Sophie Catsoulis sits down with Lindsay Bennett, the man behind MBFF Brisbane. What sparked the temporary absence and swift return of Mercedes-Benz Fashion Festival Brisbane? After 10 wonderful years, it was with deep regret that we were forced to review the financial viability of running the event. A group of designers [was] extremely disappointed and asked that we reconsider. So, during the past year, it was important to reflect on how we could reshape the program within much tighter budgetary constraints without losing its much-loved look and feel. How has the festival evolved over the years? It’s about evolving as an event and creating new elements that will stimulate awareness for the participating designers. It’s about delivering the program in a way that is fresh, exciting and [that] lives up to the high standards that have become synonymous with the Brisbane Fashion Festival over the past decade. Will this year’s festival have a strong focus on supporting local creatives and retailers? The Fashion Festival is and always will be a platform to support the local industry. The festival is about encouraging audiences to shop local and support Queensland and Australian designers.

How do you feel the Brisbane shows compare to their domestic (and global) counterparts? Queensland has so much to offer the fashion industry! Own It. was designed to encourage audiences to shop local, direct from the runway. This year, we are taking this campaign one step further. CIR CUS Cirque du Soleil performer Steven Bishop talks to Emma Carr about chasing the dream and life on the road.

“WE HAD A childhood mostly without television, and our parents encouraged us to try anything that interested us.” One of three brothers, Steven Bishop grew up flying model aeroplanes, making pottery and sailing. The multilingual Australian, who graduated with a Bachelor of Dental Science from The University of Queensland in 1984, has been performing in Cirque du Soleil’s Varekai for the past 13 years. “After a uni holiday trekking in Nepal and surfing in Southeast Asia, I decided it was time to focus on one hobby, or at least just a few,” says Steven. “I set the parameters: it had to be creative, and it had to be physical.” Steven soon discovered the art of mime. He participated in La Boite Theatre Company’s Fridaynight La Bamba shows before travelling to London to study the theatrical medium. From there, he went on to the École Jacques Lecoq in Paris to learn the art of physical theatre. Steven continued to pick up unique theatrical skills along the way, including comedy, ventriloquism, escapology, and stilt performing. His stunt work saw him earn the position of the Lunar Ghost and Rowan Atkinson’s stunt double in the 2002 film Scooby-Doo. Steven first became aware of Cirque du Soleil through a VHS of Nouvelle Experience, an early show featuring the clown David Shiner. “David’s style really appealed to me and [the show] spoke to me in the theatrical language I had learned at École Jacques Lecoq,” he says. The former dentist was performing at the Las Vegas Ventriloquist Festival in 2001 when a friend (who was performing in Cirque du Soleil’s O) encouraged Steven to send an audition video to the Cirque du Soleil casting department.

Steven remembers his Cirque audition as being like Survivor. “After every exercise, I’d come back into the [audition] room and there were [fewer] people.” Surprisingly, however, Steven says the most difficult part of the audition process was not the physicality. “I had to fill in my personal details – marital status and number of children – and there wasn’t enough space on the form to include all four of my children.” Steven jokes that he considered leaving one of his children off the form until Casting Director Michel Laprise (now one of Cirque’s proclaimed show directors) saw Steven’s frustration. Laprise provided extra paper and assured the hopeful performer that even big families were welcome at the company. Steven was cast as the clown in Director Dominic Champagne’s Varekai. The story follows on from the Greek myth of Icarus, telling the story of what might have happened after he flew too close to the sun. Cirque du Soleil’s show sees Icarus (rather than drowning in the sea below) crash into the volcanic and mysterious forest of Varekai. When life with Varekai began, Steven’s four kids were aged two, six, eight and 10. The performer admits that the adjustment to apartment living and regular relocation was difficult, but says the positives have easily outweighed the harder times. “There were many adjustments required. But as a result, I am proud to say we are a very close family. The kids are multilingual, adaptable and confident, and are taking on the world in their own right,” says Steven. “[My wife] gave up her career to [steer] the boat through the variable seas. She did an exemplary job of raising exceptional humans.” Creating a sense of home in various itinerant environments and keeping their children’s English up to the standard of their Australian peers were just some of the challenges Steven and his wife faced during life on the road. However, this left-offield lifestyle eventually became the norm for the Australian family of six. “We made sure that we always ate dinner as a family and always ensured that there was a consistent supply of Vegemite,” Steven jokes. The Varekai cast member also makes particular mention of the challenge of maintaining regular dental check-ups, and not losing children on the New York and Moscow subways. When asked whether he was able to pinpoint a particular career highlight, Steven answered with

