In every issue of Taste, we interview a hospitality employee from one of the finest restaurants on the island. We started this feature about five years ago and choose an employee that has been at the same restaurant for an extended length of time. There is one constant theme when we interview each of these hospitality superstars and ask them what advice they would give patrons; “Enjoy the experience!’ Take your time, talk to your dining companions, savor an appetizer, a specialty drink, or a fancy dessert to complete your meal. The experience is not just about the food, but about affording yourself the time to relish the entire package. Dining out on the island is a great time to really relax and let our fantastic food and beverage professionals take care of you. “Legend has it that Blackbeard, and pirates like him once pillaged ships up and down t’ southeastern coast and used places like Hilton Head Island, with its meanderin’ tidal rivers and inlets, as discreet hidin’ places. He and his crew would smartly strike at ships on t’ open sea, then retreat t’ hide in t’ safety o’ places like Braddock Cove.” So goes the legend of Land’s End Tavern. Throughout this Sea Pines landmark, that dedication to the island’s piratical past is evident. Here and there, diners may find Blackbeard himself just waiting for the next photo op, or a musically-inclined buccaneer tickling the ivories at a nearby piano. It’s all just part of the fun atmosphere at the tavern that has brought guests back again and again since Land’s End first opened in the 1970’s. “That Blackbeard statue is probably 8 • A TASTE OF HILTON HEAD • SUMMER 2011
one of the most photographed things in the Marina,” laughed General Manager Mike Edwards. Edwards has been the captain of this crew since 2006, but his roots at Land’s End run much deeper. “I’ve got pictures of me when I was 7 or 8 years old with one of those pirates.” Land’s End Tavern first opened its doors in 1974 as a boat storage facility that had been converted into a French bistro with live music and an eclectic menu. But with the stunning views of Braddock Cove commanded by the tavern, it wasn’t too long before the siren song of the sea invaded the menu. “It all evolved over time,” said Edwards. “It wasn’t too long after opening that the menu went to American seafood fare.” Land’s End Tavern became a landmark of the marina over the next few decades, but like all landmarks it
eventually needed a facelift. About six or seven years ago we did a total rebuild,” said Edwards. “We took it down to the bare walls and remade it from the ground up. It’s still the same building and look, we just took a small part of what they had and built on it.” The rebuild resulted in a tavern that makes the most out of a breathtaking view of the cove, with a wraparound deck perfect for taking in sunrises and, of course, even more pirates skulking throughout the building. But this isn’t a motif of Hilton Head, this is Taste. You can festoon the place with all the pirates you want, but if you’re menu doesn’t ring true, you’ll be walking the plank in no time. Fortunately, the menu is where Land’s End Tavern brings out the heavy cannons. “I’m very big on flavors in food,” Edwards said, rattling off some favorites
from the menu such as the coconut curry veggie wrap, crab legs, fresh fish and Maryland-style crab cakes. Edwards recognizes the Tavern’s unique ties to the sea and incorporates that into the seafood menu. But he doesn’t just stop at seasoning and heat. “We like to play with it and give it a twist,” he said. The result of that twist is one-of-a-kind menu items like the “Tunachos,” made of seared Ahi tuna on blue corn tortilla chips and the signature “Crab guac Margarita.” And let’s not forget that other denizen of Hilton Head Island’s waters, the surprisingly tasty alligator. Fried alligator is a top selling appetizer, and the Tavern’s famous Alligator Jerky makes a great stocking stuffer, apparently. “That one was so successful and so many people wanted it, we made a mailing list,” said Edwards. “People started ordering it as a Christmas present.” And while seafood and a spot right on the marina go together like a pirate and a peg leg, the Land’s End Tavern doesn’t stop there. Their offerings for landlubbers are just as legendary as Blackbeard himself, with fajitas, steaks and burgers rounding out the menu. But remember those sunrises we mentioned earlier? They’re saving some of their best offerings for those early risers. “We have an extensive breakfast menu, with a wide selection of omelets and homemade waffles,” Edwards said. The breakfast menu shines like a freshly-minted doubloon, with omelet choices such as the Cajun-inspired Big Easy (shrimp, lobster, peppers, onion and provolone cheese topped with a spicy creole sauce) to the health-conscious
