In the last issue I described how flyafrica.com was built around a simple desire: to enable people travel around Africa easily and cheaply. Explaining that the prices charged for travel from one point to another are too high and that a flight between Johannesburg and Harare has gone from $200 to $39.

All these areas are things that we are proud to have initiated.

In July we will be celebrating our first birthday. For any new airline it is quite a milestone. We are all very proud of what we have achieved and what has been done in the last 12 months. One area that we have overhauled totally in the past two months is our disrupt and refund policy. It is part of our customer service policy that we have implemented as we grow into our role as the only low fare airline in Southern Africa.

Previously, the growth of Low Cost Carriers (LCCs) was exclusively within South Africa. Now LCCs are being established or considered in all parts of Africa. That LCCs stimulate and grow travel is beyond question; that competition is good for the traveller and the economy is also beyond debate. LCCs allow travel, trade and the ability to save money. It is no surprise that I am a firm champion of low fare travel.

Resistance to change and discomfort in any deviation from the status quo is also a part of the LCC growing pains. That LCCs pass charges and cost to the end user is something that many people are resistant to. Being asked to pay for luggage that with other airlines is “free” is also a big change. LCCs have to pass charges to the end user. If, for example, you require assistance to reach the plane that service is not provided for free by airports – the airline is charged. To keep our fares low we do not absorb this charge; we pass it onward to the user of the service.

To help explain the difference in our business model we have introduced a new section in our magazine and our website: flying 101. We will explain the different concepts behind an LCC and how you can save even more money.

We know that not all our charges are popular. As we grow, and as we get more market influence, we will challenge and demand that our supplier costs be reduced so you, our supporters, can save even more money.

ozambique is well off most travellers’ maps, but it has much to offer those who venture here.

This enigmatic southeast African country has long, dune-fringed beaches, turquoise waters abounding in shoals of colourful fish, wellpreserved corals, remote archipelagos in the north, pounding surf in the south and graceful dhows (local boats) with billowing sails – sounds mouth-watering, doesn’t it?

From the 2,436-m Monte Binga peak to the stunning beaches along the coast, Mozambique is a country of contrasts. As well as some of the best colonial era architecture and relics to be found on the continent, Mozambique has also preserved its African cultural heritage, which can be experienced through art, music and food.

If you have just about 48 hours on hand, here’s how you can make the most of the country...

Nature’s bounty Mozambique is a vibrant country from the bustling cities to the fishing villages. The African wildlife at the reserves is amazing and provides great photographic opportunities. One such area is Gorongosa National Park, where you can see a variety of animal species and vegetation.

Visitors can watch the majestic elephants roam across the landscape and if one is lucky, one can even see lions. The park is also home to buffalo, zebra and bucks. Near water sources there are hippos and crocodiles. This is a bird watcher’s paradise with over 400 species of birds. Visiting this park is a way of travelling responsibly and giving back to the local community as it aids in conservation programmes.

One can also travel to Niassa Reserve, a nature reserve with an area of 42,000 sq km. The vegetation consists of Miombo forest, savannah and wetlands. The reserve is home to the African wild dog, which is an endangered species.

Elephants, sable antelopes, buffaloes, wildebeests and zebras can also be found in the reserve.

of marine life that all levels of divers can enjoy all year round. Sea temperatures vary between 30°C in summer to 21°C in winter and the structure of the reefs offer pinnacles, overhangs, coral arches and much more. Reef depths vary from 10m to 40m and offer good visibility and fantastic photo opportunities. The reefs attract a variety of game fish while the coral is home to myriads of brightly coloured smaller fish, including schooling banner fish, Moorish idols, butterfly fish, blue striped snappers, barred sweetlips, goldies and trigger fish.

Some of the places you can go to for diving are the Quirimbas archipelago (comprising 27 of the world’s most undiscovered islands); Tofo (quickly becoming known as a premier world-class dive destination, famous for large pelagics, especially manta rays, whale sharks and humpback whales); and Zavora (which has two long reef systems separated by the impressive wreck of the Klipfontein at a depth of 52 m). There are also several diving lodges where one can stay such as the Nuarro Lodge, Guludo Lodge, Barra Lodge, Flamingo Lodge and Zavora Dive Cottages, among others.

Old world charm If you’re a heritage buff, head straight to the Island of Mozambique (Ilha de Moçambique) located in the north of the country along the coast near Nampula.

