Who doesn’t love spring in Brisbane? The weather is warmer, jacaranda trees are beginning to decorate the streets, and the city is bustling with people enjoying the sunshine – we have just the right venue for you to check out.
On the cover, we feature Michael Tassis’ new riverside seafood restaurant and bar, Fosh Portside. The fit-out is so beautiful, it’s like stepping into a property on the Hamptons, but dare we say it, even better. And the food, wow. The team were treated to some oysters and lobster on the day and they’re still raving about it. PS, what a good sport was our lovely model Coco!
Inside, we also spoke to the creative minds who are busy building and expanding our beautiful River City as part of our Building Brisbane feature. Hear how Queen’s Wharf Brisbane is tracking and get a sneak peek inside one of the city’s most luxurious residential developments, Skye by Pikos – there’s so many exciting projects happening in and around Brisbane in the lead up to the highly-anticipated Olympic Games.
We also caught up with QPAC CEO John Kotzas on page 8 – now, that’s worth a read. Until next month!
TRACY SINCLAIR EDITORIt almost feels like yesterday I was putting the final touches on my first Style mag, and now here we are 12 months down the track – what an amazing journey it has been so far!
On that note, welcome to our Spring Issue. In honour of this month’s theme, we chatted with three talented locals who are inspired by the vibrancy of the season. Inside, you’ll also find a delicious spring-inspired orecchiette recipe by pasta queen Gabrielle Simonian (aka @_noregrettispaghetti) and a spread on the best ‘fits to welcome the new season in style.
I also interviewed the masterminds behind West End’s newest haunt, Bar Francine, and Adelita Wine Bar’s Head Chef Lauren Kinne, who was one of the finalists for the Gourmet Traveller Restaurant Awards (pro tip: add the extra nob of butter!). Enjoy!
PELECAS DEPUTY EDITOREvery year, the spirit, creativity, and drama of the performing arts unfolds at Brisbane’s iconic QPAC to enrapture audiences of almost two million visitors.
At the beating heart of QPAC is CEO John Kotzas, who has infused the performing arts centre with his passion for bringing art to the masses and been instrumental in establishing QPAC as one of Australia’s most popular theatres.
Enchanted by the lustre of the theatre at an early age, John’s career saw him transition from teaching into the dazzling performing arts world.
“The arts help give us connection and a sense of belonging, which becomes part of the glue that binds us together and creates culture,” John explains.
As part of this process, QPAC is constructing a new state-of-the-art theatre which will be connected to the existing structure, turning the space into Australia’s largest and most bespoke performing arts centre. With construction set to complete in 2024, John is excited about the prospect of increasing the theatre’s capacity and continuing to showcase the incredible homegrown and international talent that QPAC hosts on a daily basis.
Explaining the vision for the new building’s design, John says, “we’re not just creating a new theatre but an instrument: what theatre-makers do is build spaces where a creative exchange between the audience and the performers can happen.”
While managing QPAC takes centre-stage in John’s day-to-day life, he enjoys finding time to visit Stradbroke Island with his family and unwind over fishing and a good read.
Meet the CEO of QPAC, who is bringing the joy of performing arts to millions of Australians with an exciting new endeavour.

Exceptional seafood, mesmerising river views, plus a Hamptons-inspired fit-out, Fosh Portside is Brisbane’s newest seafood haven.
Coco wears L’IDEE Exquisite Gown $489, Steve Madden Implicit Heel $159.95, ZARA Textured Wide Armband and Ring Set $39.95 each, ZARA Textured Earring $34.95What do you get when you put a fish restaurant in a posh setting?
Introducing Fosh Portside, the new riverside restaurant and bar set to bring a new wave of seafood and sophistication to the Brisbane dining scene. Taking prime location right on the edge of the Brisbane River, the Hamptons-inspired restaurant with sustainable and fresh seafood at the fore, is led by second generation restaurateur, Michael Tassis, who is also behind Opa Bar + Mezze, Massimo Restaurant & Bar, and Yamas Greek + Drink. The eatery dishes up everything from caviar bumps to fish finger sandwiches (crumbed fish, tartare sauce, and chives served on a fresh loaf of bread – say no more).
Michael, who grew up working in his father’s restaurant, George’s Paragon Seafood Restaurant in Sanctuary Cove, has always had a strong appreciation for exceptional seafood, so bringing Fosh to Portside Wharf was a no-brainer. However, it’s his commitment to fresh and unique Australian produce that puts this restaurant in a school of its own.
Whether you’re in the mood for a swanky banquet or prefer to pick and choose from their a la carte menu, there’s something to entice every seafood lover here. Tuck into menu items like tuna crudo doused in ezme dressing and caper berries, freshly shucked oysters, and panseared snapper, or take a peek inside their live fish tank and choose between southern rock lobster roasted in kombu butter or Queensland mud crabs baked in lemon caper butter. The Fosh team, with Head Chef Vikash Gurung at the helm, have also been experimenting with dry ageing – a Japanese technique that creates a more tender and flavourful taste to the produce. There’s also plenty of delicious nonseafood options such as spiced lamb ribs drizzled in chermoula and honey, smoked eggplant plated up with almond skordalia (a thick and creamy garlicky purée), fried shallots and herbs, as well as
black onyx rib fillet, plus an extensive cocktail and wine to list choose from.
If you’re a fan of Michael’s other superb restaurants, then you’re going to love this fit-out. Fosh is like stepping into a property in the Hamptons, but dare we say it, even better. The light and airy space includes a generouslysized indoor area, an open kitchen plan, and elegant bar that opens out to an alfresco area lined with beautiful olive trees – and as you can imagine, the sweeping views over the Brisbane River are just unbelievable come late afternoon. Not to mention, the refined space also features stunning archways, floor-to-ceiling curtains, and one-of-a-kind artwork (the tinned sardine’s piece is phenomenal!).
