Having run the local Day & Night Pharmacy since the 1960s, my parents often wondered why New Farm, this inner-city suburb bounded by the river and home to the most beautiful park in Brisbane, was somewhat unloved. So, armed with a vision of creating the convenience, service and retail destination of the New Farm, Teneriffe, and Newstead peninsula, they planned and developed Merthyr Village almost 30 years ago. In the years since, Merthyr Village has become so much more than just a neighbourhood shopping centre. It is now the heart of New Farm. With the support of our loyal customers and wonderful businesses, many of which are family-run, Merthyr Village has a very special warmth and strong sense of community. Not without challenges in our short history, our centre has endured floods, fire, and now, the COVID-19 pandemic. However, each time this amazing community has banded together to come back stronger. We know this time will be no different. As recent events have brought many communities closer, we thought this publication could be a thank you to everyone that has made our little village the special place that it has become. We simply could not have done it without each of you. Thank you so much for your ongoing support. We hope you enjoy the read and agree that it really is, all at Merthyr Village!

Coles New Farm More than 20 years after first opening its doors to the local community, Coles at Merthyr Village has a fresh new look after undergoing a multi-million dollar redevelopment late last year. The redevelopment expanded the store’s convenience range, offering New Farm customers a new selection of pre-packaged meal options including sliced fruit and vegetables, easy snacks, and ready-to-go meals featuring pastas, curries, soups and salads, plus a large Youfoodz range. Store Manager Jason Smith, who has worked at Coles for almost 30 years, says his customers are loving the new store, with feedback being incredibly positive!

Australian owned and operated, the team at Peter Augustus Craft Butcher believe the best quality products are attained by the care that people put into them.
What sparked the recent Peter Augustus Craft Butcher renovation? We wanted to go back to a more traditional-style fit-out. This is so we can increase the shelf space to carry more stock and make it more welcoming for customers. What sets your produce apart from other butchers? Peter Augustus is owned by a vertically integrated beef company and we only stock beef that we produce ourselves. We carry three quality brands of meat. This never waivers. So, you can be assured that once you find a cut and brand you like, you will be able to enjoy the same meat 365 days a year. We carry three styles of beef: Sanchoku Wagyu, Signature Black Angus, and Flinders Natural Grass-Fed. Some cuts are also matured in our extensive dry-age cellar, so if you’re after grassfed or grain-fed, marbled or lean we have you covered. We also carry Ryukyu pork, Tasmanian lamb, and free-range chicken. Which lesser known cuts do you like? Flap meat, which is a cut that goes to Asia, is sliced against the grain about 1cm thick and given a quick grill on the barbecue. It’s best served with crispy Kipfler potatoes and Chimmichurri, or as beef Ossobucco cooked in a traditional Italian way.

HOW TO COOK THE PERFECT STEAK Firstly, start with a good quality steak such as our signature Black Angus Rib-Eye. Where possible, buy steaks of even thickness – it should be at least 21mm thick. Ensure your steak is at room temperature and always pat dry before cooking. Season lightly and oil your meat – not the barbecue. The four basic rules for cooking the perfect steak are: 1. Heat the barbecue, grill or pan to a moderately hot heat before you add the steak. 2. Only turn the steak once. 3. Learn to test when your steak is done. For example, a medium-rare steak should be 55ºC. (Check out the SteakMate app for other temperatures). 4. Always rest your steak before eating! 4

HOME OF ARTISAN BAKING Tell us about the history of Village Bakes and your career, Jason. Village Bakes is a family-owned, independent artisan and every day bakery, where our incredible, passionate team is considered like family. I (Jason) am a career-long baker with 30-years’ experience – 17 of these as a business owner. Beginning my journey as a high-achieving apprentice, my career took me across the globe to London where I trained under illustrious pastry chef Sebastian Wind, who himself had worked for the famous Marco Pierre-White. What is a regular favourite of Village Bakes, and why? From day one, customers have loved our cinnamon scrolls and our chunky steak and mince pies. The bacon and onion pies and golden sausage rolls can’t be forgotten either! We also make a delicious chicken and coleslaw roll in a nod to a famous local’s childhood sandwich. And our hand-moulded, stone-baked wholemeal sourdough is always a hit!
SHOP THE RAINBOW Tell us about the faces behind All About Fruit: Two years ago, my brother Anthony and I (Gianluca) took over the shop from our father Tony, after 22 years at the helm. In continuing the good work of our father, every morning a team of experienced fruiters and greengrocers start their day at 4am to set up shop. This takes our team around 5-6 hours every day, but they always make it perfect. Where do you source your produce from? Anthony and I will go to the Rocklea Markets six days a week to source the freshest produce that Australia has to offer. We personally check everything to make sure it’s the best quality available. We’ve even sent stock back in the past if it wasn’t 100% perfect. We love to talk to the customers and understand what it is they are after, as we strive to make sure the customers always leave happy with the quality and service they get. Over the past 22 years we’ve become part of the local community and now our regulars are not only customers to us, but friends and family.

