Nowadays, we are used to seeing pizza baked in electric or gas ovens, but we should not forget that the real Italian pizza was created in 1889 in Naples with the characteristic of being baked in wood-fired oven at 450°C for no longer than 60 to 90 seconds. Between the proving process and the baking process, there are various processes involved in preparing the pizza, which must be carried out using high quality equipment as to ensure a finished product that complies with the reputation that Italian pizza has built up all over the world.

CLM bakery System can offer you the innovative hot pressing system and the crossing lamination.

In the CLM Bakery System hot pressing system, the dough balls are picked up by servo controlled mechanical hands and transferred onto the plates of the hot press conveyor with precision. Upper and lower plates are heated by a controlled electrical resistance system, which always keeps them at the ideal operating temperature.

The pressing plates are also shaped in such a way as to obtain the preferred pizza shape. By changing the shape, it is very easy to move from a flat pizza to a thick crust or rimmed one.

After the hot press step, the bases are picked up off the conveyor by a second manipulator, with vacuum-operated pick-up heads, and then placed onto the conveyor belt direction oven.

The hot pressing carried out by the CLM Bakery System procedure allows an even crispier pizza base to be obtained, so that the base absorbs the wetness of the tomato to a lesser extent, hence consistently improving the finished product.

As an alternative to the hot pressing CLM Bakery System offers you the crossing lamination: two laminators receive the proved dough balls and make them into oval shapes, which are lined up and handled by a dedicated phasing system. A retractable conveyor then gently transfers the ovals, creating a direction change. The ovals move

How to drive the success of a semihomemade bakery product? With a plus: Deep-freezing of already packaged products

It was 2020 when at Millennium Engineering the telephone rang for Eng. Priore: The Technical Department was immediately involved in preliminary studies, and an inspection followed suit: The small-sized company, in its infancy but already with very clear ideas, required a spiral to convey the product from point A to point B of the production line, with consequent (partial) cooling.

A few months later, the spiral was delivered, installed and tested on the customer’s premises. 7 storeys for an 88-metre, singlepulley conveyor belt (with lifting system).

The first chapter of this story continues with an increasingly high market demand of a high-end pinsa.

The customer’s choice, which turned out to be far-sighted, keeps some processes at artisan level while few others are industrialized.

Further pinsa variants have been developed, to conquer new market shares and

strengthen positioning in the large-scale retail trade.

After just a few years, and Eng. Priore’s phone rang again.

It is about the study of forced cooling that does not affect fragrance and airiness of dough.

This case, the challenge is posed by the relevant quantity of flour in the product and its “behaviour” in relation to the air flows necessary for temperature blasting. Space available, as it often happens, is limited: In a cell of m 10x7 (m 3 high), ME Food Solutions engineers a spiral of 197-metre belt, with mm 800 loading height, and mm 1050 discharge height.

The product from the ovens has an entry temperature of 85°C, stays in the cell for about 30 minutes at 2-3°C, and exits at 15°C.

The flexibility of the system, whose belt speed can be varied, guarantees the processing of different product types, as required.

The customer, highly demanding, is fully satisfied. That is not yet the end, on the

contrary. The latest phone call (by now) dates 2024: “Eng. Priore, can we deep-freeze already packed products?”

That’s not an easy task. Jointly with its customer, ME Food Solutions started an analysis and study stage. The product characteristics need and deserve a one-ofa-kind tailored solution: hitting -18°C at the core, inside the plastic wrapping.

Hence, the third solution: An oval spiral with inversion, 11 storeys up + 11 down, for a useful belt length of m 775, with variable speed ranging between 4,6 and 12,8 metre/ min.

Temperature inside the cell at -33°C, and variable permanence time – depending on the product features – from 90 to 150 minutes, for Kg 1500/h, on the average, of processed food.

Numbers that mark the history and evolution of a company that has been able to stand out thanks to a high-end bakery product, so much as to be in the refrigerated counters of the best Italian supermarkets.

The MPC cutter is manual, and its production capacity is dependent on the operator’s speed and constancy. In contrast, the APC is semi-automatic, enabling continuous operation and achieving a throughput of up to 40 fruits per minute. Both machines can cut fruits into 2 to 12 wedges and adjust slice thickness from 10 to 30 mm, accommodating various customer requirements. The design process for both machines took six months, from initial motion studies to the creation of the first prototype. Additionally, the machines can process pineapple into tidbit triangles, a format highly sought after in global markets.

