Hotel Coco launch… at CLO Studios in Noosa Junction Guests sipped French Champagne, dined on a vast array of tantalising fare, and mingled with collectors, as they were transported to the mythical 'Hotel Coco' - an imaginary place on the Equator's circle. Artist Stanislas Piechaczek drew inspiration from his French roots, and the sub-tropical vibe of his adopted

home town. 'Hotel Coco' is Coco from the Spanish word Co'ctel, meaning cocktail and refers to the French fashion icon, Coco Chanel. Cloe Tozer of CLO Studios explains that she was drawn to Stan's work, with its larger than life geometric shapes, contrasting patterns and colours. "We love to feature local and international talent, be it lane way parties, pop-up events or art exhibitions. Watch this space for more!" said Chloe.

Kidman’s comeback. She may have turned 50 last year, but proving age is no longer a barrier to talent, Nicole Kidman is producing the best work of her life, as Noosa Style discovers...

It’s true - 2017 was officially the year of Nicole Kidman. In fact, so ubiquitous was the Sydney native in so many pieces of revered cinema, that the 70th Cannes Film Festival was jokingly dubbed ‘Nicole-Fest’, with The Killing of a Sacred Deer, The Beguiled, How to Talk to Girls at Parties and Top of the Lake all heavily lauded at the annual extravaganza. And that’s before we even consider the triumph that was HBO’s Big Little Lies.

After a prolonged period where Kidman was working, consistently, albeit not shining, this sudden assault on our senses could be seen as a well-planned and superbly executed comeback. However, the statuesque star happily admits that when it comes to her career, she has never had a plan. “I’m completely spontaneous and random in my decisions, so never let it be said that I don’t have diverse taste!” she begins, with a laugh.“I love jumping in at the deep end. Why not? That’s my favourite saying, I think it has such potential and choice… why not?” Having taken on a breadth of female roles including the gazing ingénue (Days of Thunder), the sex siren (Batman Forever), the housewife (The Stepford Wives) and the selfless matriarch (Lion), Kidman knows better than most the perils of being a woman in a man’s industry. However, over the past few years, the stunning ‘strawberry blonde’ has not just witnessed the huge shift towards more female-driven narratives, she’s been fuelling it. The best example of this is the television phenomenon that is Big Little Lies, which is based on Australian novelist Liane Moriarty’s book of the same name. It’s a project that only came to fruition thanks to the determination of its two lead stars and co-

executive producers, Kidman and Reese Witherspoon, who had become close friends in recent years in Nashville, Tennessee. Witherspoon grew up there, while Kidman moved to the country music mecca after marrying musician Keith Urban in 2006. The only thing missing was a common project, but Kidman used her Antipodean connections in convincing Moriarty to sign over the rights to her book with the proviso that the two Academy Award winners both star in the project. Explains Kidman: “I had coffee with Liane and said, 'Let us option your book, please, and I promise you we’ll get it made’. She said, 'Only if you and Reese play Celeste and Madeline’, and I said, 'Deal’. It was that easy!” Playing Celeste, however, a mother of twin boys married to Perry (Alexander Skarsgard), an abusive, jetsetting businessman, proved to be a harrowing task, which left the actress feeling emotionally drained. Though surely it was even harder for her real-life husband to watch? “He was glued to every episode,” she replies. “I had his friends texting me:‘you have to tell us what’s going to happen’,” she says. “First and foremost, he understands that I’m an actor and what it is to be an actor, and what you sometimes have to do to get to the place you’re going. I know those scenes weren’t comfortable for him to watch… I don’t think they were comfortable for anyone to watch, but especially when it’s your partner in them. Yet he supported me through those tough days and nights because he knew how major this was to me.” Unlike her Big Little Lies alter ego, Kidman and Urban really do have an idyllic marriage. They split their time between homes in Nashville and Sydney with their two daughters: Sunday Rose, nine, and Faith, seven. With Kidman also sharing two adopted children with ex-husband Tom Cruise – Isabella, 25 and Connor, 23 – she and Urban navigate their busy working continues next page...

When asked about the secret to their marriage, Kidman says: “It helps that, beside my kids, he is the person that I always want to spend the most time with - he has a great sense of humour. But even when you’re in love, a lot of patience and commitment is still required!” With both Kidman and Legend boasting legions of devoted fans, one might speculate as to whether jealousy ever gets in the way, though Urban appears to profess his love for his Aussie sweetheart every available opportunity. On his latest album Graffiti U, the singer not only revealed that several songs were inspired by his wife, but Kidman even provided vocals on the lead single Female. And to celebrate their 11th wedding anniversary last year he posted several adorable photos of the pair with the caption:“Happy Anniversary Babygirl - 11 years and you still feel like my girlfriend!”. Living a life filled with love, creative integrity and success, things simply couldn’t get any better for the actress, 51 in June, though she does admit that like all working mothers it’s sometimes tough to balance a career with the needs of her children, recalling her plans to repeat the success of her 2015 West End run in the DNA discovery play Photograph 51 on Broadway. “That was the plan,” she says. “But then I put the idea to my girls and they said ‘nope’! They know what they want! When I did it before, it was hard – I wasn’t there for bedtimes and I wasn’t there for dinner. It takes up so much of your life, and this is where a balance between work and family is impossible.” She may be one of the biggest superstars in Hollywood, but the Oscar winner emphatically supports the notion that motherhood is the greatest role there is. “You have to make a choice and it will always be them – they come first.” continues next page...

Q&A Your film Lion was based on the true story of an Australian couple who adopted an Indian boy - is that what drew you to the project? NICOLE: Lion was an ode to Australia, in the spirit of a beautiful Australian couple who adopt this boy in the bathe of such adoring love; it’s a love letter to the people and the culture of Australia, because there’s this heart and strength to the Australian people.

