PUBLISHER’S NOTE Now more than ever, health is a subject that is at the top of most people’s minds. That’s not to say that the health of yourself, your family and your friends hadn’t been a priority until now, it’s just that the importance of good health has been driven to the forefront now that it can be a matter of life and death in some cases. I think most people place their health above any other concerns or obstacles that arise, and as we all know those obstacles are always lurking. When I feel good, I can deal with anything that comes my way. When I don’t, well, that’s a whole different ballgame. So what’s the best way to stay healthy and feel good? Eating healthy certainly would be at the top of that list. I confess this area is probably the toughest for me. Having relationships with a high number of the island’s best restaurants leads to a lot of great food and drink, a dilemma that I welcome gladly. Making healthy choices becomes more difficult when the less healthy option is right there on the table in front of you. Thankfully, most if not all of these awesome establishments offer healthy choices in addition to their other more indulgent menu items. You can still enjoy the service, hospitality and atmosphere of these establishments, while also making concessions to your need to shape up your eating habits. For novice chefs like myself, ordering healthy cuisine out is better than anything I could come up with. Obviously, the other key to overall good health is exercise, and the island provides the perfect backdrop for all kinds of ways to get the heart pumping. With miles of beach and bike trails there’s no excuse for missing out on that walk, run or bike ride – especially with the weather we enjoy here year-round. If you need motivation, join one of the many fitness centers locally or take advantage of a personal trainer – you’ll find some of the best in the country calling Hilton Head home. Golf, tennis, pickleball… there’s never a shortage of ways to get your pulse racing around here. Exercise is not a one-size-fits-all proposition, so find something you enjoy and can keep doing consistently. Another key factor to living a healthy lifestyle is sleep. It can be tough in today’s fast-paced world to carve out those eight hours, but they are vital to good health. Being tired leads to a less productive day and also makes you more susceptible to getting sick. It can also affect your ability to get your exercise in or do it in a meaningful way. I know this varies from person to person, but in the long run, getting enough sleep can make a huge difference in your lifestyle. There will always be excuses. There will always be that decadent dessert, that reason why you can’t get in your daily exercise, that late-night show that eats away at a good night’s sleep. And there will always be times when you give in to that temptation, no matter how hard you try. And you should, every once in a while. The trick is to get back into the habit. Healthy living takes a little more discipline. But it is possible to live that healthier lifestyle, while still living to the fullest. EVERY DOG HAS ITS DAY
How a small café on the south end became a global icon. BY BARRY KAUFMAN

When do legends begin? Most, with the phrase “Once Upon a Time,” but where does the story truly start? Up until John Henry took on the steampowered machine that would be his undoing, he was just another railroad worker. John Chapman was merely a midwestern settler until he started planting trees, earning the nickname “Johnny Appleseed.” 12