As for the APC model, the production process begins with loading the fruits onto a conveyor belt, which then transfers the product to a slicing system for cutting into rings. The product is subsequently cut into wedges, rings, or cubes, to meet specific customer requirements.

The APC is fully mechanical, making it easy to use (its components are interchangeable, ideal for maintenance and sanitation), safe, since the cutting dies are encased, and also

easily accessible, thanks to its interlocked safety doors. Moreover, it is highly resistant to wear and tear, built to last.

Popping machine RP-EVO is the press of the latest generation manufactured by Re Pietro Srl to produce both cereal cakes and no-fried snacks, products that following a worldwide trend are having a constantly increase in demand. With this new press, the highly innovative attitude of Re Pietro Srl is setting new standards in cereal cakes and snacks production, by offering one solution that will revolutionise and simplify the manufacturing of these products. In fact, once the mould has been chosen and installed, the popping machine RP-EVO transforms the cereals and/or the micro-pellets into fragrant cakes or crunchy snacks. Its efficiency and flexibility allow to have a wider range of products, using one press only. Popping machine RP-EVO – FOCUS ON

Structure in nickel coated steel, certified food contact material, electric panel in stainless-steel with a side rotating and swivelling touch screen control panel set at eye’s level for easier use.

Equipped with a hydraulic system that produces the high pressure needed for the expansion of the cereals or micropellets turning them into fragrant cakes or crispy snacks. The volumetric dosing is carried out by a pneumatically operated feeding plate. The moulds which shape the popped cakes and snacks are made by hardened steel coated with titanium nitride, to guarantee solidity and a long-lasting life, and to prevent the sticking of the products on the moulds. The moulds, as well as all the parts that get in

touch with the products, comply with the MOCA specification for food processing machines as per Reg. No.1935/2004 CE (MOCA compliance). The upper and lower moulds are heated by cartridge heaters separately controlled by thermoregulators. Each press has got its own PLC (Siemens S7-1200) and 7” control panel. From the HMI it is possible to set up each production phase, to save the recipes and check any malfunctioning thanks to its efficient diagnostic system. The Industrial Pizza Line is one of the latest products designed and manufactured in SIGMA.

Born from twenty years of experience in the production of cold spreaders for pizza in the craft sector, the machine adopts on industrial scale the concept tested for several years and operating in thousands of machines sold all over the world.

It is the machine that most closely reproduces the manual skill of the pizza maker, imitating his unequalled delicacy.

The original protected micro-rolling system, rigorously patented, was born from a successful and original intuition, developed and implemented to obtain a processing of the pasta similar to that of expert hands.

The exceptional nature of the machine consists in preparing the base of the pizza, already with the edge, starting from the dough ball, without altering the dough, exactly as the hands of a skilled pizza chef would do. The use is simple and practical; the shapes are always perfect.

In its industrial configuration, the machine is composed of a belt conveyor of about 5000mm in length and a variable width according to the numbers of rows defined to achieving the hourly quantity to be produced. The pizza processing sequence includes the dough balls loading area, preceded by

an automatic flour duster for the carpet and a further automatic flour duster for the ball, the preparation of a power factor correction (centring device) for the dough balls, a prechasing spreading, a further automatic flour duster for the first disc obtained, a further cold chasing spreading by means of the patented SIGMA system.

A scraper for the conveyor belt, a tray for recovering flour excess and a touch screen panel for storing work cycles and controlling the line complete the machine.

The machine develops on one or more rows in the longitudinal direction for the workings, from 1 up to 4 rows maximum. No dough reworks have to be managed.

The maximum reference cycle times are approximately 800 pizzas/h per row from 100 to 500gr weight and from 20 up to 40cm of diameter. It is on developing a new system to increase the maximum hourly capacity, ready to be sold from the end of 2023.

The structure is completely in AISI 304 steel.

The moulding area is protected by opening doors.

The machine is designed to integrate upstream with the balls feeding system and downstream with the subsequent process of topping.

The long experience of SIGMA in mixing solutions together with a long experience with partners specialized in manufacturing other parts of the pizza line production, as dividers-rounders, proofers and ovens allow SIGMA to support the customers to realize the complete system.
