lashing may be thought of as conflicting or jarring, but this issue is a clash of worlds in all the right ways! Indooroopilly Shopping Centre takes centre stage on our cover this month with a sophisticated mix of new season fashion and watercolour art thanks to local artist Kerrie Hess – who embodies pure elegance with the flick of a paintbrush in her new book Joy In The Little Things (page 20). We then jumped into the world of rising local star, Sisi Stringer, who plays Mileena in the new Mortal Kombat movie – certainly one to watch on page 8!! There’s more art than you can poke a stick at thanks to the local artists of the Brisbane Street Art Festival (page 40) and 12 pages of fashion full of sartorial soul food starting on page 21. With May comes a change of season and you can’t argue that Brisbane is the best spot to be in the winter sunshine. f you were a 90s baby who shudders at the thought of low-rise skinny jeans, put your hands up! I returned to my childhood this month when I interviewed Mortal Kombat star Sisi Stringer (page 8), making me think back to playing the video game with my brother (choosing Sub Zero, of course). As we sipped extravagant milkshakes care of Archie Brothers Cirque Electriq, it was clear to see this local actress is going to skyrocket. I also sat down with a few powerhouses of the city: Matthew Sorbello who runs the beloved Merthyr Village (page 6), Ronaldo Van Rooy of La Vue Waterfront Restaurant who taught me about Green Buddhism (page 51), and Phil Di Bella of The Coffee Commune (page 39) who knows business back to front. echnically I grew up in Hamilton, but New Farm has never been far away with my family’s businesses based in the inner-city suburb since the 1960s. My mother and father started their business with a single pharmacy and it’s incredible to see how far it has come. From an early age, we were expected to be involved in the family business, so I was always around property development, plans, and construction for as long as I can remember! I studied commerce and law at UQ and graduated with a role in corporate finance for Macquarie Bank in Sydney. I felt like I learnt more in one day than in my five years of studying. I’ve been a part of considerable infrastructure projects such as Airport Link – seeing it being built and providing such a core service to the community really encourages me to work hard. It introduced me to what has been the core of my role now in managing the Merthyr Village centre and motivating people, as well as being outcome-focused. I didn’t truly appreciate the convenience of Merthyr Village, nor the strength of our community until I moved to New Farm in 2007. Since then, we’ve been through flood, fire, and COVID. The unwavering support never ceases to amaze me. Since taking the reins of Sorbello Group, I certainly

feel a strong sense of responsibility – to preserve what my family has created, but at the same time, I am always looking to improve it. I love that we have created a village that people can enjoy and feel a part of. We are investors with a long-term focus on adding to our community. At Merthyr Village, each business has been picked to provide an important service – not just to fill the space. Outside of this, we have residential projects around New Farm, as well as north and south of the river. There is always something in the works. It’s definitely a dream role, but I try to keep a balance of doing things I love outside of work. You’ll always find me active and outside. There’s so much happening in the inner-city and around the Brisbane River. You can’t beat New Farm Park though! For it to be my doorstep is not something I take for granted. @STYLEMAGAZINES

Landing the role as Mileena in the latest Mortal Kombat movie, Brisbane actress Sisi Stringer is the knockout star you need to know about. Interviewed by FIONA WILLIAMS
S
ince its release in 1992, Mortal Kombat is one of the most iconic fighting video games in history. This year, its latest adaptation is coming to the big screen with a slice of our very own local talent. Sisi, hi! Where are you and what are you doing right now? Right at this moment, I am sitting on a beanbag chair in my best friend’s house. I’m currently in Sydney for the premiere screening of Mortal Kombat. It’s a tumultuous time but I’m living my prima donna fantasy! You’ve landed a coveted role from every millennials’ childhood pastime, what was the first thing you did to celebrate? When my friends were helping me with my audition tapes – giving me lifts to the airport and staying up late learning lines with me – I promised them if I got this role that I’d buy them a night on the town. And that I certainly did. There were drinks and dancing and a gratuitous amount of screaming. What was your first acting role? That depends on how we define the term. I did a lot of drama, dance and theatre as a kid. I guess my first professional role was playing Lil Inez in a production of Hairspray on the main stage of the Queensland Performing Arts Centre. I was a teenager and as a musical theatre kid, it was my dream role.