Is it important for you to work on Australian films? NICOLE: I love to be part of Australian film-making, I love to work with Australian actors, Australian crews, Australian locations. We shot Lion in Hobart and it was amazing to introduce my daughters to there, and hear them say,‘this is our favourite place in the world.’ That’s just gorgeous to hear.

You are about to star in a huge budget, big effects epic, Aquaman.

Nicole... The recent Sunshine Coast Solstice Charity Swim organised by Alexandra Headland Rotary, offered participants a refreshing ocean swim to celebrate the turn of the season, whilst also raising much-needed funds for The Young Veterans Sunshine Coast branch.

T

he 1km, 2km, and 3km events and the course commenced from Alex Surf Club, and was open to all levels of swimmers. The 1km was the perfect introduction to ocean swims, 2km for the more confident and the longer 3km for the more experienced swimmers. The annual event raises funds for Alexandra Headland Rotary and The Young Veterans, a support group for Australia’s growing veteran community. Assistance that is in high demand, with around 8.3% of Australian Defence Force members experiencing PTSD in the last year - and an estimated 84 veteran suicides in 2017. 'Young Veterans is about giving ex-servicemen and women a new community within the younger generation of veterans. Our group

Growing up on opposite sides of the world, it

was a mutual love affair with watches that brought Peter Petzold and Dr Lydia Dalle Nogare together, eventually leading to the creation of Noosa’s iconic time-piece boutique, Define Watches.

uring his early years near Frankfurt in Germany, Peter was introduced to the watch world at a young age by his father, an avid collector of time-pieces and board instruments. His first watch was an Omega from the 1960s, a gift from his father at age 9. Back in Newcastle, Australia, Lydia was also becoming enamoured with the watch and jewellery world, attending the Vicenza Oro

Fair held at her father’s Italian home town - as a young girl. Lydia received her first watch at 11, a small marquisate watch, given to her by her grandmother. After meeting by chance some 20 years ago while holidaying in

Asia, the pair quickly discovered their shared passion and before long, joined forces to become suppliers to some of the biggest the Swiss and German watch brands, mainly in the field of marketing, PR and product enhancement. “Moving from being a supplier to a dedicated watch importer and specialist was, in a way, a natural progression when we relocated from Germany to Australia 9 years ago,” says Lydia. The business began its life in Brisbane in 2009, before the couple packed up and moved to the Sunshine Coast, along with their four sons and much-loved dog Amy. “Brisbane was a good hub for national and international travellers and it made sense during the start-up years to be in a capital city along the east coast.” While the Brisbane base served its purpose, relocating to Noosa was always part of their long term business plan.

“Noosa is the perfect location for Define Watches, offering the ideal mix of business innovation, boutique retail/ser vice and luxur y lifestyle – presented in a relaxed, informal environment. “In terms of lifestyle, we come into our shop on Quamby Place and look out at the gorgeous ocean inlet each day with the wonderful smell of the local restaurants wafting our way – not bad for a day at the office.” For the family though, the decision was made to build their life a little further out, choosing Doonan as the location to create their dream

home. “We both love the buzz of a city but also appreciate the tranquillity of living in less urban areas,” says Lydia. “The Sunshine Coast has it all and Doonan is perfectly situated to allow us to make the most of the coast and the hinterland.” Engaging a local builder and tradespeople, the couple set about creating an environmentally friendly, German inspired home. “We like the idea of living off-grid as much as possible and have incorporated solar power, water tanks and other thermal materials to optimise efficiencies and reduce our footprint on the environment. “We tried to build a home that would be simple to upkeep and retain its appeal over time.

When it was founded the company had one knitting machine and one sewing machine in an area of 80 m2. Today it spans approximately 7000m2 and it has the very best production systems on the market. Tam & Company is something of a rarity because it is one of the few companies in Italy that still keeps its entire production cycle in house. Everything is conceived, designed and made on the company premises. It is a form of industrial craftsmanship . More than 100 people work for the company. They constitute the very heart of its existence.

The unpredictable world of veterinar y emergency and critical care (ECC) is both daunting and exhilarating, each shift is different and the work environment a combination of passion and electricity. Story: Naomi Hansen

The team of veterinarians and nurses that elect to undertake this vocation are unique in their desire to work through the night with patients that are acutely and critically unwell. ECC veterinarians and nurses are highly educated, highly motivated and conditioned to remain calm and empathetic at all times. This may seem like a rigid set of selection criteria, but we understand, above all else, that our patients are your fur babies. Our pets are all unique and special, and their ailments affect us more than we like to admit, especially when they are unable to articulate the chain of events that lead to their emergency situation, and we are unable to communicate to them that ‘it will all be OK’. Aside from this, we are generally self-confessed adrenaline junkies… Imagine working every shift on sympathetic overdrive with your adrenal

glands conditioned to the telephone ringtone. Six months ago we opened an Animal Emergency Centre (AEC) in Noosa to service the veterinarians and pet owners of the Sunshine Coast. My name is Dr Naomi Hansen, and I am the Veterinary Director of this exceptional team of ECC veterinarians and nurses. My practice manager (Michelle Hall) and I are very proud to introduce you to one of our team members: Dr Alice Shann . Dr Alice (Allie) Shann Allie is a Victorian who, like many of us, relocated north for a combination of reasons: the weather, the ocean, the surf and the friendly culture that is endemic in the Noosa community. Allie grew up along the Great Ocean


Road, daughter to a pediatric intensive care specialist and pediatric oncologist she elected to combine a love of animals with her interest in medicine. On completion of her veterinary training at Melbourne University (2015) Allie was accepted into a surgical internship, her dad advised her to strengthen her surgery skills if she was planning on pursuing a future in ECC. Why ECC? I have always had a passion for emergency medicine: the electric environment, the variety of cases and the fact that no two shifts are ever the same. I love working with the Noosa AEC team as they embody my passion for animals and they are committed to ensuring all patients are treated with the highest standard of veterinary care available. Do you have a favourite pet? I cared for a rescued kangaroo for 22 years, Marloo. She was a majestic animal with a quirky nature who adopted my family and me more than we adopted her.