What is your favourite dish using fresh QLD produce? One of my favourite Queensland dishes to make uses baby Roma tomatoes from Bundaberg to make a simple, fresh Napoletana sauce. Loaded with lots of fresh basil and local garlic, and poured over boiled runner beans in a garlic and oil water with some crusty bread. I just love it!

SERVES 4 Ingredients 500g spaghetti 250g guanciale, cubed (or smokey bacon) 5 large eggs, at room temperature

100g pecorino cheese, grated + extra to serve Freshly ground black pepper Pinch of salt Parsley or watercress to garnish
Method In a large bowl, whisk the eggs, pepper and pecorino cheese until combined. Set aside. Bring a large pot of water (seasoned with a pinch of salt) to boil. Add the spaghetti and cook until al dente. Meanwhile, put the guanciale (stocked at New Farm Deli year-round) into a very large pan and dry fry until the fat renders down and turns golden. Take the pan off the heat and set aside – do not drain the fat. Working quickly, strain the spaghetti out of the pot and add straight to the pan with the guanciale. Remember to reserve at least one cup of pasta water. Place the pan back on the heat immediately. You can add a splash of pasta water here if need be. Quickly add in the egg mixture. Consistency should be creamy, but not runny. Add more pecorino if need be. Top with fresh herbs. Enjoy!

With all the traditional offerings that a great fish and chip shop should have, Piranha Fish Caf is the latest exciting retailer to arrive at Merthyr Village. Ross Skinner and Michael De Laurence are no strangers to the hospitality industry. In fact, they’ve had three businesses in the last 15 years! Located in Byron Bay, there was a gourmet retreat called ‘Taylors’, a café called ‘Bangalow’ and a fine-dining restaurant aptly named ‘Dish’. Not long after relocating to Brisbane in 2012, Ross and Michael opened their first New Farm business, Double Shot Café. Now, for their 10th collaboration in 30 years, they’re proud to introduce their latest venture: Piranha Fish Caf.

Could you introduce yourselves to the locals: We (Ross and Michael) have been part of the New Farm scene for eight years now, having relocated here in 2012 from Byron Bay. We were so excited to become a part of the vibrant, eclectic community of New Farm, living and working amongst its residents and providing a simple philosophy of approachability, informality and uniqueness, combined with quality and affordability. Having taken a break for a while, we are now excited to be back in the kitchen! Piranha Fish Caf is an exciting new challenge and we’re excited to be breaking new ground to a very appreciative audience. Tell us about the inspiration behind the name, Piranha Fish Caf. We love it! We liked ‘Piranha’ as it’s a uniquely tribal fish that’s small in size, but with a fearsome reputation. And ‘Fish Caf’ we felt to be unpretentious, but with all the elements that reflect quality cuisine.

How do you want your patrons to feel when they step inside the restaurant? We want the feel to be relaxed, comfortable and accessible where patrons can walk in off the street to dine, or simply grab some takeaway – but with a level of attention to detail that says the owners care passionately about the customer’s overall experience.

OUR DELICIOUS DELI What is the history of New Farm Deli? The deli was established in 1975 as New Farm Continental Delicatessen and was situated around the corner at 81 Merthyr Road, New Farm. It was mostly popular with the Italian community at large, offering cured meats, cheese, olives, homebaked bread and hard-to-get European ingredients essential for preparing authentic dishes. Tell us about the faces behind the business: There are many faces behind our NFDC family. Led by Vince and Maria who took over the business from Maria’s parents, nine family members now work in the deli. The rest are also like family to us! What do you enjoy about Merthyr Village? We love that it’s a one-stop shopping centre with all the amenities: doctors, dentists, optometrist, post office, solicitors, shoe and fashion boutiques, bookstore, gourmet food shops – everything! And of course easy parking and the amazing community – there is no other place like it.
YOUR LOCAL CAFÉ Tell us a little about the café side of the business? Situated in the heart of Merthyr Village, we’re a hub where the New Farm locals congregate each day over a coffee, brunch or lunch. Everything you want from an inner-city café is right here: personal and efficient service, vibrant atmosphere, memorable coffee, an extensive menu, and food that will take you back to Italy. Everybody is a part of the family here.
Your top three must-include deli items for a delicious charcuterie board? 1. Prosciutto San Daniele 2. Roast Porchetta (made in-house) 3. Our house-baked rosemary and garlic sourdough focaccia hot out of the oven daily!
Your customer service is always so warm and welcoming. What drives you to uphold this high standard? We have the best customers in the world – they are appreciative, supportive and loyal. We’re very lucky. What is a favourite dish amongst your regulars and why? The stand-out dish is definitely Vince’s Marinara (with house-made pasta) and the always delicious grilled Tasmanian salmon. Tell us about your coffee. Where is it sourced? We source it from Vittoria Coffee, Sydney. It’s robust, serious and delicious!

