EDITOR’S NOTE
My hubby said the other day, ‘You don’t work, you basically go somewhere each day and have fun.’
To be fair, he did say this just as I was about to depart to Bali for ‘work’. But look, he’s not wrong.
Across our business at Style Media, including our creative agency, we’re blessed with an impressive portfolio of clients – which allows us to have creative fun daily.
However our recent cover shoot at Sofitel Bali Nusa Dua definitely tops the list of dream projects. How hot is our cover?! If you’re not feeling it, maybe check your pulse! You can just picture yourself there beachside – the setting is stunning, the hat is sublime, and Lana the model is fire!
Our Sofitel Bali Nusa Dua experience was amazing – combine an idyllic resort with an incredibly accommodating hotel team –we felt instantly that this was a special property.
This is the perfect opportunity to thank the Sofitel Bali Nusa Dua
team, including General Manager Jean-Pierre Joncas for trusting us with our vision, Revina for allowing us tremendous access, and the beautiful butlers Diah and Deanna who went above and beyond. The photoshoot ran like clockwork thanks to such an organised and in sync team. Courtney and I are so grateful for your kindness.
Thank you also to the restaurant teams who provided us with so many delicious dining experiences (especially my fave Chef Mama Patrizia, whose Tortelli di Granchio al Taleggio recipe we have shared with you on page 50). And special mention must go to the traditional rain stopper – who moved the rain away from us on shoot day. The skies literally cleared from the first shot to the last shot. Incredible.
Sofitel Bali Nusa Dua is ideal for singles, couples and families and they have kindly extended a special Style reader offer (see page 19).
We can honestly say that if it’s luxury, five-star service, and pure relaxation you’re after, this is the place for you. Enjoy!

Five-star luxury – all in a day’s work.
Hey BNE! What an issue to dive into – aside from our killer Bali cover shoot (the pictures are seriously unreal – someone get me to an airport stat!), there’s 68 pages of fashion, beauty, mouth-watering bites, and some seriously cool people.
This month, we’ve delved into all things family – from an interesting read on life in the ‘parenthood’ to family favourite recipes (check out mine on page 48), and all the tea on Brisbane’s first mobile fine diner, Da Biuso, there’s plenty to get excited about!
Inside as always, we feature a string of talented locals including coffee enthusiast Dean Merlo, makeup guru Emma Chen, and the sisters behind Australia’s first self-warming eye masks, Aisling and Margaret Cunningham. I also had the pleasure of interviewing Queensland
Symphony Orchestra’s new Chief Conductor Umberto Clerici – did you know musicians name their instruments?
There’s plenty more to read up on inside – from The Wickham’s multi-million revamp to how to achieve TikTok’s newest beauty trend, cloud skin, and the cutest spread on mini me fashion. Happy reading!

Dean Merlo
Across Brisbane, morning rituals and coffee catch ups are brewing, and another new day begins with a sip of Merlo coffee.
Dean Merlo has always called Brisbane’s bustling hospitality scene home. Family meals usually occurred in his father’s restaurant, and it was here he first experienced the joy of bringing people together. Dean’s love of food, as well as his fascination with the European coffee culture, led him to open an espresso bar in Brisbane’s CBD. It didn’t take too long before the Merlo empire was born.
Dean’s journey has been a quest for quality. He has spent years perfecting the Merlo blend, sourcing only the finest beans, opening his own roasteries, and finding the best people for the job.
With a love of food and coffee ingrained in his Italian DNA, Dean’s fondest memories are of Sunday lunch with his family. In fact, there is one person who has been particularly integral to Dean’s success – his mother. Turning 90 this year, she inspires him every day with her courage, wisdom, and commitment to showing up for family and community.
In this spirit, Merlo boasts incredible sustainability initiatives, including solar energy powering its roasting facilities, compostable cups, and a generous commitment to a vast array of community partnerships. More than just great coffee, Merlo is a testament to the fact that everything, just like mum’s Bolognese, is better made with love.
So, what’s next for Merlo? Keep your eyes peeled for an exciting new project coming mid-year, which is sure to delight anyone who loves coffee, great wine, and delicious Italian food.
One thing’s for sure – when it comes to carving a Brisbane name in the hospitality history books, we know Dean has a seat at the table.

PARADISE AT YOUR FINGERTIPS
Mesmerising ocean views, world-class dining, state-of-the-art wellness facilities, butlers on speed dial – here’s why Sofitel Bali Nusa Dua should be on your radar.
Photography SYDNEY SYMONS
Picture waking up in a light-filled bedroom that’s so close to the ocean you can hear the sound of waves crashing against the shore. There’s a ping on your phone from the daily butler asking you what you’d like for breakfast. The agenda for the day is pure relaxation with a side of indulgence. If there is a paradise on earth, it’s here at Sofitel Bali Nusa Dua Beach Resort and it’s just a flight away.
Located at one of the island’s most affluent addresses, the French-inspired luxury five-star beachfront resort, which is under the new helm of General Manager Jean-Pierre Joncas, is only a short 15-minute drive from Denpasar Airport. It’s also within 40 kilometres (roughly, a 30–40-minute drive) of the hustle and bustle of Denpasar, the capital city of Bali, but you won’t have to worry too much about that as everything you’ll need is here!
From the moment you set eyes on the sprawling 413-room property, you know you’re in for a luxury escape like no other. The lobby is a masterpiece within itself as it features tall timber columns sculpted to resemble a banyan tree (the banyan tree in Balinese culture represents sanctity, divinity, enlightenment, and eternity).
The beauty doesn’t stop there! Sofitel Bali’s exquisite rooms and suites offer true five-star comfort (the Presidential Villa is out of this world!). Prices start from $453++*per room per night** for a Luxury Room, where guests can choose between resort or ocean views, a private plunge pool, and pool access which connects to the resort’s tropical lagoon pool.
All rooms and suites feature a fully-stocked mini-bar fridge, room service, a nightly turn-
down service, and plush bathroom amenities. Access to Club Millésime (an exclusive lounge where guests can relax, work, or enjoy complimentary food and drinks) and a butler service (need a massage, buggy, or a dinner reservation? They’re on it!) are also available for guests who stay in a luxury room with pool access, suite, or villas. Not to mention, one of the many perks of staying in a room with direct access to a pool is the ability to enjoy a floating breakfast – it’s simply sensational and best shared between two.
While we’re on the topic of food, Sofitel Bali also boasts a range of world-class dining options such as the recently revamped Cucina restaurant. The Italian restaurant serves up favourites such as bruschetta, caprese, a sublime spinach and crab tortellini (see page 46), and a delectable wood-fired pizza menu. However, it’s the Sunday brunch that Cucina is famous for. Here you’ll find an extravagant selection of Italian, Spanish, French, and Asian food varieties, as well as a lavish array of cheeses and desserts, courtesy of the Italian head chef Patrizia Battolu, who’s affectionately known as ‘mama’. Patrizia is a true character and her love of food and flavour shines through as she passionately describes the ingredients of each dish, always with a twinkle in her eye.
Next on the culinary tour is Kwee Zeen, Sofitel Bali’s flagship all-day dining restaurant. The Pan-Asian restaurant offers a buffet-style menu ranging from Chinese, Singaporean, Japanese, and Indonesian cuisine, as well as an à la carte menu with dishes such as nasi goreng and butter.

