With festive food, stunning live shows, and delightful entertainment inspired by the natural world, SeaWorld’s Christmas Celebration saw the creation of many new and unforgettable holiday memories. On December 11th, Orlando rocked in the holidays at the 9th annual “Violectric Holiday Show” at the Walt Disney Amphitheatre in Lake Eola Park. The free and public concert presented by the City of Orlando Department of Families, Parks and Recreation, featured traditional holiday songs mashed up with classic rock tunes and modern hits delivering a fun-filled, energetic and highly unique holiday show unlike anything seen and heard before. The pet friendly concert was simulcast around all of Lake Eola. Violectric has also teamed up again with Pet Alliance of Greater Orlando for the show and attendees were encouraged to bring a pet supply or donate to Pet Alliance. From January 5th - 9th, runners and Disney-lovers united for the highly anticipated Walt Disney World Marathon Weekend. When you participate in the Walt Disney World Marathon Weekend, you become part of something incredibly special, by running right in the heart of The World’s Most Magical Celebration. For the final race of the weekend, registered attendees joined Mickey, Minnie and friends on the most magical course on earth for an extraordinary 26.2-mile race through Walt Disney World Resort and encountered delightful surprises along the way. From the marathon to the 5K, all participants enjoyed each step of the way through the Disney theme parks during the 50th anniversary celebration of Walt Disney World Resort.

Happy New Year! 2022 is on track to be another memorable year and as always, I’m going to be right here every month bringing you all the latest recaps and highlights. For now, it’s time to wind the clock back to December and find out how the city of Orlando celebrated this past holiday season and the start of a new year. Here are a few of the highlights, just in case you missed it! The Asian Lantern Festival: Into the Wild, sponsored by T-Mobile, returned for the second year last year and continued to January 16, 2022. The festival featured more than 30 larger-than-life, hand-constructed lantern displays lit by more than 10,000 LED lights. The result was a dazzling display of color, light and sound celebrating art, culture and beauty of traditional Asian lantern festivals. The lanterns were set up on a 3/4 -mile trek throughout the Central Florida Zoo & Botanical Gardens. There is no better way to celebrate the holiday season than gathering your family for Christmas at Gaylord Palms Resort

& Convention Center in Kissimmee! This holiday season’s event wrapped on January 2nd and included new shows, dozens of Christmas trees, ice tubing and a new interactive experience based on the movie, “Elf.” New this year was a Broadway-style show with acrobatics and high-flying stunts called “Cirque: The Spirit of Christmas.” Over in the resort’s atrium, a new light show called “Shine Light Show” featured thousands of upgraded lights synced to a seasonal soundtrack. Other activities in the Christmas at Gaylord Palms lineup include ice tubing and snowball building, a Christmas tree trail, themed scavenger hunts, and more. Guests could also experience the Three Kings Festival in “The Journey of Los Tres Mago” or the birth of Jesus in the musical stage show “The Greatest Story.” Throughout the month of December and all the way to January 2nd, SeaWorld’s Annual Christmas Celebration returned with all the wonderfully festive attractions they’re known and loved for! Guests sang along with holiday carols that filled the air, a sea of lighted trees sparkled over the lake in a wintery, watery wonderland, and world-famous skaters

It should come as no surprise to learn that Holidays at Universal Orlando has won Theme Park Insider’s first-ever award for Best Holiday Event. Featuring Christmas in The Wizarding World of Harry Potter, Grinchmas in Seuss Landing, and Universal’s Holiday Parade Featuring Macy’s, Universal Orlando’s holiday festivities picked back up in 2021 after a tough 2020 throughout the industry. Anyone can “Ho-ho-ho” and “Fa-la-la” for the holidays. But if you want to scream, laugh and shout your jingle bells off, you’ve got to awesome up your holiday at Universal Orlando Resort, where we do the holidays big time. It’s the biggest, loudest, awesomest holiday celebration of the season. Uncorked was the city’s chance to see Orlando Ballet’s dancers perform up-close-and-personal in their new home, Harriett’s Orlando Ballet Centre. One of Uncorked’s unique features is getting to experience Artistic Director Robert Hill and a few Orlando Ballet dancers choreograph right in front of you. Uncorked has established itself as a popular gateway to ballet because it demystifies dance for new audiences and shows that ballet is an art form for everyone. The EPCOT® International Festival of the Arts kicked off January 14 and runs through February 21 presenting an inspiring way to celebrate the best of the visual, culinary and performing arts, all in one destination. The festival made its original debut back in January of 2017 and has quickly become a fan favorite! This year’s festival is extra magical since it’s taking place during The World’s Most Magical Celebration honoring the 50th anniversary of Walt Disney World® Resort. New art is created and revealed regularly throughout the entire Festival so guests can look forward to a new experience every time they visit.