ease: “Performing Varekai at Royal Albert Hall. It is such an amazing historical space – one feels like a true thespian playing there.” The former dentist admits he has considered a return to his previous profession, but after looking into re-registering, Steven found that new administrative requirements had been introduced. “It was going to be much more difficult than making people laugh,” he says. Steven has recently returned to Varekai after a two-month sabbatical performing in Palazzo Hamburg. This performing experience was very different for the Cirque clown. “[It’s exciting] to perform in such an intimate space, where you can see into the eyes of each of the 370 German guests,” he says. If jumping back on tour with Varekai isn’t enough, Steven has also been working on a clown show with a Basque clown director, is writing a lecture series in hopes of inspiring Australian school-leavers, and is currently designing a permaculture project in Ecuador with his wife, Cathryn Luckmann. Is there an intentional theme to your home? The black and white furnishings, concrete kitchen benchtops, and indoor plants make our home feel like a retreat. We’ve created it to be both timeless and functional, with a feel-good vibe. What are some of your favourite pieces in your home? My new Art Deco marble coffee table – a Christmas gift from my husband, Jamie. What inspires you when decorating? I love open, comfortable spaces. I think we have managed to capture a New York loft feel with a touch of a Parisian influence (places I visit biannually with Calexico). Do you feel like your home reflects your personality? For sure. Our home has a timeless but eclectic feel. Do you have a favourite memory from your

INTERVIEW: CAMILLA Head Designer Jenna Redfern chats to Emma Carr about the inspiration behind the latest collection, Chinese Whispers. What is the inspiration behind the Camilla Chinese Whispers collection? The inspiration comes from the history, the architecture and the traditional artisans of China and Tibet. We met with artisans and learnt about the methods they use to produce their art and textiles. How are the prints developed? Camilla and I photograph everything on an inspiration trip – usually between 20,000 and 30,000 photos. We then collate all of our treasures and images and the story of our travels starts to emerge as prints. Once we have an idea of what the print is going to look like, we develop our fabrics, embroidery, trims and other surface details. How do you keep up to date with designs? We don’t necessarily follow
trends at Camilla; [we] allow the collection to grow from the traditional designs of the culture that we [are] inspired by. What are some easy ways to accessorise during the cooler months? Layering is a big part of the winter aesthetic at Camilla, and our winter collections always have knits, leathers, and the occasional hand-embellished floor-length coat. What part of your job would people find most surprising? I live part-time in India, where I spend a lot of time working closely with our extended Camilla family, which includes colleagues, suppliers, and our craftsmen and women. THE WIND WILL NOT SERVE Here’s why you have to pave the way to a better career, writes Sarah Taviani. ACCORDING TO A report by the U.S. Department of Labor, 65 per cent of today’s students will be employed in jobs that don’t exist yet. If you think those statistics don’t apply to you, let’s put this in perspective: when I was six years old, Facebook was a faint glimmer on the horizon, Instagram didn’t exist, and moving images embedded in written news articles were something that J.K. Rowling was dreaming up for the Wizarding World. Now almost every company you come across has some kind of social media presence and someone to manage it. Boom. New job created. There’s a Latin proverb: “If the wind will not serve, take to the oars.” Basically, luck will only get you so far; you need to work for what you want. In today’s society, opportunities that you’ve

