Halloween Recipes This month, to celebrate Halloween, we've got a great selection of recipes for you to try out, including some interesting ways to use up the pumpkin flesh left over from lantern making! For desert, we have a sweet pie. with a disturbingly pink hue, this Halloween recipe is perfect for the sweet fanged out there.
Crunchy sprout salad with pumpkin seeds and balsamic vinegar To prepare the pumpkin seeds, simply rinse the pumpkin seeds and use your fingers to remove all the pulp; next spread out overnight to dry before tossing in olive oil or butter and sprinkling with salt and cayenne pepper; and finally bake for about 1 hour, tossing every 15 to 20 minutes, until golden brown.
Ingredients (Serves 4-6) 450g Brussel sprouts 3tbsp olive oil 1tbsp balsamic vinegar 50g pumpkin seeds Zest of 1 lemon
Method Finely shred the sprouts using a grater, knife or mandolin. In a small bowl combine the oil, balsamic and lemon zest and season to taste. In a frying pan toast the pumpkin seeds until browned. In a serving bowl combine the shredded sprouts with the dressing and half the seeds mixing well then scatter over the remaining seeds. This salad is delicious served with smoked mackerel, a cheesy quiche or as a BBQ side dish.

Shallot, Pumpkin and Red Pepper Soup with Candied Shallot and Pumpkin Seeds served with Low Fat Creme Fraiche Ingredients (Serves 4) For the soup:
Method Preheat the oven to 200C/400F/Gas Mark 6.
4 red peppers, deseeded, cut into quarters, roasted for 25 minutes and skins removed 30g butter 1 tbsp rapeseed oil 6 shallots, diced peeled
To make the soup: Place the peppers skin side up, on a baking sheet and roast in the preheated oven for 25 minutes, until the skins are charred. Remove from the oven and place in a bowl. Cover with cling film and leave to cool. Once cool, peel off the skins, and reserve the flesh.
750g pumpkin, peeled and diced into 2 cm pieces 1 red chilli, deseeded and finely chopped

American style beetroot pie Ingredients (Serves 4) 250g shortcrust pastry 325g plain cooked (vacuum packed) beetroot, drained 3 eggs
Method Preheat the oven to 200C/Gas Mark 6. Roll out the pastry and use it to line a 23cm loose bottomed pie tin. Line with greaseproof paper and fill with baking beans. Bake blind for 20 minutes.
75g soft brown sugar 2tsp ground mixed spice 1/2tsp ground allspice (optional) 1/2tsp ground ginger (optional) 250ml double cream
Whilst the pastry is baking, prepare the filling by pureeing the beetroot along with the eggs in a food processor. In a small saucepan add the sugar, all the spices and cream and bring slowly up to a simmering point. Pour into the food processor and mix thoroughly with the beetroot puree. Remove the pastry case from the oven and reduce the temperature to 180C/Gas Mark 4. Pour the filling carefully into the pastry case and bake for around 25-30 minutes. The edge should be puffed up a little and the centre will still be a touch wobbly. Allow to cool and chill in the fridge. Serve with creme fraiche.

The Thame Food Festival held on Saturday 24th September was a staggering success. In the words of the BBC's Brennan Nicholls "There was a vast array of food and drink on display". In its 4th year the Festival is growing and growing with nearly twice as many exhibitors on show this year and amazing support from thousands of local people and visitors from afar. Crowds were huge, estimated at 12,000 and the town centre was full to capacity. Festival Patron Lotte Duncan sold over 700 cakes at her stall as well as hosting a great cooking demo in the main kitchen area and appearing at the Aga shop. "What a day! I was asleep within minutes of getting home!"