For those seeking a more relaxed dining experience, though one that still heralds the same sustainability and ‘fresh off the trawler’ produce, Fosh also features FoshTails, a casual fish and chippery serving up all the classics (aka seafood platters, burgers, and potato scallops) with some new, elevated favourites like their coconut crumbed snapper. The space is fitted out with picnic tables and umbrellas, making it the perfect laid-back setting for a family lunch or an afternoon summer soirée (plus, it’s also pet-friendly!).
For those who are partial to a party, the Fosh team also offer a variety of fun-filled event packages for you to choose from. Whether your event is seated or cocktail-style, Fosh’s expansive riverside location makes it the perfect venue for your next gathering – all the information is readily available on their website. There’s no surpassing a restaurant that offers fresh and sustainable fare, service designed to exceed expectations, and a front row vista to our beautiful River City. For those in the know, we guarantee that Fosh Portside is the next big thing in riverfront dining for Brisbane.
Spring is officially here and while florals for spring may not exactly be a groundbreaking idea, it’s a special symbol representing a season full of beauty and new beginnings. We’re constantly inspired by the vibrance of spring and so are many incredible creatives across Brisbane. So, to celebrate the beginning of our favourite season, we chatted with three talented locals who are also inspired by spring florals.
By LAUREN PAYNE Emma Jaroslawski Owner, Kohana CakeryCarefully designed, aesthetically pleasing, and incredibly delicious are just some of the ways we would describe the decadent treats developed by Kohana Cakery.
Emma Jaroslawski, the owner and head baker, grew up baking and says it was always something she looked forward to doing on the weekends.
Now, not only does she still enjoy expanding her baking skills, but she says that baking has become an artistic outlet for her – as well as an incredibly successful side-hustle.
“Working as a speech pathologist, my work can be quite clinical (although I work with kids), so baking has also provided me with a creative outlet which is very different to my day job,” Emma explains.
“The leap into beautiful cakes actually started off with creating event cakes for friends and family events, [then] I decided to put myself out there, and I am so grateful for what my passion has evolved into.”
Emma’s baking process heavily focuses on the finer details of cake design. This, alongside
quality ingredients, a passion for the art of baking, and a desire to create an experience for her customers and not just a scrumptious cake, is what sets Kohana Cakery’s signature cake menu apart.
So much time and energy is invested into design research and recipe development, which can involve Emma scrolling Pinterest, combining existing cake elements to create a whole new design, experimenting until inspiration strikes, or simply following her instincts.
“I don’t just look for cakes though,” Emma explains. “I am often inspired by patterns, art, and recently, intricate embroidery borders which hold so many beautifully delicate details.”
When exploring Kohana Cakery’s signature menu, you may find that Emma has a strong affinity for edible flowers, an ingredient she says she really loves working with.
“I really enjoy working with fresh and pressed flowers and appreciate the flexibility that they require you to have as flowers are seasonal,” she explains.

Nestled on the edge of New Farm and Fortitude Valley, Avalon Florals is more than just your average florist. Yes, they’ll help you fill your home with fresh blooms and can create an incredible bridal bouquet, but their designs are nothing like you’ve ever seen before.
Founder and Head Florist Dehlia Nelms creates contemporary floral designs that embody both a cheekiness and elegance that perfectly aligns with Brisbane’s thriving art scene, as well as the iconic television show that encouraged her to pursue floristry in the first place.
“I found my way into floristry through my dad, him being a landscaper and horticulturalist and always being in the garden,” Dehlia explains.
Dehlia draws inspiration for Avalon Florals’
arrangements from local, seasonal blooms and tries not to follow trends, so she’s able to explore modern styles of floristry that allow her to play with colour and texture.
“I was underwhelmed by the style of floristry I was taught in my early years, and was inspired by the more experimental florists in Sydney – how much they were changing the industry in terms of what they sold, and how they arranged flowers, making it feel more modern and interesting,” Dehlia recalls.
“My go-to style is more sculptural, but I find my work can be a little wild in the spring, purely because of the flower varieties that are around like poppies, ranunculus, anemones, and flannel flowers – just to name a few!”
Claire Ritchie says she’s been creating art for as long as she can remember.
“My journey stems from wanting to know how things work, how they go together, and I see creating artworks as [a form of] problem solving,” Claire explains. “In some ways, my love of creating art is connected to how I process thoughts, feelings, and challenges.”
Claire’s work is incredibly vibrant, and tends to include illustrations of beautiful blooms which she says inspires her greatly.
“Flowers have always been a shape I have leant on. I have an affinity toward flowers and the many different shapes and sizes that they grow into.”
When it comes to her inspiration however, Claire says she tends to explore her inner world before exploring the outer world.
“My inspiration always comes from how I am feeling and thoughts that I may be musing on. I like to start drawing intuitively and then lean on my natural
surroundings to explore my work further.”
Alongside her artwork, Claire has ventured into other mediums, placing her work on greeting cards, pillows, kitchenware, and fashion accessories, which she says has become a great way to explore new ways to share her art.
“It’s always fun to see how your artwork translates onto a product or object that’s not a screen or flat,” Claire says.
As flowers are a running theme within Claire’s work, when it comes to the spring season, she says it brings with it a chance to move forward and see things from a fresh perspective.
“Visually, there are new colours and a vibrancy and freshness to the gardens and vegetation around me that is quite enticing,” she explains. “This injects new energy into my work, much like our life around us when a new season starts.”
In an ode to Monet’s Water Lilies, feel the fresh breeze this spring in soft, billowing pieces that evoke the sense of new life. Crisp and clean, favour tones of sage green, blue, beige, and cream for an effortlessly elegant season ahead.