And up until that day he saved John Braddocks from a raging storm, Jake was just a dog. But from that point on, whether the story is apocryphal or not, Jake the Salty Dog was a legend. The Salty Dog Café, launched in 1987 in honor of Jake’s heroic deeds, has followed a similar trajectory into legend. Sure, it started out as just a humble café. More than 30 years later, it has become a legend in its own right. It’s not just
a restaurant – it’s an icon. It’s a T-shirt that you’ll see the world over. It’s an ever-expanding array of eateries under the Salty Dog banner, both in and around South Beach Marina and up and down the coast. It’s an unforgettable experience, whether through live music on the deck or out on the water on one of their happy hour cruises. But more than that, it is an intrinsic part of the Hilton Head Island experience. “Becoming an island institution that you must visit while on Hilton Head is a cool feeling,” said Co-Food and Beverage Director Herb Britton, an 18-year veteran of the company. “Guests know to expect smiling happy faces when they return each year to see us.” There’s so much to the Salty Dog Café experience that has contributed to its well-earned legend. But even if you just weigh it on its merit as a restaurant, it’s quickly evident why it has shown such staying power. The hush puppies alone would put Salty Dog in the hall of fame, but when you dive into the depths of Lowcountry seafood favorites, you discover one of the most well-rounded selection on the island. The original restaurant’s culinary brilliance has led to an explosion of different concepts over the past few decades. Wreck of the Salty Dog, opened in 2004, puts a sophisticated spin on the family-friendly favorites of its parent restaurant, with a raw bar and a chef-inspired lineup of daily specials. Next came Land’s End Tavern in 2006, which converted an old boat storage building into an exciting indoor experience, adding fresh-baked pizzas to the menu. After that, the Salty Dog Café experience crossed the bridge with a Bluffton location and a Seabrook Island location in 2016 and 2019, respectively. “I feel very fortunate to have started when I did in 2002,” said Britton. “I have seen a lot of changes and very proud to have been a part of some of the decisions we have made to get where we are today. It’s been an incredible thing to witness.” When asked what lies at the heart of Salty Dog’s enduring appeal, Britton answered, “It starts with the location at South Beach, our iconic café, live music, and great food… It’s the whole experience.” Yes, the food itself sets the bar for the island’s culinary scene. But what creates those memories for visitors and locals alike is the time spent along South Beach Marina’s stretch of shoreline. The lineup of local musicians who have entertained the crowds reads like a who’s who of the island’s music scene. And as the staggering popularity of the Happy Hour cruises will attest, there’s just something about South Beach sunsets that feels different. But any discussion of the lasting appeal of the Salty Dog Café has to mention their iconic T-Shirts. “To have generations of families returning year after year to purchase our shirts for themselves, family, and friends says volumes about our entire company.” The shirts, emblazoned with the iconic image of Jake, have taken on a legend of their own. In fact, it was only three years after the restaurant opened that Salty Dog T-Shirt Factory opened, as demand had quickly outgrown the original location where they
had previously been produced. Its current, even larger, facility opened on Arrow Road in 1994. “The Salty Dog Café tee is a symbol of Hilton Head Island,” said Steve Hughes, director of screen print operations. Having started in the screen printing business in 1989, he brought a wealth of experience when he joined Salty Dog in 1993. And this Hanes Hall of Famer has been at it ever since. “We strive to use the best products available. We don’t sacrifice quality in the name of profits. We guarantee our product to last.” Both Britton and Hughes have enjoyed lengthy careers, with the company and they’re not alone in that. You’ll find veteran employees at every level in the Salty Dog Café empire, a testament to the nurturing environment the company has created.
When asked about the best part of his job, Britton responded, “starting as the chef in the building that is now the Wreck of the Salty Dog, It was the location and being given the trust to create whatever I wished. Now being co-food and beverage director it’s being part of a team that will stop at nothing to keep improving for our guests and our crew.” “Best part of the job is the fact that my two employees and I get along extremely well, with each of us having unique talents that complement the other,” said Hughes. “Being part of the Dog since ‘93, I’ve seen many years with two-digit growth. When the economy hits a rough patch, people still find their way to Hilton Head Island and more specifically, the Salty Dog. We love to see the demand grow, and loyal customers returning year after year.” Maybe it’s the food. Maybe it’s the atmosphere. Maybe it’s the people. And maybe it’s the T-Shirts. But most likely, it’s all of it. After all, it takes a little bit extra to become a legend.

Shuck and Awe How brothers Tommy and John Mollica give Hilton Head Island what it didn’t know it always needed. BY BARRY KAUFMAN

Hilton Head Island was not the first stop for Tommy and John Mollica. Starting out in their dad’s Philadelphia restaurant, the brothers developed a flair for hospitality that took them around the country. On their own, they honed their skills in the front and back of the house. As a duo, they did everything from opening up Toledo’s Hollywood Casino together to running a blues bar in Fort Lauderdale. The island wasn’t their first stop, but they’re here for the duration. “When my brother said, ‘Let’s open a bar,’ I just responded, ‘Well I’m retired,’” said John. 16