Gardener (mushrooms, onions, green peppers, broccoli, and cheddar cheese) and the old-fashioned American (honey ham, bacon & American Cheese). Swashbucklers yearning for a taste of the seas with their sunrise can order the Crab Trap (stuffed with Old Bay-seasoned crab and shredded cheddar cheese). And don’t forget those homemade waffles. The freshly-pressed delights are one of the hottest-selling items for breakfast, and the presses stay hot all morning. And whether you’re dropping anchor at Land’s End for breakfast, lunch or dinner, Edwards makes sure there are healthy options for those pirates who are looking to slim down or stay healthy. “I try to eat healthy,” said Edwards, “And one of the most exciting things we’ve recently incorporated is a veggie menu.” That veggie menu includes healthy options from a Southwest tofu quesadilla to a black bean burger. It represents not only a commitment to a healthier dining experience, but also a startling variety in an era where many restaurants are limiting their menus to cut costs. “The different menus that we have
are the big thing that we're proud of,” said Edwards. But how does such a wide menu work in today’s economically uncertain atmosphere? Edwards, in no uncertain terms, is quick to lay out the charter by which this ship sails. “We have strict operating rules. We only offer the best products. And we provide an inviting atmosphere and excellent customer service. We stick by those three things. When the economy started going downhill, that’s what we focused on.” And that commitment to quality appears to have paid off. While Land’s End Tavern has been serving the island since the 1970’s, through ups and downs, low tides and high tides alike, it’s never seen smoother seas than it has in the last two years. “We’re very fortunate to say that the past two years have been positive. For a restaurant that has been here since 1974, to have had the two best years in its history is exciting,” Edwards said. All of us have, at one point in our lives, entertained the idle fantasy of escaping from the everyday rat race and just kicking back on the beach for the rest of our lives. In these moments, we close our eyes and picture what that serene getaway would look like: white sands stretching away from a wooden deck, beach music piped in from unseen speakers, friends playing beach volleyball and knocking back a few drinks while the grill sizzles up the day’s meal. Larry Watkins, like so many of us, dreamed that dream. The difference is, Larry went out and lived it as the owner of Coco’s on the Beach. “I never want to take this for granted,” Watkins said recently while perched on one of the colorful stools at Coco’s. “People come here from all over to see this. I get to see it everyday.” Coco’s, located at beach marker 94a (how’s that for a mailing address?), started out as one of those fantasy bars we all create in our daydreams and has since become one of Hilton Head Island’s best-kept open secrets. “It all evolved from a picture in my head,” Watkins said. “It’s not any bar I’ve ever seen, but I pictured a Caribbean bar with beach music, right on the water. I never wrote any of it down, it just happened.”
What happened was the platonic ideal of a beach bar, with wide timber rafters shielding an expansive deck that overlooks a lush sandpit volleyball court and a twisting boardwalk right to the beach. As promised, beach music (today it was Bob Marley) drifted down from somewhere above as the first thirsty patrons of the day made their way up the steps to the bar where bartender Chrissy Mitchell awaited them with her trademark smile and colorful personality. “This is like a mirage,” one visitor said. “I used to stay here years ago, and I never knew this place was here,” commented another as he eyed the impressive collection of 32 brands of tequila and 38 brands of rum. That’s a rough estimate, by the way. Counting each of the bottles that line the wall behind the bar would take the better part of an afternoon, although it would certainly be the most fun one would ever have while counting. Watkins began his journey to Coco’s around six years ago after retiring from a long career in kitchen design. Moving down from his native Ohio (“I didn’t want to shovel snow anymore,” he quipped), Watkins moved to the island when he saw an ad in the paper looking for an individual to run a cabana bar. What he found was a hidden gem
