Each year between the 27th and 30th of June, thousands of thirsty locals and a handful of lucky (wine addicted) tourists climb a mountain in La Rioja, Spain, and throw the sweet red liquid all over each other. You’d be lucky to find a local who could tell you so, and the event is known around these parts as La Batalla del Vino de Haro “The Battle of the Wine – or better known by us guiris as the Wine Fight.

The Wine Fight takes place on the outskirts of Haro, a small wineproducing town that is one of the most important in Spain’s La Rioja region. La Rioja is world famous for producing red wine that can be found all over the world, and the town of Haro is home to 40% of the entire region’s vineyards. Wine is a big deal around here. It makes sense then that every year the locals of Haro celebrate San Pedro with the Haro Wine Festival, a week of drinking and music that is now world famous due to the Wine Fight (Batalla de Vino) that takes place on the 29th of June. The start of the Wine Festival finds itself in the 13th century, when the Haro had to officially mark the property lines between them and their neighbours in Miranda de Ebro. This had to be done every year at Saint Peter’s Day as well as every first Sunday of September, or else Haro would become a part of Miranda de Ebro. 400 years later, the observation broke down and people started throwing wine at each other. That day the tradition started and earned the name “War of Wine”, which in 1965 was changed into Battle of the Wine, or Batalla del Vino en Haro as it’s known in Spanish.

While the mass and feast still takes place and is regarded as a huge part of the town’s history, the main attraction these days is the pouring of wine on each other and into each others mouths. Nowadays everyone is supposed to be clothed in white shirts with a red scarf. Once everyone has arrived, the city banner is unfurled on the highest rock, which shows the beginning of a religious mass. In the morning the Wine Battle happens. All weapons are allowed during this outrageous battle: buckets, wineskin, sprayers and anything else that can be used to hurl, spray or launch thousands of litres of wine all over the crowd.

After battling for some hours, around midday everyone heads back to Plaza de la Paz, where the celebration continues with lots of food, drinks and people. Later in the evening activities take place in the town’s bull ring. The bulls used are actually smaller female heifers known as “vaquillas”, which much less dangerous than male bulls and are used to entertain the general public by chasing people around. The bulls at this event aren’t killed.

The tiny town of Haro is a peaceful place, nestled in amongst the grapevines in the heart of Spanish Basque country. About a six hour drive from Barcelona, Haro is the kind of town which is postcard pretty – old narrow streets lined with brightly coloured buildings, cast iron balconies, locals who give you the side eye but will still type in wifi passwords to your phone for you when you repeatedly screw it up. Surrounded by vineyards, most likely with the entire local economy propped up by wine production, it’s no surprise that red wine runs through the veins of the locals here, and, for one weekend every year, it runs through the streets as well. The annual Haro Wine Festival is a hedonistic celebration of wine, grapes, people and drinking. Obviously those are all things that most normal people can thoroughly get behind, and the resulting fiesta is not a celebration to be missed. 18 | TEQUILA & SPIRITS MAGAZINE

The street party starts on the Saturday night and is when most of the consumption takes place. Everywhere is busy but the place to be is the town square where they set up a stage and language barriers are breached by the worldwide love of classic songs ranging from Metallica, to Destiny’s Child, to the medley from Grease. The best word to describe the vibes would be – pardon the colourful language – really fucking merry; everyone is on the same level and no one is not partying. My advice for surviving the night for as long as the locals do (every Spaniard and his granddad parties until the break of dawn) is to not just rely on pre-gaming; bring some cash to buy drinks from the bars which line the piazza or else take something which is going to keep you happy for as long as possible. It’s worth it to dance with seventy year olds at 4 a.m., and also to still have happy juice pumping through your veins when you head off to the wine fight at the crack of dawn.

The Batalla de Vino is the main attraction of the Haro Wine Festival. It gets going at 7am and it’s worth it to get there early even if you think it’s gonna kill you. Throw back some waters, or even better a few beers, put on your white glad rags (don’t wear anything that you want to keep nice, and don’t worry about looking pretty either, it’s a battle for god’s sake) and head up the hill to the festivities. Buses run for the first part of the road, with seats wisely covered in black rubbish bags, which gives you some idea of just how messy everyone gets. Unfortunately there’s nowhere for buses to turn around up where the wine fight actually takes place, so everyone has to get off the 20 | TEQUILAANDSPIRITS.COM

bus and walk the last kilometre. This is where still being drunk helps quite a lot for keeping up morale/staying pumped instead of just feeling tired and puffed. It’s a gravel road and gets really muddy too, so make sure that you haven’t lost your shoes the night before, you crazy bastards.


