Lunching at Embassy XO

An opening night to send your senses into overdrive… When the ar tistic community comes together, there is no stopping the talent that will be on show. The recent Australian Body Art Festival opening was no exception, when guests were invited to become involved in the theming of the event. With fairy face-painter, stilt walkers poured into red lycra - and a table full to overflowing with local treats, it’s no wonder that the night was such a success. And, of course our wonderful parliamentary princess, Sandy Bolton was there to not only meet and greet the guests, but also to add her good wishes for a fabulous weekend of fun, food and art.

Santa’s Classy Helpers hit the open water… Fund-raising fun on the Noosa River, when Lorraine Kenway and her band of eager helpers, invited guests aboard the Noosa Queen for a ‘Sunset Cruise’ to raise muchneeded funds for the annual ‘shopping day’ in December. Guests sipped wine and beer as they indulged in canapés and

desserts, and of course, bought raffle tickets - while looking for sunset to peek through the clouds. This merry band of helpers find new and innovative ways to raise money all-year-round, to give 300 disadvantaged families a Christmas to remember each and every year. We hear people sharing their concerns with each other all the time - about the government, prices, business, their children, family, friends, health; their home - just about anything that you can think of will cause someone trepidation. Things could be worse, things could be better - or we could just get on with life and adjust our way of thinking to create the best outcome for ourselves. I

’m asked all the time about my weight - do I want to lose the weight? Has it held me back?” she begins, with typical roller-coaster exuberance. “I know how it all works but I wonder sometimes how many times can I answer the same question. I’m repeating myself!” 
The spritely Sydney native, born Melanie Elizabeth Bownds, finds herself less than a year away from her 40th, but any worries the rest of us may have about age milestones don’t seem to strike the same fear in the head of the bubbly actress. “As long as I feel I’ve achieved something in whatever time-frame I choose, then I’m cool.

“Across 39 years – well, the first couple were a bit unproductive, I admit; but since then I’ve stepped it up.” That’s an understatement. While Wilson’s face is now a constant on TV and cinema screens, she actually trained as a lawyer and, of course,

was an established name on the comedy circuit too, starring in shows Bogan Pride, The Wedge and Monster House before hitting the big time in Tinseltown. A short but memorable appearance in Judd Apatow’s colossal hit Bridesmaids assured Wilson’s cementation in Hollywood’s A-list elite, and she now finds herself a go-to box office draw, landing starring roles with Mark Wahlberg in Pain and Gain, What to Expect When You’re Expecting with Jennifer Lopez, and Night at the Museum 3 alongside Ben Stiller and the late, great Robin Williams. This year’s Isn’t It Romantic – in which she co-starred with Liam Hemsworth – and the upcoming The Hustle, alongside Anne Hathaway, are both films she has produced, simply reinforcing the actress’s rise and subsequent refusal to conform with an industry


She’s the anti-Hollywood starlet, a sardonic bombshell who burns up the screen with her sizzling comic timing. And yet, the subject always comes back to her voluptuous curves.

At somewhere between sizes 16 and 18, it feels at time as if it’s all the industry can focus on, but Rebel Wilson doesn’t mind the attention her body affords.

This is all so far removed from a life in law… and yet, surely, with a name like Rebel, perhaps it was to be expected all along? “I guess as time has gone on I’ve become more confident and grown into this persona,” she says, “but it’s more by natural coincidence than any big plan. “I like to look back on what I’ve achieved – I think it’s positive to do that. So even when I’m looking to the future and have projects lined up, I still think back to when I was at home as a kid, kicking around, with no friends - I never thought for one moment that my face would be on movie billboards.” continues next page...

Wilson has also found herself a strong advocate for women embracing their shape and their style. “As a plus-size model I’ve always been entirely comfortable in what I look like,” she says. “This person is me now and has been me for a long time, and it’s never even crossed my mind that I might reconfigure the very inner self of who I am just because there is a stereotype of looking thin.

“It’s much more important for me to step outside of that and be myself.” The actress further courted headlines last year following her well-publicised court case with Bauer Media, during which the publisher was found to have defamed Wilson across a series of articles, and in multiple titles, including Woman’s Day and OK! While revised damages, on appeal, failed to cover legal costs, a line in the sand had been drawn, where Wilson, in real life – just as across so many movie roles – has taken the upper hand. “In the past, I did the whole shrinking violet thing – I was the dorky one,” she admits. “That was me as a kid, but that person went a long time ago. “Now my focus is on positive action, a role model to those who need one, and a reminder that we are as strong as we want ourselves to be.

Certainly, the life the Aussie has cultivated for herself is certainly a world away from a career in law. “I liked acting in high school but it just didn’t seem realistic,” she admits. “Actually, it wasn’t something I necessarily wanted to do. Like, I was so shy in school, bordering on socially unacceptable shy, so acting wasn’t the way for me. And I was really academic - I had these weirdly good abilities, especially with numbers, and not knowing what I wanted to do when I finished school meant that law seemed a good enough idea.” It was only after a college charity trip to Africa that her mind was changed. “I got malaria and it was during a hallucination that I said I was going to be a famous actress! In my dream I’d even won an Academy Award! People thought my brain had been melted and fried by the disease, but I just thought, ‘I think I can do it’. Even when I was on TV shows in Australia, my family were like, ‘Yeah, but who’s going to put her in a movie?’. “I guess I’m a good example to those who think, or are told by others that they can’t do it. Perhaps you can.”

REBEL WILSON QUICKFIRE Q&A Q: Are there any actresses that you haven’t worked with who you would want to in the future? REBEL: I recently met with Jodie Comer who stars in Killing Eve. She is so good in that show and I could really see myself doing something with her in the future. We also happen to have the same agent now, as well. The UK makes such amazing TV shows. I love the show Bodyguard, that is so good. Q: What is the best advice that your mum has given to you? REBEL: To not have kids to soon in my life and make sure that you enjoy life first. That is definitely some advice that I have paid close attention to [laughs].

She was getting food but I just couldn’t think of an excuse to interrupt her. Hopefully, one day she will interview me for something and then we can chat.” Q: You seem to have done everything else in life – why haven’t you released an album yet? REBEL: I’ve actually been asked loads of times but I want to keep my attentions on acting right now. Maybe something in the future if I can summon up the courage. It’s one thing singing in a film or on stage, but to put it all down in a studio would be quite terrifying if I’m honest… although perhaps something in the mode of Iggy Azalea would work. I’m very gangsta. I’m very from the Sydney ghetto, the Western side. Q: Speaking of amazing singers, I must ask, did you beat Adele to Fat Amy? Is that actually true?
 REBEL: I don’t know if Adele actually auditioned but I know they were looking at her for the part. I don’t know if that means I’m a better actress than Adele but I like to think it means I’m a better singer!

