SILLY SEASON It’s time to hit the panic button. We’re officially less than 60 sleeps out from Christmas and I don’t know about you, but Today, I Am starting to freak out. There’s so much to plan in so little time, so in this edition of Style we’re wrapping up where to eat, stay, buy and play through the festive season. I’ll be gathering the troops at New Farmer’s Kitchen for a family feast built on fresh produce from the garden, farm and sea. It’s the latest concept from WATT at the recentlyrefurbished Brisbane Powerhouse, and the fitout is enough to impress even the fussiest. Speaking of, if the house is feeling particularly crowded during the silly season, you should consider getting away to the new Alex Perry Hotel. The lush apartments make it the perfect present for those wanting to unwind in luxury.We’ve scoured the streets and stores of Brisbane to find the best gifts on offer for those hard-to-buy-for types – which is no one in my family, luckily… or unluckily for my wallet. Elle Raison has the inside scoop on the average day of a modernday trolley dolly. IT’S 11PM AND I am woken by the incessant sound of my alarm. I drag myself out of bed, still half-asleep, to get ready for the long day ahead. I’m grateful to have nabbed a few hours of sleep at such an odd time of the night; something you never get used to. Being Cabin Crew is the kind of job you have to be very organised for. If you forget one thing, or are even one minute late for your check-in, you risk being taken off your duty for that day and missing out on the awesome destination you were meant to visit. Getting ready for work has become a routine – wake up, slick my hair back, perfectly apply my makeup, try to don my skin-coloured pantyhose without creating a ladder, slink into my dry-cleaned uniform and stain my lips red. I grab my alwayspacked suitcases and leave my apartment three hours before my flight is due to depart. Two hours before take-off, I check in for my flight at the Dubai-based airline headquarters. Thanks to separate security, immigration and baggage checkin, the Cabin and Flight Crew get to enjoy a few more precious passenger-free moments. I enter the briefing room, a Costa coffee in hand,

Now comes the exciting part of the job - the reason we do what we do: stepping off the aircraft and into a whole new world. 14

ready to meet the 17 strangers I will be spending the next four days with. After a knowledge test, grooming check, quick briefing and being given flight information from the Captain, we make our way directly to the aircraft. I send my family a love note while on the bus to the plane – you never know what might happen. It’s now time to make the tiring nearly-15-hour flight to the American city of Seattle, Washington. Primarily, my job is to keep the passengers safe. That’s why we undergo almost two months worth of safety, emergency, security and general medical training. Thankfully, this is very rarely put into practice. Instead, I spend most of my time on board dishing out dinner, answering more call bells than you could imagine, playing with bored kids and walking in on too many men who have forgotten to lock the restroom door. Over 300 passengers, three services and almost 900 meals, a two-hour nap, plenty of small talk and a stick of red lipstick later, we bid farewell to our worn-out guests. Now comes the exciting part of the job - the reason we do what we do: stepping off the aircraft and into a whole new world. The Crew head off on their separate adventures with a cheery “You can sleep in Dubai!” We’ll plan the rest of our stay over dinner and a well-deserved glass of wine. Until then, it’s time to taste-test this new part of the world and savour every precious moment. After all, we only have 48 hours before we jump back on the plane and start the process all over again.

POLLINATING CHANGE Brisbane beekeeper Jack Stone shares with Elle Raison how bees and sustainable city living go hand-in-hand. JACK STONE HAS spent the best part of four years globetrotting, working as a picker on organic farms in Southern California and Eastern Europe. When Jack returned to Brisbane, he was ready to dig his hands into something agriculturally meaningful. After discovering the global bee crisis affecting farmers and beekeepers, Jack teamed up with friend Katherine Skull to create Bee One Third. The primary goal of this initiative is to educate locals on the importance of helping to preserve the honey bee in urban areas. What started with one beehive on James Street

in 2012 has quickly grown to over 50 beehives in Brisbane and the surrounding areas, including the Gold Coast. “Absolutely gobsmacked” by the success of the initiative, Jack is passionate about encouraging people to live sustainably in the city and the important role insects play in this. “One third of our global food supply depends on the essential pollinating role these young ladies play in our ecosystem. We have the bees to thank for one in every three plates of food we eat.” says Jack. “Insects play such a vital role in our ecosystem,

and without them we would lose the capacity to efficiently produce food.” Jack believes living a sustainable city life is about making small everyday changes in your lifestyle. “Whether it is growing a portion of your own food in your yard or partnering with like-minded neighbours to share the growing load, there are many alternative ways to live sustainably in this day and age. “Keeping bees is a wonderful way to produce your own food and contribute back to your local environment and ecology.” WWW.BEEONETHIRD.COM

