fine selection of French, Italian and new world wines, and a good selection of boutique beers and liqueurs. ueensland Performing Arts Centre (QPAC) has secured an exclusive performance from one of the world’s most renowned chamber orchestras, Italy’s I Musici. Presented as part of the Centre’s 30th Anniversary program and in association with Queensland Music Festival (QMF), I Musici will deliver one Australian exclusive performance on Saturday 18 July 2015 in the QPAC Concert Hall. In 2013, I Musici received The BrandLaureate Premier Award from the Asia Pacific Brand Foundation, naming it the world’s leading Italian chamber orchestra. This oldest continuously active chamber group in Italy is famed in the world of music as both remarkable and rare. I Musici’s first performance in Rome in 1952, broke all the rules, playing baroque concerti with a tight knit ensemble of just twelve players and no conductor. A year later, their historic first recording of

Vivaldi’s The Four Seasons introduced Italian 18th century music to the world. They have become one of the most respected chamber ensembles in existence today, being the first to record this masterpiece, and notably the first group to record classical music on CD for Philips; since selling over 25 million copies in various editions. They also have the distinction of having recorded, in the 1970s, the very first classical music video. QPAC Chief Executive John Kotzas said, “Bringing the world’s best in performance provides a unique opportunity for those who will work alongside them to learn and it attracts new audiences to our theatres. “This is an opportunity for all Australians to travel to Brisbane to witness art they would otherwise need to travel to Italy for and our audiences have recently shown they won’t miss a performance of this calibre right on their own doorstep,” Mr Kotzas said. As graduates of the Accademia di Santa Cecilia, the ensemble has brought Rome’s name and Italian music to five continents. local Sunshine Coast musician is set to storm New York with her BIG ideas on music in small communities.
Louise King, a professional musician and teaching artist, who lives in the quiet hinterland village of Eudlo on the Sunshine Coast, has just been awarded a place to attend an intensive teaching artistry seminar in New York in July. This highly competitive seminar is designed to bring together well-established artists in many disciplines from across the globe for further training and networking at the prestigious New York's Lincoln Centre of Education. Louise is a professional classical musician with over twenty-five years international experience is leading the way in putting together a new future for classical music. Concerned about the decrease in audience attendance at Australian classical music performances and the increasing age of the audience, Louise is developing new ways to capture and reach new audiences, and searching for collaborations and partnerships in her community that allows the transformative power of music to speak to as many people as possible.
“I am really excited to meet other teaching artists from around the world who have a passion for arts experiences, education and audience development,” says Louise. “I am thrilled to have been selected from a global pool of applicants and to get the opportunity to go to New York to see how America is dealing with lack of government funding in the public arts and education sectors. This is a chance in a lifetime. I want to find out how independent artists and small art organisations are collaborating to create artistic projects with social change at the core of their practice.” Louise continues, “I advocate every day for the importance of arts education through my performance and teaching
practice, and it is so exciting to guide learners, listeners or non-arts partners in creating enriching art education experiences that are deep in learning and personal meaning.” When asked why are the arts is important to the wider community, Louise states,“I believe that through exploring art works we develop reflection, creativity and enhance the connection between art and life. I actively engage learners and invite in new audiences by opening up the artistic experience. This allows the development of personal aesthetics and the creative processes for learning. I am delighted to have been awarded a Quick Response Regional Arts Fund grant to contribute to funding my trip to New York."