Tell us about the ocean… I have always loved the ocean and my secondary schooling years were spent at a boarding school very close to the Great Ocean Road. The open beaches and the surf down there are so raw and exposed, it is impossible not to feel and appreciate life when you are in the water. The surf and local surf club were my community. The move to Noosa has allowed me to fuse my passion for Veterinary ECC and my love of the ocean and surf culture. Castaways Beach is my favourite doggy playdate location. I have a 2-year-old Papillon called Penny and a 7-year-old Pomeranian cross called Mini. Today they are behaving like the spoilt children that they are…who knows what they get up to during the evening when I am on shift. What about the future? In the next 12-18 months I intend sitting my membership examinations in ECC with the view to specialising in ECC.

A new 20-countr y YouGov international study examines which attributes people most prioritise in a par tner. The results are good news for the romantics - as across the planet personality is prized ahead of looks.

The battle between looks and personality is a classic dating dilemma, and the research shows that Aussies overwhelmingly come down on the side of personality. 85% of Australian women rank personality as more important than good looks, whereas 72% of men say the same. Internationally, the preference for personality over looks is replicated across the globe. the overall results in every country surveyed show that people are more likely to rank personality as more important than good looks. The only deviation from this trend comes among Vietnamese men among whom - only 46% rank personality more highly than good looks (compared to 64% of Vietnamese women). In each of the 20 countries studied women are more propersonality than men. This difference was most pronounced in Saudi Arabia (where 79% of women ranked personality more highly than looks, compared to 52% of men, a difference of 28%) and Egypt (83% of women compared to 55% of men, also a difference of 28%). Women in the Nordic countries place the most stock in a partner’s personality – it is ranked as the single most important attribute by 73% of Swedish women, 69% of Danish women, 66% of Norwegian women and 59% of Finnish women.By contrast, those who are most fixated on looks are Vietnamese men (44% of whom ranked it is the single most important characteristic a partner could have), Indonesian men (35%), Saudi Arabian men (also 35%), Thai men (33%) and Hong Kong men (also 33%).

Start with calm, glassy seas, then add a dash of cordon bleu splashed with old fashioned hospitality. Generously season with 12,000 humpback whales, lightly bake for seven hours in the warm Queensland sun and soak in the vitamin sea. Add in the sleek lines of Freedom III and the expertise of Captain Keith Reid and voila, you've got a winning formula for a great day on the water in Australia's whale watching capital, Hervey Bay.

“What can I say, our guests come for the whales and come back for the profiteroles”, laughs French chef turned Whale watch Skipper, Keith Reid. Captain Keith spent his formative years steering his way around French kitchens in New Zealand, and serving tucker in his own restaurants in Hervey Bay, before answering the call of the wild. With wife Sue, he purchased a 58-foot catamaran - the Freedom III - from legendary Australian conservationist and filmmaker, Ben Cropp; and went in search of Hervey Bay's humpbacks. Freedom Whale Watch & Charters was born and the rest, as they say, is history. These days Keith and the crew of Freedom III are one of a handful of operators in the Fraser Coast region to offer a full day out on the

water, all season round. “We used to run half-day tours, but found when we were watching the clock we didn't have the freedom to stay with a humpback if it was mugging us - or the freedom to just go with whatever Mother Nature threw at us,” he said. According to Keith, he already had a reputation for never coming home on time, so launching a full-day tour for the 2017 season was an absolute no-brainer. “Whale watching in Hervey Bay is not just an excursion, it's an experience.” he said. “It's just like seeing elephants for the very first time – there's a very real emotional connection with these animals from the moment you spot the sheen on their backs to the very last breach.”

Along with guaranteed humpback sightings during the season, Freedom III passengers are also guaranteed to roll off the boat a couple of kilos heavier, thanks to a scrumptious on-board menu spanning morning tea, lunch and afternoon tea, and their cordon bleu Captain wouldn't have it any other way.

“Essentially, six lucky passengers on Freedom III's August 21 and September 2 tours can sign up to learn the finer points of whale watching photography from an expert,” he said. “It's the ultimate souvenir!”

Tanawha Farm opened its gates to Foster Families across the Sunshine Coast recently, offering invited guests a Super Nova themed day, complete with nine costumed Super Heroes, a jumping castle, Alpaca shearing, balloon modelling and sausage sizzle. The day was a huge success and put smiles on the faces of the 60 children and 38 adults who attended the big event.

he Jones Family, owners of Tanawha Farm, admire the dedication of foster parents and their desire to make a difference in young individuals to help them thrive. Providing Tanawha Farm for a Super Hero themed celebration was their way to say thank you to those helping in our community - those who are, in their eyes, real life Super Heroes.

The farm was the perfect location to bring a little bit of sunshine into the lives of the foster families and their charges. The farm provides a complete farm experience for visitors, with a petting zoo, ducks, goats, piglets, guinea pigs, chickens, donkeys, alpaca’s and more, and is fast becoming a favourite with many Sunshine Coast families for functions and birthday parties. With future plans to incorporate a farm stay option, Tanawha Farm’s popularity is due to the increasing number of parents looking for alternative outdoor and authentic experiences for their children. “It’s an opportunity for kids to get their hands dirty, whilst connecting with nature and animals; and I think there is something soothing to all humans when we slow down, break away from technology, and enjoy the simple things in life. NS Sunshine Coast International Fashion Festival Announces 2018 Model Ambassador Meet Beti Chuol.

eti Chuol has been selected as the Model Ambassador for the Sunshine Coast International Fashion Festival (SCFF) 2018. A 20 year old, unsigned model from Brisbane, who has been thrust into the global spotlight in her new role as Model Ambassador for 2018. "I am someone who can be looked up to and respected. I am kind and have a warm heart towards everyone. I will be representing the SCFF in a positive light". Beti joined the SCFF as a model in 2017 and was adored by everyone who worked with her. Her role is to be a spokesperson for the event, the “face” of the event - and to guide and mentor the many models who walk for the event every year. An integral part of the SCFF core team for the year, she will not only represent but get the word out about this international calibre event. But, for it’s 11th year, the Sunshine Coast International Fashion Festival hasn’t stopped at just one Model Ambassador. Also, Meet Taylor Ridley. Having spent more than an hour in the rain waiting for a train to arrive, Sarah Hansen arrived late to work one day, deciding then and there that it was time to leave the hustle and bustle of Sydney behind.

