Ever since the beginning in 1980, plenty of solutions have been produced in the field of deep-freezing, cooling, proofing and pasteurizing. All of them share versatility, complete automation and advanced technology. Today Tecnopool has completed its range of equipment with the spiral cooking system, which, thanks to its configuration, saves space and maintains a linear process Tecnopool was founded in 1980 in San Giorgio in Bosco (Padua) from a group established more than 50 years ago. Since the very beginning, the company managed to stand out in the field of equipment for food industry. Their remarkable flexibility also allows later modifications to adapt them, with a minimal investment, to new or different production demands. The newcomer to Tecnopool is the thermal fluid spiral oven, a spiral cooking system, which, thanks to its configuration, saves space and maintains a linear process. In this way, there is no need to use multiplying/demultiplying devices, which are very common in the lines with pans that use tunnel ovens. The spiral configuration best exploits the heating system that Tecnopool designed for this kind of oven. Compared to tunnel ovens, the absence of forced ventilation and the favorable air volume/product balance in the cabinet allow maintaining the same cooking time with a room temperature between 10 and 15 °C lower. In special cases, according to Tecnopool’s experience, the difference can reach up to 30°C.

Tecnopool spiral oven simplifies the production line and saves space and energy. The energy saving is obtained for three reasons: • Lower working temperature, thanks to combined radiation and convection heat transfer. This characteristic, in addition to the absence of forced ventilation, improves, compared to other systems, the quality of the cooking because the system can work at a room temperature that is 10 °C lower on average. • 20/30% higher performance compared to good air heating systems thanks to the thermal fluid heating system. • Higher overall productivity, thanks to the lower dehydration of the final product. In the case of bakery products, their final weight is around 1-2% heavier than in a conventional cyclothermic oven. Independently from the above, the dimensions of the thermal power plant are still based on the maximum requirements of any cyclothermic system, in order to work with the lowest temperature of thermal fluid.
This means a lower fuel consumption, a lower heating time and a longer life for the thermal fluid, beyond its theoretic expiration. As a matter of fact, in most cases the working temperature of thermal fluid is lower than 280°C. This oven is designed for both medium and large companies: for the former, it is an excellent alternative to electric rotating ovens, which normally guarantee an excellent price/productivity ratio; for the latter, it simplifies production lines, with moderate investments and lower overheads. To conclude, Tecnopool wishes to communicate important news to all its potential customers, namely the opening of a test facility complete with makeup line, proofing chamber, spiral oven and deep-freezing room; by appointment, the facility is at the customers’ complete disposal to test the functionality and the quality of Tecnopool systems, as well as to evaluate the results of each step of the production on their own product. Three decades have passed since in the early 80’s, in a small factory located on the outskirts of Schio, two eager and enthusiastic engineers began to try their hand at used packaging machines, with a view to restoring them to an acceptable working condition. This operation was called an overhaul, a term which has now gone out of use in today’s “disposable” world. It was exactly this constant disassembling, replacing, modifying and testing of old machinery that led to the decision to create new and modern machines. In 1985 the first packaging machines of the newly established Tecno Pack were introduced on the market, immediately enjoying great appreciation among the clientele. Thus began the company’s long journey, focused on responding promptly and professionally to the ever more demanding needs of the market, advancing with courage and determination down the challenging road of automatic packaging systems. These were years of commitment, sacrifice and constant research, but also great satisfaction and growth. In the meantime, Tecno Pack moved to a new headquarters in the Schio industrial zone, an area better suited for the company’s evolving and growing logistic production needs.