The best time to visit Mozambique is between May and October, when it’s pleasantly sunny and dry It is on the Unesco World Heritage List and not without reason. The Chapel of Nossa Senhora de Baluarte, built in 1522, is considered to be the oldest European building in the southern hemisphere and this place has been a port since the 15th century.

Ilha was the capital of Portuguese East Africa until 1898, when present day Maputo took over that role. The administrative buildings of the colonial era, including the Fort of Sao Sebastiao, are in the north of the island, now called Stone Town. The port function has been taken over by Nacala, but history remains in this fantastic place. Ilha de Moçambique is now a sleepy fishing village whose population lives mainly in the makuti (reed) town in the south of the island. It takes less than half an hour to traverse the island north to south on foot, but the atmosphere is magical.

Another option is to go to Inhambane (pronounced in-yam-ban) in the Jangamo district of Inhambane Province, Mozambique. It is a sleepy historic town some 485 km north of Maputo, the capital city.

Inhambane has some great colonial architecture and is considered one of the prettiest towns in the region It has some great colonial architecture (in a low-key sort of a way) and is considered by many to be one of the prettiest towns in Mozambique. It is situated on a peninsula overlooking a bay, and also serves as a springboard to the coastal resorts around Tofo beach (some 30km due east, along a reasonably good road). Don’t forget to check out the Cathedral of Our Lady of the Conception; the Governer’s House; the museum; the mosque; and Mercado Central Market for fresh produce, fish, spices and cashew nuts.

Capital carnival Apart from being the capital of Mozambique, Maputo is also the country’s largest city and most important harbour. In comparison with other sub-Saharan African cities, the urban area feels small and concentrated, with wide avenues and old trees. People are generally out and about in the streets, walking, driving and getting on with life.

Some of the places you can check out in Maputo are the Railway Station on Praca dos Trabalhadores (an imposing structure and well-worth a visit, especially on Friday or Saturday nights where live music often is played); the National Art Museum July-August 2015

You can also visit Casa do Ferro Avenida Samora Marcel, designed by Gustave Eiffel, architect of Paris’ Eiffel Tower (it has a small but good collection of Mozambican art, including several large canvases by the worldrenowned Malangatana); the Jardim Tunduru (a very pretty, albeit small, botanical garden); the Museum of the Revolution (it chronicles Mozambique’s fight for indepedence from Portuguese colonialism); and the Mercado Central in the Baixa district (it has fresh fish, crabs, calamari, fruits and vegetables, and many household staples), among others.

You can also visit Casa do Ferro Avenida Samora Marcel, a building designed by Gustave Eiffel, architect of Paris’ Eiffel Tower. It is also known as the ‘Iron House’ or ‘Steel House’ because of its all-metal structure. Originally intended as the governor’s home, it turned out to be too hot to live in under Maputo’s tropical conditions, and is now a museum. Museu de História Natural, Praca Travessia de Zambezi (close to Cardoso Hotel) is another enjoyable little museum.

Nkasa Lupala National Park is a pristine piece of nature and one of the best places in the world to enjoy a true wilderness experience

T

he one word that best describes Nkasa Rupara National Park, or Nkasa Lupala National Park is wild. Lush marshes, dense savannah and high river reeds -- the park is an extraordinary piece of wilderness, waiting to be explored. Large herds of elephant congregate on Nkasa and Lupala islands during the dry winter months.

But for much of the year, the park is awash with floodwater. Game drives go through the edge of deep pools and close to rivers where crocodiles lie in wait. For anyone who relishes the adventures of raw, real Africa, Nkasa Lupala National Park is the place to be.

Largest wet wonderland Nkasa Lupala National Park, which was earlier called the Mamili National Park, was renamed in 2012 after its two largest islands -- Nkasa and Lupala. The park is situated in the most southerly kink of eastern Caprivi, thus finding itself surrounded by Botswana on three sides. In a vast arid country, Nkasa Lupala National Park holds the distinction of being the largest wetland area with conservation status in Namibia. Though the park is also situated in Namibia’s highest rainfall area and during the rainy season up to 80% of the park is flooded, there is much to celebrate about this wet wonderland.

Who like it rough For campers who like to rough it, the park offers basic campsites at Nzalu and Lyadura in the east and south east of the reserve. However, people visiting should keep in mind that there are no facilities whatsoever at these camp sites, so visitors have to be completely self-sufficient in terms of water, food, fuel etc. And be prepared for extremely rough road conditions.