just waiting to be polished. “The town had actually condemned this place several years ago,” Watkins said with his trademark dry humor. Watkins got to work, enlisting the help of friends and family to build that beachside oasis he’d always dreamed of. The result is a carefully-crafted exploration of everything you’d ever want in a beach bar, with a fun atmosphere and laid-back vibe that we’ve all shared in our idle daydreams. But what’s a beach bar without the drinks? Visitors to Coco’s will find anything they might possibly be looking to imbibe, and at a quality that can’t be matched. “Quality is important to me,” Watkins said, browsing through the seemingly endless rows of spirits that line the back wall of the bar between twisting strands of colorful Christmas lights. “I’d have more if I had room.” And with great variety comes great responsibility. Watkins proudly pointed out during the tour that his well drinks rival the top shelves at most bars: bottles of Smirnoff, Bacardi and Cuervo hide just beneath the bar. And the beer is just as important: Watkins keeps all the basics, plus a few surprises including a beer from Bermuda called Kalik and Cincinnati-brewed Schoenling Little Kings, a shout-out to
Watkins’ Ohio roots. The more adventurous imbibers would do well to order the “Blue Wave,” a tasty shot that comes with a bucketful of water and instant YouTube stardom. Visitors are advised to bring a swim suit and a good sense of humor before trying the Blue Wave. And after a few drinks and a lot of sun, most patrons will find their stomachs grumbling for sustenance. Never one to let hunger pangs ruin a perfect day at the beach, Watkins runs a tight ship on the grill, providing a menu of casual favorites for any taste. The fried bologna sandwich is another nod to Watkins’ Ohio roots (complete with Ben’s Sweet & Hot Mustard, another Buckeye state original), and one of the most popular items. And everything on the menu, from the chili dogs to the angus burgers and the “taco in a cup” must meet Watkins’ stringent standards. “I buy the best that I can,” Watkins said, boiling down a commitment to quality to its purest form. Watkins shares an equal commitment to the beach that Coco’s calls home. Lining the walls next to menu items and colorful signs are certificates from the Coastal Discovery Museum certifying adoptees of the sea turtle nests that line the front of Coco’s.
The forms to adopt a sea turtle nest are behind the bar, and Watkins is quick to enlist patrons in protecting what has come to be known as “Coco’s Nesting Area.” “The turtle program is very big with us,” Watkins said. “Last year was a big event, we had quite a few hatch.” And if a stunning view, a dizzying array of drinks, food of the highest quality and a chance to protect an endangered species aren’t enough, patrons are promised one thing when they climb those stairs to Coco’s: Fun with a capital F.U.N. Mitchell, the vivacious personality behind the bar, summed up Coco’s philosophy best. “We have fun, but we get it done,” she said. “And it’s all in the love of Larry.” Or, as one of the testimonials from the guestbook at Coco’s put it, “…Best time we have had on Hilton Head Island and we have been coming here for 18 years.” To experience your own vision of paradise, follow the boardwalk from the Hilton Head Resort down to the beach or stroll up the beach to beach marker 94a. Designed to reflect old world ambiance the culinary center has a state of the art designer kitchen where Executive Chef Michael Cirafesi holds classes each week and teaches the art of classical Italian cooking. Michael Anthony’s cooking classes offer a variety of subjects for everyone. Whether you like to get your hands dirty or just sit back and let Chef Michael do the work, there is a class that’s right for you. Hands-O n Classes give you an opportunity to prepare three to five recipes from start to finish by working closely with Chef Michael and a small group of classmates (limited to ten students). After class, you’ll sit down for lunch with Chef Michael and your classmates to enjoy the dishes you’ve cooked paired with Italian wines.
Demonstration Classes are presented class-room style where you watch Chef Michael prepare the menu while providing step-bystep procedures and helpful hints for each dish. The class begins with a welcome glass of Prosecco, a generous sampling of all the dishes prepared, a glass of wine and a recipe booklet to take home. This relaxed, interactive format encourages informative discussions to help you prepare the dishes with confidence at home. The latest project the family has undertaken is the creation of an authentic Italian Market along side the restaurant. It is here where you can find many of the fresh and gourmet ingredients used by the restaurant to create their many dishes. From fresh pastas to cheeses cut right from the wheel to a myriad of olive oils, canned tomatoes and truffle paste, you can find all that you need to create that special meal right in your own home. The Market is open Monday thru Saturday from 10:00am to 5:00pm. Hilton Head Island offers so many family oriented activities. Sean Crosby, chef and part owner of Santa Fe Café along with Marshall Sampson, took time out of his busy schedule to sit down with Ta ste and answer a few questions about the business, his likes and dislikes, and what he brings to the table.
