Smoked Duck and Peach Salad with Raspberries and Walnuts Ingredients (Serves 4) 300g smoked duck breast 4 ripe peaches 1 bag mixed salad leaves Handful of basil leaves, torn
Method Thinly slice the duck breast and set aside. Remove the stones from the peaches and cut into eighths. On a large serving plate or salad bowl, arrange the duck and peach slices on a bed of lettuce leaves, then scatter over the basil, raspberries and walnuts
Handful of fresh raspberries Handful of crushed walnuts
Stir together the remaining ingredients for the dressing and season to taste.
1 tsp runny honey Juice of 1/2 lemon 4-5 tbsp extra-virgin olive oil Sea salt and freshly ground black pepper
TIP: If the peaches aren't quite ripe (mines weren't) just cut them into slices and saute them in a pan with a tiny bit of butter, they caramelise a little bit and are absolutely delicious!

Vanessa Kimbell's Scones Afternoon tea is just so easy and yet it has quaintness to it. Rose patterned china cups, cupcakes, dainty egg and cress sandwiches, Battenberg cake of course fresh scones with clotted cream and raspberry jam and a steaming pot of fresh tea. I love throwing my red checked tablecloth on the table and having the children come in from school to sit and tell me about their day whilst tucking in to this very British spread. The recipe doubles easily to make more and you can swap out the flavour at a moments notice, leave out the sugar and add 70g of parmesan for a savory cheese scone, thrown I a handful of sultanas or add a teaspoon of fresh lavender for a delicious twist and serve with plum jam and a pot earl grey tea instead.
Ingredients 225g self-raising flour 75g slightly salted butter, chilled, cut in small pieces 50g Vanilla Sugar 1/4 tsp salt 125ml buttermilk ( ordinary milk will do) 3-4 tbsp milk Extra flour, for dusting Vanilla Sugar, for sprinkling 1 egg, beaten, for the glaze
Method Preheat the oven to 180C/gas mark 4. Put the flour, butter, salt and sugar into a bowl. Mix well. Make a well in the centre and add the buttermilk. Bring the mixture together to form a dough. If the dough seems a bit too dry, add a little more buttermilk, a teaspoon at a time. Turn out onto a floured work surface and use your hands to form a 2.5cm round. Cut out shapes from this, depending on your preference, and put them on a baking tray. Glaze the scones with the beaten egg and bake for 18-20 minutes and Sprinkle with sugar. Cool on a wire rack. If you want to freeze these scones do so as soon as they are cool.

The Glynde Food and English Wine Festival 2011 The Glynde Food and English Wine Festival went down a storm on the wettest weekend of the summer... Saturday 16th and Sunday 17th July has been the wettest weekend so far this summer, but it didn't stop the British public's hunger for good food and wine. Glynde Place opened its beautiful grounds for the Glynde Food and English Wine Festival - a gathering of English Wine producers and local and regional food producers. Visitors flooded in armed with waterproofs and umbrellas and sipped their way through wines from over 24 English vineyards, tasted offerings from around 70 food producers and enjoyed watching some of the top chefs in the country. "There's little we can do about the weather, but it certainly brings people together in that wonderfully British way! This year's festival showcased our new Chef Demo Stage and tutored tastings in the house's Marble Hall. All of which went down a treat with visitors," says Francis Hampden, Founder of Glynde Food Festival. Restaurateur and television presenter John Torode stunned visitors by showing them how to prepare a lamb carcass with a hacksaw, whilst Dhruv Baker (new face of WasitroseLive) and actress Lisa Faulkner cooked up a storm together. The Chef Demo stage was free for all visitors to enjoy and featured celebrity chef Valentine Warner, baker Edd Kimber (winner of Great British Bake Off), Tom Whitaker (MasterChef 2011 finalist), Peter Bayless (MasterChef winner) and James Knight-Pacheco. "Glynde Food and English Wine Festival proved to be where it's at for genuine lovers of good food and wines. With the South Downs as a backdrop and the Weald stretched out in front of stunningly beautiful Glynde Place, you couldn't wish for a better venue at which to celebrate all that's good in British food and wines," said Chef Peter Bayless. The English wine area included wine tastings in the Marble Hall with wine personality Joe Wadsack and wine author Stephen Skelton. Ben Vear's Lemon Meringue Ice Cream Lemon is without doubt one of my favourite fruits I have a strange affinity with it, since the first recipe I ever devised was a tart au citron while staying with some family in the south of France. I love the tart fresh flavour of freshly squeezed lemon that's what makes this a family favourite ice cream flavour. Pieces of meringue are added for texture and taste, and to make life easy, feel free to crush up some meringue's from your local cake shop or farmers market, mine come from the fantastic Meringue Company, based in Nailsworth.
Ingredients Remember where possible to support your local markets and producers and if the budget allows, stretch to organic ingredients: 250ml carton organic double cream 250ml local full fat milk 150g fair-trade caster sugar 4 large organic free-range egg yolks 1 meringue crushed Juice of 4 large, organic lemons
Method Firstly infuse the lemon zest with milk: add the zest of 4 lemons to 550ml/1 pint milk. Warm on a low heat until it is hot but not boiling. Remove from the heat and set aside to cool allowing the flavours to infuse further for up to 1 hour. After leaving to rest bring back to the boil. Whisk the egg yolks and sugar in a mixing bowl until they form a smooth paste. Continue stirring and pour over the milk mixture. Return to the heat until the mixture thickens, continue to stir as to avoid the lemon seperating from the milk and eggs. Set aside to chill in the refrigerator and fold in the cream and crushed meringe pieces. Pour the chilled mixture into your ice cream maker, following the manufacturer's instructions.