Queensland’s premier fashion event, Brisbane Fashion Festival has come and gone for another year, and what a week it was. The prestigious event, which took over Brisvegas for five days of fashion, frivolity, and fun, showcased everyone from leading industry names like Bianca Spender and Carla Zampatti to homegrown favourites like Mannzilo, Gina Kim, JOAEN, and JOTEO – we can’t wait for next year!
Meet the woman behind those glamorous oversized glasses: Suzanne Brooks (aka The Aussie Iris). In her eyes, less does not necessarily mean more. Let’s see what this fashionista is loving at the moment…
By KATE MCGRATH BURGESS1 . The first thing on my fashion bucket list would be to own a Schiaparelli Dove Brooch.
2 . The makeup essential for me is a creamy but smudge-proof black eyeliner. The best I have tried is Eye of Horus.
3 . My three favourite fashion brands are Dior for their accessories, Comme des Garçons, and Magnolia Pearl for their use of fabrics and textiles.
4 . My signature scent is Creed Spring Flower, developed for none other than Audrey Hepburn.
5 . My fashion muse is Iris Apfel.
6. My go-to shoes are Clergerie Paris.
Your bob (or lob) can’t live without these essentials.
By TEAGAN WITHEROWShimmer shine not only makes your hair smell divine but will also give it the extra gloss it deserves.
5.
We’ve officially entered the era of bobs and lobs – from French girl bobs and A-line lobs to tousled bobs and deadstraight lobs – this hairstyle has been spotted on numerous celebs and we’re loving it.
Contrary to common belief, maintaining short hair is actually harder than managing long hair purely because you do need to style it more. So, if you’re rocking a bob or lob than you need to have a collection of appropriate products at your disposal (better yet, proudly Australian products).
7.
Create a protective shield against humidity and heat damage with hair primer.
Volumising spray is your ally in adding depth and dimension to your hair when it can’t be achieved through length.
Here’s how to make your own signature scent.
By TEAGAN WITHEROW• Glass or beaker
• Pipettes
• Jojoba oil
Finding your signature scent is like meeting your one true love in fragrance form – so it kind of makes sense why it’s so hard to do. But what if we said you could make your ideal love from scratch, the dreamy scent, the look, the whole package? To be clear we’re talking about fragrance now and the answer is, yes, yes you can. The secret? Take matters into your own hands and make it yourself. All you have to do is find out what the key notes of your fave fragrances are and combine them to create one you’ll love.
We recruited the National Education Director of Agence de Parfum, Michael Marzano, for some expert advice.
• 3 x essential oils of your choice (1 top note, 1 middle note, and 1 base note)
• Spill sticks
• Rollerball or fragrance bottle
1. Add 70 drops of jojoba oil into a glass or beaker
2. Add 7 drops of your top note
3. Add 7 drops of your middle note
4. Add 12 drops of your base note
5. Stir the formula with your spill stick
6. Pour your formula into your rollerball or fragrance bottle and store in a cool dark place.
“Best notes for spring include fresh white floral notes, fruity notes, and ozonic/aquatic notes.”
– Michael Marzano
From property developers to architects, landscapers, and interior designers, let us introduce you to the innovative and creative minds who are busy building and expanding the beautiful city we call home.
These interior-obsessed sisters-in-law are passionate about sourcing one-of-a-kind, antique pieces for your home.
Eastwood Styling is the brainchild of sisters-in-law, Nadia Lennon and Fiona Walker, who both share a love for all things interiors and styling. The duo saw a gap in the market for affordable, well-made ‘forever’ furniture, and voila, Eastwood Styling was born.
Nadia and Fiona sourced their first container of furniture almost two years ago and have since branched out into smaller homewares, as well as keeping with their signature range of elm furniture projects (the duo specialise in sourcing recycled antique elm furniture from China). They also offer a styling service and can style everything from your baby shower to new furniture in your home.
“We love that our furniture isn’t mass-produced by machinery in a giant factory – each piece is crafted, painted, and curated by hand,” Fiona says.
“We feel that it’s not merely about making a statement today; it’s about crafting pieces that continue to captivate and cocoon your space with comfort two decades down the road. And thus, our selection of products are a deliberate curation,” Nadia adds.
Pieces you can find on their online store include everything from drawer buffets, bedside tables, and side tables to floor cushions and vases. Our favourite part? No two pieces are the same.
Rather browse in person? The Eastwood Styling team are always happy to have their clients come and view their furniture in person at a pre-arranged time in their showroom.
EASTWOOD STYLING @EASTWOODSTYLING EASTWOODSTYLING.COM.AUA new level of luxurious inner urban living is coming to Brisbane.
There’s a lot of exciting developments happening in and around Brisbane in the lead up to the highly-anticipated Olympic Games, and we’ve been given a sneakpeek at one of the city’s most luxurious residential developments… introducing, Skye by Pikos.
Architecturally designed by the famous Conrad Gargett (some of their other credentials include the Thomas Dixon Centre in West End and Aalto on the Gold Coast), Skye by Pikos will offer a new level of inner urban living in Brisbane. Situated on the ever-so captivating Kangaroo Point Cliffs, the development, which is set to open in 2025,
will include 13 levels and 68 residences made up of three-bedroom apartments and penthouses starting at $2.7million. Our favourite part? The development will also feature an awe-inspiring sky deck, infinity sky view pool, and a rooftop leisure and regeneration deck.
Founder Pedro Pikos says a lot of thought and planning has gone into this residential project and he’s looking forward to seeing it completed.
“We believe Skye by Pikos will offer a new level of luxurious living, one of lasting longevity to stand the test of time,” he says. “Our approach was one of thoughtful planning, design, quality material selection, and detailing. What we are left with is an incredibly liveable and sophisticated residential project with uninterrupted captivating views.”
Meanwhile, Interior Designer Julie Williamson, adds, “the apartments are generously sized with outdoor spaces flowing seamlessly from the living areas. Master bedrooms are private sanctuaries of retreat, with floor-to-ceiling robes and ensuites wrapped in natural stone.”