Chef Francois Executive Pastry Chef In the culinary world it is well known and respected that classic, and indeed modern pastry was created by masters of these arts in France. It was therefore inevitable that we simply must have an authentic French Pastry Chef to excite and delight our members. Enter Francois Paille, Executive Pastry Chef of London House. Hailing from Alsace in France, Chef Francois discovered his passion at a tender age, making cakes and cookies with his grandmother in her kitchen. By the age of 16 he began his formal apprenticeship at the most acclaimed Patisserie in his hometown of Haguenau. After 5 years of dedicated study he moved to Lyon, known to this very day as the ‘Culinary Capital’ of France, where he continued to perfect his craft with some of the most eminent pastry chefs in the world. During his time as an apprentice, Francois dreamed of living in the United States. It was then that an investor recruited him to open a Macaron business in Miami. This opportunity was an easy decision for Francois to live his dream in America! Since then, Chef Francois has crafted masterpieces in some of Florida’s most prestigious and acclaimed establishments, before joining London House as the Executive Pastry Chef in 2021. Francois now deploys his knowledge, skills, training and experience to regale members with his wonderful breads, viennoiseries and desserts that otherwise could only be found in the most renowned bakeries of Paris. Committed to only using only the most authentic ingredients, such as the butter he personally imports from France, his modern and elegant style provides a light and decadent touch to every dining experience.

THE APPLE: A masterful dessert, shaped to visually encapsulate a perfect apple, containing diced Granny Smith surrounded with an apple ganache. This delicacy is complete with apple coulis and a honey tuile. A smooth honey caramel is drizzled on top before degustation.

LE CIGAR: A House favorite, this Cigar shaped dessert is garnished with Montecristo Ganache and Tonka Caramel. This culinary delight is served ‘smoking’ table-side underneath a cloche, for a deeply sensory effect.

MONT BLANC CHEESECAKE: ‘Mont Blanc’ is a French dessert constructed of chestnut cream, chantilly and meringue. Strategically placed on the

top of the creamy and rich cheesecake, then finished with a blueberry coulis, and black current sorbet.

THE PUMPKIN FINGER: A tender pumpkin cake filled with 64% chocolate from Madagascar and covered with fresh Mascarpone. The dessert is served with cinnamon ice cream and a pumpkin creme brulee.

Boulangerie

To be called a Boulangerie, a French bakery must bake their own breads on the premises, earning them the title “Artisan Boulanger”. This authenticity means that your baker is the real deal, hand crafting each baguette, loaf and pain de seigle in their own kitchen, as opposed to a ‘depot de pain’ where they merely sell breads that were baked elsewhere. A true Boulangerie is rare to find outside of France, but London House is as authentic as any bakery you might find in Paris or Lyon. Chef Francois and his pastry team not only qualify for the “Artisan Boulanger” title, but they also serve house made Viennoiseries such as Pan au Chocolat and croissants, handmade daily with the freshest and most traditional ingredients, many of which are imported directly from France. Additionally, these delightfully house made offerings, which are served in the club daily, are now available to take away from our recently launched curb-side service to members. London House now offers a unique and special new addition to their services by providing the option to take home these fresh and authentic French breads and pastries. A full coffee menu is also available to take ‘on the run’ by simply calling the concierge and placing your order. As you arrive at our private covered valet entrance a butler will deliver them directly to you in your car, providing the ultimate in convenience, freshness and efficiency of your time, every time. Afternoon tea Anyone? Our culture today swears by a strong cup of coffee in the morning and a strong cocktail in the evening. What we haven’t quite embraced is the British art of Afternoon Tea, but London House sure does! Today, afternoon tea is almost as emblematic of Great Britain as the Union Jack. In fact, many people probably suppose that the ancient Anglo-Saxons brought this concept with them when they first arrived. The truth, however, is that this delicious tradition dates back only to the 1840s. At that time, British society relied on two daily meals: a breakfast-lunch combination at mid-morning (which we now term ‘Brunch’) and a late supper (which we now call dinner). In the mid1800s though, dinners started getting served later and later, at least in wellto-do households. This was because gas lamps allowed people to dine after the sun had gone down. Of course, these ever-later dinners meant that

many people were frightfully hungry throughout the early evening hours. To address this issue, Anna, Seventh Duchess of Bedford, devised the ritual of afternoon tea. At first, the Duchess sat alone in her boudoir drinking her tea and snacking, but soon she hit upon the idea of inviting friends to join her in this practice at Woburn Abbey, her country home. Among women of the upper classes, and later among other classes, an enduring custom was born.

London House embraces this quaint, but practical tradition and offers a daily Afternoon Tea service to its members. Accompanying the towers of irresistible offerings, lovingly prepared by our pastry team in the early hours of each morning, are over 380 different teas to choose from (not to mention over 30 champagnes). After all, one would not want to get bored, would one!

