PUBLISHER’S NOTE

Having two children in their early twenty’s, the plight of choosing a career path has come up quite a bit in the last few years. Choosing a college, major, internship and ultimately the field in which you want to work is exciting and stressful at the same time. While trying to help them with their decisions, I reflected on my career path and how I got here. I remember being in that exact position -- going to college and not really having a plan. All my friends were going and I thought that’s what I should do. What I didn’t really consider is why I was going and what I should concentrate on. Luckily, during my freshman year, I signed up for a Principals of Advertising class. Not knowing exactly what it entailed, I quickly realized that this field was of great interest to me and I actually enjoyed the majority of assignments that we were asked to complete. Writing radio spots, creating print ads, and working on actual campaigns were fun and allowed me to be creative. I loved using my imagination and the freedom my professor allowed and it showed in both my effort and results. Fortunately, my advisor, Mrs. Carolyn Stringer, urged me to work for the college paper selling ads. I can never thank her enough for that push as that was the last piece of the puzzle for me. The confidence and experience I gained from The College Heights Herald set me on the path that brought me to where I am today. It’s pretty amazing to think that just a couple little turns in life can set the path for your career. This time of year always brings back great memories of my own college days. I know for most people the college experience is one they wouldn’t trade for anything and looking back it’s interesting to reflect on which decisions and moments helped mold who you are today. After years of working in the advertising business, I ventured out on my own in 2006 to start this magazine. It was a major leap at the time and still has its ups and downs almost every day. I feel so fortunate and blessed to do what I do and work with so many awesome people. What started as a business really has become a lifestyle; my clients have become my friends and I can’t think of anything else I would rather do.

South End Speakeasy THE WHISKEY ROOM brings back prohibition-era style to the island. BY BARRY KAUFMAN • PHOTOS BY ROB KAUFMAN

We may look back on that dark span of time between the 18th and 21st amendments as a long national nightmare, but that fact is that prohibition was a time of unbridled creativity and innovation. Bootleggers crafted elaborate disguises for their contraband goods, from false-bottomed freight trucks to skiffs loaded with scrap iron. In this environment of temperance, bars were hidden behind false doorways, accessible only to those who could be trusted with their secrets. Behind the clandestine doors of these speakeasies, a new drinking culture was born. Cocktails flourished, with drinks from the whiskey sour to the bloody Mary tracing their origins to prohibition-era mixologists. And in that atmosphere of the forbidden, jazz music found fertile soil as it grew into the first truly American art form. The melding of expertly crafted drinks and live music was forged in these underground bars, a marriage of creative expression that continues to this day. When it opens this September, The Whiskey Room will serve as testament to the cultural renaissance that was birthed in this era. Both in terms of cocktails and music, this new spot south end hotspot will echo the atmosphere of prohibition’s sophistication. In fact, it will have its own speakeasy-style 12

entrance, through a concealed bookcase. “We’re going for an upscale saloon from the turn of the century with a prohibition-era atmosphere,” said Nick Bergelt, CEO of Hilton Head Hospitality which owns both restaurants. “But with a modern twist.” The atmosphere nails that motif, with walls of distressed brick leading to a copper ceiling evoking the temperanceera underground bar juxtaposed against a modern backlit bourbon bar, allowing guests to see the subtle color variations between labels. The front windows will house floor-to-ceiling whiskey cases, while a stage in the front of the house will showcase stripped-down jazz acts filling the place with sound. For Bergelt, the symbiosis between Charbar and The Whiskey Room just made the two of them a natural fit for one another. “A lot of what we do at Charbar, the smoked and grilled flavors, lend themselves well to a nice bourbon,” he said. “We want this to be a nice, low-key destination where you have dinner at Charbar and then spend the remainder of the evening next door.” In fact, the two businesses are so intertwined that the opening of The Whiskey Room will coincide with the date