The one good thing about the walk is that as you go it’s handy to pick up the various water guns and other bits and pieces that past battlers have scattered on the side of the road. The loot that I was most proud of was a pair of clear goggles like they used to make us wear in the science lab at school. Surprisingly despite this they made me feel kind of badass. Goggles are a good idea because getting red wine in your eyes stings like a bitch. The downside is that you won’t be able to see a thing. Just go with it. I actually had a local man come up to me and tell me to take them off – he said I didn’t need them. I thought he was just helpfully telling me that I looked like a dick (not so badass after all) but really all he wanted was for me to take them off so that I would be at my weakest when he poured an entire bucket of wine over my head. And so the battle begins.

Prepare yourself for absolute carnage, for stickiness, for mud, for tears, for seriously pondering whether all the wine is making you drunk by osmosis. Your skin and hair will be dyed purple and you will smell slightly of vinegar for the next few days. But it’s worth it to feel a part of the madness, the thronging purple crowds. This is an ancient festival which is a fixture in the local people’s lives, and you are their guest. The best thing about the Wine Festival is that it is still mostly made up of locals; but it’s growing every year.

In the United States, Cinco de Mayo has taken on a significance beyond that in Mexico. More popularly celebrated in the United States than Mexico, the date has become associated with the celebration of Mexican-American culture. In Mexico, the commemoration of the battle continues to be mostly ceremonial, such as through military parades or battle reenactments.

The Monaco Grand Prix was part of the preSecond World War European Championship and was included in the first World Championship of Drivers in 1950. It was designated the European Grand Prix two times, 1955 and 1963, when this title was an honorary designation given each year to one Grand Prix race in Europe. Graham Hill was known as “Mr. Monaco” due to his five Monaco wins in the 1960s. Brazil’s Ayrton Senna won the race more times than any other driver, with six victories, winning five races consecutively between 1989 and 1993.

The Monaco Grand Prix (French: Grand Prix de Monaco) is a Formula One motor race held each year on the Circuit de Monaco. Run since 1929, it is widely considered to be one of the most important and prestigious automobile races in the world and, with the Indianapolis 500 and the 24 Hours of Le Mans, forms the Triple Crown of Motorsport. The circuit has been called “an exceptional location of glamour and prestige”. The race is held on a narrow course laid out in the streets of Monaco, with many elevation changes and tight corners as well as a tunnel, making it one of the most demanding tracks in Formula One. In spite of the relatively low average speeds, the Monaco circuit is a dangerous place to race and often involves the intervention of a safety car. Thus, it is the only Grand Prix that does not adhere to the FIA’s mandated 305-kilometre (190-mile) minimum race distance for F1 races. MAY / JUNE 2019 | 35

The race quickly grew in importance after its inception. Because of the high number of races which were being termed ‘Grands Prix’, the AIACR formally recognised the most important race of each of its affiliated national automobile clubs as International Grands Prix, or Grandes Épreuves, and in 1933 Monaco was ranked as such alongside the French, Belgian, Italian, and Spanish Grands Prix. That year’s race was the first Grand Prix in which grid positions were decided, as they are now, by practice time rather than the established method of balloting. The race saw Achille Varzi and Tazio Nuvolari exchange the lead many times before the race being settled in Varzi’s favour on the final lap when Nuvolari’s car caught fire.

Rudolf Caracciola, proving the truth of his nickname, Regenmeister (Rainmaster), went on to win. In 1937, von Brauchitsch duelled Caracciola before coming out on top. It was the last prewar Grand Prix at Monaco, for in 1938, the demand for £500 (about US$2450) in appearance money per top entrant led AIACR to cancel the event, while looming war overtook it in 1939, and the Second World War ended organised racing in Europe until 1945.

