“I saw fifteen doctors and Dr Braverman was the only one to say ‘yes’, he could help me!” By Lynne Peterson Sun Times Friendly Sol Pearlman knows a good deal when he sees it whether buying and restoring antique Indian motorcycles, getting tickets for the theater or spending time with his family traveling to Cape Cod. Now, Sol can enjoy life even more after having successful eye surgery done by Board Certified Ophthalmologist Dr. Stanley Braverman of Hallandale Beach. When Sol was a youngster growing up in Brooklyn, New York, he was playing in the street with a ball that bounced into a storm drain on the curb. Eagerly, he tried to retrieve the ball with a wire hanger. Regrettably, the hanger poked the child in the left eye which affected the pupil, cornea and optic nerve. His mother took the child immediately to the hospital where a doctor patched him up, but the eye, to his familyʼs dismay, would not work normally. “From the age of six, my left eye was partially closed and I only saw shadows. As a result, I became bored reading, cut classes and had trouble paying attention. I did not excel in school as my brother and sister did and I turned out to be the black sheep of my family. As I became older, I did my best and worked in management and eventually found satisfying work as a caregiver,” Sol said. During an annual eye exam with optometrist Dr. Norman Herskovich in Fort Lauderdale, Sol asked the doctor about his eye trauma from childhood. “The doctor said he knows of an ophthalmologist, Dr. Stanley Braverman, who might be able to help me. At first, I thought the doctor was kidding because fifteen doctors previously said nothing could be done with my one eye and just to leave it alone.” Sol followed up and made an appointment with Dr. Stanley Braverman. After a thorough eye examination and evaluation, Dr. Braverman determined that the injury had caused a corneal laceration and Sol had severe corneal astigmatism because of the injury. Sol also had cataracts in both eyes. Dr. Braverman explained that by removing the cataract and by implanting a Toric Lens for astigmatism in his left eye, as well as by doing additional astigmatism correcting incisions in the cornea, this would be able to improve the vision in his eye as well as correct the severe astigmatism from the childhood injury. “When I heard this, it was an emotional moment for me because Iʼve been looking at life through one eye since I was six years old.” “Itʼs been almost a year since I had the successful cataract operation in both eyes. Consider a few reasons: * Every tooth in your mouth plays an important role in speaking, chewing and in maintaining proper alignment of other teeth. * A major cause of failure in joint replacements is infection, which can travel to the site of the replacement from the mouth in people with periodontal disease. Dr.B explained . People with dentures or loose and missing teeth often have restricted diets since biting into fresh fruits and vegetables is often not only difficult, but also painful. This likely means don't get proper nutrition. While your likelihood of developing periodontal disease increases with age, the good news is that research suggests that these higher rates may be related to risk factors other than age. So periodontal disease is not an status, diminished immune status, medications, depression, worsening memory, diminished salivary flow and functional impairments. MEDICATIONS AND ORAL SIDE EFFECTS Older adults are likely to take medications that can impact oral heath and affect dental treatment. Hundreds of common medications - including antihistamines, diuretics, pain killers, high blood pressure medications and antidepressants can cause side effects such as dry mouth, soft tissue changes, taste change and gingival overgrowth. Dry mouth leaves the mouth without enough
saliva to wash away food and neutralize plaque, living you more susceptible to tooth decay and periodontal disease. In addition, dry mouth can cause sore throat, problems with speaking, difficulty swallowing and hoarseness . Your dentist or periodontist can recommend various methods to restore moisture, including sugarless gum, oral rinses or artificial saliva products. Be sure to tell your periodontist and other dental professionals about any medications that you are taking, including herbal remedies and over the counter medications. SPECIAL CONCERN FOR OLDER WOMEN Women who are menopausal or post menopausal may experi-
ence changes in their mouths. Recent studies suggest that estrogen deficiency could place post menopausal women at higher risk for severe periodontal disease and tooth loss. In addition, hormonal changes in older women may result in discomfort in the mouth, including dry mouth, pain and burning sensations in the gum tissue and altered taste especially salty, peppery or sour. In addition, menopausal gingivostomatitis affects a small percentage of women. Gums that look dry or shiny, bleed easly and rage from abnormally pale to deep red mark this condition. Most women find that estrogen supplements help to relive these symptoms.