only ever dreamt of will become a reality; hobbies can become a profession; and professions can become something you love, if you’re willing to challenge yourself and learn something new. But employment is a two-way street, and employers have their own part to play. Many people will only work for a particular company (or in a particular role) for up to five years. This timeline is not due to indecision on the employees’ part; it’s because most companies can’t afford to offer everything that each staff member needs. If an employer wants to keep their staff for longer
than the average five years, they need to consider whether they’re supplying opportunities for development in existing and emerging fields. If there’s nowhere to progress within a company, it follows that employees will learn all they can, and leave like clockwork. An evolving environment is essential, but it needs to be carefully considered; a system ready to collapse at any moment is not an incentive to stay. However long you choose to stay in one workplace, make it a valuable learning experience. Then assess what you want in your career and, if need be, take to the oars.

Then it’s back home for breakfast and to check emails before heading into the office or directly to appointments. You work and live in Bulimba; what are some of your favourite spots in the suburb? It’s great living and working in the area. Bulimba has a tight-knit, village atmosphere that is full of riverside charm. Being able to go out for a casual dinner and then to the movies - the Balmoral cinemas are a local gem! The array of good coffee shops, bookstores and parks are the reasons I call Bulimba home. On weekends, where will we find you? On Saturdays, it’s work, work, work. On Saturday evenings, it’s great to catch up with friends and unwind over a drink, or see a movie. Sundays are a bit like therapy for me. They usually involve a nice bike ride with a close group of friends, then perhaps lunch in the area. A drive to the coast is also nice. The Clayfield College team dined at Google HQ and toured the Australian IBM headquarters in St Leonards. Here, the girls were able to witness some of the work done by the global technology and innovation giant. The girls were then taken through design thinking exercises to further brainstorm and capture optimal outcomes. The strong academic focus at Clayfield College assisted in fostering skills that allowed the girls to
be involved in such fulfilling real-world experiences. Families will be able to learn about the dynamic and contemporary academic and co-curricular programs offered at Clayfield College at the Open Morning on Tuesday, May 16. Brisbane-based musician Hazlett speaks to Caitlyn Spanner about touring, inspiration, and secret shows on the horizon. THE LATEST EP from Brisbane-based musician Hazlett is titled Honey, Where is My Home. Contrary to what the name might suggest, and despite spending plenty of time on the open road, touring around Australia and making music in Sweden, Hazlett knows that he will always be drawn to Brisbane. “There’s something really comforting and warming about calling this city home,” he says. The talented musician has always had music running through his veins. In the third grade, he was handed a trumpet by his teacher and he never looked back. Sneaking into his first Big Day Out as a teenager cemented his love even further.
Of course, Hazlett’s success hasn’t come without its ups and downs. After dealing with selfdoubt and a lack of inspiration, Hazlett gave up and thought he’d never return to music. “I went out and got a full-time job to pay the bills,” he explains. However, his career took off again when a publisher in Sweden discovered an old acoustic video Hazlett had posted online.
“I ran away and poured my heart out in a little recording den in Stockholm,” he says. Having recently wrapped up an Australia-wide tour, Hazlett plans to focus on getting his music out there as much as possible for the rest of 2017. Honey, Where is My Home is the first of three instalments from the Brissie artist. You can expect to see more from this local talent (including some secret shows) before 2017 is out.

Gold continues to be used as a complementing colour to luxe autumn tones such as burgundy and amber. Incorporating these rich hues in abundance creates the perfect foundation for that special autumn dinner party. Traditionally, visual merchandise displays for autumn contain earthy hues; the only difference this year is the additional elements of metallic touches – bronze and gold add a hint of modernism to any installation. Florals are another great way to incorporate autumn tones for your next event; whether it be a small, clustered posy with romantic tea lights or an opulent, oversized table centrepiece, your guests and clients will be carried away in the colours and warmth of the season.