Taste: How did you get started in the business? Sean: My first job was busing tables at La Pola’s Italian restaurant, on New Orleans road. I loved the atmosphere and quickly worked my way into the kitchen. 26 • A TASTE OF HILTON HEAD • SUMMER 2011
Taste: What is your background? Sean: I started cooking when I was sixteen, just to make some spending money. After high school, I went to Johnson and Whales College of Culinary Arts in Charleston, S.C. I graduated in 1991 and did my practicum in Rhode Island. Taste: What brought you to Hilton Head Island? Sean: Actually, I was born and raised on Hilton Head. Other than the time I spent in school in Charleston, and a short time living in Nashville, Tennessee, I have lived here all my life. I am a true islander. Taste: How long have you been with Santa Fe Café? Sean: I have been here for the past 16 years, and Marshall and I have shared ownership for the past 5 years. Taste: What are your favorite dishes to prepare? Sean: I love to barbecue and to smoke seafood and steaks, burgers, vegetables – it’s that whole cooking outside thing. Taste: What do you like to cook at home? Sean: Again, I like to grill outside and do so as often as time allows.
Taste: What do you like to do when you’re not being a chef? Sean: I love riding motorcycles. I love to do anything outdoors, particularly when the weather is nice. Taste: What is the best thing about being a chef? Sean: I would have to say the best part about my job is not to have to do the same thing every day. I love being able to move around and not be in the same place all day, every day. I also enjoy the hustle and bustle of the kitchen. Taste: What is your favorite thing about living on Hilton Head Island? Sean: I love the weather here! I’m able to be outside for a while most days of the year. She is also a talented basketball star who is reluctant to brag about some of the awards she won while in school. She was named basketball Player of the Year for the Smoky Mountain Conference, West Carolina and the Asheville City Times. She was also named one of the top 20 All American Girls by USA Today. After graduating from high school in North Carolina and College in Oklahoma, she lived in Oklahoma for several years before moving to the area. She is an outstanding server at Tapas and talked with Taste about her background, her job, her likes and dislikes, and what it takes to be successful in the hospitality business. Taste: What do you like best about your job? Ida: I like the opportunity to meet so many different people who come into the restaurant from all over. Typically each person orders two or three tapas and shares with others at the table. I love the food and enjoy recommending different dishes to diners. being with my co-workers, who are a blast to be around. I have made so many great friends here, both co-workers and diners, some who I see just once or twice a year. Taste: What’s your favorite item on the menu? Ida: We serve fabulous food, all unique and fresh, so it would be hard to name just one or even several favorites. We serve food from all over the world – Italian, French, Asian, Southern, Latin American. They’re all favorites. Taste: What is the worst thing that has happened to you on the job? Ida: I really enjoy going to work so I would have to say the worst part would be going into work on a beautiful day when everyone else is at the beach. I have also had an experience or two with diners who have gotten very loud after having too many glasses of wine or two many cocktails. That’s rare, however, and everyone is supportive in keeping things under control so that everyone else can enjoy their dining experience. Taste: What does it take to be successful at your job? Ida: Being a people person and truly caring that people enjoy their experience when they come into the restaurant are
