Summer Salad of Grilled Tenderstem®, Peaches and Goats' Cheese Ingredients 200g Tenderstem®, stems cut in half 3 ripe peaches, stone removed and cut in quarters 1 tbsp olive oil 100g baby spinach leaves 150g goats cheese log (we used Kidderton Ash), cut into 1cm slices Small bunch fresh basil, leaves picked and torn Freshly ground black pepper and sea salt

For the dressing: 4 tbsp extra virgin olive oil 2 tbsp good quality balsamic vinegar To serve: Crusty ciabatta, cut into slices

Method Pre heat a griddle pan until smoking hot - this will take about 10 minutes. In a medium bowl, toss the Tenderstem® and peach quarters in the olive oil and season with a little freshly ground black pepper and sea salt. Cook the Tenderstem® and peaches on the hot griddle for about 5 minutes, turning a few times, until they are just tender and marked with griddle-lines. Arrange the spinach leaves on a serving platter, top with the cooked Tenderstem® and peaches and add the goats cheese slices. Sprinkle with the torn basil leaves and dress with a drizzle of extra virgin olive oil and balsamic vinegar. Serve immediately with plenty of crusty ciabatta to soak up the delicious juices.

We decided to focus on two of the 8 hiSbe Everyday Choices - Choose Seasonal and Go Local - for our first big awareness drive; the Must Be British Shout Out. The Shout Out encourages Pubs, Restaurants and Cafes to source more UK-grown food for their menus during the 2012 Olympics. It's all about using the Olympics as a showcase for UK farming and food, and to create a big boost in demand. It's also a great opportunity to drive awareness of how it is and how it Should be with seasonal and local British produce. Finally, later this year we'll open the first hiSbe grocery store in Brighton. hiSbe stores will put all the good stuff in one place, have a Fair Price Promise and invest profits back into communities.

Eat Safe Award for Andrew Gordon The Eat Safe Award is a new scheme, which will provide a valuable tool to reassure customers of the commitment to them for standards of the highest level. Eat Safe is designed to promote excellence in Food Hygiene and Food Safety Management in catering/food establishments across Scotland and Northern Ireland. The Scheme is being administered by local Council Environmental Health Services (EHS) in conjunction with the Food Standards Agency in Scotland and Northern Ireland. Eligable establishments are assessed for the Award as part of scheduled Food Hygiene inspections carried out by Environmental Health Services. The FSA will promote the Eat Safe Award to the general public, helping to raise awareness of the scheme, its symbols and its criteria. Compass Brewery's Baltic Night Chocolate Courgette Cake Ingredients 350g flour 50g cocoa powder 2 1/2 teaspoons baking powder 1 1/2 teaspoons bicarbonate of soda 180 ml vegetable oil 425g sugar 3 eggs 2 teaspoons vanilla 125ml Baltic Night 300g grated courgette

Method Combine flour, cocoa powder, baking powder and bicarbonate of soda and set aside. Beat together oil and sugar. Add eggs. Stir in vanilla. Stir in flour mixture and Baltic Night; add grated courgette. Pour into a well-greased and floured pan; bake 1 hour at 350 F / 180 C (160 C for fan assisted ovens). We recommend layering the cake with raspberry jam in the middle. Smother with chocolate icing and serve with a chilled glass of Baltic Night!