chicken. And once you’re all dined out, head to the nearby Le Bar, the open-air lobby bar that’s perfect for some cocktails or an indulgent afternoon tea.
If you’re planning to spend the day poolhopping (did we mention there are four pools in total?) or ‘laxing on a sun bed on the beach (yes, there’s direct beach access, too!), we’d recommend visiting the breezy seaside lounge Toya Beach Bar & Grill for either lunch or dinner. There’s also L’OH Pool Bar, located in the main swimming pool, where you’ll find light bites as well as classic cocktails and mocktails.
If pure relaxation and rejuvenation is what you’re after, a trip to the SoSPA Wellness Centre will not disappoint. Choose from a variety of signature treatments that combine ancient and contemporary techniques from all over the world – Bali regulars know a trip to the island is really not complete without at least one indulgent spa visit. The spa in itself is a luxurious haven made up of peaceful sounds and calming scents. Our favourite part? You can even book in for a massage in a hut on the beach! Sofitel Bali is also home to a state-of-theart fitness centre, where you’ll find dedicated relaxation and workout areas.
And there’s more. Not only is there a Kids Club that your children will love, but Sofitel Bali is also known as the premier meetings, conferences, and events venue in Bali. Oh! And the stunning all-glass Jewel Box is the perfect beachfront venue to host your wedding nuptials with friends and family.
So, if you’re thinking about planning a luxury escape, look no further than Sofitel Bali Nusa Dua – it truly is the perfect place to soak up the Balinese sun, rejuvenate, and indulge. You can expect friendly, nothing’s-a-problem service that the resort is renowned for. You won’t have to lift a finger – except perhaps to reach for that Margarita!

Why do you love raising a family in Brisbane?
I love raising my family in Brisbane as I feel it still has a small ‘hometown’ feel to it, and most people know each other or have some sort of connection to each other. Yet it also has such a vibrant lifestyle with new and exciting places opening all the time!
Your favourite kid-friendly venue in town?
We love The Garden Room at Roma Street Parklands; we can get a delicious lunch then go for a beautiful walk through the park!
On Sundays, you’ll find us… Getting a coffee and a babycino at Bellissimo and a spot of shopping on James Street.
Best playpark in Brisbane? Mini Bounce for sure!
What’s one kids activity around Brisbane you’ve done recently that you loved?
Garden Party at La Boîte Theatre. The show was about two bees and featured heaps of circus tricks, live music, and magic. It was super entertaining for us both!
Hidden gem that your family loves?
Snapper Rocks at Coolangatta is a small drive down the coast and we love this spot as it’s the perfect non-wave, kidfriendly beach.
@SCARLETTHRLEC
LACHIE & JULES NEALE Parents to Piper and furbabies Harley and Coco
Why do you love raising a family in Brisbane?
Firstly, the weather and outdoor lifestyle is amazing, it’s always sunny outside and Brissy is full of lovely parks and great places to walk our Border Collie, Harley. Also, the people –Queenslanders are some of the warmest and friendliest people we’ve met!
Your favourite kid-friendly venue in town? Mini Bounce in Westfield Carindale on days when we are escaping the heat!
On Sundays, you’ll find us… At the markets getting our fruit and veg for the week and eating bagels for brekky! Or walking Harley and Piper to the park together.
Best playpark in Brisbane?
Perth Street Park – lots of room to run around and Piper loves the bub swing!
What’s one kids activity around Brisbane you’ve done recently that you loved? We recently loved a trip to the Camp Hill Bowls Club! On the weekends they open up some lanes for the kids to run around and have live music too.
Hidden gem that your family love?
A hidden gem for our family is the Unyoked cabins where we can spend some unplugged, quality time together.

EMILY HALL & DAVEY DOWNEY Parents to Harry and Oliver
Why do you love raising a family in Brisbane?
We love raising our little family in Brisbane because our extended family and friends are close by, the weather is great and there are plenty of things to see and do. Being centrally located we’ve got the Gold Coast, Sunshine Coast, and the islands all within an hour or two away.
Your favourite kid-friendly venue in town? We love taking the kids to Howard Smith Wharves. There is a variety of food options, plenty of space to play or scooter around and the pirate ship playground is a fave with the kids.
On Sundays, you’ll find us… A perfect Sunday for us is getting outdoors and doing a walk either around New Farm or Shorncliffe.
Best playpark in Brisbane?
Harry and Ollie love the new playground at Grinstead Park, Alderley.
What’s one kids activity around Brisbane you’ve done recently that you loved?
As a family we love heading to Grange Bowls club on a Friday night or Sunday afternoon. There are food trucks and jumping castles, so everyone is entertained.
Hidden gem that your family love?
A hidden gem for us is the Everton Park Hotel. It accommodates families really well with a large playground and carousel, all securely gated. We put the kids in the playground while we wait for dinner, and they burn off some energy while playing with their friends.