As for the design elements, Julie says she’s taken inspiration from nature and Brisbane itself.
“Travertine, selected for its timeless aesthetic, is featured generously throughout. The veining of this natural stone mimics the movement of the Brisbane River and when combined with timber, it creates a palette of warmth, texture, and luxury.”
“The muted and soft scheme is balanced with natural materials that are rich in tactility, including timber floorboards, timber veneer, and natural stone. One feels instantly grounded and connected to nature, which we believe to be important when living in an elevated apartment.”
We can’t wait to see this one completed –stay tuned!
SKYE BY PIKOS 8 RIVER TERRACE, KANGAROO POINT @SKYEBYPIKOS SKYEBYPIKOS.COM.AUWe speak to two industry leaders responsible for bringing Queen’s Wharf Brisbane to fruition.
As The Star Brisbane’s senior design manager, Katerina Primikiri is responsible for all leading aspects of design for Brisbane’s newest entertainment and leisure destination.
Positioned at the heart of the Queen’s Wharf Brisbane precinct, The Star Brisbane will deliver four future luxury hotels as well as a myriad of new restaurants, bars, and entertainment experiences.
Due to the project’s large scale, Katerina’s day-to-day tasks vary immensely and can include everything from overseeing external architectural details to choosing soap dishes. However, her favourite aspect of the role has been ensuring the overall design reflects and incorporates our beautiful surrounds here in Brisbane.
“From extraordinary calacatta viola marble that mimics the ripples of the Brisbane River to bespoke botanical artwork reminiscent of the resort’s subtropical surrounds, every detail has been thoughtfully curated to ensure guests experience the ultimate highend luxury escape,” she says.
Having grown up in Greece and studied architecture in Germany, Katerina has been exposed to many different cultures and
trends that co-exist, which she believes has influenced her work. Nature is also her go-to when it comes to seeking new ideas and concepts.
“No matter how complex something may look, nature has always got something to offer, from structure and shapes to colours and patterns,” she says.
So, what else can we expect from the development? “As we prepare to open our doors next year, locals and visitors can expect exciting restaurants and bars, worldclass shopping, and luxurious hotels,” she says. “Not to mention stunning rooftop venues with spectacular views.”
“I feel privileged to work on a project like Queen’s Wharf Brisbane, which will transform Brisbane as we know it when it opens in 2024. I am very much looking forward to seeing our guests experience all that The Star and this incredible precinct has to offer.”
THE STAR BRISBANE STARBRISBANE.COM.AUIn late 2015, Destination Brisbane Consortium (a joint venture led by The Star Entertainment Group and their Hong Kong-based partners Far East Consortium and Chow Tai Fook Enterprises) won the right to redevelop the historic yet underutilised Queen’s Wharf Brisbane. Now, only eight months away from completion and it’s shaping up to be one of the most iconic developments our River City has ever seen.
Project Director Simon Crooks, who has worked across a number of leading projects, including major hospital developments and a nuclear power plant, is responsible for bringing this world-class development to life and has been the driving force behind the success so far.
“I think it’s another major step forward in our growth as an amazing modern city for our times,” Simon says. “It started with South Bank post Expo 88 and the last 10 years has seen the delivery of incredible projects, such as Howard Smith Wharves and the James Street precinct. Now we have Queen’s Wharf and the 2032 Olympics and Paralympic Games on the horizon – what a time to be in Brisbane and South East Queensland!”
His daily routine consists of everything from planning and approvals to tendering and looking after key stakeholders.
“My role is primarily to support other people in their allocated responsibilities,” he says. “I then have to allocate time to manage the reactive components of the role, and most importantly, give myself space to look ahead and plan for the medium- and long-term targets.”
While he’s looking forward to the many aspects of the precinct (aka the amazing Sky Deck and The Terrace, which will be lined with
restaurants and retailers), he says seeing locals and tourists enjoying the space will give him the most joy.
“To stand here now and see all that the team has achieved and what’s to come in the next 12 months, is incredibly rewarding.”
“There is more to come after we open, so watch this space.”

By NATALIE MCGOWANWhile tomatoes can be grown year-round in Queensland, winter and spring is prime time for growing and nothing marks the arrival of warmer temperatures quite like tomatoes. This dish is a perfect example of simple cooking and relies heavily on good-quality produce. It’s perfect for sunny lunches in the garden.”
Serves 4
You’ll need:
400g orecchiette
Extra virgin olive oil
3-4 garlic cloves, lightly crushed, but kept whole
A few handfuls of fresh basil leaves removed from stems (plus a few more leaves to serve)
Method:
1kg mixed, fresh, whole tomatoes, preferably small and a similar size to the orecchiette
1 tsp sugar (if needed)
1 ball of buffalo mozzarella
Any hot tips for making a delicious pasta sauce?
Always add lots of that starchy pasta water, it is magic!
What’s your signature recipe?
Carbonara – the proper kind. Eggs, guanciale, black pepper, and pecorino romano only. I always make carbonara con la fiamma (with fire), the resulting sauce is perfectly emulsified and the eggs are cooked through. Not the easiest method, but the results are incomparable.
Best meal you’ve ever eaten?
I’m fortunate to have eaten a lot of really fantastic food, so this question is impossible to answer definitively! Most recently I enjoyed a spectacular meal at Ogee in Hobart, Tasmania. The beef tartare with pommes dauphine was iconic.
Favourite pasta shape?
Heat a few tablespoons of olive oil in a large pan and add the garlic cloves. Make sure not to burn the garlic, but let it gently cook in the oil and impart some flavour. Remove the garlic from the pan.
Add a handful of basil leaves directly to the oil to let them sizzle for a moment before adding the fresh, whole tomatoes.
