It’s a tough question to ponder at 75 as I look back on enriching years of a long career, loved and loving family, enduring friendships, but a theme that has been constant and brought me great joy has been feminism. My greatest investment has been my involvement in our proud Australian women’s movement, working with others to eliminate discrimination to advance equality of opportunity for women in education, health and employment and always remembering that women’s rights are human rights.

At the start, it was for aesthetic reasons but after a while, I noticed so many more benefits that I now could not go without. They say travel is the only thing you can buy that makes you richer. For me, travel wasn’t a matter of if, it was always a matter of when. When I was 29, I moved overseas and spent my long weekends and holidays travelling through 20 different countries. I consider it to be a priceless investment and I gained so much life experience. My greatest investment is travelling, because I will cherish those memories for the rest of my life. JULY 2018



Keeping up with Steph & Laura Best friends Steph Claire Smith and Laura Henshaw have turned their passion for health into an empire. INTERVIEW TAMILLE HEAD What prompted you to launch KIC? We wanted to create a space that not only motivated girls to stay active and eat well by having an awesome exercise and meal plan to follow, but a space that reminded them of all the positive things that come from living that healthy lifestyle outside of ‘looking good’. It’s not a weight loss program, it’s not a quick fix or a challenge, it’s a lifestyle program. We’re both very passionate about promoting a healthy balanced lifestyle and KIC has been the perfect platform to do so. How did you both come to be involved in the wellness industry? STEPH: I was always sporty as a kid and loved subjects like P.E and health in school, but only really got into healthy eating/cooking when I started modelling and living out of home. I fell in love with cooking and making up healthy recipes on the spot. LAURA: I grew up loving sport and participating in every single one that I could…whether I was good at it or not! I just loved being a part of a team. I also loved healthy food and learning about how to make healthy substitutions in my baking. When I was modelling overseas and had deferred uni I finally took the plunge to start my blog and share my recipes, I had the blog for about six months and then Steph came to me about creating the e-book together…which was where our business was born! How did you meet? And when did you decide to work together? We met at Melbourne Fashion Week around five years ago! We were booked on a lot of the same shows so we spent about a week together joined at each other’s hips and got along really well. We both travelled for a little bit for work after that but kept in touch. At that time Laura had a health and wellness blog called ‘food fit and repeat’ and I PAGE 6

came up with the idea to collaborate and create our first e-book ‘Keep it Cleaner’. The response for the e-book was so incredible, which is why we have continued to grow KIC as a brand ever since! What’s the key to wellness? STEPH: Happiness! And I truly believe happiness comes from balance. LAURA: Balance and moderation. Eating healthy is not a diet, it’s a lifestyle and to achieve that long term you need to have a balanced diet and life or you can’t sustain it. How do you achieve a healthy lifestyle balance? Listen to your body. When it comes to workouts, find what works for you, exercise isn’t about punishment! When it comes to eating, eat to nourish and fuel your body with all the right things that will keep you going day by day and will keep your tummy smiling. But balance also means not being too strict on yourself too, so don’t feel bad reaching for that slice of cake! Moderation is key. Balance doesn’t only fall

EATING HEALTHY IS NOT A DIET, IT’S A LIFESTYLE under eating and exercising either, work/life balance is just as important and everyone needs to balance out their priorities list so that ‘me time’, ‘family/friends time’ and ‘down time’ is just as high as work and everything else. How do you start your day? STEPH: With a glass of water and a kiss from my boyfriend Josh :) Then most mornings I fit my KIC workout in. LAURA: Always coffee and a KIC GIRLS workout. STEPH: Friends and family :) … okay and cheese. LAURA: I have to agree on that one! Where do you see yourself in five years’ time? STEPH: I want to be married and have a baby haha!! I can’t wait for motherhood - that’s half the reason I work so hard now, so that I can work from home and spend time with my family. I’m sure Laura and I will still be KIC’ing it together ;) LAURA: I would love to be thinking about starting a family, however the past 5 years have been absolutely unpredictable so I haven’t set any expectations for myself!