Cheesecake INGREDIENTS: Cream cheese 1320g Sugar 400g Sour cream 370g Eggs 7 each Vanilla Extract 7.5g Corn Starch 45g Heavy Cream 255g Graham Cracker Powder 2.5 cup Brown Sugar 1.5 cup Melted Cutter 1 cup

Recipe: Cheesecake Serves 8

INSTRUCTIONS: • Preheat the oven to 200 degrees F. • In a bowl, mix together with a spatula the graham cracker powder, brown sugar and melted butter. • Pour the mixture into a 10” cake pan and, using a spoon, press it against the bottom and sides of the pan. • In a medium sized mixing bowl, whisk the cream cheese, sugar and the vanilla until ingredients are evenly mixed. • Add the sour cream and eggs to this mixture using the whisk. • Gently fold the cornstarch followed by the heavy cream into the mixture. • Pour the mixture into the cake pan. • Bake the cheesecake for 90 minutes. • Place the cheesecake in the refrigerator until it is completely cool.

INGREDIENTS: Vodka Blueberries Simple Syrup Lemon Juice St. Germain Mascarpone Foam

INSTRUCTIONS:

Smooth, bright, but not too sweet, the Berry Manilow will have you gazing into the eyes of your date wondering, "Could it be Magic?"

MASCARPONE FOAM: 3 egg whites 1 spoonful of Mascarpone cheese 0.5oz room temperature water 0.75 oz. lemon juice 1 oz. simple syrup With a hand mixer on medium speed, whip all ingredients until soft peaks begin to form Gently spoon onto beverage

Muddle 2 oz. of vodka with the 6 fresh blueberries ADD: 0.5 oz. simple syrup 0.5 oz. fresh squeezed lemon juice 0.75oz St. Germain Elderflower liqueur Shake and double strain into a coupe, top with a mascarpone foam

The History of

Valentine’s Day Valentine’s Day. Some of us love it. Some of us despise it. Some are indifferent. Regardless of one’s stance, the holiday is best known in modern times as a day to indulge in our shopping and sugary impulses all in the name of love. However, this day of heart-shaped celebrations has an ancient—and intriguing—origin. While we celebrate Valentine's Day with cards, jewelry, flowers, romantic dinners and all other expressions of love, the history of the holiday is quite surprising. The truth behind Valentine’s Day is that nobody really knows the true history behind it, nor do any of the theories completely add up. Even historians find themselves debating over the traditions from which the present-day holiday takes inspiration. What we do know is that it’s backstory—though not confirmed—isn’t all candy hearts and roses. It is quite dark and even a bit gory.

As you may know, the day is named for St. Valentine, but why? Who is this mysterious Valentine? It’s possible that the holiday of love is based on a combination of two men. There were, after all, two Valentines executed on February 14 by Emperor Claudius II. It's believed that the Catholic Church may have established St. Valentine's Day to honor these men. It’s possible that one of these men, Saint Valentine of Terni, had been secretly officiating weddings for Roman soldiers against the emperor's wishes, making him an advocate of love. Another story involves the practice of writing love letters to a Valentine. It's said that St. Valentine wrote the first “valentine” greeting to a young girl he tutored and fell in love with while he was imprisoned for the crimes outlined above. It is believed that before his death, he wrote her a letter signed “From your Valentine," which remains a commonly used phrase on this day.

However, a University of Kansas English professor, the late Jack B. Oruch, had a different theory. Through research, he came to a conclusion that the poet Geoffrey Chaucer linked love with St. Valentine for the first time in his 14thcentury works "The Parlement of Foules" and "The Complaint of Mars." Therefore, Oruch claimed that Chaucer invented Valentine's Day as we know it today. Whether or not Chaucer is accurate, it is true that he and fellow writer Shakespeare popularized the love-filled traditions surrounding the day. Not long after, people began penning and exchanging love letters to celebrate Valentine's Day, and by the early 1900’s, an American company that would one day become Hallmark began distributing its more official "Valentine's Day cards." Flowers, candy, jewelry, and more followed, and the rest, as we know it, is history.

Can you share with us your career and business developments over the years in Orlando? What are some of the services and how would you describe your business? I am proud to have started my career early on in Orlando. While attending Dr. Phillips High School, I landed my very first job at Universal Studios where I worked as a seasonal employee as a store clerk in the merchandising department. I transitioned from Universal Studios to Sea World where I sold pearl jewelry at the Pearl Factory. These two jobs along with my family's relationships within the Theme Park industry were my entry into the Theme Park world. In 1995, following completion of my undergraduate studies from UCF, I started a company called Jay Jewelry and took it public in 2005. In 2008, I launched Global Eye Wear and Global Promo which heavily supports theme parks and attractions across the country and the travel and hospitality industry at-large. In 2015, I merged Global Eye Wear with a private equity firm based out of California. Under the Global umbrella, I also own and operate Global Sun which manufactures apparel, drinkware, and headwear also catering to the hospitality industry from theme parks, resorts, chain restaurants, and private businesses for corporate identity. The fourth division under Global Enterprises is Global Medical Supplies which distributes PPE and hospital products. Much like many industries, my businesses were negatively impacted due to COVID-19 in 2020 which caused me to pivot into action alongside physicians and partners to launch a new business called COVID Testing LLC. We pride ourselves on being the largest privately owned testing service in Central Florida. My newest venture is M&S Global, an innovative medical device and advanced medical technology company. Why Orlando, what is it about Orlando that has kept you here?

