Designed and made in England Henny Flynn, founder of Cooking Gorgeous and the designer of their British made kitchen linens, gives us some insights on how buying local extends beyond our immediate community. Without wanting to sound greedy, I love food. Particularly when it's made with creativity and care using locally sourced, natural ingredients. And it's those same principles that led me to develop our range of kitchen linens and to the realisation that they had to be made locally. Though, in this instance, locally means made in England. It was my love of cooking, and the daunting artisan talent showcased at every farmers market and food and drink fair across the country that inspired me. It made me realise that the kitchen linens I was using weren't as good as the food I was eating. And I started to wonder why. So, I began to look into how textiles are produced and the stories behind them. We've all heard the horror stories and some of the reports made uncomfortable reading. Unsurprisingly I found that the majority
of UK textiles are manufactured overseas, with much of it produced to relatively low standards designed to be cheap impulse purchases and not designed to last. I wanted to create something different. Kitchen linens with designs that stand the test of time, made from natural fabrics with thoughtful innovations. We took 9 months to develop our initial range - held focus groups, talked to chefs and tried, tested then tested again. Our aprons are designed to fit and flatter different body shapes, with simple innovations such our Toggle On kitchen cloth that attaches to your apron pocket. Our waist ties are long enough to tie at the front, our Chef's Cloth is a domestic take on the professional must-have and our linen union tea towels actually do dry dishes. The decision to make everything in England was not taken lightly. We could save money and manufacture overseas, but that's not the point. We're not on a mission but with cheap imports decimating our British textile market it just seemed wrong to make them anywhere else. Plus, if we can help reduce unnecessary textile miles, then that's got to be a good thing too. We have a rich textile heritage here in Blighty and if Osbourne's "Made in Britain" budget is to be believed, then maybe we can also help, in some small way, to support our recovering economy. According to a recent report on global textile manufacture, UK production of textiles and clothing collapsed by approximately 30% between 1997 and 2001 and there has continued to be a decline year on year since then. Our little business isn't going to stop that decline but, as we all know, big things from little acorns grow...

Growing Your Own Ross Jones tells us about his introduction into the world of growing your own. It's no surprise that I am a fan of locally grown produce, it's why I'm here, but the realistic fact of our eating habits and busy lives is that it is not always possible to pop to the local shops to get these fantastic products. Instead I do sometimes find myself wondering the isles of major supermarkets, muttering profanities at the fact that the meat looks terribly bland and the vegetables bloated and tasteless. Begrudgingly though, I do it. Why? Out of convenience. Where else can I stop off at 8 at night to pick up shopping? Unfortunately nowhere that sells locally sourced and grown food. It was in one of my late night trips to a supermarket that I decided that I wanted to be able to get more from my garden, so I started to plot. Now, I live in a small village just outside Cambridge, I have a fairly small garden but a garden none the less. It's also quite a sun trap which would be ideal for my crops. I planted around the beginning of April for most of my plants, which was a little late for some things, but for me this will be fine. My choice of fruit and vegetables was done by, not only what I think we will use, but also which plants are easily manageable with little time. I have a combination of pots, grow bags, planters and beds around the garden now all full with varying maturity of plants. In the end I chose potatoes, peppers, tomatoes, leeks, spring onions, cucumber, courgette, garlic, celeriac, 7 types of chillies, 3 types of strawberry, raspberries, gooseberries, beetroot, pak choi, thyme, oregano, basil, coriander, rocket, spinach, land cress and mixed salad leaves. As you can see, I started out with just a few plants but when people found out I was starting to grow my own produce, I started getting gifts too! (I was not complaining!) I've just been given a bay tree, for example, from my mother. My girlfriend has just bought me and orange and a lemon tree. Yes, that's right! I've been given a rosemary bush and I am just waiting on a fig tree cutting from a friend of a friend. It's bountiful, I can tell you. I know I have got a little carried away with it all, but it's still all on a small scale with not an allotment in site. My aim was for this to be manageable by any Joe public that, just like me, appreciates good local produce with the convenience of it being outside your house. The learning has been fantastic, picking things up as I go along about each different plant and although I'm nowhere near harvest point, I have been enjoying the fruits of my labour through the flourishing

rocket and herbs that are already gracing my garden. All I can say is, if you're put off by the amount of time and effort taken to start to grow some produce of your own, then don't be. You can do as much or as little as your time allows, and other than watering and the odd weeding session, our garden doesn't require a lot of attention. I started out with the herbs from supermarkets, which then got too big and ended up outside. I then found myself popping to the local garden centre at lunch to pick up bits and pieces but found this can be expensive. For great value I actually found Wilkinsons online has a great selection from propagators to pots to compost. All they will send to you for a small delivery cost. A great place to start but at this time of year anyone considering planting, I would use the part grown plants that you can pick up at any garden centre. You can pick up a strawberry plant at B&Q for 99p! For the small effort it takes, the feeling and moreover the taste that you get from your own garden makes any effort put in worthwhile. While you wait for them all to fruit there is the great task of deciding what you will do with it all and whether you need a bigger freezer! I have found this is a slippery slope for me though. I've bought a book on smoking and now I am required (the girlfriend doesn't think so!) to build a smoker in the garden so I can start to have a play. Check out my latest blog for more smokey fun.

Method Beat together your egg and sugar in a mixing bowl, using a hand whisk and place over a low heat, stirring continuously until mixture thickens to a custard like substance. In a blender, whizz up all of your blueberries and add a dash of lemon and a few tbsp of water, until mixture is completely liquid. Combine the custard mixture with blueberries, return to heat and combine with milk and cream, for 10-15 minutes stirring mixture constantly, remove from heat and allow to rest before pouring the mixture into your ice cream maker.

The Cotswold Chef™ Berries in Tarragon & Lavender Custard Ingredients 2 Punnet of Mixed Berries (strawberries, raspberries, blackberries) 3 Cotswold Legbar Egg Yolks 2 Cotswold Legbar Eggs 50g Caster Sugar 1 teaspoon finely chopped Fresh Tarragon 1 Split Vanilla Pod 275ml Cotteswold Dairy Cream 150ml Cotteswold Dairy Milk 1 flowering head of fresh Lavender

Method Wash the berries and hull the strawberries then place in a bowl. Bring the cream, milk, vanilla, tarragon and half the lavender flowers to the boil in a saucepan. Whisk the eggs, yolks and sugar together. Once the cream and milk have come to the boil, pour over the eggs and sugar, stir well then return the mixture to the saucepan and place on a gentle heat. Stir continuously until the mixture thickens and coats the back of a spoon. Be careful at this point not to be tempted to turn up the heat as this often causes the mixture to scramble! Remove from the heat and strain through a sieve over the berries. Gently mix the custard and berries together taking care not to ruin the softer fruits. Serve hot or cold with a Cotswold meringue and a ball of raspberry sorbet sprinkle over the remaining lavender flowers.