Tell us about your childhood in Byron Bay… Before I moved to Brisbane for the last years of high school, Byron was a perfect place to grow up when I was a kid. It’s changed a lot since and bears little resemblance, but I hold many memories dear. For example, there was a town bicycle we named Pueblo Nishiki, who we’d ride around and leave places for others to pick up and ride. He always came back to us. Give us your best elevator pitch for Brisbane... It’s a wonderful place for the underground art scene. The music scene has a wonderful culture and there are exciting overlaps of young filmmakers and curators of visual arts and other mediums. I say this with a pinch of irony because there’s always an affected nature to such scenes, but we’re all painfully aware of it. But I also love that self-awareness and deprecation because it’s a very Australian attitude to have. If you can ever catch the Bad Olive Festival, that’s the place to be. Playing the role of Mileena in Mortal Kombat, how did you get into character? I got into character a lot during hair, makeup, and costume – building the character in layers. I start with the face of the princess Mileena was cloned from. First, the prosthetics, adding a layer of ugly scars and deformation, and the war paint she uses to cover them. My hair pulled back in braids like a regal warrior. The contacts which bring this otherworldly glare. By the time I’m strapped into my armour and wielding my weapons, I look in the mirror and I’ve stepped into my character. Plus, I would listen to ‘Bury A Friend’ by Billie Eilish. The moment in the Mortal Kombat (2021) trailer where you lick the knife of blood (!!) what are you really thinking? That’s a funny story actually. That was the first take where I actually licked the fake blood (which didn’t taste fantastic), but when we cut they said, “Oh you didn’t need to do that, we’re going to CGI your tongue in.” In the final cut, they ended up using that first take anyway. Probably because it just looked so badass!

How did it feel seeing your character come to life? I really loved and appreciated the way director Simon McQuoid envisioned and executed the Mortal Kombat universe for the big screen. It’s very dark and authentic, so the difference between the character in the game and the Mileena we see in the film is an exciting development in making her a threedimensional character. That’s what the fans deserve, and I hope that’s what we delivered. What was a favourite on-set moment? Every day on set was the best day of my life. But I just now remember there was a little boy who came to set – a family member of someone – and it made my day. I spoke to him and let him hold my (rubber) weapons. We played and he’d give me a jab in the chest, and I would keel over. We took pictures together and it was adorable. You’re playing Mortal Kombat against Kitana, what’s your go-to move? If I’m losing, I rely heavily on the Sai Slide. I love the teleport moves but my favourite
is the Backwards Throw where Mileena stabs Kitana in the gut and turns away to check her nails while Sais come raining down through portals, stabbing her over and over. The sass! The audacity! Any passion projects outside of acting? I love singing and writing music, though I’m in two minds about releasing anything. I’m also in the process of developing one of my film scripts into a mini-series. Writing and directing are passions of mine and are definitely in my career trajectory. What’s next for Sisi Stringer? I think everyone wants to feel like they’re making a positive impact. I have often thought of acting to be a narcissistic career (in terms of attention and coveting fame and wealth). But when I think of the art, I hold dear; films that make me cry, shows that make me laugh, stories and characters that challenge my belief system or open my eyes, or relate to my human experience, I think, “Wow, I get to be a part of that”. There is so much value in the job because entertainment and storytelling make the world a better place. So, I look forward to contributing. MAY 2021
K/O QUESTIONS Fave fashion style? Vintage glam. If Old Hollywood and the 90s had a lovechild. Song on repeat right now? ‘On The Ground’ by ROSÉ. Last time you cried? Three hours ago. Listening to ‘On The Ground’ by ROSÉ. Weirdest impulse purchase? 3% food-grade hydrogen peroxide. Because I saw a viral TikTok showing how someone used it for super effective teeth whitening. Yikes.