Bone loss is associated with both periodontal disease and osteoporosis. Osteoporosis could lead to tooth loss because the density of the bone that supports the teeth may be decreased. More research is being done to determinate if and how a relationship between osteoporosis and periodontal disease exist. Women considering Hormone Replacement Therapy (HRT) to help fight osteoporosis should note that this may help protect their teeth as well as other

Special CRA meeting shines a spotlight on economic development
HALLANDALE BEACH - This past Monday there was a special meeting of the Hallandale Beach Community Redevelopment Agency. The Special Meeting was focused on economic development, the governance of the CRA, amending of our current CRA plan and the establishment of a CRA Advisory Board. Back in 2008 I had requested an item to establish a CRA Advisory Board comprised of residents within CRA boundaries. The majority of the City Commission voted to support the adoption of the board. The board would be similar to any other advisory board in our community. The main goal would be working with Staff to address existing plan objectives, share ideas and programs, review Staff budget suggestions and make recommendations to the CRA Board of Directors. As a result of the CRA functioning over the past three years without a formal director, many program suggestions had yet to be implemented. The creation of the board was delayed. On Monday Staff had compiled a suggested list for membership to include at a minimum, one member from four quadrants of the CRA and one member each from the Hospitality Industry, Banking or Finance, Real Estate, Chamber of Commerce, Non-Profit,
Urban Planning or Architectural Design, Building Contractor and two members at large. I opened the item for discussion and spoke in support and requested input. The City Manager, even though he serves on a CRA Advisory Board, spoke against establishing one for our community. After he spoke, a motion was made to not establish a committee and was seconded by Commissioner Ross. The debate took place where Commissioner Lewy took objection to how the committee was formulated in a manner to deliberately sabotage the concept. Vice Mayor Sanders also questioned how the board was compiled and how appointments could be made within the scope. I suggested going back to the original concept of an advisory board comprised of residents within the CRA boundaries. The question was called to end
debate and the motion made not to establish the CRA Advisory Board passed with Commissioner Lewy and me voting no contest. One of the main objectives for the evening was to move forward in adopting a formal set of bylaws for the Board of Directors. In the past, City Commission, according to state statute passed and enabling ordinance to establish the CRA as defined in State Statute 163. At that time and accordingly moving forward, the CRA Board of Directors is comprised of City Commission. The Executive Director of the CRA was established as the City Manager with the ability to designate Staff to work for the CRA. The CRA has always operated under the same purchasing policies and ordinances established by the City of Hallandale Beach. To date, this has been the best practice and provides transparency in a symbiotic connection between the CRA Director, Staff and the City Manager. It makes sense because everyone is working under the same rules and guidelines. Many cities are moving back to these more stringent rules. I spoke in favor of keeping the same governance and procurement rules as we have in the past and this was fully supported by the entire commission. It was
agreed to direct special counsel to work with both Executive Director Mark Antonio and Director Alvin Jackson to craft By- laws to be adopted by resolution as the Board of Directors of the CRA. There was one policy change that was requested in regard to the purpose, purchase and disposition of lands by the CRA. Before the housing crisis the CRA and Housing Authority was working proactively and purchasing properties for affordable housing within CRA boundaries. As the Executive Director of the CRA the City Manager was authorized to purchase and dispose of property under $200,000 without CRA Board of Directors approval. This policy was adopted by ordinance by the City Commission to ensure the affordable housing program could be realized and land banking could occur for future projects. The disposal of real property in this case is the sale to limit an owner under the guidelines of the affordable housing program. The restrictions are established securing our investment and giving our city the first right of refusal to purchase back units to maintain an affordable housing stock. This is a very common practice. The cap limits the authority, but does provide a reasonable
balance to ensure the program is run efficiently by our professional city and the CRA staff. It should be noted that the city has been participating in affordable housing over the past 15 years. It was not until casino gaming was approved that we pursued proactively land banking in order to provide sufficient stable neighborhoods for our residents. All other properties over $200,000 were brought before the Commission. There were items brought forth by the former City Commission and discussed at our City Commission meetings, but were not formally itemized. Empty lots, foreclosures and donated properties were all negotiated and reviewed by Staff.