CONTRAST IN LINE Driven to create what has never been seen before, Paula Walden is, first and foremost, an artist, writes Hannah Doody. “I KNEW I wanted to be a jeweller when I was seven years old, roaming the jungles of Papua New Guinea,” says Paula Walden, who now shares her time between Brisbane and Paris. Paula designs contemporary jewellery and accessories inspired by period artists such as René Lalique, Salvador Dalí and Cartier. Refining her skillset over the years, today Paula is a true multidisciplinary artist. “I enjoy challenging the boundaries where jewellery, fashion and art coincide by creating imaginative, never-before-seen scenarios,” says Paula. From sketching to working with fine alloys for jewellery and anything from acrylic to wood for her accessories, options for materials are endless for

READ Paula. “At the moment I’m sculpting shoes in clay that are to be cast in brass.” But these pieces are no easy feat: each handmade piece takes time to perfect, all with Paula’s ideal customer in the back of her mind. “She’s flamboyant and fun by nature of dress yet intelligent and grounded, too cool to care and young at heart,” says Paula. Having worked with many high-profile figures in the industry, Paula says one of her greatest influences is photographer Georges Antoni, with whom Paula is planning future projects. Among

Conceptually influenced, Paula describes the strong ethos behind Yellow as “jewellery deserving a grander presence, contrary to simply being seen in detail to the fashioned body”. Now, more than ever before, people are wanting to embrace a “less is more” mentality; de-cluttering their digs as a way to cleanse the mind.

THE MOVE TO MINIMALISM From courses teaching “how to live with less”, to Insta-pics of freshly tidied linen cupboards, clutter is public enemy number one. Hannah Doody explores the idea of cleaning as therapy. I RECENTLY CLEANED out my family home. I’ve never thought of myself as a hoarder, but as I sifted through nine years worth of school books, Christmas cards, too-small clothes and a few generations of cracked iPhones that I “might need one day”, I felt as though my life was unfolding in front of me in the form of my accumulated possessions. Aside from the laughs and a couple of tears shed, why was I was left with an overwhelming sense of relief when I tossed something into the “bin” pile? I’ve realised that there may actually be some theory behind this emotional process. In our age of consumerism, we have more “stuff” than ever before. Australia’s wasteful consumption amounts to over $10.5 billion annually (which exceeds the amount spent by governments on universities and roads), and the $8 billion home organisation industry has more than doubled in size since the early 2000s. It’s been proven that physical clutter negatively 26

affects mood and cognitive processes. Now, more than ever before, people are wanting to embrace a “less is more” mentality; de-cluttering their digs as a way to cleanse the mind. The Life-Changing Magic of Tidying Up is the work of Japan’s Marie Kondo, whose insanely popular method of home organisation (KonMari) has earned her a spot on Time Magazine’s 2015 list of the 100 Most Influential People. Her method replaces objective algorithms (one year + no wear = bin) with a personal question: does the item bring you joy? If so, keep it. If not, bin it. The solution to a house full of stuff used to be upsizing storage; now we’re downsizing possessions as part of an emotional process. A study published in the Psychological Science Journal in 2014 expanded on the idea that spending money on experiences provides more happiness than buying objects. Experiences can make us content before they’ve even happened (compare pre-holiday excitement with