Automatic line for bagel, Mod. Torello 600
The company Tarpan Srl, located in Alberobello, Bari, presents its automatic line for taralli, a machine which allows a non-stop progress of production, by means of an extruder drawing the dough and of a moulder making the taralli. The drawing is the result of a pressure extrusion of the dough. These strings are then laid on an unbroken conveyor belt and cut by a guillotine-shaped cutting set. This making of the taralli or of other ring-shaped products is due to the moulder, which allows an excellent toroidal closing by a radial pressure on the ends of the dough strings. This line is designed and built for a new process of production which allows the use of a dough with a consistency up to 65% of humidity, according to the flour type. The final product is therefore tastier and more fragrant, and it keeps the characteristic of a hand-made product. Tarpan crowns the production line by manufacturing a series of accessories and components, in order to satisfy all their customers’ demands, such as: • Automatic setting of a given amount of taralli into pots • Joining belts • Boilers for taralli • Stackers for baking pans • Extruders for pasta • Industrial automatism

Not only couscous. In Algeria, Storci has the keys to open new pasta factories. The world of pasta and couscous may have not been as successful as it is without Storci. Anzio Storci, the President of Storci SpA says “our customers are very satisfied and recognize our quality and innovation, in particular as regards our couscous lines. There is nothing worse than different couscous grains, damaged or overcooked. We offer plants that grant high-quality products, whole and firm grains, without tasting of pasta and featuring even and rough surface.” If product characteristics need remaining unchanged, the machines producing it have to grant homogeneous granulometry that does not require any final grinding. Storci lines cover outputs ranging from 300 up to 3,000 Kg/h (with subsidiary Fava SpA). The machines are built with precious and study materials; special attention is paid to using recycled products; cooking is always perfect and grants homogeneity. Moreover, it is also worth mentioning water-flour mixing by means of Premix®, rotary self-cleaning sieve (rouleuse), steam
cooking and conveyance to a self-cleaning belt, product drying and controlled granulometry that eliminates the need of having to re-grind thick grains. Finally, sturdy and monoblock-like construction brings about remarkable saving in installation expenses. On account of its long experience, Storci has stood out as a leader in the manufacture of semi-automatic lines for long, short and special dry pasta, from 50 kg/h min to 500 Kg/h max, and that is why Storci has sold lines for dry pasta production all over the world, in Algeria for instance where it offers its customers turnkey plants: meaning the supply of all necessary interventions to complete and then start a pasta production line. The making of the new 200 litres’ capacity planetary mixer PL200 has been for Starmix like making a puzzle. For years Starmix has gathered, studied, processed and combined information to design and then produce this new machine. Dependability in time, no downtime for continuous work cycles running round the clock, easy cleaning operations, user-friendly programming, fast performance and safety, are the key elements for the confectionery industry to judge and perhaps buy machinery and equipment. Hence, Starmix took in great consideration all these elements while designing the new PL200. The structure entirely built in stainless steel Aisi 304 with sphere microshot peening treatment of the surface, perfectly smooth surface and round edges guarantee easier cleaning operations. 9kw motor grants power to mix any kind of dough used in pastry and confectionery. Colour touch screen panel 5,7’’ makes programming greatly intuitive.
STARMIX can offer 16 models of mixing tools to mix any kind of dough in the most suitable way. The bowl is wheeled and provided with a discharge valve on the bottom in order to be emptied after any washing operation. Upon request, it is also possible to install a bigger valve and connect a pump to transfer the product from the bowl directly to a hopper or other container. The frequent use of this machine is for sponge cake, plum cake and muffin productions. For these specific products the bowl is pressurized: the bowl is specially sealed as to bear pressure of 0,5 bar. Featuring such pressure and double tool we can have the following advantages: 1.work cycle speed varying according to the kind of product to be mixed (sponge cake, plum cake or muffins); 2.volume of the product increased by 30% thanks to air inlet and following product saving. The double tool combined with scraper assure perfect homogeneity of mixing. The innovated EASY Freeze SPYRO represents the latest generation of spiral freezer, giving utmost advantages to the users, both in energy efficiency and in hygienic and technological advantages, such as (some of them): • Belts gear motors are positioned outside the insulated cabin (no lubrication inside the freezer) avoiding any risks of