BOB SMITH AND KEVIN YOW YEH
Dads to Jayden, Tyler and furbaby, Treaty
Why do you love raising a family in Brisbane?
We’ve chosen to raise our family here because while it’s a major city, it’s still small enough to have a sense of community and we’re able to easily stay connected with our broader families and communities here in the Southeast.
Your favourite kid-friendly venue in town?
Our favourite place to visit as a family is South Bank. It has everything we want – swimming, good food, and plenty of grassy areas to chill out and people watch. Plus, the Queensland Museum isn’t too far either, which our boys enjoy going to.
On Sundays, you’ll find us…
With our esky packed, windows down and cruising on road trips. Meanjin is perfectly placed that within an hours’ drive, you can be swimming on the Gold Coast or walking
through lush rainforests in Montville. Our family loves a random road trip.
Best playpark in Brisbane?
We love hanging out at ‘Kids Space’ behind Westfield Chermside. The park has a massive playground and there’s always lots of fun activities close by.
What’s one kids activity around Brisbane you’ve done recently that you loved?
We love taking our boys to the local swimming pool to stay cool and get out of the house.
Hidden gem that your family love?
Our family loves getting fish and chips and hanging out on the Manly esplanade, particularly on weekends when the markets are up and running. Treaty loves walks on the beach too!

For the families that love to trek, hike, and explore, these active threads are a must-have this season. Whether it’s discovering Gold Creek Reservoir or even a day further afield a-top Mt Tamborine, keeping it comfortable and breathable is a must for stylish explorers. Mums – make sure to opt for chunky sneaks that will keep you comfy for miles on end, and a utility backpack to house everything from snacks to sunscreen and everything in-between.
For the budding fashionistas and their style-maven mum, adding a bit of glitz and glam is easy with these timeless pieces. Perhaps your fam is attending a glamorous wedding or heading out to dinner at one of Brisbane’s finest restaurants… whatever your social calendar has in store, a monochromatic outfit is a fool-proof fashion win. Bow embellishments are as big in womenswear as they are for little ladies too and we’re loving a matching moment with bows and pearls for both mum and daughter.

Who said nappy bags can’t be chic!

ADELE KIMMICH
Tips for creating a capsule wardrobe? I like to start with a matching set when creating a capsule wardrobe. If you like to be bold, this could be a bright jacket and pant combo. You can build on it or separate it to get the most use out of it. I always say wear them together for impact on that special occasion, then split them up for everyday use.
Who inspires you?
My clients inspire me. I love meeting new people, getting to know them, and bringing out the best in them.
How do you determine a client’s personal style?
Through their personality or their desired personality. I want my clients to feel like themselves, but a new improved version. The most important thing is finding trends that work for their body shape.
Indooroopilly Shopping Centre is pleased to offer a $100 INDRO GIFT CARD to Style Magazine readers who purchase a style session. To redeem book via the Indro website and use promo code STYLEMAG at checkout. T&Cs apply.

What AW fashion trends are you loving? The 90s trends are still here. Sheer layering, puffer jackets, skinny scarfs, metallics, and wide-leg trousers are all trending. We’re being shown how to redo some old trends, from double denim to peplums, in new ways.
What’s your styling process?
I tailor my sessions to my client’s needs. The fit –showing the client what cuts, fabrics, and colours will suit them best. The function – identifying what pieces are needed for their individual capsule. The flair – how to add pops of their personality into their look.
What are your three must-have pieces from Indooroopilly Shopping Centre for the season?

What was the ‘holy grail item’ you included in your hospital bag? For me it was the Haakaa breast pump to catch my let down. I was fortunate enough to have a great milk supply and it came in a big way. I was not expecting to use this in hospital, but so glad I packed it. What beauty or skincare saviours did you have with you? LIP BALM!
Any organisational or packing tips for expecting mums? Most hospital rooms are quite small, so rather than take a big suitcase, I opted for three smaller bags. One for the labour room, one for you, and a separate one for baby. I also loved my Suite Set packing bags!

In honour of The Brow & Skin Studio’s 18th birthday, we sat down with owner Sherril Dalitz to learn more about the salon and its origins.
If there’s one thing that brow shaping and skincare have in common, it’s that you wouldn’t want to put your trust into the wrong hands. Luckily, the aptly named The Brow & Skin Studio is one of Brisbane’s most reputable clinics and it happens to have been around for almost two decades. So, it’s safe to say they have certainly been doing something right!
“We opened in March 2005 and having been a therapist for several years prior – obsessed with brows and skin – it seemed like a natural path to follow,” owner Sherril Dalitz says. “And here we still are 18 years later.”
As the demand for facial rejuvenation and perfectly shaped brows skyrocketed so did The Brow & Skin Studio and its popularity. In 2007 Sherril introduced Omnilux Light Therapy. “It was the start of the global financial crisis and quite daunting, however, I took a leap of faith, and the results were incredible.”
Since then, Sherril has introduced an array of cutting-edge techniques and treatments to the clinic including Divine Pro, Skin Needling with RF and DMA Technology, Geneo devices, and OBSERV Diagnostic devices.
Not only are the treatments excellent but so are the staff – their passion, commitment, and expertise are simply unmatched! It comes as no surprise that Sherril’s number one goal is to bring beautiful classic brows and fabulous skin to her clients.
So, if you’re unfamiliar with the joy of good brows and state-of-the-art skincare treatments, then it’s probably time you tried The Brow and Skin Studio.

The finest formula
What makes up the perfect scent? We delve into the premium ingredients, sustainability processes, and luxurious details that make up every opulent fragrance from Australian brand, VÁHY.
By BETHAN WARRIOR
Neon Neroli Desert Nōmad Ember Haze
Scent profile: Opulent florals – inspired by La Fontelina and seaside lounging in Capri, this nostalgic scent will transport you to the warmth and vibrancy of an Italian summer.
Top: Neroli, bergamot, and orange.
Heart: Orange flower, ylang ylang, and petitgrain.
Base: Vetiver, vanilla, and mediterranean sun.
Ingredient spotlight: Keeping in line with their zero-waste mentality, VÁHY’s supplier upcycles peel from the orange juice trade to make the fragrant orange oil, which means that 100 per cent of the fruit is used in a zero-waste production line.
Scent profile: Gourmand woods – Desert N ō mad is a harmonious symphony of notes that uplifts with fruit, vanilla, and a whisper of the tropics.
Top: Mandarin and bergamot.
Heart: Sandalwood, geranium, and desolate dunes.
Base: Cedarwood, vanilla, and patchouli.
Ingredient spotlight: Sandalwood is a highrisk ingredient due to the devastating impact of overharvesting. VÁHY’s sandalwood comes from a local Australian Aboriginal co-op who farm sustainably, planting 30 per cent more trees than they harvest every year. The farm relies sustainable practices such as goats being used (ethically, of course!) to maintain overgrowth on the plantation.
Scent profile: Ambery – inspired by the comfort of fireside evenings in cosy log cabins atop alpine resorts. This enrapturing scent fuses smoky woods with the rich, luxurious warmth of amber and vanilla.
Top: Cardamom, almond bitter, and clove.
Heart: Ambrette seed (amber), patchouli, and sandalwood.
Base: Guaiac wood, vanilla, vetiver, and glowing embers.
Ingredient spotlight: VÁHY’s clove supplier uses a new patented distillation process that is cleaner and generates less water and waste than standard processes. This also results in the clove notes being more concentrated, sophisticated, and unique.