the frustration of waiting for your ASOS order to arrive), and this buzz can last longer than that of a new purchase due to a process called hedonic adaptation – where we stop appreciating things we’re constantly exposed to. Minimalism in fashion has also been having a moment as designers like Alexander Wang and bloggers like The Haute Pursuit’s Vanessa Hong – known for her monochromatic colours and simple cuts – are pushing the trend. Maybe there was a reason Steve Jobs always wore a simple black turtleneck and jeans, and why Mark Zuckerberg only owned three t-shirts? Did their simple way of living leave more room for creativity in other facets of their lives? Minimalism isn’t all about ridding yourself of consumerism, products and clutter; it’s about finding your own sense of self and focusing on the things you love. OH, YOU SWEET THING! Sydney’s new kid on the block, Jonathan Massaad, is taking the culinary world by storm. Isobel Larkin spoke to the 17-year-old about his next-level dessert creations. AT JUST 17, Jonathan Massaad is a highschool student by day and baking whiz by night. Working under his business name, Sugar High Desserts, Jonathan whips up out-of-thisworld dessert creations, often inspired by iconic confectionery and chocolate. Since starting Sugar High Desserts only 18 months ago, it has already managed to amass over 25,000 Instagram followers. The baking bug bit Jonathan when he started experimenting with cake mixes at age 11. “I would always buy Betty Crocker cake mixes and use my favourite chocolates to decorate,” Jonathan says. “I would also help my mum cook dinner. She could never get me out of the kitchen!” Jonathan’s aunt, Gladys Daoud, and close friend, Jake Sakr, help Jonathan with Sugar

Once Jonathan graduates from high school at the end of 2016, he plans to study business at university and has set his sights on opening his own café or patisserie by the time he turns 21. HIS OWN VOICE Since being named runner-up in season two of The Voice, Luke Kennedy has come into his own. Hannah Doody chats to the singer about his new EP and whether Ricky Martin really is that good-looking. “I’M JUST IN the middle of some paperwork, actually,” says the down-to-earth Luke Kennedy when asked about his day. “Just paying some bills and stuff.” It’s hard to believe that such a talented and versatile musician can be so humble, but it’s this laidback attitude that made Luke a fan favourite on the 2013 season of The Voice. Since the show, Luke has recorded his new EP, Skin & Scars, which is the product of a crowdfunding venture on PledgeMusic. Featuring original material co-written with fellow Brisbane boy Mark Sholtez, Luke describes the five-track EP as exposed, intimate and honest. “It’s varied – Tumbling Down is folksy, New Love is stripped back and acoustic, and Skin & Scars is my most honest song to date. Luke says he is “very proud” to see Naomi grow after securing a place in Ricky Martin’s team. “He’s such a monster in the industry in terms of success, and has been an amazing mentor. FASHION MEMOIRS For five decades she has ruled the runways of Australia and won the hearts of fans from 17 to 70. Kellie Alderman talks to Carla Zampatti about her incredible life in her new autobiography, My Life, My Look. Carla Zampatti

WHAT ARE YOU most proud of? It’s been a fantastically eventful life! Seeing my first garment in the window of Grace Bros in Sydney in 1965 is something I’ll never forget; I drove past it about five times! Winning Business Woman of the Year, designing a car with Ford, being given an Order of Australia honour. People have been extraordinarily generous to me throughout my life. If you could time-travel to 1965 when you started and give yourself some advice what would it be? Stop worrying, just do it and have more fun! What has changed the most in the industry since you started? Women have changed so much. Women run their own lives now; they are financially independent, educated and ambitious. They want it all and I think you can have it all as long as you have enough energy and drive. Women can achieve all they want – that has had the biggest influence on fashion.

How do you stay relevant? I’m an optimist, I’m curious and enthusiastic, and I like to learn new things. That’s the right attitude for fashion because every six months you have to come up with something new. In fashion you are only as good as what you are doing right now. What are your favourite trends from the past 50 years? Trends are indicative of the time we live in. I loved the 1980s because big shoulders was all about dressing for where women were going – into the office, the boardrooms – they had confidence and drive and it was saying “here I am”. Least favourite trend? Low hipsters. Do you plan? I have never made a plan. With each success I’ve just taken the next step. That works for me. MIANN SCANLAN Today, I am: the girl who can and will do it all. By Christie Sutherland.