here is something about a Noosa winter that still takes my breath away after all these years, and yes, I am biased! The change of season with its last wallum blooms, salty ocean tang and shifting sunsets encourages you to wander, wonder and at times ‘ponder’ …gazing into a fire, lazing in that last afternoon ‘sun patch’, gathered with friends overlooking reflections on the lake, or rolling countryside complete with low hanging clouds. ‘Winter Wandering’ around our home of Noosa is at least a 2 day journey that many of our visitors do not get a chance to do. Mystical lakes with the sand blow and mountains in the back ground, history both intensely fascinating and at times inconceivable–buried under the Noosa Museum is a treasure trove! Bristly beachcombing that bring out our most romantic selves, and a choice of eclectic and electric browsing experiences, riverside or along the Noosa Country Drive. Add the views, brews and gourmet ‘stews’, all served with a dusting of diverse interludes– think silent movies, stilt walkers, music and a bit of mayhem. But most of all…that incredible energy. And that’s where the ‘wondering’ comes in. What does our world look like that does not create negativity for others – two or four legged, furry, winged or otherwise? How do we share our love of wanting our community to be well, enjoy good health and times, tackle challenges together with determination not anger, to respect and have tolerance, and to care about each other? And how do we address our greatest dilemmas, of the needs of people – to have a home, to be looked after, to work and play, without impacting others and the natural environment that we rely on for our lifestyle, and livelihoods. The reality is that we can’t. We can minimise, however every single day, every one of us, affects others. A delicate balance, and one that requires comprehension, responsibility, and most of all, acceptance of our role. A big undertaking, and yet one that delivers incredible outcomes, whatever the season. And that is where the ‘pondering’ comes in to the winter occasion. Those moments that only a Noosa winter provides – a quieter energy of reflection when looking up the North Shore beach with no one around – that walk through the bush – rugged up and not having a time frame… to explore the dilemmas faced, decisions to be made, solutions that need realisation. There is also the joy of wrapping your hands round a hot chocolate, debating the rights and wrongs of hot topics both locally and across QLD with friends, whilst popping that melting marshmallow into a loved one’s mouth. And this winter we have plenty of fodder to work with, from flight paths to Adani, through to the sharing of public spaces and legislation in Parliament where the debates won’t be had with a hot chocolate, nor marshmallow! All ‘Kodak’ moments – memories made, imprinted into our hearts, warming the soul. And at the same time, answers found through the simplicity of remembering what is important, necessary and needed to keep creating those moments. Winter Noosa style. Cold nights, crystal clear stars, stunning days,and yes, even available carparks? Enjoy!

It’s time for timber It’s been said that people are less likely to experience stress, be more productive and are generally happier and calmer in spaces where natural elements are present, like timber.

Years later and with both kids healthy and at school, I can say I finally re-invented those strips for everyone to use. Profile AUTHOR DENNY NEAVE

Though books and writing didn’t play a particularly significant role in the life of Sunshine Coast author Denny Neave has gone on to write four non-fiction books, including his latest Unconquered: Our Wounded Warriors which tells the remarkable story of a group of men and women from Australia and New Zealand who fought and conquered extraordinary challenges from the battlefield to the sporting arena.

C

an’t say I was a book worm or was crazy about reading it was just something we did as a kid without much effort. “Writing was never a dream of mine, but I have always been passionate about our military and our military history. “In 2007 I ‘fell’ into an opportunity to write a book about our Aussie Soldiers, so that’s what I did, I wrote a book called Aussie Soldier Up Close and Personal. “I enjoyed the process as I did a lot of interviewing and research and that was the part I really loved.” Describing himself as a research writer, rather than a creative writer, Mr Neave says the joy in writing his latest book came through talking with veterans and their families and sharing their stories. “Back in 2017 when I found out the Invictus Games was coming to Australia I knew I wanted to share their stories. “For these men and women, now confronting the trials of daily life, the Invictus Games provided a further challenge, a chance to test their mettle in the sporting arena representing the country for which they had fought. Each story within is a personal and human account of the trauma of armed conflict and the suffering that continues long after the sounds of battle have died away, he says. “These are stories of courage pure and simple and of the men and women who defied the odds to remain unconquered.” Mr Neave says he felt it was important to continue to give veterans a voice, as the public often forgets when war isn’t a news highlight. “I wanted to re-engage the public and shine a spotlight on what these men and women have done for us, to remind them that whilst the sounds of conflict are a distant memory for most of us they are still well and truly present for a large number of our service personnel.”

Private Andrew T, who came to assist Alan, a UK competitor, during a cycling event. “Alan White is an ex-Royal Marine who suffered a back injury that left him partially paralysed. “During the afternoon race on Sunday, as he completed the final lap, Alan was overcome by exhaustion, grinding to a halt, at the corner where his daughter was watching from the sidelines. “He pulled off his socks and shoes, and began inching his way up the hill, pedalling a quarter-turn at a time and locking his handbrake so he wouldn’t roll back down. “It was at this point that Private Andrew T, who was assisting with the race at the time, ran over to Alan and asked, ‘Is it okay if I help you mate?’ Alan nodded and Private Andrew T stepped behind him, grabbed the rear bars of the bike and, with the crowd cheering on and Alan’s daughter watching, began pushing him up the hill, giving him the short boost that he needed to conquer the slope and cross the finish line.” Mr Neave says regardless of if you are a monarchist or supporter of the republican movement, I don’t think you will find many that can say a bad word about Prince Harry. “The selfless work he does for the veteran community the world over is fantastic.”

Kerry Lorimer shares her story...

T

hat was the challenge facing Kerry Lorimer – who’s followed her dreams around the world. “The travel bug bit me early – and hard!” she says.

“After university, I bought a one-way ticket to Europe, told my boss I’d be back in a year…maybe two… and made it home eight years later. “I backpacked through Europe, then spent a year travelling the length and breadth of Africa, hitch-hiking most of the way. It was a pretty crazy time, and there were plenty of close calls. I still vividly remember spending two days lost in the jungle on the slopes of Mt Kenya - having taken an ‘alternative’ route down from the summit. Bush-bashing through thick bamboo, we came face to horns with a wild buffalo – the most dangerous

animal in Africa. Luckily, he decided to charge in the opposite direction, cutting a handy path through the bamboo!”

From Africa, she set her sights on South America. “Having worked two summers on big power boats in the Mediterranean, I decided I’d like to sail across the Atlantic. The fact that I’d never sailed anything more than a windsurfer didn’t occur to me. I talked my way onto a yacht and sailed to the Caribbean. I fell in love with sailing, and spent several years working on charter yachts, sailing the Caribbean and East Coast of the USA.”

A year travelling from Mexico to the southern tip of South America followed, before she jumped on another yacht and sailed homeward across the Pacific. Back in Australia, Kerry took a job as Marketing Manager of an adventure travel company, which led to her first trip to Antarctica. “From the moment I set eyes on the Ross Ice Shelf, I was hooked,” she says. “Experiencing the grandeur of nature is often a humbling experience, but Antarctica takes that to another level. Being in that utterly alien environment, where humans cannot survive but where perfectly-adapted animals thrive - makes you realise how insignificant we are in the grand scheme of things. “I couldn’t get enough of Antarctica, and made another five trips, including working on small tourist ships and sailing a yacht, with five friends, from South America to the Falkland Islands, South Georgia and returning via Cape Horn. “I have many memories of the wild beauty of South Georgia. But watching the delicate courtship dance of a pair of Wandering albatross, encircling one another with their three-metre wing spans, was one of the most emotional and beautiful things I’ve ever seen.” Around that time, Kerry started a business consulting to destination-marketing bodies and adventure travel companies, promoting ecotourism. “Back then, the concept of ‘responsible’ tourism – 36

considering your environmental, cultural and economic impact - wasn’t widely understood or practiced. I put the idea to Lonely Planet that, as the world’s largest guidebook publisher, they had a responsibility for promoting ethical travel.” The result was Code Green: Experiences of a Lifetime, the publisher’s first guide to responsible travel, for which Kerry was the co-ordinating author and photographer. The company also began including chapters on responsible travel in their guidebooks.

“It was a great business as it allowed me to combine my passions for writing, photography and environmental conservation – and it funded my travel habit!” “I ran it for 12 years, but I never lost the sailing dream. On a bad day in the office, I’d joke that I could always chuck it in and sail off into the sunset. Then I met a man who shared the same dream. Within 18 months we’d bought a 16-metre catamaran and planned to sail around the world. “Unfortunately, we had one problem after another, including being dis-masted when a deck fitting failed. It was the middle of the night, with just two of us on board, 925 nautical miles from help. We had to cut away the rig and it took six days to get to New Zealand. We spent six months repairing the boat - and shelved the idea of a circumnavigation.

