ealthy Habit recently voted Hilton Head’s BEST Lunch, Take Out, Counter Service and Salads for the past three years since opening, is quickly becoming well known for their delicious and innovative health focused gourmet quality salads, wraps, noodle bowls and superfood creations. The fast casual restaurant was recently acquired by local hospitality group, HHI Hospitality, well known for creating some of the best regarded restaurants on Hilton Head Island. Nick Bergelt, CEO of HHI Hospitality, saw the brand as an opportunity to create a platform to become an inclusive advocate for all things healthy living on Hilton Head Island. As a first order of business, Healthy Habit just launched a new rebranded and redesigned flagship store this fall in Park Plaza equipped with a new modern look and feel, indoor and outdoor seating and an exhibition kitchen overlooking

The new store menu features all the established old menu favorites in addition to newly launched categories such as breakfast, dinner and grab&go focused takeout and catering programs. To that end, Executive Chef Kevin Yeung has been hard at work in the kitchen over the past month preparing for everyone’s favorite time of year, the holidays. The new fall/winter menu features new ingredients and menu items that reflect the changing of the seasons. Additionally, Healthy Habit recently rolled out a new app that makes ordering and eating healthy, easier than ever. So don’t sacrifice your health this holiday season only to reboot things come January 1. PUBLISHER’S NOTE I think most of us feel the same way around this time of year. We’re all reflecting on the year behind, planning for the year ahead and overall just taking a moment to consider our lives. Naturally, all this reflection leads us to our new year’s resolutions. Are we going to get in better shape? Be a better husband, wife or partner? Do more with our kids? Possibly work harder for that promotion? The list is endless, and even just focusing on one thing we’d like to improve takes immense effort – and maybe that’s why so many of us struggle to meet those goals we set for ourselves. Resolutions are generally set with good intentions, but the reality is it takes a lot more than just good intentions. Changing one behavior, much less the laundry list we set for ourselves every year, takes time, patience and discipline. As the old saying goes, it’s not a sprint it’s a marathon. You didn’t develop this behavior, whatever it may be, in a day. And you’re not going to change it in a day either. To truly achieve a goal, to live up to the person we want to be when we make these resolutions, requires us to look in the long term. And that’s something that’s becoming harder and harder to do these days. We’ve always been a quickfix culture, and the instant gratification of modern technology has made sure that’s not changing anytime soon. If anything, it’s accelerated our need to have everything right this second. Don’t get me wrong, it’s great that we can solve most problems with a few taps on our phone. The problem lies in thinking you can solve every problem with the same speed. If history has taught me anything, it’s that good things take time. Whatever your resolution is, you’re not going to achieve it on the first day. Or the even in the first week. You’re going to work at it every day, as many days as it takes, and even then, you might never know you’ve achieved your goal until you look back on it. But if you put in the work and are patient, good things should follow. Is this a guaranteed strategy to success? Of course not – there are not guaranteed strategies to success, no matter what anyone tells you. But slow and steady discipline does seem pay off more often than not. And putting in little to no effort while expecting immediate gratification is a road to nowhere. For my part, looking back on the last year brings back a flood of memories both good and bad. Like any year, there were hurdles to overcome, mistakes to make and setbacks to deal with. But there were also victories, and great memories too numerous to count. That’s life – you take the good with the bad, and hope you get a few more marks in the win column than you did the year before. And the best way to do that is to work for those wins, putting in the effort every day. BAKING BAD

Despite its name, Bad Biscuit is mixing up something good. BY BARRY KAUFMAN

If money weren’t a factor, what would you do for a living? If you could be any celebrity, who would it be? What’s the name of your favorite pet? What’s your happiest childhood memory? Unless you really like biscuits, these are probably not questions that you get asked every day. But if you do really like biscuits, you most likely hear them a lot, since you’re one of the many locals who have quickly made Bad Biscuit the island’s most buzzed-about new restaurant. “Getting into fall with (visitors) slowing down, locals are coming out and the buzz is big,” said owner David Peck. “People are starting to find us.” For those not in the know, these deeply personal questions are part of Bad Biscuit’s charm. Rather than taking your name, you’re asked a “question of the day” when you order. Your answer is how they call out to you that your food is ready. 12

“It’s really cool when it’s a full restaurant and we call out the answer you gave us because everyone gets a laugh and has a good time,” said Peck. This interactivity is a big part of the quirky aesthetic that defines Bad Biscuit, much like its sister restaurant, Lowcountry Backyard. Inside, the

décor is a hodgepodge of artwork and items curated by Peck. Along one wall, a sit-down arcade console lets you play everything from Donkey Kong to Frogger while you wait for your meal. Elsewhere, your eye is drawn to paintings of Princess Leia from “Star Wars” and the Abominable Snowman from “Rudolph the Red-Nosed Reindeer,” a bicycle-riding skeleton suspended from the ceiling and a whole gallery of the oddball and the obscure. “I like it kind of unique and quirky and fun. The artwork is just stuff I’ve picked up in my travels,” said Peck. “I have friends who created art, friends who’ve donated... but I’m selective. It has to fit my personality.” But the off-the-wall décor and a fun vibe are only appetizers. The main course is, as you’d guess from the name, is the biscuit. If you’re going to open a restaurant called “Bad Biscuit,” you basically have to come out swinging with