Although I firmly believe in giving back to the community, I don't like to disclose how I have contributed. It's an honor to support this community and I will continue to do so selflessly in a confidential manner. Autism Society of Greater Orlando The Autism Society of Greater Orlando is the oldest and largest non-profit autism organization serving the Central Florida Autism community. The current rate of autism is 1 out of 44 children and the need for services in our community has continued to grow. In fact, it is estimated that over 82,000 people with autism are living right here in the Central Florida area today.

ASGO has continued to grow programs to meet the increased needs since 1996. On October 23, 2021, ASGO celebrated with its Inaugural “Make A Difference” Gala at SeaWorld Orlando. This annual event allowed us to raise funds that stay in our local community to support those living with autism today. ASGO offers approximately 200 programs, events, trainings per year to individual with autism, their families, and the community. Some of our largest programs include Autism Awareness Training for Law Enforcement Officers, Social Skills Groups for individuals with autism ages 2 - 35, Autism Art Program for young adults, Angel Fund that supports those families in need, and family events such as our annual Autism Walk & Family Fun Day (scheduled for April 16, 2022 in the Orange County Convention Center) that allow every member of the family to come together in a safe and secured environment. Rikku O’Donnchü the viking chef Lands at London house Chef Rikku Ó’Donnchü, also known as The Viking Chef has had an incredibly storied and successful career thus far. He constantly evolves his craft by exceeding the limits of gastronomic possibilities; thereby collecting countless accolades around the world. With his esteemed career, we are thrilled to announce that Rikku will be joining the London House team, pushing their renowned culinary delights to

new and exciting levels, utilizing ingredients, flavors and techniques that will assuredly draw the attention of foodies locally, nationally and abroad! Hailing originally from England, Rikku was born in Leicestershire and grew up in the small town of Chilwell in Nottinghamshire. Humbly raised, Rikku found it necessary


to seek employment while attending college in his hometown. His job search yielded an entry level position at the restaurant, Harts in Nottingham, led by Michelin awarded Executive Chef Aaron Patterson. It was here that Rikku encountered the world of high-end contemporary cuisine, something that he previously did not realize even existed. He instantly felt that “he was made for this,” and that he found his true calling. Rikku continued to pursue his collegiate studies with a focus in Chemistry, for which he has a passion, however he continued working in Michelin awarded kitchens throughout England and Europe. While working at Hambleton Hall, Rikku was presented with the opportunity to work for Marco Pierre White, The Godfather of modern Cookery. This experience allowed him to take his career to the next level, with extended tours over the coming years at Chez Dominique, Thomas Keller’s The French Laundry, and The Fat Duck. These were by far the most influential years and postings of Rikku’s career; during which he amassed the skills and experience to become the chef that he is today. After these incredible experiences, as well as others to follow in New Zealand, Asia and Scandinavia, Chef Rikku moved back to the UK in 2012 and settled in at Merchants where he began showcasing his creativity and honing his unique style through the combination of science, chemistry and gastronomy. In 2016, Chef Rikku was honored to be featured in the Netflix series MasterChef the

Professionals where his dishes were described by the judges as, “challenging, dynamic, intricate, and border-line genius…” After the filming of MasterChef, Rikku relocated to Cape Town, South Africa. While in Cape Town, Rikku originated the kitchen concept, restaurant, and food for the new restaurant GÅTE, on the Quoin Rock Wine estate. He and his team pushed molecular gastronomy to entire new levels featuring an immersive 16 course dining experience and attracting numerous awards includin; Global Best Chef, Global Best Restaurant, Best Molecular and others. As a celebrity chef, Rikku has made countless other appearances in television, magazines, cooking shows, as well as having had his dishes featured on the cover of The Great British Cookbook. In 2021 Chef Rikku and his family said goodbye to Cape Town and journeyed to Pennsylvania where the well-known restaurant, Amorette, was set to reopen post pandemic under Rikku’s confident leadership as Executive Chef. The patrons and critics were immediately astounded, raving about Chef Rikku and his team as they combined incredible artful plating with bursts of flavors and new ingredients. While enjoying the immediate successes at Amorette, including a James Beard Nomination (award results pending), Rikku began longing for the sunny afternoons and sea breezes he was used to in Cape Town, leading him to our Florida shores and the London House kitchen. At London House Rikku and his team will strive to elevate every aspect of the dining experience, focused on full immersion through all sensory elements and robust flavors!