“We still managed to explore a large part of the Western Pacific, spending summers in NZ and sailing up to the islands – Tonga, Fiji, Vanuatu – for the winters. Spending time in remote islands, being welcomed into traditional villages and having postcard anchorages all to ourselves made for a wonderful lifestyle. “But the on-going boat problems - together with living 24/7/365 in the confines of a boat – took their toll. After five years we decided to sell the boat and go our separate ways.” Kerry spent the next year exploring the East coast of Australia, looking for ‘home’, finally settling in Sunshine Beach. “With waterways like the Everglades; clean beaches; the hinterland and gorgeous national parks, the Noosa region is one of the most naturally-beautiful places I’ve found anywhere. I love the concept of the Noosa Biosphere and the way so many locals embrace environmental stewardship. And how can you not love a place called Sunshine Beach? “Many ‘locals’ are originally from elsewhere, so the community is very welcoming. I’ve met so many accomplished and interesting people – with so many amazing stories to tell!”

So what’s the next dream?

“I have been incredibly fortunate to see many of the world’s most beautiful places and experience the most extraordinary wildlife encounters, from humpbacks to hyenas, penguins to Polar bears. “Sailing to the remotest uninhabited islands and seeing beaches – hundreds of miles from civilisation - clogged with plastic, and once-thriving reefs decimated by illegal fishing has been both shocking and saddening. “I recently returned from West Papua where I dived with Oceanic mantas with seven-metre wing-spans and swam with Whale sharks - the world’s largest fish - and the experience took my breath away. “Knowing that these inquisitive, harmless animals and the stunningly beautiful reefs they inhabit are under threat has made me even more determined to use my marketing, photography and writing skills to inspire action for marine conservation. “The ocean is an incredible place but we risk destroying it before we begin to understand it.” Instagram: @kersplashhh kerry@splashcomm.com

June has arrived and with it an onslaught of subten-degree temperatures. Winter, or what we know as ‘winter’ in Noosa, is spectacular with the acute absence of humidity and clean, brittle air.

S

heltered as we are from the bitter cold that is common in so many states, we are still all subject to aches, pains, colds and fevers that precipitate relentlessly as the ambient temperature falls. In response, the pharmacy sales of non-steroidal anti-inflammatory drugs (NSAIDs) escalates as we try and ‘soldier on’ with our daily routine in the face of viral adversity. This time of year we see an exponential increase in the number of pets that have ingested their parents NSAID medication (i.e. ibuprofen, aspirin, naproxen, meloxicam are all too often household names). Our pets are a fraction of our size and a dose as small as 8mg/kg/d of ibuprofen have been reported to cause stomach ulcers in dogs (i.e if your dog weighs 10kg and accidentally eats 40% (less than half) a 200mg ibuprofen tablet they are at risk of stomach ulceration). These medications are designed to be absorbed rapidly and peak levels of the drug can be found in the blood as rapidly as 30-45 minutes after ingestion so it is important that you know what to do… • The best plan is to ensure all your NSAIDs are stored in a

safe location (..this is not your handbag or the kitchen bench) • If you have a curious pet consider storing your medications in a plastic container or lockable cupboard • Do not administer human medications to your pet for their aches and pains as their physiology does not always facilitate appropriate metabolism of these medications • If your pet does ingest some of your medication accidentally contact your local veterinarian or Animal Emergency Centre immediately for advice. Most will remember Bruno from his time as Executive Chef at Berado’s Restaurant in Hastings Street, where he brought a new sense of excitement and a little French style to their menus - and the Noosa dining scene. When Bruno decided to return to England locals and visitors alike were devastated - but after the success of his restaurant The Grain Store over there, he returned to Australia. Now he is once again back in S.E. Queensland on an idyllic,eight and a half hectare hinterland Gold Coast property. Kulfi Cardamom Iceblock Region: Pakistan | makes 10 - 12 if using shot glasses | Prep time 20 mins + overnight chilling Cooking: 15 mins | Difficulty - Easy The subcontinent’s favourite ice cream, kulfi is cleansing, cooling and invigorating. It is flavoured with beautiful spices from its Persian origins, and can also contain fruit such as mango or banana. When it is very hot and you need to cool down, the energy hit from this frozen dessert will get you moving again. 6 green cardamom pods 500 ml (17 fl oz/2 cups) milk 500 ml (17 fl oz/2 cups) thick (double) cream 300 g (10½ oz/1 scant cup) condensed milk 50 g (1¾ oz) blanched almonds, ground 50 g (1¾ oz) pistachios, ground 1 teaspoon ground cardamom 1 teaspoon rosewater 50 g (1¾ oz/⅓ cup) roasted crushed pistachios, to garnish Remove the cardamom seeds from their pods. Using a mortar and pestle, crush the seeds until they resemble freshly cracked black pepper. Set aside. Place a heavy-based saucepan over medium heat. Add the milk, cream and crushed cardamom seeds. Bring to the boil, then add the condensed milk, stirring constantly. Add the almonds, pistachios and ground cardamom. Once the mixture returns to the boil, reduce the heat to low. Cook gently, stirring every 5 minutes or so, for about 10 minutes, or until the mixture has reduced by half. A skin will form on top; just keep stirring it in. Remove from the heat and stir in the rosewater. Allow to cool for 15–20 minutes. Slowly pour the mixture into iceblock (popsicle/ice lolly) moulds or shot glasses, then place in the freezer. After about 30 minutes, when the kulfi is starting to set, place popsicle or ice cream sticks in each mould or glass. Return to the freezer and freeze overnight, or for at least 8 hours; the kulfi will also keep for a few days, if making ahead. To un-mould the kulfi, quickly dip each mould or glass in warm water to loosen them, then turn out onto a small plate. Sprinkle with the roasted crushed pistachios and serve.

Armagnac and Mango Crepes Serves 4 Ingredients FOR THE CREPES 3 eggs About 120g plain flour Pinch of salt 375ml milk Butter Ingredients FOR THE MANGO AND AMARETTO MIXTURE 80g butter 2 ripe mangoes, peeled, flesh removed, cut into large chunks 30g brown sugar 1 vanilla pod Teaspoon orange zest 2-3 tablespoon Armagnac liquor Icing sugar for dusting Small handful of crushed amaretto biscuits (optional) Vanilla bean ice cream Method: TO MAKE THE CREPES Sift the flour and the salt

into a bowl. Whisk the eggs with the milk and then gradually pour in the flour, whisking continuously until smooth. Cover with cling film and leave to rest in the fridge for at least half an hour. Beat the batter with a whisk before using. Melt about 1 tablespoon of butter in a pan over a medium heat (preferably non-stick pan) Give the pan a jiggle so the entire base is covered with the hot melted butter. Once the butter starts to become almost golden brown in colour add a ladle of the crepe mix and really shake the pan around to spread the mix over the entire base of the pan.

a t t o c a n Pan Buttermilk vanilla panna cotta with berries, lemon myrtle & honeycomb Serves: 4 INGREDIENTS: Panna cotta 300 ml (101/2 fl oz) buttermilk 125 ml (4 fl oz) cream 1 piece gelatine leaf, soaked in cold water 65 g (21/4 oz) caster (superfine) sugar 1/4 vanilla bean, split and scraped 4 plastic dariole moulds Lemon myrtle syrup 150 ml (5 fl oz) verjuice

150 g (51/2 oz) sugar 150 ml (5 fl oz) water 1/4 vanilla bean, split and scraped 1/4 bunch lemon myrtle

GARNISH: 125 g (4 oz) strawberries, green top cut off and quartered 60 g (2 oz) blueberries 60 g (2 0z) raspberries 60 g (2 oz)blackberries honeycomb (see chocolate honeycomb recipe, prepare as per recipe but without the chocolate coating) METHOD Panna cotta Whisk half of the cream until it forms soft peaks, set aside. Heat the other half of the cream in a small pot until quite warm (not boiling). Add the vanilla and gelatine. Remove from the heat

and whisk until the gelatine is dissolved. Add the buttermilk to the cream and gelatine mix and mix well. Transfer into a bowl, add the whipped cream and whisk in until both have incorporated together. Lightly coat the inside of the dariole moulds using a spray oil and fill with the panna cotta mix. Refrigerate overnight. LEMON MYRTLE SYRUP In a pot, heat all ingredients to a simmer. Remove from the heat and cool completely. TO SERVE: On individual plates, arrange the fruit, leaving a gap in the centre. Invert the dariole mould and release the panna cotta onto the middle of the plate. Pour the syrup over the top and then scatter the hokey pokey.