Quitting on the spot, she packed up her things and moved to Brisbane, where she met her future husband; spending some years together in Toowoomba, before relocating to Noosa. But it wasn’t long before the pair were heard the call to move again - only this time, it would be a little further. “In David’s line of work we always knew that the best opportunities for him were going to be overseas,” says Sarah. “We’d discussed theoretically where we’d be prepared to move to - and Bangkok was one place we both loved. “Within weeks of this discussion he was contacted by a colleague about a position in Bangkok and the rest is history.”

ut it wasn’t as easy a transition as the Hansens expected. “They needed David to start ASAP, so he left and I was left at home with a 2 year old to pack up and prepare our house for rental. “I was a wreck by the time Teya and I got on the flight to Bangkok and spent the first 6 weeks catching up on sleep!”

After a few weeks though, it was all systems go - exploring, shopping, eating and drinking became the norm. “The expat community in Bangkok is amazing so making friends was very easy - from playgroups to exploring the markets to eating your way through the thousands of restaurants, it was impossible to ever get bored or lonely.” With Sarah’s husband, David, working and travelling often, she and Teya began going on little adventures of their own - to Chiang Mai or the provinces beyond Bangkok, and overnight train trips to Laos. “The main lifestyle difference was having domestic help, it frees up so much time but also makes you a bit lazy,” says Sarah. But after awhile, she says, day to day life isn’t hugely different to life in Australia. “There’s the chaos of getting up and getting everyone to school and work every morning, grocery shopping, cooking the evening meal and the bedtime routine.” Culturally though, Sarah says Thailand made her a lot more patient. “As a culture the Thais are very chilled out, no one gets angry, there is no road rage, everyone is very polite.“Having returned I now find that things I would get irritated about in the past, now I just shrug my shoulders.” Sarah spent much of her time gardening in Thailand, buying her first plants from a vendor pushing a cart within a week of their arrival. “We had no furniture in our apartment but we had plants! “The next week I dragged poor Teya up to the plant markets in the north of the city in 36 degree heat and from there I was unstoppable. “Once our balcony and apartment resembled a jungle and I couldn’t squeeze or hang another pot

inside or out, I started on my friends’ and neighbours’ balconies.” Word got around and soon, Sarah was designing and planting up balconies for other expats. “Most expats in Bangkok are from cooler climates so were lost in the world of tropical plants but I was in my element.” After three years, it was time for the Hansens to return home, only they decided to take a different turn, opting to join Sarah’s parents and siblings in Tinbeerwah. “David’s job allows him to work from home so we had a lot of flexibility. We tried living in Noosaville but learned that we much prefer the space and privacy of the hinterland.” Since coming home, little Teya - now 5 - is thrilled to be surrounded by her cousins and broader family. “With five cousins aged between two months and five years old it’s wonderful to have the next generation all growing up together. “This is her first real winter though, and she’s less than impressed with the cold but wants to know when the snow is going to come.” Sarah now works with her mother, Lolly, at the family store - Sea Dragon Style in Eumundi Noosa Road - selling beautiful important, hand-painted Asian pots and Indian brass. “I love meeting and talking to the people who come in. “I do much of the planning, logistical, marketing and social media work meaning I need to spend a fair bit of time at the computer without interruption – and being the easily distracted type, this means I need to do that at home, not at the shop!” Of course, much downtime is spent enjoying the climate and local beaches, but at the end of the day, Sarah is still all about the garden. “Anyone who lives on acreage around here will confirm that if you want to be happy on acreage you’ve got to love the time in the garden.“We’ve got some renovations to do so that takes up a lot of time at the moment. “However we do make a point of drawing a line and not letting it consume us so we also go to the beach a lot, the various markets every week and buying a boat is hopefully on the not too distant horizon.”

Cauliflower & Almond

to it, and got quite violent when we changed it. Serves: 4-6

Barbara Ross invented this many years ago at The Goat, when some serial incompetence on the part of the greengrocer, coupled with my inability to resist a bargain, left us with a huge pile of cauliflowers. The resultant piece of culinary genius was on the menu for so long that quite a few of the regulars became addicted

Ingredients: 1 large cauliflower 75g (21/2 oz) butter 1 onion 50g (13/4 oz) flaked almonds, toasted 800ml (28 fl oz) chicken or vegetable stock 570ml (20 fl oz) full cream milk salt and freshly ground pepper, to season Method: Chop the cauliflower florets, discarding the main stalk.

Fry the onion in butter in a frying pan over medium heat until soft. Add the cauliflower to the onion and toss quickly in the butter. Add the stock and simmer for 15 minutes or so. Add most of the almond flakes to the soup (saving some to garnish). Remove from the heat and liquidize or blend into a smooth mixture. (Don’t overdo it. You are looking for a bit of texture with this soup. We use one of those handheld blenders.) Add the milk, return to the heat and bring back to simmer without letting it boil. Season with salt and plenty of freshly ground pepper.

he four days of the annual Noosa Food & Wine Festival offered visitors a look into the food culture of Noosa, as well as an overview of some of Australia's premium winemakers and boutique beer brands. More than 55 chefs were on-hand to share their talents and cooking secrets with dedicated foodies, as well as offering their 'talents' at a selection of signature dinners and lunches around the region.