Sweet Eve Strawberry and Vanilla Brown Sugar Toasted Brioche Sandwich If you are after a really sumptuous breakfast or brunch treat, then look no further. The rich buttery flavour of brioche is used to sandwich ripe strawberries and vanilla infused sugar. The perfect summer morning sandwich and so much prettier than bacon and eggs!
Ingredients 8 slices of brioche bread 400g ripe Sweet Eve strawberries Unsalted butter for spreading 100g soft brown cane sugar 1 heaped tsp of vanilla bean paste
Method Pre-heat the oven to 180C. Cover a roasting tray with aluminium foil, and place the eight slices of toast on the tray. Toast till golden brown, roughly 3 minutes each side. The brioche bread will go quite crispy. Set aside for a few minutes to cool down slightly. Hull the strawberries and then slice them in quarters. Place in a bowl, add the vanilla bean paste and the sugar, and then mix well. Take four slices of toasted brioche, spread each thinly with butter, then spoon some of the strawberry mixture on top of each. Top each with another slice of toasted brioche, to form a sandwich. Serve each toasted brioche sandwich on individual serving plates, with a spoonful or two of extra strawberries on the side.

A Profile of a Strawberry Breeder - Peter Vinson Peter Vinson's passion is strawberry breeding. The Vinson family has been growing strawberries in Kent for generations, spanning more than 150 years, and having taken over the farm from his father Edward Vinson, Peter's initial occupation was growing. However, he had a desire to extend the British strawberry season and set about achieving his vision through a bespoke breeding program. He has now relinquished day to day running of the farm to his nephew who continues to grow high quality strawberry and blueberry crops at the farm in Kent. Here they are able to grow significant areas of the latest varieties to gain knowledge and continue to work creatively to develop new British strawberries. Peter's depth of expertise is unrivalled - his experience as both a grower and breeder means he understands what is required both from consumers and those who grow the fruit for them. The Sweet Eve variety has been developed through a 25 year breeding program on which Peter has worked continuously. The program seeks to deliver the best taste, eating quality and shelf life, as well as providing growers with a high yield. Peter comments: "Good flavour, as far as the consumer is concerned, is largely to do with high sugar, low acid and a good aroma. As we become more health aware, people are eating strawberries on their own without sugar, cream or ice cream and therefore the berries need to have fabulous flavour in their own right. The eating experience is increasingly important and this is what drove me forward when developing the Sweet Eve variety." Sweet Eve strawberries are orange-red in colour, and have the aroma and intense flavour of wild strawberries. They also keep for around three days in the fridge, an important factor for modern consumers, who don't shop daily.

Peter continues: "UK grown strawberries are produced closer to home and have less distance to travel than imported strawberries. They are also picked when fully ripe so it stands to reason they will taste better. But we've developed Sweet Eve to also provide a 'wow' experience not consistently found in commercially available strawberries. They really do taste like strawberries used to." Sweet Eve takes its name from the EV in the Edward Vinson business. New varieties bred by the family firm have been named with EV since the 1990s and include Everest and Everglade. Sweet Eve was chosen as the variety name because the berries are naturally sweet and full of flavour, and are a source of temptation! Peter's success has been in everbearer varieties like Sweet Eve that continue to produce berries month after month, which has helped to extend the traditional strawberry season until October. The popularity of berries will continue, Peter believes: "Greater availability and better flavour will give consumers confidence that the strawberries they buy will be of a consistently high quality. Sweet Eve will help to convince consumers that they don't need to spend a fortune to buy a fantastic-tasting, sweet and flavourful strawberry that really epitomises the Great British summer. When they see the Sweet Eve label, they'll know they've got a treat in store."