Cover the pan and turn the heat down to the lowest setting and let the tomatoes cook down for about 30 minutes. Stir every so often until they’ve burst, and you have a sauce with some tomatoes still intact for texture. Add salt and pepper to taste. If the tomatoes are quite tart, add the sugar.
Cook the orecchiette in generously salted water until al dente. Add directly to the tomato sauce and toss and swirl to marry the pasta with the sauce.
I like to serve this family style – adorned with torn mozzarella, a drizzle of olive oil, and plenty of fresh basil.
This is such a hard question as I love so many shapes for so many different reasons. But if I had to choose a shape I would happily eat with any sauce, time and time again, it would have to be spaghettoni – or any spaghetti variety for that matter! A classic shape for very good reason.
Go-to meal when you’re short on time?
Anchovy butter pasta with fresh parsley and pangrattato. I usually keep pangrattato on hand in the pantry when I’ve made a batch, which speeds this up. Brown butter with anchovies that break down into the sauce, toss through al dente pasta, add fresh parsley, and garnish with breadcrumbs. Incredibly fast and equally satisfying.
Having only recently moved to Brisbane’s bayside, I was pleased to learn one of the finalists for the Gourmet Traveller Restaurant Awards heads up my new local, Adelita Wine Bar. Boasting a menu of modern Australian fare, this chic wine and tapas bar is quickly becoming bayside’s hot new spot, and it’s all thanks to their Head Chef Lauren Kinne. I caught up with the Tassie-born chef to learn more about her cooking style, what inspired Adelita’s current menu, and how her love affair with food began…
Hi Lauren, thanks for chatting with us and congratulations on being a finalist in the Best New Talent category for Gourmet Traveller’s Annual Restaurant Awards, how does it feel? It feels a little unbelievable. It’s amazing to see that your hard work is paying off.
To start, I’d love to know how your love affair with food began…
My love for all things food started as a child cooking with my mum and hosting dinner parties at our family home. Something I still love to do to this day.
How would you define your cooking style?
Wholesome with a creative flare. My dishes always have a lot of work behind them to really enhance the beautiful produce I get to work with every day.
What do you love about Adelita Wine Bar?
It’s great being able to give people a nice place to eat out in the suburbs.
Can you tell me a little bit about the current menu and do you have a favourite dish?
My sous chef and I both have fine dining experience, so it’s all about creating dishes that have layers of complexity while using ingredients that we know and love. Australian bush tucker is also something else I love to put on the menu in different ways. My favourite menu item is probably our kingfish with torched prawns, prawn head oil, ginger, chilli kombucha, pickled kohlrabi, and herb oil.
What have been some of your career highlights? Winning Apprentice of the Year down in Tasmania and coming second in Queensland Chef of the Year last year. And, of course, most recently being nominated for Best New Talent. Also, helping Nathan and Freja [Dunnell] open Elska in 2020 and winning number one restaurant in Queensland for 2022.
I read that you cooked a marinara for the late Anthony Bourdain, what was that experience like?
Pretty nerve-racking! My head chef at the time looked at me and said don’t ‘f***’ this up’. I said, ‘yes chef’ and afterwards he asked for the recipe. Pretty crazy!
What other local eateries do you love? Exhibition – the service and the level of food is fantastic, and Bar Francine makes me feel like I’m in Tassie!
A day on your plate… what do you like to eat? Like a lot of chefs, we don’t have much time in the day to eat and we are usually busy tasting sauces in dishes all day. When I get home, I like to cook something quick and easy, either a salad or pasta, or both haha!
What’s the best piece of advice you’ve ever been given?
“Whenever you feel stressed or something isn’t working, clean and organise.”
Favourite dish to make?
Cooking some beef over the fire – it’s just so tasty!
Two ingredients you can’t live without… Butter and salt! You can’t go wrong.
Share an unusual food pairing you love…
I wouldn’t say it’s weird, but I love jamón ibérico with fermented or pickled peach.
Number one tip for our readers at home…
Add the extra nob of butter and buy the fatty wagyu.

A cosy suburban eatery boasting mouth-watering French bites and all-round good vibes.
Perched on the corner of Waterworks Road and Enoggera Terrace in Red Hill, Le Coin Bistro is the perfect location for a relaxed breakfast, lunch, or dinner. Blurring the lines between fine and casual dining, the menu draws inspiration from the flavours of Southern France (think freshly shucked oysters, sizzling hot snails, and crème brûlée), and we were lucky enough to sample a few dishes from their new spring menu, which centres around sharing. (PSA, Le Coin is also introducing bottomless brunches on Sundays, and yes, there will be an oyster bar too!).
Now in its third year of business, Le Coin, which is run by Arvid Noack (who’s also behind Haig Rd Bistro in Auchenflower), is already leading the way in the casual eatery scene. So much so, the restaurant, which is broken up into three food offerings – an alfresco dining space on the ground floor, a private dining area upstairs, and bar – was recently awarded Best Café/Dining Venue and Best Casual Dining Venue across South East Queensland in the Restaurant and Catering Hostplus Awards for Excellence. Here’s what we ate…
To start, we were served four mouth-watering entrees; Tarte Flambée (a pizza-like dish – we tried onion, bacon, and gruyere cheese and salmon and rocket varieties), Huîtres (fresh oysters French-style anyone?), Escargot, and Pâté Maison (duck liver parfait).
The next dish, Poisson En Papillotes, was one of our favourites. It consisted of wild Queensland barramundi oven baked in a paper bag with potatoes and vegetables – the fish was cooked so perfectly that it melted in your mouth. We also
sampled a dish named Canard Rôti, which was made up of oven-roasted duck, braised red cabbage, spaetzle (a type of pasta), cranberries, and port wine jus – it was the perfect balance of salty and sweet.
And it wouldn’t be a visit to Le Coin without tucking into either their decadent Crème Brûlée or Crêpes Suzette (flamed crepe with Grand Marnier sauce and ice cream).