“but I’m not dead yet.” The brothers were getting the band back together, but the question still remained where they would choose for the magnum opus of their hospitality careers. “We looked everywhere,” said Tommy. “I knew I didn’t want to go back to the Florida Keys. We were looking everywhere from Clearwater up to Charleston. It was my brother who found this place.” “I spent months looking with realtors,” said John. “Charleston was on the list for a while, but everywhere you looked it was
bar, restaurant, bar, restaurant… If we did this there it would be a six-month flash in the pan. That’s not what we were looking to do.”
“We really built this to be a part of the community,” said Tommy. Becoming part of the community meant looking around the island and seeing what needs were going unfulfilled. While Hilton Head Island’s culinary scene may lack the notoriety of Charleston’s, we definitely punch above our weight when it comes to variety. Nonetheless, the brothers quickly found a huge gap in our collective menu. “We had a couple of ideas, but when we went around the island, we didn’t see anybody doing a traditional raw bar where the shucker comes right out and shucks them in front of you,” said Tommy. “We do a fair amount of oysters and people love to see that presentation in front of them… We thought we found a little niche that wasn’t being filled and the response from locals has been overwhelming and humbling.” The raw bar anchors the menu at Brother Shucker’s, but what truly sets it apart is everything else they offer. You expect to see other seafood items at a raw bar. You definitely don’t expect to see Jasmine rice bowls, bone marrow & smoked pork belly and bison burgers. “I wouldn’t call it eclectic, but it pushes the envelope a little bit. We wanted a onepage menu, but we wanted a thorough one-page menu,” said Tommy. “If you don’t find something on that menu you like, I don’t think you’re hungry.” It’s an inspired mix of different culinary styles, one that manages to both offer something for everyone while sneaking in a few surprises that you might not find yourself ordering otherwise. And underneath the blend of pub fare, seafood dishes and fusion entrees is a subtext that speaks to Brother Shuckers’ core philosophy: do everything for the locals. You’ll find oysters from around the world sharing space with oysters that were anchored in Broad Creek just a few hours prior, delivered by local oystermen. You’ll find breads, pitas and buns from local bakeries on the Island. “We do everything as local as we can,” said Tommy. That goes beyond the menu. From the beginning, the Mollica brothers knew that the key to the appeal of Brother Shucker’s was going to be catering to locals. To give
the F&B crowd a place to call their own, they kept the kitchen going until midnight. They opened up the outdoor space to serve as a live music venue, drawing in the likes of Groove Town Assault, Chris Stevers and Bobby Lee and the Magpies. “We’re more than a raw bar. We’re a fun place to come and have a good time,” said Tommy. “We take what we do seriously, but not ourselves.” The locals responded in kind, quickly growing into a loyal following. The appeal is multi-faceted. The contemporary décor, defined by wave walls, quartzite counters and an electric blue color scheme, might mark Brother Shucker’s as a sophisticated enclave for the “little black dress” crowd.
The anything-goes vibe, defined by the raucous live music and party atmosphere, might lead you to think it was the kind of hotspot where fuzzy late-night memories are made. Both impressions are correct. “This is a place you can come to in a cocktail dress or in flip-flops and you’re going to have fun,” said Tommy. “We’re a good-time bar. And we do oysters, but we do way more than oysters.”

