I WRITE THIS from my hotel room in Cape Town, South Africa as I enjoy a much needed respite. Adventure is truly the soul’s greatest escape and taking time out is what enlightens our minds. How we regard ourselves, how we feel about who we are, and what we have accomplished, is not only about our experiences but about so many factors and facets of our lives. With spring well and truly here, it is time to take a look at the cocktails we’ll be sipping this season because (for obvious reasons) it is time to opt for the beverages with wow-factors (Page 50). From Melbourne Cup to Lorde live at Riverstage and Landcover Polo in the City, it is going to be a November to remember. Talking about things to remember, in a bold move and arguably one of the most exciting announcements this year, Li Cunxin will be returning to the stage for a very special one-night-only performance of The Nutcracker (Page 12). Breaking boundaries, we have Jack Sullivan Bridal on our cover this month. Having grown up in Brisbane, Jack has officially launched his bridal collection in New York. We took a look inside the fashion game and how Jack made his job one he loves, one he wouldn’t change for the world. THE STAGE

Li Cunxin returns to the stage for one night only to recreate a classic Christmas tale, marking his first performance in 18 years, writes Siobhan Taylor.

BEST SELLING AUTHOR. Queensland’s 2014 Australian of the Year. Artistic Director of the Queensland Ballet. These are just some of the titles Li Cunxin has held over the years, but none more noteworthy than that of Mao’s Last Dancer. Since his defection from the People’s Republic of China in 1981, Li has danced as a principal dancer with the Houston Ballet and the Australian Ballet, at times performing alongside his wife Mary Li (née McKendry), a professional ballet dancer from Rockhampton. Following his retirement from performing in 1999 and while working as a stockbroker, Li published his critically-acclaimed

autobiography, Mao’s Last Dancer, in 2003, detailing his life in poverty in the Shandong province of the People’s Republic of China, his life under Mao Zedong’s communist rule, 16-hour days of ballet training, and his eventual career as an international performer. It was in July 2012 when Li, who had maintained strong ties with the ballet community throughout his retirement, was announced as the Artistic Director of the Queensland Ballet, taking over the reins of the artistic control and vision of the theatre company. “I wanted to lead Queensland Ballet to become a world-class ballet company, a powerhouse

in dance in the Asia Pacific region, and make a positive difference in the arts and the communities we serve,” comments Li. In a bold move, and arguably one of the most exciting announcements of the greater ballet community this year, Li will be returning to the stage for a very special one-night-only performance of The Nutcracker, produced by Ben Stevenson. Performing the role of Drosselmeyer, Li has adopted a strict training regimen to ensure he is physically and technically capable of performing the routine. “Currently, I have 2.5 months to get myself back

Li Cunxin to a decent condition where I won’t make a fool of myself on stage.” This training involves morning laps in the pool, weight and Pilates training, and, of course, four ballet training sessions each week. “I feel both excited and nervous. I know very well that it won’t be easy for me to get back to my peak condition after 18-years of retirement, so I have to go through quite a bit of pain and agony before I will be able to enjoy it. I hope that my performance will add a little bit of spark to an already magical production of The Nutcracker.” Adopting the iconic role of Drosselmeyer has been its own challenge, says Li, “Drosselmeyer has been in my mind constantly. It’s become an all-consuming living thing in my mind ever since I decided to perform the role! I have been thinking about his character and personality, his narrative, his magic tricks, and of course, his dancing.” Li will be joined by a world-class troupe of performers of exceptional skill. Li comments, “Their standard is high, their artistry is incredible, their passion is absolute, their commitment and dedication to the art form is total, and I feel privileged to be performing amongst them!” One of the performers Li will be sharing the stage with is none other than his wife and formerballet partner, Mary. Li and Mary, who retired from the stage in the early 1990’s, have not performed on stage together for 36 years, interestingly, since a 1991 production of The Nutcracker. “Mary and I found each other through dancing. She was an exceptional artist and I was heartbroken when she retired due to our daughter’s deafness. CONSCIOUS THINKING Guy Sebastian takes his sound to new levels on his forthcoming album, Conscious, writes Emmy-Lou McKean. AFTER GUY SEBASTIAN rose to fame as the first Australian Idol winner in 2003, no one could’ve imagined he would become the only Australian male artist to achieve six number one singles and two number one albums in chart history. Over the course of his music career, Guy has had massive success at home and overseas, and now the husband and father of two is back with his 10th studio album, Conscious, which he says is one of his most creative projects to date. We chat to Guy about his new album and why he spent longer on this project than any other. How has the creative process of Conscious differed to your previous albums? I wanted to push my sound to new places so I tried new things. I switched up my music software and sought out new synths and sounds to create a soulful blend of organic instruments that sit within an electronic landscape. I’ve teamed up with some great local producers and produced some tracks on my own, which pushed me past my self doubt. I spent way longer on this project than any other before as I wanted to get it right. How have your personal goals fuelled the album? It really went hand in hand. I’ve trained my body pretty hard lately and I nearly gave up many times. I pushed through the pain of preexisting injuries and when I wanted to give up I would tell myself to keep going! If I didn’t give up in the gym, later that day I didn’t give up in the studio when I hit a wall. I guess it taught me to be more disciplined and have a better work rate.