Tell us a bit about the history of The Smoke BBQ at Merthyr Village? Beginning in 2006, The Smoke BBQ is one of the first and longest serving American BBQ restaurants in Brisbane. We take no shortcuts, everything we do is low and slow. From its humble beginnings to our current menu and format, The Smoke BBQ has held true to the essence of what is American BBQ. We use fourth generation family recipes that are distinct and reflect the barbecue style of that region. All smoking is done in an imported smoker from the States, where we use a variety of woods for the smoking of our meats. Where do you draw inspiration for your menu? Some inspiration comes from trips overseas, reading books and following other barbecue heroes, but most of it comes from within. We love barbecue. It’s primal. It brings people together. We are always in the kitchen refining what we do. When you love what you do, like us with our barbecue, the quest never ends. And that is what we love to do – share our ‘que’ with others.
SAVOUR THE TASTE Hi Matt and Dan! Where does your passion for your business (Savour Café) come from? We’ve both always loved cooking! When we moved to Brisbane from Cairns we entered into the hospitality scene and our passion for coffee grew as we were surrounded by people that had been in the industry for many years. Our biggest influences were Phil Di Bella, Gianna Di Bella and Luisa Stevenson, who we joined forces with at Vue Lounge in 2005. What sparked the recent renovations and rebranding of Vue to Savour Café? We created a patisserie concept called Savour. We wanted to bring all the aspects that we love about Vue and Savour and combine them into one business – Savour Café is the end result and exactly what we were aiming for. But don’t worry, all your old Vue favourites are still here! What is your #1 must-try dish for winter? It would have to be our pork belly with poached eggs, curry hollandaise, wilted spinach, watercress, chilli, fried shallots, sesame seeds, and naan! The ultimate winter dish.

How does your Italy trip in 2006 still play a part in your business today? Italy was a momentous time in our lives and business. It was the catalyst and ultimately the spiritual birthplace of Dello Mano. We made a family pact before flying out that any career decision we made on this trip would be set in stone and implemented. We threw caution to the wind, sought inspiration around every corner, and remained committed as a family to be open-minded to the creative ideas we conjured during our family’s journey. What do you love about Merthyr Village and your wonderful regulars? It’s such a close-knit and involved community! Our fellow shop owners, like us, are predominantly family businesses that help to create the village vibe. Being a family business also allows us a personal touch in
the way that we engage with our clients and friends. Customers coming in for a quick chat is part of daily life at Merthyr. Describe your reaction when you received word that Ashton Kutcher wanted to import your luxury brownies to Paris? It was a surreal moment. We had just lost virtually everything in the 2011 floods but we were able to store a limited number of brownies off-site during the evacuation – basically, whatever we could grab in the short space of time. When the floodwaters started to subside and we had to face the dire reality of the aftermath, that special phone call came in. It went a bit like, “Brownies to Paris in a couple of days? Ashton Kutcher? Sure! We’ll get it there!”. We found a way and they were on the first flight possible to Paris. The rest is sweet Dello Mano history.

Tell us about the history of New Farm Editions at Merthyr Village: New Farm Editions has a rich 25 year history at Merthyr Village, with current owner Llian being there for 13 of them. During this time the store and the village have experienced floods, fire and now a pandemic, and have changed locations several times in the centre. Despite this, the one thing that always shines through according to Llian, is its incredibly loyal customers. What are some of your favourite locally-made products that you stock? We are able to showcase many of our wonderful local artists. Rob Rek’s beautiful birds, Philippe Webb’s iconic Brisbane vistas, Jan Jorgensen’s street vistas, and the Gair Collections artworks. We also stock handmade Paper Boat Press ceramic tags, Canberra-based Fink Homewares, and Bison Ceramics to inspire our customers.

What was the vision behind opening Perrotts Florist, Merthyr Village? Perrotts Florist is a Brisbane institution started by the Perrotts family back in the 20s, with Brian Sweeney being the current owner and Creative Director for almost 20 years now. With an eye for fresh and seasonal blooms, Brian’s vision for the store was to offer a market-style experience leaning towards simple bunches ready for home as well as gifts. What are your favourite timeless flowers for the home, and why? We would always recommend buying seasonally. Flowers bought while flushing are plentiful and are always at a good price. Right now, we are seeing good supplies of “spring” blooms like Tulips, Jonquils and Snap Dragons. For the home vase, we would always suggest simplicity with one or two flower varieties featured. Vases can be elevated to instant glamour with an interesting and textural foliage like cotoneaster or budding Magnolia branches. We’re happy to offer assistance and help anyone make the most of their flower budget!

Tell us a little about you and your background in the hair and beauty industry? I have worked in the hair and makeup industry since I was 17. I started in a small country town and then moved to the UK to further my experience. Working in London, I also started learning makeup and worked on many photoshoots. After moving back to Australia, I naturally evolved into doing hair and makeup for brides, which led me to open The Powder Room, a bridal studio at Merthyr Village. I love spoiling people and making them feel special.