of Charbar’s six-year anniversary. Although that wasn’t always the plan. Originally slated to open early this past summer, construction was delayed by a pipe that burst while Bergelt was out of town. Still, anniversary aside it proved to be a happy accident. “I always prefer to open in the off-season so there’s more of a local focus,” he said. Behind the bar at The Whiskey Room, you’ll find more than 120 different whiskey and bourbon labels and variations, available neat or as the basis for a creatively crafted cocktail. “We’re really putting a heavy focus on the cocktail program, blending in different spice and bitters and creating some cool stuff that we think is not being done anywhere else,” said Bergelt. “But the star of the show will be the bourbon and whiskey.” To make sure he nailed the bourbon list, Bergelt and his team took a trip on the famed “bourbon trail,” stopping at several distilleries to take a deep dive into how bourbon’s unique flavors are crafted. There are even plans to work with Virgil Kaine on a special collaboration that will only be found in The Whiskey Room. For Bergelt, who by his own admission, is “not much of a drinker,” it’s been an education. But it’s nothing he hasn’t done before. Before he opened Holy Tequila, Bergelt took a similar crash course and the result was a bar that has become the island’s destination for Mexican-style cocktails. “People liked that aspect of tequila we presented at Holy Tequila,” said Bergelt. “We want to do something similar here, where you can explore the nuances of whiskey.” To accomplish that, The Whiskey Room will host private pairing dinners as well as offer flights from their extensive list of hard-to-find labels. “We have a really strong list of rare stuff, but we want to put it at a price point where people can come in and say they’ve tried it. These flights will drive curiosity, plus let guests learn about the geography of bourbon country and where these different labels come from.” Pairing with that dedication to bourbon’s rich variety and the culture of excellent cocktails that sprung up during the prohibition will be a stage for musical acts that mirror the era’s subdued jazz. “The music is going to be a crucial part of that lounge-style feeling, where you can come in, relax and make friends, or come out on a date night,” said Bergelt. Already he’s heard from musicians all over the island who are excited to have a new venue for their art. “We have a really great relationship with the musicians in this community,” he said. “There are a lot of guys who are excellent at their craft who’d love an opportunity to not just be one part of a group, but come out and do their own thing.” As any live music fans familiar with the lineup at Charbar can tell you, Bergelt’s team has a knack for finding talent. With the jazz-forward vibe of a speakeasy as a backdrop, look for The Whiskey Room to be the island’s next white-hot music spot. And even if you’re just looking for a laid-back spot to meet with friends, try a few new bourbons and slip back into an era where the whiskey flowed and the jazz music hopped, you’ll find nowhere better than The Whiskey Room. Stellini ITALIAN RESTAURANT

From Their Family to Yours for 29 Years BY RISA WILLIAMS MCMILLAN

Meaning “Little Star” in Italian, Stellini has grown into a super star on Hilton Head as it has been feeding us fabulous Italian food for almost 30 years. To dine at Stellini is like being welcomed into the bosom of an Italian home – you will leave with leftovers in hand, a smile on your face, a full and happy belly, and feel like you were just embraced and blessed by family. Stellini opened its doors in 1989 in the same place it sits today in a freestanding building on the south end of Hilton Head Island. 1989 was a long time ago -- it was back before we had a Cross Island Parkway and when you drove through Bluffton on your way to Savannah there was nothing but trees lining the side of 278. The population on the Island was half of what it is today and the number of restaurants was a tiny fraction. Just as the tourists and tides have come and gone on Hilton Head, so too have the restaurants. I have learned over the years that to withstand the test of time in this competitive business you not only have to have 16

great food and service, but you need an X factor – an undefinable degree of dedication on the owner’s part to bring people back for more. Kyle and Elise Parlagreco, owners of Stellini, portray that X factor in all they do. Kyle started working as a bartender at Stellini back in the beginning and quickly worked his way through all facets of the operation from waiter to manager to GM. He hired Elise, now his wife of 26 years, as the hostess early on. Recognizing a good team, the duo, along with Elise’s father, Joe Pesce, bought the restaurant and have written their own success story ever since. Joe pops in now and again to do a little work and grab a good meal, but for the most part it is Kyle and Elise’s labor of love 6 days a week. “We put our heart and soul into this,” said Kyle. “One of us is here at all times,” added Elise. As the General Manager of – well -- everything, Kyle knows the whole establishment from the bar to the kitchen. Elise stays mostly


out front – managing, ‘hostessing’, bartending, and greeting guests. She also orders the wines and visits Farmer’s Markets to bring local and fresh to the table. Behind the scenes, in the kitchen, is the mastermind of the meals, Lawrence Schneider, who has been executive chef at Stellini for 17 years. The menu is what they call a meeting of the minds between the three of them. “We put our heads together because three brain cells are better than one,” commented Kyle with a grin. “What makes our food different is that we do traditional Italian food New Jersey or New York- style. Our menu has some very traditional items along with creative Italian Fare.” When I asked Lawrence (Larry) what his specialty was, he chuckled and said, “Italian food.” Kyle chipped in that his favorite to cook was “at home”. Jokes aside, the Osso Bucco has been described by many as the best they have ever had and the Veal Rollatini is to die for -- Veal Scaloppini pounded and stuffed with sausage, prosciutto, spinach, and mozzarella, rolled up, pan seared, and served with wild mushroom risotto. Do not miss out on the fall special appetizer Fried Caprese – Mozzarella that is breaded and fried and topped with fresh basil, tomato, and homemade balsamic vinaigrette. Larry’s seafood specials focus