. . . p u t i Spice British Chef giving us his BBQ tips… and they’re all plant based too. I find it really exciting to create plant-based meals based on local favourite recipes.

T

he great thing is that all over the world there are lots of traditional dishes which are very healthy and economical and can be made with little or no meat. Often they were padded out with beans and then plans to provide more protein. At home Scotland has Scotch Broth. In Ireland there is Irish stew and in Wales where I live there is Cawl, which is a hearty one pot stew. Traveling through Europe these beany stews are at the heart of healthy Mediterranean food and country cooking. I love going to different places finding their local dish and creating a plant-based version of

it. It’s normally goes quite well! So I decided to spice it up a bit! With Keith’s Tandoori Veggie Barbie. In India this is traditionally cooked in a tandoor. Which is a long pot placed over charcoal. It’s a bit like having a barbecue everyday. It’s easy to make some really spicy tandoori style marinades that are going to bring everything to life. It is gluten and dairy free so will cover a lot of allergies and special diets in one go. Also without the meat and dairy it is going to be a lot cheaper and safer too. Plus you don’t have to worry so much if its cooked through properly or how long it’s been out the fridge.

Just make this tandoor or Thai Curry paste recipe the day before.

Marinade your vegetable kebabs, tofu, vegan burgers and sausages overnight and you are ready to go. Tandoori Paste for Marinade 1/2 tsp black pepper corns 1 cm cinnamon stick 12 cloves buds 1 onion peeled and roughly chopped 3 cloves garlic peeled and roughly chopped 3cm ginger root peeled and roughly chopped 1 tomato 2 tbsp coconut oil 1 tsp cumin powder 1 tsp coriander powder ¼ tsp chilli 2 tsp paprika 1 tsp curry powder 1 teaspoon salt

400ml coconut or other vegan yogurt 1 tbsp tomato puree Handful fresh coriander (chopped) Grind the cloves, peppercorns and cinnamon in a grinder or pestle and mortar. Put the tomato, ginger, garlic and onion in a food processor and blend until it is a smooth paste. Heat the coconut oil in pan and add the pureed onion mixture cook for 2-3 minutes. Add freshly ground and powdered spices and cook for another 2 minutes. If mixture gets too dry, add 1-2 tbsp water. Remove from the heat and add the lemon juice, yogurt, salt and tomato paste. SPICER’S BALFOUR STYLE… Words: Kaylene Murray WE RECENTLY VENTURED DOWN TO BRISBANE TO DINE AT THE ECLECTIC BALFOUR KITCHEN AT THE AWARD-WINNING SPICER’S BALFOUR HOTEL, TO SEE WHAT ALL THE BUZZ AROUND TOWN WAS ABOUT. This chic restaurant resides in an elegant boutique hotel in New Farm, just minutes from the Brisbane CBD and about oneand-a-half hours drive from Noosa. The restaurant is surrounded by wide open verandahs and courtyard garden below. Our evening started perfectly, with signature cocktails served at sunset in the roof-top - that also offers guests breathtaking views of the city skyline and twinkling lights below. Then, we descended to the candle-lit balcony, to peruse the eclectic selection of dishes presented by new Head Chef, Nick Stapleton, whose culinary credentials showcase his edgy, modern Vietnameseinspired techniques. The enticing menu showcases local Queensland ingredients, fresh and cooked, with beautifully balanced Asian aromats and the distinctive sweet, hot, sour and salty flavours of Vietnamese cuisine at its best. The menu includes a good selection of vegan and vegetarian dishes, whilst never forgetting those lovers

of meats. Whilst respecting the traditions of French and Asian cuisines, Nick also delivers his signature ‘flair’ to the fusion, inspired by the image of a Vietnamese chef cooking to comfort a Frenchman far from home. The diversity of the choices was exhilarating, and we decided to take advantage of the banquet option, so that we could taste as many different dishes as possible. There are also 2 and 3 course options for diners, but we wanted the chef to design a banquet just for us. With the fragrant aromas of the Frangipani blossoms wafting up from the courtyard gardens below, the glittering lights surrounding us with their luminescence - as well as the aromatics gliding out of the kitchens - it made our dining adventure seem almost surreal. We will definitely be returning again soon - as we missed a few dishes on the menu!! And have decided to give a visual of our dishes to tempt you further. The restaurant also offers, breakfast, and lazy lunches as well as high-tea options and I’m pleased to note that ‘well behaved’ hairy children are allowed in the courtyard dining area. I

remember when I first moved to Queensland and would see roadside stalls selling ‘Rosella Jam’. I would form a vision of rosellas, of the bird variety, stuffed into jars, their colourful feather tufting out from under sealed lids. I must admit, I was somewhat relieved to discover that the rosella in question, was actually a fruit, and the whole concept became much more appetizing. Rosellas are a plant from the hibiscus family – Hibiscus sabdariffa. They bear a beautiful yellow flower, and eventually transform into red edible fruit, which are actually the fleshy calyxes of the flower – rather than an actual ‘fruit’ as such. They are sweet, but tart, high in vitamin C, and quite funky to look at! While a tart little morsel fresh or by itself, skilfully utilised it quite a versatile, and underrated fruit. Just ask Cecilia Diaz-Petersen, CC’s Kitchen’s rosella queen and condiment whisperer. Cecilia is almost iconic in the Sunshine Coast / Gympie region for her rosella condiments, alongside a vast range preserves that she produces seasonally using fruit grown on her and husband Greg’s, Petersen’s Farm in Woolooga, north of Gympie. Born in the Philippines, Cecilia magically fuses foods from her family and culture, traditional favourites, the harvest from the farm and her incredible passion, to create a delicious range of rosella products; jams, chutneys, syrups, sauces, beverages, dried, fresh and everything in between! She is currently at 29 rosella products alone and rising, often utilising blemished and unloved seasonal fruit as the inspiration to a new or seasonal yummy! Cecilia works on the ethos, ‘it’s good to be different’, and has never been a follower, an attribute that has seen her pave the way, bringing sensational innovation (and a Rosella Festival) to rosella production and the Gympie region. The rosella fruit itself is fairly labour intensive – you need to trim away the edible bracts, and Cecilia uses the seed pod for its pectin properties to set the jam. But rosellas have become way more than just jam; the most recent addition is ‘Vive’ a beautiful naturally coloured blush pink sparkling soft drink, and whole flowers in syrup that look fabulous in cocktails. Making her own dreams come true is what Cecilia is all about, and I, for one, am happy to enjoy result, and look forward to a few more rosella surprises yet! e t a g m ar F la te to P Meanwhile in Pinbarren (near Pomona), we have Nicola Cleaver and partner, Andy Coates, turning seasonal fruit and pure honey from their own hives in to sensational mead at Amrita Park Meadery... Mead is something of an ancient craft – a natural ambrosia, or ‘drink of the gods’, dating back some 3000 years. While I can simplify things by saying that you just add water and yeast to honey, and let the natural fermentation process do its thing, good traditional mead, as that of Amrita Park Meadery, takes knowledge and skill. It is fortunate that they have had the wonderful experimentation and years of awardwinning mead made by Andy’s 98 year-old grandfather, Dennis ‘Poppo’ Coates, to draw from, which makes the Amrita story such a delight to listen to. It is a family story and passion that is celebrated at the meadery cellar door; memorabilia, dozens of awards and even some of Poppo’s mead in the making, alongside experimental batches of their own.

ndy’s background is Aircraft Engineering, while Nicola’s is as a Chef, Food Science and Orthopaedic Cast Technician, which brings together a perfect combination of science and creativity, that has allowed them to explore a multitude of flavour combinations and still remain true to the art.