New year, New Memories to Make Since Little House first opened in May of last year, it’s the perfect time to reflect on all of the unique and magical memories that have been made and just how much entertainment, special events and activities have been so wonderfully facilitated. Not even one year around the sun, yet the relationships built, and creativity being perpetually born warrants its own sense of pride. Creativity and uniqueness mark what Little House stands for as we look back on a few of the moments in 2021. A favourite among our Little House junior members was the ‘Be a Judge’ Tasting event, hosted by London House Executive Chefs. The children took their places on a judging panel and tasted a variety of experimental dishes to vote for their favourites, with the winning dish being added to the new Junior menu. During his career, head Chef has earned an impressive twelve Michelin stars, but standing before this gaggle of twenty young critics was an experience to remember. Mac ‘n’ Cheese connoisseur Gabriel explains, “I don’t want to be too harsh, just honest. I love all the different sauces and I want to eat the special steak every day!”. Another junior member proudly presented the chefs with their own ‘MiChildren’ award and described the “tough competition between the pecan and blueberry tarts”. Needless to say, plans for more junior tasting events are set for the coming year, expanding into the ‘Chefs Table’ to include Chef Francois glow in the dark deserts. Another popular interest among Little House fans is of course, animals. The facility has been graced with all sorts of furry (and scaly) friends over its course. Hidden behind the cuddles and laughter is an educational focus, unbeknownst to the children, subliminally imprinting extra-curricular knowledge. Something Little House is skilled in doing, allowing the magic of learning happen naturally whilst having fun. From an array of farmyard animals and reptile encounters to quality time with therapy ponies and therapy dogs. Little house was filled with more than ten breeds of gentle puppies, accompanied by dedicated handlers in a moving experience for the children to roam the space whilst interacting, chatting and storytelling.

Pawfection Dog Training LLC was positively ‘pawfect’ in delivering a memorable event for everyone involved. Many acclaimed studies have proven that therapeutic interactions with animals can help alleviate stress, assist in calming children, and promote the development of their social and emotional skills. Another wonderful example of this is when friend of Little House, Susan Nastaci, founder of ‘Soul Haven Ranch’ brings joy to the members with her miniature therapy ponies who always enjoy coming to play with the children. Little House strives for balance and the alignment of activities with the individual interests of all its junior members. Where there are video games, there is Yoga. Alongside regular activities such as weekly Martial Arts training, gardening and singing, Little House has built valuable partnerships with local guest entertainers for direct access to the most popular characters, from the likes of Elsa and Anna to Captain America. One junior member exclaimed; “The Descendants were my favourite! Evie and Mal sang the songs from the movie and played games with me. We did crafts and took goodie bags home!”. Amongst other Authors, David Blaze graced Little House with his collection of best sellers, telling various stories and signing his books for all the children. Inspiring children in different ways is Little House’s objective, but if you ask the parents, it’s the attention to care in such small groups that appeals the most. Director Rosemary Smith explains; “I would say the biggest draw for parents is that we have such low ratios. KALEY Behind every great brand is great people, and Kaley Gassaway, the ‘Membership Curator’ of London House and personal ‘Aide to the Founders’ is a shining example of this. Having joined London House at the very early beginnings of what is now Orlando’s most exclusive Private Members Club, her background in fashion design, wardrobe curation and fabric selection has proved invaluable. Kaley personally oversaw the design of all staff uniforms, helped the interior team to select fabrics and finishes for the club itself, whilst always looking as stylish and coordinated as the savvy fashionista that she is. Kaley even sourced an iron Swan door handle for the drawing room, something so unique and conversation worthy that almost everyone comments on it. Although Kaley’s primary role is to help London House ‘curate’ a membership community of like-minded yet diverse personalities, those special individuals who enjoy social interaction, have an appreciation of exceptional cuisine, service, entertainment and privacy, she has also been involved in almost every element of the business in her capacity as Aide to the Founders. From the design and build stage of the business, through to the management of creating this very magazine, Kaley is an indispensable and highly appreciated member of the London House Executive Team. In short, Kaley IS London House. Whilst most often Kaley can be found in the Private Members Office, tending to the administrative and functional needs of its members, she regularly pops down to the club to cast her eye over the environment, and more often than not will make small but important improvements. It’s this devotion to the aesthetic, as well as the practical that sets Kaley apart as someone who is truly ‘across all things’ London House. Whilst she is extremely polite and considered in the way she makes her suggestions, everyone knows that what Kaley says goes and for good reason. Her passion for perfection, commitment to the member experience and support of the Founders (amongst others) is truly stoic. She is always willing to step in and assist any of the team to solve a problem or come up with an idea that preemptively helps in their daily duties.

whilst on maternity leave (which she left until the very last minute) she would be sending reminders to the Founders & team, keeping daily track of the events and activities to make sure nothing was overlooked. Even under the pressure of new parenthood, Kaley kept on top of it all and returned to work at the earliest opportunity, having also moved into a new home and had the delights of finding the best day care for her little chap. She never misses a beat, and her charming but firm style is one of a kind. As the business has evolved, so has she. So much so, that it’s almost a default decision to ‘ask Kaley’ when you need help with something, or the task in question simply doesn’t fit with a specific role. Kaley has a special skill of always finding a way to get things done, often when others have decided it’s an impossibility. Most recently Kaley has taken a leading role in the booking, curation and management of the London House entertainment schedule. Working with our suppliers and agencies, Kaley ensures that we have a magnificent and varied calendar each month, from a karaoke or comedy night to a black tie dinner, or our now famous end of month costume parties. Kaley directs them all. She was even seen personally setting up for the New Year’s Eve Gala event, working with the decor team and performers to make sure everything was ‘just so’. Kaley is now one of the most familiar faces to both staff and members, and as our membership base continues to grow, she manages to keep up the standards and make sure that every person who comes into contact with her leaves happy. There are thousands of small details and tasks which need attending to, invisible to most people, but now you know how they get done. It is not uncommon for Kaley to be communicating at 10pm and again at 6am, any day of the week. She has a constitution for multi-tasking, a passion for task completion (never without her ‘list’!) and a penchant for perfection. Kaley is a mother hen to everyone at London House, and now a mother as well. We can’t thank her enough for all that she does, the commitment and loyalty she shows daily, and her ability to always brightening our day with her enigmatic attire!