on whatever is fresh. Fall menu favorites include Sea Bass Napoli – served with seasoned breadcrumbs and topped with olive oil, garlic, tomatoes, Kalamata Olives, and capers and baked to perfection. Also popular in the fall is the Tuscany Grouper, Stuffed Flounder, and Zuppa de Pesce - grouper, clams, shrimp, scallops, mussels, and calamari in marinara sauce over linguine. Oh and definitely soak up all the wonderfulness on your plate with some garlic bread – homemade every day. All meals are served with a complimentary house salad served with their red wine vinaigrette and parmesan and croutons. Save room for dessert because Elise makes them all from scratch. The fall menu will include Pumpkin Cheesecake with a bourbon caramel sauce, a Bourbon Chocolate Pecan Pie, and Fresh Apple Cake, all available for purchase to take home. Also available for purchase are jars of their marinara and vodka sauce as well as homemade Red Wine or Balsamic Vinaigrette dressing. There is an Early Bird Menu that runs from 5-5:45 and includes a 3 course meal – appetizer, salad, and entrée plus a glass of wine – for $18.95. The Children’s menu includes various pastas and sauces, as well as the tried and true chicken tenders. The wine menu is reasonably priced and consists primarily of Italian and Californian grapes. “We want the wines to compliment the food. Everything is priced to sell,” Kyle explained. Choice cocktails include many martini varieties, homemade Limoncello, and hold onto your hat for the ever popular clear Chocolate Martini – Grey Goose Vodka, clear Crème de Cocoa, and a Hershey’s Kiss. The atmosphere at Stellini is warm and comfortable. The lighting is low, the Frank Sinatra music soft. The Carolina Room which is all glass-enclosed boasts views of nature at its best. Dining here is never rushed – as family style goes, you can wine and dine at your own pace and enjoy all the tastes and sensations your special evening has to offer. Like the restaurant itself, the staff and clientele at Stellini have staying power. “Our staff has been with us for years. They are like family and they each have their own following that come in and ask for them,” said Elise. “Our regular customers have been coming here for 29 years. Repeat, repeat, repeat. We have seen generations come through the doors and it’s neat to see the kids grown up. The same people come every year and pick up key lime pies to take back to Ohio. Some bring in boxes to take home the sauces and dressing.” Kyle piped in -- “Everyone feels like family here. People are not ‘vacationers’ or ‘Islanders’. They are family and we make them feel as comfortable as possible.” Stellini is open Monday through Saturday from 5 until the last plate is cleared and the last drop of wine consumed. They can do private parties for up to 90 people as well as catering including large platters for pick-up or delivery. Reservations are suggested. Not Your Average

It’s officially Pumpkin Spice season. You’ll see it everywhere from pies and cookies to coffees, teas, and even milkshakes. While the average pumpkin spice latte is chock full of added sugar and unnecessary calories, this spice actually has a rich nutritional foundation. Taking matters into your own hands and creating some fall specialties at home can help you savor this flavor without all the junk. What’s in ‘pumpkin spice’ anyway? Usually this blend of flavors includes cinnamon, nutmeg, and ginger. Each with its own unique flavor profile and nutritional base, these ingredients together pack a powerful punch not just for your tastebuds but also for your overall health. We get the blood sugar leveling benefits of cinnamon, and some fiber and vitamin B from the nutmeg. However, the star of the show is the ginger. This powerful powder made from ginger root not only brings iron and potassium to the mix, but is also believed to soothe digestive issues. To truly enjoy the richness of this seasonal flavor, let me encourage you to play with these ingredients and make your own mix at home. Anytime you can create something from scratch in your own kitchen you take control of added sugar and preservatives to create a much cleaner food item. I encourage this approach with any ‘treat’ meal. Here is a base to start with to create your own Pumpkin Spice. Mix together: 1/4 cup ground cinnamon 1 tablespoon ground nutmeg 2 tablespoons ground ginger 1 teaspoon ground allspice Optional ingredients include: 1 tablespoon ground cardamom 1 teaspoon ground cloves Do you prefer your pumpkin spice a little spicier than average? Add another teaspoon of ginger. Want a deeper, richer flavor? Add a teaspoon of cloves. Want to tone down the flavor a little? Add a pinch of vanilla. The recipe is yours to tweak until it suits your own personal pumpkin spice preference. Now that you have your own mix, you can sprinkle it on to oatmeal, top your coffee with it, add it to your smoothie. The recipe is yours and the options are endless! 20

I bet you can create your own personal perfect Pumpkin Spice Latte. Start with this as your base and get creative: Mix 1 cup of milk with 2 tablespoons of pumpkin puree and 1 teaspoon of your pumpkin spice mix. Heat in the microwave for :60. Once heated, whip vigorously until the milk is light and frothy. Pour over a cup of hot coffee and voila! Enjoy a healthy and flavorful fall treat! Bourbon.

The name alone conjures up an almost instantaneous relaxation of the nerves. In our mind’s eye, we hear the word and instantly we’re transported to a front porch, a gently swaying swing chair, and a rocks glass sparkling with that caramel-colored nectar of Kentucky. It’s a liquor made for the slow pace of the south. Vodka wants to take you out clubbing. Scotch wants to set you down in a leather wingback surrounded by old books and put a cigar in your hand. But bourbon, bourbon just wants you to relax and unwind. In these stressful times, it’s no wonder bourbon’s popularity is on the rise. Couple that with the true patriotism of the only spirit created in the U.S., and you have the perfect storm for making bourbon the fastest-rising spirit in the country. According to the Distilled Spirits Council of the United States, in 2017, over 23 million 9-liter cases of American Whiskey were sold in the United States, generating over $3.4 billion in revenue for distillers. That includes Tennessee whiskey along with their cross-border competition in Kentucky, but the number is impressive nonetheless. Especially when you consider that just a few years ago, bourbon was considered passé. Writing in Nation’s Restaurant News, David Flaherty wrote, “Changing tastes in the 1960s and early ’70s hit bourbon hard, and “white spirits” such as vodka and unaged rum became popular. Whiskey came to be thought of as a bygone drink of the older generation. By the 1980s, the bourbon industry had seen such a slump that many large distilleries once thought untouchable closed their doors.” 28

So what changed?