traits that have made me successful and happy in my position. Taste: What do you like to do when you’re not working? Ida: When I’m not working I’m usually at the beach or the gym. I love to work out, and particularly love Zumba classes. I still love basketball of course! Taste: If you could have any job in the world, what would it be? Ida: Since I love making people happy, I love what I do. If I could have any job in the world, I would probably be a physical therapist or a personal trainer. I would always want to be in a job that makes others happy, while keeping me moving and allowing me to interact with a variety of people. Tapas Restaurant The Island's Fabulous Taste of Paradise. In 1992, a 7.3 magnitude earthquake shook Southern California early one June morning. The tremblor was enough to rattle Ardis Matthews and her husband, Max, into travelling across the country “to fabulous places, none of which were exactly right.” But, as it turns out so many times in life, the road less traveled, led to the most adventure. When the Matthews were in Charleston “we were sitting in a bar being friendly,” laughs Ardis. “We were talking to a nice couple from Hilton Head about our trip to Savannah. They said Hilton Head was right on the way, just make a left and go over a bridge.” The Matthews fell in love with the Island immediately. “It reminded us of our old home in California.” After trading one paradise for another, and replacing surprise earthquakes with preemptive hurricane warnings, Ardis had to find out what to do with herself. Ardis is perpetually jovial and enthusiastic. She is enthusiastic about
anything. Anything. Every new experience is “exciting”, “cool” or “fabulous”. Every past experience, even if it was less than grand, has one little slice of humor, wisdom or combination of the two. She is sweet, sassy and indefatigable. She doesn’t fear change, she embraces it. “This is all learning by doing,” she says of her extensive menu. “Except that I did have a fabulous […there’s that word again, ‘fabulous’…] opportunity to take cooking classes with some of the greatest chefs of the
1980’s in California.” Wolfgang Puck, Bert Greene and Julia Childs among them. “It was mostly fun. And the main thing I learned from these classes was, ‘I can do this.’” To Ardis, the best cooking she comes up with is “looking around that kitchen and reinventing the same ingredients over and over and over again. I’m not classically trained, I just makes what tastes good. And fortunately it seems to taste good to other people too.” Besides food that tastes good, the good food changes all the time. “There are certain items I would never take off the menu. I like the classics, but then I like totally wacky new flavors.” Ardis reflects and then starts laughing again, “And then I like the stuff in between! I don’t know! I like food! Anything but beets!” You can’t help but smile in her presence.

name, including one woman who drives in regularly from Bluffton, who admittedly almost divorced her husband after he made her move so far away from her favorite ice cream store. This HHIC fan calls her orders in ahead of time and picks up her favorite flavors by the pint. So how do people find Hilton Head Ice Cream when it is tucked away in an office building on a secondary street and does virtually no advertising? “You have to be the best and you have to be different,” commented Creegan. “Then you can let word of mouth take over.” In its 29 years, HHIC has outlasted and oversold over 20 other ice cream shops including national chains like Baskin-Robbins. ANDOUILLE CRUSTED GROUPER WITH GREEN TOMATO MARMALADE Courtesy of Kingfisher ANDOUILLE CRUSTED GROUPER
Ingredients: Four 6 ounce grouper filets, 1 ½ pounds andouille sausage 4 cups Japanese bread crumbs, ¼ cup parsley 2 ounces Cajun seasoning (recommend Paul Prudhomme) Preparation: Rough chop andouille and pulse in food processor. Pulse bread crumbs separately. Fine chop parsley. Mix all together with Cajun seasoning. Roll grouper filets in all purpose flour until evenly coated. Dip the flour coated filets in an egg wash (beaten eggs) and then roll them in the andouille/breadcrumb mixture until evenly coated. In a sauté pan over medium high heat, pour 2 tablespoons of olive oil. Once heated, place grouper filets in the sauté pan and brown on both sides. Remove from heat and place the grouper filets on a baking pan. Finish them by baking in a 350 degree oven for 15-20 minutes. Serve hot and top with the green tomato marmalade.
GREEN TOMATO MARMALADE
Ingredients: 6 green tomatoes (medium dice), 2 cups granulated sugar 2 cups apple cider vinegar, 3 dried chile peppers (optional) 1 bay leaf Preparation: Combine all ingredients in a saucepot and simmer for 45 minutes to an hour. Remove the chile peppers and bay leaf and discard them. Place marmalade in an appropriate container and reserve. (This recipe serves 4).