a mind-blowing biscuit, or the snarky comments will basically write themselves. And Bad Biscuit hits it out of the park. Out of the zip code, even. The Bad Biscuit biscuit is a work of art – delicate and fluffy, but substantial, with a light crispiness to the outside that contrast beautiful with the effervescent inside. As a centerpiece to the restaurant’s concept, it delivers a sublimely buttery flavor that only came from endless tinkering with an already famous biscuit recipe. “We started fooling around with biscuits because I wanted to update the recipe at Backyard a little bit,” said Peck. “We created this biscuit that was just off the chain. I was like, ‘This should have its own restaurant.’” From that idea, Bad Biscuit was born. And while both it and its sister restaurant serve biscuits, Peck made sure each recipe played to each restaurant’s unique strengths. The same goes for everything on the menu – you’ll find shrimp and grits at both restaurants, but not the same shrimp and grits. “We wanted two unique restaurants. We didn’t want people to think this was a

rip-off of Backyard - we wanted them to go to both places and find something different.” At Bad Biscuit, that something different is a biscuit just a little bit taller and fluffier than its Lowcountry Backyard counterpart. His first few attempts at a better biscuit, however, proved there was work ahead before he created something that could hold its own as a tentpole entrée. “When we got to the restaurant and put it in our equipment and did a test batch, they were terrible. The biscuit creation changed for us when we got into this building because of the humidity and because the oven we were using at home was different – everything plays a factor,” he said. “Now we have these great puffy biscuits that are even better than what I have at the house.” Creating the perfect biscuit means getting every detail right. Every day, the painstaking task of creating these bad biscuits is carried out with precision – every ingredient at the right temperature, every turn with a mixer the same duration, every element identical from the last bath. “With our process,

you can’t deviate from that or you end up getting the wrong product.” It’s a strict adherence to a recipe, but it’s one whose results are well justified. For Peck, a self-confessed biscuit devotee, it’s worth it. “I’ve always loved biscuits,” said Peck. “I just thought it’d be cool to open a restaurant dedicated to that.” One bite, and you’ll understand why Bad Biscuit is the best biscuit around.

Everybody loves pizza, right? How about pizza made to your own specifications that you do not even have to share? Nothing wrong with that. How about pizza made with the freshest ingredients like fresh picked basil, creamy mozzarella, and tomatoes right off the vine? Am I talking to your taste buds yet? Did you say that you are in a hurry and do not have time to wait for a pizza? Wrong. Brand new to the restaurant scene but with a seasoned restaurateur at its helm, Pizza Company brings you delicious pizza with fresh ingredients and is ready in two minutes. Just two! That is about the time it will take you to pay your bill and get your drink. Voilà! You are in pizza heaven. The concept for Pizza Company was born on a school road trip to Kennedy Space Center and the idea definitely took flight. Marshall Sampson and partner Sean Crosby, owner of 16

Island favorite Santa Fe Café, and Billy Watterson, owner of future bourbon and scotch distillery in downtown Bluffton, were talking shop while driving their daughters to the outing and Billy asked Marshall his thoughts on what work food-wise for his new distillery. “I told him that a Santa Fe Café style restaurant was just too much to do on top of a distillery. He mentioned pizza and I told him about a trip I had recently taken to Austin, TX where I visited a pizza place with minimal staff and great product,” said Marshall. “He thought about it a minute and said, ‘Do you want to do it?’ … and I said Yea!” Because Billy’s distillery will not open until the summer of 2020, they did not want their great idea to be grounded so decided to start up their first Pizza Company on the Island. “We looked at four locations and decided on the Main Street location because it


is close to the schools and will be less seasonal and more local. From ideation to door opening took only ten months.” When you walk in the door of Pizza Company, you are greeted by a crisp, fresh, vibrant coastal feel complete with a map of the Island in the foyer. “We had a great interior designer that had to deal with both of us that are high energy – 0 to 500 in five seconds. We love the finished product. We plan on doing a lot of these restaurants and each will mirror its location. We want diners to feel that it is their own. On Hilton Head the theme is ‘Seas the Day’ and the one by the distillery will probably be ‘Bluffton State of Mind’,” explained Marshall. The seating is booths and raised granite counters in a black and white color scheme. “We wanted to stay away from the reds and plaids of typical pizzerias.” The walls are adorned with different colored pizza paddles. You can glance right into the 800 degree oven that is responsible for all the two-minute miracles as you order your food. It is hand-made by a Mediterranean company in Maryland. “They shape the oven out of sand and then build Italian bricks all around it before digging out the sand. It has a rotating floor with a timer set to however long you want for each pizza to cook and the rotation keeps them all cooking consistently.” Marshall flew to Maryland to work in the company’s test kitchens and attend a ‘Pizza University’ where he was immersed in tomatoes, olive oil, and dough from dawn until dusk for days. “The more you learn about pizza, the more you know it’s a science,” said Marshall. He came back from his education and spent many nights at Santa Fe working with lots of doughs and sauces – constant trial and error – with his staff at Santa Fe as the guinea pigs. All of the pies at Pizza Company are 10 inches and the all have the same price, $9.95, regardless of how many toppings you add. Super Simple. You can build your own pizza or choose from their signature pizzas, the most popular of which are the Margherita (garlic olive oil, tomatoes, fresh mozzarella, and basil), the Hot Chic (BBQ sauce, grilled chicken, jalapenos, red onion, roasted tomatoes, buffalo drizzle and shredded mozzarella), and Meet the Meat (Red sauce, pepperoni, ham, sausage, shredded mozzarella and bacon). Builders of their own pizza can choose their own crust, sauce, cheese, meats, drizzles, and veggies. They offer a cauliflower crust that is gluten-friendly and has met with rave reviews. “People with Celiacs don’t get sick with our pizza because we scrape the oven and make every effort to free it from flour contamination,” explained Marshall. “I have seen wives trick their husbands by ordering a ‘cauli’ crust pizza and they didn’t even know the difference!” Their pizza is what Marshall describes as a Neo-Neapolitan pizza – it is thin and crispy not like American pizza which is more doughy. The other menu offering at Pizza Company is Salads that come with one uniform price of $8.95. Salads are a generous size and can be chock full of the same fresh veggies and proteins that go on the pizzas. All ingredients can cross over from pizza to salad. “There is no limit to toppings on either the salads or pies here and there is no extra charge. This is how we set ourselves apart,” commented Marshall. “Some people are very creative although we do recommend not going over

