Pat Cohen has been fascinated by all things miniature from her early childhood. Over several years Pat Cohen has created her very own dolls’ house which is now on display at Burnside Village. Inspired by her own childhood dolls’ house which was left behind in Singapore when her family had to move to Australia and the Queen Mary’s Dolls House in Windsor Castle, England, Pat Cohen has spent many years, collecting and making unique miniature pieces and then restoring and renovating her very own dolls’ house which she purchased at auction. Pat has now written a book, My Dolls’ House, which tells the story of this very unique work of love. Should you wish to purchase this book for $9.95, it is available

If you could tell your Miss Universe contestant self one thing, what would it be? This is tricky! I never thought I would win, so I didn’t put too much pressure on myself, I was just enjoying the ride. So I think I would tell myself to just keep being yourself no matter what and try to get rid of any doubts!

You are vocal about positive body image and mental health issues. Why these causes? These issues are very important to me as I have experienced them myself. Several years ago I was diagnosed with anxiety and depression, and during this time I also went through a period of disordered eating. My relationship with my body was negative, I had low self esteem and I was very hard on myself. I know how common these issues are for young people and I hope that by being open about my own struggles, I might be able to help others to get through theirs.

Your three winter wardrobe essentials? A comfortable and stylish pair of jeans, boots and a big cosy knit.

What are you most looking forward to this year? I’m excited for another year working closely with my manager to push for some bigger roles together. I am also looking forward to incorporating more of my art back into my life and utilising my speech pathology skills, too.

Do you feel like you’ve entered a new chapter in your life? Definitely, it’s a bit strange – Miss Universe feels like a lifetime ago now! It was an amazing chapter of my life, but I think it’s important for me to keep looking forward and to continue making the most of all of the opportunities that come my way.

You have been an artist for much of your life. What sparks your creativity? It might sound cliché, but I find inspiration for my art everywhere. I feel like I’m constantly flooded with beautiful images, plants, flowers, foods, people, clothes, colours – everything inspires me in some way. I have been trying to incorporate more meaning into my work lately, so I’m including more body diversity and encouraging positive body image through my illustrations. I’m excited to see where this takes me.

As a globe trotter, what brings you home to Adelaide? Adelaide will always feel like home, no matter where I go. Most of my family are based here, so I love to come back as often as possible to catch up with them and my friends. I am really lucky to be able to get here as regularly as I do, I love Adelaide.

A NEW CHAPTER Inspired by a team of independent booksellers, Harry Hartog is more than a space lined with shelves, it’s a book-lovers oasis.

Tell us about the early chapters of Harry Hartog bookstores. Where did the business originate? Harry Hartog is owned by brothers Robert and David Berkelouw. They grew up surrounded by books as part of their family’s bookselling business ‘Berkelouw Books’ which began in 1812. Harry Hartog was a new venture they created in 2014, one they aspired to make more accessible to children and open up to a new, wider demographic – everyone! It was to be about creating a lifestyle around books, to breathe life back into them. So far, we think we’re on track!

How do you think bookstores have continued to thrive despite the rise of the internet? If anything, we believe bookstores have continued to thrive not despite the rise of the

internet, but because of it! It created an increased need for human connection and for tangible products. So many of our customers comment about how amazing it is to have a physical space where they can stop, slow down, explore. There’s just something about the magic of books!

What can visitors expect at Harry Hartog? We believe our point of difference lies in the theatre of our bookstores and the genuine human connection our booksellers have with our customer. They have been lovingly made to create a feeling of mystery and adventure and to invoke curiosity. They tread the line between appreciating the past and looking forward. Each of our stores has a unique element – in them you may find a motorbike in the window, a boat on the float or a hot air balloon hanging from the ceiling.

How does each bookstore remain true to the brand’s passion for environmentallyfriendly practices? We believe in the enduring magic of books. Unlike electronic devices – which are built with the sole aim of becoming obsolescent – books are, in some way, always passed on; whether you hand one over to a loved one, recycle it, or sell it to a second-hand bookstore, a book and the knowledge contained within its pages is stored, recycled and perpetually repurposed, expanding countless minds along the way. Our most significant move is that we’re moving away from plastic bags entirely in 2019. Our plastic bags have always been 100% recyclable, but this move is one we knew was important to make.