“Over the past few years we’ve seen two things happening – Americans are finding new ways to drink bourbon thanks to the craft cocktail movement, and palates have evolved to be more exploratory and appreciative of the variety available in the bourbon industry today. These things together have led to a big boom in our industry,” said Rob Samuels, 8th generation distiller and COO of Maker’s Mark. “Bartenders have gotten more and more creative with how they showcase the spirit – incorporating off-beat ingredients to compliment it and generally just opening people’s eyes up to different ways to use bourbon in their drinks. Someone who used to be a vodka drinker, simply because all they knew of bourbon was a bourbon and coke, has now been introduced to countless other bourbon drinks, and has probably found a few that they’ve come to like.” Bourbon has also risen hand-in-hand with the foodie movement in the U.S. As diners become more aware of the ingredients that go into their food and the chefs who create them, they also want that hands-on experience that comes with the many small craft bourbon labels that are popping up nationwide. “With each bourbon producer using his or her own unique recipe, each bourbon tastes different, and people appreciate the excitement that comes with the variety available in the bourbon category,” said Samuels. “It’s important to know that there’s a bourbon out there for everyone. The best way to figure out what you like isn’t to be scared of it, but to taste and experience them all for yourself - responsibly, of course.” Some of these small craft distillers, in fact, have had trouble keeping up with demand. Near-legendary demand has grown around labels like Pappy Van Winkle, which holds its production to 7,000-8,000 cases a year (compare that to Jim Beam’s 7-8 million). The result is a five-year waiting list to enjoy a bottle of bourbon that can go for up to $5,000 a bottle. It’s so popular, even southern celebrities like fashion designer and bourbon aficionado Billy Reid have trouble getting a bottle. “It’s impossible to find anymore. Years ago, we used to literally pour it in our stores,” he said “None of us knew what was going to happen it with. I cannot believe we used to do that.” Based out of rural Alabama, Reid serves as a sort of southern cultural ambassador to the fashion world, and he’s noticing more and more that bourbon is making its way throughout the country on every side of the Mason-Dixon line. “It’s everywhere. New York City, the whole place has turned into bourbon bars. People do associate it with being southern,” he said, adding with a laugh, “At least we’ve exported something useful, I guess.” One need only take a quick look around the Lowcountry to see that the rising popularity of bourbon has definitely arrived on our home shores. With bourbon bars popping up all over Hilton Head and Bluffton you’re never too far from a tall glass of Kentucky’s finest. So get out there, find your front porch, and toast to fall.

It’s time to put on your dancing shoes and join hundreds of your closest friends for the Fall Music & Taste on the Harbour at Shelter Cove Marina. As the summer crowds clear out and the weather cools down, the Island’s best bands and restaurants serve up their greatest hits around the iconic Neptune sundial on Thursday nights, September 6 through October 18, weather permitting. Now entering its 10th season, this sunset celebration featuring food and fun offers locals a chance to reconnect and rediscover one of Hilton Head’s most 36

scenic and tastiest spots. “It’s always well attended,” notes Maryanne Laskowitz, who owns San Miguel’s Mexican Café, along with her husband Scott. “I feel like I’m at a wedding! Everybody dances and has a good time. It’s fun for us to be there, too – we get to hear the music and see all the people.” Each week, at least two of Shelter Cove Harbour’s signature waterside restaurants — such as San Miguel’s, ELA’s on the Water, Mediterranean Harbour Bar & Grill, Bistro 17, Bucci & Murray’s


Pub on the Harbour and Scott’s Fish Market — set up stations next to Neptune with a selection of light appetizers and drink specials available for purchase. According to Laskowitz, San Miguel’s usually offers a choice of fish or shrimp tacos at their station, as well as their famed margaritas, beer, wine and water. The restaurant itself also does a brisk business on these Thursday nights, catering to those who want to enjoy “Mexican on the Marina” or a few more margaritas while strolling around the harbor. The award-winning ELA’s on the Water takes a slightly different approach to their food and drink offerings, explains Manager John Wasem. Renowned for combining culinary flair with local fresh catch specialties, their Chef changes it up at each event with a variety of savory appetizer-style plates, such as lobster sliders, accompanied by several red and white wine choices and beer. Of course, the free concerts are a highlight of Music & Taste on the Harbour and, while the band roster had not been confirmed at press time, past performers have included the Univer-Soul sounds of Deas-Guyz, Beach Music, Motown and dance classics from every decade showcasing the group vocals and brass of The Headliners, as well as Classics, R & B, Soul, Beach, a little Rock & Roll and a bit of jazz from Target the Band. Seating is somewhat limited at Shelter Cove Harbour and guests are asked to bring chairs in case they need a break from dancing or a place to enjoy their food and drinks. They are also asked to bring canned goods to donate to The Deep Well Project, a local volunteer-driven organization helping Islanders in need. Coolers are not permitted. Palmetto Bay Sunrise Cafe Sunrise Fried Oysters

With Horseradish Cream Sauce 8 Fresh Oysters 1 cup All Purpose Flour 3 tbls. Stew Spice (or spice of your choice) Paper Towels OIL FOR FRYING Heat oil to 350 in saucepan. Dredge oysters in flour and spice mixture. Fry oysters for one minute and put on paper towels and serve on a warm plate.