Fancy a drink? There’s also an extensive wine list featuring some delish French wines; however, they also offer BYO for just $17 a bottle. Le Coin Bistro is open Friday-Sunday for breakfast, Tuesday-Sunday for lunch, and Tuesday-Saturday for dinner – bon appétit!

Focusing on getting outer order ensures more inner calm. The start of spring is an excellent time to reflect upon how you’re travelling and adjust behaviours and plans. Do this by tidying your home and garden, the office, car or tick off things on your to-do list, and compare how much your life resembles your visionboard. In light of how healthy and happy you are, and what is important to you, revisit your big picture. This means considering your strengths, identifying passions, developing practical plans, and accessing supportive friends and coaches.
We all have intentions to do extraordinary things, however, if your chosen behaviours are not delivering the desired outcomes, you need to tweak your choices. Everyone has goals to have a great relationship, a rewarding job, and a good life, but only some people have routines to increase the likelihood of these goals materialising. Goals are for dreamers; routines are for winners!

Leg cramps are a common symptom of varicose veins. These sudden involuntary muscle contractions can occur for a few seconds or even last a couple of minutes and can be quite painful. Some patients suffer with them during their working day or others in the night time when in bed.
One reason for cramps occurring for people with varicose veins is because the valves inside the veins are incompetent, which allows blood to pool in the leg rather than circulating as it should. The excess blood causes the vein to become enlarged, putting pressure on the nerves and muscles in your legs. This resulting swelling can cause inflammation which triggers spasms or cramps.
Fortunately, treatment of varicose veins is often very successful in stopping the return of cramps or restless legs. If treatment is not an option, there are other things you can do to reduce the severity and occurrence by elevating your legs and avoiding prolonged standing and sitting during the day. Regular exercise such as swimming, walking, cycling, or yoga is encouraged as it can help strengthen and stretch out your leg muscles, helping pump blood back to the heart.
Symbolising wisdom and positivity, sapphires are now the gemstone of choice for many jewellery enthusiasts – in fact, soon-to-be brides are opting for sapphires over diamonds or, in some cases, incorporating both, because why not!
While blue is the most popular and well-known colour in sapphires, they also come in a wide variety of colours, such as pink, orange, yellow, purple, black, and green (they even come colourless!).
Oh, and did we mention they are the official gemstone of September?
Here are some fun facts you may find interesting:
• Dark blue sapphires are a symbol of royalty
• The gemstone was once believed to protect wearers from ‘evil’
• Princess Diana’s sapphire engagement ring is one of the most famous jewellery pieces in history. The ring is now worn by Princess Catherine, and we’re totally obsessed with it
• Lastly, some sapphires change from blue to violet-purple in different lighting.

Whenever I think of spring, the Spring Racing Carnival is top of mind. So, let’s get prepared!
The racing season is all about playing with colour – that’s right, you won’t find any muted greys or stark blacks here. Some of my favourite colours to work with include robin egg blue, lavender, and teal.
For those of you who like to make a fashion statement, experimenting with shades of blue, such as electric and cobalt, is one way to stand out. Blood orange is also an impactful colour and adds some style to women’s fascinators and men’s pocket squares.
Love a bit of pastel
pink? This delicate and versatile colour is perfect for jacketing and accessorising. While greens like lime and emerald, aka the colour of new beginnings, work well in ties, lapels, and silk scarves.
And while wool is a popular choice for suiting, I’d recommend opting for linen – it’s lightweight and offers a new wave of sophistication. So, what are you waiting for? Be unapologetic in celebrating spring’s arrival.
Get ready to experience a whole new level of visual excellence and creativity this spring. This season is the perfect opportunity to introduce tones that bring a sense of joy and optimism. For example, feel-good colours such as sunset tangerine, ultramarine blue, sage green, and a dependable buttery lemon.

Brisbane’s biggest music event, Bigsound, is officially back for 2023! From Tuesday 5 to Friday 8 September the Judith Wright Centre will host some of the biggest names in the music industry by day, while numerous venues across Fortitude Valley will feature performances by some of the most innovative artists in Australian music today. So, we thought we’d sit down with three of them to learn more about the impact Bigsound has had on them and their musical journey.
By LAUREN PAYNEIf 1tbsp seems familiar, it’s probably because Maxwell Byrne, the artist behind the dance project, is one of the busiest musicians in Brisbane.
Not only does he perform as 1tbsp, but he also writes and produces lo-fi electronic music as Golden Vessel, received a Grammy nomination earlier this year for his engineering work on BAYNK’s album Adolescence, co-runs a record label called Sumoclic, and produces music for a variety of other local artists including FELIVAND, Mallrat, and Cub Sport.
Maxwell has seen the Brisbane music industry evolve over the last few years and says it feels like there are a lot of people within it who want to see it grow, especially when it comes to music production.
“In the last couple of years, we’ve been gifted Quivr by owners Hollee & Dara, which is a DJ space and school that has really expanded the electronic dance scene here,” Maxwell says.
“There’s also a lot of little collectives always working hard to put on events, and they always feel very accessible.”
Maxwell has had great experiences at Bigsound in the past and is looking forward to experiencing it through a new lens in 2023.
“I’ve done a couple of Bigsound’s as my other project Golden Vessel and they were really pivotal for me. I signed my first booking agents and record deal from meetings at the conference,” Maxwell recalls.
“I’m playing again as 1tbsp this year, but I’m also sort of approaching it more as an industry person since starting my own label Sumoclic, so it’s been fun to scour who’s playing and hopefully organise some of my own meetings.”
CATCH MAXWELL PERFORMING AS 1TBSP AT THE BRIGHTSIDE OUTDOORS ON TUESDAY 5 SEPTEMBER AND AT LA LA LAND ON WEDNESDAY 6 SEPTEMBER.