Start Asking The Right Nutrition Questions BY CHRISTY BARONI

As a nutrition coach I hear so many questions. Most of them are about exactly what to eat and when, which may seem like a good place to start, but what if you are asking the wrong questions? If you are looking to feel great and have a body that operates optimally let’s start by asking better questions. There are three things every plate, every snack, every meal should have. Let’s take a look at what questions will help you fill your plate with a great balance of macro- and micro-nutrients. Where is your protein? Protein has gotten a lot of attention lately with disagreements about exactly how much protein a person should consume everyday. This varies based on your age, activity level, and intensity of your workouts. However, every person should have protein throughout your day. This macronutrient helps your body to heal and repair, helps you feel full for long periods of time, and is the building block for lean muscle. Some ideas for high protein foods include: • Whole egg • Tofu • Chia seeds • Greek yogurt • Salmon • Black beans Where is your fiber? Fiber is another foundation of a healthy plate. A diet low in fiber can lead to a body that is sluggish, constantly hungry, and with uncomfortable swings in blood sugar. To eliminate bloat and to ensure that your body can get rid of waste efficiently, let’s be sure that each plate has at least 5 grams of fiber. The goal is for women to have 25-30 grams per day and for men to have 35-40 grams per day. Some ideas for high fiber foods include: • Almonds • Avocado • Oatmeal • Pears • Brown rice Are you hydrated? Hydration accounts for feeling alert, mental sharpness, removing bloat, and even can help keep your skin clear and fresh. Your hydration level is determined not just by how much water you drink (½ your bodyweight in ounces everyday!) but also by the foods you eat. Some foods that can help keep you hydrated include: • Cucumber • Tomato • Carrots • Green peppers • Asparagus Let’s put it all together and look at a day in the life of a high protein, high fiber, well hydrated meal plan. 22

Breakfast: Simple Start 1 cup oatmeal topped with ½ cup strawberries, 1 cup greek yogurt. Lunch: Buddha Bowl Combine 1 cup of cooked quinoa with ½ cup tomatoes diced, ½ cup cooked and drained chickpeas, ½ of one medium avocado chopped, topped with 3 tablespoons of hummus. Dinner: Easy Burritos 1 - Mash 2 cans black beans in a large bowl with 4 tsp chili powder and 1 tsp cumin until almost smooth. Add 1 cup cheddar cheese, 1 cup chopped tomatoes, scallions, jalapeños and cilantro chopped to taste; stir to combine. 2 - Spread about 1/2 cup of the filling on the bottom third of a whole wheat or carb balance tortilla and top with about 1/4 cup brown rice. Roll up snugly, tucking in the ends as you go. If serving immediately, transfer to a microwave-safe plate, wrap in a moist paper towel and microwave on High until steaming hot, 1 to 2 minutes. If freezing, wrap each burrito in foil. Freeze for up to 3 months. (To reheat from frozen: Remove a burrito from the foil and place on a microwave-safe plate. Wrap in a dry paper towel and microwave on High until steaming hot, 1 1/2 to 2 1/2 minutes.) The balance of protein, fiber, and hydration throughout your day will keep your body performing optimally and feeling fantastic. The Local Roots of
BULRUSH GIN
Now found in trendy bars up and down the east coast and throughout the Midwest, Bulrush is a Lowcountry success story. BY BARRY KAUFMAN
If you ever find yourself in Cincinnati, Ohio and in need of a drink, we have a recommendation for you. Simply tell your Uber driver to head toward the trendy Gateway Quarter at the south end of the OTR District to a little speakeasy by the name of Sundry and Vice. There you’ll find a beverage of unsurpassed refreshment called the Garnet, artfully blending Gin, Jamaican hibiscus syrup, lime, pineapple, ginger and burlesque bitters. If the first sip draws your mind back to your home in the South Carolina Lowcountry, it’s not just because of the drink’s namesake connection to USC’s colors. No, that hint of home comes from the gin at the heart of the cocktail, a fullflavored, carefully crafted Lowcountry spirit by the name of Bulrush Gin. Of course, Sundry and Vice doesn’t have a monopoly on the delectable balance of juniper, lavender and botanicals Bulrush brings to their cocktails. You’ll find Bulrush in trendy cocktail bars and retail liquor stores up and down the East Coast, from New York down to Georgia. But this being a Hilton Head Island-based drink, it only makes sense Ohioans would embrace it. “It’s not as closely related to the Hilton Head/Ohio connection as you think,” said Bulrush founder Tony Bagnulo.