5 ingredients on the pizza or it just won’t cook. Everybody can get what they want here. That’s the beauty of it because no two people ever want the same pizza.” Ultimately, Marshall sees Pizza Company as competing with Fast Food Places. “This is the ultimate in efficiency pizza. It’s that blah time of year – too cold for the beach, the greens aren’t very green, the days are short so it gets dark early. When dinnertime rolls around, you open your frig and then shut it. Blah. Leftovers? Is there anything in the freezer? But wait because there is a great way to pull yourself out of the wintertime doldrums – Chamber of Commerce Restaurant Week will be held February 3-9 when over 60 local restaurants will open their doors with amazing menus at fixed and fabulous prices. This is your big chance! Shut that freezer door, get out of the house and go try something new -- With Restaurant Week, there are no more excuses. We all have our favorite restaurants and our favorite dishes at those favorite restaurants. We may like to think that we try new dishes and hot spots, but historically we really don’t. Restaurant Week makes going out to dinner easy, enjoyable, and affordable. Designed to bolster restaurant’s traffic during a typically slow time of year, Restaurant Week is a win-win for everyone. This will be the 12th year that the Chamber has offered this successful program and it has grown in numbers every year. The number of hits that the Chamber’s website receives with people accessing menus is astounding. It is modeled after similar programs started 24

in New York City and Los Angeles to make expensive restaurants more accessible to everyone. Each participating restaurant is listed on the Chamber’s website with their menu and price. Most have a 3 course meal with a few choices for each course. Some include dessert, some include a glass of wine, each one is unique. According to Margaret Pearman at Charlie’s L’etoile Verte, “We have participated in Restaurant Week since its inception. We started to do it out of great need for business, but this area has grown so much that now it is more of a window for new customers to find us. It seems like 100 people move here every day and sifting through restaurants is difficult. This gives them the impetus to get out and try something new. We showcase what we do best in our menus.” Charlie’s offers a 3 course meal with a starter of a salad or appetizer, an entree choice between fish and meat, and a homemade dessert. Last year’s menu included a Parmesan Crusted Cod and their Chef’s special Shrimp and Grits. “We don’t skimp on these meals,” Margaret emphasized. Santa Fe Café has also been serving up meals for Restaurant Week since the program began. “We found it’s a nice jump start for our year. It gives us good numbers,” said Marshall Sampson, owner of Santa Fe. “It brings us a lot of customers that we normally would not see that time of year.” The pricing at Santa Fe stays true to tradition and will be only $20.20 (reflecting the calendar year). “People are definitely getting a deal. We take the opportunity to try and do new things. What we offer for Restaurant Week is a preview of our Early Dining menu for the rest of the year.” First course is a choice of soup or salad, second course is a choice of one of their signature dishes like my favorite –the Outrageous Chimichanga – and then a dessert like Churros. The Reilley family restaurants, which have been serving up cuisine since 1973, are all happy participants in Restaurant Week. “We enjoy participating in Restaurant Week because it encourages locals and visitors to try different restaurants and also allows our chefs to get creative and try some new menu items,” said Brendan Reilley, partner in Coastal Restaurants and Bars. The Hilton Head Island Seafood Festival brings a full week of culinary excitement to the Lowcountry. BY BARRY KAUFMAN

The secret, we’re happy to say, is out. Hilton Head Island is the culinary capital of the new South. It’s a weighty claim, but it’s one that can easily be backed up with a quick glance at the sheer number of talented chefs who make up the roster for the Hilton Head Island Seafood Festival.

THE TALENT

In addition to home-grown talents like Sean Carrol (Alexender’s), Brandon Carter (FARM), Orchid Paulmeier (One Hot Mama’s), Clayton Rollison (Lucky Rooster), Tim Nelson (The Porch), Scott Bodkin (South Carolina Yacht Club) and too many more to mention, the HHI Seafood Festival will draw in superstar chefs from all over the South. From Chef Benjamin Davis, who has been introducing Gullah cuisine to the world from his home base in Charleston, to Robert Owens, whose Grand Champion BBQ has captured national attention, you’ll find some of the most celebrated names in Southern food heading here for the festival. It’s hardly a surprise to see so many local chefs coming out for the festival – the island’s culinary scene is a tight-knit group, always ready to help one another. In this case, they’re coming together to raise funds for the David M. Carmines Foundation, begun by Brian and Gloria Carmines of Hudson’s Seafood on the Docks to honor their son David, who succumbed to cancer at the young age of 24. With corporate sponsorship from Publix, the event helps the foundation raise funds for Island Recreation Scholarship Fund, Gullah Institute, Port Royal Sound Foundation, Coastal Discovery Museum and the Medical University of South Carolina. 30