FLAVOUR MAKER Massimo Speroni has joined multi-award winning restaurant Bacchus, writes Christie Sutherland. BACCHUS GREETS YOU with a candlelit interior and throws of deep mahogany and marble. Designed by LA-based interiors sensation Tracy Beckmann, the restaurant showcases a warm, romantic atmosphere that takes you away for a night of indulgence. Knowledgeable service and a genuine love of food and wine are the drivers of the restaurant. Dining options include an à la carte menu of signature cuts and flavours, and indulgent degustation options created by new Head Chef Massimo Speroni. The wine list curated by Head Sommelier Andrew Giblin is world-class and perfectly suited to the flavour of the food. Bacchus is and always will be focused on inspired modern Australian flavours, and Massimo’s worldly experience brings a new depth to the menu. Fresh, clean and light classically-created dishes are the stars of what is essentially an edible art gallery. The seven-course matched degustation began 46
with textures of beetroot, goats’ curd, crispy amaranth and xeres vinegar. From there, we moved to the kingfish with grilled corn, sour cream, quinoa and lime, closely followed by foie gras paired with smoked potato, 30-yearold balsamic and seasonal vegetables. Each item on the plate held a fresh flavour. Next, we indulged in the risotto with La Tur goats’ cheese and fresh aromatic herbs. Before we knew it, the perfect seared venison loin with parsnip puree, coffee powder and horseradish was on the table. Cheese was next: Comté Gruyère served with golden raisins and pear chutney on rye. As a cheese-lover, this was one of my favourite dishes; it made time stand still. Just when I thought things couldn’t get sweeter, a dish of lemon and basil syrup, strawberry parfait, lemon cake and peach jelly was presented. Ending the meal with petit fours rounded out the most perfect fine-dining experience. It’s easy to lose your appreciation for food when

THE MATT ABOUT TOWN Chef Matt Moran chats to Sophie Catsoulis about all things fresh and flourishing. FOR A PROFESSIONAL chef, you’d imagine grocery shopping to be a monotonous task. But for Matt Moran, it provides an enchanting avenue for expression. “I go to the fruit and veg shop or the butcher without a preconceived idea,” Matt says. “I just go in there and see what’s great, what’s available, what’s in-season. I think that’s the best way to shop – it’s fantastic!” As a result of his upbringing in country Tamworth, local produce is always at the forefront of Matt’s mind.
“Markets are fantastic to go to; you know who’s growing it, that the quality is good and it just tastes better, I reckon,” he says. Matt also brings up a point I had never considered – the romance of seasonal produce. He reminds me of the natural, historical methods of farming, before the days of cold storage. “In the beginning and end of the season [produce is] more expensive and not great,” he says. “But in the middle of the season, it’s in abundance, great quality and at its cheapest, too.” Fruit and vegetables aren’t the only things flourishing this season. As an entrepreneur, Matt is far exceeding even the highest expectations, growing his business one delicious venture at a time. With award-winning establishments located all around Australia, it’s hard for Matt to play favourites, but he did touch on his Eagle Street Pier location: Aria Brisbane is currently in the midst of a revamp. “We’re [giving it] a bit of a refresh,” he explains, without giving too much away. “You know, Aria has always been fantastic. It’s going to be exciting; the menu is going to change.”
As for what’s next for Matt, 2017 is set to be industrious as ever. “There’s always something happening,” he says.

When it comes to being an amazing host, there are a few cardinal rules. DO Prepare as much food as possible well in advance. Think of how precious those moments are before the doorbell rings. You might even have the time to pour yourself a glass of wine. DON’T No one wants to shout over music, so avoid cranking the volume on your favourite playlist.
DO Have all the ingredients ready to go before you start cooking. This way, you’ll be able to discover whether you are short on spices before you begin. DON’T It might seem like a good idea to try a new recipe for your guests, but not if you’ve skipped a test run. There are few things sadder than realising you have forgotten a step in the recipe 15 minutes before guests are due to arrive.