The race became a round of the new European Championship in 1936, when stormy weather and a broken oil line led to a series of crashes, eliminating the Mercedes-Benzes of Chiron, Fagioli, and von Brauchitsch, as well as Bernd Rosemeyer’s Typ C for newcomer Auto Union;

The 1949 event was cancelled due to the death of Prince Louis II; it was included in the new Formula One World Drivers’ Championship the following year. The race provided future five-time world champion Juan Manuel Fangio with his first win in a World Championship race, as well as third place for the 51-yearold Louis Chiron, his best result in the World Championship era. However, there was no race in 1951. In 1952, the first of the two years in which the World Drivers’ Championship was run to less powerful Formula Two regulations, the race was run to sports car rules instead, and it did not form part of the World Championship. No races were held in 1953 or 1954. Since 1955, the Monaco Grand Prix has continuously been part of the Formula One World Championship. That year, Maurice Trintignant won in Monte Carlo for the first time and Chiron again scored points and at 40 | TEQUILAANDSPIRITS.COM

56 became the oldest driver to compete in a Formula One Grand Prix. It was not until 1957, when Fangio won again, that the Grand Prix saw a double winner. Between 1954 and 1961 Fangio’s former Mercedes colleague, Stirling Moss, went one better, as did Trintignant, who won the race again in 1958 driving a Cooper. The 1961 race saw Moss fend off three works Ferrari 156s in a year-old privateer Rob Walker Racing Team Lotus 18, to take his third Monaco victory.


The Circuit de Monaco consists of the city streets of Monte Carlo and La Condamine, which includes the famous harbour. It is unique in having been held on the same circuit every time it has been run over such a long period – only the Italian Grand Prix, which has been held at Autodromo Nazionale Monza during every Formula One regulated year except 1980, has a similarly lengthy and close relationship with a single circuit. The race circuit has many elevation changes, tight corners, and a narrow course that makes it one of the most demanding tracks in Formula One racing. As of 2018, two drivers have crashed and ended up in the harbour, the most famous being Alberto Ascari in 1955. Despite the fact that the course has had minor changes several times during its history, it is still considered the ultimate test of driving skills in Formula One, and if it were not already an existing Grand Prix, it would not be permitted to be added to the schedule for safety reasons. Even in 1929, ‘La

Vie Automobile’ magazine offered the opinion that “Any respectable traffic system would have covered the track with <<Danger>> sign posts left, right and centre”. During the Grand Prix weekend, spectators crowd around the Monaco Circuit. There are a number of temporary grandstands built around the circuit, mostly around the harbour area. The rich and famous spectators often arrive on their boats and the yachts through the harbour. Balconies around Monaco become viewing areas for the race as well. Many hotels and residents cash in on the bird’s eye views of the race.

The Monaco Grand Prix is widely considered to be one of the most important and prestigious automobile races in the world alongside the Indianapolis 500 and the 24 Hours of Le Mans. These three races are considered to form a Triple Crown of the three most famous motor races in the world. As of 2018 Graham Hill is the only driver to have won the Triple Crown, by winning all three races. The practice session for Monaco overlaps with that for the Indianapolis 500, and the races themselves sometimes clash. As the two races take place on opposite sides of the Atlantic Ocean and form part of different championships, it is difficult for one driver to compete effectively in both during his career. Juan Pablo Montoya and Fernando Alonso are the only active drivers to have won two of the three events.

In awarding its first Gold medal for motorsport to Prince Rainier III, the Fédération Internationale de l’Automobile (FIA) characterised the Monaco Grand Prix as contributing “an exceptional location of glamour and prestige” to motorsport. The Grand Prix has been run under the patronage of three generations of Monaco’s royal family: Louis II, Rainier III and Albert II, all of whom have taken a close interest in the race. A large part of the principality’s income comes from tourists attracted by the warm climate and the famous casino, but it is also a tax haven and is home to many millionaires, including several Formula One drivers.

ylvaner or Silvaner is a variety of white wine grape grown primarily in Alsace and Germany, where its official name is Grüner Silvaner. While the Alsatian versions have primarily been considered simpler wines, it was recently (2006) included among the varieties that can be used to produce Alsace Grand Cru wine together with the four ‘noble grapes’ of Alsace, although only in one vineyard, Zotzenberg.

amay is a purplecolored grape variety used to make red wines, most notably grown in Beaujolais and in the Loire Valley around Tours. Its full name is Gamay Noir à Jus Blanc. It is a very old cultivar, mentioned as long ago as the 15th century. It has been often cultivated because it makes for abundant production; however, it can produce wines of distinction when planted on acidic soils, which help to soften the grape’s naturally high acidity.