PORTERHOUSE PORK CHOP Courtesy of The Smokehouse Ingredients: *A twelve ounce bone-in pork chop, char grilled and glazed with our special teriyaki sauce. 4 to 6 boneless or bone-in pork chops 1 cup of Teriyaki Sauce 1 1/2 cup of Honey 5 green onions finely chopped 1/4 cup of minced garlic Preparation: For glaze, in a small saucepan, combine the teriyaki sauce, honey, and onions. Cook and stir over low heat for 5 minutes. Remove from the heat; set aside. Coat grill rack with nonstick cooking spray before starting the grill. Grill pork chops, covered, over medium heat for 6-7 minutes on each side or until juices run clear, brushing with glaze during the last few minutes of grilling and wait for sauce to caramelize. 40 • A TASTE OF HILTON HEAD • SUMMER 2011

leave for work at 6:30. My 16 month old son doesn’t even know life without mom and dad there full time. Taste: That’s perfect, right? Todd: Yes! I am so lucky. While there are so many struggling musicians, I have a great job, a family, and have found my niche. I love it. Steamer and I are part of people’s vacations that come back every year. I can close my eyes and think “3rd week of July” and know who will be in the audience. Taste sat down with Steamer Seafood headliner of 14 years, Todd Cowart, to delve into the man behind the music. Sadly, ladies, he is happily married and is currently vying for father-of-the year award, so hands off. His music, however, is available for the listening and he is sure to please! Taste: Why music? Todd: I grew up in a musical family. We HAD to make music. No choice. I will make my children start early too. There’s something amazing about the first hand experience and coordination 52 • A TASTE OF HILTON HEAD • SUMMER 2011
and cognitive development that music contributes to kids at such an early age. Taste: Pop? Todd: Pop now, but I was all about Jazz and James Taylor in high school. I have been playing at Steamer since after college (14 years… although he doesn’t look a day over 25) so am constantly learning new stuff. Taste: What is your day like? Todd: I am Daddy Day Care all day while my wife does software development via cyberspace in the room next door. I
Taste: What is your niche exactly? Todd: I use a technology called “looping” where I record my music “live” and can immediately play it back. When I play it back I can add harmony, percussion, anything. It sounds like a full band and it is fun to watch as I am busy tap dancing over peddles. You can experience the sounds and” tap-dancing” of Todd Cowart, six days a week (except Tuesdays) from 8 to 11 p.m. at Steamer Seafood in Coligny Plaza, a favorite stop for locals and visitors alike.

FOR THE FAMILY Summer Jams, presented by the Island Recreation Center, will return to Shelter Cove Community Park this summer. Spread out your picnic blanket, lay claim to a piece of the park, and hunker down for some family fun time that culminate with breathtaking fireworks. Inflatable bouncy houses and slides keep the kids busy while DJ Jeff Taylor, of Adventure Radio, cranks out the tunes and gets the dance lines moving. Jeff will have an eye and ear toward engaging his audience on the
dance floor with favorites like the limbo and cha-cha. Started eight years ago for locals, Summer Jams are now an Islandwide must-attend. Leave the picnic basket at home as Giuseppi’s provides the pizza, The Smokehouse brings the barbecue, and Street Meet grills up the burgers and dogs. Taps on the Bud truck and soda machines will be flowing and wine will be pouring. Benefits go to all Recreation Center programs, especially the Benefits Scholarship where “no child is denied recreation”. Dates for Summer Jams will coincide with Shelter Cove firework
displays and run Tuesdays (except July 5th) from June 14th though August 9th as well as the 4th of July. Back by popular demand is “Happy Hour” Water Fun, another popular Recreation Center program. A great escape from the summer heat, inflatable water slides will bounce the kids with slippery, slidy, entertainment from 4 to 7 p.m. on Thursdays, June 23rd, July 7, 14, and 21, and August 4th. His repertoire includes sing-a-longs, original songs, and all the classics that we know and love. Fun for all ages, Shannon even has special activities for kids and often invites them on stage to join in the performance. INDOOR ACTIVITIES We all know it never rains on Hilton Head, but just in case Mother Nature decides to water our flowers, there is plenty of fun to be found indoors too. Camps, shows, activities, and loads of energy-burning activities are yours to choose from. The Arts Center of Coastal Carolina has a full calendar, June through August. The big summer show running in June and July is Smokey Joe’s Café, and August will bring on the laughs with the comedy, Second City. It would be impossible for vegetarians to find something to order at restaurants if vegetarian meals were hard to come by. Many local restaurants have menus designed to meet the needs of today’s discriminating, health-conscious diners looking for great-tasting food for vegetarians and non-vegetarians. Restaurant owners and chefs would have to be fools not to acknowledge the rise in vegetarianism today. Most people are more health conscious than ever and are opting to live healthier lifestyles. Vegetarian dishes are readily available at most restaurants. A true vegetarian diet consists purely of plant-based