Highlights included the popular Long Table luncheon in Hastings Street, the Festival Village in Lion's Park, Producer's Pavilion, and the Under the Moon - Silver Party in the beach tippi at Main Beach. NS leased a licence and started fishing.” Theo began selling seafood to wholesalers, but soon uncovered an exciting and untapped market. “There was a huge demand from high end restaurants that needed fish of the finest quality.” He began digging a little deeper into his lifelong hobby, and soon discovered a variety of new techniques which could be used when processing and storing fish, which significantly impacted the quality. “I use the Ikejime technique to create sashimi grade fish with beautiful colour and flavour of the finest quality.” And so began Huey’s Fisheries. “We head out in the early morning and fish overnight, so preparation is everything,” says Theo. “I take heaps of ice to ensure that the fish comes back in really fresh.” With sustainability front of mind, Theo ensures every fish is line caught by hand and handled with special care.“There are no nets and nothing comes out of the ocean that won’t be eaten. “I love that I catch fish for a living but don’t impact the sustainability of the ocean.” After a successful catch, Theo and his crew head back into the Noosa River, stopping at the Jetty near Wasabi Restaurant and Ricky’s River Bar and Bistro to unload. “The chefs love coming down to the boat to select which fish they would like for their menu.“I then drive my boat to a Jetty at Noosa River, which is where the rest of my customers come to collect there fish.“The fish that the chefs collect off my boat have only been out of the ocean for 24 hours or less. It doesn’t get any fresher.” Over the past 12 months, Theo’s business has grown exponentially, more than he ever imagined possible. “I can hardly believe it,” he says. “I am working with such amazing chefs at great restaurants which can’t get enough of my fish. “You can taste and see the difference with my fish, and good restaurants won’t settle for anything less than the best quality.” Demand for Theo’s fish has grew at such a rapid rate, he was forced to upgrade his boat to a bigger model around 12 months ago. “I needed to store more fish and take out more crew. Night Runner is an 8 metre boat that is perfect for overnight trips.” Aside from the unquestionable freshness of Theo’s fish, his approach to sustainability makes his offering unique to other seafood providers.“We pride ourselves on the quality of our produce and our ethical approach to fishing.“The time I take to kill and store the fish is something different.” Along with Wasabi Restaurant and Bar and Ricky’s River Bar and Bistro, Theo also supplies Locale, Whisky Boy, Noosa Waterfront Restaurant and Bar, and PItchfork Restaurant with fresh fish. Of course Theo also makes sure he takes the time to enjoy some of his own handywork. “I cook and eat my catch a few times each week.“I also love to each my catch at the restaurants I supply to.” And the best part? Theo is able to catch, sell and devour his fresh fish, without ever stepping too far away from home. “All of my fish are caught off Laguna Bay. You don’t have to go far to find amazing species of fish off Noosa.”

lways fascinated with sealife, Theo spent his childhood snorkeling and fishing, catching his first fish at just two years of age. “My old man taught me how to fish as a really small child,” says Theo.“It came really naturally to me. “I got my first boat at 8 or 9 years old. It was a little dingy called Grinner. I would go off by myself in Noosa River and fish all weekend. Theo says almost all his childhood memories have something to do with fishing.“I have so many memories of fishing as a child as it really was all I did.“I remember going sailing with my parents at about 10 years old, we were off of Gladstone and I caught my first Marlin. I was so stoked.” It’s little wonder fishing became more than just a hobby for Theo. While fishing was Theo’s primary source of fun, before long, he found a way to make a living out of it too. “There was never anything I was going to do for work that didn’t involve fishing,” says Theo. “I have worked throughout Australia fishing, diving and filleting fish since I was 15 years old. “The only problem was that I didn’t like working away from home, so I figured that the only way to make a living from fishing in Noosa was to work for myself.” So four years ago, Theo did just that. “I started fishing out of my 5 metre boat with the equipment that I already had. I