Hi Catherine! Let’s start at the beginning. In 2003, your scientists developed patented technology to create an accessible cure for malaria, under the parent company Amyris. A sugarcane squalane is actually cleaner, higher quality, more weightless, more clear and more cost effective. The more squalane we share with other brands, the less shark squalene there will be in the world. That said, I think that sharks need even more love – they need to be protected globally in a much bigger way. Do you feel like Biossance kick-started a clean beauty revolution? I think wholistically, we came into it at just the right time. But I do believe we also started ingredient sustainability in a much bigger way with squalane. I think we have created a lot of ‘aha!’ moments for people. We started with the right mission and we’re a brand with our heart in the right place and so everything we do has to be authentically positive for people and the planet. I’d like to see more brands join us and in a more rapid succession. The faster we can all share best practices and move towards a more sustainable future, the better it will be for everyone. The beauty of it all is that you don’t have to give up beautiful skin in the meantime to get to that destination.

f you’ve ever had the pleasure of meeting the delightful Kerrie Hess, you’ll know that this Brisbane creative is beauty, grace, and happiness personified. So, when it came to launching Joy In The Little Things, a book that’s all about celebrating joy – the small moments, the daily rituals, the tiny pockets of happiness – it’s clear that Kerrie’s focus was to create a passion piece that makes you feel calm, and brings about a sense of gratitude to the reader. At its inception in early 2019, the book was much more about the joy in fashion and style, but as the pages started to fill and Kerrie dove deeper into her own moments of joy hidden within the mundane of the everyday, the book found a new rhythm in uncovering the perfect little moments that happen all around us – the ones we sometimes forget (or are too busy) to notice. rowded and jammed with newcomers, the fashion industry is a busy, bustling, and beguiling beast. It’s been subject to a plethora of pivotal trends over the last two decades and has evolved into a complex system that, at its very core, is based on the notion of continual consumption of the new and discarding of the old. Hands up if you’ve been guilty of investing vast sums in the acquisition of AW’s best looks? Sure, retail therapy can feel like a dream, but at what cost? The sustainable fashion movement has long been embraced by the conscious consumer. And it’s no surprise, with its thoughtful, ethical, and intentional reaction to the global footprint, it aims to reduce textile waste that clogs our landfills. Sustainability is a direction the world is moving, in that we’re all more aware of our carbon footprint – who wants to contribute to that?
As we take a step further to rethink our relationship with fashion and the effects of climate change, little is focused on the relationship the industry has on biodiversity – the multiplicity of living things. They say variety is the spice of life, but this sentiment really does ring true – biodiversity is vital to life on our planet. According to Oxford University, without it, there is no future for our own humanity. We depend on it for our food, water, energy, and the oxygen we breathe, yet the fashion industry is one of the biggest contributors to the loss of biodiversity through soil degradation and waterway pollution. The alarming signs beg the question, “For the love of fashion, what can we do to be better?”

AS INDIVIDUALS: • Wash your clothes in cold water. According to McKinsey & Company, changing your washing to a cold express cycle can reduce microfiber shedding (microplastics into the water system) by 57% versus a wash with hot water. • Re-wear, recycle, repair, and resell! The more use you can get out of your clothes reduces emissions, water use, and waste.
AS BRANDS: • Incentivise behavioural change by offering customers vouchers in exchange for their preloved clothing. For example, global brand H&M accepts any brand’s clothing for recycling. • Include repairing and reusing into your business model. In 2019, Patagonia repaired more than 40,000 pieces of clothing through its Worn Wear Program.
In a weirdly wonderful set of circumstances, COVID’s impact on the world has made the concern for biodiversity much higher on the priority list. Could this be because we have had the opportunity to look at the world more deeply and understand the relationship between humans and animals more? If these efforts mean biodiversity loss can be reversed, let’s try to do our bit – the planet needs it!

elebrating and harnessing the power of women, Australian-based label Arms Of Eve is mostly known for its simplistic and beautiful jewels adorning the modern woman with style and grace. From bold statements like the zodiac to minimal touches, founder Kerryn Langer takes us through where it all started.
How did AOE begin? I have always loved the idea and simplicity of a one-size brand, especially in the directto-consumer e-commerce space that we were excited to enter. That simplicity, bundled with my love of travel and fashion accessories and Arms Of Eve was born. Accessories have the power to express a person’s individuality and how you wear those accessories make you feel unique, confident, and beautiful.