We chat with Zara HQ about their new collection and all the latest trends the modern fashionista should add to their arsenal this season.

Forever pushing the boundaries and setting the standard for fashion trends around the world, European fashion giant Zara have the monopoly on what’s hot and what’s not around the globe. And this season, it’s all about rich detail and a diverse colour palette. For Zara Woman, the 2019 winter collection is inspired by the earth. Think rich terracotta tones and organic textures in the form of beautiful dresses and kaftans, finished with delicate embroidery. Be taken on a journey to a desert oasis with this collection which is also contrasted by other pieces that feature a fresh water colour palette in feminine and soft silhouettes. On the flip side, the Zara Man winter collection references Steve McQueen and his 70s-inspired film, “The Man and Le Mans”. What does a typical day in your life look like?

One thing you’ve never done, but would love to experience:

There is no typical day! At the moment, every day is different. I have two jobs and generally work four days a week. Tuesday is my favourite weekday because it’s my day home with my son. In summer we’ll usually head to the gym and then spend the rest of the day at the beach. When he’s with his Dad I’ll start my day around 5am by going to the gym or taking the dog for a walk along the beach, then it’s off to work.

I’d love to experience a European summer, I grew up in QLD and I’m the daughter of a fisherman so I’ve grown up at the beach, I’d be there every day if I could.

Describe your style: If you only had 30 seconds to describe yourself, what would you say? I’m generally quite a relaxed person, I don’t tend to get too upset by things. There’s a misconception that I’m composed and graceful but I’m actually really clumsy and regularly make a goose of myself. I’m sociable, love spending time with my family and friends and love meeting new people. I’m good at getting to know people because I tend to ask a lot of questions!

What are you passionate about? I definitely value the relationships I have, my son, family and friends. I’m really lucky to have such a supportive network and I put a lot of energy into these relationships. Maintaining a healthy lifestyle is really important to me, I’m a big believer that food is medicine and I try to eliminate chemicals as much as possible from products such as skin care, cleaning products, organic produce, etc.

I’m very casual and more likely to be underdressed than overdressed. More often than not you’ll find me in activewear or a basic tee and denim shorts or jeans. If I’m getting dressed up I try to be more adventurous, lately I’ve been wearing dresses which is something new for me!

Hidden gem in Adelaide that you love? Second Valley would have to be one of my favourite spots!

Best piece of life advice you’ve ever been given? People’s actions and reactions to situations are based on their own experiences so, if someone has an undesirable reaction or is behaving badly, approach with compassion and seek to understand rather than judge.

When it comes to being in the public eye, what’s one thing people don’t realise? I think generally people forget that the image people present in public isn’t always accurate, so take what you see with a grain of salt. Favourite winter bloom? The cymbidium orchid. Ours are locally grown and are elegant and long lasting. This is closely followed (a little later in the season) by sweet peas. Each year these flowers bring gasps from us when they arrive. They aren’t in season for long and don’t even last very long once cut but they are so special and evoke many fond memories in people.

INGREDIENTS

1. In a large sauce pan, boil water, sugar, pears and cardamom pods for 20 minutes until the pears are soft but still holding shape. 2. Take pan off the heat and allow to cool slightly. Place tea bags into the pan and allow them to infuse for five minutes. Discard afterwards. 3. Remove pears carefully and place in bowls. 4. Drizzle with syrup from pan. 5. You can serve this dessert with whatever takes your fancy, but we love adding some crunch with granola as well as some fresh winter fruits. However, a scoop of rich vanilla ice-cream is a decadent alternative.

INGREDIENTS

METHOD

3 tbsp olive oil

1. Heat one tablespoon of oil in a large saucepan. 2. Add garlic and onion and cook for approximately five minutes until lightly golden. 3. Add paprika, tomato puree and chilli paste and cook for a further one minute, stirring well. 4. Add sweet potato and stock. 5. Bring to the boil and cook for 8-10 minutes until potato is just tender, stirring regularly. Remove from the heat and stir in tahini to combine. 6. Use handheld blender to puree sweet potato to a smooth consistency. Prepare chickpeas and garnishes as soup continues cooking. 7. Heat left over oil in a non-stick frypan over a high heat. Toast chickpeas for 4-6 minutes, seasoning with salt and pepper, until crunchy. 8. To serve, divide soup evenly, top with chickpeas and decorate with coriander and flowers.