Seasonal fruits are added to the mix, sometimes with complementing spices, with some pretty special results; Passionfruit Mead, Ginger and Lime Mead, Pink Grapefruit Mead, Jaboticaba Mead, the list goes on. With every season, and a new fruit or flavour combination to trial, new flavours join the Amrita family for a while. While Nicola and Andy do have some hives of their own, they supplement their honey stock from local beekeepers, each honey, depending on the flora of the season, bringing their own flavour profile to the party. ‘Amrita’, translates to ‘immortality’ and the drink that would give the Gods their godly powers, and while I haven’t noticed any sort of new superpower as a result of drinking this sensational mead, I am certainly enjoying the process! P

eter Phillips reputation and career has spanned over 60 years, and placed him at the creation of the Pop Art Culture in London in the 60s. Along with friends and fellow artists, Andy Warhol, Roy Lichtenstein and ???- Peter’s work is a seminal point in the history of art in the world. Although the weekend’s weather proved to be a little unforgiving for the dual celebrations - everything can be overcome with a little initiative. Peter attended both events along with daughter Zoe and her husband Read, and enjoyed his glass of Prosecco, whilst discussing his body of work and famous compatriots of the heady 60s art world in London. Guests then ventured to the candle-lit tables under the marques to partake of the delights on offer. The first night showing was a Pop Art, bubbles and canapés cocktail party and the second night a hosted degustation dinner, all created by the masterful hand of award-winning chef, Josh Lopez (ex GOMA) and now The Wolfe in Brisbane. After quite a few Fortune Navy Strength Gin cocktails (featuring labels printed with Peter Phillips unique, artwork), and several glasses of wine, there was very little to worry about on the weather front! Diners at the dinner were also gifted a pair of Peter Phillips pop art socks and a gift card to remember their evening. Guests at the event included National Gallery of Australia’s Senior Curator, Lucina Ward; local artists, art lovers, neighbours and media. Noosa marketer at the heart of a global culinary

revolution... By Ben Jackson

A traditional Greenlandic seal hunt in the Arctic Sea was the last thing Joshua Finzel expected when he journeyed to the far north of the globe to document the emergence of New Nordic cuisine.

T

he Greenlanders shot the seal, left it on a nearby floating ice sheet and went back to try their luck again,” Finzel says. “Then they skinned and gutted it, throwing its intestines into the sea and keeping the fur for clothing. “Most surprising, though, was when they split open the ribcage, pulled out the liver and ate it on the spot. They called it the ‘Hunter’s Prize’ or ‘Greenlandic Candy’. It was a pretty out there kind of experience.” Finzel, who grew up in Noosa, has been fascinated by gastronomy for as long as he can recall. Likewise Scandinavia has been a constant in his adult life. He explored it as a tourist, studied at Copenhagen Business School and found his partner, Camilla, there. As a teenager, he worked in hospitality at some of Noosa’s iconic early 2000s restaurants, Ricky Ricardo, Bistro C, Lindoni and Sails. These days he moves between Copenhagen and the Sunshine Coast – swapping dark Nordic winters for the rolling waves of Noosa National Park. Despite his admiration for Denmark, Finzel admits he was underwhelmed by the food he encountered when he first arrived there in 2006. But a quiet revolution was taking place which was defining a radical New Nordic cuisine. By 2010 avant-garde chef René Redzepi’s Noma restaurant in Copenhagen was regarded as the leading exponent of New Nordic and won Restaurant magazine’s Best Restaurant Award in 2010, 2011, 2012 and 2014. Finzel was intrigued. Eating out had always been his pastime but in Copenhagen he began to give greater scrutiny to the creativity of chefs who had just invented a globally significant cuisine. “As I delved into things more, I saw an entire movement happening where the natural world was penetrating haute cuisine.” Finzel decided to record this story in a landmark book. The project was a long shot, but the subject was worth the risk. So began a journey that took him from Copenhagen’s cosmopolitan nooks to the icy Arctic, visiting some of the world’s top restaurants, exploring pristine glaciers and ultimately leading the team – Borderless Co – that created the book Nordic by Nature launched by German publishing house Gestalten late last year. “I wanted to publish a book that would do justice to these culinary artists working with New Nordic cuisine, bring their ideas to the world and complement their creativity with excellence in design, photography, writing and print production. “First I had to recruit their cooperation and find a global publishing company capable of delivering a brilliant final product. After a lot of work and some panic, we did it.”

Joshua Finzel & Jamie Lee Fiskebaren Nordic by Nature is more than recipes. It intersects food, culture, society and travel provoking the reader to contemplate an approach to eating that encourages sustainability, rejects excesses of materialism and instant gratification, and explores the symbiosis between form and function. Its publication was seen by food critics as a sign of a new maturity in an industry often associated with the consumerist worlds of fashion and celebrity. As Finzel and his crew roamed Scandinavia with the book taking shape, so did his thinking about its relevance to Australia. “My experiences sparked ideas about how to integrate the principles underpinning the natural Nordic manifesto with the Australian way of life. “In recent years, long standing myths of an Anglo-centric Australian history have been challenged resulting in recognition of the diverse and sophisticated cultural traditions of our indigenous peoples. People talk of super foods like Amazonian acai and Peruvian quinoa but we have plants foraged in Queensland for thousands of years to rival them,” he says. And while modern Australian cuisine reflects the multicultural nature of our society, he forecasts that indigenous foods will inevitably take their place within a new Australian cuisine which will be shaped by similar principles to those explored in Nordic by Nature – traditional ingredients, healthy products and ethical production. “By defining and describing this cuisine, I believe I can accelerate its development.” Meanwhile Finzel and Borderless Co are building their profile. French critic Andrea Petrini –described by Time magazine as “Paris’s culinary starmaker” – said Nordic by Nature “is not just a book nor a collection of recipes. It is an inspirational insight into the state of the industry as a whole and a reflection of the revolutionary players who create it.” The book has already won the Gourmand International Award for Best Scandinavian Cookbook and is shortlisted for the Best in World category to be announced in July.

The six most important trends in the Australian wine industry today... According to Paul Gordon, one of Australia’s mos t respected winemakers and chief winemaker at Leconfield Wines, the wine world is rapidly changing due to a host of new trends looking to make a mark on the industry. 1. Wine Tourism: More than ever, people are incorporating wine experiences into their holidays. “There’s nothing quite like drinking a wine at the vineyard where it was created. Looking at and feeling the grapes that produce the wine we know and love can be an inspiring experience for wine enthusiasts and even casual wine drinkers as well,” Paul said. “Leconfield’s vineyard at Coonawarra is set in a stunning location and it’s only a four hour drive from Adelaide and Melbourne. We at Leconfield have a saying: great wines are crafted from great vineyards.” 2. Experimentation: Many wine drinkers are transcending the rigid rules about how to drink wine. More and more people are discovering new styles as well as wine-food combinations. “People are simply drinking wine they like and drinking it when they want. Traditional rules are being thrown out the window. “Wine tourism is actually helping a lot in the area of experimentation. Having a face-to-face conversation with a wine expert is often the best way to explore all the new and quirky ways to experience wine. 3. Vegan Wine. Another trend affecting the wine industry is the rise of veganism. Many vegans assume that because wine is made out of grapes, then it must be vegan friendly. However, this is often not the case. During the wine making process, a wine may