Ode to Clerici
Umberto Clerici talks conducting, cello, and the beauty of Brisbane.
His career spans more than two decades, he’s performed all over the world as a leading cellist, and now heads up one of the most prestigious orchestras in the country. Meet Umberto Clerici, the Queensland Symphony Orchestra’s new chief conductor. Umberto, who grew up in the northern Italian city of Turin, home to Fiat, Alpha Romeo, and Juventus Football Club, is easing into his new role with excellency, finesse, and charm.
Hi Umberto, thanks for chatting with us and congratulations on your new gig as chief conductor of the Queensland Symphony Orchestra. How does it feel?
Ciao. It’s my pleasure, grazie for having me! It’s been a whirlwind few months, that’s for sure. We’ve had a big start to the season already and it’s wonderful to be getting to know the orchestra better, and also to start to explore Brisbane.
What’s your favourite part about the role?
From an orchestral perspective, I’m really enjoying the feeling that we’re building on our work. When you conduct different orchestras all the time you can enjoy the progress you make in the week you are there, but you don’t necessarily build anything longterm. Being fortunate enough to be a chief conductor means that you start to consolidate the experiences. My other favourite thing has been meeting more of our audience.
By PENELOPE PELECAS
As a cellist, did you always think you’d make the transition to conducting?
It honestly didn’t cross my mind as much as it apparently occurred to others. In an orchestra, the musicians only have their part of the music on their stand. I used to always bring the whole score with me because I liked to see what the other instruments were doing at the same time as me. My colleagues in the Sydney Symphony saw this and asked me if I was planning to be a conductor. I wasn’t, but they invited me to conduct them and after that, things just took off.
What inspired you to start playing an instrument?
Less inspiration, more forceful mum! My mother was extremely keen for me to learn an instrument. The first few years I approached it as a chore (like most young kids), but something eventually clicked and when I was eight I announced that my calling was music and my goal was to be a cellist for a living.
Why the cello?
To begin with it was either cello or violin and after receiving a demonstration so I could make an informed choice the cello sounded way better when being played by a five-yearold. We probably don’t have enough time to discuss all the things I love about cello. It’s a very physical instrument because you can wrap your arms around it and because the sound it produces is the closest of any
instrument to the human voice, it has a range that can express so much emotion.
With your new role, do you still have time to play?
For a while after I moved to conducting, I didn’t pick up the cello and I became very cranky and difficult to live with. I hadn’t realised how much the cello was a part of me and something I need to continue as a creative and stress outlet. So even though I am playing only a handful of cello concerts a year right now, I am playing a lot at home – if only to avoid being evicted!
Do you have any pre-performance rituals?
Getting to the concert venue and on stage as late as possible. When I was a cellist in the orchestra that was tricky because I still had to time it to make sure I was onstage before the concert master and conductor, who come last in that order. Now that I’m a conductor, not only am I expected to be the last on, but they also can’t start without me! Perhaps that should have been a sign that I was a conductor at heart.
Are you enjoying living in Brisbane?
Very much so. Coming from a city in Italy which has hosted a Winter Olympics the humidity has taken some getting used to! I’m slowly doing an inventory of the Italian restaurants and I really enjoy the vibrant cultural precinct of South Bank – no other Australian city is lucky enough to have a hub as extensive as us.

A Brissy icon returns
Renowned Brisbane LGBTQIA+
venue
The Wickham just got a massive glow-up.
By ERIN SIMPSON
After a multi-million-dollar revamp, led by architect Jon Mikulic of Newline Design, the beloved Wickham is back with more flair than ever.
“Our new-look Wickham is all about breathing new life into such a historic venue and making Brisbane’s proudest pub a place that the LGBTQIA+ community and Fortitude Valley locals can enjoy and be proud of,” Senior Operations Manager Krystina Tagg says, adding that the venue continues to be a huge supporter of the LGBTQIA+ community.
In true Wickham style, the new design is a colourful celebration of its rich history, featuring some new and improved spaces. You’ll find a giant Peacock bar, which pays tribute to The Wickham’s peacock, Frankie, located in the Peacock Room – a luxurious area filled with vintage furniture and decorated with local artwork. Along with an eclectic club space, the new and improved Garland Room will showcase touring DJs, performers, and The Wickham’s resident parties, where you can get your boogie on.
Let’s get this party started, because the re-opening also comes with a jam-packed calendar of events and entertainment. There’ll be live music from Thursday to
Sunday, Drag on Friday and Saturday nights, along with a Bottomless Burlesque Brunch once a month. And how could we forget, The Wickham’s famous Thursday night trivia will be back and better than ever! You’ll even be able to order from an extensive 70s disco-inspired drinks menu. Glitter Bellini, anyone? But never fear, nondrinkers! Non-alcoholic tipples like the ‘No-groni’ will be on hand just for you.
The revamped space also features a brand-new kitchen, serving up tasty bites like wood-fired pizzas, share-style plates, deep-fried GoldenGay times, fairy bread, and more!
“We previously operated a small, converted container kitchen, which ran a limited menu. Now we have a fully operational space, complete with a beautiful wood-fired pizza oven that will serve some awesome pizzas, along with some great Queensland pub classics and unique dishes,” Krystina says.
You can even bring your puppy in with a dedicated dog-friendly section now added to the menu.
“We saw heaps of customers bringing in their four-legged friends before our renos, so now we have an option for you and your fur baby to get a great meal in the Beer Garden!”
Fortitude Valley locals, say hello to your newest social hub.