contaminations due to some oil leakages; • The unit doesn’t have any mezzanine floor and or intermediary platform, to avoid any dirtiness accumulation (presence of any mezzanine floor or intermediary platform are making more difficult the cleaning operations) – the absolutely highest hygienic standards; • Freezer design is made according to max. thermal load and max. surface occupied on the belt by the different products foreseen; • Low maintenance cost and low spare parts cost due to utilisation of high quality commercial components; • Low pressure fans to higher air speed. • Hitting the incoming product with the coldest air; the product is therefore immediately “crusted” and snow formation diminished; • Drum is without lateral openings to improve the air guidance and to minimize the possibility to accumulate dirtiness; • The lateral aprons to guide the airflow on the opposite side of the evaporators are on easy access design like door openable or sliding, but in any case easy access is granted all around; • Snow reduction: the temperature increase of cold air passing through the product is very low. Air cannot therefore increase substantially its humidity content. It is common knowledge that wholemeal and demi-wholemeal flours preserve all the vitamins, mineral salts and fibres contained inside the grain. This is the reason why Partisani chose to dedicate to the wholemeal grinding using stone mills. Through a PLC a control boards manages all sterilization cycles. The appliance is in compliance with the P.E.D. 97/23/EC directive. LPV CALDAIE manufactures stainless steel cooking vessels with convex bottoms and tilting cooking vessels with convex bottoms, all provided with steam heating system. The product is heated thanks to a jacket positioned under the rounded wall of the bottom, into which steam is injected. The shape of this jacket has been specially designed to ensure excellent thermal exchange properties for rapid, even heating of the product. The vessels are thermally insulated with high density insulating material enclosed in a hermetically sealed stainless steel external covering and can therefore be washed using high-pressure systems. The design pressure (4 bar) enables temperatures of nearly 150 °C to be reached. Manufactured in conformity with the P.E.D. 97/23/EC directive. The current markets in which LPV has a direct or indirect, through supplies to other manufacturers, presence include mainly Europe and the Middle East, as well as a range of supplies to other parts of the world. DSC Srl, founded in 2000 by a twenty-year experience in the industrial automation, has reached the objective to furnish to the client automatic and robotized isles “keys in hand”, by engineering mechanic design, hardware, PLC software, PC, robot and artificial vision. Minpack Packaging machine producing from 6000 to 108.000 containers/hour, for mini-portions with volumes from 10 to 50 ml. Both models are available in the following three versions: Hygienic: the machine packaging area is protected by a tunnel in overpressure of ultra-filtered air and infra-red or UV rays for sanitization of the lid film. Ultra-clean: in this case, the packaging zone is kept in sterile air overpressure, which enables steam sterilizing the filters before beginning the production. Film sanitization is by means of UV lamps. Aseptic: the system is based on the usage of H2O2 (hydrogen peroxide) for the pre-sterilization of the machine and continuous sterilization of packaging materials during the production, while steam is used to presterilize the dosing unit and the air filters. Aseptic conditions are maintained by sterile air overpressure. Technological innovations The renovated packaging machines, mechanically servo-driven, are now equipped with user-friendly interface with windows-based touch-screen control panel, new sterile fillers for pasty products, purées with fruit pieces up to 20 mm, sterile fillers with flow-metres for isotonic drinks and other liquid products. In addition to this, Benco Pack’s FFS machines can be now equipped with innovative decorating units for containers, like the ISA for example. Alimec has more than thirty years of experience in the design and production of complete systems for the dosing and filling of food products, which has driven it to achieve high standards in the production which have made it a leader in two fields: pizzas and pastries. In addition to a high degree of constructive quality achieved through the use of carefully selected materials and advanced design techniques, Alimec aims at research and development as its base to face a continuously evolving market. For the pizza sector, Alimec is particularly proud to introduce its lines for garnishing and decorating pizzas before and after baking, completely PLC controlled and with variable functions by touch screen. Each machine is customised in such a way as to be connected with the main processing line, be it laminating or dough ball, with a tunnel oven and the product transfer from the oven to the freezer. On the other hand, post-oven equipment mainly of polyurethane conveyor belts or plastic mesh belts and modular units, such as: distributors for