SOUP À L’OIGNON Ingredients 600g thinly sliced brown onions 40g plain flour 80mL lager beer 500ml veal stock Method Gently sautée onion until translucent. Add flour and cook out for a few minutes before adding lager. Reduce slowly until the beer has evaporated. Add veal stock, simmer for 10 minutes and season with salt and pepper. Serve hot alongside gruyere toast.

ueensland’s freshest produce and finest suppliers will be on display later this month when the annual Regional Flavours presented by The Courier-Mail takes over South Bank Parklands once again in what is its 10th anniversary. As Australia’s largest free food festival, the two-day extravaganza will showcase the best of Queensland on a plate through street markets, a pop-up riverside bar and live cooking demonstrations on 21 and 22 July. With a host of some of the country’s best chefs and foodie experts, including Alastair McLeod, Sarah Wilson, Katherine Sabbath and MasterChef Australia’s own Matt Preston, Garry Mehigan and George Colombaris, this year’s Regional Flavours is set to be even more impressive than the last. Food-lovers can expect to treat their taste buds with exciting new products as well as fresh fruits and vegetables, spices, teas and of course, Queensland wines. They’ll also be able to sample a brand-new product, combining two of Queensland’s most-loved beverages – beer and coffee. Merlo Coffee and Fortitude Brewing have collaborated to create Pot Shot Ale, which will be available on tap all weekend long. Dean Merlo, founder of Australia’s largest independently owned coffee company, Merlo Coffee, said the fruit flavours of Kenyan coffee suited the light style of beer being used. “Drinkers will get more of a coffee aftertaste with Pot Shot Ale than a big, bold punch of coffee flavour,” he said. And that’s not the only first-release sampling that festival-goers will get to partake in. Future Food at Regional Flavours is dedicated to showcasing and taste testing new food products and the latest food innovation undertaken by universities QUT and UQ. Set across six venues with free entry and all of the best tastes and smells you could imagine, along with kids activities and live music all weekend long, Regional Flavours should be at the top of any foodie-lovers agenda. The Queensland Taste Stage and Marketplace, located on the Little Stanley Street Lawn, is 100% dedicated to local chefs, cooks, farmers and producers where visitors will have the opportunity to get up close and personal with the experts. Or perhaps you’ll be more drawn to The Hunting Club which is part bar and bistro, part stage. If you’ve got little ones in tow, stop by Kids Collective at Regional Flavours, where they can get involved in craft activities and immersive experiences. Road to success 13cabs drive Jamie towards Paralympic dream.

amie Booth has always looked up to champion Olympic swimming sisters Cate and Bronte Campbell, in the hopes of one day becoming a Paralympic swimmer. Gary helped to organise Jamie’s meet and greet with the Campbell sisters after seeing her potential in the pool and said he was proud to work for an organisation that supports people with disabilities. “It’s great for me personally because I get to bond with inspirational young people like Jamie. She’s a great kid and I’m happy

I often get asked what specialty grade coffee actually means? It is certainly a hot topic currently. The market in Australia has changed significantly over the past 30 years. Previously, coffee roasters all around Australia were seen trying to get their hands on the most delicious and expensive coffees to demonstrate they were clearly specialty. Some would argue that specialty coffee means nothing today, as there is no specialty watch dog. It’s increasing just a marketing term used by roasters who are often using commodity-based coffee. From this overuse of the term today, sadly, there is no tangible meaning to specialty that everyone agrees to. Watch this space as roasters start to differentiate themselves. Using glue to treat varicose veins will now become more frequent and less controversial since the publication of recent international trials. These trials have published results demonstrating equivalent safety and efficacy in comparison to endovenous laser and radiofrequency ablation for the treatment of saphenous vein incompetence. Not all varicose veins are suitable for treatment with glue. For certain patients, it’s a great way to go because you might not even need to wear compression stockings. New month, new you? We’ve heard it all before. Personally, I’ve used almost every excuse in the book to avoid starting the dreaded weight loss journey, AKA “the diet”. Following a strict meal plan is not everyone’s cup of tea, it can be a lot harder to say no to that slice of birthday cake at the office than you thought (I say this based on a lot of experience). For the purpose of understanding how my body responds to different types of diets, I decided to undertake The Compounding Lab’s (compoundinglab.com.au) Clean Food Mimicking Fast over the first five days of May. This year marks the 30th anniversary of the founding of QENDO (Queensland Endometriosis Association). So, what’s all the fuss about?

