orn in Macedonia, Aleks moved to Melbourne and discovered a love for hospitality back in the 90s. 31 years later, and he is one of the proud owners of the restaurant empire that is Julius, Bar Brutus, and Beccofino. Starting out studying computer science and working for a café in the city, two and a half years later, Aleks bought the business. The catalyst to his impressive career, he wanted to introduce newness to Melbourne with his European background. He saw a gap in the market for all things artisan — breads, baked goods, and even smoked salmon. Within two

decades of his move from Macedonia, he had six cafes across Melbourne. In 2013, Aleks, his wife, and their two sons packed up their lives in Melbourne and settled into their new city — Brisbane. After seven years of hard yakka and at the age of 50, his success is unmatched with both of his sons working alongside his lead at Julius. A typical day in his life consists of everything from the back of house management, bookkeeping, rostering, and his personal favourite, ordering wine. “I always say that running a successful restaurant is no different to when someone comes to your house. You MAY 2022

need to keep your guests happy from the welcome to the goodbye,” he says. Forming strong relationships with staff, customers, and suppliers is something he loves, and the longterm standing team at Julius reflects how much Aleks values them. “Nothing compares to when a staff member tells you they love their job,” he says. Diligent, passionate, and awe-inspiring, it’s clear Alek’s ‘Mayor of Fish Lane’ title is well and truly warranted. Plus, his hard work doesn’t intend to slow down anytime soon, with plans for a new Italian nook just around the corner.

ACQUIRED TASTE Recipes are usually kept in tattered journals or scribbled in the Notes app on your phone, but Gemma Leslie’s social enterprise, Food For Everyone, serves them up into art made to be devoured on your wall, while feeding those in need. By DINUSHKA GUNASEKARA

What inspired Food For Everyone? A longing for connection. At the peak of the pandemic what I missed most was having my friends and family over, which would almost always revolve around food. There is nothing more joyous to me than sitting at a table with full bellies and full hearts surrounded by the people I love. It was a longing for this exact feeling that inspired Food For Everyone. My recipe posters were designed to capture the joy of food and bring it into people’s homes during a time when it wasn’t possible. Who was the first person you collaborated with? Julia Busuttil Nishimura – she’s always been supportive of me and community projects, so I thought I’d ask her! Her recipe for tiramisù is one I use all the time, and a dessert staple for so many people. It was a no-brainer really.

Talk us through the design process of the posters… I’m a graphic designer by trade and have a deep appreciation for traditional typography. The overarching format of the posters and typeface are inspired by vintage newspapers. The idea of a recipe poster was always simmering in the back of my mind. In terms of the process, I take some time to sit with each recipe and sometimes even cook them first to get a full understanding of the ingredients. I paint each ingredient by hand, then digitally upload them where I play with colour and arrangement. I love colour – I can’t hold back, which is evident across the entire collection! How do you choose who you collaborate with? For the first collection, I simply called on some foodie friends whose cooking I love

and asked them to contribute recipes that they love. After launching the first set of posters, the support from the community was incredible and propelled me to work with some of Australia’s leading talent in hospitality like Andrew McConnell, Kay-Lene Tan, Lennox Hastie, and Simon Gloftis. I want to collaborate with people who have contributed to Australia’s incredible food culture, and this comes from everywhere – home-cooks, chefs, restaurateurs, cookbook authors, and food writers – and capture the recipes that are meaningful to them. Beyond survival, what does food mean to you? My life revolves around food well beyond

the necessity of it. It’s this beautiful thing that is universally understood and a place for connection. Food is so deeply entrenched in culture, so it provides a window in which to explore and learn. Why is tackling food insecurity important to you? Food is a fundamental right, and something that no one should have to forgo. The unpredictability of the pandemic really showed how food insecurity can affect people from all walks of life, especially when paired with the rising cost of living. I hope that Food For Everyone helps to break down the stigma often associated with seeking food relief by creating a sense of community.

There is no shame in asking for help, and there is a seat at the table for everyone. Welcome to Brissy, by the way! What do you love about Brisbane? Thank you! I love GOMA – the building itself in the string of other brutalist buildings along South Bank and, of course, the art inside. I also love the streets lined with flowering trees like jacarandas and poincianas. For food, I love Julius Pizzeria in Fish Lane. ‘Eggs With Eggs With Eggs’ Hellenika While we all know Hellenika well for its famed zucchini fries, they do breakfast just as well – and honestly, who’s surprised? If you’re heading to Hellenika in the AM, you can’t go past their signature dish – eggs with eggs with eggs, which as the name suggest is eggs served with taramosalata, bottarga, and crusty toast. ediscovering the food he grew up on, Brisbane restaurateur Simon Gloftis has created James Street’s newest dining experience, which he says combines quality deli-style Mediterranean eats with casual café vibes – best enjoyed soaking in the sun with a rosé in hand. Sunshine, which is nestled amongst the trendy boutiques and eateries of New Farm’s James Street, has been six years in the making according to Simon, who also owns Hellenika and SK Steak & Oyster within his restaurant repertoire. The new offering is a far cry from his other eateries, serving up 30-35 different Australian biodynamic wines and unfussy vegetarian meals so good they would make anyone contemplate a veggie lifestyle. “It’s all the food I grew up with,” he says. “It’s an amazing juxtaposition with all my other venues. I never thought as a kid it was healthy, a lot of Europeans are vegetarian without even knowing it. I grew up eating mainly vege, stuffed tomatoes, rice, and beans. Because there are only a few ingredients in these dishes, they need to be bang on!” he says. Despite being well-known for his prowess in the restaurant business, Simon says opening the restaurant meant re-examining the business model and what he knew about the industry while rediscovering his passion for the food he grew up with. “I want the people of Brissy to know it’s been a long