foods with no animal-derived products. Plant-based foods include vegetables, fruits, nuts, beans, herbs, spices, and grains. It’s not hard to maintain a healthy, balanced and nutritious diet when there are so many choices. A huge benefit for vegetarians nowadays is that vegetarian dishes don’t taste like they’re good for you - they taste good! Many people have caught on to the fact that being a vegetarian is beneficial to their health, which has resulted in an emergence of great vegetarian dishes being added to the menu at more and more restaurants. It has been proven that vegetarians have much faster metabolisms than meateaters. In the inevitable slowing of the metabolism with age that results in weight gain, vegetarians have a big advantage. A heightened resting metabolic rate will allow a person to burn fat and calories a lot more quickly than average. So, by merely substituting a meat dish with a vegetarian dish you can actually increase both your quality of life and your life span. One of the biggest crazes today is sushi. When most people think of sushi they think of raw fish. There are, however, many vegetarian sushi options. There are sushi rolls that only contain vegetables. In addition, most Japanese restaurants offer a selection of salads as
well as vegetarian appetizers like veggie tempura. Ask the servers and chefs to suggest their favorite vegetarian dishes. Santa Fe Café has recently added several new vegetarian entrees to its menu to accommodate the numerous requests they have had, according to co-owner, Marshall Sampson. “We’re glad to make dishes to order, when possible, leaving out ingredients as requested. The response to our new vegetarian items on the menu has been even better than we expected.” Several other local restaurants offering a good selection of vegetarian dishes are A Lowcountry Backyard, Red Fish, and Palmetto Bay Café. They use fresh foods with organic and local ingredients whenever possible. Red Fish specializes in cuisine where a blend of house-made spices, tropical fruits and fresh locally grown vegetables are combined with Lowcountry specialties. “We are committed to serving our guests the freshest ingredients possible,” Marketing Director Katie Manley said. “Vegetable Strudel is a very popular dish on our menu.” Redfish has their own garden and they use the freshest produce, in season, for their dishes. “The chef will gladly prepare most dishes to order, leaving out meat or fish. Just ask!” Pam Detert, Manager of Palmetto Bay Sunrise Café, said “Our veggie sandwich and our black bean burger are two of the most popular items on our menu. In fact, every ticket or order we take is different.” Try the Tiny Chopped Salad which includes greens, cheese, lettuce, tomatoes, sunflower seeds, and radishes. Just ask them to leave off the bacon bits. “We are happy to prepare any of our foods in the way the customer requests.” Owners of A Lowcountry Backyard, Dave and Raina Peck, said that the vegetarian dishes on the menu are what bring many people back time and again to their new restaurant. One of the most
popular vegetarian dishes is The Southern Belle Salad, which includes mixed greens with sunflower seeds, mandarin oranges, tomatoes, sweet onion and Feta cheese with Raspberry vinaigrette, and topped with blackened tofu upon request. Also popular is the Backyard One Bean Salad, which includes lettuce, tomatoes, kidney beans, mixed cheeses, avocado, black olives, tortilla chips and green onions in a homemade cilantro infused dressing. The Blackened Tofu Melt is another favorite, served with alfalfa sprouts, mustard, provolone cheese, tomatoes, black olives and fresh avocado. Everything is delicious! Many other restaurants in the area serve delicious, healthy, fun food that honors the environment and harms not a single animal in the making. Most restaurants post their menus online, so you can check out the selections and call in advance to request a vegetarian meal. If you should happen to find yourself at a restaurant that doesn’t offer vegetarian dishes, take a look at the meat-containing entrees and ask if they can be prepared as vegetarian dishes instead. A pasta dish mixed with vegetables and shrimp could easily be made without the shrimp. Order a baked potato with salsa or cheese, or order a veggie wrap or pita. As a consumer you have a right to know what you’re eating and buying, so don’t feel bad about asking about the contents. Mentioning your dietary needs when you make reservations will increase your options of getting what you want to eat. You should have no problem at most restaurants getting served a meal consistent with your particular tastes or values. Most chefs truly want you to be happy and will go out of their way to make that happen. You’ll find that many restaurants are serving delicious meals to vegans, vegetarians, omnivores, locavores, and other taste and health conscious patrons. Favorite Vegetarian Recipes CURRIED VEGETABLES 10 Servings Ingredients 2 Yellow Squash 2 Zucchini 1 Red Bell Pepper 1 Yellow Bell Pepper 1 Green Bell Pepper 1 Eggplant 1 Onion 1 teaspoon Garlic (finely chopped) 1 teaspoon Ginger (chopped) 3 teaspoon Curry Powder 1 Cinnamon Stick 1 cup Coconut Milk 1/2 cup Tomato Paste 1 cup Heavy Cream Medium dice vegetables, sauté onions, add garlic, ginger, cinnamon and curry, add coconut milk, tomato paste, heavy cream and vegetables powder and stir well. Simmer.