British Hospitality It is rare to find people, or places, that still subscribe to the fundamental etiquette and principles of a more chivalrous and polite time. That sentiment, combined with the importance of integrity of ingredients and sourcing policies, the value placed on the subliminal impact of one’s environment and of course, service standards, are the very foundations on which London House was built. Whilst we now live in a more modern, and some might say competitive time, we still believe in the virtues of these often forgotten fundamentals, which used to be collectively known as ‘manners’ and ‘hospitality’. As a private club, we have the privilege of being able to focus on delivering this experience to our members, thanks to their loyal support. Unlike some private clubs, we are always delighted to accommodate private parties and large groups, as long as they are member led. London House has hosted birthdays, engagements, anniversaries, business celebrations and even a wedding in recent months, showcasing our appetite and ability to deliver one of the most unique and exquisite event experiences in Central Florida. Whilst we have a modest scale for such activities (typically up to 200 people), we have the Butlers, Chefs, Bar Meisters, Concierge, Valet team, event management and standards of entertainment as much larger, multi-site organizations. For more intimate or confidential events we have 3 private suites (from 8-14 people) and a ‘Very British’ Drawing room, with a live fireplace, a private bar and 13 crystal and brass chandeliers that can accommodate groups of up to 30 people. What is

a Butler? By Mr. Williams, Principal of ‘The British Butler Institute’, London, England A BUTLER IS A JACK OF ALL TRADES, AND MASTER OF EACH ONE As head butler at Studley Royal House, I was like a real-life Carson. Here, I oversaw the entire household and managed the staff. It sounds archaic, but there needs to be a hierarchy in these vast estates in order for things to run smoothly. A typical day would start by collecting the newspapers at 6:00am and ready to provide tray service for those who wish to have breakfast in bed. The trays will have been laid out the night before, either by myself or the cook, as is the breakfast table. The principal (the term we use for the employer) will breakfast and dress with none of the kerfuffle most of us have to suffer, such as clearing the table and making the beds. We then usually have a meeting about the day’s activities and upcoming social events. The Lady of the house (and I must emphasize the importance of having a good working relationship with her) will often have a lunch meeting with friends, then work much of the day in her office on estate matters. The Butler is expected to help organize the social calendar with the Lady of the house, perhaps for an upcoming garden party, for which she wishes to start planning menus, decor and performers. Meanwhile, the principal may need driving to a meeting or be hosting one at the home, for which my attendance is required. In any spare gaps I'll be found polishing the silver, cleaning the cars, opening the post, answering the phone and front door, walking the dogs, drawing baths, dealing with contractors and suppliers whilst ensuring that the main priority is never neglected keeping everybody happy. My other duties include wardrobe management, packing and unpacking suitcases, dining set-up both formal and casual, assisting with events, set-up and delivering English

Afternoon Tea / High Tea. We also provide cigars service, champagne service, deal with situations like a drunk guest, a guest wanting confidential information, flirting guest, stealing guest, uninvited guest, train other staff members, manage the household cashflow, inventory management and this list goes on. Occasionally, I will grab a cup of coffee in a quiet corner to recompose myself! At 6:00pm we often change into tails ready for cocktails, to serve drinks and dinner. For a formal occasion (if Royalty are dining at the house) I may wear ‘White Tie’ (as protocol dictates). These duties have changed over the past 100 years, especially in first world countries where staff costs are high. For example, 100 years ago in England you would have a Downton Abbey size team of staff, but now in more modern times the butler undertakes far more duties and is required to be skilled in a lot more diverse subjects such as flower design, coffee barrister and mixology expert. In some countries, like India or Mexico, you still have a higher staff ratio as salaries are less expensive. Most notably, the popularity of female butlers has significantly increased over recent years to situation where the female butler is in equal demand to the male butler. This is largely due to the diverse nature of the clientele and how the service training that a butler receives has translated into other fields such as Stewardess on a luxury yacht or private jet. Some Butler and Executive Assistant roles are more suited to a lady, and we have seen client preferences move steadily in this direction. Ultimately, a Butler is whatever they now need to be, either male or female, according to the needs of the Principle and Lady of the house. Suffice to say, it is an ever more dynamic and demanding role that is immensely fulfilling and exciting!

