f you imagine winding back time 40 years ago in The Valley, you would stumble across California Cafe that my father purchased in 1951. Known for his legendary breakfasts, mixed grills, and spaghetti bolognaise, they were served on huge iconic oval-sized plates. It all started here for the family business – in hospitality and property – and I’ve always been involved from an early age. Before the colourful and lively excitement of The Valley Laneway developments, my career actually started in accounting here in Brissy. I then spread my wings to Zurich and New York with Goldman Sachs as the global financial controller. In any type of business, the best foundation is having

a good understanding of finances – which accounting has given me. My architecture side, on the other hand, has been more of a passion. In high school, I wanted to study both, so I had one of those sliding door moments and chose accounting. I pursued my accounting career as far as I wanted to, and then decided to study architecture, but not with a career in mind! I grew up in the era when the Coca-Cola factory was in James Street and Carlton Brewery made beer where Central Brunswick is today. I’ve seen the area move from an industrial centre to what it is today: focused on independent retail and dining, commercial offices, and entertainment. Inspired by my travels throughout Europe and Japan, I developed an STYLEMAGAZINES.COM.AU

appreciation of the old towns in Europe and the productive use of limited space in Japan. Along with growing up in a small business, I was inspired to create spaces that encouraged people to establish their first business in a community environment. Developing Bakery, California, and Winn Lane, as well as preserving and reactivating the heritage-listed buildings has been an enormously proud moment – not to mention having Bakery and California Lane awarded the Brisbane Regional Architecture Award for Urban Design. One thing is for sure – development is addictive, so it won’t come as a surprise that I have a few more ideas for The Valley under my sleeve. Watch this space.

FOOD FOR THOUGHT We’re no longer considered the slight city we once used to be. How Brisbane’s hospitality scene has been heating up over the past two decades, writes Fiona Williams.

“WHEN WE ARRIVED IN BRISBANE FROM LONDON, WE WERE SHOCKED TO SEE THAT BRISBANE ONLY HAD ABOUT FIVE RESTAURANTS ALL UP. THIS WAS THE YEAR 2000.”

T

hese are the words from Brad Jolly, Head Chef and owner of acclaimed fine dining restaurant on Eagle Street, Alchemy, on what his first impressions of Brisbane were over 20 years ago. If you were considering dining out for a delectable degustation back in those days, you would have been left with an empty plate compared to the plethora on offer today. “We aren’t a city of a steak and three veg anymore and I commend all those venues that are spending big when it comes to a fit-out,” says Brad – highlighting the focus many restaurants now have on the aesthetics when it comes to a night of feasting and frivolity. No stranger when it comes to a sleek design at a must-be-seen-at venue, Simon Gloftis of The Calile Hotel’s Hellenika and SK Steak & Oyster, is a notable mention for Brisbane’s own booming dining precinct on James Street. Once upon a time where the city was the only place to find a great restaurant, all eyes are now on the luxe laneways and eateries in this upmarket area. “The cool new restaurants that pop up, sure they’re busy, but some

don’t have a plan for the long game. The consumer can see that now. People are well travelled and know what they want,” he says. “Brisbane right now is the most exciting dining scene in Australia. It’s not because we have the best, it’s the enthusiasm that the larger cities would only dream of having! We’re at the forefront of everyone’s minds now. People are desperately trying to get here, we’re busy and fun. Down south when there’s a new restaurant opening, it’s just another restaurant,” he says. Entrepreneur, Founder, and Managing Director of the Coffee Commune, Phillip Di Bella, says his first impression of the Brisbane hospitality scene was like a young wine. “It was put together with great intentions but still had a lot of fermenting, ageing, and experience to add to the mix before it would become a mature, complex, and amazing prospect,” he says. Agreeing with the importance of what a dining space looks like, he says over his 20 years in business he’s seen more owner-operators take the helm of hospitality businesses. “I’ve seen incredible fit-outs that create amazing ambiences, and I’ve seen first-class produce turned into amazing food on a plate,” he says. It’s this attention to detail in Brisbane and the dedication that we have to customer service that far outweighs that of Sydney and Melbourne. We have the luxury of amazing weather, a relaxed lifestyle, and the attitudes of people that is inclusive,

warm, and friendly. So, what’s to come in the next decade? From the lead up to the 2032 Brisbane Olympics to new technology, and even trends, our city is one to watch. “With the Olympics 11 years away, the journey towards an amazing event will ensure that we have great infrastructure and amazing entrepreneurial spirit to develop great venues that produce great experiences,” says Phillip. Hitting a different tone (but still with just as much passion), Brad says “although we’ll keep growing, the industry isn’t always kind. More chefs and owners will work out that if you live in Queensland, you can enjoy your passion and live a great life. We’ll see more venues that are sustainable, vegetarian, and kinder to the planet, plus, some form of self-service, whether it’s ordering or pre-booking. We are moving with the times; however, hospitality is always one step behind.” Finally, Simon believes that consumer trends are an important part of a restaurant’s evolution. “First it was BYO, then it was natural wines, then it was high-quality French wine, then Spanish – there are no gaps now, everything has to be right. What type of beer, where it’s made, even tea! Every department is becoming specialised. Tea is the new boutique beer.”