VEGETABLE LASAGNA RECIPE Ingredients 1 cup carrots, sliced 1 cup zucchini, sliced 1/2 cup peppers, red, bell, diced 1 cup spinach, chopped 1 cup cottage cheese, low-fat 1/2 cup cheese, ricotta, low-fat 2 egg substitute 1 teaspoon basil, fresh, minced 1 teaspoon oregano, fresh, minced 1 pepper, black ground 2 cups marinara sauce, low-fat, low-sodium 9 pasta, lasagna noodles Steam vegetables and remove from heat. Combine with other ingredients except marinara sauce and noodles. Place a little sauce on the bottom of a casserole dish. Place 3 noodles on top of the sauce. Add a layer of vegetables and cover with a layer of the cheese mixture. Add some of the sauce. Repeat. Add the last layer of noodles and top with sauce. Bake at 350 degrees for 40 minutes until bubbly. Let stand 10 minutes prior to serving.
STUFFED TOMATOES Ingredients 4 large beefsteak tomatoes 4 tbsps cottage cheese (or cream cheese) 1 tsp ground cumin 1 green pepper, de-seeded and diced Salt and pepper 1/4 cup pumpkin seeds

Slice tops off tomatoes. Remove the seeds and drain upside down. Rub the cottage cheese through a strainer to achieve a smooth consistency, add a little milk if necessary. Stir in seasonings, and stuff the tomatoes with the mixture. Dry roast the pumpkin seeds in a frying pan until they are golden brown and sprinkle over the tomatoes. Chill until ready to serve.
CHUNKY BEAN SPREAD Ingredients 1/2 medium green or red bell pepper, cut into 1-inch chunks 1/2 medium zucchini, cut into 1-inch chunks 1/3 cup pimiento-stuffed green olives 1 or 2 scallions, green part only Coarsely chopped 16-ounce can pinto beans, drained and rinsed 1 tablespoon lemon juice 1/2 teaspoon chili powder, or more to taste 1/2 teaspoon ground cumin, or more to taste Fresh whole-grain or rye bread
Combine the bell pepper, zucchini, olives, and scallions in a food processor. Pulse on and off several times, until the pepper and zucchini are chopped into approximately 1/4-inch pieces. Add the beans, lemon juice, and seasonings, and pulse the food processor on and off until everything is evenly chopped, with a chunky texture. TOMATO PIE Ingredients 1 - 9” Deep Dish Pie Shell 5 Large Ripe Tomatoes 3/4 cup Mayonnaise 1 1/2 cup Shredded White Cheddar Cheese 1/2 cup Chopped Basil 1/2 cup Chopped Chives Sprinkle a small amount of cheese in the bottom of the pie shell, Pre-bake for 5 minutes at 400 degrees, layer slices of tomato, basil and chives in pre-baked pie shell, mix mayonnaise and cheese and spread mayonnaise mix on top of tomatoes, and bake approximately 35 minutes or until golden brown on top.