Game on
By DINUSHKA GUNASEKARA
It’s no secret that we Queenslanders love a bit of competition, and with Westfield Chermside’s fun-tastic new resident, you can get the competitive edge alongside cocktails, larger-than-life games, and ‘gramworthy backdrops to boot.
From the team behind Holey Moley, Archie Brothers, and B. Lucky and Sons, comes Hijinx Hotel – a New York hotel-themed multiroom interactive game experience and bar. In a world where Wes Anderson meets Willy Wonka, each room is delightfully over the top and extravagantly challenging, from the mega piano to the ball pits, and giant scrabble tiles.
Hijinx Hotel’s Chermside location also sees the arrival of two never-before-seen games: a Battleship submarine-themed room where you try to sink ships for points and Cute as a Button – an adaption of their popular Who Meme game. Each room is made to have two to six players working together in a fourminute window – just try not to be distracted by the intricate details, colourful decor, and charming charisma of the hotel!
To help get you into the competitive spirit, Hijinx Hotel’s resident bar pours an eclectic range of cocktails, including the made-tobe-snapped Bubble and Pop, as well as the Penthouse Party cocktail to share with friends. A gourmet kitchen is also on hand, dishing out mouth-watering eats so you’ll be all fuelled up for the next round. Let the games begin!

A meal at the Biusos takes bus service to a new level with Brisbane’s latest fine-dining degustation.
Coming together around the dinner table is a cherished family memory for many, and now this local family is bringing theirs to the Brisbane fine-dining scene, literally.
Sarah, Biagio, and Joseph Biuso are behind our city’s latest culinary marvel, Da Biuso – a 12-seater restaurant aboard a charming bus, fitted out to resemble Brisbane’s historic trams. Breaking free of the traditional restaurant structure, the family’s darling endeavour invites conversation, interaction, and memorable moments you can only find over a meal.
Da Biuso is a family affair through and through, with Biagio the head chef, Sarah the

maître d’ and sommelier, and Joseph joining his father in the kitchen, which is situated in the back of the bus. Calling on 25 years in the industry running Italian staples as well as Biagio’s experience cooking with his parents in their hometown of Bronte on the slopes of Mount Etna, the Biusos combine honed techniques with beautiful produce to create new expectations of what a dish can be. “It’s an incredible gift to be able to pass on the skills my family taught me onto my son, continuing that family tradition through food,” Biagio says.
With each member of the family present day in and day out, every seating is an opportunity for the Biusos to share Brisbane with the world
by celebrating each location Da Biuso visits. In doing so, they share the world with Brisbane through Italian influences of each extraordinary dish. “We were very passionate about offering degustation menus in a small venue with fine wines and service – tailoring and leading the complete experience, from beginning to end,” Sarah says. “As a family run business, it is all hands on deck, but we wouldn’t have it any other way.”
Da Biuso redefines the limits of what’s possible in the fine dining field, combining culture and creativity in taste and form. Connected through memory and bonded by food, a visit to the Biusos is certainly one for the books.

MY FAVOURITE FAMILY RECIPE
Ingredients
For the filling:
1 bunch spinach, chopped coarsely
1 tsp salt
½ bunch shallots, chopped
1 bunch dill, finely chopped
1 bunch parsley, finely chopped
1 bunch mint, finely chopped
4 eggs
Yiayia’s spanakopita
If I had to choose one last meal on earth it would be my grandma’s (aka, yiayia Poppi) famous spanakopita. This traditional Greek savoury pastry is made up of spinach, cheese, herbs, and a whole lot of love!
By PENELOPE PELECAS
Method:
To get started, wash and thoroughly dry the spinach before adding salt. In a large bowl, place the spinach with shallots, parsley, dill, mint, eggs, cheeses, and pepper. Mix well until thoroughly blended.
Now it’s time to get started on the pastry! Sift the dry ingredients into a bowl, then make a well in the centre and add the oil. Gradually add water, while mixing the dough, until a soft dough is formed.
Divide dough into two portions, one
slightly larger than the other. Roll out pastry very thinly and line a greased baking dish with the larger portion.
Add the spinach filling and fold over the pastry edges. Cover with the remaining pastry, trim edges, and press edges down to seal the pastry.
Brush top with combined egg yolk and milk. Bake in an oven at 170°C for approximately 30 minutes until golden brown.
200g feta cheese, crumbled
150g Romano cheese, grated
Ground black pepper to taste
For the pastry:

Cucina’s Tortelli di Granchio al Taleggio

50 | FOOD + DRINK
You’ll need:
For the spinach
pasta dough:
100g spinach
300g flour
100g semolina
1 egg yolk
Pinch of salt
1 tsp extra virgin
Olive oil
For the sauce:
150ml cream
100g cup taleggio
60g parmesan
Pinch of pepper
For the crab filling:
350g crab meat
50g parmesan
Pinch of salt
Pinch of pepper
Pinch of chilli flakes
1 red onion, diced
1 tbsp extra virgin olive oil
10ml white wine
1 tbsp cream
30g bread crumbs
Method:
To create the pasta dough, you’ll first need to blanch the spinach in salted water for a few minutes. After this, squeeze well and blend (we’d recommend using a food processor), before mixing with the other ingredients (flour, semolina, egg yolk, and olive oil) in a bowl.
Transfer to a board and knead until it’s smooth and compact. Let the dough rest for 30 minutes in a cool place, before rolling it out into sheets. Cut the sheet into circles using a tortellini cutter. Put this aside for the time being.
For the crab filling, stir the crab meat in hot oil with chopped up red onions and chilli flakes. Add salt and pepper, then the white wine and stir. Turn off the heat and add the cream, parmesan, and bread crumbs. Mix well.
Now you’re ready to add the filling! Simply place one teaspoon of filling in the middle of each circle of pasta. Fold the
dough over to form a half moon, then draw the two corners together to form a rounded bonnet-shape. Press tightly to seal.
Bring a large pot of water to a boil and add a tablespoon of salt or two. Lower the tortellini into the water a few at a time with a slotted spoon. Cook until all the tortellini have bobbed to the surface of the water, roughly about five minutes.
Meanwhile, to make the sauce, boil the cream, turn off the heat and then add the taleggio and parmesan, mixing until smooth.
Dish up the pasta in a bowl, before drizzlingly over the sauce. Garnish with fresh mint and chilli flakes and enjoy!