be filtered using ‘fining agents’ that remove tiny particles which cloud and discolour the wine. Time provides the same outcome however fining agents accelerate the process. Some of the fining agents that wineries use aren’t actually vegan, like casein (a milk protein) and albumin (egg whites). 4. Vibrant Labels: “You may have noticed an explosion of vibrant and brightly designed labels on bottles at the bottle shop. “My advice is always the same. Read the label, pick brands you know and love and where you can, do some taste-testing to explore the wines on offer. 5. Rosé Wines. Tastes of wine are similar to the fashion industry. Trends go in and out of season. In 2019, rosé wines are still proving very popular. “The rosé trend seems to be continuing,” “People love blush wines like rosé because of their taste and colour. Blush wines get their smooth pink colour from separating the wine liquid from the grape skin. They look beautiful in the glass and they offer something different to your standard white or red,” Paul said. 6. Decanting Wine. Decanting wine is essentially the process of pouring the contents from one vessel, typically a bottle, into another

vessel, typically a decanter. “Decanting a wine is good for two main reasons. Firstly, it separates wine from any sediment that may have formed and it also aerates the wine. Aerating the wine unlocks its aromas and flavours before serving by allowing it to breath. “Decanting is not ideal for all wines. Very old wines don’t need decanting. Decanting exposes the wine to oxygen which burns off the sulphur, exposing more fruit and therefore more flavour. Paul Gordon is the chief winemaker at Leconfield Wines which is Australia’s oldest family owned winemaking business and home to Leconfield.

Ian Mastin Ian Mastin’s story about becoming a professional artist, is possibly the substance for a film script, to be as carefully crafted and engaging as his own art. Not a blockbuster, but an enriching tale.

I

an paints to perfection. He has found his metier in the genre of still life in the traditional manner and it is no lie to say that each grape or cherry looks ready for picking off the painting and eating, but this enviable talent did not declare itself until relatively late.

Born in the UK, his family emigrated to Australia when he was still very young. By chance (or maybe fate?) a young girl was similarly moving from Scotland around the same time and much later on the other side of the globe, they met and married. He had been self-employed for many years in the business of pest control and it was at this time in the 80s that Ian began drawing for recreation. He soon realised the results were quite remarkable and

he found that his works were sought after and selling. T h en in 1990 Ian and his wife “The Muse” – acrylic on board – Ian Mastin – 30x30cm Eleanor made the decision to return to Britain for a season to experience the land of their birth through adult eyes, together with their teenage children - a season which became a 10 year adventure. They soon settled near Edinburgh, Scotland and it was here that Ian happened upon an exhibition of still life works, much in the vein of the Old Masters, which for him was the point of no return, mesmerised by the way light and textures were portrayed with such skilful and meticulous detail and quickly realised that he had found his artistic passion in wanting to be able to intrigue others through images. Ian is a realist in personality as well as art, and happily shares that he has no memories of any art classes as a child in school. So this revelation of hidden talents was as much a surprise to him as everyone else. “I cannot recollect any involvement with art in my school days” he says. “As a novice painter my early works were mainly watercolour...but it was my discovery of Still Life in the traditional style that gave me the direction I had been seeking and the passion.” At this time in Scotland, Ian’s wife, Eleanor, said she would become the sole bread-winner, or in Ian’s words “get a proper job” to allow him a year to see if he could hone his skills and see where this exciting pursuit into art full-time may lead. Ian’s nature being as focussed as his artworks, he practised, experimented, studied images and applied himself 100% to using this opportunity and to mastering techniques. His commitment, matched by his abilities, resulted in the fine paintings he continues to execute. They remain a team and Eleanor quips that she is always happy to assist in ‘cleaning up’ the cheese platters! His approach is still to set up the subjects to work from before him in the studio and this adds yet further to the reality achieved. However, these are so much more than nostalgic or historic images. Ian captures those facets in his representation of the patina of age on a loved wooden cheese board or the dents in a table top, bringing a story to each piece. He explains that he would like his art to prompt viewers to “...consider those who have passed this way before, and of the fleeting nature of life”. He has certainly found a very appreciative audience and settled for many years now back in Queensland, he still also successfully exhibits across Scotland and England and is regularly featured in Art Fairs around the world. ich portraits and life scenes reveal a powerful colouring technique and eye for detail from this contemporary Australian artist. Working exclusively with oils, Helen is an accomplished realist, bringing stories to life with light, shade and movement. Jennifer Dean from Noosa Regional Gallery reflects on how craft and needlework is subverted in the work of Raquel Ormella to produce punchy, politically-charged contemporary art.

C

ommunicating and attempting to change the world through stitching is not a new concept. In the 17th Century, the domestic arts were regarded as a means of preparing women for domesticity. Enforcing characteristics deemed feminine such as obedience, neatness and conformity through following a pattern for example, textiles and embroidery became a mechanism for female oppression. Yet stitching conversely provided women with a creative outlet. Explains textiles researcher Ann Rippin at the University of Bristol; “there was no way of controlling what women were actually thinking about while they were stitching.” Embroidery and textiles unwittingly provided an avenue for free speech and self-expression.

By the early 20th Century, fed-up women turned their needlework skills into a tool for liberation. The Suffragettes as they became known, were militant women’s organizations who fought for the rights of women around the world. Collectively, they embroidered, stencilled and appliquéd banners, utilizing the traditional needlework skills that once oppressed their gender as a means of communicating their demands for political and civil rights, and for the emancipation of women worldwide. Describes Rozsika Parker in her 1984 study, ‘The Subversive Stitch, Embroidery and the Making of the Feminine’, the practice of domestic arts did not maintain women to be the weak, passive sex, but in fact set women on the path to revolutionary power; “passivity and obedience…are the very opposites of the qualities necessary to make a sustained effort in needlework. What’s required are physical and mental skills, fine aesthetic judgement in colour, texture and composition; patient during long training: and assertive individuality of design (and consequence disobedience of aesthetic convention). Quiet strength need not be mistaken for useless vulnerability.” At art school during the 1990’s, Australian artist Raquel Ormella began utilizing tapestry and embroidery stitching as a form of ‘antipainting’. Inspired by Parker’s research, Ormella chose to work with materials traditionally viewed as ‘female’ such as fabrics and thread. Now regarded as one of a new generation of artists extending the potential of traditional craft media like embroidery, to become part of a contemporary dialogue; like the Suffragettes 129 years before, Ormella’s utilization of banners and flags to voice key themes concerning identity, relationships and desire for change are prevalent in her recent work.

Visions of Australia

I hope you get this is a selection of Ormella’s new experimental textile works. Having grown up in a culturally diverse community, the exhibition is an exploration of her views on nationalism and identity without asserting authority. Inspired by the disjunction between what she ‘sees’ and by what is ‘described’, Ormella expresses her aspiration for emotional connection while alluding to her uncertainty of being understood. With no desire for a particular answer or conclusion, her intention she states, is simply for her intricate works “to have the potential of a reaction”. ward-winning Perth playwright Yvette Wall has been announced as a finalist in the 2019 Noosa Arts Theatre National One-Act Playwriting Competition, paving the way for her first interstate production. The grandmother-of-three – who's had 13 of her original one-act plays produced in community theatre in Western Australia since 2014 – is one of three writers shortlisted to take out the competition for her new piece, Little Angels. T

his however, is what made it all the more special for us, when we finally booked our tickets, and with the help of our son and his Japanese wife, started to plan our itinerary. Of course, a little bit of ‘insider’ information goes a long way when you’re planning to visit a new and foreign destination. My initial choice of accommodation in Tokyo turned out to be in the bar district, so my daughter-in-law quickly cancelled it and rebooked elsewhere. With that in mind, we happily discussed what we wanted to do, and where we wanted to visit with her and our son. And they proceeded to make the bookings for us.