Although there is generally a ranger to collect park fees at the entrance gate, you’re all alone once inside, and it’s highly recommended that you travel as part of a convoy. Needless to say, a 4WD vehicle is mandatory as you are likely to expect lots and lots of deep mud. Entry permits for the park are obtainable at the MET office in Katima Mulio and Windhoek.

Remote, beautiful and utterly wild, this reserve is also a bird watcher’s paradise, with over 430 bird species recorded here. Birding is best from December to March, though the vast majority of

Four-wheel-drive vehicles are required as the terrain can be muddy and waterlogged. Travelling in groups with at least two vehicles is advised.

Well, if you love the sun, sea and the sand — with a pinch of adventure thrown in — Ko Samui off the east coast of the Kra Isthmus in Thailand can be that holiday destination that you have been dreaming about for quite some time now.

To explore Ko Samui, pronounced gaw (vowel like ou in cough), is an island located in the Chumphon archipelago in the gulf of Thailand, some 700 km south of Bangkok and about 80 km from the eastern coastline of southern Thailand.

At 247 sq km, Samui is the second-largest island in Thailand and the largest island in the Chumphon Archipelago of over 80 (mostly uninhabited) islands which form the Ang Thong National Marine Park, a kayaking and snorkelling paradise.

So what do you do once you are there?

At 25 km length and 21 km width, Samui is big enough for serious exploration by the adventurous and fit, but can be circumnavigated in just a couple of hours by motorbike or car. Motorbikes can be rented virtually anywhere on Ko Samui for between 120 and 700 baht per day, depending on the size and season (a small 125-cc scooter should cost no more than 200 baht).

As for cars, there are many hiring options, including the local arms of international companies such as Budget and Avis. Prices are fairly expensive (800 to 1,500 baht/day for a small car), but the convenience of a small airconditioned car may be worth it.

Other than lying on the beach with a cold drink in hand and looking at the tourists sauntering past, there isn’t all that much to see on the island. A certain pair of rocks on Lamai amuses some visitors, Bang Rak has a large but nondescript Buddha statue, and there are some waterfalls (notably Na Muang) of minor interest.

If you’re done with relaxing, you can indulge in some diving either in the nearby Ang Thong National Marine Park or Ko Tao as the visibility around Samui’s sandy beaches tends to be poor.

You can book diving day trips at dive shops, most of which are based in Chaweng. The dive boats tend to leave from the pier at Bophut and Bang Ruk.

ith urban cities like Shanghai and Guangzhou in the north and west, Southern China’s Fujian province may not always get much attention.

But the coastal province offers a fascinating glimpse of traditional Chinese heritage, a growing rarity in this rapidly developing country. Among the more fascinating pieces of history in Fujian are the tulou -- large, round, rammed-earth buildings dating back centuries.

Though there are no tulou in Xiamen, one of the largest cities in Fujian, one can visit some of these structures on a day trip from Xiamen to Yongding and Nanjing counties. The three-hour bus ride from Xiamen to Yongding, where the majority of the tulou clusters are located, takes visitors past rice, tea and tobacco fields, through tunnels and around mountains.

World heritage There may be hundreds of tulou across southern China, but not all are designated world heritage sites. Rather only 46 are designated Unesco World Heritage Sites, which are officially called ‘Fujian tulou’. Constructed between the 15th and 20th centuries over 120 km in south-west of Fujian province, it is said that they were built for defence purposes around a central open courtyard with only one entrance and windows to the outside only above the first floor.

Windows are narrow, a reminder of the tulou’s original purpose as a fortress and to keep out thieves. Inside some tulou, residents have set up a marketplace where they sell crafts, paintings and photographs of local scenery.

When it comes to food, visitors won’t find any culinary specialties, just good local village food. In addition to the food, one should try a local sweet rice wine. It’s a great dessert after a meal. Locals also sell cold beer everywhere, but that is not local.

They are just prepared for tourists.

A host of word-class natural wonders like the breathtaking Victoria Falls, the wild Zambezi River and the gorgeous Kariba, Tanganyika and Mweru lakes makes this large, landlocked country in southern Africa a place for natural attractions that rival any continental competitor.

Adding to this impressive list are several national parks of rapidly rising prominence, which are home to various species of birds and mammals.