T

empranillo (also known as Ull de Llebre, Cencibel, and Tinta del Pais in Spain, Aragonez or Tinta Roriz in Portugal, and several other synonyms elsewhere) is a black grape variety widely grown to make full-bodied red wines in its native Spain. Its name is the diminutive of the Spanish temprano (“early”), a reference to the fact that it ripens several weeks earlier than most Spanish red grapes. Tempranillo has been grown on the Iberian Peninsula since the time of Phoenician settlements. It is the main grape used in Rioja, and is often referred to as Spain’s noble grape. The grape has been planted throughout the globe in places.

T

rollinger (or Schiava and Vernatsch) is a red German/ Italian wine grape variety that was likely first originally cultivated in the wine regions of South Tyrol and Trentino, but today is almost exclusively cultivated on steep, sunny locations in the Württemberg wine region of Baden-Württemberg. It is primarily known under the synonyms Trollinger in Germany, Vernatsch in South Tyrol and Schiava in other Italian regions. As a table grape the variety is sometimes known as Black Hamburg, which is commonly confused with the similar synonym for Black Muscat—a variety that is actually a cross of Trollinger and Muscat of Alexandria.

erner grape is an aromatic white grape variety. It was bred in 1929 by August Herold by crossing Trollinger (a red variety also known as Schiava grossa or Vernatsch) and Riesling. Herold was working at a plant breeding station in Lauffen in the WĂźrttemberg region of Germany. This station belonged to a state breeding institute headquartered in Weinsberg. It received varietal protection and was released for general cultivation in 1969.

elschriesling is a white wine grape variety, unrelated to the Rhine Riesling, that is grown throughout Central Europe. The descendance of Welschriesling is uncertain. The German name Welschriesling literally means ‘Romanic Riesling’ (cf. Walhaz), and most of the synonyms in Central Europe are variations on ‘Italian Riesling’. Welschriesling may have been brought to Central Europe by the ancient Romans. However, the Croatian name Graševina suggests that the origin might be somewhere to the east of the Balkans. In Austria, the main regions where it is grown are south and south eastern Styria, in Burgenland, and in the Weinviertel region of Lower Austria, where it is also made into sparkling wine. In Rust near Lake Neusiedl, it is used to make Botrytis dessert wines.

chilcher is a wine produced solely in the Austrian region of Western Styria (Weststeiermark), in the districts of Deutschlandsberg and Voitsberg, sharing a border with Slovenia and Carinthia to the south and west. The wine growing area is the smallest in Europe. The Schilcher wine itself is a distinct rosĂŠ made from the indigenous Blauer Wildbacher grape. The colour ranges from a light onion tinge to a deep ruby. The grape was once a wild variety which was said to contain alcohol compounds which, in turn, allegedly would induce wild inebriation, hence its colloquial name Rabiatperle - rabid pearl. The name Schilcher originates from the Middle High German word schillern meaning to radiate with colour.

BLANCO Blanco (white) also known as Silver: Blanco tequila is either un-aged or slightly aged (less than two months) in stainless steel or neutral oak barrels. It’s clear, and according to aficionados, represents “the purest taste of agave.” Tres Generaciones Blanco Tequila Clean, spicy with sweet fruitiness in the background. Exceptionally well balanced, no bite or burn. Smooth, light with a clean tingle. Lingering white pepper, finishing clean and cool.

TEQUILA IS MADE FROM BLUE AGAVE! Real tequila is made from a plant called Blue Agave. Only the Agave Azul Tequilana Weber variety can be used for tequila. Classified by German botanist F. Weber in 1905, Blue Agave is commonly mistaken for a cactus, but it’s really a relative of the lily (amaryllis) family. REPOSADO

“REPOSADO” MEANS “RESTED.”