“When we first launched in Ohio, I just spent a lot of time there. I met a lot of bartenders and got to know people. They just dug it. And the Cincinnati bar scene is awesome – probably one of the most underrated in the U.S.” And Bagnulo would know. For years before founding Broad Creek Spirits Company, for which Bulrush Gin is the flagship product, he worked in liquor marketing. His territory was anywhere good times were found, leading him to crisscross the country as he met with bartenders and retailers. It’s a network he’s put to good use after forging his own path. Bulrush Gin was crafted from meticulously cultivated ingredients from juniper and cardamom and ginger, but its reputation was built on pure hustle. “It’s been a lot of just being there, just being present,” said Bagnulo. “A lot of the time it’s just connecting with people and sharing the story. Rinse and repeat. It’s all about building those relationships.” Of course, those relationships were first built on Hilton Head Island, which is why you’ll find Bulrush in virtually ever bar and liquor store in the Lowcountry. “We celebrate the spirit of the Lowcountry,” said Bagnulo. “We’re probably one of the few gins you would ever drink on the May River sandbar.”

Putting it on Ice Like so many of us, Bagnulo entered 2020 with big plans for expansion. The Lowcountry and Ohio had come to embrace the wildly different flavor profile Bulrush presents compared to other gins, and his inroads throughout Atlanta were paying off. Even forays into the notoriously competitive New York market and the bourbon-dominated Kentucky market had begun to bear fruit. “You go into mom-and-pop retailers in Louisville and they’ll have 50 feet of bourbons,” he said. “That’s tough to break into, but they drink other things, too. They like cocktails.” And then came this past year, and all that 2020 entailed. And yes, as a whole the liquor industry did fairly well for itself as we all hunkered down through the lockdown, pouring ourselves triples as we binged Tiger King. But for the most part, it was the big brands who did well during pandemic. “It wasn’t like people were walking into the liquor store to browse obscure bottles of craft gin,” said Bagnulo with a laugh. “They were getting the stuff they knew and then getting out.” So Bagnulo did what most craft distillers did – pivoted. He produced hand sanitizer to cover the scarcity of the first few months of the year (“It was basically 160 proof Bulrush. That’ll kill anything.”). He brought his storytelling approach to marketing to Zoom, leading discussions with bartenders around the country on the art and science of gin. And he relied on the close-knit circles of bars, restaurants and retailers in the Lowcountry who have become his biggest champions. “We were actually up last year,” he said. “Part of it was initial shipments to new markets and part of it was South Carolina doing so well for us.”

Roll Out the Barrel And with 2020 behind him, Bagnulo is looking to the future of not only Bulrush Gin, but Broad Creek Spirits Company. “Because we have a really good retail and distributor footprint, we’re looking into what other brands to launch,” he said. “We’re 95 percent of the way toward importing a really good mezcal.” Working with a distillery in Oaxaca, Bagnulo plans to bring this new mezcal to market using the same grit and hustle that has made Bulrush a regional standard. He’s not stopping there, either. With 2020 behind him, he’s eyeing the possibilities of a dip into the bourbon world with a blender or bonder from barrels he collects along his travels. “It’s basically what I’ve done with Bulrush, cultivating these contacts at distilleries,” he said. “And if they have an overrun or a random barrel that’s been aging for a while… let’s take this bourbon and age it in cognac barrels and see what happens.” It’s crazy enough that it just might work, which was the same thing that could be said about Bulrush Gin just a few years ago. Look at what’s happened since then.

LOWCOUNTRY CELEBRATION PARK Recreation plus Education plus Discovery No Grain of Sand Left Unturned BY RISA WILLIAMS MCMILLAN
Hilton Head keeps finding itself recognized on national platforms as a World Class Vacation destination, and our newest addition in the form of family and recreation, Lowcountry Celebration Park, gives us another nod towards this end. No grain of sand was left unturned in the meticulous planning and mind toward detail that can be seen in each footprint of the park as it combines recreation, discovery, and education. The concept behind the park was circulated by the Town Manager and Council twenty years ago. Plans were finalized in 2015 and went out to bid, but Hurricane Matthew had other plans for the Island and everything was put on hold until last year. The site came to fruition with the purchase of land from a failed hotel development, the existence of the overflow parking lot for Coligny Beach, and the procurement of the Putt Putt next to Circle Center. Local architects, Wood +Partners, designed this $14 million project and worked with the town to create a place of pure joy. The location on the south end near Coligny is ideal and the size, just under 11 acres, is large enough to accommodate large open spaces, the synergy of lagoon, grassy 42