Our plans were simple, we wanted to see beautiful locations, eat wonderful food (although not the really weird things), drink Sake - and take lots of photographs. Snap - all accomplished. With only a smattering of the Japanese language in our repertoire we were a little worried about finding our way around. You can’t get too far by knowing all the correct terms for food, wine, beer and sake! But, that all faded away once we arrived and realised that although hardly anyone admits to knowing the English language, a little game of charades and pointing to the correct name on a map goes a long way in Japan. And, the Japanese are always eager to help visitors. One young man in Tokyo even walked with us to our hotel on our first night in Tokyo, as we seemed a bit confused by our directions. We flew into Japan arriving late at night, and jumped on the special bus that would take us to Tokyo Bay, where we would stay close to Disneyland and Disneyland Sea. Next morning we were collected by the Disney Coach and transported the 10 minutes to the Disney Monorail. That day we walked about 10kms around the mind-blowing attractions, firstly at Disney Sea, before hopping back on the monorail to go over to Tokyo Disneyland for the captivating Million Lights Parade. Next day, armed with our trusty and extremely expensive, Japan Rail Pass, we headed to Tokyo Station to catch the Shinkansen Bullet train - possibly the 9th Wonder of the world!


The Golden Palace & Gardens Kyoto

It’s hard to believe this ‘mini city’ with its multitude of shops, restaurants, cafés, Daimaru store - and millions of scurrying people can function so well. But, it does - like clockwork. And you learn to follow the colour coded lines on the floors and signs! Our super-comfortable seats and the door number were always confirmed on the Shinkansen, which made it easy to know where to be and when. Onboard the train, hostesses roll a dining cart up the aisles just like on an aeroplane. So food and drinks - even snacks and ice creams are always available. All while travelling at nearly 300km an hour - and never actually feeling like you’re moving. It’s only the passing towns and lush landscapes that whoosh by, that bring you back to the reality of movement.

Once you realise that every form of transport in Japan arrives and leaves on time - exactly on time - travel becomes quite simple. And, this made our rail pass the perfect purchase. Over our 12 days we travelled to Tokyo, Kyoto, Shinjuku, Osaka, Nara, Mount Fuji, Ashikaga and back again. All with the ease of ‘seasoned’ Japanese travellers. Each city offers new adventures and beautiful photographic possibilities. Tokyo for its heady mix of modern culture and ancient history. From the throbbing lights of Shabaya to the shopping districts of The Ginza - and everything in-between. From the Sky Tree observation decks to Five-star luxury hotels to capsule beds. Stunning fine dining to local eateries, where you push a button on a machine outside the tiny premises and hand it to the chef through a window. We based ourselves in Kyoto for a few days and then used the Bullet Train to traverse the area to visit Osaka to see one of the world’s largest aquariums and home to two Whale Sharks. Then on the same day travel in the opposite direction to visit Nara, a beautiful town, where hundreds of deer live in the hills surrounding the city and venture down each morning when horns are blown below to beckon them. The deer wander around the town, parks and temples until nightfall, then return to the hills to sleep. The deer also bow to you - which is amazing. My son had told me about this many times but I had forgotten, until I was walking to the temple and the deer in front of me bowed. You can buy rice crackers to feed the deer, but don’t be too slow in opening the wrapping or you will find your handbag or backside getting a friendly nip as well. They are also rather fond of soft serve ice-cream, which is a huge thing in Japan. Every

town has a different flavour. Kyoto proved to be a city of vast history and beauty, and in the older part of the city you’ll find the young and older residents dressed in traditional Kimonos, wandering around the streets and in the beautiful gardens that abound throughout Japan. Our next stop was Lake Kawaguchiko to stay under the watchful eyes of Mount Fuji, before venturing to the Samsara Flower Festival and Mt Fuji Food Festival. The quiet township of Kawaguchi was very similar in feel to the Austrian or Swiss Alps, with european-style buildings surrounding the lake. And, although the day was overcast, Tom did manage to take a sunrise photo of Mt Fuji from our bedroom window. We left the surreal surroundings of Mt Fuji to travel back the the Ginza in Tokyo for a night, before heading out to Ashikaga to envelop ourselves in the beautiful world-renowned Wisteria Gardens. The Ashikaga Gardens are magnificent, with roses there that would defy description with their size and colours. On returning to Tokyo we spent our wedding anniversary at La Rochelle in Minami Aoyama - the signature restaurant of Iron Chef French, Hiroyuki Sakai - one of Japan’s most famous and iconic chefs. Chef Sakai named the restaurant after the region he travelled to on his first trip to France years before. Minami Aoyama is full of high-end dining, fashion boutiques and art galleries, and has the feel of a Parisian village.-La Rocelle fits in perfectly with its chapel on the street front used for wedding receptions. As you enter down the cobbled path through thick iron gates, you are met with warmth and ushered into the elegant dining room with its tables dressed in white linen, gleaming silverware and twinkling candles. Our degustation luncheon was ‘art on a plate’ and the service second to none. Even with no one speaking English, there was never a miscommunication - the staff are adept at anticipating your every need. We loved each and every course, and were thrilled when Chef Sakai made a special trip into the restaurant to meet us once again. We had met him at Palazzo Versace on the Gold Coast a few years earlier, and taken photos of him for a story. And if you want to know “Whose cuisine reigned supreme?” - then it was definitely Iron Chef French Hiroyuki Sakai. As you have probably worked out by now, I absolutely loved our trip to Japan, and will definitely be working on returning again next year. Another season - and many more locations to visit. Shinkansen here we come again!! And, I hear by 2020 they will be running a bullet train that does over 500km an hour.

WALLS

1: Gather your painting supplies – Dulux Weathershield in your chosen colour(s), drop sheet, high quality synthetic brush for cutting in, medium nap roller, roller tray, 400 grit sandpaper, painter’s tape, old cloths. 2: Ensure the surface has been properly prepared prior to starting to paint. Follow the label on the can for more information. 3: Start by cutting in around the edges of the wall with a brush – they are areas the roller cannot easily reach. 4: Load the roller in the tray.

5: Start rolling the wall in an ‘M’ pattern. Continue over the same section until the wall is evenly covered. Roll up to the area of 1m2 size or paint wall in sections. 6: Before painting starts to dry, using an unloaded roller, begin in the top left corner of your wall and gently let the roller roll down to the base in a straight line with no pressure. A lightness of touch will prevent new roller marks from forming. Repeat this action only this time, slightly overlap your last movement so your roller rubs away the line created by the previous stroke. Continue this across the area you have painted. This is called laying off. 7: Once the first coat is dry, repeat the total process again with a second coat. A third coat is required for bare/ new surfaces and depending on colour selected. 8: Allow the first coat to dry and repeat the total process again with a second coat.

LANTERN

1: Prepare the lantern for painting by sanding to remove any old flaky paint and mould. Follow the can instructions for further information. 2: Apply Dulux Duramax colour in multiple light, mist coats. 3 Admire the transformation. Great Job!

Outdoors ENJOYING THE GREAT OUTDOORS Winter is upon us again and the cooler,
shorter days have triggered the fruit on my 
citrus
trees
to
finally
change colour.
Here’s a fun fact for you: Did you know that the same mechanism that causes autumn leaves to change 
from green to orange
, also
triggers the change in colour in citrus fruit
in autumn
?