We strongly believe in the ethos of less but better. What is a common misconception about organic beauty products? There is a common misconception that organic products are going to be more expensive [and less effective] than the mainstream, which is just not the case. On average, our product range has more active and fresher ingredients than mainstream, and because there are no fillers or preservatives you are getting exactly what you pay for: better quality.
What can you tell us about the Hot Tresses Hair Care brand that you worked on with Spell Boutique? We were thrilled to support Hot Tresses Hair Care on a collaboration with Spell Boutique in Byron Bay. It was a great event held in the Spell Cactus Garden, and we created beautiful flower hair wreaths, makeup and haircare, and generally just enjoyed getting out and meeting the Spell team and all the lovely customers. Can you tell us a little more about the types of events that you host at the store? We love bringing another layer of value to our community [by] hosting Meet the Maker workshops, where you can sit down, have a glass of wine, and be guided through an entire range by the product founder. We also hold makeup masterclasses for specific looks, as well as Mother and Daughter days, DIY facials, and lots of other events. What’s next on the agenda for Organic Index? TRAVEL THE JEWELS OF HALONG If Halong Bay is the crown of Vietnam’s Quang Ninh province, the Wyndham Legend Halong Bay is most definitely the jewel, writes Tracy Sinclair. HALONG BAY IS an awe-inspiring sight. The word “prehistoric” comes to mind when standing before the imposing dinosaur-esque limestone karsts and isles that rise from emerald-green waters. Everything around you feels like the set of a Jurassic Park movie. It’s this magnificent view of the UNESCO World Heritage listed site that is the strategic and beautiful setting for the equally stunning Wyndham Legend Halong Bay hotel. Halong Bay’s first five-star hotel by a global chain, the Wyndham Legend opened its doors early in 2016. The USD $40 million property is truly impressive with its luxurious and vast floor-to-ceiling marbled lobby; the adjacent Blue Bay Restaurant features the most dazzling lighting centrepiece, reminiscent of a diamond-encrusted necklace. Not a bad entrance by anyone’s standards. Some hotels use up their “luxury” quota on the lobby, but not the Wyndham Legend. The five-star feeling is present in all of the 217 guest rooms (including the luxurious Penthouse Suite). I love nothing more than walking into a beautifully-appointed hotel room, and the Wyndham Legend doesn’t disappoint. stylemagazines.com.au

TATTOO FROM FANTASY ISLAND WOULD BE TOTALLY ENVIOUS OF THE BREATHTAKING VIEW OF HALONG BAY BY SEAPLANE. The rooms are spacious, complete with a sitting area, full-sized bathroom, luxurious amenities and, of course, more of that knockout view. From your personal balcony, there are a lot of spectacular sites to take in – those towering islands; the double-deck cable car that spans the bay (constantly bustling with fishing boats and cruise ships); and the Bai Chay Bridge and Sun World wheel. One of the best ways to enjoy the view is at night on the pool deck. The bridge and wheel (one of the largest of its kind in the world) provide a spectacular light show every evening from 6pm. The country may be unassuming in many ways, but the high-tech nightly light show is mesmerising, with myriad gemstone colour combinations. After dinner, enjoy a cocktail and marvel at this fusion of man-made structures and some of the world’s most ancient natural wonders.
To really appreciate Halong Bay, you need to take to the skies. I can’t speak for Tattoo, but I reckon the little guy from Fantasy Island would be totally envious of the breathtaking view of Halong Bay by seaplane. In the air, the immensity of the thousands (and I mean thousands) of islands is truly put in perspective. On our seaplane flight, we could see hundreds of boats peppered around the islets and fishing villages. If this journey isn’t Insta-worthy, then nothing is. Tiger Air can also take you from Hanoi to Halong Bay; however, Tracy travelled 3.5 hours by chauffeured coach, which is a brilliant (albeit a little hair-raising) way to experience the passing parade of everyday Vietnamese life.