Bamboo Behinds
The homegrown, eco-friendly baby brand every parent should know about.
By TEAGAN WITHEROW
Every year, Australians put over one billion nappies into landfill, and that’s not even the worst part – a disposable nappy typically takes more than 500 years to biodegrade. So, to put that in perspective, that means the first nappy ever thrown away is still sitting in landfill somewhere today. Shocking right?
If you also find this information confronting, then you’ll be pleased to hear that Bamboo Behinds is combatting this very issue. But what exactly is Bamboo Behinds?
The brand came about when founder and local mum of two, Brigitte Lonie, was shocked at how much waste one tiny human could produce. She switched to reusable nappies, but still wasn’t content. “The task of washing them was just overwhelming – they leak, are super inconvenient when travelling, and stink up the house,” Brigitte says.
Alas, Bamboo Behinds was born – an eco-
friendly, budget-friendly, and family-friendly nappy company.
“I looked into the disposable eco-nappy market in Australia and found all my options to be a) super expensive and b) all wrapped in plastic packaging. It didn’t make sense to me to sell a biodegradable product wrapped in plastic, so I set out to make my own at a better price point.”
So she got down to business, spending several months testing nappies. “There was a lot of back and forth around packaging design, absorbency, sizing and measurements, colours of logos, and the number of nappies in each packet – I tested them on my own children. I needed them to be perfect,” she says.
So why choose Bamboo Behinds?
“Apart from our competitive pricing – our biggest selling points are that our packaging is 100 per cent paper (no plastic lining whatsoever) and the fibre sheets on our nappies are 100 per cent
bamboo. Bamboo is biodegradable and our nappies are 60 per cent broken down after 75 days. Bamboo also has some fantastic benefits like reducing nappy rash and it’s naturally antibacterial.”
The best part is that Bamboo Behinds offer subscription packs! Imagine never running out of nappies again and you’ll be helping save the planet too – it’s a win, win!
“Eco-nappies are around 30 per cent more expensive than plastic nappies but for those fortunate enough to be able to spend a bit more, eco-nappies are genuinely making a massive impact on the amount of waste sitting in landfill.”

Cosy up your home for autumn winter with OZ Design Fortitude Valley.

Whether you’re looking to do some seasonal redecorating or wanting to start from scratch, make OZ Design Fortitude Valley your first port of call. In store you’ll find a beautiful range of furniture pieces to suit all styles of homes, with ranges from modern contemporary to relaxed farmhouse – they have it all!
However, redecorating your home is easier said than done, so we spoke to Homemaker
The Valley’s Resident Stylist Eliza Grace to uncover her top tips for getting your home ready for the autumn winter season.
“Refreshing your home seasonally allows you to breathe life into your spaces, reinvigorate them and ignite your love for your home once more,” Eliza says.
“Decorating with the seasons allows you to create different moods that are reflective of the time of year. For example, in autumn winter, we want our homes to be a warm, cosy oasis that we can snuggle up and relax in at the end of a busy day.”
So, where to start? Eliza says a good place to start is with your cushion colour combo. She recommends having a few neutrals as a base, then adding a different pop of colour depending on the season. Her favourites for the season? Either the Carnaby Cushion or
Diablo Cushion from OZ Design. Eliza also recommends swapping in blankets and throws that are reflective of the season. “For example, linen and cotton in summer and faux fur and mohair for the winter,” she says, adding the Littano Throw is one of the must-haves of the season.
To imitate the warm and cosy vibes of autumn, she also recommends adding a few candles around the home. “I love OZ Design’s range of candle holders and their gorgeous, ribbed candlesticks in a variety of colours.” While we’re on the topic of lighting and setting the mood, another tip is to opt for table and floor lamps instead of bright downlights. And if you’re quite the art connoisseur, why not switch out your current artwork to something warmer and more tonal like the Bold Colour Box Framed Canvas?
Lastly, Eliza says you can’t go wrong with a seasonal bunch of flowers or dried foliage to really play up the autumnal theme.
So, if your home needs some sprucing up, why not meet Eliza at OZ Design Fortitude Valley for a free one-hour styling session –simply jump on Homemaker The Valley’s website and book. What are you waiting for?
Start creating your dream autumnal home.

My family, your family
The business of suiting rests on community and connection. It’s a network of relationships between suit makers, fabric mills, tailors, clients, and team members. A suit making business is a system of respect, value, support, communication, and cooperation, much like a family. There’s a reason that tailors, including those on Savile Row, London, seem to remain in business for generations.
Take our team at Wil Valor for example, we’re a small business that works closely together. With consistent communication and cooperation, we constantly learn from each other and provide support wherever possible. The Wil Valor team function like a family, aligning our values and efforts towards the common goal, which is top-quality service. For us, a suiting business isn’t just another retail store, it’s a home. And we invite everyone to experience the hospitality of commissioning a Wil Valor suit. We get to know you, what you need out of your closet, and how we can help you get there. We build a relationship from the moment you first connect with us that lasts beyond your suit’s completion. We love to see how you wear it, how we can help you style it, and what might be in store for you next.
Picnic under the trees
We’re very lucky in Brisbane that we get to experience picnic perfect weather almost all year round. With so much green space available, afternoons spent with friends and family are a wonderful chance to reconnect and enjoy each other’s company in the fresh outdoors.
Picnics are now not only the classic Sunday afternoon family rendezvous, but an affordable and relaxed way to celebrate birthdays, bridal showers, and even engagement parties. Pick your grassy location under one of Brisbane’s lush shade trees and set the scene with low tables or timber pallets, vintage rugs and of course lots of cosy cushions.
The key is to mix and match with textures to keep it looking relaxed and not too polished. Add seasonal florals for that extra styling detail along the table – they really bring any event to life. Keep the menu simple with delicious antipasto and charcuterie from a local Brisbane artisan. The only thing left to do now is relax and enjoy!