THE EVENTS

The festival truly kicks off with the Lowcountry Seafood Experience on the Water, Feb. 24 and 28. A deep dive into our region’s true culinary heritage, this two-hour excursion gives hungry participants first-hand lessons in how our local fishers, crabbers and oystermen ply their trade on the coastal waters around Hilton Head Island. Captains Christopher and Matthew Shoemaker lead the class, a soup-to-nuts demonstration of how Lowcountry natives have put food on the table for nearly a century. Not all Lowcountry cuisine comes from the sea, however. Like any respectable Southern culinary tradition, we also know a thing or two about cooking a hog low and slow. On Feb. 27, Pitmaster Bryan Furman of B’s Cracklin’ BBQ will lead Pitmaster 101 at Waddell Mariculture Center. Lauded by such outlets as Southern Living and Garden & Gun as one of the best pitmasters in the South, Furman will lead an introductory course in turning wood and fire into delectable barbecue. The James Beard House is ground zero for the culinary revolution happening in this country, and once again the esteemed organization will be making its way south to our island. This one-night-only event, the Friends of James Beard Southern Supper on Feb. 27, offers a multi-course, line-totable dinner with wine pairings highlighting some of the most exciting culinary creations from James Beard Foundation Award winners and nominees. Participating chefs named so far include Vishwesh Bhatt, founder of Mississippi’s Snackbar and James Beard winner for Best Chef South in 2019, and William Dissen, whose North Carolina restaurants have redefined farm-to-


table. Perhaps most exciting is the fact that a trio of our own local chefs will be joining this illustrious panel – in addition to Rollison, Omni Hilton Head Pastry Chef Selena Delaney and Hudson’s Seafood on the Dock President Andrew Carmines will be dishing up delectable Beard-worthy cuisine. The next day will offer a pair of events, starting with a master class with William Dissen at 10 a.m. at Alexander’s. Dissen is known for his work with the James Beard Foundation as well as his trio of Tarheel state restaurants - Haymaker, The Market Place, And Billy D’s Fried Chicken – but perhaps his most important work comes from the network of farmers, producers and fishermen he’s created. He’ll present a special master class offering tips and techniques for turning carefully sourced ingredients into epicurean gold. The last of the pre-party events leading up to the big Saturday festival brings out all the star power for the Pig Pickin’ + Oyster Roast, 6 p.m. Feb. 28 at Waddell Mariculture Center. The evening event reads like a greatest hits list of Southern cuisine – whole hogs, local shrimp and a kaleidoscope of sides, while bringing out the whole roster of talented chefs who have made the island their home permanently or just for the week. It all comes to a head with the Saturday Seafood Festival, 11 a.m.-4 p.m. Feb. 29 at Historic Honey Horn. While the lead-up events are tailored more for the discerning foodie, the Saturday festival is a come-one come-all love letter to Southern food and family fun. The main dish is, naturally, the food, served up by a slew of area restaurants (too many to mention, but suffice it to say your favorite dining spot will probably be on hand). But it’s the side dishes that make this festival such an annual highlight on the social calendar – mixology lessons, artisan market, silent auction for the David M. Carmines Foundation, music by Deas Guyz, VIP Lounge and expanded kids zone, to name a few. That’s right kids, you remember the Ferris Wheel they brought out last year? They found a bigger one this year. It’s going to be one of those festivals you just can’t miss. GULLAH GALORE in February Food and Fun for Everyone BY RISA WILLIAMS MCMILLAN

Imagine being kidnapped, torn away from your family and everything you hold dear, and thrown on a boat to a destination unknown. The only things you are allowed to take with you are your memories. Imagine the terror and the fear. Such was the fate of countless innocents from Western Africa who were enslaved and brought to the Caribbean and Sea Islands on the southeastern coast of North America 40

to work the rice fields starting in the 1500’s. They lived and they endured and ultimately proved that while they could be stripped of their homeland, they could not be stripped of their culture and their traditions. Forced to live and work together, these people forged a new melting pot of people which has become known as Gullah. Gullah is a term that was originally used to designate the creole dialect of English spoken by Gullah and Geechee people. We are most fortunate on Hilton Head to have a very active Gullah Society community that is dedicated to preserving this culture and educating people about it. Aside from the many opportunities and events to learn about the culture during the year, the month of February will usher in the 245th Gullah Celebration – a month long calendar full of events and exhibits, soul and song, and of course lots of good Gullah food. According to Courtney Young, 6th generation Gullah Islander woman and spokesperson Marketing Director for the Celebration, “The Gullah culture is so special that we want to share it. It is actually one of the few cultures that is of the Unites States – it was born here. We want people to have a healthy respect for the cultural uniqueness. Gullah people are not substandard. The annual celebration is an opportunity to gain a greater understanding of their cultural way of life.” In order to understand their Gullah way of life, you have to understand the culture’s history. For hundreds of years the abominations of the slave trade carried on. The Gullah culture was formed over the course of these centuries by the slaves that were forced to work on the Sea Islands between North Carolina and northern Florida. Courtney speaks of the ‘Middle