WHAT DOES THE Today, I am campaign mean to you? There are no words more powerful than “I am”. The beauty is, we each hold the power to determine what comes after them. Why do you think knowing and loving yourself is so important? Knowing yourself is never easy. Our relationships with ourselves change daily and it’s a journey that will continue until the end of time as we grow and mature. I believe loving yourself is a product of loving the gift of life. What struggles did you have in your journey to selfacceptance? My journey to self-acceptance has had its ups and downs; I think it’s a concept that for each of us is ever-evolving. It’s a challenge for anyone to adores themself every single day. I’m six months into a back injury, which has meant no running, yoga, or even surfing – which are the three key things that keep me feeling happy and positive. So it’s been a big struggle trying to not only accept my body’s limited capabilities post-injury but also adapt to the muscle loss, weight gain and general unfit feeling. But it all comes down to gratitude. I’m grateful for what I am capable of because it could always be a lot worse. It’s about shifting your focus to always shine the spotlight on the positive. How did your life change when you became more accepting of who you are? My life truly changed when I began my relationship with gratitude. Three years ago, after losing a parent to cancer, I took a year off work. I wandered into my first yoga class down at my local gym. It was totally foreign to me and I had no idea what to expect. After a relatively awkward class, I was lying in Savasana when the teacher urged us to adopt an “attitude of gratitude”. From that day forward, my life changed forever. Gratitude is all about love. Loving the great, loving the not-so-great, even loving the downright terrible. Before that class, I used to think of my body simply as a projection – something which people would use to form their opinions of me. Because of that mindset, I had a whole host of body issues and insecurities. Now, because of my spiritualty, I believe my body is an amazing, complex vessel capable of incredible things from love, to healing, to nurturing and compassion. This body carries my eternal soul around on this earth and, while I’m here, my purpose is to feel fulfilled and to enrich the lives of others. How would you describe your personal style? It changes daily and is mostly influenced by my travels. When I’m speeding through the Mojave Desert in a Mustang with my hair blowing in the breeze, Dire Straits blasting on the stereo, I’m the Californian desert. When I’m slipping into a

40

black silk dressing gown wearing nothing but my favourite perfume and diamonds, I’m a French femme fatale. When I stomp through the streets of NYC in my trusty black boots and leather jacket, I’m invincible. When I’m home after a long surf, watching the sunset as the ocean dries on my skin and in my hair, I’m free. I am wherever I am, I am whoever I want to be. What has been the biggest highlight on your path to self-discovery? I started documenting my experiences on social media after I lost a parent to cancer and my journey to self-discovery began. It started out as a way for me to express myself, like an online diary. But soon I realised I had an audience who were not only reading my words but responding with similar experiences on their own journey. I’ve always remained extremely honest and open about my ups and downs, in the hope that I can encourage others to do the same. It’s truly touching how, when you reach out, people reach right back. How do you pull yourself out of an off day and back into positive thinking? Last year I penned some positive affirmations and stuck them to my mirror. On days when I’m grieving or can’t get out of bed, I force myself to stand up, take a deep breath and recite them. At first it’s difficult and uncomfortable, but by the end I feel a lot better. “Today I am luminous. I love my body, this incredible and complex vessel that is me. I am in awe of my body’s ability to heal, to nurture, to transform, to love and to flourish with vibrant health, divine energy and radiant feminine beauty. I see the perfection in every one of my cells and honor this physical vehicle that I have been blessed with.” – miannscanlan.com What’s the one message you would like people to take away from this campaign? Beyond loving yourself, love everyone around you, even those that have hurt you. Because, without them and those difficult experiences, you wouldn’t be the person you are and have the perspective you do today. What is the most important lesson you have learnt? To love. Love it all. I’ve learnt to love even the darkest, most painful moments of deep grief. I love them just as much as I love the exes who’ve cheated on me, the bullies at school who tried to break me and even the internet trolls who try to put me down based on my appearance. No matter how low you may feel at certain moments, love truly does conquer all. So, Today, you are? Still figuring it out, and I’m excited for what’s to come. The good and the bad. READ