ham, vegetables, mushrooms, olives, slicers for slicing and distributing salami, ham as well as distributors for oil and oregano, etc. All units have been manufactured in stainless steel and have been fitted onto wheels to allow the extraction from the line and easy washing and cleaning procedures at production cycle end. Moreover, it is also possible to store quickly and automatically different recipes and information and to recall them on the display touch screen. Alimecâ&#x20AC;&#x2122;s versatility is perfectly represented by its slicer A 600-900-1200, ideal for different uses like slicing bread and sandwich lines, and slicing and continuous distribution of salami, ham and cheese onto pizzas. Both number and position of slices on the pizza can be varied. The slicer is mainly composed of a interchangeable hopper with pendulum movement and a band cutting blade. The unit, with cantilever frame, has been set on wheels to facilitate its removed from the production line. The new version of this slicer has been enhanced in such a way as to offer a wider cutting surface. All parameters can be adjusted and stored by means of a display touch screen. Thanks to the flexibility and the continuous research Alimec boasts a great experience in the Pastry Industry where its volumetric dosers to make plum cakes, muffins, cream puffs, and ĂŠclairs and fill them with jam, creams and chocolate have given it the market leadership. The automatic line ADV is suitable for the production of cakes, muffins, madalenas, etc. either on moulded baking pans or directly on previously deposited paper cups. The line is composed of a series of catenary conveyor belts, a paper cups dispenser which lays the paper cups onto the baking pans, and one or two dosing heads for depositing the batter into the pans. In particular, the paper cups dispenser, which has been designed with a precise mechanical function and with a suction free aspiration system, has been developed to give an extremely high production rate. The line can also be combined with several accessories such as: vertical injection of jam and creams, baking tray oilers, sugar and chocolate chips distributors, oven loaders and dischargers, cooling towers, depanners or even a complete baking tray plant. These lines have been designed and manufactured to allow adapting to various production requirements, such as: different pan sizes, hourly capacity, product requested, and more. They are electronically controlled and their functions can be regulated by means of a display screen, thus allowing information and recipes to be stored and quickly recalled on the touch screen.

Plasma cutting shows a smooth cutting surface, with light streaks, a very little burr, a very limited thermally altered area and a quite imperceptible taper of cutting in case of little thicknesses and low taper only in quite high thicknesses (over 4-5 mm). However all the cutting characteristics can be improved in relation to a limited decrease of the cutting speed. It is then possible to obtain different quality levels, according to the cutting speed (that can range between about 1 and 8 m a minute in relation to thickness and capacity). Plasma processes are applied specially in the field of carbon and alloyed stainless steel. Among all Agromeccanica machines, the Evaporator stands out as the most important and it is for vacuum concentration processes. The evaporator processes tomato concentrate and fruit purees, with capacity up to 900 t/day, while its evaporation capacity ranges from 2,000 to 35,000 Kg/h. Thermal features: single, double and triple effect.

Abrigo stands as a global benchmark for robotic automation applied to the food industry, in the field of ultrasonic cutting and packaging systems. Its areas of competence are chocolate, bakery, frozen food, dairy, confectionery. The ultrasonic cutting systems can operate on round products, squared, rectangular or in continuous row. Abrigo has developed a complete range of solutions for secondary packaging and end-, taking consideration of the needs of customers working on continuous cycle. Robovision systems are modular cells
equipped with high-speed robots driven by artificial vision, designed for situations in which the randomly incoming product should be placed in order inside packages. The robotic cells for boxing flat-bottomed bags are capable of receiving two flows simultaneously from two bagging machines and they perform all the necessary tasks: forming the box, filling it, compensation of the disparity between the two lines, and control of completeness and sealing of the boxes themselves. Abrigo also produces robotic cells for packaging high-speed flowpacked products, or general products arriving in single high-speed row. These systems receive the products, collect them with dual-belt sorters and pick and place them with robot arms. The line includes box forming and box sealing. Furthermore, Abrigo, in partnership with leader companies in their own branch, developed integrated systems for bakery products like cupcakes and muffins. An unique solution which starts with paper-cup depositing in baking pans, includes depanning and decoration, and ends with packaging and final packing.