Reposado (rested): Darker and possessing more depth of flavor, this tequila has been aged at least two months but no more than a year. Centenario Reposado Tequila Elegant, well-rounded, balanced character. Rests for 10 months in French Limousin oak casks. The perfect marriage of oak and agave notes. Subtle hints of vanilla, cinnamon, citrus, pear, and tropical fruitiness. Sweet, smooth, complex.

THE PIÑA IS THE HEART OF THE BLUE AGAVE. The piña (Spanish word for pineapple) is the fruit or, “heart,” of the agave from which sugars are extracted and tequila is made. The word piña is used because once harvested, the heart of the plant resembles a pineapple.

THE BLUE AGAVE PLANT TAKES SIX TO TWELVE YEARS TO MATURE. This is when the piña reaches its peak in sugars and will yield the most tequila. Each plant is only harvested once, and then more agave must be planted to continue the production process. A piña can weigh from 80lbs to 175lbs.

“AÑEJO” MEANS “AGED”

Añejo (aged): The darkest of the three, añejo has been aged at least a year, but no more than three. It has great complexity of flavor, with whiskey-like notes from the aging process, including vanilla and oak. 1800 Añejo Tequila Made from 100% Agave and rested in oak for up to 3 years, this tequila has round finish. The aging gives this spirit aromas and flavors of toasted agave, caramel, ripe fruit, orange rinds with spicy undertones.

LOCATION

The legal definition of tequila! In 1974, tequila received a denomination of origin (AOC), meaning it can only be produced in Mexico—in five regions: Jalisco, Michoacán, Guanajuato, Nayarit, and Tamaulipas (the last four all surround the town of Tequila). Mezcal is similarly protected. The Mexican federal government has established strict requirements governing tequila production.

EXTRA AÑEJO Extra Añejo (very aged): The growing category of extra añejo features tequilas that have been aged at least 4 years in oak barrels.

Herradura Extra Añejo Tequila Seleccion Suprema is made using agave harvested exclusively from the Casa Herradura estate. It’s aged for a minimum of four years in American white oak casks that formerly held Kentucky bourbon, and the resulting liquid has aromas of vanilla, cinnamon, and citrus.

TEQUILA IS NOT MEZCAL! The two spirits are often confused, but they are very different. For example, Tequila can only be made from the Blue Agave, grown in specified regions of Jalisco, while mezcal can be made from many different varieties of agave such as Mano Larga, Espadin, etc. Tequila is always double-distilled, while mezcal is generally distilled once.

TEQUILA IS NOT STRONGER THAN OTHER SPIRITS! At 38% to 40% alcohol by volume (ABV), just like most spirits. Tequila, however, has a unique flavor and is frequently consumed straight as a shot. This intense taste experience may be what leads people to mistakenly think that tequila is “stronger.”

The original name of the tepache comes from the Nahuatl “tepiatli”, which means drink made of corn.

Among the pre-Hispanic indigenous communities, it was customary to prepare this drink with fermented corn and piloncillo (cone-shaped unrefined sugar). At that time, it was fermented with a higher level of alcohol and then used in religious rites, especially among the Mayan culture, because it was considered a sacred drink.

The arrival of the Spaniards brought inculturation and, thus, the preparation of the tepache changed and began to be elaborated with the fermentation of fruits, such as guava, apple and pineapple. In Mexico, the most common fruit used to prepare it is the pineapple.

Tepache is considered a pre-Hispanic and very traditional Mexican drink with a low level of alcohol.

TEPACHE RECIPE Recipe to prepare tepache: 1 pineapple 3 liters of water 1 piloncillo

(cone-shaped unrefined brown sugar) 1 cinnamon stick 5 cloves Directions: 1.- Wash the pineapple and cut the entire pineapple (including the skin) into chunks. 2.- In a pot, boil the water, cinnamon, piloncillo, and cloves. 3.- Once they boil, remove the pot from the heat and add the pieces of pineapple. 4.- Cover the pot with a cloth and let it rest for two days. Note: Do not cover completely, that would prevent the required oxygenation of the fermentation process to take place. You can tell if the drink is fermented once white foam starts to appear. 5.- Strain the tepache and serve it in a glass pitcher with ice cubes. It’s ready!

