Selection of ‘Van Tricht’ cheeses With garnish 14 As a kitchen team we believe we are partly responsible for a minimal environmental footprint. Therefore we try to purchase as many of our products as possible locally. This is only possible through a good cooperation with our suppliers. Top butcher De Laet & Van Haver from Hove delivers beautifully selected and matured meat. In order to do proper justice to the meat, we prepare it on our Big Green Egg BBQ. Our fish is preferably from the North Sea and only when in season. The perfectly matured cheeses come from our neighbour Michel Van Tricht who has a maturing room in the De Koninck brewery. Several local farmers and suppliers provide us daily with vegetables, fruits and herbs from their own garden. For our summer project we are truly privileged to cook in a fantastic open induction kitchen by Palux and we use the best Belgian pans in the world form Demeyere. Enjoyment is the message! Dessert wines & ports Chateau La Brie – Bergerac - French sweet wine 2012 Made of Semillon, Sauvignon and Muscadelle. This flower-perfumed sweet wine nevertheless has a refreshing aftertaste. Glass 4,5 Sacromonte Pedro Ximinèz, Sherry Spain The nec plus ultra of super concentrated sherries. Perfect for complex desserts. Morgadio LBV (Late bottled Vintage) This port consists of a blend of wines with an average age of 70 years old. The aroma is fine and has a touch of ripe fruits. Really soft tannins and very elegant in flavour.