T

his is why citrus in 
tropical regions stay green on the outside even though they are ripe
and ready to eat on the inside.
The Sunshine Coast climate is perfect for growing citrus 
–
I don’t think there’s
a garden b
big or small 
without at least a
lemon tree.
It’s as Australian as the Hills Hoist!
 Citrus are generally resilient and easy to grow
 ,
 both

in the ground and in pots
if you remember a few 
key points
.
Grown
in the ground, 
they have quite shallow
and fibrous root systems. This means
that in order for 
them to do their best 
it is important to keep
them well mulched and free of competition from weeds 
and grass. Mulching to at least the extent of the drip zone
will keep the roots cool and conserve water 
so you don’t need to do too much additional watering. 
But always keep the collar 
–
that is the trunk, 
free from mulch. 
That said, they don’t like to have wet feet either, so if you’ve got clay soils as many 
of us in the hinterland do, choose a well drained spot 
–
on a slight slope if you have it or build up a bit 
of a mound 
and plant on top of it 
to keep the roots above the water level during those long wet spells 
we’re famous for. 
 What this translates to when growing in pots,
is to use a
top quality potting mix, containing
water saver crystals then
water little and often.
Keep the potting
mix damp but not saturated and
don’t allow it to completely dry out.
In terms of nutrients, citrus are pretty greedy. Regular top ups of mulch can provide some of these 
needs but they also benefit from at least yearly, and preferably twice a year (in Spring and Autumn) 
applications of a fertiliser that includes both micro and macronutrients
. There’s no shortage of citrus specific fertilisers on the market so just apply according to directions.
Citrus work beautifully as ornamental trees, with their glossy green leaves and delicate, highly

fragrant

pink flowers. The incomparable smell of citrus bloom in spring is reason in itself to have a lemon, lime, finger lime or kaffir lime in a sunny spot on your verandah or patio.
 The newer dwarf varieties 
are particularly well suited to pots as are the grafted multi
-
variety trees which allow 
you to have a bit 
of everything in easy reach of the kitchen or your drinks trolley
.
While we’ve traditionally tended to grow common varieties of lemons and oranges, with the 
development of our international palate, 
we’re 
beginning to embrace
more exotic varieties like 
the 
pomelo
. I was introduced to this amazing fruit while living in Th
ailand and was an instant convert 
–
its 
one of the original citrus species, not a hybrid. Even 
larger than a grapefruit and with a
very thick pith 
its size belies
its delicate flavour...

Milder
and
sweeter 
than 
grapefruit with an almost floral 
undertone, it
really is sublime
and prized in South East Asia where it is widely used in salads
. 
At the 
other end of the size spectrum and much c
loser to home, why did it take us so long to put our
native 
finger
limes 
on the map? They’ve taken the world by storm and 
rightly
so... those crunchy little explosions of flavour take every oyster and 
G&T
to the next level. 
If you’ve 
already 
got established citrus, now is the time to start thinking about pruning 
–
remove any 
branches that are damaged or experiencing dieback. Al
so try to keep branches short enough that they are able to support the weight of fruit. 
It’s not uncommon for branches to break under the weight of 
a bumper crop. 
 As a rule I try to keep branches no more than a metre long and similarly try not to let 
the trees get so tall that we can’t reach the fruit at the top. Equally important is to thin out the 
internal 
canopy so air and light can reach into the centre 
–
this will maximise flowering and fruit set,
and help reduce the chances of disease. Fortunately citrus are very forgiving so if you go over the top with your pruning it isn’t the end of the world, they will bounce back. The best way to avoid disease in citrus is to keep the tree healthy pests and disease take advantage of stressed, weak and unhealthy trees, so feed them well, maintain soil moisture and remove and destroy and diseased leaves and branches. Citrus are very attractive to bees and in Spring I can hear the bees from quite a distance so we try to avoid using any pesticides if at all possible And what to do with all that fruit? I’m glad you asked! Some of our trees are over 20 years old so it’s at this time of year that I madly start bottling all sorts of marmalade lemon, lime and orange, preserving lemons and limes in salt for tagines and roasts, making citrus curd for tarts and cordials toward off the winter colds. And if you pop down to Seadragon Style in coming weeks you may well find some of my excess produce there for the taking! In other news don’t forget that the fabulous Queensland Garden Expo is coming up at the Nambour Showgrounds from July 12th -14th. On the river NOOSAVILLE - SHOP - EAT - CRUISE

From sunrise to sunset along the park that runs adjacent to the Noosa River (known as the ‘golden mile’) you’ll find a passing parade of people walking their dogs, others taking the time to amble along watching the boats - as they motor or sail past; devotees of tai chi and yoga carefully going through their daily rituals; and others enjoying a quiet cup of coffee with friends; while mothers and holiday makers take their little ones for a walk or ride under the bowers of towering trees.

long the foreshore, helpful information centre staff will book tours for you to visit Fraser Island (the world’s largest sand island, and home to Australia’s purest dingos), as well as trips to the mystical Everglades, or themed cruises. With playgrounds and exercise equipment, as well as electric barbecues, and covered table and bench seating positioned around the area, it is the perfect place for a family get together. The carefree nature of the area is mirrored by the gentle wings of the pelicans and seagulls, as they soar high above before coasting in to the shoreline in search of the prime position for sleeping or checking out the chance of catching a fish down below; as those wishing to spend some time on the water hire kayaks, paddle boards, small boats and pontoons from the local boat shed operators. If not so inclined, you can still enjoy the river by hopping aboard the ferry for

a leisurely cruise. There’s even a sunset cruise available at The Jetty, where you can take a bottle of wine and a few nibbles along for the ride. The ferry provides glasses for you ease. Noosaville has always been a must-visit destination for great shopping and dining possibilities - and now it’s getting even more exciting. There has also been an exhilarating number of new restaurants opening in Noosaville to join longtime favourites like Flux and Thomas Corner , Noosa Boathouse and Waterfront. New restaurants include Barefoot Bar & Grill on Gympie Terrace offering diners water views and good breezes on a hot day or night; YoYo has also opened on the Terrace and is a sister bar to IS Tapas both serving tantalising cocktails and an eclectic range of wines; a new Greek restaurant, Santorini is adding to the dining scene, with a new breakfast menu soon; .and Secret Garden Café at Acres garden centre just up the road, is offering diners a touch of Spanish and Caribbean flavour in a garden setting. There’s never been a better time to visit for the day and stay on till the evening!!

INCE the last issue of Noosa Style, a proposed change in flight paths over the shire has created a reaction akin to mass hysteria amongst some of our citizens. But valued visitors, upon whom we all depend so we can put gateau on our marble tables, can be assured things are not as bad as these nervous locals would have it. At a maximum measurement of 65 decibels, the sound of aircraft (you could hardly call it noise) will be about as intrusive as a normal conversation eavesdropped on two metres away.

Y THE time you read this I’ll be in Europe swanning around Scandinavia with friends from that part of the world. I’ll disclose to them that a recent DNA test revealed I’m five percent Finnish, so not a total stranger to those parts. Upon my return to Oz, with Spring approaching, I’ll front up in Brisbane for my sixth spinal operation that I hope will get me properly back on my feet and allow me to amble more than a couple of hundred metres at a time. Ah, I must reprise an earlier plea to our tone deaf Noosa councillors – prithee gents, emplace more public benches ’pon our leafy parks. We’re not all as athletic and sprightly as you think you are.

ECENTLY I returned from a week in Port Moresby that coincided with a change of prime minister in Papua New Guinea. I decided not to disturb the Great Man but did engage with new police minister Bryan Kramer and commerce and industry minister Wera Mori, both known to me. I was delighted to hear Marape say that he sees himself as the “chief servant of my country” and declaring that “we will organise for your voices to be heard”. ENJOY having my hair cut even less than having my teeth drilled, so I let my once tight curls and now thinning frizzy locks grow like my shirts - to oversize. Like Aussies, Melanesians have a great sense of humour and, while in Port Moresby recently, some of the locals, gazing at my naturally wild hair-do, took to calling me ‘Pawalektrik’ – electricity. Pidgin English has a colourful word for everything.
