Cooking in the theatre Sunday at 12pm and 2pm Peta Mathias MNZM is a respected and prolific chef, author and broadcaster who hosts gastronomic tours all over the world. She has written 17 books on food, travel, love, life and what happens if you beat things til stiff, and presented the primetime television series Taste NZ for 12 years. Her latest book is ‘Eat Your Heart Out’ unusual love stories from around the world. Peta lives half the year in Auckland and half in Uzès in the South of France teaching at her cooking school. Peta will be teaching recipes from her cooking school so the theme is South of France. Southern French food is pungent, in your face and bursting with sunshine. It’s colourful and full of unusual flavours like aniseed, lavender, saffron and nutmeg and makes you want to just jump right out of your skin with happiness (or maybe that’s the rosé!).

Author of 11 cookbooks, Annabelle has been a mainstay in Kiwi cooking television for more than 30 years. She believes that keeping food simple, easy and delicious, building confidence in the kitchen and mixing in plenty of tips, funny quips and great recipes, makes for good times with family and friends.
Mark Southon
Cooking in the theatre on Saturday at 12pm and 2pm British-born but Kiwi at heart, Mark Southon trained at Michelin star establishments in Europe before joining the food scene down under. Mark has worked and run some of the country’s top restaurants including the French Cafe, The Food Store and O’Connell Street Bistro and has starred in five TV shows including Food TV’s The Foodstore Chefs, The Best of NZ Food, TV One’s hit Monteith’s Wild Food Challenge and is the current resident chef of The Cafe on TV3 in the mornings.

Future proofing homes Smart, reliable hot water system for energy e˜ cient buildings There’s few things worse that a sub-par shower. When the water’s a bit chilly or someone else used it all up, it can put a damper on your day. But the Alternative Energy Company has a system that does away with bad showers – the ecofriendly way. The Energie solar thermodynamic hot water system available from the Alternative Energy Company is unparalleled when it comes to producing cost-effective hot water. In New Zealand, heating water can take up to 50 per cent of a household power bill, so investing in energy efficient technology makes sense. The system consists of a lightweight aluminium solar panel, which works using a refrigerant, collecting heat from the sun, as well as from the surrounding atmosphere by natural convection, along with a hot water cylinder, which ranges from 200 to 500 litre storage. Because the system is based on the temperature differential and does not rely on the sunshine alone, it is effective day and night whatever the weather. The black solar panel is made from anodised aluminium and weighs only eight kilograms, so it does not require a consent. Its dimensions are 2m x 800cm and it looks very smart and unobtrusive installed. One panel is sufficient for up to 300L capacity cylinder.
There are two models of domestic cylinder, the Eco and the Ecotop. They are available in enamel or stainless steel, and all have a clean white exterior finish. All the cylinders have an electronic controller enabling different modes of operation. The controller is also PV (photo voltaic) panel compatible. The Alternative Energy Company handles the refrigeration side of installation, including fixing the solar panels, paircoil pipework to the cylinder and commissioning the system. Once installed correctly it is a totally maintenance-free system. This solar thermodynamic technology fits well with designs where energy efficiency and sustainability are important. Tiny space, no worries Building gorgeous homes on wheels Contrary to what people might think, it’s possible to live a big life in a tiny space. The team at Amazing Spaces are testament to this – building luxe-looking tiny homes on wheels since November 2020. With a housing crisis in Tauranga and beyond, Gareth Davidson from Amazing Spaces says there’s a growing demand for tiny living. “I think there’s been a lot more outcry for something of a housing solution. I think that’s why, primarily, we’ve seen such a growing interest in recent times, especially with the way the property market seems to be going all throughout the country, and that has really boosted the want and need for an alternative like a tiny home.” But Gareth says people are still wary of council consent and making sure they are sticking to the rules. “We haven’t had any direct issues yet with councils, but councils tend to be one of the biggest holdups for tiny homes, for sure. It’s basically just a giant grey area, and nobody has a clear definition for a tiny house. Some have clear definitions for caravans, but then things get squirreley with it being on wheels or not, and council services and things like that. However, we have had great dealings with Tauranga Council who seem to be a bit more progressive and proactive when it comes to our clients siting their tiny homes.” Amazing Spaces doesn’t deal directly with councils, but they make sure their tiny homes come with helpful documentation.
“We use a company in Auckland called The Building Business, who create a building pass. This process goes over all of our tiny homes, all of the structural plans, all the products used – from the wheels to the wall lining and everything in between – and writes up a large report to say that the tiny home is up to building code. “That pass is then used as a document to supply alongside the tiny home, so if someone wants to go down the consent process, that document states that the tiny house is up to code and therefore they’re only needing to get the other side of things ticked off – things like service connections, placement and things like that.” Amazing Spaces might create beautiful tiny homes, but they also build structurally strong tiny homes, too. Each home has a custom-built chassis, steel structure, truck-grade axels and electric brakes. “Our units sit at about 9 tonne, which is not small, but it just reflects the chassis and upper structure itself; it’s not just the steel frame, but on top of that, we have two 14mm plywood barriers – internal and external – full wall and ceiling insulation, insulated cladding, which all adds to the rigidity and thermal insulation of the home. We’ve ‘over engineered’ it, but it’s also valuable points because at the end of the day, they still have to travel on the road. In our research we have also seen some really concerning examples of small chassis carrying large structures on top, a lot of which are not safe or legal to travel on the road at their everyday weight and we did not want to