The policies for the purchasing of property, land banking and sale of affordable units have become what I would call political rather than practical. Special counsel had suggested that all sales and purchases be brought before the CRA Board of Directors. It was also suggested that the way it has been done in the past for affordable housing, so long as it has been a directive of the BOD and sales of properties have been made public and open to a list of purchases is acceptable. A motion was made to bring every purchase and sale, no matter what level, back to the Board of Directors. Executive Director Antonio agreed –––––––––––––––––––––– COOPER, Page 5A

A cataract is formed when the natural lens of the eye, responsible for focusing light and producing sharp images, becomes cloudy and hardens, resulting in a loss of visual function. The lens of the eye is clear at birth but is one of the first parts of the body to show the effects of aging. A cataract is painless and usually develops gradually over several months or years. The onset of a cataract in one or both eyes may cause decreased night vision, impaired depth perception, and increased color distortion. Cataracts are the leading cause of vision loss among adults age 55 and older. In fact, poor vision from cataracts affects 60 percent of all adults over age 60. However, cataracts also can result from injury, heredity, or medications, so they can affect people of all ages. Understanding that no two conditions or patients are the same, Dr. Braverman analyzes the patientʼs symptoms, performs a comprehensive eye exam, and may test for glare disability and contrast sensitivity before making a diagnosis. The final decision to proceed with the surgery belongs to the patient. Your optometrist or Dr. Braverman may prescribe glasses, medication or surgery depending on your symptoms, complaints and age. Usually surgery will not be recommended until glasses no longer work to make you visually happy. In the case of lensectomy surgery, the patient cosmetically wants to get rid of their glasses. CATARACT SURGERY: WHAT TO EXPECT Cataract surgery is the removal of your cloudy natural lens, which is usually dissolved using high frequency ultrasound through a small (less than 3 millimeter) opening. An artificial lens is then placed inside the eye where the cloudy lens used to be. Cataract surgery continues to improve. Recent developments include no-stitch surgery, topical anesthesia, surgical correction of astigmatism, and new upgraded lens designs. Eye drops are given to the patient to aid in the healing of the eye, which takes a few months, but the patient is able to return to nor-

mal activity almost immediately after surgery and usually sees well within just days. If the eye is otherwise healthy, cataract surgery is successful in more than 98% of patients and they enjoy improved vision after the procedure.

It is impractical to have every closing on an affordable housing unit to come before the Board of Directors. One has to remember there are strict sale guidelines and deed restrictions already pre-established. As far as purchasing there was concern over special circumstances in the event of tax sale or foreclosures. However the City Manager said that he believes he can hold city purchase closings until the next available Commission meeting. The motion was amended to bring back the change in policy; setting a purchase of $25,000 and the disposition at $125,000. The disposition price is in line with the current market values and the HUD requirement for affordable housing. With Director Alvin Jackson on board and the special audit showing weaknesses collecting and retaining data on these purchases, actions have already been taken to establish better internal controls. In some cases it is just a matter of establishing a checklist within files to ensure every document is accounted for and if it is not available; why. Air potatoes invading Hollywood By Alice D’Emilio Nursery Supervisor HOLLYWOOD - Air potato (dioscorea bulbifera) is an invasive plant in the yam family and should be removed from all public and private properties. This vine is listed by the Florida Exotic pest plant council as one of Floridaʼs most invasive plant species since 1993 and was added to the Florida Noxious weed list by the Florida Department of Agriculture and Consumer Services in 1999. Once an Air Potato plant spreads, it becomes a real curse and will engulf and smother trees, native vegetation and shrubs. This vine has large heart shaped leaves and tendrils has many ways of spreading and reproducing. Itʼs poisonous potato structures are called aerial bulblets. Bulblets form on the stem and reproduce tuber-like potatoes in the ground, which immediately forms new plants. In Florida, abandoned homes and lots in neighborhoods are contributing to the spread of this invasive vine. Here in the City of Hollywood, Air Potato is found growing on utility poles, wires and trees, spreading from one lot to the next, and even causing power outages. HOW TO CONTROL THE VINE Unfortunately, pulling the vines by the root does not rid you of the problem. The plant can be sprayed with herbicides containing Glyphosate (Roundup). It is important to cover the foliage thoroughly with herbicide and spray the