Horseradish Cream Sauce (serves 4)

2 cups Heavy Cream ½ cup Horseradish (squeezed dry) 2 tbls. Lobster or Shrimp Paste 1 tbls. Chopped Chives Bring cream, horseradish seafood paste to a simmer. Reduce heat for ten minutes. Take off heat and add chives and stir.

Potato Crusted Flounder (serves 2)

2 6-8 oz. Pieces of Flounder 1 Box Dry Hash Browns Salt and Pepper to Taste Hydrate potatoes per box instructions. Pat flounder dry. Cover one side of fish with potatoes in a thin layer. Hilton Head Island is a place built on hospitality. Beyond the remarkable array of restaurants you’ll find within these pages and around this great town, there are countless hotels and vacation rental agencies. Hospitality forms the bedrock of the island’s economy, providing a foundation upon which every real estate agent, doctor, golf pro and attorney depends. Few people know this as well as Charles Calvert, who began his academic career at the old USCB Hilton Head campus and will serve as Dean of new USCB Hospitality Management campus. “We definitely feel like we will ultimately improve the level of guest experience on the island,” said Calvert. As this issue was going to press, construction was running apace on the $24.5 million, 40,000-squarefoot campus located on Office Park Road. That same spot once housed USCB’s original Hilton Head campus, and will now sport a stunning new campus rife with Lowcountry-inspired architectural elements from tabby to glass. But more important than the building itself is the potential it represents, particularly to the hospitality industry and to the students who will one day work on its front lines. “This campus will be an experiential learning campus. Over half of our students already do internships on the island,” said Calvert. “We’re going to be really connected to the industry, so students can approach local businesses for their junior and senior projects.” With a focus on practical education in the field, this new USCB campus will provide upper-level hospitality students a chance to gain first-hand experience in an area renowned on the island. “Many of those students stay on the island because there are just so many great positions here and students can move from internship to supervisory roles,” said Calvert. “They get to live and learn in a world-class destination.”


In addition to giving local residents a chance to finish their degree, USCB’s new campus will entice hospitality students from around the region. It may not solve the labor crunch currently gripping our area hospitality businesses, but it’s a step in the right direction. “We believe this program will help ease the labor shortage but we’re also providing a great marriage between our students and local businesses,” said Calvert. “The hospitality industry has been very supportive of students’ need to be able to train and work in a high-end destination.” Businesses have already been very supportive of USCB’s hospitality students, and the new campus will allow the university to reciprocate that support. Along with the Lowcountry and Resort Islands Tourism Institute and the Center for Event Management and Hospitality Training, the new building will house a full test kitchen as well as a beverage lab. “We would love to bring in restaurateurs who want to have a continuing education presentation or lead a class or event,” said Calvert. “We see this as a public building.” Calvert says the test kitchen and beverage lab will make an ideal setting for any local restaurants looking to train staff or host a cooking demonstration for the public. A 103-seat tiered classroom and conference rooms would also be available for any local businesses who just need a large space to address staff or hold meetings. “We’re here to support local industry. It’s going to be a big community asset,” said Calvert. That support doesn’t just stop at providing qualified workers and opening the university’s doors to area restaurants and businesses. USCB’s Hilton Head Island campus will continue the university’s tradition of offering Island Ambassador training. This rigorous program guides students through a well-rounded view of Hilton Head Island, its culture and its history. Upon graduation, students are then encouraged to go out and spread the gospel of Hilton Head Island. “It’s our way of telling people working on the island that they’re important,” said Calvert. From savory Italian specialties and a celebration of carnivorous cuisine to a multi-day salute to mollusks, the Lowcountry’s best flavors, culinary heritage and sense of community are showcased at several tasty food festivals this fall. Italian Heritage Festival

First on the menu is the 9th Annual Italian Heritage Festival on Saturday, September 15 at the Coastal Discovery Museum at Honey Horn. “The Old Country Comes to the Lowcountry” for an afternoon of Italian food, wine, vendors, live entertainment, cultural displays, contests, silent auctions and family fun at this popular event hosted by the Italian-American Club of Hilton Head Island, Sister City of Verona, Italy. Longtime Festival Chairman Paul A. Caimano expects upwards of 3,500 people at this year’s celebration which welcomes both “Italians and those that want to be Italian.” “It’s getting bigger every year,” he says. “We have people from Jacksonsville, Columbia, Charleston, Charlotte. I’ve even had people who call me and want to know when the festival is going to be, so they can arrange their timeshare around it.” From 11 a.m. - 4 p.m., vendors offer a selection of Italian food and beverages, including homemade cannolis, wine and beer, as well as handcrafted items. Other festival highlights include a Kid’s Zone, Pizza Eating and Grape Stomping Contests, a Cork Pull, a Pizza Wheel that can be spun for prizes redeemable at local establishments and a Silent Auction. 52

