Winter Warmers This month, as the nights are drawing in and we dig out our jumpers, we've got a lovely selection of warming, tasty dishes for you to try out. Whether it's a vegetarian meze, a hot and spicy curry or a hearty meat pie, there's sure to be something you'll enjoy.

Ingredients 2 aubergines, chopped in 1 inch squares 1 can of What On Earth Organic Italian Chopped Tomatoes 2 red or orange bell peppers (because these colours carry more flavour) roasted, peeled then diced One garlic clove, diced Small bunch of coriander, chopped Salt and black pepper
Method Roast the aubergines till brown (200C). Lightly oil the skin on the peppers and place them in the hot oven, bake until skin turns brownish. Remove the peppers, place them in the bowl and cover with cling film (this will help to peel the skin), leave to cool. Put chopped tomatoes in the pot (big enough to fit all the rest of the ingredients later), bring them to the boil and simmer for 5 minutes. Add roasted aubergines, peeled and roughly diced peppers, chopped garlic and coriander to the tomatoes. Season with salt and pepper. Simmer the whole lot for a minute or two. Once cooked, serve with cous cous or artisan bread. Alternatively, blanched broccoli can also be used. Cook the broccoli for two minutes in boiling water, toss it in any type of cold pressed oil and add some seasoning. supplylocal.co.uk/food

Cauliflower and Chicken Curry Ingredients (Serves 4) 6 large chicken thighs (skinless and boneless) cut into bite sized chunks 1 tbsp oil 1 onion finely diced
Method Heat the oil in a large frying pan, brown the chicken pieces on all sides then remove with a slotted spoon and set aside. Add the onion to the pan (add a little more oil if necessary) and cook till the onions are soft.
2 green chillies finely diced 2 cm of ginger finely grated 3 cloves garlic pureed 1/2 tsp chilli powder
Add the green chilli, ginger and garlic and continue to cook, stirring for a further minute. Next add the chilli powder, turmeric, garam masala and sugar and cook, string for a minute to release the spices.
1 tsp turmeric 2 tsp garam masala 1 tbsp soft brown sugar 1 cauliflower broken into florets 1 tin chopped tomatoes 1 can coconut milk 2 large handful spinach
Tip in the tomatoes and coconut milk, return the chicken to the pan and add the cauliflower. Stir well and simmer for 10 mins until the cauliflower and chicken are cooked through. (add a little stock or water if the sauce gets too thick). Taste to check the seasoning then stir through the spinach until it just starts to wilt.

Shallot, Chunky Steak and Mushroom Pie Ingredients For the pastry: 110g butter 280g plain flour 1 1/2 large eggs, beaten For the filling: 8 shallots 40g butter 500g shoulder steak, trimmed and cut into 2cm cubes (or larger) 25g plain flour, seasoned with salt and pepper and a tablespoon of paprika 1 tbsp sunflower oil 100g streaky bacon in one piece, cut into lardons (short strips and approx. 5 mm thick) 200g chestnut mushrooms, halved 200ml red wine 200ml beef stock 2 tbsp chopped fresh parsley Sea salt and freshly ground black pepper

Method Pre heat the oven to 180C/350F/Gas Mark 4. To make the pastry, rub the butter, flour and salt together in a mixing bowl until the mixture has the consistency of fine breadcrumbs. Add the egg and bring it all together into a dough. Knead this lightly 3 or 4 times with floured hands. Cover in cling film and refrigerate for an hour before use. Take the shallots and pop into a pan of cold water. Bring the pan to the simmer and gently cook the shallots for about one and a half minutes. This will make the shallots easier to peel and assist the cooking. Peel off the skin without cutting the ends of the shallots off. Lightly shave of any remaining root fibres but do not cut into the shallot at all. Melt 25g of the butter in a flameproof casserole dish. Add the shallots and fry over a medium heat for about 10 minutes, until nicely golden. Meanwhile, put the steak into a polythene bag with the seasoned flour and toss together so that it becomes well coated. Heat a large frying pan until very hot. Add the sunflower oil, then the bacon and stir fry for a few minutes until richly golden. Remove with a slotted spoon and add to the shallots in the casserole dish. Now brown the mushrooms for a couple of minutes, then add to the casserole dish. Add the remaining butter to the frying pan and brown the beef well on all sides. Transfer to the casserole dish. Now add the wine and stock to the frying pan, bring to the boil and scrape up all the browned bits from the bottom of the pan. Pour this into the casserole dish, add plenty of seasoning, especially pepper, and mix together well. Cover the casserole with a tight fitting lid and bake for 1 - 1.5 hours until the meat is tender and the sauce has thickened. Now all you have to do is stir in the chopped parsley, check the seasoning and tip into your pie dish then let cool as quickly as possible. Roll the pastry out on a floured surface to a thickness of a beer mat. Trim a strip long enough to go around the rim of a 20cm pie dish. When the stew has cooled, line the rim of the dish with the thin strip of pastry. Dampen the pastry rim by brushing with beaten egg. Cut a piece of pastry to fit across the top of the dish and place on top of the pie filling, pressing the edges together to seal. Make a steam hole in the centre of the pie by cutting a small cross in the centre with a sharp knife, then brush with more beaten egg. Pop the pie into the oven and cook for about 35 minutes, and serve. Serve with mash and mixed greens. supplylocal.co.uk/food

British Food Fortnight defies the recession! The tenth British Food Fortnight that took place from 17th September to 2nd October celebrated ten years of success for the national food promotion. It defied the recession with sales increases reported by the hundreds of shops, pubs and restaurants that took part and names as big as ARAMARK, BHS, John Lewis, Harrods, St Paul's Cathedral, St Pancras International train station and X Factor's Dermott O'Leary's restaurants all flying the flag for British food. It also fired the starting gun for the Love British Food 2012 celebrations that are planned during the Olympics. Millions enjoyed the best of British food with this year's British Food Fortnight. Thousands of events were held with food festivals in more than half the English counties; healthy eating activities in 20 universities, foraging walks, food trails and fungi forays, an 'EU Protected Foods of Britain' promotion in Harrods, a Harvest Swap Shop in St. Paul's Cathedral, a food and drink festival throughout St. Pancras International train station, fruit and vegetable shows, a Mad Hatter's Tea Party, a British Food Fortnight flash mob at Bury St Edmunds shopping centre organised by Hillfarm Oil, BHS stores across the UK shouting British food is best, free recipe books handed out in the North West featuring dishes cooked during the Industrial Revolution, special British Food Fortnight cupcakes in Top Shop and Selfridges, a 'Piggy Sunday Tour' promoting British pork, a purple British food challenge in 96 care homes for the elderly and even a British menu for animals in a zoo!