Passage’ which was the crossing of the ocean which took three to four months during which time the slaves were shackled below decks and packed so tightly that the conditions were inhumane and disease and death was rampant. People were thrown overboard like chum. The percentage of slaves who did not survive the journey is staggering with numbers hovering near 20%. “If they were lucky enough to survive the crossing, they then had to learn to survive in the new land. They learned to communicate as a safety mechanism. There are 54 countries in Africa and thousands hundreds of languages and dialects. The only thing they had in common was the color of their skin and this new experience.” Thus the Gullah Geechee culture became an evolution of necessity – people teaching people, the crossing of cultures, that has evolved. They were literally isolated on these Islands until the 1950’s mid 20th Century when the first bridges were built. Over time, more than just a language to communicate was developed. They started their own traditions, rituals, cuisines, music, crafts and more – all derived and shared from their African roots. The Gullah Celebration month shares all of these traditions and is a wonderful way to learn and experience a culture that is not only unique to our area, but very much still alive. stories that have been passed down through generations. Take home a piece of the culturepast through newtheir memories and special gifts. There are two wonderful foodie events to attend. The first is Taste of Gullah, one of the original Celebration events, which will be held Saturday, February 8th from 12 to 3 in the parking lot at the Arts Center in Shelter Cove. This is a wonderful opportunity to taste their food as well as take in Gullah Music and the largest showcase of Gullah Art in the US which is on display during the month inside the Arts Center. Dishes to try will include traditional Gullah food favorites like gumbo, ‘Geechee’ conch stew, fried fish, chicken, ribs, shrimp creole, okra and tomato stew, corn bread, Sweet Potato Poon, and traditional Red Rice with beans, onions, peppers, and possibly bacon or sausage. “Red Rice is a lowcountry tradition. Everyone has their own twist,” said Courtney. The majority of Gullah food features many seafood dishes is seafood as Gullah people they lived off the seas selling shrimp, fish, oysters, blue crabs and clams. Shrimp and grits has been part of the Gullah culture for over 150 years. They would eat oysters or fish stewed over grits for breakfast and fried for dinner over rice. “Shrimp and Grits have now become famous as high end restaurants in the south serve them. But they were a staple of the Gullah and were a breakfast family mealsmeal,” explained Courtney. “There wasy always had a pot of rice on the stove. They ate what was available. While you think of the thighs, legs, and breasts when eating a chicken – they ate the whole chicken.” Aside from the food presentations, there will be many local artists -- sweet grass basket sewers, fishnet weavers, and handmade jewelry makers, some coming from Southern and Western Africa. Entertainment will be in the form of story tellers, African dance, and Gospel Music. The second food event is the Gullah Market on February 15th and 16th at Honey Horn. Courtney calls this an “expanded food experience.” It will include all the Gullah foods as well as some with Caribbean influences. Over fifty food and retail vendors will set up tents and share cuisine, wall art, photography, clothes, books, jewelry, special sauces, seasoning blends, crafts, and more. There will be lots of live performers like Gullah Choirs, singers, and drummers, and the traditional Ring Shout will be performed. “The Ring Shout is similar to an African or Native American tribal call. People form a ring and there is a flow of energy. For some it is a way to express spirituality and connect with our Creator. It is a celebration of the moment. It is a time to ask for prayers and forgiveness,” expressed Courtney. Aside from the month long Gullah Celebration, there are many opportunities to experience the culture year round. The Gullah Museum – the little blue house – was preserved to house the unique traditions and is located at 12 Georgianna Drive off of Gum Tree. To add some clean dietary fat to your routine, consider adding some of the following foods. Walnuts - try them chopped in a salad instead of croutons or roasted with some balsamic. Olives - a serving is 10 small or 5 large, and can be used to top a salad, dress any protein, or even just be stand alone snack. Salmon - oily fish like salmon (and sardines, and trout) are full of omega-3 fatty acids. Eating this fish is one of the best ways to get this essential fat. Chia seeds - the majority of the fats in chia seeds consists of the heart-healthy omega-3 fatty acid called ALA. This little powerhouse may also help to lower blood pressure and having an anti-inflammatory impact. You can add a teaspoon of chia seeds to just about any smoothie to get those benefits daily. Avocados - try the Greek Salad recipe topped with avocados. This serving of avos has 40% of your daily fiber need too. Score!

What do you think of when you hear the word “fat”? It’s likely not good. Perhaps an inner monologue about a certain body part… perhaps a fear or aversion… or maybe it’s an image that comes to mind. Fat gets a bad rap these days, but dietary fat is MACROnutrient meaning you need it larger amounts to create a healthy body and clear mind. Upwards of 30% of your daily intake can be dietary fat for a balanced approach to nutrition. Our friends adhering to a keto diet even go way beyond that amount. Let’s break down the skinny on fat. Fat can be tricky because it is so energy dense. Consider the following caloric breakdown when comparing fat to the other macronutrients: 1 gram protein = 4 calories 1 gram carb = 4 calories 1 gram fat = 9 calories. It has 2.5 TIMES the energy of the other foods, which means portions for dietary fat are 2.5 smaller for the same “serving”. Keep in mind though that fat is not the enemy. Eating dietary fat doesn’t make you fat, anymore than eating fish gives you gills. To store fat on your body requires a caloric surplus among other things, but rest assured that dietary fat is usually not the culprit.