Thanks to Tropical Storm Irma, last year’s event was postponed until November and held in conjunction with Meatball Madness — the Club’s successful attempt to create the World’s Largest Meatball. Although nothing remains of the 1,707.8-pound, gigantic ball of meat that was cut up and donated to area food banks, the oven used to bake this Guinness World Record breaker will be on display at the 2018 Italian Heritage Festival. In addition, advance tickets for the wine-focused ZIN Experience with Italian Flair at The Shore House on October 17 will be available for purchase. “It’s a lot of work, but it’s a lot of fun,” says Caimano. “It’s just a good, family-oriented festival.” It’s also an event that keeps on giving back to the community long after the last meatball is eaten. “We give back to as many non-profits as possible on the Island and in Bluffton,” Caimano notes. “And give out six to seven scholarships every year to seniors moving on to college.” The Coastal Discovery Museum is located at 70 Honey Horn Drive. Burger, Bacon & BBQ

A triple treat for meat-eaters, the Island Rec. Center brings back Burger, Bacon & BBQ on October 6. This fun food competition in Shelter Cove Park pits the area’s best chefs and restaurants against one another as they serve up snack-size servings and sliders showcasing (but not limited to) their best burgers, bacon and barbecue specialties. According to Special Events Director Joe Cain, this new celebration debuted in 2017 as a combination of two other seasonal festivities: the fall Burgers & Brew with the spring Beer, Bacon & Music. While the words “Brew” and “Music” may have been dropped from the revamped event’s name, there is still plenty of both to be found with performances from the best local bands and a Craft Beer Garden, as well as a Sports Lounge to catch all the college games and a Kid’s Zone for the little ones. Last year, the cooking competition was hot, as was the weather. To cool things down a bit, the time of this carnivorous celebration was tweaked to run from 3 - 8 p.m. Captain Woody’s Bar and Grill took home gold in 2017 for Best Burger with One Hot Mama’s/The Lodge/Marley’s Shrimp & Burger Shack taking the top prize for Best Barbecue. Bringing Asian Sliders, Korean BBQ and Funnel Cake Bacon Dips to the table, Howell-Chase Heating and Air Conditioning won the Grand Prize in the Bacon category. Hilton Head Oyster Festival

Cooler weather ushers in the Rec. Center’s annual celebration of a Lowcountry staple —oysters — November 9-10. Held in Shelter Cove Park and sponsored by South State Bank, this ode to oysters has also undergone some recent changes with a Friday night party replacing the festival’s Sunday hours. “We really had success with Friday night last year,” notes Cain. “It was the first time we tried it. We had people lined up at 4:30! Don’t worry, we won’t run out of oysters.” The Friday night festivities are geared towards adults and include all-you-can-eat steamed local oysters, Lowcountry boil, pulled pork, seafood chowder and chili provided by Roy’s Place Catering, plus live music and a football viewing area. Admission is $35 at the door; beverages are sold separately. The party continues all-day on Saturday with a family-friendly selection of steamed, fried and stewed oysters, food for nonseafood eaters, live entertainment, a Kid’s Zone, Local Artisan Pop-Up Shops marshmallow roasting and Sports Lounge from 11 a.m.-6 p.m. Admission is $7 for adults and free for children 10 and under. Three years ago when Kyle Wareham’s lease was up at his apartment in Philadelphia, he decided to pop down to Hilton Head to visit his father. What he discovered was the musical mecca that Islanders call home. Whether he found music or music found him, the fates can only tell. But Kyle is now a full time musician on the Island and our music community has been upped by one talented guy. Singer and songwriter, Kyle has an easy going style that is as simplistic as it is sonorous. So just sit back, relax, and enjoy. Kyle grew up with music reverberating through his home as his father was an accomplished drummer and guitarist. He started piano lessons at age five and while he could hear the music and reproduce it with his ear, he never quite got the knack of reading it. “I was always in trouble with my piano teacher,” he said with a resigned smile. Perhaps his future was sealed when he picked up the guitar in middle school, citing that it was a much cooler instrument than the piano. Almost two decades later, Kyle is picking his way across the Island giving pleasure to all. When Kyle came to Hilton Head it was really just a band aid at the time. “I came down with no intention of staying or playing music,” he said. “I was out one night at Aunt Chillida’s and met Derek from Groove Town Assault and we were talking music. He told me to come by the Tiki Hut the next day and I could do a song with his band. The very next night I landed my own solo gig at Aunt Chillida’s.” So it began and so it has continued and what was just a stop-by on the Island has turned into a career for Kyle. “I just started adding more and more gigs and meeting more and more people. It happened organically. Now I’m making plenty of money and having fun.” What could be better than that?! According to Kyle, “My music is based on songs and singing. It’s not a lot of fancy stuff. The covers I play come out sounding like me. My sets are different every time I get on stage. I never have the same set list and I often play medleys that will last an hour so people do not feel obligated to clap.” Kyle says his greatest influence came from Reggae, specifically Bob Marley. Other cover song artists he plays include U2, David Gray, Ben Harper, and The Cranberries. “I never know where my inspiration will come from,” he noted. Kyle writes his own music too and sprinkles his songs into his shows when possible. Aside from his solo gigs, Kyle has formed two bands on the Island. He started ‘Pretty Darn’ with friend Nick Poulin in 2016, both on guitar and vocals. “Nick is a great songwriter,” he commented. Reaching to his passion for Reggae, Kyle also recently started Sound Boy, made up of 6 talented Island musicians that get together and write their own songs and have a ton of fun. “It’s a nice respite for everyone.” Also, like many local musicians, Kyle fills in where needed and whenever asked and will play drums, percussion, and keyboard, besides doing guitar and vocals. BLUFFTON Arts & Seafood Festival A Week Long Showcase of Bluffton’s Treasures BY RISA WILLIAMS MCMILLAN