follow suit.” Their stunning homes are also bigger than standard tiny homes on wheels. Measuring 11m long, 2.5m wide and 4.3m high, Gareth says most people are astounded when they walk in and really grasp the space. “Because they are so much bigger to what people might have been looking at prior, most clients get inside and are just really taken aback at how much space they have; they’re not walking into a space where your kitchen, living and dining areas are all within one step of an oven, there’s actually room to walk between areas, which people don’t expect to have in a tiny home. “We’re also working on homes at 3m width. That half a metre wider makes a world of difference to the space. At that width it really does replicate a small house, which can make that transition a lot easier.” And, Gareth says it’s not just the young folks interested in going tiny. “Downsizing, low on-going costs and the easy maintenance side of things is a huge bonus, and we’ve had a large elderly clientele coming through. I thought it would be all the young ones wanting to use it as a stepping stone, but it’s actually surprising the amount of people wanting to downsize, who want to live a bit more of a minimalist lifestyle and just get back to traveling and things like that,” he says. “With our units, although it’s downsizing, it makes it an easier transition. There are full downstairs bedrooms options, a large sized lounge
area, kitchen and bathroom, similar to what some people have now. Along with a full appliance package, stone benchtops, lots of built-in storage and a 20 per cent turn key structure, these really are a move in ready product with amenities people have come to love from a normal residential house. Ultimately that’s exactly what we wanted to achieve - a normal house on a small footprint not something that replicated a caravan with tiny facilities and amenities. Starting from $139,000 we provide a cost-effective option when compared to some of the much smaller tiny homes on the market that exceed $155,000.” Not only does living tiny tend to free up some finances, but it also frees up the time you’d spend doing household chores, such as vacuuming a four-bedroom home. “When you don’t have a big home that you have to maintain and do heaps of work on week-toweek, it gives people time to focus on the more enjoyable parts of life. “Lifestyle and finances are two big benefits we’ve found when talking to people and switching to that sort of style.” To see these beautiful tiny homes in person, make sure you come along to the Tauranga Home show; the team will have one of their double loft builds for people to walk through and fall in love with. There’s no better smell than freshly baked bread, but not many of us are lucky enough to smell that heavenly scent on a regular basis. The team at The Artisan Bread Bakers are lucky in that regard; they work Tuesday – Saturday baking fresh breads at their Pyes Pa bakery. Bakers are notorious for early mornings and long hours, but The Artisan Bread Bakers’ Brooke De Leeuw says the ‘crazy lifestyle’ suits her and the team down to the ground. “You definitely must be able to sleep in the daytime!” she says. “Our morning routine is always hectic, as we prepare fresh daily our team have a lot to accomplish before the first load of customers at 5.45am. “From there onwards it’s a constant flow of production, serve, make coffee, pack orders, pack and deliver wholesale orders ... its great fun.” It’s something that Brooke and husband Joshua couldn’t help but pursue. “We wanted to share our passion and creativity in food, and our love for the baking industry,” she says. And Brooke says it’s more than their fantastic bread that sets them apart from the competition. “I’m a Kiwi qualified and experienced baker, and Josh is a Dutch qualified and South African experienced baker, so we bring a combination of European/Kiwi favourites. “We also produce products you can’t buy elsewhere, such as our very popular Dutch bolus – a

sweet, sugary, cinnamon bun.” When it comes to running a bakery, the way you prepare your dough is very important. For The Artisan Bread Bakers, it all comes down to their sourdough mother. “Our sourdough mother is our baby. She is very important to our bakery, she’s the mother to our sourdough starters, we feed them and take care of them on a daily basis,” says Brooke. “Our baking process is a little different to the standard bakery; we only use fresh yeast, we have breads that take longer than 12 hours from start to finish, and a lot of our breads use a long fermenting process to really get the maximum flavour out of each loaf.” But what’s interesting about The Artisan Bread Bakers is their baking schedule – or rather, their customers’ purchasing schedule. The old saying: ‘change is as good as a holiday’ feels more relevant than ever in the current climate. With international travel all but nonexistent, now’s a great time to spruce up your home and think about changing things up a bit. Danielle Renee from Refresh Renovations says, with the world the way it is at the moment, more and more people are choosing to upgrade their home in lieu of a holiday. “People seem to be holding onto their properties and making them fit their needs rather than moving,” says Danielle. “We have a lot of people wanting to extend their homes, or to convert their garages to add bedrooms and bathrooms. This is ether to fit their growing needs or to significantly increase the value of their property. Although converting a garage into a permanent, habitable space includes more than just putting up walls and removing garage doors, the effort is often worth it though. “We are also finding people got ‘fed up’ with their kitchens and bathrooms over lockdown, and they want to make them more functional and modernise

There was a lot of realisation that home offices are often very important!” For those looking to freshen up their home, Danielle says it’s important to keep budget in mind, but also have an idea of what you want for the finished product. “By having a priority list of what you want to achieve it allows you to assess the best way to utilise your budget. If you want to improve more than one area in your home, planning ahead during the design phase is essential. “You may not want to renovate your bathroom quite yet, but you don’t want to knock down a wall in your kitchen if it’s going to impact your future bathroom renovation. A lack of thorough planning at the beginning is so important and is where renovations can fall into trouble. The most expensive time to make design changes is during the build phase!” Getting some help from the professionals is also a good idea, as they often know best. “It’s not your job to know how to design or plan a renovation, just like it’s not our job to tell you what you want! “It’s important to work with people who can follow your project from start to finish and who are prepared to complete thorough planning from the
