"It is becoming very popular to create a table setting that is individual and exciting," Carolyn said. "We are noticing a strong trend towards colour being either very muted or bold." She said outdoor entertaining was designed to be fuss free, so to make sure you don't overcomplicate things with too many items on the table. Also, injecting fruit and flowers on the table as a centrepiece is an easy way to add colour, texture and interest to your table. "When using fruit or florals stick to one colour. Pick green apples or lemons in a silver or steel bowl. Alternatively mix a bunch of flowers using the one colour palette in different tones. It will look modern and eye catching."

CUTTING EDGE BUTCHER Butcher Pete Cabassi is beefing up the meat industry with his new concept store now open in Gourmet Fresh. We spoke with Pete about his love for beef and the respect he has for the craft of butchery. PETE Cabassi knows a thing or two about beef. “I grew up on a cattle farm and it was a natural progression for me to get into the beef industry. I’m now the third generation of beef farmers in my family,” Pete said. After studying at university, Pete began breeding and exporting high quality Wagyu beef to the finest restaurants and hotels in Singapore, China, Japan and the USA. But with a desire to carve out a niche in the Australian meat industry, Pete used his experience in global meat marketing to create a modern take on the local butcher.

Yum Cha Cuisine Indooroopilly Chef, Master Sun, has been making little parcels of deliciousness for more than 20 years and produces traditionally popular dim sum as well as unique dishes such as steamed pork rib and chicken feet with fried rice.

Of course, you don’t have to wait for your dish of choice to come to you, you can order lunch and dinner from the menu. The restaurant’s friendly team will help you navigate through numerous menu options including Pork Fillets with Sweet and Sour Sauce, Honey Chicken and Mongolian Lamb Hot Pot.

At Yum Cha Cuisine Indooroopilly expect the yum cha experience to be as indulgent as it is unique. With its energetic and lively ambience the restaurant has a very contemporary atmosphere.

Experimentation is a major ingredient of the yum cha experience so diners are encouraged to try unique dim sum dishes including steamed duck and prawn dumplings and custom salty egg custard buns.

Yum Cha, which literally means “drink tea”, is a practice of indulging in a variety of steamed and fried dim sum accompanied with many cups of Chinese tea.

Those who fancy themselves to be a master in the kitchen can try a ‘do it yourself’ yum cha recipe using various specialty Asian products and ingredients available at UFM Asian Groceries in Gourmet Fresh.

In traditional yum cha style, small savoury or sweet dishes including sticky pork buns, crispy spring rolls and steamed dumplings are served as three or four pieces in one dish. All food is made fresh daily and served to diners from a cart.

Pass around a platter of these juicy and flavoursome dumplings at your next celebration banquet, and your guests will be treated to an authentic Asian dish. INGREDIENTS

METHOD

600g raw king prawns, finely chopped

1 Combine prawns, chilli, garlic, chives, sesame oil and oyster sauce in a bowl.

1 red chilli, finely sliced 1 tbsp, finely chopped fresh chives 3 garlic cloves, crushed 1 tsp sesame oil 2 tsps oyster sauce 1 packet pastry wrappers

2 Place pastry wrappers on a clean and flat surface. Spoon 2 teaspoons of the mince mixture onto the centre of each wrapper. Then brush the edges with cold water. Fold up sides to form a round pouch. Pinch to enclose filling. Place on a tray lined with baking paper. 3 Line a steamer with baking paper and place it over simmering water. Cook dumplings, in batches, for 15 minutes or until tender and cooked through. Serve and enjoy!

Coloured Cut-out BiscuitS Alice Arndell, author of Alice in Bakingland, shares her daughter's all time favourite biscuit recipe. Simple, colourful and tasty, this fun spring recipe is a great way to get kids involved in the kitchen.

INGREDIENTS 80g butter, softened

food colouring

½ cup caster sugar

1 2/3 cups plain flour

1 egg

½ tsp baking powder

1 tsp vanilla extract

¼ tsp salt

METHOD 1 Cream butter and sugar until very pale and fluffy. Add egg and vanilla and beat well. Add food colouring and mix well (make it a couple of shades darker than you want, remembering that it will lighten up slightly when you add the flour). 2 Mix in flour, baking powder and salt until combined. Tip onto the bench and knead lightly until it forms a smooth ball. 3 Wrap in plastic wrap and chill for 1 hour. Repeat for each colour you want to make. 4 Preheat oven to 170°C and line baking trays with baking paper. 5 Roll out dough(s) to 4mm thick and use a round cookie cutter to cut out discs. Use small cookie cutters to cut shapes from the centre of each biscuit, then swap the colours around. Gently press the shapes into the biscuits. 6 Bake for 8–12 minutes or until the edges just start to colour. Cool on a wire rack. Makes approx. 20 biscuits in one colour

INNOVATIVE VISION and design The architects tasked with designing Indooroopilly Shopping Centre have challenged existing retail perceptions to create a space that has its own unique identity and character. We chat to Annie Yang of pdt architects who is part of the team behind the $450 million redevelopment of Indooroopilly Shopping Centre.

In order to break away from the traditional retail model, the Indooroopilly Shopping Centre redevelopment project was broken down into smaller precincts explains interior designer Annie. Focused on creating a meaningful public space that moves beyond the ‘box’ retail model, the Centre design includes pockets of theatrical drama in gathering and meeting zones that add a layer of fun and chic. “Different precincts and destination points within the Centre will enable customers to shop and interact and socialise with friends,” she said. “All design aspects of the Centre are defined by timeless sophistication and elegance.” The fresh food precinct, Gourmet Fresh has been created using varied materials to reflect the vibrancy and diversity of the surrounding community. Inspired by an urban market experience, this precinct creates a sense of community and intimacy while maintaining subtle linkages back to the Centre’s main refurbishment. “Open shop fronts in this precinct promote an open market shopping experience different to any other shopping experience in Brisbane,” she said. Subtle design features and careful selection of finishes such as smoked mirror ceiling inserts and gloss tiled columns create a balance between rustic industrial and sophisticated urban chic.

“All design aspects of the Centre are defined by timeless sophistication and elegance” says Annie from pdt.

“This precinct features a combination of materials and textures ranging from concrete look flooring, timber ceiling features and recycled timber. “We took advantage of the low ceiling height in this area and created a strong dominant zig zag timber ceiling feature – this layering effect provides interest and relief into the ceiling space,” she said. Annie said that finding the right balance of enriching the history of the Centre but also making it relevant to the current and future market was integral to the design. “Importantly we have retained elements in the existing Centre but modernised them by replacing and upgrading the finishes to tie in with the new design. “Customers can expect exciting new retailers and a redefined image for the Centre when the redevelopment is complete in mid-2014,” Annie concluded.