leaves just to the point of run-off. Spray when there is no wind, such as early morning and do not allow the herbicide to drift against you. Use a spray nozzle which can be adjusted to produce large droplets and a straight spray stream. After treatment, wait a few days, dig the plant and tubers out of the ground with a small hand trowel or spade. Glyphosate works to some extent but must be reapplied. This chemical is not effective unless there is foliage present to spray. Do not spray this chemical on bare soil since it only travels through plant material and not through soil. The chemical is transported to the roots and stems of the plant. A follow up application of the herbicide will be necessary to completely eradicate this inva-
sive plant. Remove as many bulblets as possible from the site with a hand trowel. Bulbs left in the ground will produce new plants. Property owners may wish to hire a vegetation management contractor to remove air potato for them. Remember herbicides must be applied according to instructions on the label. but in other areas. Last Friday, veterans who served and fought for all of our freedom, were recognized by millions around the world for what they have done - and continue to do. In Hallandale Beach, where every year a tremendous ceremony takes place at the ultural Center, Julian once again did something that even the veterans on hand had to salute and talk about. Because history has been such a huge part of Julian's life, serving on several boards and saluting past efforts by so many, his unique approach to this year's Veterans Day ceremony was something that other cities will soon start picking up on. Julian's idea some months ago was about giving veterans and their families a chance to see what their military career was all about. It was something that was a typical Bill Julian idea where he thought of it and fully carried it out no questions asked. His display, featuring several area veterans, was easily one of the most jaw-dropping remembrances that anyone could recall, and it received a huge applause for those who attended the event. "This idea was about giving families, like mine, a chance to display photos, letters and anything else that had to do with military life," Julian said. "At first, we began with just a few displays, and then it grew, and by the

time we were setting up on Thursday night, I was getting calls from veterans and their families outside this area - which is a great thing." Even though this has long been a Hallandale Beach event, Julian was happy to open this up to veterans who made such a difference in all of our lives from throughout South Florida. With overwhelming interest from families and service men and women, Julian immediately put his brain in full gear, thinking about a way to not only showcase the ever-growing display, but to open it up so everyone could see it. "We already had a condo invite us to bring the 15 displays we have now," Julian said. "It sparked a great idea about having this year round and going to differ-

ent halls and centers to showcase this tremendous tribute. This is the right time to be patriotic and care about this country." What took weeks and weeks to initially put together, Julian spent hours and days making this a first class tribute. He accomplished what he set out to do. "What Bill did was something that I don't think has ever been done," said Hallandale Beach resident and veteran Ed Pickett. "He worked overtime making a display so impressive, everyone walked away with tears and smiles." With an eye on also bringing the display back for Memorial Day 2012, Julian continued to urge those at the Hallandale Beach Veterans Day event to tell friends and family members about

Among those on hand last week to see family displays were Emily Scavo, who's husband, Joe, a former Hallandale Beach Mayor, was in the U.S. Army. In addition, the Gilchrist family, U.S. Army Major Stephanie
Motley, U.S. Air Force 1st Lt Kaltman, Frank Curci, Jr., as well as Bill Julian and his father and U.S. Navy Lt. Commander Pickett all had displays with model airplanes that replicated the ones flown in combat. There was also a display of U.S. Army Sgt. Peter Ventura, who has visited Hallandale Beach
to attend a number of Memorial Day and Veteran's Day events. Ventura happens to be the father of Hallandale Beach Mayor Joy Cooper. The Hallandale Beach portion of the Veteran's Day events came to a conclusion with all veterans coming together for a group photo. Something that has become an annual tradition with Parks and Recreation Director Rebecca Munden-Correa and Assistant Bob Williams putting on a first production and ceremony - as usual.