Tell us about your role as the Founder/Creative Director of Brie Leon? My role here at Brie Leon is definitely wellrounded. We are a small team so I mainly go between each job to assist with tasks we are prioritising at the time. I never really know what to expect from each day at the office though, I could be designing for next season, directing a shoot, packing orders for the day or paying the bills! However, I mostly enjoy my role as Creative Director, which is what fuels my passion to drive the business.

Brie Leon has gone through many phases as a brand – do you see more expansions in your future? Absolutely, but I’m in no rush. It’s been really exciting to see the brand transform into each phase, it definitely happened organically over the years. It began as preloved clothing, then a small online store representing emerging labels from Australia and New Zealand, then an in-house jewellery label and then along came handbags. As one phase ended and another began, I questioned several times whether I should continue using the name ‘Brie Leon’, but accepted the fact that transition is a part of life and whatever ‘Brie Leon’ was going to be, I would let it be. We are planning to introduce a new category in 2022 so stay tuned… after that, who knows! Brie Leon has become known as an it-girl brand, how do you think the world of Instagram and influencers affects your business model? Like many small businesses, Brie Leon may OCTOBER 2021

not be here today if it wasn’t for Instagram. It gives start-ups the opportunity to step forward to present themselves in their own light, build interest, and test the waters before they jump in. Instagram helps us to connect with our followers instantly, it’s a busy world out there and sometimes it’s difficult to get out there by word of mouth. Brie Leon is all about beautifully modern investment pieces – what makes a piece of jewellery heirloom-worthy? An heirloom piece should be timeless, classic, treasured, and most importantly, be able to be passed down while holding its integrity. We continue to explore this question through our jewellery design and relate back to our principle of offering pieces you will have a connection with. We are currently exploring new materials to assist some of our core pieces to withstand the test of time.

JOIN THE CLUB Welcome to Pasta Club, an immersive, carb-heavy, private dining experience spawned from the vibrantly erratic mind of Toowoomba girl, Jenna Holmes. By ASTRID TAEMETS

I

f you’ve ever been lucky enough to find yourself perched along the shores of Italy’s coastline, local wine in hand, enjoying a bowl of fresh casarecce bursting with flavour but light enough not to put you off your post-lunch dip, you’re already well on your way to understanding the success Jenna Holmes (aka Pasta Mama) has built her ever-moving, everchanging dining experience, Pasta Club on. Pre-pandemic, Jenna spent as much time as possible on the Italian island of Sardinia, which is home to a ‘blue zone’ region – one of several in the world where a high percentage of people live longer than the average, largely in part due to their lifestyle and diet. “People in blue zones have prolonged lives because they eat local, simple, and seasonal. They savour flavours and take pleasure in eating fresh produce from the land,” says Jenna. That’s echoed in the Pasta Club ethos: “It’s an extremely basic concept built on bringing eating back to a menu-less meal, eating slowly, and feasting on what’s available here and now, which is what so many of us escape to Europe to experience.” Put into laymen’s terms, Pasta Club is a private dining sensory experience where you relinquish control – the menu, the music, the location – all is taken care of by Jenna. The only part you get a say in is who joins you. Purposefully allusive, the conscious decision to keep the details of what Pasta Club is to a minimum is something that Jenna attributes to its success. “Part of the

experience is not knowing, not having expectations,” she says. “Secrets spark interest, and I think in a world that is so predictable and thought out, it’s so much more interesting to be left in the lurch.” Without knowing the finer details, imagine Pasta Club as the catered dinner party you don’t want to RSVP ‘no’ to. Picture a loud setting awash with vibrant colours – a hand-painted tablecloth the foundation for a table adorned with vintage vases, wildflowers, mismatched plates, glassware, and cutlery, and large share bowls of vegetarian pastas, salads, and freshly-baked bread occupying in abundance. Jenna’s carefully curated disco playlist fills the space, and local wines pour freely into your glass. “Dining with friends isn’t just

about food, it’s about it all – from the table setting, to the music, to the actual space itself – it’s all these details that amalgam to create a one-off sensory experience. That’s what eating is all about. With Pasta Club, I present an over-the-top colourful art installation of sorts that guests become a part of in their own way, and to watch it unfold is something you just can’t get from a restaurant,” she says. Gnocchi Gnocchi Brothers first laid down its roots in Paddington, and has now taken Brisbane and beyond by storm with its simple menu of hearty fare and a charming team who make every visit one for the books. SEEING AND BEING SEEN An image becoming an icon, a photographer becoming iconic. – William Yang is the legend both behind and in front of the lens. By ANGELICA SILVA