What can we expect from Conscious? It definitely has a lot more of a R&B/soul electronica vibe than anything I’ve done before. At least since my second album Beautiful Life. The Conscious tour kicks off this month, what can audiences expect from the show? It’s my most creative and soulful tour thus far with particular attention paid to the translation of the album’s intricate sounds to the live stage. It’s going to sound pretty sick instrumentally and with Gary and Carmen on background vocals, of course the vocals will be on point!

How do you balance being a husband, father and musician? Family and loved ones always come first no matter what. What I do has unique challenges, but we can get through it all because we love each other so much. For me, the key is making sure the time I spend with my family is focused. It’s easy as a creative person to get distracted. There’s no denying that having a family means I have to sacrifice certain opportunities but they will never mean more to me than keeping my family safe and loved. READ MORE ONLINE

BALANCING ACT We chat to Mortgage Choice Business Manager, Hanna Cunliffe, about how she manages to juggle career and family.

With an ever changing and demanding work and home life, Hanna finds the balance comes from creating a happy, peaceful environment for her family, while still prioritising time for herself. “I make sure that I get to a Pilates class at least 2-3 times a week,” she says. “Exercise is so important to keep the mind clear and the body healthy and it’s really the only time I get without the kids or work commitments.”

Unlike your average husband and wife relationship, Hanna and Matt work closely together as they run their businesses, but the pair never underestimate the importance of a strong household foundation. “Although Matt and I work together, we rarely find that we have any issues,” Hanna says. “Being open with a clear expectation and trust in each other is what lets us both excel in the different areas of our work.” Having two children, one school age and the other an 8-month-old baby, Hanna is continually attempting to master the balance, while still having enough down time with her family. “Some parts of the month get extremely busy and I get very little time to breathe,” she says. “I can continue to work on my career, albeit at a slightly slower pace, while still being an active and available mother and supportive wife,” Hanna says. “I wouldn’t be able to do this without an amazing team behind us. AND BABY MAKES THREE Zoe Marshall speaks to Tamille Head about how life has changed since falling pregnant. FOR SOME TIME now, Zoe Marshall has been very vocal about her struggles with endometriosis and subsequent fertility issues. So naturally, it was a welcome surprise when her and husband, rugby league legend, Benji, announced their pregnancy on Father’s Day this year. After a long battle with severe endometriosis, leaving her doubting she would ever carry a child, Zoe went to Chinese medical practitioner Dr Shuquan Liu in February in an attempt to fall pregnant, embarking on a two-week no food detox. While she received unwavering support from her husband throughout the process, others were not quite so understanding. “When you’re doing something so radical like not stylemagazines.com.au

eating, people get worried,” she says. After discovering she was pregnant on her 33rd birthday, Zoe felt a mixture of relief and happiness because she didn’t think it would happen so soon. “Falling pregnant was such a shock. We had only been in our second month of the pregnancy program with Dr Liu.” It hasn’t all been smooth sailing for Zoe, however, citing she struggled with morning sickness and often felt isolated throughout her first trimester. “Pregnancy is brutal, the first trimester I was so sick. For weeks, I felt like I had the worst hangover of my life. I couldn’t socialise or even leave bed some days,” she says.