time coming for me,” he says. “It’s all my years of experience decanted down into a vegetarian takeaway joint in a beautiful setting. Just sitting here in James Street with a plate of food and a rosé – how good! It’s casual. It’s like a local coffee shop with a vegetarian takeaway,” he says. With no reservations, the eatery only accepts walk-ins and takeaway between 11am-9pm with a plan to offer online orders in the future. When it comes to food, Stratton is influenced by countries from all over the world. “There are influences from Middle Eastern spiced squid to Japanese karaage milk buns to a Massaman curry - to pizza! The menu has been designed to share (like Mrs B’s), but also to have something for everyone. Sometimes you just want some pizza and a glass of red wine, sometimes you want a whole meal of bar snacks, or sometimes you want beef short ribs in a black bean sauce!” says Tarryn. Hi Dominique! Tell us a little bit about yourself – have you always been in the fashion world? I began my journey with fashion as a teenager working in fashion retail on the weekends and during school holidays. I then proceeded to study Fashion Design whilst completing grades 11 and 12 and continued to study it for several years following high school. Throughout my early twenties, I worked and interned in numerous fields within the fashion industry both in Australia and Europe in the areas of styling, design production, creative direction, publishing, and marketing with some notable companies such as British VOGUE, ELLERY, and RUSSH Magazine. These experiences very much broadened my scope of the fashion industry and prepared me for what would one day be the launch of BRÉSAC. In December 2021 you launched BRÉSAC and made your foray into fashion accessories – why luxury sunglasses? I always felt that there was a gap in the market for high quality, luxury sunglasses and the experience that accompanies buying a luxury product at an accessible price point. I believe sunglasses are the perfect accessory to complete any look. You can make an instant statement and immediately elevate any outfit. The BRÉSAC aesthetic is inherently masculine and contemporary. What do you think inspires this vision? I have always been attracted to a masculine aesthetic, and this style always makes me feel most confident. When designing our pieces, I take inspiration from vintage eyewear and incorporate a modern edge. BRÉSAC frames are contemporary, versatile, and designed so customers can own several different colourways of the same frame, with each providing a slightly different aesthetic that will match different outfits.

FASHION

You are a Brisbane local sourcing quality European materials in a time when overseas travel hasn’t been that accessible – what has that process looked like? It has been an interesting and testing time for any company sourcing materials and manufacturing products offshore. Launching an entirely new business during this time has certainly been challenging, but it has also taught us many valuable lessons. What was expected to take six months, turned into an 18-month launch, so it was essential that we remained open-minded and flexible. It’s 2022 and everyone is wearing low-rise jeans and crochet. As a designer, how do you stay true to your aesthetic and not be influenced by sweeping trends? Most of my personal wardrobe is comprised of timeless, modern tailored pieces. Purchasing great quality pieces made from high-quality materials that you know will last for years to come is incredibly important. I find the best way to ensure you are staying on trend seasonally is through accessories. While BRÉSAC is very design-conscious, we also want our pieces to be timeless and transcend seasonal trends. We want customers to cherish our pieces for years, not months, so they can truly get their money’s worth out of our products. For that reason, there are a few key shapes we will always work with at BRÉSAC and put a unique spin on from season to season. MAY 2022

BRÉSAC is still very much in its infancy – so, what’s the plan for the next 12 months? Our goal is to continue to evolve our designs and grow our BRÉSAC customer base. We are so fortunate to have incredibly loyal customers who have supported us since our launch. So far, we have been well received internationally and our frames have been worn at Copenhagen and Paris Fashion Weeks, however, we hope in time to further expand our reach across the globe. I think I do a bit of both, I mostly use meals I’ve eaten as inspiration for my paintings, but may find myself craving the thing I painted that day and let it be the source of cooking inspiration for my next meal. What foods are you planning to paint next? I just finished up all the paintings for my exhibition at Saint Cloche, which features lots of food scenes. I’m also enjoying painting the process of cooking, not just the final cooked product. So maybe there will be more of that in the future.