According to experts, Zambia has some of the highest species concentrations on the continent and some of the most beautiful and wild birding destinations to get your ticks. It is said that so far 740 species of birds have been recorded in Zambia.

Zambezi area A fascinating way to spot the birds of the Zambezi area is on a canoeing safari. Drift down with the current with binoculars and checklist in hand and take it all in. They also have lots of excellent game sightings too. Choose from a tranquil upper Zambezi cruise just above the Victoria Falls or for a wilder adventure paddle down the lower Zambezi with game parks on either side of the river.

The smallest and easy-to-access Mosi-oa-Tunya National Park, which includes the Zambian side of Victoria Falls and a short stretch of the upper Zambezi, also gets its fair share of feathered friends such as plovers, skimmers and swifts. Some lucky gazers may also spot, for example, a rare and elusive Taita falcon nesting in cracks of the Batoka Gorge’s high walls, which is a few kilometres downstream from tourist town Livingstone.

Kasanka National Park and Bangweulu Wetlands Located in northern-central Zambia and famous for its roosting fruit bats, Kasanka National Park was Zambia’s first park to be placed under private management. Since 1990, Kasanka Trust Ltd has worked in partnership with government wildlife services and the surrounding communities to superintend and promote the park, responsibilities that have also been extended to the adjacent wetlands around Lake Bangweulu. It is this latter habitat, especially the floodplains on the southern

Deep in the swamps of Africa, the shoebill creeps through tall weeds, searching the waters for a big meal. This bird stays mostly on the ground lurking in shadows so its prey won't know it's there. The shoebills thick beak, which is shaped like the front end of a shoe, is the perfect tool for snatching fish right out of the water.

LIGHT ON ITS FEET: At up to 13 pounds, the shoebill is a heavy bird, but it manages to stand atop clumps of floating weeds in swamps. Its long, skinny toes spread its weight so the bird doesn’t sink down too far.

and eastern edges through which the Lukulu River flows, that is a particularly powerful draw for birdwatchers.

Amid the huge numbers of waterfowl and plains birds species in both Kasanka and Bangweulu, the star attraction here is the rare shoebill, a tall stork-like bird with a shoe-shaped beak that forages for catfish in the shallow waters. It is also said that Bangweulu is the best place in the world for scouting the shoebill.

The Shoebill Island Camp, a safari-tent facility set in the middle of the swamps, operates small poled boats through endless channels in search of these trusting and approachable birds.

Kafue National Park There is plenty to do when you are inside Zambia’s oldest and largest national park. Despite its size and

A total of 334 bird species have been recorded in Liuwa. So be sure to bring those binoculars proximity to Livingstone (only two hours drive from the tourist town) it remains little-known and largely unexplored with vast tracts of its virgin bush still untouched.

Part of the somewhat neglected southern stretch of Kafue National Park, though, is dominated by Lake Itezhi-Tezhi, an inland sea created by the dammed Kafue River that has given rise to superbly scenic, land- and water-based wildlife-watching experiences. It is in Kafue that two of Zambia’s most precious birds can been spotted. The Zambian barbet (aka Caplin’s barbet) is the country’s only endemic bird and, due to its small population and disappearing habitat, has been listed as a vulnerable species. The bright red feathers around its eyes and noisy cackle are hard to miss once identified. Southern Kafue is also one of the few places in the word to spot the colourful black-cheeked lovebird, also listed as vulnerable.

Liuwa Plains National Park Located in the far west of the country, Liuwa Plains National Park is a remote and virtually untouched wilderness. Principally known for being on the trail of a massive annual migration, every year in November, wildebeest and zebra move south from Angola across Zambia’s plains, stalked by large and impressive clans of hyena, as well as wild dogs, cheetahs and lions.

Liuwa also has extraordinarily diverse birdlife, which includes many rare and migratory species. A total of 334 bird species have been recorded, so be sure to bring those binoculars. Liuwa is considered to be the fourth most important breeding site for wattled cranes. Birders to Liuwa will be treated to glimpses of many winged critters that are rare in Zambia, such as the pink-billed lark, white-cheeked and blue-breasted bee-eaters and red-crested and white-bellied korhaans.

However, it is advisable to get a local guide if you are driving through the park, or in the company of an established tour operator like Robin Pope Safaris, the Virgin Holiday Responsible Tourism winner in 2011.