True to form, Zoe has begun documenting her pregnancy on her personal blog and with her near thirty thousand Instagram followers, promising to share her experience along the way. On the topic of the babies gender, for now the Marshalls have decided not to find out. But that doesn’t mean they haven’t been privy to the constant questions. I ask if Benji is hoping for a son to carry on his footballing legacy. “That’s such a clichéd question,” she laughs, telling me that it’s often the first thing people ask her. “We just want our baby to be its own individual person.” READ MORE ONLINE

NEW YORK CITY CALLING Meet the bridal designer who has taken on the concrete jungle, writes Tamille Head. GROWING UP IN Brisbane as the son of internationally recognised and award-winning bridal designer, Wendy Sullivan, Jack Sullivan’s life has been heavily entrenched in the fashion and design industry. Working on the business side of his mother’s bridal line, a gown he doodled on a notepad was produced, sparking his desire to create an eponymous label. After years of studying design under Wendy’s guidance, Jack Sullivan Bridal was launched in 2012, creating his own unique style, reflecting a combination of oldfashioned elegance and modern-day playfulness. The Brisbane boy is going from strength to strength, having recently returned from showing his latest collection at New York Bridal Fashion Week. “It was something that I kind of dreamed of, but didn’t think would happen,” he says. “When the opportunity came up a couple of years ago to do New York Bridal Fashion Week it was so surreal. I love that I get to go back every year.” Jack had the honour of shooting his latest collection at The Intercontinental Barclay in the exclusive Vanderbilt Suite. The recently renovated suite, with its old-world glamour and modern-day styling tied in well with Jack’s current collection and the general ethos of his label. While his time in New York involved attending launch parties and mingling with designers he’d always admired against the New York City sky line, Jack’s passion for design is what keeps him going back time and time again. “It was a pretty amazing experience and something I will always remember,” Jack says. “My whole goal in this fashion game, has been just make sure this is my job. IN TODAY’S SOCIETY, more and more people are converting to a vegan diet not only for the amazing health benefits, but also due to their concern for the environment and, most importantly, the wellbeing of animals. CHRISTIAN DIOR: A RETROSPECTIVE Siobhan Taylor examines the rich history of Dior, one of the most prestigious couture houses, and it’s unique affinity with Australia. THERE ARE FEW names in fashion that have had as lasting an impact as Christian Dior, who opened his eponymous fashion house in 1946, having previously worked as a fashion illustrator and designer alongside the likes of Pierre Balmain. It was Christian Dior’s insightful approach to the female form that would spark a renaissance of French couture, and become the start of a fashion empire that would change the face of couture. From dramatic evening dresses to sweeping ball gowns, Dior’s experimentation with volume, form and silhouette, most notably in the iconic New Look silhouette of the 1950’s, revolutionised women’s fashion. Beloved by grand couturiers, critics, members of royalty and aristocracy, and Hollywood, Dior was an artist at a time when the world craved beauty. “We were emerging from the period of war, of uniforms, of women-soldiers built like boxers. I drew women-flowers, soft shoulders, fine waists like liana and wide skirts like corolla,” Dior said. To celebrate the emblematic work of Christian Dior and the 70th anniversary of the House of Dior, the National Gallery of Victoria has played host to The House of Dior: Seventy Years of Haute Couture, the largest Dior retrospective to be held in Australia, and potentially the 156-yearold Melbourne gallery’s most successful fashion exhibition ever. The exhibition showcases the history of the prestigious fashion house from its establishment in 1947 until today, highlighting the brand’s evolution over the last 70 years. Featuring over 140 stunning garments as well as display sketches, photographs, and other archival material, the exhibit celebrates the work of the seven designers who have played key roles in shaping Dior’s place in history: Christian Dior, Yves Saint Laurent, Marc Bohan, Gianfranco Ferré, John Galliano, Raf Simons and Maria Grazia Chiuri, who joined the house last July as the first woman to head the couture house. The House of Dior has a particularly unique affinity and relationship with Australia, wherein David Jones was host to the historic Spring 1948 fashion parade that was the first complete Dior collection to be shown outside of Paris. And again in 1957, weeks after the passing of Christian Dior, 40