Ingredients 2 cucumbers 1 1/2 cup small tomatoes 1/2 red onion 1 1/2 cup of kalamata olives, pitted and halved 1/4 cup fresh parsley 2 avocados, pitted and cut into chunks 1/2 cup extra virgin olive oil 1/2 cup red wine vinegar 2 cloves of garlic, peeled and minced 1 tbsp oregano 1 tsp each of salt and pepper

Directions In a large serving bowl, combine the cucumbers, tomatoes, red onion, kalamata olives, and parsley. Place the avocado chunks in a small bowl and set aside In a small canning jar, combine the olive oil, red vinegar, garlic, oregano, sugar, salt and pepper. Top with the lid and shake well until blended. Season with salt and pepper to taste Pour 1 tbsp of the dressing on the avocado and gently mix to coat. Pour the rest of the dressing on the cucumber mixture and toss to coat. Add the avocados to the salad and top with chunks of feta cheese. HUNGARIAN WINES Come to the Lowcountry Is Villány the New Bordeaux? BY RISA WILLIAMS MCMILLAN

Listen up you wine connoisseurs out there. There is more to know and love about wines from Hungary than just the sweet dessert grapes from the Tokaji vines. Remember when nobody had heard of Chilean wines or the grapes of New Zealand? Now those grapes are popular throughout the United States. Could Villány in Hungary be the new Bordeaux? Keep your wine imagination open as Hungarian wines are being poured in the Lowcountry and they are worth your while to whet your whistle. ‘Hungary comes to the Lowcountry’ is compliments of native Hungarian and Hilton Head resident Ferenc Vura (pronounced Frank) who moved from Hungary to Hilton Head 19 years ago. Ferenc came to the US to work in the hospitality industry and after working at various restaurants, he found his niche at the Old Oyster Factory, where has been on deck for 14 years. Under the auspices of a previous owner, Ferenc started becoming educated about wines during their weekly tastings. “The owner 44

and manager wanted to make sure that if we served something, we knew what it was. The original owner went to school in France, so our wine list had a lot of French wines and he made us pronounce them out loud,” said Ferenc. “We had to know everything.” With all of his education about wine over the years, Ferenc admittedly knew nothing about Hungarian wines. This was not Ferenc’s fault – they simply were not imported into South Carolina. His fate with Hungarian wines was to change one day when his friend Cooper Cram, one of the owners of Bear Island Distributors, struck up a conversation with him after a tennis match. “He told me about how their license to sell beer included a wine license and he said someone had recommended that they distribute wine as well as craft beer because the beer market was seasonal,” said Ferenc. The wine wheels in Ferenc’s brain started spinning and an idea took shape.


So in 2016, Ferenc travelled home to Hungary and upon arrival announced to his brother that they needed to visit wineries. “I have an entrepreneurial brain and am always coming up with ideas so my brother was like… ‘Here we go again’. The first winery we walked into with no appointment and said we were looking to import Hungarian wines to the United States and they were so excited. It was like that everywhere we went. The richest guy in Hungary has a vineyard and even they did not have a representative in the United States for sales.” Ferenc flew back to the states with the maximum number of bottles of wine he could carry on his person and did a tasting with Cooper and his brother and partner, William. They decided they were onto something big and thus the birth of Ferenc’s import business, Hungarian Wine and Spirit. It took him a year to get all of the necessary Federal and SC importing licenses but now that he is up and running people are catching on. “Tokaji Vineyard sent us 50 cases to try of their “Mad” dry white wine and it was gone in three weeks. It is like an unoaked Chardonnay – nice, crispy.” The Tokaji dessert wine has always been the most widely known Hungarian wine in the US. But according to Ferenc, the vintner needed to come up with a new way to harvest the grape because people just do not have the time to sit around and drink dessert wines. So Tokaji did an earlier harvest of their famous white Furmint Grape and the result is a hit with Mad, named after the village where it is produced. Currently, Ferenc has a contract to import from four different wineries with twelve different grapes like Pinot Grigio, Sauvignon Blanc, Cabernet, Chardonnay and Merlot. “They are all delicious,” commented Ferenc. “The wine laws in Europe are very strict so they cannot use a lot of chemicals or pesticides in the soil. You don’t get the headaches that you do from some wines.” Ferenc noted that Hungary has been making wine for 2,000 years – as long as the French. “The climate and soil is so unique you can grow grapes in any region in Hungary. There are 22 wine regions and more than 600 wineries.” The Tokaji region in the north only has white grapes. The southern region of Villány, known as the “Bordeaux of the East” at it is on the same latitude with the French region, boasts all the red grapes – Cabernet, Merlot, and the very popular Cabernet Franc. Ferenc will be happy to serve you his imported Hungarian wines at the Old Oyster Factory, or there are also a variety of other places locally that Bear Island Distrubitors supply. You can pick up a bottle at Bill’s Liquor Store in Bluffton, General Store in Sea Pines, Piggly Wiggly in Coligny, and Roller’s. They are also in local restaurants including Lucky Rooster, Flora’s, Redfish, Charlie’s and more to come. “Because of Hungary, we have a nice angle to be successful. It’s all on me to go out and educate people. The timing for this is perfect. Forbes Magazine is predicting that Furmint will be THE next new grape coming out of Europe,” said Ferenc. He is focusing on South Carolina for now with his distribution but the sky is the limit. Ferenc’s dream is that Shark Tank’s Mr. Wonderful (Kevin O’Leary) will go into business with him some day. From March 9-15, raise a glass saluting an event 35 years in the making. What began as a three-hour wine tasting in a parking lot in South Beach to boost tourism in the early spring now spans an entire week. In 2020, the Hilton Head Island Wine and Food Festival returns to The Sea Pines Resort with its signature Grand and Public Wine Tastings, Stay Gold: A Lowcountry Wine, Food and Music Experience, a Sip ‘n Stroll through the Harbour Town Yacht Basin, a dozen local chef showcases and wine education seminars, topped off with a seaside Sunday Brunch. The festival’s success can be measured by the number and quality of visitors it attracts -- last year, 3,000 well-educated, high-income attendees, many of whom traveled at least 50 miles, spent over four days on Hilton Head Island – in addition to the $75,000 in scholarship money generated for local college students pursuing careers in hospitality and tourism and recently established community partnerships. Although it’s a private affair, the cornerstone of the festival is the three-day International Wine Judging & Competition held in February. Approximately 20 professional and accredited wine judges determine medal-winning wines out of 500 or so entries