G

rowing up in a Chinese immigrant family in North Queensland, moving to Brisbane, and then coming out as a gay man in Sydney, William’s photography captures the shifting cultural and political pressures he faced growing up. We spoke to William about how his work is rethinking the minority status and visibility of minorities as a whole. Hi William, can you tell me about what your life was like growing up? Although I was born in Mareeba in North

Queensland, I grew up in Dimbulah, a nearby, smaller town. We were the only Chinese family in the district, although, I wasn’t aware of my ethnicity until I was about six years old. One day, one of the kids at school called me a “Ching Chong Chinaman”. I had no idea what he was talking about, so I went home to my mother and said, “Mum, I’m not Chinese, am I?” My mother looked at me very sternly and said, “Yes you are.” Her tone was hard, and it shocked me. I knew at that moment being Chinese was like a terrible curse and I could not rely on my mother for help. STYLEMAGAZINES.COM.AU

As a gay man from a Chinese immigrant family, what were some of the cultural and political pressures you faced while growing up? I always regarded myself as Australian. But when I went to high school in Cairns, I was much more aware of being racially different, but in a negative way. The way that I dealt with my ethnicity was to completely deny it. I identified with being Australian. I moved away from racial taunts, and I shut down any conversations about my Chinese heritage. I knew from a very early age that I was attracted to men. I knew that this was


not the norm and so I always hid it. One day in Cairns when I was about 16, I read the afternoon newspaper and there was an article about homosexuality. It described what the condition was, and it named three famous ones in history. When I read that I thought, oh god, there’s a name for it. But while I knew who I was, it didn’t make any difference to my life, I didn’t know a single gay person with whom I could confide. I thought there were four homosexuals in the world – Oscar Wilde, Michelangelo, Leonardo Da Vinci, and me. The media industry is only now showing more people of culturally, ethnically, and sexually diverse backgrounds. As a Chinese-Australian whose photography raises awareness about social issues, did you face any challenges or receive criticism because of this standard? In my performance pieces that I began in the late eighties, I use spoken word, projected image and music. I was one of the first Chinese Australians to talk about what it is like to be non-white and gay in the predominately British/Eurocentric Australian culture. People told me it was the first

time they had heard an Australian story told by a Chinese. Gradually, there have been more Asian voices. Now I am part of an organisation called Contemporary Asian Australian Performance and we aim to develop, nurture, and champion Asian Australian performance artists. How has your Chinese heritage influenced your work as a photographer in Australia? I spent 15 years as a freelance photographer in the mid-seventies and eighties and part of that time as a social photographer rubbing shoulders with the rich and famous. Now and then, I glimpse back at this world but at the end of the day, I remind myself that these people lived in a different world to me. Don’t get me wrong, I like my pictures of celebrities and people want to see them. However, during this time in the eighties, I had an experience where I embraced my Chinese heritage and somehow I felt that ‘Chinese people in Australia’ was a subject that I should pursue. or Adore Beauty’s Head of Campaign and Strategy, Shanthi Murugan, this is exactly what has been at the forefront of her attention for her entire life. As the driving force behind Adore Beauty’s Global Shades Movement, Shanthi’s personal experiences with racism and inequality fuelled her ambition to ensure Adore became a pioneer in embracing and showcasing the representation of more women of colour in the beauty industry. We spoke to Shanthi about her journey getting to Adore, and why she believes greater inclusivity will rebuild and challenge people’s perceptions of Australian beauty.