FRESH IS BEST? Let’s open the discussion on the gassy world of fresh coffee beans to understand why “fresh” isn’t always best. Like a fine wine, freshly roasted beans get better with age, to an extent. When coffee is roasted, gases form inside the bean. Post roast, these gases start to trickle out. CO2 can escape so quickly that it negatively affects the flavour of your coffee by creating an uneven extraction. Degassing varies depending on the bean varietal and duration of roast. It can take anywhere from four days for filter and up to 10 days for espresso until the coffee is ready to brew. Another view is that coffee goes ‘bad’ and can’t be used after two weeks. After degassing, oxygen starts to make its way into your beans. This is called oxidation and is the main cause of staleness. The ideal ‘peak’ flavour times usually fall between day nine and 15, but can still be enjoyed later than this with flavour deteriorating. Always consult your barista or roaster on how many days you should wait until brewing in order to find that sweet spot.

Urbane continues to reignite the senses with one of Brisbane’s most refined restaurant experiences, writes Christie Sutherland. DEGUSTATION DINING IS one of the must unique and indulgent culinary experiences one can enjoy, and I would say that Brisbane’s Urbane Restaurant does one of the very best. With four different degustation styles to choose from, including five and seven-course options as well as omnivore and herbivore menus, Urbane has thoughtfully crafted an impeccable degustation experience. With award-winning Argentinian Chef, Alejandro Cancino at the helm, I knew we were in for a treat. As the dishes arrived, it was clear that the Urbane team had meticulously and artfully arranged each dish to satisfy all the senses, with natural elements such as driftwood and micro46

herb gardens incorporated into the dish and pleasing the eyes just as much as the tastebuds. We kick-started our courses with the Chefs Special Snack of which the tomato consommé was quick to standout. Next was a scallop dish, paired with velvety pumpkin and citrusy mandarin. The uncomplicated pairing of light and zesty elements was an ideal introduction to the seven courses. The next course was the mushroom tortellini. This refined dish was fresh, creamy and perfectly balanced, allowing the rich mushroom flavour to shine through. The simple yet rich flavour of this dish was the perfect intermediary course, as it quieted the palette before the subsequent courses. We were then delighted by an exceptional

dish of Cobia dressed with pil-pil sauce, a Spanish sauce of olive oil and chili. The classic sauce was exceptionally prepared, and perfectly complimented the cobia. Another dish that delighted us was the Wagyu Beurre Blanc, which was cooked to perfection! Juicy and tender, the meat was cut with a butter knife and melted in the mouth. Not only is Alejandro co-owner of Urbane but his other passion lies as the owner of Fënn Foods, which is a supplier of the most ethically sourced foods that doesn’t compromise on quality and taste. AN OLD FAVOURITE This old favourite is a charming surprise, discovers Tamille Head. THE WATERLOO HOTEL is a Brisbane landmark and iconic watering hole. My guest and I arrive in the midst of the busy lunch time rush and are greeted by the friendly wait staff. After ordering cocktails from the sprawling cocktail lounge, we find a cosy booth to be seated. Our dining experience starts with a plate of salt and pepper squid. Spicy, zesty and with the perfect amount of crunch, it goes down a treat with a refreshing Aperol Spritz. Next came seared scallops plated with spicy chorizo, creamy guacamole and pico de gallo. While an unusual combination, the melt-in-yourmouth scallops were a highlight of the meal. The main courses, a selection of easy-to-share

The Turkish lahmacun pizza arrives first and is quickly devoured, while the tender spiced lamb with delicious toppings and creamy yoghurt sauce is mouthwatering in its own right. The fish is clearly fresh and deliciously accompanied with crunchy chips and a light garden salad. The accompanying tartae sauce

But as summer approaches and the mercury rises, we’re reminded of those long, hot days that often see our makeup melting down our faces. Not cute. While a dewy glow is always a good idea in theory, come summertime we’re often left looking like a shiny, oily mess instead. A word to the wise: if it looks like you could fry an egg on your face, it might be time to think about switching to a matte look.