which are then auctioned off at the Grand and Public Tastings, as are the extra bottles sent in for judging. Proceeds from the silent auctions benefit the John and Valerie Curry Scholarship Fund. Those wines deemed “double gold” are showcased during the Stay Gold event on March 12. Now in his sixth year as Festival Director, Jeff Gerber began his long association with the non-profit organization as a volunteer at the Wine Judging. “We created the Stay Gold event to put some focus on double golds from the judging and get people to realize that the event has a higher cause,” he explains. “And that is providing scholarships to students at local colleges.”


“And it was an amazing event,” he adds. “Last year was the first year and we sold out. With the sun setting behind the Lighthouse, live music, roasting oysters, perfect weather – it couldn’t have gone any better! It’s a phenomenal event and it helps us showcase Lowcountry life.” The festival’s most exclusive event, the Grand Tasting, takes place on March 13 in the Harbour Town Clubhouse. For a set price, attendees can experience an array of high-end awardwinning wines and light hors d’oeuvres overlooking the famed Harbour Town Golf Links. On Saturday, March 14, more than 250 wines from across the world are featured during the Public Tasting held from 12 - 3 p.m. around the Yacht Basin. This popular event is one of the largest outdoor tented wine tastings on the East Coast and includes the Sysco Outdoor Gourmet Challenge, the Waiter’s Race and a Silent Auction. Not only is Gerber pleased with the way the event has grown and the quality of visitors it attracts, he is also excited about the community partnerships the festival has cultivated. In the fall of 2018, the University of South Carolina Beaufort opened a new campus on Hilton Head which is home to its Hospitality Management baccalaureate program. The facility has eight classrooms, two of which are experiential-learning classrooms, a beverage laboratory and a demonstration kitchen. The Hilton Head Island Wine & Food Festival plans to host cooking classes and educational seminars throughout the year at the new Hilton Head campus. The organization has also forged a partnership with USCB’s OLLI (Osher Lifelong Learning Institute), to offer lifelong learning opportunities for all ages. Meanwhile, Technical College of the Lowcountry recently broke ground on its new Culinary Institute of the South in Bluffton’s Buckwalter Place. Set to open in the spring of 2021. But on a more positive note, classes for the new facility started this term. The 26,000-square-foot, state-of-the-art culinary training facility features six academic classrooms, two teaching kitchens, two baking labs, a lecture theater, a teaching restaurant and an interactive museum bringing to life the true story of Southern food. Associate degrees and certificates in a variety of culinary disciplines will be offered. “It’s going to be an amazing facility,” says Gerber. “We think this specifically will help fill the need for qualified, trained people in the industry. We are blessed on Hilton Head and in the Lowcountry to have a community of givers – people and organizations that take care of those who are less fortunate and in need. Anyone who has taken the time to drive around the Island – ALL of the Island – knows that there are great disparities in wealth and living conditions and so many people and families require help. So you want to help, but there are over 1,000 organizations out there and each has a different purpose. Where do you start? The answer is quite simple. With Community Foundation of the Lowcountry, giving is made easy. Community Foundation of the Lowcountry has been making life easier for countless people in Beaufort, Jasper, Hampton, and Colleton Counties for 25 years. The Foundation was created in 1994 when the nonprofit hospital on the Hilton Head was sold. Local leaders decided to start the Community Foundation with the 20 million dollars from the sale. It’s now one of about 800 community foundations in the country, dedicated to building and 60

distributing philanthropic funds, supporting charities, and playing a leadership role in the community. Their Mission Statement reads: “Strengthening community by connecting people, resources, and needs.” According to president and CEO Chris Kerrigan, “We work with donors who are passionate about the community and want to see change and accomplishment. We are the largest unrestricted grant making organization in the region.” In essence, they help you make a difference by linking your passion with a worthy cause. Jean Heyduck, Vice President for Marketing and Communications, explained that there are two primary mechanisms for the grants they award. “We have a competitive grants program and more than 300 donor funds.” In the competitive program, nonprofits can apply to the Foundation for funds. Through the application, coupled with site visits and thorough reviews, their board will approve grants during specific times during the year. With donor funds, including donor advised funds, individuals cans set up