I HEAR IT all the time. In cafés, work corridors, school drop-offs – when someone asks how you are, hands down, the most common response is “I’m busy.” Even more interesting is how people respond. HEART AND SOUL FOOD The Defiant Duck makes the kind of food from the Deep South you wish your mama made, discovers Elizabeth Best. WHEN IT COMES to all-American Southern comfort food, I turn from a sophisticated gal into a salivating mess. Forget napkins; slap a bib on me and I’m good to go. So it was only appropriate for this little black duck to visit The Defiant Duck at Gasworks Plaza on opening day to try their homestyle soul food. And though the food here is well and truly of the Deep South – think buffalo wings and pulled pork burgers – the culinary presentation and restaurant atmosphere is much more schmick. The vibe’s still relaxed, but it’s smart-casual and there’s not a bib in sight. I vowed to try not to get rib sauce all over my face. But this was one promise I was bound to break. The Coca-Cola beef ribs were so melt-in-your-

mouth, fall-off-the-bone delicious that, despite using a knife and fork, I still ended up with sauce everywhere. But I didn’t care, because they were delicious. Mac and cheese is a must at any good soul food kitchen but these guys make it next-level by crumbing it croquette-style. On breaking them open, the soft, gooey cheese oozed onto the plate and you just knew it would taste positively sinful. American joints aren’t usually known for salads, but, surprisingly, the Super Bowl Salad was the perfect accompaniment to the heavier ribs, and was incredibly visually appealing to boot. Light

and zesty, the combination of the kale, basil, mint and beetroot really complemented the heartier dishes. And what’s comfort food without a decadent dessert? The Mighty Duck Sundae – cookie dough ice-cream, shaved chocolate, marshmallow, peanut brittle, pomegranate seeds and cool whip – was indeed mighty and was plated so prettily I felt bad messing it up. Looking for an alternative way to get a smoking-hot summer body this season? Brisbane’s Jen Kerven shares how dancing has changed more than just her waistline. AS WE GET ready to dive in to Summer, we’re all hitting the gym to prepare for those glorious beach days and relaxing backyard barbecues. It’s no secret that exercise is good for your body and mind; but for Jen Kerven, dance is so much more than a hobby. The 34-year-old Brisbane-based beauty uses ballet to stay fit and healthy and as a tribute to her mum, who passed away last year. ‘It’s never too late to start,” says Jen. “Mum used to take me to all of the Queensland ballets. I had always lacked confidence to dance as an adult, but after losing Mum I finally felt inspired.”

From a young age, the claims insurance assessor adored dancing. Growing up, she took jazz and tap classes but eventually looked for other ways to stay fit. “I’ve done boot camps which left me in tears and joined gyms I never used,” she says. Che Pritchard, a professional dancer and choreographer at Brisbane’s Mad Dance House, says any type of dance is a fantastic option to stay active and strong. “Strength, awareness, balance and physical conditioning are all benefits. Plus I love the

contribution dance makes to people’s lives in terms of entertainment, emotional release, storytelling and community building,” Che says. Jen admits dancing her way to health has been life-changing. “No matter what has happened in my day, it doesn’t matter when I’m dancing. After a ballet class my partner comments on how happy I look,” she says. “It’s improved my self-confidence and therefore I feel better about my body and image. Overall I’m more toned and I have more energy and zest for life.”

The newest sensation in fitness involves a bit of a nude awakening, writes Elizabeth Best. AS I LEAVE the house today, bag slung over my arm, I can’t help but think I’m forgetting something. Keys? Check. Wallet? Check. Phone? Check. Pants? Ah, pants. Well… sort of check. You see, today I’m going to work naked from the waist down – Lululemon naked. I’m trialling a pair of pants from their Sensations range, and I’ve chosen the naked-feel Align pant. I have to say, despite being 100 percent certain I have pants on, there are times where – save for a teeny seam brushing against my leg – it actually does feel like I’m wearing nothing at all. But while the pants feel so, erm, free, they actually look just like a regular pair of black tights; perfect for office-to-workout transitions. The visions of me

What made you want to work with clay? I took an elective class in ceramics within my design degree and loved working with the material – the control you have over the prototyping and production, as well as the element of surprise in terms of glazing and firing. How did you settle on your trademark design of marbling effects and geometric shapes? I wanted to design a piece that was equally functional and interesting. Once I had the shape, I started playing around with methods of decoration. The marbling happened by accident but I was thrilled with the results and stuck with it. How long does it take to create one piece? Before making each piece I carve forms and make moulds, but once that is done, pieces take about 10 days to get through – two firings, glazing and two sandings. Do you have any plans to expand your brand? I hope to launch a new range of work following Christmas. Some aesthetic traits will carry through into my new work but I don’t want to give too much away! Do you have any upcoming plans for collaborations with other designers? Yes! I am making work for Melbourne-based clothing label Handsom and Sydney-based natural home and body brand Theseeke.