Growing up in London, Katie Barnes, founder of Louis James, was quickly engaged in the fashion scene. Many of her friends in London were top-tier designers creating luxury and high-end goods. Non-Alcoholic Fatty Liver Disease

WHAT IS NON-ALCOHOLIC FATTY LIVER DISEASE Fatty liver disease is a condition in which accumulated fat in the liver can lead to swelling and inflammation, which over time may cause liver scarring, cirrhosis, and related health problems such as liver failure and liver cancer. This serious health issue occurs in up to 25 percent of Americans and frequently occurs in the setting of excess weight and diabetes. WHAT CAUSES FATTY LIVER? People who have a body mass index (BMI) of greater than 27, or are diabetic, are at higher risk for fatty liver disease. People who gain weight mainly in the abdomen are at greater risk compared to those who distribute weight in the hips or thighs. Additionally, those with a family history of fatty liver disease may have a genetic predisposition for the disease. Fatty liver disease typically occurs in conjunction with other obesity-related conditions, such as high blood pressure, high cholesterol, sleep apnea and most importantly, diabetes. HOW DO I TREAT FATTY LIVER? Currently, no medications have been FDA approved to treat fatty liver disease, but weight loss has been shown to reverse fat accumulation, inflammation and even mild scarring in the liver. Bromances aren’t new. Early American presidents often wrote endearing letters to other politicians and close male companions, like Presidents John Adams and Thomas Jefferson. However, after WWII, homohysteria drastically changed masculinity norms, and male friendships suffered as a result. In recent years, male friendships have come back into the spotlight with high-profilers Obama and Joe Biden, James Franco and Seth Rogan, and even fictional characters like The Hangover posse (yes, even Allan).

Bromance over Romance? What changing relationships mean for men and women.

According to a study of 30 diverse, straight college males, men prefer bromance over romance. Men reported feeling like they can unabashedly be themselves with their bro. They feel less judged by their close male friends and engage in “no-boundaries” behavior, such as sharing secrets, expressing anxieties and love, or platonically sharing a bed. The participants also reported expressing emotions physically by hugging or cuddling, and they felt secure divulging personal health issues in their bromances. Men also reported feeling like they have to be more “manly” in their romantic relationships, and thus aren’t emotionally fulfilled with their romantic partners. It is clear, then, that men are more wholly satisfied with their male friendships than their romantic relationships. Bromances are a progressive step forward in redefining masculinity and eradicating toxic ideals of what it is to “be a man.” It fosters conflict resolution, as some participants reported it’s easier to confront and forgive your bro. It also encourages emotional vulnerability, stability, and growth with familiar people, especially for those men who aren’t comfortable being emotionally intimate with women. Though bromances can be fulfilling and healthy for men, researchers do have some reservations. Men in the study sometimes used sexist and contemptuous language when referring to their romantic partners. They also displayed an “us and them” mentality that seemed to favor their bros over their romantic partners. This can be particularly deconstructive if bros foster bad behavioral patterns that can impact their romantic relationships, such as dishonesty and unaccountability.

Somehow I managed to drag myself away from this spectacular view and out of the deeply welcoming guest room only to find myself astonished by a lengthy list of nearby activities to participate in. Equally impressive was the ability to partake in so many of these fantastic offerings and experiences without ever stepping foot off the property. If and when you do find the will to venture away from the extravagant and relaxing amenities of W Fort Lauderdale, you’ll find a wide array of one-of-a-kind things to do. In honoring Fort Lauderdale’s nickname as the “Venice of America,” it’s all but mandatory that you set aside time to “retox” and explore Fort Lauderdale's iconic Intracoastal on a half-day boat charter. Be forewarned that spending so much time on the beautiful water without getting in will feel like quite the tease, but W Fort Lauderdale has you covered upon your return to the resort with WET. The instaworthy rooftop pool soars five floors above the ocean and invites you to soak in the sun or take a refreshing swim along the see-through pool walls. Needless to say, be sure to pack your favorite swimsuit for one of the coolest underwater photo opportunities in the city! While you’re digging through the closet picking out that swimwear, be sure to also throw some comfy workout clothes because if there’s one thing the W Fort Lauderdale knows how to do well, it’s knowing how to get that heart pumping. After our relaxing afternoon at WET, my companions and I experienced an open-air pure