FELONY is very aware of how the world depicts her generation. Being only 17 years old, her music aims to translate the language of her age group for the rest of the world through angsty pop melodies.
“Teenage rebellion is both confusing and exciting,” she explains. “We live in a weird time and there’s heaps to be said from and about my generation. Ultimately, you’re unsure whether to innocently bounce along [to my music], or embrace your inner anarchist, and that’s the whole point.”
FELONY, who used to perform under her real name Layla, has found a strong sense of community within the Brisbane music scene and says the friendships she’s made with other artists have helped her feel less alone, as they understand the ups and downs that come with being a working musician.
“The large majority of people are so kind and supportive of each other and always willing to put creative minds together to create insane art,” she explains.
“Connection is why we make music so having a community makes everything heaps easier.”
This year marks FELONY’s Bigsound debut, which she says she’s very excited for. Not just because she loves performing with her band, but also because of the wealth of opportunity a performance at Bigsound tends to present to new artists.
“Bigsound is such an insane opportunity for the scene to all come together and expand,” she says.
“For young artists like myself, it can be a really rare and life-changing experience.”
The Brisbane music community is incredibly special. Not only is it filled with incredible artists spanning a variety of genres, but it also stretches beyond the city limits and down to the sunny Gold Coast, where artist Beckah Amani has found a supportive space.
“There’s so much to love about the Brisbane and Gold Coast music scene!” she explains.
“My favourite things are how close the music community is and how supportive and encouraging everyone is.”
Beckah released her debut EP April in 2022 and her thought-provoking lyrics, genre-bending melodies, and knack for storytelling quickly caught the attention of the wider Australian music industry.
This year, Beckah is making her Bigsound debut, walking the path that many other innovative artists have walked before.
“I think Bigsound is such an important event in the Australian music industry because it’s such an amazing celebration of up-and-coming artists,” Beckah says.
“It’s also such a fun time for artists to connect with other artists who are in the same boat as them.”
Community connection is something Beckah treasures and she says that over the next few years she sees the Brisbane and Gold Coast music scene expanding in exciting ways.
“I definitely think in the next few years the scene will become even more diverse than it currently is – not only in terms of artists coming into the scene, but also the genres that break into the scene as well.”
This spring we’re embracing the wonderfully weird and unconventional, starting with our home decor. Not only do these statement vases make bizarrely beautiful homes for your fresh blooms, but they also double as sculptures should you decide to leave the flowers outside!
By NATALIE MCGOWANMilton & King are reinventing the wheel (or should we say the wall?).
Just like fashion trends, interior trends also come and go, and the quirky wallpaper trend is well and truly making a big comeback.
But it’s probably not how you would remember it. Gone are the days of spending hours installing finicky wallpaper. These days, it’s actually a pretty straightforward process, Milton & King Co-Founder Bryce Capp explains.
“Wallpaper is undoubtedly seeing a renaissance, especially in Australia, even though its popularity never truly waned in regions like the US and Europe,” Bryce says.
Milton & King, who are based in Toowoomba, also have a facility in Dallas, Texas, with an exciting new operation set to launch in the Netherlands in the upcoming months.
“The resurgence can be attributed to several factors, such as product evolution, ease of use, and changing design trends.”
You didn’t really think wallpaper was going out of style, did you? Bryce, who started the luxury wallpapering business with his brother Richard in 2008 says, “with the right tools and a touch of patience, the process is straightforward.”
Milton & King also provide detailed hanging instructions with every wallpaper order and offer an instructional video (let that dreaded paste-the-paper memory be gone!).
The founding duo has also seen the monotony of allwhite interiors decline, making way for interiors that breathe more energy and life into a space. And what better way to do so than with wallpaper imbued with texture, colour, and an overall sense of depth and warmth?
As it turns out, playing with colours and layers in design is far more popular than those understated minimalist designs from the 2010s. But Milton & King already knew that – their wallpapers present an exciting opportunity to try something new for those looking to transform their space.
Luckily, Milton & King wallpapers are all about enhancing even the most ordinary of spaces – their meticulously crafted pieces are sure to inspire customers to express their individuality through their own sense of style and creativity. Let the comeback begin!
Planning a trip to beautiful Capri? From luxury beach clubs to boat tours, here’s how to explore this picturesque island like a seasoned traveller.
By BAYLEE GANTERCapri is famous for its glamorous shopping, striking landscape, and extravagant hotels, with tourists from all over the globe choosing to spend their summers on this exceptionally beautiful island. Though with so much to do and see, it’s hard to decide how to spend your time.
I recently travelled to the picturesque
island for the second time, so here are some of my top recommendations…
When it comes to beach clubs in Capri, you are spoilt for choice. You can’t go wrong spending a day laying on lavish beach beds, while enjoying a spritz in the sun. The famous La Fontelina may be stunning, but due to its secluded location, I found it quite difficult to get to. Instead, I chose to visit Torre Saracena Beach Club in Marina Piccola. This hidden gem is in a central location while still offering everything that comes to mind when you think ‘luxury beach club’. Not to mention, the colourful umbrellas make for a great Instagram pic.
Nothing beats sailing under the famous Faraglinoi (aka, the iconic Blue Grotto) and swimming in the magnificent Mediterranean Sea, so for me, renting a boat was a must. The majority of boat rentals can also be found in Marina Piccola, where you can choose between hiring a skipper for the day or daring to navigate the shores of the island yourself. Although exploring solo can be an exciting experience, after trying both options, I’d recommend organising a skipper. These experienced captains will give you a tour of all the must-see spots on the island, as well as some secret local favourites.
I’d also recommend ending every day by dining in the Piazza Umberto I. The impressive city centre offers a variety of restaurants and bars, all with a breathtaking view of the unbeatable Capri sunset (I’m still dreaming about Ristorante Da Giorgio’s delicious margherita pizza!).
