A simple yet profound question from APRA award winning, Brisbane songwriter Mark Sholtez to Queenslander Luke Kennedy; “What do you want to say?” paved the way to the artists collaborating on alluring new music and their upcoming live venture, Off The Record. “Working with Mark in the producer’s chair was easy from the first session.” Luke explains. “The proof is in the pudding, as the first song we ever wrote looks likely to be the first single off my EP. Writing my own music has been one of the most rewarding things I’ve done in my career so far.” Before his role on The Voice, Luke garnered recognition for singing internationally with The Ten Tenors and performing the leading role in Jesus Christ Superstar across Australia. It’s all very well to be impromptu on your personal account but when it comes to business and social media, your content needs to be wellresearched and strategic, and needs to align with your company’s branding and message. One of the common mistakes that businesses are making in today’s social media world is the violation of the hashtag. How often have you seen businesses swarm their comments section with a bevy of hash tags that are there purely as a ploy to get more followers? Whatever the reason, Style loves a good hash tag and we want fellow businesses and influencers to be educated on how to use them. With the right tools and a little preparation anyone can cook. The first step should be to read recipes through completely. Make sure you check whether you need to pre-heat the oven and prepare your ingredients before you start as chefs do - mise en place! Invest in a couple of good knives - a cook’s knife and a paring knife for smaller jobs - and keep them professionally sharpened. A less than sharp knife is a danger in the kitchen. Have a good-sized chopping board (my preference is for wood but polypropylene is fine too) and pop a folded tea towel under it for stability when chopping. Use room temperature ingredients and hot pans. Keep the kitchen chaos-free by cleaning as you go. Fill the sink with hot soapy water and put plates and pans into it as you use them. It might be just me, my age and my business’ local nature, but does anyone else feel the re-emergence of local sport? How good does the Intrust Super Cup galvanise communities across the state in Rugby League? Like the Northern Pride conquering Queensland and then winning the Interstate Championship, with heaps of North Queensland support. It’s local sporting clubs who create players, capable of filling international ranks, and provide skills and mates for life. Our systems in Queensland are fantastic, although costs are getting high and volunteerism is getting much harder. It’s crucial for sportsminded businesses to help these types of clubs with these problems as well as engage with their memberships for some return. At Hoppy’s we deal with rugby, soccer, league and cricket all over Brisbane with the aim of mutual benefit. Many people suffer from bloating, abdominal pain, wind, as well as constipation and diarrhoea daily. In some instances your doctor may diagnose you with Irritable Bowel Syndrome, otherwise known as IBS, or you may have an underlying medical condition or food intolerance such as coeliac disease. The two factors most commonly associated with IBS are stress and diet. Dietary factors include fibre, gluten, lactose (sugar in cows milk) and fructose (sugar in fruit and vegetables), as well as natural and artificial food chemicals such as salicylates, amines and MSG. With leading research into diet and gastrointestinal disorders, there are now effective treatments for people with IBS. Among these are the Low FODMAP diet and Elimination diet. If food intolerance is suspected, it is important to work closely with an Accredited Practising Dietitian (APD) to investigate food triggers and develop an appropriate dietary plan that reduces symptoms while meeting your nutrient requirements.
It’s important to understand how to dispose of interest in your superannuation fund (managed or self-managed) upon death. NOMINATIONS: The Trust Deed controls your superannuation fund and how you leave your Death Benefit. Some funds allow for nominations of beneficiary. The beneficiary must fall within that class of people allowed by legislation to receive it. If no nomination is made, the benefit will either be paid into your Estate and distributed via your Will, or distributed by the Trustee, as they see fit. TAX LIABILITY: Before distributions are made, the proposed beneficiary should get advice on taxation consequences from an accountant and solicitor. A Death Benefit Dependent is able to receive a superannuation death benefit, taxfree. Where a non-dependent tax beneficiary receives a benefit direct from a Deceased’s superannuation fund containing a taxable component, tax will be paid by that beneficiary. Early Claim: If retired and over 60 years old, you can withdraw superannuation and give it to recipients tax free in their hands.

Downsizers have the advantage of time to coordinate the sale of an existing property. This can be stressful and provides valuable time to coordinate and plan your move. Another benefit is choosing your property from everything available in a development, allowing you to hopefully secure the property you want, whilst potentially adding customised personal touches to finishes. You are also securing a brand new apartment at today’s prices, which is particularly beneficial right now while the market is still relatively low and currently rising. Hot flushes, mood swings and night sweats are some well-known, unpleasant menopause symptoms, but there are many other less common symptoms, including varicose veins. There are many hormonal changes which evolve during menopause, one of these being the natural decline of the production of Estrogen and Progesterone by the ovaries. Estrogen and progesterone have positive effects on the circulatory system. Hormonal fluctuations can result in the relaxation of vein walls and may eventually lead to varicose veins. When vein walls relax, there is less force moving blood back to the heart from your extremities, and if blood starts to pool downwards, this can lead to backpressure causing varicose veins. Metabolism also slows, leading to easier weight gain, which is closely associated with an enhanced risk of vein disease due to additional pressure on veins. It’s important for all women be aware of their cardiovascular health to prevent or even avoid varicose veins during menopause.

Secret Chefs’ business Style sits down with Jerome Dalton of Dalton Hospitality to get the inside word about his in-demand catering company. What should people look for in a caterer? Flexibility rather than a one-size-fits all approach. Someone who is willing to listen to the client brief and think beyond the square (or the alternate drop!). At Dalton we have no set menus and instead work with each client to develop a menu along with a service style to suit each event, including the budget and location. We cook everything from scratch, right down to our own sauces and conserves, and even grow many of our own herbs. I’ve been in the food business for more than 25 years, and we’ve catered for everything from soirees on super yachts to suburban surprise parties. What is the smallest and the biggest event you’ve catered for? The biggest event we’ve 66
catered was a Variety Club dinner for 2,000 people. The smallest was a wedding proposal in East Brisbane. They guy sent his bride-to-be on a treasure hunt with clues planted all over Brisbane. When she got back home, she was led to the back garden. We’d set up a table where he proposed to her with Champagne before myself and a waiter served a five-course dinner of her favourite dishes. They’d met working on a mango farm, so his brief was that dessert had to include a mango. Your most famous client? Two years ago we were contacted by the Federal Government and asked to cater for a VIP - a VVIP in fact - Queen Elizabeth. We served her a traditional morning tea on the MV Adrenaline as she cruised the Brisbane River.
Where do you do events? Absolutely anywhere. From some really cool venues we have relationships with private homes and public spaces such as parks and beaches (with permission). What are the hot trends in catering right now? It’s all a lot more casual and rustic with shared tables, grazing stations, and make-yourown lunch tables, with all kinds of breads, salads, charcuterie and sauces. Live oyster bars and cheese tables are popular, and the Champagne tower is back. Styling wise, we’re seeing a lot of vintage plates and utensils. From working under some of the biggest names in food, including Peter Gilmore of Sydney’s Quay and the oneand-only Gordon Ramsey, to managing restaurants in Dubai and Qatar, Grant Parry is now putting his talent to work at Videre Restaurant at the Gold Coast’s RACV Royal Pines Resort. But he says his first taste of culinary inspiration came much younger. “I remember seeing the Muppet Show with the Swedish Chef when I was seven years old. Then being a Chef just became more and more what I wanted to do. I’ve never ever wanted to do anything else.” With a focus on honest food, Grant has created an inventive and absolutely stunning menu at Videre, meticulously selecting flavours that linger with you long after your visit. In his own words, “Everything is on the plate for a reason.”
