SALMON With Pineapple Salsa Courtesy Chef Karla Ingredients 1 teaspoon
Oil, grapeseed or avocado
4 (5 oz.)
Salmon filets
1 tablespoon
Chili powder
1 teaspoon
Garlic powder
1 teaspoon
Cumin
1/2 teaspoon
Salt
1/8 teaspoon
Black pepper, ground
Method: • Preheat grill to medium high heat. • In a small bowl combine seasoning, chili powder, garlic powder, cumin, salt, and pepper. Season salmon liberally on both sides.
Pineapple Salsa: 1 cup
Pineapple, small dice
1/4 cup
Red bell pepper, small dice
1/4 cup
Red onion, small dice
2 tablespoons Cilantro, minced 1 each
Lime, juiced
To taste
Salt + ground black pepper
• Once the grill is preheated (~400-450 degrees), lightly grease the grill grates with oil. Then, place seasoned salmon and sear on one side for 4-6 minutes then flip and repeat. Continue to grill the salmon until it easily comes off the grill grates, and internal temperature reaches ~135-145 degrees.
• Serves: 4 • Serving Size: 1 prepared salmon + 1/4 cup salsa
• To prepare the salsa, combine all prepped ingredients in a bowl.

• Remove perfectly cooked salmon from the grill and top with prepared pineapple salsa.