barre class at sunset overlooking the Atlantic Ocean. The following day it was a Sea Sycle spin class like you've never seen before. We pumped up the wheels as Ride Element spin studio took us on an exciting workout with front row seats to those breathtaking ocean views. A selection of bikes per class are reserved for hotel guests on a complimentary, first-come, first-served basis—talk about amenities! The nationally acclaimed artist Hubert Phipps and the luxury Italian coachbuilder ARES Modena launched a new exhibition during Art Basel Miami that debuted the first ARES Modena showroom in North America, in the Miami Design District. A sculptor and painter, Phipps was also a national racecar champion and is a pilot, coming up on his 50th anniversary as an aviator. The exhibition Hubert Phipps: Ascending features several works born out of the artist’s love for acceleration and for aerodynamic forms. “I am honored to have been invited by ARES Miami to present this collaboration during Art Basel Miami,” said Hubert Phipps. “ARES is one of the world’s leading studios of high-performance design and stellar engineering is igniting new inspirations in my artmaking.” The title of this show reflects the growing national recognition of the artist (as museums and collectors across the country acquire his works), with Phipps’ history with racecars and aircraft. In addition to the launch of the exhibition during the week of Art Basel, the artist and ARES Miami are planning events in January with some of Phipps’ world-renowned racing colleagues from his time as a professional racecar driver. The new ARES S1 supercar model was flown from Italy to Miami, and has never been shown in North America. The one-of-a-kind, automotive work of art will be the centerpiece for this exhibition, surrounded by sculptures and artworks by Phipps that are seen as a perfect fit with the creative aesthetic behind ARES Modena’s singular success in automotive design. Only 24 versions of the ARES S1 supercar will be created in the entire world, each tailor-made to the client’s desires and taste, making each design unique. The ARES S1’s dramatic low-profile is similar to racing prototypes from the 70s and 80s. Hand-crafted in carbon fiber, the curvaceous wheel arches, with sculptured side skirts and forward sitting cockpit, give a sleek yet aggressive stance. The S1 is powered by a naturally aspirated V8 delivering power to the wheels via an 8-speed dual clutch transmission. The interior combines the finest Alcantara and Napa leather that is quilted in specific areas. The sculptures and artworks by Phipps in this exhibition rev up the space in the ARES Miami showroom, apace with the supercar’s electrifying spirit: Sky Temple, Voyager, Arch, Lava Flow, Africa 1, and Africa 2, plus a maquette-sized version of Rocket from the private collection of real estate magnate Lawrence Moens. The exhibition also features Phipps’ signature paint pigment drawings: Momentum, Current, Impulse, and Rhythm.

His major focus there was in the management of patients with cystic fibrosis (CF) and included participation in research in the use of nebulized antibiotics in CF. After qualification in 1967 he spent 3 years in Europe: Paris, Germany and Sardinia, doing general practice. Deciding to specialize he returned to London and did the equivalent of a fellowship in pediatric pulmonary and critical care at the Brompton Chest Hospital. He was then invited to develop a pediatric intensive care unit in Honolulu, Hawaii. In 1973 he moved to Hawaii and in the 1970’s he directed the NICU and in the 1980’s he directed the PICU. He is board certified in pediatrics and neonatal perinatal medicine. In addition to practicing clinical medicine, he enjoys teaching and has been on the faculty of 4 Caribbean medical schools. His favorite subject is introduction to clinical medicine. During his time with Ross University School of Medicine in Dominica he was medical director of student health caring for the 1,200 medical students. Dr. Light is past chairperson of the American Academy of Pediatrics section of Pediatric Pulmonology and editor in chief of the first edition of the AAP Handbook of Pediatric Pulmonology. Joseph L. Torres, M.D. Florida Sports and Family Health Centers Joseph L. Torres, MD is a board-certified physician in both Family and Sports Medicine. A native of Miami, Florida, Dr. Torres’ parents emigrated in 1961 from Cuba and settled in the Miami area. Joseph went on to study Medicine at Catholic University, and, after graduating, he proceeded to the University of Nebraska for his training in Family Medicine and subsequent Fellowship in Sports Medicine. After his training, Dr. Torres returned to Florida and started a private practice in Central Florida almost thirty years ago. During that time, he has also served as Chief of Staff at both Florida Hospital Kissimmee and Osceola Regional Medical Center. At those two facilities, he also served as Chief of Family Medicine, Chairman of the Bylaws Committee, Chairman of Credential Committee, and Chairman of Quality Assurance Committee. He was Medical Director for the Human Performance Institute and the Osceola County Jail. He was also appointed by City Commissioner Scott Brooks to the Airport Advisory Board for Kissimmee Gateway Airport, where he served for six years. In the area of Sports Medicine, Dr. Torres has been a Team Physician for the Atlanta Braves and Detroit Tigers of Major league Baseball. He has also been the Team Physician for Rollins College, Cypress Creek High School. The Orlando Seal Hockey Team, the Kissimmee Kreatures Arena Football Team, the Dominican Republic Team at the World Baseball Classic, and the Orlando Predators. He is a published author in textbooks on various Sports Medicine topics.

He is a Clinical Associate Professor for Florida State University College of Medicine, Florida Hospital Family Medicine Residency, St Mathews University Medical School, and the University of Central Florida Athletic Training Department. He regularly lectures at the University of Central Florida to the Athletic Training students. He was named Sports Medicine Physician of the Year for 2003 by the Athletic Training Association of Florida and Instructor of the Year in 2007 by the Athletic Training Department at the University of Central Florida. He has also served as a national speaker for Novartis Corporation, 3M, Takeda Pharmaceuticals and Abbott Labs. Currently, Dr. Torres is the Chief Medical Director and Founder of Florida Sports and Family Health Centers, medical facilities offering a broad range of medical services to patients from newborns to the elderly. Services include Internal Medicine, Echocardiography, Stress Testing, Women’s Health Issues, Diabetes and Cholesterol Treatments, Medical Orthopedics and more. He is also CEO/President of RMA Orlando MSO, a healthcare delivery system that provides care for patients enrolled in Medicare Advantage programs.