Anyone who has had the good fortune to take a lazy boat ride up the May River knows that which each bend there are new wonders to behold. Beneath the ripples swim the ocean’s bounty and the shorelines and sand bars are the inspirations behind many an artist’s palette. For 13 years, these wonders and tastes of the sea and the landscapes that surround them have been the impetus behind one of the largest festivals in the Lowcountry the Bluffton Arts & Seafood Festival. 108 TASTEOFHILTONHEAD.COM


The Bluffton Arts & Seafood Festival was started by the Bluffton Rotary Club as a way to promote tourism in Bluffton and at the same time showcase what makes Bluffton unique. The concept behind it was simple – a non-profit event to help the local economy. The festival has skyrocketed from one day to a full week of activities, events, food, and entertainment to educate and delight all. According to Mary O’Neill, president of the board of 16 Blufftonians that coordinates the festival, “Bluffton itself is cultural, artsy, historical, and we have the May River. This festival promotes it all – arts, culture, seafood – It involves the community, it brings in a ton of tourists, and it gives back. We have events that beguile everyone.” With the expected crowd of 25,000 this year, they are adding more seating areas and a new tailgating section where football fans can peel off and catch up on scores. “We try to put in a bit of everything and not lose sight of the original goal,” added Mary. This year’s theme is “Follow the Oyster” and festival posters and tee shirts will be designed accordingly. It truly takes a community to pull off a festival of this magnitude and that means volunteers from every sector. Aside from the Board of Directors, there are many subcommittees and the Rotary Club runs the bar. The high schools provide lots of volunteers through ROTC, there is a transportation crew, and the police and fire departments are on hand in volume. The opening weekend of the festival will woo you into the excitement of the week to come. Events kick off on Saturday, October 13th, with a live chalk art competition and The Bluffton Heritage Discovery Tour, an educational journey through the history of Bluffton and the Reconstruction era in the south. Sunday will have ongoing food, arts exhibits, and entertainment. Local artists will be in the forefront as people stroll Calhoun Street and enjoy the Friends of Bluffton Artists Invitational. You can support local food charities by attending Empty Bowls, and there will be an Oyster Fest in the evening with live music. The Boat Parade and Blessing of the Fleet will be held at the Church of the Cross at 4 p.m. on Sunday with Gospel Music by Lavon Stevens. Weekday activities will include many events and excursions that are all designed to celebrate the wonders of the May River. Choose your mode of river transport as there are tours every day via boat, kayak, and paddle board. Evening activities include a buffet dinner at the Waddell Mariculture Center with tours and demonstrations, a haunted history walking tour of Old Town Bluffton, a Lowcountry Author’s Night, and a guided tour of historic Bluffton homes. On Friday night of the festival, Bluffton Self Help will host a ‘Sips and Seafood Party’ complete with chef’s demonstrations and auctions. The festival will close with something for everyone on the final weekend. Aside from the river tours, there will be an Old Town Oyster 10k and 5k fun run for everyone that wants to work off some calories before visiting the food vendors in the afternoon. Kids can enter a Children’s Fishing Tournament on Saturday morning and also enjoy Art in the Park under the pavilion with games, crafts, and lots of fun. Saturday evening will go out with a bang at the Bluffton Oyster Company’s ‘Rockin’ on the Dock’ with live music, seafood galore, and fireworks. The signature event of the festival is the free admission, two-day, Art & Seafood Street Fest on October 20-21 that features over 100 artists from up and down the east coast and inland, Ohio to Florida. Despite the magnitude of the event, this is a juried art show. Also, in order to participate artists have to apply and be accepted to the festival. It is the same with the food vendors. “The artists recognize this as a quality event – one of the best – We have a ton of return artists and a waiting list every year,” said Mary. The mediums presented are as varied as the cultures and hometowns of the artists, but one thing is for sure – word has gotten out about this festival and it certainly could take the discerning art critic a full two days to take in all the artistic wonders. Aside from acrylic, oil, and watercolor paintings, there are sculptures, stainless steel and copper art, photography, bird houses, wall hangings, pottery, wood carvings, glass sculptures, and even fish rubbings. There is something for all artistic tastes – even environmental exhibits -- and it is hard to walk away without a prized possession in tow. Aside from finding unique artwork for my walls, I always discover the perfect Christmas gift for my parents at the festival. Entertainment and food also abound at the two day finale. Food tents can be found amidst the artisans with choices that will please all palates. Aside from seafood delicacies right out of the May River like shrimp, oysters, and crab, you will surely find some gumbos and hoagies and plenty of sweet treats and beverages. Entertainment is scattered down Calhoun Street on three different stages that will each have bands rotating through the day. Seating is plentiful by the music tents to take in the sights, sounds, and tastes of this extraordinary festival. This has turned into a must-attend festival so be sure to put it on your calendar! Richard Canestrari builds upon old-world techniques with a healthy dose of wild-eyed creativity.

