CAKE Queen MasterChef guest and Country Women’s Association Champion, Merle Parrish, 81, shares her baking secrets in her new second book, Merle’s Country Show Baking and Other Favourites. What will you be cooking for Christmas dinner? “I’m going to my family so I won’t be the one cooking. I will probably make the Christmas pudding. It’s a recipe handed down to my mother from my grandmother and then to me. I boil the pudding in the cloth for five to six hours and reheat it on Christmas day. I serve it with brandy sauce.” Do you have an alternative to heavy Christmas desserts? “Yes – my Light Fruit Cake, which is in my new book. Half of my family like the heavy fruit cake I make and the other half always go for the light one.” What ingredients do you always have in your cupboard? “Most housewives have butter, sugar, flour and eggs and you can just combine these for different recipes. You don’t have to have anything special or use special ingredients.” You appeared on Masterchef as a contestant and as a judge. What was it like? “It was a wonderful experience. I never thought I’d ever be involved in anything like that. My daughter came with me. Judging was interesting and enjoyable too. How did it compare to judging Country Women’s Association shows? The judging criteria are much the same wherever you judge.” How do you stay slim? “I like sweet things but I don’t eat a lot of cakes. I have lots of willing volunteers who eat them for me.” What recipe do you enjoy cooking the most? “The Peach Blossom Cake I cooked on Masterchef. I’ve cooked it 57 times since Easter 2012, after people have requested it.” You have recently celebrated your 81st birthday. How do you have the energy to do so much? “I like to be busy and be involved in things in our village [Cudal in New South Wales]. I have been a member of the CWA for 60 years and I’ve always been a busy person I suppose. The most important thing in life is to enjoy it.”

Have all your ingredients on the bench and measured out before you start. This way there can be no delays while you go through the cupboard looking for a forgotten ingredient.

For show cakes, I never turn them onto a wire rack as it will leave marks. It is fine at home, of course, but for shows I turn my cakes onto newspaper covered with a clean tea towel.

PREP TIME: 10 MINS COOKING TIME: 8 MINS MAKES 12

ingredients plain flour, to dust tin 1 egg 1/4 cup caster sugar 1 tsp vanilla essence 1/2 cup plain flour 1/2 tsp baking powder 90g butter, melted and cooled icing sugar, to dust

method 1. Preheat the oven to moderate (180째C). Lightly grease a 12-hole madeleine tin (see note) and dust lightly with flour. Shake out the excess. 2. Using electric beaters, beat the egg, caster sugar and vanilla together for 2 minutes, until pale, frothy and increased in volume. 3. Sift the flour and baking powder together and gently fold into the egg mixture. Add the melted butter, and fold to combine. 4. Spoon the batter evenly into the prepared tin. Bake for 8 minutes or until puffed and firm to a gentle touch. Stand in the tin for 3 minutes, then turn out onto a wire rack to cool completely. Dust lightly with icing sugar to serve.

Note: Madeleines are made in grooved tins which give the characteristic shell shape, but you could use shallow round bottomed patty tins for these. They should be 2 tbsp capacity each hole. You can replace the vanilla essence with finely grated lemon or orange rind, if you like.