Chickenpox could spot your child this winter
(ARA) - Did you know that chickenpox is most likely to occur during late winter and spring? As winter approaches, when you talk to your child's doctor about ways to stay healthy this season, remember to also ask about the chickenpox vaccine. Your doctor may recommend a second dose of the chickenpox vaccine for your child. This winter is an opportune time for healthcare providers and parents to make sure children are up to date with all appropriate vaccinations, including the chickenpox vaccine. The Advisory Committee on Immunization Practices (ACIP) of the Centers for Disease Control and Prevention (CDC) includes the chickenpox vaccine on the list of recommended vaccines for schoolaged children. While requirements vary from state to state, many states require chickenpox vaccination or evidence of immunity for school or child care attendance. Chickenpox, which is highly contagious, occurs most often in children 5 to 9 years old and is most likely to
occur during late winter and early spring. As some parents may remember from their childhood, the most common symptoms of chickenpox are rash, fever, headache and general discomfort. Although usually mild, chickenpox can sometimes lead to less common but serious complications, such as pneumonia. VARIVAX® (Varicella Virus Vaccine Live) is a live virus vaccine that is given as a shot. VARIVAX is meant to help prevent chickenpox, which is also known as varicella, in people 12 months of age and older. Your child should not get VARIVAX if he or she is allergic to any of its ingredients including gelatin and neomycin; has a weakened immune system, such as an immune deficiency, an inherited immune disorder, leukemia, lymphoma, or HIV/AIDS; takes high doses of steroids by mouth or in a shot; has active tuberculosis that is not treated; has a fever; is pregnant or plans to get pregnant within the next three months. If your child is 12
months to 12 years old and his or her doctor gives a second dose, the second dose must be given at least three months after the first shot. A second dose should be given to those who first get the vaccine when they are 13 years old or older. This second dose should be given four to eight weeks after the first dose. "It's important to remember that one dose of the chickenpox vaccine may not provide enough protection," says Dr. Patricia Samuelson, a California family physician wellknown for her public service and dedication to improving vaccination. "Chickenpox that occurs after vaccination is called breakthrough
chickenpox. Most cases of breakthrough chickenpox are mild; however around 25 to 30 percent of breakthrough cases after one dose can be more serious with symptoms similar to what individuals would experience if they haven't been vaccinated." In a study, children vaccinated with two doses of the vaccine are three times less likely to develop breakthrough chickenpox than those vaccinated with just one dose (2.2 percent vs 7.5 percent). In 2006, the CDC instituted a two-dose recommendation to help provide better individual protection. Data from a 2010 CDC survey showed that an estimated 58.1 percent
of teens 13-17 years of age with no history of chickenpox had received two doses of the varicella vaccine. The CDC conducted the National Immunization Survey-Teen (NIS-Teen) to collect immunization information for adolescents 13-17 years of age to estimate vaccination coverage in this age group. Immunization data was collected through telephone interviews with randomly selected households and confirmed through records supplied by the adolescents' health care providers. This was a nationally representative sample of 19,257 adolescents. So this winter talk to your doctor or health care provider to find out if your child is up to date on the chickenpox vaccine. He or she will use the official recommendations to decide the number of shots needed and when to get them. If a dose is missed, your health care provider will let you know when your child should have it.
Important Information about VARIVAX Your child should not get VARIVAX if he or
she: is allergic to any of its ingredients including gelatin and neomycin; has a weakened immune system, such as an immune deficiency, an inherited immune disorder, leukemia, lymphoma, or HIV/AIDS; takes high doses of steroids by mouth or in a shot; has active tuberculosis that is not treated; has a fever; is pregnant or plans to get pregnant within the next three months. Your child should not take aspirin or aspirincontaining products for 6 weeks after getting VARIVAX. The most common side effects reported after taking VARIVAX are: fever; pain, swelling, itching, or redness at the site of the shot; chickenpox-like rash on the body or at the site of the shot; irritability. Other less common side effects have also been reported: tingling of the skin; shingles. VARIVAX may not protect everyone who gets it. VARIVAX does not treat chickenpox once your child has it. Only your health care provider can decide if VARIVAX is right for your child.