It’s early in the morning at Pour Richard’s, the small restaurant at the tail end of a Bluffton Parkway strip that has become an unlikely standard bearer for the town’s culinary scene, and Chef Richard Canestrari is trying to explain how a bone-in meatloaf works. “I’ve looked everywhere and no one has ever tried anything like this,” he said, his eyes wild with excitement. “I’ve Googled it, and I can’t find anything.” At the heart of this intriguing dish is a bison bone, halved into a canoe cut and filled with brioche to soak up the marrow. Around that, a layer of seasoned ground bison is held in place by a surrounding layer of thick, streaky bacon. It’s exactly the 110 TASTEOFHILTONHEAD.COM

kind of mad scientist concoction that has kept a loyal following of customers streaming in the doors at Pour Richard’s, drawn by each day’s entirely new menu offerings. “That’s what I’ve told every sous chef I’ve ever worked with, whether at the Hyatt, 211 Park, Juleps —wherever I’ve been. There are no rules in my kitchen. If you think it might work, give it a shot,” he said. While a few standbys grace the menu, it’s otherwise in a constant state of flux. That’s as much a product of Canestrari’s boundless imagination as it is to his insistence on fresh ingredients. Although he resists the terms “farm to table” or “pond to table,” it’s not far off from Canestrari’s methods.


“Yesterday, I went down and got some fresh tomatoes, figs that were picked that morning and cucumbers from Cahill’s, then Sea Eagle and Lowcountry Lobster…. After 30 some years you have a good bond with your suppliers,” he said. “You get to learn the availability of food you get a chance to work with. It’s like the ocean, it’s like the weather. It’s forever changing every day.” For an old-school guy who still carries a pen and notepad, and has shied away from computers since one destroyed his 168page term paper in college, it’s an approach that comes naturally. He was sourcing his ingredients this way long before farm to table was ever conceived as a buzzword, back when he’d pick up produce from a dirt lot that would one day become Wingo’s. “Back then you’d get produce or seafood from two guys in a pickup truck. I bought tomatoes from Mr. Shaw who was a fabulous guy and taught me so much about life,” he said. “These people would teach you everything you needed to know.” They were far from the first teachers who would guide Canestrari along his culinary path. It began at the apron strings of his grandmother. “It was a good, tough Italian family. You had to help out. Growing up next door, it was a part of life,” he said, “That’s where I started, watching the old techniques of cooking. Those are the techniques that never leave us.” Under grandma’s guidance, Canestrari would help make zucchini fritters and red sauce, learning along the way the fundamentals of old-school cooking. “I think that’s the key is not forgetting the past and looking toward the future of food.” He took what he learned in that kitchen and applied it the prestigious Johnson & Wales University where his old-school techniques were honed with good old-fashioned discipline. “I had to go to class in a tuxedo,” he said. “When you’d show up they’d check your fingernails. If you didn’t shave they’d give you a razor blade from last year and you’d have to go shave with it. It was like a military school.” For a guy who now sports a goatee and a long ponytail, and a self-professed child of the 60s and 70s, it was an awakening. But it instilled in him a passion for cooking and a work ethic that has played a huge role in his devotion to food. “People say, ‘You work so hard.’ Anyone who has a job works hard,” he said. “It’s not a job. It’s a social scene. It’s a learning tool. It’s fun. It’s what drives me to come up with a new menu every day… I can’t imagine having to cook the same food every day and every night and not change my menu.” And the result has been a restaurant that consistently pulls in best of awards from every media outlet in town. And with each new accolade to add to the wall, Canestrari has a tradition. “We just got awarded yesterday best overall dining experience in Bluffton. The first thing I did was sit everybody down and said, ‘This is why we’re busy.’ And then we thank our employees,” he said. “I tell them, ‘You guys are part of this.’ When I got Best Chef two out of the last three times it wasn’t because of me, it was because of my staff. It takes a circle of people.”