Koonara Wines owner Dru Reschke, said even though they have been practicing organic viticulture for over 10 years, it’s great to finally receive official certification. “We have not used any pesticides or herbicides in our Coonawarra vineyards for over a decade, as it can rob the soil of nearly all the good micro-fungi,” Dru said. “The vineyard is like our bodies; get the nutrition right and it stays healthy and disease pressure drops, and so the number of sprays needed drop as well.” The European Union recently voted to phase-out Glyphosate, commonly know as Roundup in Australia, over five years with a full ban to be enforced by the end of 2020. The International Survey of Herbicide-Resistant Weeds reports there are around 103 subtypes and 63 weed species with herbicide resistance around the world. “Going organic can actually be cheaper than regular management of a vineyard. It’s important to get a soil test done and then replace all the missing trace minerals.” Insects also play and important role in Koonara’s biodiversity plan. “We have identified five wasp and three spider varieties, and even a Scorpion Fly, which are all completely harmless. These insects larvae feed on our vineyard pests such as Vine Moth – and many of those so-called weeds are also a food source for them.” “One wasp - the Trichogramma Wasp, is only the size of the sharp end of a pin. n Australian native, Citrus Australasica, has attracted quite a following due to their zesty bursts of flavour, and in my opinion, their prettiness as a fruit, adding a plume of elegance to the dishes they adorn. Sunshine Coast grower and agronomist, Jade King, of Green Valley Agriculture is growing these delights on their 30 hectare Glass House property and chefs have been enthusiastic to discover fingerlimes that are locally grown and quick to embrace this growing trend. Me, well I was excited to visit Jade and see how these tangy little pearls, also known as citrus or lime caviar, were grown. In nature, the fingerlime is generally an understory shrub in rainforests, but grown commercially they are quite an attractive feature plant, though a little prickly! The fruit hang like Christmas ornaments that are a beautiful deep mahogany. Slicing the fingerlime in two, the pearls spill from their leathery case, and they exude a wonderful sweet fragrance, belying the tartness held within. They are quite the taste sensation. While fingerlimes are available in an assortment of colours, Jade has chosen to cultivate the variety ‘Red Champagne’ its blush shades, particularly pretty. However, it is not all about prettiness. Jade’s choice was quite deliberate as this variety has few seeds, as well as superior shelf life which makes it a desirable choice amongst chefs. The ‘Red Champagne’ flowers all year round, so trees will have both fully ripened fruit simultaneously with new flushes of flowers and every cycle in between, making for extended seasons, resulting in year round supply. Due to the tart citrus flavour, fingerlimes can be used in much the way lime or grapefruit might be used, though it does tend to be used a little more as a garnish than as the primary ingredient in a dish. They are marvellous on oysters and with seafood in general; quite a star, as well as conversation starter, in cocktails; and a fabulous little burst of flavour in or on desserts and salads. Inevitably, the range has expanded substantially. Jams, relishes, pestos, a sensational raw salad dressing, hommus of varying delicious flavours, as well as a ‘d’vine’ range of sauces and dressings. If you visit her farmers’ market stall you will also find some of her rather special smoked condiments, which are sold exclusively at the markets. Loving food, and good nutrition, Sue drew on her vast experience in restaurants and five star hotels, to develop her range, focussing on quality Australian and local ingredients wherever possible, all made on site in her Noosaville commercial kitchen. Growing up in New Zealand, Sue eventually made her home Noosa, crediting her mother, Shirley’s, garage full of preserves prepared from the bounty of the family garden, as the inspiration behind her own creativity in the kitchen. The nutritional aspect of her condiments is paramount and Sue is always looking for the secret healthies to add to her range, which is how her latest collection, a range of flavoured cold pressed flaxseed oils, came about. Pioneering once again, Sue was looking to improve the flavour profile of flaxseed oils, which are used to add those important essential fatty oils in the form of Omega 3-6-9s into your diet. Resulting in a range of four flavours; chilli, garlic, natural, and my favourite, lemon. Using real lemon, it adds a nice little zing to my morning smoothies, though they are great used in both sweet and savoury dishes. For anyone who has tried flaxseed oil, they would know that the natural flaxseed flavour is a slightly bitter one, so there was quite the journey of experimentation to find a way to counteract the bitterness and to make this wonderful healthy oil, the pleasing flavour splash of goodness that it is. ou might equally add a list of ethnicities and cultures to that line-up too. Or sexualities for that matter. As George Michael’s Freedom confesses (the song I’ve stolen the title of this editorial from), the pressure to be what other people expect you to be, or the assumptions made about a person based on their appearance, is so often at odds with how a person sees

themselves. It might seem a bit crude and lowbrow to parallel a mainstream smash hit pop song with a contemporary art project commissioned for the Sydney Biennale, but even the video clip’s use of lip sinking supermodels in lieu of an appearance by George Michael himself goes towards acknowledging the performative aspect of our identities – an idea that is both literally and poetically unpacked in Deborah Kelly’s No Human Being Is Illegal (In all our Glory). The models in Kelly’s photographic series do not come to us from the runways of New York or Milan. They are everyday people – like you and me – interested in being part of a project that celebrates our shared humanity and draws attention to the individual stories behind our easy assumptions and casual (and not so casual) prejudices. And instead of being adorned in high end fashion, these models present themselves naked – in all their glory –

reproduced at life size as they stand eye to eye with visitors to Noosa Regional Gallery – the last venue for this exhibition as part of a four year national tour. No Human Being Is Illegal (In all our Glory) brings together 20 photographic portraits of people drawn from around Australia. When a call out for interested participants initially took place, some 230 people put their hand up to take part in the project. From this overwhelming expression of interest, the 20 people you come face-to-face with in the gallery were chosen. Their selection was based on their story of themselves rather than their appearance – a

representation of the diversity of communities and cultures that are encountered across the country. Each of these people were photographed naked – arms slightly raised from their sides, palms passively facing forward or occasionally resting on their hips. It’s a pose that paradoxically presents each person as, at once, vulnerable and confident. Seen side-byside, they almost appear to be joining hands. The real power of this project is in what took place next. In the spirit of self-determination, the subjects were invited to share their stories – to convey their sense of themselves – not just to Kelly, but to groups of people brought together from throughout the community. The goal was to develop a shared understanding of who each person was – to do away with assumptions and take the time to get to know someone. Together, the groups set about collectively expressing this shared understanding of who each person is by adding to the bare photographic portraits. Through a process of discussion, exchange and art making, these raw and unadorned images slowly evolved, layered with archival and contemporary collaged imagery specific to each subjects’ interests, attributes and vision. The result is completely entrancing. These honest and authentic images celebrate diversity and difference in our communities. At the same time, our shared humanity is laid bare, with nowhere to hide when garments and apparel are removed. We are freed from the restrictions and stereotypes associated with outward appearances – free to express identity without someone imposing their prejudices and will. Our identity is our own. No one can tell us who we should be. I don't belong to you. And you don't belong to me. uilding on the success of the past two years, in 2018 the event will have more than 60 artists participating. The first weekend will feature studios on the coast. The second weekend will see artists in the hinterland open their studios. Local galleries are also part of the event, with exhibitions and workshops being held throughout the ten day period. This will provide visitors with many opportunities to participate, whether by viewing art, buying it or making it themselves! All of it is a celebration of our artists and visual arts across Noosa. Visitors will see a whole range of

Much of the art is available to buy, and many of the artists will be holding workshops and demonstrations throughout the event. Holy Grail or Poisoners Chalice IN THE NINETEEN SEVENTIES THE SEARCH FOR THE HOLY GRAIL OF AUSTRALIAN COLONIAL PORTRAITURE WAS TO DISCOVER A PROVENANCED WATERCOLOUR / DRAWING BY THE TASMANIAN CONVICT FORGER, THOMAS GRIFFITHS WAINWRIGHT, (U.K. 1794 - 1847).