O

ne in ten women suffer from endometriosis, and the delay in diagnosis is a staggering nine years worldwide! Endometriosis is a condition that potentially affects women from when they first menstruate, until the time of menopause. It occurs when the endometrium (the lining of the uterus) grows outside the uterus, inside the abdominal cavity. The body mounts an immune response to this tissue, causing pain. How can there be a delay of nine years when the symptoms of endometriosis are often confronting, debilitating and rob young women in their prime of their ability to lead a normal life? The answers lie in several areas. Firstly, because we are speaking about symptoms such as painful menstrual periods, heavy menstrual periods, painful intercourse and pain or discomfort with bowel motions or urination at period time, young girls and young women often put up with these symptoms out of fear of being embarrassed or when they are told by their parents that “it’s normal, I had it too”. Secondly, there has been a general lack of PAGE 48

awareness in the medical community generally of what all of the symptoms of endometriosis are, which has led to the huge delays in diagnosing this disease! Often, misdiagnoses are made because young hospital doctors or GP’s fail to put the symptoms together. Common misdiagnoses include pelvic inflammatory disease (PID), irritable bowel syndrome, ruptured ovarian cysts and even appendicitis. When pain is cyclical, endometriosis should at least be considered. It is not uncommon for young women who have obviously had symptoms of endometriosis for many years who have presented to several GP’s seeking a diagnosis for their symptoms. Sometimes they have

already seen one or more gynaecologists and are still yet to have a definitive diagnosis made. Endometriosis becomes a problem when young school age girls are sent to the sick room with (period) pain, when they miss school or have regular time off work with “period problems”. Later it can affect fertility and along the way can cause life to be unenjoyable. They may avoid sport and sometimes even social interaction. An early diagnosis is very important with this disease and it’s suggested that parents of young girls with symptoms of possible endometriosis present to their GP early. Game on! Local sporting hero, Bronwen Knox is taking her impressive water polo career to new heights. As she prepares to compete at the FINA World Cup later in the year, along with Tokyo Olympics in 2020, Queensland water polo player, Bronwen Knox, is treading far more than water. She is currently balancing a busy training schedule, which consists of 2-4 hours of gym sessions, 3 swim sessions and 3-4 water polo specific sessions a week, along with a fulltime job and studying a law degree full-time. With a background in swimming, it wasn’t until the Sydney Olympics in 2000 that Bronwen became interested in the sport. “My parents drove us down to attend some events. When the Women’s Australian team made the Gold Medal match, my mum and I were lucky enough to get tickets. It was the first proper game I had ever seen, and I remember thinking that this was the sport for

me,” she says. This year the Aussie Stingers are preparing for World Cup in Russia, followed by the World Championships next year in South Korea in July. “We currently only centralise our program a year out from the Olympic Games, which means in the years leading up we have a number of domestic based camps throughout our domestic season and from April to September we spend our time travelling to train against other countries and compete at other tournaments,” Bronwen says. “Obviously, my schedule is very busy and doesn’t leave me much down time. I always try to make sure that I am eating right and getting enough sleep, but I also try and carve out some time for myself each week. I’ve recently got into the ritual of post my Saturday morning

To create a vibe of wellness in your home, think about catering to all of your senses. For energy to flow and to feast the eyes, the space needs to be uncluttered, with air flow and light. This is the canvas to then layer your home with elements that you love, that are soulful for you. For me personally, this is a white base layered with natural textures, pictures of loved ones, tribal art and candles. Scent is another magical wellness element & a deeply personal one PAGE 54

at that. Burn incense, diffuse or burn oils choose a scent that uplifts and calms. Add drops of your favourite oil to your bath, on your pillow. Remember to indulge your sense of touch by bringing softness into your home. Try layering different textures - silky, velvet, cotton, handwoven goodness. Create little nooks with daybeds, occasional chairs, couches and beds layered with deliciously soft cushions and throws. Little nooks that invite you to get cosy, get comfortable and reconnect.