and paved areas, as well as a sizeable playground and pavilion, but all the while not too big to take an evening stroll around the perimeter. What’s that saying… ? “You can take the girl out of the city but can’t take the city out of the girl”? Well this park isn’t going anywhere. According to Town of Hilton Head’s Urban Designer and park project manager Chris Darnell, “This Park is really well thought out. A lot of parks you could pick up and plop down somewhere else. What is wonderful is that Celebration Park is so rooted in Hilton Head that you could never move this park to another location.” Just take a stroll around the playground for some local culture and history. The Adventure playground is named after The Adventurer – the ship that William Hilton captained when he discovered the Island in the year 1663. This area is not just about swings and slides – kids will learn about the Island as they explore the trail that runs through the playground, mimicking the environment of the Island. The key attraction is the Pirate Ship which is a representation of the Adventurer and will be a
hit with all the young mateys as they walk the plank and are on the lookout for high seas and enemy vessels. Children can learn about Sea Turtles in the beach area as they can mount a replica and read about their nesting habits and markers that identify their nests. Also in the beach area is a place where they can dig for prehistoric fossilized shark teeth. They can walk the boardwalk over the lagoon and follow the footprints of indigenous critters like birds, deer, and raccoons. There is a wading water feature that is not to be confused with a swimming pool – rather it ebbs and flows like a tide. There are bunches of benches, some with shade, for gram and gramps, as well as a circular bench around an Arbor Tree with places for mom and dad to recharge their phones after taking an exhaustive amount of pictures and videos. Next to the playground is a Children’s Museum made in partnership with the Sandbox. “Their discovery and play dovetails nicely with what we are trying to do with the playground,” said Chris. “The museum makes the park attractive even on a rainy day.” The Sandbox museum is broken into zones that include exhibits and interactive areas. According to Nancy Fish, executive director of the Sandbox, the different learning zones will include STEM, Bank/ Library, Grocery and Nutrition, Domestic animals, Transportation, Racetrack & Garage, and Construction. There will be an Arts and Crafts area and a Maker Space full of building and engineering activities like Lego challenges and microscopes. Designed especially for the Sandbox by Gulfstream is the Jet cockpit which Nancy rightfully termed as “really cool”. The 12,000 square foot outdoor area will have its own programs and will feature things like music walls, outside art, blue blocks, and eventually a rock wall. “We are very excited about this project and will be expanding our existing programming to go up to age 12 and beyond. I see this building as an opportunity to really continue our mission to provide play and educate and kids from here and everywhere,” said Nancy. The Grand Lawn and Pavilion area, home to future concerts,
are expansive and slightly graded for an amphitheater feel. The roof on the stage juts out to protect performers from the elements and Chris noted that the architectural columns provide a great backdrop. “The idea of using the space for a festival or fair was in the planning throughout.” The perimeter path around the park is open 24/7 and features downlights to make for a romantic evening stroll. Everything from the subtle lighting on the trees and buildings to the lights on the fountains and filigrees makes the park an attractive nighttime destination. With 56 cameras on site, the environment is also planned with an eye toward safety. “This is one hard working park,” commented Chris. There are shelves of plants built into the lagoons to improve water quality and planners focused on reducing flooding in the area with an intricate lagoon system and pervious parking areas. Chris also made note that he has done plenty of park visiting around the country and that the bathrooms at Celebration Park are the nicest around.
“This really is a World Class Facility. I always have heard so many stories about people who came here with their family and went to Sea Pines and played in the tree house and those kids are now coming back with their kids and buying houses. It is my hope that this park will be the thing that brings the next generation back,” said Chris. The grand opening celebration for the park will be in March 2021. The Island Rec Center is in charge of booking entertainment and there will surely be full slate of concerts and festivals to celebrate at aptly named, Celebration Park.