W

ainwright born to wealth in Richmond, then outside London, inherited over five thousand pounds from his grandfather, just shortly after he had married one Eliza Ward. Invested, it brought the couple in a comfortable living, over and above of that of his literary career. He placed most of the capital in trust for Eliza, and they were to live on the interest. Thomas, however, had an extravagant wastrel lifestyle which led to forgery. Twice in 1822 and 1824 he forged Eliza’s signature to give him power of attorney over her account, which he cleaned out by the end of 1824. In the years that followed, the British police suspected him of poisoning at least four persons in his immediate family circle for financial gain, but nothing was proven. Later in France he was arrested and gaoled for six months after being found with the prohibited poison strychnine in his belongings. Finally, thirteen years after the event he was convicted of the forgery of Eliza’s signature in London, transportation for life to Hobart town, Van Diemen’s Land was his sentence. On arrival he was put onto a road gang, followed with a stint as a hospital orderly. After a while as a trusty, he was allowed to pursue a career as a portrait sketch artist, and in his last seven years managed to produce around one hundred drawings, many with coloured wash. Virtually none were signed, all were of notable Tasmanians and their offspring. Some are in institutional collections and some in private collections, mainly of descendant families. It is believed thirty to forty still exist.

In 1980 I was contacted by a gentleman in his seventies one David Yelland who had one by family descent. It portrayed one Elizabeth Crowther, whose father and in particular her brother were notable Tasmanians. The watercolour illustrated here is of Elizabeth reading to a friend. On marrying William Blyth in 1835 Elizabeth started a family, eight girls and six boys in total. Due to the number of offspring it is a hard family tree to follow . Winter! (for what it is worth on the Sunshine Coast)

A

s I write, Noosa is being battered by an unseasonal winter rainstorm. Warm and dry inside, I look around at the indoor plants which maintain the subtropical feel in our home, when, while still lush and green outside, the garden lacks the colour we enjoy over spring and summer. Cyclamen are a classic source of potted colour over winter and I have them in pots on side tables in the sitting room, and hanging in macramé pot hangers above the veranda dining table. Keep them moist but not water logged and the flowers will last for weeks with plenty of new buds emerging from the corm to replace the old. Similarly I’ve noticed African Violets making a comeback. Their delicate flowers and fleshy, furry leaves remind me of my grandmother’s house when I was a child. So sweet and compact, I also have them on a side table near an east facing window where they are thriving in the filtered morning sun. Their fleshy leaves store water so you can let them dry out a little between waterings, but keep in mind that if you have heating or a fire going they will dry out faster. I’m teaching my daughter to propagate them from leaf cuttings so hopefully our collection will grow. Anthuriums are a wonderful indoor plant throughout the year – they are resilient, tolerate periods of dryness (because let’s be honest, we all forget to water occasionally) and while they do not flower prolifically, the flowers last for months. Available in a range of colours from white through pink, apricot, violet and red to almost black, they also come in a range of sizes to suit any corner or centre piece. I warn you though – they can become Anthurium addictive! And speaking of addictive, I am yet to find someone who doesn’t gasp at the ethereal beauty of orchids. Phalaenopsis are the classic and after they finish flowering I cheat and pop a couple of artificial flower stems into the pot to justify their continued position on the mantle until the next spike emerges! But Winter is really the time to shine for Cymbidiums with their long strappy leaves and stately spikes. I’ve just bought a yellow subtropical variety and am dying for the buds to open. I’ve also added a few less common varieties to my collection including an oncidium which smells like warm chocolate! So if you’re a tropical orchid yourself and are Cyclamen & African violet finding it a bit cool and wet outside over the next few months, try bringing the garden inside Sarah Hansen Sea Dragon Style Doonan

Designing My Dream Hamptons Inspired Home... Television presenter, magazine editor and media personality, Deborah Hutton is renovating her charming three bedroom house in Bronte, into her own Hamptons inspired forever home, with work due to be completed later this year.

A

s she starts her renovation journey, Deborah talks about making the most of her coastal location and achieving her desired look featuring the hallmark Hamptons muted colour palette, bright and open living spaces and deep shadow lines of Linea weatherboard cladding. Q) What style are you looking to achieve and what has inspired you to achieve it? I’ve have always loved the magnificent mansions you see in the Hamptons, they are true coastal chic. My favourite house in the world featured in the movie ‘Somethings Gotta Give’ with Jack Nicholson and Diane Keating. There is something about the relaxed, casual nature of the architecture that fits perfectly with a seaside home and our Australian lifestyle. I want to bring certain elements of that into my renovation. I grew up in Queensland and my grandparents lived in a quintessential weatherboard “Queenslander’ with a corrugated iron roof, large open verandas and a magnificent garden. It’s the childhood memories of that wonderful house I’d like to replicate. That’s why I’m cladding my home in Scyon Linea, to give it that weatherboard look I love so much in Hamptons and Queenslander designs. I’m also creating large open living spaces with high vaulted ceilings, exposed beams, and a classic muted palette. Q) What in your mind are the most important elements to get your look right? I think of houses and their interiors a little like wardrobe dressing. Externally the look of a house is its dress…the windows, doors, verandas are the accessories and the interiors/soft furnishings are like adding jewellery. The impression you get when you see a house for the first time stays

with you, it creates an impact… so getting the ‘dress’ right is essential. Wrapping the house in Scyon Linea weatherboard, with its beautiful deep shadow line look, will be its most striking feature from day-dot. Timber balustrades, exposed beams, tongue and groove panelling all lend their style to my Hamptons inspired coastal facade. Q) What process did you go through when deciding the look of your house? My research started almost the minute I bought my house. Having never taken on a project of this size, I started by visiting the Home Show in Sydney to get some ideas of products and finishes. That’s when I discovered Scyon Linea weatherboard. The deep shadow lines it created instantly reminded me of the home I grew up in and the Hamptons homes I’m aspiring to. I also spent many hours scouring design sites to create my mood board. Knowing that I could achieve a weatherboard look that would last thanks to Scyon Linea, I was able to create a vision that encompassed my personal style. Having a strong, defined mood board makes talking to architects, builders and designers much easier when you have imagery that illustrates what you want to achieve. Q) What were your main considerations when designing the new structure of your home? The property faces North/East which is wonderful for creating that light and breezy Hamptons feel. It also sits high on the hill, so in summer there is nothing between me and the blustery winds that come up in the afternoon. Having lived in the property for nearly two years, I was fully aware of how exposed I am to the harsh rain, wind and salt. It’s fair to say,