Where does the name stem from? I was searching for my connection of what beauty is and I was attracted to the story of the Garden of Eden. I loved the notion of Eve being the first woman and a representation of all women. Arms of Eve has a maternal feel like being wrapped in her arms. I kept coming back to the name and when diving deeper into my story and the brand’s development, we came up with three symbols: ‘A’ representing the Earth, the ‘O’ representing the moon and the ‘E’ representing the Sun, which was fitting as my designs are inspired and created during my extensive travels around the world. I am attracted to graphic symbology which takes me back to my South African roots and the African textiles that inspired my youth. Describe the AOE woman... She is fashion-forward, free-spirited, and independently strong. Favourite moment with AOE? The constant inspiration through travelling and working with my beautiful ethically-certified factories and truly understanding the handmade process of what goes into each piece. What gives your brand its point of difference? It’s how we stack, style, and layer our pieces. We don’t design individual pieces, we design looks and all of our pieces are designed to work together. 30

ust kidding! We can’t get enough of this homegrown Kiwi brand. Creating beautiful hand knits and using only cruelty-free sourced fibres, is the ethos behind Frisson Knits. Currently based on New Zealand’s west coast, not far from Auckland, designer Charlotte Jennings was taught to knit by her mother (and business partner), Belinda. This humble art has led to a burgeoning online business, with Frisson Knits gathering a growing following in just three years. Using carefully sourced New Zealand Mohair, each Frisson Knit piece is handmade on order, and generally one size fits all – however custom sizes can also be made. Every piece feels both nostalgic and current due to Charlotte’s love of exploring different eras; by taking an old style and adding a twist. Like grandpa’s favourite cardigan, Charlotte’s pieces are designed to be cherished for a lifetime.

What is a day in the life like as a chef? I’m not going to sugar coat it, but it can be the literal opposite of a 9-5er. Working the night, sleeping during the day and our weekends are Mondays and Tuesdays. Once you get a taste for never dealing with peak hour traffic and spending your weekends in empty cinemas and shopping centres, there’s no going back. How much time do you spend cooking at home? I actually cook most days at home. @STYLEMAGAZINES
Typically, dinner at 1.00am with my wife and our fave TV show to unwind. What is likely to end up on your plate after a busy day? Steak! Ironically, being surrounded with food all day I’m likely to somehow go without so it’s quite common for me to get home and light the charcoals. What foods are always on your mind? Late-night Korean and beers are always on my mind after a big day.

What does your family think of your cooking? I hope they enjoy it. I normally go a little over the top, so a lot of complaining arises when it’s time to do the dishes! MAY 2021

Fish cakes with lemon salad

cooking Before you catch him at Noosa Food & Drink Festival this month, celebrity chef and Brisbane local Alastair McLeod shows how to dish up a tasty seaside salver.
Method: Peel and quarter potatoes to yield 400g. Place in a medium pot, cover with salted water and bring to the boil. Simmer for 20-30 minutes or until tender. Pour off the water and leave potatoes to stand over a low flame for three minutes to allow excess water to evaporate. Meanwhile, place the fish in simmering salted water 48

and poach gently for three to four minutes then drain well. Combine potato, half of the poached fish, ketchup, zest, anchovy, mustard and season to taste. Beat together until the mixture is somewhat smooth. Gently flake the remaining fish and add to the mixture along with the chives. Weigh the total mixture and divide by ten. Mould each amount into neat round
cakes and chill well. Gently coat the cakes in flour then pat off all the excess.Preheat a large frypan over medium heat, add oil and place cakes in the pan. Fry for four minutes on each side. To present, arrange the lemon slices on plates, scatter with onion, both types of oregano and season generously with salt, pepper and olive oil. Set cakes on top.