Early puberty; sometimes difficult for adolescent girls
Q. Dr. Ron.., I am a single Dad, with 2 adolescent children, a boy 14, and a girl 11. My daughter is developing early and has already had her first menstrual cycle. She is very bright, but is becoming socially awkward… Could this be in part due to her early development?… Possibly… Early puberty can impact a childʼs life, more often positively for boys, and negatively for girls.. Both boys and girls both experience a “pubescent” period two years prior to actual puberty. Puberty is attained when the childʼs sexual organs achieve the ability to reproduce. For boys the onset of puberty begins approximately at age 12-13, but some start to develop earlier. Early maturing for boys is usually a positive experience. Testosterone begins to flow, muscles & shoulders grow; there is a spurt of growth in height & weight, the voice lowers, and the sexual organs develop, with the crowning achievement being the boyʼs first ejaculation, (although the sperm is sterile). Most early developers are bigger, stronger, and more popular at school.But for girls, early puberty can be an unhappy occurrence Girls normally begin to develop a year or two earlier than boys, at about age 11 or 12. This is highlighted by an increase in body fat, breast growth, wider hips, increases in the hormones estrogen & progesterone, and eventually the first menstruating cycle called menarche, which normally occurs at about age 13. Most girls will not be able to conceive until a year after menarche. There has been a trend over the past 100 years for the onset of puberty in girls to begin earlier & earlier. A century ago menarche normally presented at the age of 16-17. In current times, there have been an increasing number of girls reporting the start of menstruation at the incredibly early age of 9, even 8 years old. This is particularly seen in girls who develop severe eating disorders like anorexia, and bulimia. Girls who develop too early are often embarrassed about their body, and stand out in a time period where kids are very self-conscious, & want to fit in.. Research has shown that these early developers are more prone to hang around with older kids, have sex at an earlier age, not do as well in school, have lowered self-esteem, and are more likely to suffer from depression & anxiety, than their peers who mature on a more timely basis. This can be a terribly awkward time for girls, who too quickly begin to look like women. My advice to you is simple, Talk open & honestly with your daughter about sexual development. MIAMI BEACH - Mount Sinai Medical Center has appointed Dr. Akshay Bhandari as the new director of robotic urology and assistant professor for the Mount Sinai Columbia University Division of Urology. Dr. Bhandari has performed more than 500 robotic procedures, including radical prostatectomy, nephrectomy, partial nephrectomy, radical cystectomy and other complex robotic urologic procedures. Dr. Bhandari is Mount Sinaiʼs newest specialist for the treatment of all renal conditions including kidney tumors, stones and cancer as well as robotic urological surgery. Dr. Bhandari completed his residency in urology and a fellowship in minimally invasive robotic surgery at the Vattikuti Urology Institute at Henry Ford Hospital in Detroit, where he was also a member of the founding robotic surgery team. During his training, Dr. Bhandari was an integral member of the teams that developed techniques to perform robotic-assisted kidney and pediatric urologic procedures. Recent heavy rains demonstrate improvements in Hallandale Beach drainage
The month of October this year proved to be one of the wettest Octobers on record. According to the South Florida Water Management District, “October 2011 ranks as the fourth-wettest October in 80 years of South Florida recordkeeping.” This fact is in stark contrast to October 2010, which ranks as the driest October on record. District-wide, the rainfall was almost 10 inches in 2011, which is almost 6” above the average. The rainfall in Hallandale Beach for
the month was 16.34,” which is more than 6” above the Districtwide rainfall and a full 12” above the average. Despite the significant rainfall, the City of Hallandale Beach had relatively minor street flooding and no reported flooding of homes or businesses. This lack of flooding is in part attributable to aggressive efforts in recent years to mitigate flooding through capital improvements, installation of injection pumps and enhanced coordination with local
agencies. Examples of capital improvements include the completion of a major drainage project in the northeast and swale enhancements in the southwest. In addition to the obvious drainage improvements that have already been realized, the planned improvements in the near future promise to further protect the residents and businesses of Hallandale Beach from flooding. Currently the City is in the process of executing a FEMA grant for
$11,345,309.00, which will be augmented by City funds totaling approximately $4 million for a major drainage project in both the northeast and the
southwest . It is anticipated that the northeast component of the project will be completed in 2012, while the southwest component will be completed

FIRE HYDRANT FLUSHING
Hallandale Beach Fire Rescue will be flushing Fire Hydrants in the Southwest section of the City from November 13 to December 18. This process is necessary to ensure, for your safety, there is adequate water pressure and flow in the event of a fire. Flushing the hydrants may temporarily cause an orange tint to your water. This in no way indicates any contamination of the water but may cause discoloration in your wash and is only a temporary condition. During this period, please open your faucets and check for discolored water. Should the water continue to run discoloration longer than five to ten minutes please contact the Water Department at (954) 457-1632.