Best of all, you don’t need to spend a bounty to eat at many places in London. While these places may be cheaper than others, the quality of food they serve is awesome. So if you are strolling around in the streets of London, here’s my guide to some bargain eateries, which will keep you visiting these places again and again.

Borough Market Located in Southwark, Central London, this is one of the largest and oldest food markets here. Also a major tourist destination, Borough Market is one of London’s best places to have lunch for little over £5 at one of its over 40 food stalls. The main highlights of this market include the Brindisa stall with its superb Spanish selection, Horn OK Please for Indian street food and enticing sandwiches from Gourmet Goat.

Baozi Inn For chilli-hot Sichuan street food dishes, this communist-kitsch Chinatown café is the place to go – and the queues outside attest to it. Most dishes here have moderate heat levels, but some are genuinely tongue-numbing. Acceptably fiery delights include spicy dan dan noodles, deceptively hot cucumber salad and savoury crescent dumplings.

Delhi Grill Focusing on a concise list of home-style Punjabi dishes, this joint brings budget priced street food to Chapel Market. It is an upbeat place for sampling the likes of tilapia (fish) with coriander and coconut milk, or hearty slow-cooked rogan josh (mutton dish). There are a lot of options for vegetarians too — samosa chat, chana, bhindi and tarka dal are the most in demand. Insistent bangla beats and unyielding seats make the venue more of a healthy, spicy pit-stop than somewhere to linger.

Beyrouths The food of Beirut is the kitchen’s forte. Friendly, efficient staff dish out a roll-call of crowd-pleasers: from well-made houmous (garnished with virgin olive oil and fresh pomegranate seeds) to juicy pieces of grilled lamb and deliciously smokey baba ganoush. Vegetarian stews, such as okra served with vermicelli rice and garlic yoghurt, are also worth a punt — especially given the decent portion sizes.

India Food and beverage aficionados are now marrying Indian food with sparkling wines

W

hen it comes to finding the perfect glass of wine to go with French, Italian or American cuisine, the options are endless. But finding the ideal match for Indian food is more complicated. Wine aficionados were also never quite satisfied with the wines available to accompany Indian dishes; the former never managed to fully complement the rich flavours of the latter.

Sam Bhatia, a veteran of Continental Airlines, too was frustrated as he was not able to pair any quality wine with Indian cuisine. “As aficionados of Indian cuisine, we were never quite satisfied with the wines available to accompany Indian dishes,” says Bhatia.

Led by Frédéric-Jean Hoguet, wine expert and member of the prestigious Académie du vin de Paris, Bhatia and few of his friends started to find an answer to this question. And after lots of research, they came up with Mirza Ghalib wines.

“Mirza Ghalib complements spicy and complex flavours in one of two ways: First, wine’s acidity boosts the layers of flavours in a dish while softening its extremes -- whether of body, richness, fattiness, or spiciness. Second, the wine’s fruitiness or sweetness tones down spicy heat, letting the dish’s other flavours shine,” says Bhatia, principal and founder of the Sufi Wine Company, which produces Mirza Ghalib wines.

Food pairings The Mirza Ghalib White is described as round, velvety, aromatic, and dry, with a final touch of vanilla and best accompanies fish dishes and lighter vegetarian delicacies such as tikkas, pakoras and samosas.

The Mirza Ghalib Red is described as well-balanced with velvety smooth tannins and main aromas of red mature fruits and spices. It best accompanies north/south Indian vegetarian and non-vegetarian cuisine, such as lentils (dal makhani), curries (chicken tikka masala), assorted kebabs and biryanis. Mirza Ghalib Rosé contains a fine aromatic expression of fruits and flowers and is best accompanied with both vegetarian and non-vegetarian Indian food.

From the haven of wines Manufactured in France’s Pays D’Oc, one of the great wine regions of the country, Bhatia says the region’s rich soil, fine climate and hilly terrain led them to choose this region. “The Pays d’Oc boasts a rich and natural combination of steep slopes, hilly peaks, vineyards, garrigue vegetation and the sea. Moreover, the territory is embraced by its Mediterranean climate that comfortably enfolds the vines with its dry and windswept soils,” adds Bhatia.

Presently, it is served in 46 restaurants between New York and New Jersey, including some of the most highly regarderd ones like Devi, Tulsi, Tamarind Tribeca and Junoon. They plan to launch the wine in India, Bangladesh and other South Asian countries this year. So the next time you visit an Indian restaurant, do remember to get the perfect glass of wine to pair your food.