funds with the Foundation and recommend grants, which the Foundation will administer. This makes it easy for the fund advisor, while providing a giving legacy for the donor. It is hard to fathom how many people have been helped and lives changed through the charitable grants from Community Foundation of the Lowcountry. One example of how they have made an impact is Lowcountry Legal Volunteers. Grants awarded to this organization have helped them provide free legal services to those that could not afford it. Over $500,000 has been channeled to 9,000 families for five years. Another example is the Community Foundation’s Project SAFE initiative where they have been working with the town and PSD to provide sewer access to everyone. “Leaking septic tanks affect us all as the sewage leaks into our basins and creeks. This fund is essential for helping the most vulnerable. We set a goal to raise three million dollars to connect families that cannot afford it. It is phenomenal that we, along with our partners, have fulfilled that commitment,” explained Chris. Community Foundation of the Lowcountry also believes in the next generation and as such has a database on their website listing over 50 local scholarships. They provide information and criteria for each scholarship as well as financial worksheets. Last year alone they awarded over $600,000 and many of the scholarships are multi-year. “The only proven pathway out of poverty is education,” said Chris. Available scholarships run the gamut for students interested in arts and athletics, to aspiring doctors and pilots. Anything and everything you donate to Community Foundation of the Lowcountry will make a difference in someone’s life –the size of the impact is up to you. “People can donate online, to a specific fund, or to our Touch Tomorrow fund, which is an unrestricted fund,” explained Jean. If a donor is interested in establishing a fund, they can speak with Emmy Rooney, Vice President for Development and Donor Services who has been with the Foundation almost since day one. She can guide them through the process. Jean also described The Giving Marketplace that provides information on the non-profits in our community (there are 1,000 of them -- each with its own purpose). “We like to help people make smart and informed giving decisions. With The Giving Marketplace, they ensure that their donation is going to the right place,” she said. Through their database of charities, donors can enter a specific organization or just a key word like “arts” to search. “This is a great resource during the holidays, when many people are making their end-of-year donations,” added Jean. They also have a link on their website called Lowcountry Volunteer Connection which she described as like a ‘match.com’ to pair people with the best volunteer opportunities to fit their passions. The Bluffton State of Mind is many things to many people. To some, it’s a river getaway whose tide carries them out on fishing trips or lazy Sundays on the sandbar. To others, it’s a quaint Southern town where everyone knows your name. Some see it as an eclectic enclave of artists, as it was for years before development truly began. But for all of these people, Bluffton is and has always been a great place to grab a drink. From the days when illicit pot stills cranked out scrap iron moonshine up and down May River road to the modern era of watering holes on every corner, Bluffton has had a long love affair with its giggle water. And new developments will only look to strengthen that bond. Need a reason to go grab a drink in Bluffton? Here are three. 62

BEE-TOWN MEAD & CIDER When it comes time to imbibe, a lot of people might not put mead on the top of their “must-quaff” list. But it’s time to take another look at the world’s oldest adult beverage. Developed by early hunter-gatherers, mead has a rich history of elevating spirits that carries on at Bee-Town Mead & Cider. Owner Mike Tripka knows that there’s plenty of educating that needs to be done when it comes to mead, and he’s happy to serve up lessons one glass at a time. “In our part of the country it’s not as wellknown, but if you go up the East Coast or out west, particularly in San Diego, mead is exploding,” he said. Fermented from locally sourced honey, the meads at BeeTown run the gamut of flavor profiles, with the corner bar at the meadery serving up margarita, peach and cherry lime flavors on draft. While the labels of fruit and honey might warn of an overly sugar experience, the actual tasting reveals a subdued sweetness. “We don’t make a sweet mead,” said Tripka. “It’s typically made dry to semi-sweet.”

BLUFFTON TRADING POST When Mark Weisner decides to open a beer bar, hopheads pay attention. Weisner is, after all, the architect of the Bluffton Craft Beer Festival, a long-standing event that has grown in popularity each year to become one of the town’s tentpole events. The point being, he knows a thing or two about good beer. “Basically, we want this to be a place we want people to come and get educated on great beer,” said Weisner. Bluffton Trading Post occupies the famed May River Road spot that once served as Scott’s Market, keeping the same eclectic vibe (right down to the phone booth) and using it as a showcase for a curated selection of beers from around the world. The vast selection of brews reflects Weisner’s deep knowledge, honed from years of planning the annual festival, available as either grab and go or to enjoy at the wide counter. Pair it up with some unique wines and some light bites and you have a bar that in true Bluffton eccentricity doesn’t feel like a bar. “We just wanted somewhere people could be comfortable. Whether they’re drinking or not.”

DEVELOPMENTS BREWING Beyond the places already established and serving up delicious drinks, Bluffton has a trio of new options coming its way in the next few years. Burnt Church Distillery, which we profiled in the previous issue of Taste of Hilton Head, plans on opening soon with its deep roster of whiskeys, gins, bourbons and moonshines. But they’re far from the only incoming purveyor of local drinks. The long-awaited return of River Dog Brewing Co. to Bluffton is still in the works, despite delays. First announced back in 2017, the move will take River Dog from its current home in Riverwalk to the undeveloped parcel of Jennifer Court near where Buck Island Road meets May River Road. Originally planned for a spring 2018 opening, at press time the new brewery had received the final permits from the Town of Bluffton and was making final plans. Arriving in 2020, lot 9 brewing co. has plans to build a brewery and taproom at a yet-unannounced location somewhere in Old Town Bluffton. Former Southern Barrel brewmaster Walter Trifari co-founded lot 9 with Dana Briggs to, “create a place that celebrates the culture of beer and bands people together in the name of a good time.” Expect more details over the coming year as lot 9 readies for its opening. Each of these new watering holes join a core of great bars and restaurants that have made Bluffton the world’s best place to grab a drink. From the sophisticated wine lists at The Pearl, Pour Richards and May River Grill to the laid-back bottles and drafts of Captain Woody’s and Mellow Mushroom, these iconic destinations have built Bluffton up to a paradise for the drinking man (and woman).