Pancetta Crisps WITH GOAT’S CHEESE AND FIGS INGREDIENTS

METHOD

Round Pancetta slices (3-5mm thick)

1. Preheat the oven to 200C. 2. Place pancetta slices in a single layer on baking tray and bake for approx. 15 minutes, or until crisp and browned. 3. Using a spatula, place crisps onto paper towels and allow to cool. 4. Once cool, top each crisp with a generous teaspoon of fig jam. Crumble goat’s cheese and add sprigs of rocket and watercress. Finish with two pieces of fig.

Burnt Butter

Scallop Risotto WITH SAUTÉED SILVERBEET

SERVES 4 // PREP TIME 15 MINS // COOKING TIME 15 MINS

INGREDIENTS

METHOD

4 tbsp butter

1. Heat one tablespoon of oil over a large pan on low heat. Add in garlic and stir. Add in silverbeet and stir until wilted. Transfer into a bowl, drizzle with lemon juice and set aside. 2. For the burnt butter sauce, place two tablespoons of butter in a clean fry pan over a medium heat and stir. Keep stirring as the butter foams and eventually turns golden. 3. Once dark golden, remove from the heat and set aside. 4. For the risotto, melt one tablespoon of butter in a large non-stick pan over a medium heat. Add in shallot and sauté for one to two minutes, until soft. Add the rice and stir well. Pour over the wine and let sizzle.

1 shallot, minced 1 cup Arborio (risotto) rice ½ cup white wine, or non-alcoholic alternative 3 cups chicken stock ½ cup Parmigiano Reggiano cheese, grated 2 tbsp canola oil 450g large scallops 1 clove garlic, minced 1 bunch fresh silverbeet 2 tbsp lemon juice 56

5. Add in stock, ½ cup at a time, stirring in between until rice is soft and creamy. More liquid equals a creamier taste, so add a splash more stock if needed. 6. Stir in grated cheese and season with salt and pepper. 7. To prepare scallops, heat one tablespoon of oil in a fry pan. Ensuring scallops are dry, sprinkle with salt and add to pan. Make sure the oil is hot enough that the scallops sizzle. After two to three minutes, flip the scallops and cook for a further two minutes. 8. Transfer to paper towels to absorb excess oil. 9. To serve, place risotto in bowls, top with silverbeet, scallops and drizzle with burnt butter sauce.

3 skin-on chicken breasts

1. Preheat oven 220C. 2. Rub chicken with two tablespoons olive oil, chopped herbs, garlic and lemon zest. Season with salt and pepper. 3. Heat two tablespoons of oil in an oven proof skillet over a medium-high heat. 4. Add chicken, skin side down and sear until golden. 5. Flip and cook for another five minutes. 6. Remove chicken and add butter, potatoes and carrots to the pan. Season with salt and pepper. 7. Cook for five minutes, stirring until the veggies are slightly softened. 8. Pour the chicken stock over to deglaze the pan. 9. Simmer for another five minutes, then remove from heat and place chicken in with the vegetables. Drizzle with lemon juice. 11. In a small bowl, mix cranberries, brown sugar and vinegar. Scatter over the chicken. 12. Transfer skillet into the oven and roast for 20-25 minutes, ensuring that the chicken is cooked through and potatoes are tender. Decorate with rosemary sprigs and a few sage leaves.

200g green lentils, rinsed

1. Preheat oven to 220C. 2. Place lentils in a saucepan and cover with 8cm of water. Add onion and bay leaf. Place on a high heat and bring to the boil. After a few minutes reduce to a low heat and simmer for 20-30 minutes. Add one teaspoon of salt towards the end of the cooking time and cook until lentils are soft but still holding shape. 3. Drain the lentils, discard the onion and bay leaf. 4. Meanwhile, toss the beets and carrot with two tablespoons of canola oil and ½ teaspoon each of salt and pepper. 5. Place on a baking tray and roast in the oven until browned and tender, approximately 25-30minutes, tossing halfway through cooking. 6. In a small bowl, whisk together yoghurt, garlic, lemon juice and chopped herbs (leave some aside for garnish). Season with salt and remaining canola oil. 7. To serve, toss lentils with a splash of oil and lemon juice. Mix with roasted vegetables. Top with feta, remaining herbs and walnuts. Finish with a drizzle of yoghurt dressing.