Did someone say fam vacay?
Family time is so important, and heading on a vacay is often the highlight of the year. But planning a family holiday is no easy feat. With a plethora of options to choose from, it can get quite complicated quite quickly. That’s where I can help.
Regardless of how long or short your holiday plans may be, I have plenty of ideas and advice having travelled with my kids over the last decade. A cruise offers so much value for families, some with roller coasters at sea, speedways, and tiered kids clubs. Others combine enriching history and cooking classes ideal for multigenerational travel, ensuring every member of the family has the holiday they deserve.
Does your child love the outdoors? What about an African wildlife safari, or better yet an allinclusive ski holiday? There are all-inclusive family experiences all around the world from a memorable seaside escape to a dreamy snow experience. Whether you’re dreaming of a ‘White Christmas’, or have a The Sound of Music tour in Austria on your bucket-list, there’s plenty to see and do.
I can tailor your family holiday to suit your children’s interests and ensure they return inspired. For seamless travel, contact me to plan and book your next family escape.

Coffee on the go
Does travelling with the family have you downing hotel coffee, packing pod machines, instant coffee packets or hauling ridiculous amounts of coffee equipment on your travels?
For some people, coffee is an important part of the day, but you know you’ve hit a turning point in your coffee journey when you find yourself prioritising coffee plans before you travel with family.
I’m often asked, ‘what do you do, Penny?’. Well, last Christmas I packed a box of Cold Brew Concentrate for a short trip on the family farm. It delivered endless cups of iced latte joy for the entire family. Alternatively, I often pack a small brew device, like an AeroPress, and some tasty seasonal beans, or I drink lots of tea. I always research ahead too to see what specialty roasters are nearby. This Easter I’m looking forward to enjoying the Autumntime Blend. This sustainable and ethicallysourced seasonal coffee blend is made up of hints of orange zest, sweet spice, roasted walnuts, and brown sugar. So, what are you waiting for? VARICOSE VEINS with Dr Nicholas Kemp Oh baby!
The last thing you’re probably worried about as you prepare for your little bundle of joy to arrive are unsightly and sometimes painful varicose veins.
When pregnant, your body produces extra volumes of blood to support you and your baby. This increases the pressure in your circulatory system and so it needs to work harder to stay efficient.
On top of this, your body is going through a number of changes, including an increase in progesterone production, aka the ‘relaxing’ hormone, which can cause veins and their valves to dilate resulting in blood pooling rather than being returned to the heart.
There’s no way to completely prevent varicose veins forming, however many women see their veins go back to normal within three to six months post-partum. Varicose veins are hereditary, so if your mother had a similar issue, you might find they stick around or reappear in any subsequent pregnancies. Here’s how to help:
• Exercise – get your legs moving by taking a walk or performing other low-aerobic activities like swimming (this will help keep the blood circulating)
• Wear compression stockings – pregnancy compression leggings give your veins more support which can help to relieve pain and reduce swelling
• Maintain a healthy pregnancy weight – while weight gain is normal, excessive increases can put extra stress on your venous system
PSYCHOLOGY
Ageing parents
As we age, so do our parents. It’s inevitable that our parents, in various domains, will lose some ability and willingness to do certain things they once did effortlessly. This is the reality of our humanity.
Given that, as far as we know, we only get one life, the choices we make from day-to-day to value and honour our parents are critical. It is a time when we can repay our parents for what they’ve given us. This might be assisting them with health needs, chores, and projects around the home. It may involve help with legal or financial matters that become increasingly important to ensure good quality of life. It could be as simple as showing them how to use Netflix or a smartphone!
Although there will be challenges and sorrow with ageing parents, with acceptance and patience, whilst allowing them autonomy, it can be a rewarding and meaningful time in a family’s lifecycle.

Diamonds are forever
Remember when Marilyn Monroe declared diamonds are a girl’s best friend? Well, she may have been on to something. I mean, who doesn’t love a little frosting? Diamonds are oh so glitzy and are a great way to bring some sophisticated glamour to everyday life. Not only are they the traditional choice for engagement rings and wedding bands, but they also make for beautiful bracelets, bangles, necklaces, and earrings.
As diamonds are the official birthstone of April, we thought it would only be fitting to list some of the fun facts about this popular gemstone:
• The word diamond comes from the Greek word ‘adamas’, which means invincible or indestructible
• Following on from the previous point, diamonds are the earth’s hardest natural substance
• Did you know the rarest natural diamond colours are blue, green, orange, and red?
• Diamonds were once believed to give its wearers courage and strength in battle
This dazzling gemstone truly is one of the most alluring jewels around.
If you’re looking to sell your home you’ve no doubt heard about real estate agent commissions. Wondering what they are and how much you should be paying? Here’s everything you need to know.
First things first, what’s included in real estate agent fees? The commission often includes the costs necessary to cover the marketing and advertising of the property during the sales process. Other times, agents will break down the costs and charge you separately for them – hence lowering the commissioning rate.
On average, real estate agents in Queensland charge a commission of around 2-2.5 per cent. Commissions do vary by location, however. They are more likely to be lower at around 2.5 per cent in urban areas, and higher at around 3 per cent in regional areas.
Another factor to consider is the property itself. If you have an unusual property or one that is only going to appeal to a small subset of buyers, your agent is going to work harder to sell it, so are likely to charge you more for their time and efforts.
And lastly, if you have a property that has a comparatively high value, some agents may accept a lower commission rate. This is because, despite the lower rate, they will still receive a decent portion of the sale.

Here at Style HQ, we like to keep things real. Whether it’s real-world politics that’s sparked an in-office debate or social norms we’re questioning, consider this series off the record, to be (at times) taken with a grain of salt, and of course, completely unfiltered.

While I do think it’s a combination of both, our nature is the blueprint that we take with us into the world. Look at the strong, almost unexplainable bonds between twins or mothers and children, even if they didn’t grow up together. We also know that some mental health disorders and certain personality traits are inheritable. I think that the environment we’re in certainly shapes who we are, but our nature is the parts of us we can’t change, for better or worse. How we grow to understand these parts of ourselves shapes our character. We are constantly evolving, but that evolution looks different based on how we began.
Carrie, 21 //
I’m a strong believer that it’s all about nurture… take a toddler for instance, they don’t know right from wrong or even left from right for that matter. But like all kids, they grow up, they go to school, they learn the rules, and those rules shape their decisions. I think the same goes in terms of personality – it’s learnt rather than intrinsically apparent from birth. Even when we get older, I believe our personalities constantly change based on the people we surround ourselves with, like our role models for instance – we purposely alter our actions, values, and beliefs to align more with them, which in turn, shapes us into who we are today.