RECETA DE TEPACHE Cómo preparar el tepache / Receta 1 piña 3 litros de agua 1 cono de piloncillo 1 rajita de canela 5 clavos de olor Preparación: 1.- Lavar la piña y cortarla en trozos pequeños con todo y cascara. 2.- En una olla coloca el agua, la canela y el piloncillo y los clavos y ponlos a hervir. 3.- Una vez que hirvieron retira la holla del fuego y agrega los trozos de piña. 4.- Cubrelos con un trapo y deja reposar por dos días Nota: No lo tapes totalmente, eso impidiría la oxigenación del proceso de fermentación que se requiere. Puedes darte cuenta si la bebida ya está fermentada uan vez que esta comienza a tener un poco de espuma blanca. A más días de fermentación, mayor grado de alcohol, amargura y acidez. 5.- Cuela el tepache y sírvelo en una jarra con hielos. Y listo,

Unfortunately for the traditional farmers in today’s world the dedication to sustaining the ancestral corns and farming is not competitive with GMO farming. So, the traditional heirloom corn, the people, and their culture are dying because they are not economically viable. The ancestral corn is sold locally in the villages for making tortillas and tamales. As people leave the villages to immigrate north looking for jobs, the market for heirloom corn shrinks and the farmers also immigrate north looking for jobs. Doug has developed a great corn whiskey recipe and production system. He buys the heirloom corn from the farmers at a fair price, so that they can earn a good wage and continue to live on their farms.

The only way to grow is to tighten the belt and reinvest as much of the profits as you can into growth and crops. I now have about 50 acres growing with 5 varietals. Every year I harvest and every year I plant, that is the way with maguey. Last year I planted 5000 Barril agave plants (also called madrecuixe, verde, largo of the Karwinski family). It takes about 15 years to mature. At my age, I have no idea if I will live long enough to see the harvest. I also realize that my efforts are just a drop in the bucket in comparison with what is needed for the growing mezcal market. However it is a starting place to get this segment of the market going. This is my story of living and working with the Zapotec peoples in Oaxaca to help build a category that has been hidden in the Sierra Madre del Sur for centuries. It has been forsaken and beaten down by taxes and tequileros over the last century. Now is it’s time to bloom as a category in the global arena. I am a part of this movement. I have exported 14 mezcal brands to 16 countries around the world and my import company Caballeros, Inc. is adding more brands to the portfolio to get even more mezcal into the USA market. I have worked on this project for 20 years. As I write this there are about 100 Zapotec indigenous people in Oaxacan villages who eat every day because of the business transactions that I conduct with them, their fathers, brothers, wives or children. Things are getting a little better now that mezcal is becoming more recognized and appreciated. I hope to continue working and building the brand, category and jobs in Oaxaca.

The pitayas are a fruit of the stenocereus genus of the family cactaceae as well as the pitahaya also known as dragon fruit.

The fruit grows in the pitayo cactus and, thus, the name “pitayas.” La pitaya se da en los pitayos, así se le conoce al cactus de ahí el nombre de “pitayas”. MAY / JUNE 2019 | 87


Until a few years ago, pitayas were found a short distance away from a city or town, especially in places with an arid climate where they grow naturally in the countryside. You needed but a long hook to cut pitayas. No one protested or prohibited you from gathering them, eating them, or taking them home.

During “pitaya time,” people are seen through the streets carrying a basket of green leaves covering the pitayas to keep them fresh while the vendors yell at the top of their lungs: “pitayas, fresh and sweet pitayas.” That’s right, pitayas are a fresh and sweet!

At the festival, you will delight in tasting the delicious and succulent pitayas in different colors, sizes and, of course, price.

The gathering of pitayas is done manually using a long stick with a hook and a basket the size of the pitayas. They are cut and collected without getting damaged. Pitayas have a protective layer covered with long and pointy thorns that need to be removed before handeling.

El cortar las pitayas se hace manualmente, con una enorme palo llamado gancho, y en la punta de este, una canastilla del tamaño de las pitayas, para cortarlas y bajarlas al piso sin que se golpeen, y luego hay que limpiarlas pues una capa de espinas largas y puntiagudas la protegen; hay que quitarlas, para que llegue al mercado limpias y sin espinas, listas para tomarlas en las manos, abrirlas y comerlas sin miramiento alguno en si te manchas las manos o la boca.