Salmon filets Lemon, sliced Salt Black pepper Garlic, sliced Artichokes, canned, quartered Bell pepper, diced Kalamata olives, quartered Red onion, diced Cherry tomatoes, halved Italian seasoning Crushed red pepper flakes
Method: • Preheat oven to 425°F. • Squeeze a lemon over the salmon. Sprinkle filets with salt, black pepper, Italian seasoning, and crushed red pepper flakes. • Fold two pieces of parchment paper in half and center each filet on one side of each paper. • Divide the vegetables in half and arrange the garlic, artichokes, olives, onions, bell peppers, and tomatoes over and around the 2 filets. • Fold the parchment paper over the fish. Fold the edges of the paper over several times, inch by inch, all around the open edges, to seal the fish into a parchment paper envelope. (Do not tape the parchment paper closed.) • Place the sealed envelopes onto a baking sheet. • Bake in the preheated oven until the fish is opaque about 12 minutes. To serve, place baked envelope onto a plate, and cut open the paper to release the aroma. • Serve with fresh arugula and roasted potatoes. Cameron Tate has a friendly smile and sincere, earnest eyes. Sitting across from him at the coffeeshop, I can feel both the ease of his presence and the natural energy he emits. To be simultaneously at ease and energized is a difficult combination for most to emulate, but for Cameron, it seems to come naturally. As an artist, it’s his most defining characteristic, one that draws his audience in and keeps them paying attention. 33 year old Cameron Tate is a skillful singer-songwriter, an accomplished performer, a multi-instrumentalist and a proficient musician. A native of Kingsport, Tennessee, Cameron grew up listening to his father play music, primarily country and bluegrass. Throughout his childhood, he always found himself drawn to music, and participated in school and church choirs. At age 10, he found a guitar under the Christmas tree with a tag that read his name. He began to teach himself chords, learning the instrument little by little. The first full song he could ever play was “Raindrops Keep Fallin’ On My Head”, followed by The Temptations’ hit “My Girl”. When he was a sophomore in high school, he decided to experiment with writing songs of his own. With the help of a school friend to bounce around input and ideas, Cameron started to develop a catalog. He found songwriting difficult in the beginning, but got the hang of it rather quickly by starting with the music and waiting for the words to come. At age 16, he put out his first songs on the social media platform MySpace. Since then, Cameron has written over 35 songs. His subject matter varies, as he is able to draw lyrics from his own life as well as the lives and stories of people he encounters. It was also around his late teens when Cameron dove into the live music scene. As a solo artist, he got his first gig at The Down Home in Johnson City, Tennessee. Living in Kingsport, Cameron had easy accessibility to both Johnson City, well-known for their bluegrass, and Bristol, the birthplace of country music. However, he never considered himself strictly a country artist, instead choosing to remain fluid amongst several genres including pop, rock, indie, soul, and reggae. His love for Bob Marley inspired him to form a reggae band, and nine years ago, Untold Empire was born. The band’s genres progressed with their songwriting styles, later finding success in the territory of alternative rock. Cameron led Untold Empire for three years before the band ultimately decided to go their separate ways. He took a brief hiatus from music, joining the army reserves and serving for two years. It wasn’t long before the pull of music found him again, this time changing the direction of his life completely. Five years ago Cameron set foot on Hilton Head for the first time, on vacation with his family. He met local musicians Nick Poulin and Derrick Ludaway at Tiki Hut, joining them onstage for a few songs. They encouraged Cameron to play a set at the famous Big Bamboo open mic, which just so happened to be occurring that very night. Impressed by the island’s scene and opportunities, Cameron left