I believe that both nature and nurture equally shape who we are. There are undeniable qualities that my siblings and I all share. Genetics and looks of course, but some of our interests and creative talents are all aspects I think we were inherently born with. I am however of the belief that the programming that is imprinted on us within our formative years (ages 0-8) directly correlates to nurture, our environment. I think that this is really apparent in people who have had difficult upbringings and less so in those who haven’t. For myself, I have grown up in a very loving and supportive household, but I am certain that everything I have experienced has made me who I am.

Scientists and psychologists have long debated which is more influential in making us who we are: nature (the genetic qualities we inherit and are born with) or nurture (the environment in which we are raised). This month we put the question to you, NATURE VS NURTURE –which do you think has the greater role in shaping us and why?

Relax, unwind, and feel renewed in QUEENSTOWN
Eat
Wake up to wellness with local favourite The Boat Shed, a light-filled café on the water’s edge of the Frankton Marina, where you can take in views of Lake Wakatipu and The Remarkables while grazing from the seasonal menu.
Nearby, The Sherwood dishes out top-notch breakfast options like smoked salmon and dill crème fraîche with seed toast to enjoy in the sunny courtyard while indulging in a breakfast martini, I mean you’re on holidays, right? In town, Bespoke Kitchen has a focus on fresh, unprocessed, local ingredients without compromising on flavour. Meanwhile, nestled on the waterfront, Vudu Larder will keep you caffeinated for whatever lies ahead in your day of adventure.
If you care about sustainability as well as tasty fare, seek out Taco Medic for healthy yet tasty tacos. If fine dining is more your style, make a reservation at Aosta or its more casual sister restaurant Little Aosta in Arrowtown. Botswana Butchery is a popular choice for those who love their protein and Râtâ is a slinky restaurant tucked away from the hustle and bustle of downtown Queenstown, serving an inventive menu using organic and sustainable ingredients and a wine list proudly showcasing wines from the Otago region.
Drink
There is no shortage of drinking dens in Queenstown; the town has a party vibe that just won’t quit. If you don’t feel like queing up at legendary burger joint Fergberger, head next door to Ferg’s Bar for sophisticated cocktails and bar bites. The drinks menu is immense, and you’ll find some seriously creative cocktails including the Cookies and Cream made with vanilla-infused vodka, several sweet liqueurs, homemade cookie cream, and topped with Mrs Ferg’s chocolatecovered cookie gelato, it’s like drinks and dessert rolled into one!
Like our Brisbane outpost, The Lodge Bar Queenstown connects with retailer Rodd & Gunn, but this one has a distinctly Queenstown flavour with alpine vibes – a blazing fireplace, fur throws, and a moody atmosphere. It’s all style and snappy service from a team of expert mixologists and service professionals. Settle into the leather armchairs fireside with a cocktail in hand and soak in the stunning surrounds.
Play
There are plenty of adventurous pursuits to be found in Queenstown. Get the heart pumping with an e-bike tour to some of Otago’s best wineries with Going Blue who provide an e-bike hire and shuttle service as well as provide local tips and knowledge to make the most of your day.
Treat yourself with a massage at Queenstown’s multi-award-winning Body Sanctum Day Spa. Succumb to the expert therapists and indulge in a facial, massage or foot rub to work out those tired muscles after a day of skiing or outdoor adventure.
Onsen Hot Pools is a must-do Queenstown experience. Soak in cedar tubs as you sip bubbles and bask in the beauty of the New Zealand alps before you.
Stay
Who doesn’t love a motel makeover? The Sherwood has turned a tired Tudor-style motel into a stylish and sustainable dream. There are still touches of old, but it feels renewed with repurposed and recycled elements and industrial light fittings creating cosy and moody rooms. The restaurant is where it really shines, with an outstanding menu featuring produce grown onsite, meat over charcoal, and a handpicked list of natural wines. Upstairs you can bliss out with a massage or be rejuvenated by a yoga session.
For something a little more luxe, stay at The Rees Hotel for contemporary rooms, attentive service, and views for days. Situated absolute lakefront means you have a front row seat to watch the snow settle on the mountains as you plan your day over breakfast in True South Dining Room. Take advantage of the complimentary shuttle service into town, or the e-bikes for a spin and retire fireside as you toast to your relaxing weekend in Queenstown.

The Lula Sisters
Meet the Brissy sisters who created Australia’s first self-warming eye masks all while battling a shocking health diagnosis.
By ERIN SIMPSON
Aisling and Margaret Cunningham aren’t your average small business owners. In the early days of their now thriving business, Lula Eye Masks, the sisters were not only manoeuvring through an unexpected pandemic but battling a distressing breast cancer diagnosis. However, despite facing many setbacks, these power sisters are kicking goals in both their personal and professional lives since the launch of their joint venture.
“Since starting the business, our lives are even more intertwined,” Aisling says, adding the business idea was born when Margaret heard about self-warming eye masks but was unable to find any in Australia.
“I remember our older sister saying, ‘well 2020 can’t get any worse with a breast cancer diagnosis on top of Covid lockdowns’, but it really did get a lot worse when I was also diagnosed just six weeks later,” Aisling recalls.
The sisters received their first Lula Eye Mask samples just a week after Margaret had her first chemotherapy treatment.
“She was exhausted, and I was feeling stressed and worried. However, when we
both tried the eye masks, we knew immediately we were onto something great.”
Since then, the business has grown rapidly and now has its own loyal following of customers. “We have received the most beautiful messages from customers letting us know how our masks have helped them,” she says.
Aisling was even recently included in the Top 50 People in Ecommerce for 2023 by Inside Retail.
Thankfully, both sisters are now cancer-free. When asked what advice they’d give their 2020 selves, Aisling says, “I think we would tell ourselves to accept every bit of help that is offered, that it will take a while for our energy to come back, so be patient and kind to ourselves, and know we have more strength and courage than we can possibly imagine!”