Buon viaggio!
Often overshadowed by its better-known neighbour Croatia, Montenegro might just take the cake for one of the most beautiful countries in the Balkans and best destinations for an authentic, European holiday. Breathtakingly beautiful and rich in history, Montenegro is a road less travelled – think Croatia, but less crowded, cheaper, and maybe even more stunning.
Nestled in between Croatia and Serbia, Montenegro shares the cultural similarities of the two countries with language and cuisine alike. This makes it a local hotspot from surrounding countries, meaning you’re guaranteed a true Balkan experience. Dotted with pebbled beaches, lively beach clubs, and historical sites, Montenegro deserves a spot on your 2024 Euro summer itinerary. Here are some recommendations on how you can best explore this hidden gem.
Kotor, aka the crowning jewel of Montenegro, offers a true mountain escape. A fortified town tucked in the Bay of Kotor, this medieval town offers both historical charm and modern vibrancy. Spend your days sunbaking under the shade of the Montenegrin mountains peaks at Kotor Beach and getting lost within the maze of the charming town walls. A mustdo is to trek up to Kotor Fortress where you will get unmatched views of the town below (and the very best Insta snaps!). Trust me, it’s worth the stairs!
A short 40-minute drive south east of Kotor, you’ll find the buzzing beachside town of Budva. A hotspot, Budva’s beaches are jam-packed with local tourists. To avoid the crowds, I vied for pricier beach clubs such as Ploe Beach and Torch Beach Club, where you will get the classic European beach club experience – my favourite way to spend my days under the Budva sun. Dubbed as the party capital of Montenegro, Budva offers some of the best nightlife in Europe. Whether you’re into nightclubs or something a little more lowkey, this town offers both electric clubs and vibrant bars to spend your evenings.
1. ‘Montenegro’ translates to ‘black mountain’
2. The Bay of Kotor is the southernmost fjord in the world
3. The oldest tree in Europe lives in Bar, Montenegro (over 2,000 years old)
4. Kotor has an ancient fascination with cats and its residents care for them as if they were their own
5. Montenegro is located in four climatic zones.
Meet Alex Daffara, the creative mastermind behind unique homewares brand, Studio Daffa. From spaghetti Bolognese clocks to cheese-shaped tissue boxes, Alex reimagines everyday household items, turning the mundane into whimsical works of art.
Travel, books, and op shops. I honestly love seeing the old whacky homewares in people’s thrift hauls or in estate sale vlogs.
The best feeling ever. Watching my friend try to squeeze a double mattress into a one-man tent at Splendour in the Grass.
Once sentence to introduce yourself:
Hi! My name is Alex, I grew up by the beach and now live in the city where I’m a graphic designer and also run Studio Daffa.
Song on high rotation?
Rush by Troye Sivan.
What’s the last thing you binge watched?
The Bear season two!
Go-to Aussie designer?
You will almost always catch me wearing something from Double Rainbouu or Emma Mulholland on Holiday.
Instant pick-me up?
First three I can think of: hugging my dog, fresh bag of crisps, and homemade pasta.
Aside from a Euro summer sipping limoncello, I’d love to go back to Japan and explore some more.
On a Sunday, you’ll find me...
There’s a good chance I’ll be in the pottery studio making something. If I’m not getting my hands dirty creating something, I’ll be relaxing at home or out with friends.
Can’t put down read?
I’ve got to admit... you will rarely find me reading. I love a good coffee table book though.
Who or what is your biggest influence?
My family for sure, they inspire me all the time. They all have their own projects they are working towards (from full-time artist to working as an actor) and it creates such a supportive and encouraging environment.
What are you most proud of?
Definitely Studio Daf fa. It’s not easy starting a homewares business from scratch, but I love it and can’t wait to see it grow.
Euro eats, yum wines, and great times, what more could you want from West End’s coolest hangout?
By PENELOPE PELECASFor Adrienne Jory and Rick Gibson, creating a space that feels like you’re eating at a mate’s place was important.
“We hope that when you leave, you are a little sad,” Adrienne says. “We have always hoped that as you sit back in your chair, you look around and think ‘yep, I’m so glad that we are here’.”
And that’s exactly what the duo, who are also behind plant-based Mexican joint El Planta, have done with Bar Francine, West End’s newest haunt. The neighbourhood wine bar promises Euro eats, yum wines, and above all, great times. Not to mention, it was recently named a finalist in the Wine Bar of the Year category for Gourmet Traveller’s Annual Restaurant Awards.
Based in a 100-year-old property, the venue serves all-Australian wines and a daily vegand seafood-centric menu led by Head Chef Brad Cooper.
“Everything we do is intentional,” Adrienne says. “It’s definitely different and not what you will find anywhere else, and we are very proud of that.”
As for the quirky name, there wasn’t too much thought behind it. “Francine was just this great name,” Adrienne says. “A little bit daggy, cute, and fun – everything that we wanted the venue to be.”
She adds: “We love that the house tells a story.
We tried to restore and keep as much as we could when we were renovating. During the process, we uncovered original tiles that were there from when it was a milk bar in the 1960s. You can’t replace that kind of history.”
The duo, who fell into the hospo industry “by complete accident” (for context, Adrienne had a ‘quarter-life crisis’ and opened a salad business), are taking each day as it comes and enjoying finding the balance of owning two thriving businesses.
“If it was up to Rick, we would have a third venue already,” Adrienne jokingly says. “We have so many plans. We really want to make sure our team always have somewhere to grow and develop, so that is a big driver for us moving forward. For now, though, we are loving just having the two venues.”
Adrienne: Definitely the New York Sour followed very quickly by a wine (probably a chardonnay) and the Brussel sprouts with Manchego custard. Rick: French toast with marsala onions and mushroom parfait washed down with a negroni.