his home of Tennessee, the only place he’d ever lived, to come to Hilton Head permanently. His decision, clearly, has paid off. Since coming to Hilton Head, Cameron has established himself as a local favorite, played countless shows at the island’s top venues, collaborated with an assortment of musicians, and even met his wife. He loves
the lowcountry and all that it offers, and enjoys meeting and connecting with people from all over the country. He aspires to release his first full solo album in 2021. Many believe Cinco de Mayo (Spanish for “Fifth of May”) celebrates Mexican Independence Day. However, the holiday originated in 1862 – more than 50 years after Mexico declared independence from Spain – when a small Mexican army defeated elite French forces during the First Battle of Puebla. In 1861, while the United States was engaged in the Civil War, Mexico was bankrupt and trying to recover from its own Reform War, according to History.com. The country defaulted on loans to several European governments, and although Britain and Spain were eventually willing to negotiate, Emperor Napoleon III, nephew of Napoleon Bonaparte, saw an opportunity to create an empire in Mexico which could also provide guns to the Confederacy in exchange for scarce Southern cotton. A large French fleet stormed the port city of Veracruz later that year and pushed the newly elected President Benito Juarez and his government out of Mexico City. The First Battle of Puebla was largely a symbolic victory and Mexico lost the Second Battle of Puebla, as well as the war with France. Austrian Archduke Ferdinand Maximilian von Habsburg was installed as the Emperor of Mexico in 1864 and France occupied the country until 1867 when Prussia threatened to reclaim Alsace and Lorraine and Napoleon had to refocus military efforts and funding. At the same time, the United States under President Abraham Lincoln exerted diplomatic pressure 52

on the French while providing military support in the form of weapons to Juarez. After the French left the country – and Ferdinand Maximilian was captured and executed – the first Battle of Puebla became a symbol of Mexico’s resistance to foreign domination. Historically, Cinco de Mayo celebrations in Mexico are limited to the state of Puebla and feature military parades, speeches and battle reenactments. In 2012, according to Insider.com, the International Mole Festival was incorporated into the event to honor Mole Polbano, a dish which originated in Puebla. In the History.com article “How Cinco de Mayo Helped Prevent a Confederate Victory in the Civil War,” author David Roos claims “the critical timing of the French defeat at the first Battle of Puebla was not lost on Mexican-Americans and other Latinos living in California, many who had flocked to the state during the Gold Rush.” Spanish newspapers in 19th-century California showed Mexican immigrants celebrating the holiday as early as 1862, gathering in Juntas Patrioticas (“Patriotic Assemblies”) in California and Nevada “to celebrate both the surprise victory at Puebla and what it meant for the Union cause. With 129 locations and 14,000 members in California alone, these Juntas Patrióticas started meeting monthly in 1862. There would be two or three energetic speeches extolling the heroism of Zaragoza and his outgunned troops and denouncing the pro-
slavery Confederates who would take away their rights.” Annual Cinco de Mayo celebrations continued uninterrupted in Los Angeles, although the original history of the holiday was lost. According to Insider.com, “by the 1930s the holiday became an opportunity to celebrate Mexican identity, promote ethnic consciousness and build community solidarity.” Today, the 5th of May is a chance for all to savor the flavors from south of the border while raising a glass filled with specialty tequila or imported cerveza. Luckily, there are plenty of places on Hilton Head to celebrate Cinco de Mayo or enjoy a great Mexican meal any day of the year. “No siesta, we fiesta!” is the motto at Aunt Chiladas Easy Street Café on Pope Avenue, an Island mainstay since 1988. Open daily for indoor and covered outdoor dining, Aunt Chiladas serves up a variety of Tex-Mex and Mexican appetizers and main dishes, such as Southwestern Egg Rolls, Auntie’s Loaded Queso, Nacho Average Nachos, Chunky Guacamole, Taco Salad, Chicken Tortilla Soup, burritos, chimichangas, quesadillas, enchiladas, fajitas and tacos which can be washed down with a variety of specialty margaritas and cervezas. Those who prefer seafood or American fare will find Fiesta Calamari, grilled wings, salads, Auntie’s Crab Bisque, Lowcountry Boil, burgers, chicken fingers and a fried seafood platter, as well as vegetarian and gluten-free options, on the extensive menu. At press time, plans had not been finalized for Cinco de Mayo, but parties in the past have included live music throughout the day, food and drink specials and giveaways.