Hi Shanthi! Before we dive into your incredible career, we would love to hear about your upbringing. Can you tell me about where you grew up? My mother, who is Sri Lankan, and my father, who is Malaysian, migrated to Australia from the UK where they were studying and fell in love. I spent most of my childhood in the North Eastern suburbs of Melbourne, Australia. Growing up in a predominantly Anglo-Celtic neighbourhood meant that it was rare to see people who looked like me. It’s an odd thing to be raised amongst children who look nothing like you. I would often be asked innocent questions from other kids, curious to know why my skin colour was different to theirs. And at times, instead of questions, hurtful comments were thrown my way that left me feeling terribly isolated. Imagine being a seven-year-old, being told that you’re dirty, to ‘go back to where you came from’ and receiving racial abuse. These experiences can scar you and leave you wondering why on earth you were created any different to those around you.

visit to the dentist is a daunting task for some, but a trip to Today’s Dentistry in Chermside is one to remember for all the right reasons. I will preface this by saying that an appointment to get my pearly whites checked usually gives me a wave of irrational worry, but that was left at the door when I waltzed in to see the team in Chermside. From an efficient, easy check-in process on their iPad to a charming greeting from the receptionist, I was left feeling calm and welcomed from the get-go. Guided through to the treatment room, I met Dr Darryl Marsh, the founding dentist at the practice since 1988. Dr Marsh heard my concerns, which have always centred around the colour of my teeth. We spoke at length about

the different whitening options available and what would be best considering my fluorosis (white spots), which would brighten with the whitening process. In an age where time is so valuable, Dr Marsh expedited the entire process, extending my booking and combining two visits in one sitting instead of making two trips. Passing me on to the charming hygienist, she took me through four rounds of in-chair whitening within 45 minutes. Pressing play on Friends, I was given headphones and was completely distracted by the flatscreen above me. It was during my treatment that I truly realised the team are trained to put themselves in the shoes of the patient, constantly checking in for any sensitivity or discomfort. After lying down for quite some time, the team knew before I did how stiff I was getting, gently fitting a neck pillow mid-treatment for maximum comfort and support. Hand on heart, I can say I have never felt more understood during a dental appointment. A true ear to ear smile is rare from someone self-conscious about their teeth, so when I left my appointment beaming, I was absolutely elated. What is varicose eczema?

Also known as satellite navigation, cars have an inbuilt Sat Nav system to help you get where you want to be directly and effortlessly. The basic information it uses is where you are and your desired destination. Oh, how great would that be if we had an innate personal Sat Nav for our life goals? We know life is a journey that must be travelled – no matter how bad the roads and accommodations might be. However, the journey can be more direct and comfortable if we are clear about what we’d like our aspirational goals to look like. If we have clarity about what fulfilment is, we can identify and work around possible barriers. To begin this process, courage is needed. If we are brave, great things can be achieved. Then, the path forward is executed with deliberate steps and competencies increasingly developed. It is only as we maintain positive progress that energy and confidence grows. An irritating but lesser-known symptom of venous disease can be itchy legs, a condition called Stasis Dermatitis or varicose eczema. It can present initially with flaky dry skin but can progress on to red, blistery plaques and skin colour changes. Venous eczema can be treated in several ways: • Compression stockings help to improve circulation in the leg. They also prevent scratching, which can lead to cuts on the skin that might risk ulcerating. • Use an unperfumed moisturising cream twice a day to keep the skin smooth and soft. • Topical steroids can be prescribed to reduce skin inflammation for a few weeks. • Light exercise like walking or swimming may relieve symptoms. The above options will provide relief and particularly over the summer months when many patients find their skin is at its most unbearable. However, to eliminate venous eczema, the varicose veins will need to be treated. The good news is that improvement can be seen and felt on the legs very soon after treatment. A new hope for hair loss

It’s National Mental Health Month, making it the perfect time to talk about the important role of nutrition in mental health. Food provides the key ingredients for important biochemical pathways that directly impact mental health. Key foods that help protect against mental illness are those rich in Omega 3 (salmon, chia seeds), Vitamin D (sardines, egg), curcumin (turmeric) and B vitamins (green leafy vegetables). Eating a varied whole food diet provides these essential nutrients. Limiting caffeine and foods that contribute to inflammation (refined sugar, Omega 6 fatty acids) or that may compromise gut health (gluten) also helps. Mental illness can also cause poor nutrition status, making recovery from conditions such as depression or anxiety even harder. People who don’t feel well need more support to eat well.

Many men who have endured the all-too-familiar experience of a family member asking, “Are you starting to bald?” Luckily, the only thing standing between them and a thicker head of hair could be a quick and non-invasive procedure – Regenera Activa. No dyes, wigs or surgery is needed. A small section of the scalp is shaved (usually at the back), the area is numbed with anaesthetic, and then between one and three ‘micrografts’ are taken. These are broken down to make a liquid solution that can be injected into the areas of hair loss. The whole treatment takes between 30-60 minutes, with results being noticeable between the four and seven-month mark. Nowadays magazines are on all platforms so I can consume what I want, how I like. This also helps me to keep on track with my ‘shop local’ mantra. The businesses around us get so much out of local media coverage. More successful businesses have built their brand using local media than you might have thought.