Delight in the details of parsley, thyme, mint, rosemary, basil, zucchini, eggplant, raddish, ginger, tomatoes, cucumbers, and citrus – even the cocktail garnishes are straight from the paddock, making each sip that little bit sweeter! It’s so beautiful at our family farm,” says Sibel. “Olive Thyme is like the daughter we never had. We love and care for her dearly, but we also spend time away on the family farm close to the produce we deliver to our guests, and it helps us to continually improve

When we fail at tasks, it doesn’t mean we are not smart or capable. What it reminds us of is that effort is typically required to succeed in life. There are those who think that trying something and failing means one is unintelligent or incapable. For these people, further pursuit after failing is considered a waste of time. Individuals with this fixed mindset avoid challenges because they believe they can’t improve, which means they are not learners. Others know that intelligence and skills can be improved with a learning mentality, and use failures as motivators and stepping-stones. These individuals have a growth mindset and make thoughtful, committed choices on the journey toward success. We all have the enormous capacity to succeed when we try.

Some clinics advocate scheduling varicose veins on both legs to be treated in the same week, harking back to the days of surgery. However, you need to remember that modern endovenous treatment has very minimal downtime and doesn’t require hospital admission or a general anaesthetic. At our practice, patients are encouraged to assess their worst leg first before looking at the second. FOR HUMANS Inspired by her great grandparents, Nonnas Grocer is a concept by Madeleine Hoy we were so intrigued by that we needed to get to the bottom of it.

What inspired Nonnas Grocer? My family history. My great grandfather had a chain of fruit shops across Victoria, and I take a lot of inspiration from his stores, as well as contemporary furniture and graphic design.

hen it comes to the world of décor and tablespaces, gone are the days of simple candles and glassware. Instead, enter a new wave: a movement that allows your table to become a placemat to explore both reality, art, and design. Some call it a fruity tale – a story of candles re-invented, but when it comes to Nonnas Grocer, we call it pure imagination. SUNSHINE STATE OF MIND Nestled in the heart of Brisbane City lies a destination where cosmopolitan finesse meets understated culture at W Brisbane. By COURTNEY FRANK

y the time I drove up to W Brisbane at 12pm on a Friday afternoon, I was frazzled. It had been a big week ahead of a glamorous Brisbane stay-cay with my bestie. So, as I pulled up to Wheels at the hotel, it’s safe to say a wave of relief washed over me knowing that from this moment on, every little detail would be taken care of. Enter: total relaxation and pampering. It’s amazing how the troubles of the ‘real world’ can wash away when you step into a 5-star location like this. We wasted no time after checking in and headed straight up to the AWAY Spa where we met Steven – who after seeing the tired look on my face, immediately placed a glass of champagne into my hands before the plush W Brisbane robe had even touched my skin. Here, access to all the AWAY Spa’s facilities is part of every treatment experience. Guests are invited to spend time in the relaxation pods, sauna, aromatherapy steam room, or mineral-rich vitality pools at their leisure. After half an hour of relaxing in the pools, I was led to the treatment room to enjoy my Ready to Roll treatment – a unique massage using a combination of 50

hands and bamboo sticks for improved joint flexibility and muscle relaxation – it was total bliss. After checking in to our state-of-the-art suite, it was time to get dressed for afternoon cocktails at the WET Deck ahead of our dinner reservation. It’s here we’re met with the most Instagrammable pool in Brisbane – an ultra-glam 20-metre poolside oasis with a resort feel and panoramic views of the Brissy skyline. And while we were a little too dressed up to cut laps, we were perfectly at home lounging by the bar while the bartenders dished up top-shelf coconut margaritas to two very willing accomplices! The night concluded the way that all good Brissy stay-cays should – with copious amounts of Chianti and Italian food, courtesy of head chef Shane Veivers and his award-winning team at Personé. Located only a short walk away at Brisbane Quarter, we feasted on dishes like figs with Stracciatella and burnt honey, spaghetti carbonara, and crumbed veal cutlet. restaurant was closing around us, we rolled back to our rooms, perfectly content and ready for the most restful slumber of our lives. As the automatic blinds opened on the next morning, we were inspired to keep exploring our beautiful River City. After a stunning high tea experience in the Living Room Bar that even included a ‘paint your own panna cotta’ activity, we (reluctantly) checked out and took a short stroll over the Victoria Bridge to check out the APT10 exhibition at QAGOMA for the afternoon. As we strolled through the gallery, a wave of appreciation and admiration washed over me with just a single thought in mind – there really is nowhere else I’d rather live. Where do you seek inspiration?

Describe your style… It’s always changing, but definitely minimal chic.

The first thing you did this morning? Gave my doggy a smooch.

Drink of choice? A green juice.

Wardrobe MVP?

A lot comes from experimentation. I try to look at the pieces I’ve created and see if they’re able to be manipulated in another way. I find this also creates more cohesion in my style.

What is your favourite part of your creative process? Opening up the kiln and discovering nothing has broken in the firing.

You never leave home without…

Interior must have?

Lip balm, sunnies, and hand moisturiser (dry hands are a potter’s life).

A warm lamp that cosies up a room and aromatherapy.