I
f there’s one thing I can recommend when staying at Hotel X, it’s to make sure you take a moment outside, right when its geometric façade lights up Brunswick Street – cue Sneaky Sound System’s hit, ‘UFO’. As I arrive with my husband in tow, TGIF is high on my mind and it’s made even more wonderful by the swift concierge valet service. After a warm welcome, the first thing I notice at the front desk is... the front desks. They’ve removed the classic style and replaced it with their own flavour of individual sections. In hindsight, it’s your first introduction to the cheeky differences within Hotel X. As we navigate through the moody corridor to our level,

a smudge of graffiti marks the spot of our top-tier room to which we enter and immediately raid the minibar. It turns out to be our own proper bar with a premium cocktail, spirit, and wine section. Pop goes the bottle of Moët on the terrace with its terrazzo details and the unexpected glow of the custom lighting on display outside – don’t forget to look up! As I’m getting ready for dinner, amongst the avantgarde lighting, I make use of the Dyson and GHD appliances along with Karl Lagerfeld bathroom products – ooh la la! The Leg Vein Doctor Dr Nicholas Kemp on the past, patients, and phlebology. Starting his career in rural medicine, Dr Kemp of The Leg Vein Doctor loved the variety of his first role. What is a clot?
Focusing regularly on getting outer order ensures inner calm. The change of season is an excellent time to reflect upon how you’re travelling and adjust behaviours and plans for the next month. A blood clot is a mass formed by platelets held together by fibrin, a protein that acts like glue. If you have varicose veins, this means the superficial venous system is not functioning as it should. In severe cases, the deep system can also be incompetent. If muscles squeeze a clot out of a vein in the leg, there is a chance it can travel elsewhere within the body and can lead to serious complications such as deep vein thrombosis, heart attacks or a stroke. To reduce your risk of these, avoid sitting or lying for long periods without walking, know your family health history, stop smoking, lower high blood pressure and maintain a healthy weight. Sunday self-care Do you spend some of Sunday getting ready for your working week? I think about what we might eat for the week and get my house somewhat organised. One Sunday task (that is really more of a treat) is to do all those body maintenance regimes that mean you are feeling good about yourself for the coming week. A cardigan or fitted stylish sweater combined with linen or cotton trousers is both stylish and comfortable. It’s all about what looks and feels good. How did CJ Explores come to fruition? From our love for travel and film. Before the rise in social media, we were filming our adventures around Europe, capturing everything we did and saw to share with our families, and to store in the memory box.
Is it something you both work on full time? Currently, it’s our weekend passion project! Whenever we have an opportunity to adventure, we take it.
What brought you to Australia? We originally met in Brisbane in 2012, while we were both on a gap year. Before this, we had both heard incredible stories of friend’s trips to Australia which had convinced us enough to see it for ourselves. 66

Anything exciting you’re working on now? We are currently working with tourism boards as well as preparing for our next adventure together – The Big Lap. Starting in August we will be travelling full time around Australia, living life on the road, and soaking up everything that the country has to offer. We can’t wait!
Why is travel important to you?
Where is the last place you travelled?
We feel that when we are travelling time slows down, routine is thrown out the window, and we’re forced to look at the world with open eyes.
Before arriving in Australia, we were on our biggest adventure yet. We were trying to get as far as we could from the UK to New Zealand without flying. We travelled along the TransSiberian Railway through Russia and arrived in China only for COVID to break out days later.
Where are your favourite places to holiday in Brisbane and Queensland? Moreton Island is incredible! We have camped by the ocean, snorkelled a shipwreck, and watched the Milky Way. Maleny in the Sunshine Coast is also very special to us – we married there in 2017.
What do you love about Brisbane? It’s a city where you don’t feel lost. Not too big, not too small. It’s cool without trying.
And the next? Uluru, which we plan to visit this winter.
Any travel career highlights? In 2018 we walked El Camino de Santiago – a 790km pilgrimage through Spain – and it was the most incredible adventure of our lives so far.