How did you get your start in pottery? After studying fine art at the Queensland College of Art, I exhibited my paintings and screen prints for many years before taking up ceramics in 2013. I put a few pieces for sale on Etsy and things took off from there. How has your experience in fine art contributed to your clay designs? My love of painting, my layering of colour and use of positive and negative space are definitely reflected in my designs. Even some of the shapes of my handformed plates are very similar to shapes found in my paintings. What do you love about ceramics as a medium? It’s the imperfect form I love – the uneven edge, the organic shape, the imprint of a finger left by the maker. Where do you draw your inspiration from? I look for shape and form in the things around me, particularly in nature and the coastal landscape. I also devour art books and design magazines, and I love Pinterest. You teach pottery classes; what do you enjoy about this? As I work alone most of the time, I love the social interaction that comes with teaching. Also, the teaching and learning process is a two-way street – I am often inspired by my students’ process of discovery.

Hamptons style throughout the home, resulting in a sophisticated yet homely aesthetic which works harmoniously with the Queensland lifestyle. Evermore Designed Homes worked with a fall to the back of the block by structuring the rooms to step down the site and adding a raked ceiling over the alfresco area overlooking the pool. A colour palette of grey and white was selected along with spotted gum timber flooring. To meld with the Hamptons style of architecture, the look was carried from the exterior through to

all of the interior finishes and fittings, including Hamptons cabinetry detailing and complementary furnishings which unified the Hamptons theme. DESIGNED TO WANDER THE DUSTY OLD scooter revved as Van handed me her only helmet and gestured for me to hop on the back of the scooter. “Are you sure you’ll be OK?” Katie asked as I clipped up the helmet and jumped on. “Yeah! See you soon.” I smiled and wrapped my arms around Van’s tiny waist as the scooter jolted off into the night. It was a hot and humid June evening and I was in Hoi An, Vietnam on a design trip for local fashion label Village. Designer Katie and I had been stressing over one particular top for hours. The pieces of lace we’d been offered by the tailors weren’t quite right. So Van, being the hospitable local that she was, offered to take me to a shop to find the perfect replacement. Katie wasn’t so sure. 94

Understandable: it was late, I would be going alone and we were in a completely unfamiliar country. But I was like a kid in a candy store and didn’t hesitate. That’s how I ended up on the scooter with Van, winding through Hoi An’s back streets and alleyways on the hunt for the best piece of lace trimming Vietnam had to offer. “Xin-Chào!” My distinct Australian accent was all too noticeable as we pulled up to the shop. Three women looked back at me with perplexed expressions. Van explained why I was there and soon they were handing me bags and bags of lace trimming to rummage through. The perfect piece in hand, Van and I jumped back on the scooter and made our way to my motel, chatting about

Vietnam’s road rules (or lack thereof). I got to know Van outside of working hours and experienced something very few people I know ever will! For me, that’s what travelling is all about: experiencing the culture first-hand without hesitation. Why would you go to a country and not try everything it has to offer? The food, the language, and the people; there’s always something new to learn or experience. The ride through the backstreets of the city was just the start of an adventure that I will remember for a lifetime. I was fortunate enough to experience many more instances of the beautiful culture, architecture, food and people while I was there. alike even in the quiet months when I visited. What it lacks in size, Hi An makes up for in its character and atmosphere. The history of the palce is evident in the buildings and the faces of the locals. There’s an amazing mix of Japanese, Chinese and French cultures in the architecture and food. The surrounding areas are generous in scenery and rural charm, with a presence that seems to have remained untouched for centuries. You could stay in Hoi An for months and still be in awe of its beauty. I hadn’t travelled much before, but my visit has given me a serious case of wanderlust.