maintenance and durability were key factors when I started to consider doors, windows, cladding, external light fittings, etc. Scyon Linea weatherboard became the obvious choice, as it resists flaking, warping and swelling, so it doesn’t require annual touch ups. I’m building my ‘forever home’, so selecting finishes that will face the test of time was critically important. Q) How have you chosen your materials? Are there any that are essential to creating your vision? I like to do my research when selecting materials, fixtures and fittings - it’s a long, slow process. I also talk to as many people as possible with experience in building and working with certain materials. I also went to a couple of his completed projects to see the finished result and knew straight away that I was making the right decision.

Q) If you could go back to the beginning of this process knowing what you know now and give yourself one piece of advice, what would it be? I had a bumpy road selecting my architect. Where I started and who I started with is not where I am now… and that mistake has cost me time and money. I don’t think I put enough effort into finding the right person at the beginning and appreciating how critical it is to have someone who understands and appreciates your vision. Having good communication and someone who jumps on things quickly is also incredible important. One thing I have learnt is that good design doesn’t always mean it can be built! On the river

rom sunrise to sunset along the park that runs adjacent to the Noosa River (known as the 'golden mile') you'll see a passing parade of people walking their dogs, others taking the time to amble along watching the boats as they motor or sail past; devotees of tai chi and yoga carefully going through their movements; and others enjoying a quiet cup of coffee with friends; while mothers and holiday makers take their little ones for a walk or ride under the bowers of towering trees. Along the foreshore, helpful information centre staff will book tours for you to visit Fraser Island (the world's largest sand island, and home to Australia's purest dingos), as well as trips to the mystical Everglades, or themed cruises. With playgrounds and exercise equipment, as well as electric barbecues, and

covered table and bench seating positioned around the area, it is the perfect place for a family get together. The carefree nature of the area is mirrored by the gentle wings of the pelicans as they soar high above before coasting in to the shoreline in search of the prime position for sleeping or checking out the chance of catching a fish down below; as those wishing to spend some time on the water hire kayaks, paddle boards, small boats and pontoons from the local boat shed operators. IGRATION to Noosa Shire from interstate and overseas (mainly UK and NZ) continues apace. These new residents mostly are from cities and with Noosa a regional area there are often questions about shopping, internet and, especially important for retirees, availability of specialist medical services. The latter had something of a setback in 2016 when Noosa Council rejected an application to rezone land to build a modern PET scan facility (the gold standard for diagnosis of many cancers and heart disease) and the proponent admitted defeat. I don’t believe the community would allow its Council to get away with the same decision again. That said, Noosa generally has health well covered. Not only was a new university hospital opened last year just an hour away but specialists from Brisbane regularly spend a day each month consulting to the halt and lame at Noosa Hospital. IF YOU’RE visiting these parts and have rented a car, you have probably already discovered something Queenslanders really like to do in their vehicle. We just love tailgating. This unfortunate habit causes one in five crashes in the State and half our drivers are into it. Not long ago police targeting tailgaters on a nearby motorway said they couldn't write enough tickets to keep up with offenders. Pro tip: Keep an eye on the rear view mirror, stick to the speed limit and try to remain calm. OUR nearest ABC station in Maroochydore recently found a pencil stub and the back of an envelope behind a desk and calculated there are just four women among the 40 federal, state and local politicians on the Sunshine Coast.

Whichever way you look at it, 10% isn’t a lot. A report on local government in Queensland said the reasons why women are under-represented include community attitudes, competing responsibilities, lack of self-confidence and "the boys club of local government”. A NSW councillor, addressing the same subject, recently quipped, "Local government councillors? Pale, stale and male!” NOOSA Shire is in transition and there are inevitable stresses as a region which was once rural changes its character. I feel for the battlers who 20 years ago grabbed a bit of hinterland

These days, if an indignant neighbour chooses to object, the folk who thought they were getting away from it all can find themselves the butt of complaints from people who equate them to lawbreakers. Thanks heavens for councillors who understand social and demographic change and take an open-minded and conciliatory approach to dealing with it. COOROY (in the local language ‘kurui’ means possum) is a pleasant township of 4,000 people just 20 km west of Noosa and 10 km south of the

stunning Mount Cooroora, the ‘Plug of Pomona’. Despite the fame of Cooroy’s celebrated seaside neighbour, Noosa, the smaller town has no inferiority complex. Indeed it’s a place of great community spirit with a progressive outlook and lots to see and do. “Cooroy’s got a great culture,” people say. “Just try our beer.” It’s also got beaut scenery, fine restaurants, did I mention the brewery, its own newspaper (the Cooroy Rag), terrific arts and crafts and it’s the gateway to Noosa’s spectacular hinterland. IN THOSE empty months between successive issues of Noosa Style you might seek some Noosa-oriented reading to keep the essence of the local experience fresh in mind. I’ve three websites to recommend. The first is Open Noosa (www.opennoosa.org) with a wide compass and plenty of articles on issues the locals talk about. It’s expertly compiled and edited by Bettina Walter and Desiré Gralton and a must-read. Another is the popular Noosa Community Notice Board (www.facebook.com/groups/noosacrew) which offers – in addition to lots of info about local activities and stuff for sale – a lively introduction to Noosa affairs along with chaotic debate. Then there’s the vibrant news and business website My Sunshine Coast (www.mysunshinecoast.com.au) which tags itself as “a very modern business with old fashioned business ethics … never taking advantage of the average person’s IT ignorance”. Such matters are important up here.