Last Friday, the City of Hallandale Beach once again held its annual Veterans Day remembrance and ceremony. From a trip to the Hallandale Cemetery, to honoring those who have served us in the past - and continue to serve - it was certainly a day to remember. HERB ROASTED TURKEY WITH CITRUS GLAZE 1 (15-pound) Honeysuckle White Whole Turkey 3 lemons 2 limes 1 1/2 teaspoon salt 1/2 teaspoon black pepper, coarsely ground 1/4 cup dry white wine (or use alcohol-free wine) 1/4 cup brown sugar, packed 1 bunch fresh sage 1 bunch marjoram 1 bunch thyme
1. Remove giblets and neck from turkey, discard liver and reserve the rest in the fridge for gravy. Rinse turkey with cold running water and drain well. Blot dry with paper towels. 2. Peel skin from lemons and limes to make rose garnishes (*see instructions below). Reserve in refrigerator. Squeeze enough juice from the lemons and limes to equal 2 tablespoons each. Cut the remaining lemons and limes in half and place in the turkey cavity. Sprinkle salt in the cavity. 3. In a small bowl, mix
the wine, brown sugar, and citrus juices; reserve for glaze. 4. Gently loosen skin from the turkey breast without totally detaching the skin and carefully place 1 tablespoon each sage and marjoram under the skin. Replace the skin. Fold neck skin and fasten to the back with 1 or 2 skewers. Fold the wings under the back of the turkey. Return legs to tucked position. 5. Place turkey, breast side up, on a rack in a large shallow (about 2 1/2 inches deep) roasting pan. Rub turkey with salt, pepper, and oil. Insert oven-safe meat thermometer into the thickest part of the thigh, being careful that the pointed end of the thermometer does not touch the bone. 6. Roast the turkey in a preheated 325 F. oven about 3 3/4 hours. During the last hour of roasting time, baste with the pan drippings. Be careful not to baste over the pop-up timer, as it may bake it shut. (Double check with the meat thermometer). 7. During the last 30 minutes, baste with the citrus glaze. Loosely cover with lightweight foil to prevent excessive browning. Continue to roast until the thermometer registers 180 F. in the thigh, or 170 degrees F. in the breast. Alternative checks for doneness: Leg joint moves freely when the drumstick is rotated; or, when a fork is inserted into the deepest part of the leg joint the juices are clear.

Insert an oven-safe thermometer into thickest part of the thigh, being careful it does not touch the bone. 5. Roast turkey in a preheated 325°F (160°C) oven about 3 3/4 hours. Baste with the pan juices. 6. Meanwhile, in a small saucepan, over low heat, combine preserves, bourbon and orange liquid. Cook until preserves are melted. 7. During the last 30 minutes of roasting time, baste the bird with the Bourbon-Peach glaze. Continue to roast until the thermometer registers 180 degrees F in the thigh and 170°F (80°C) in the breast. 8. Remove turkey from the oven, remove the orange wedges and allow the bird to rest for 15 to 20 minutes before carving. 9. Place on a warm large platter and garnish with pickled peaches.
