Independent Cambridge The dreaming spires of ancient colleges still grace the historical city centre but elsewhere, an ever growing cluster of cranes compete for prominence on the Cambridge skyline. Ironically, it is precisely the prohibitive cost of opening and running a business in the city which has fueled the now thriving Cambridge Food Park. Offering top quality hand made food from mobile vans and trailers is a trend which originated on the NorthEastern shores of the US with Portland leading the trend for food parks, food tours on bike and walking gourmet tours.
Cambridge residents have welcomed this new trend with open arms, and in addition to the mobile food phenomenon, chefs without a permanent base now pop-up and take temporary residency in established restaurants while new, permanent, independent cafĂŠs and bars are opening.
In May, Cambridge hosts its third annual EatCambridge Festival with a packed weekend at the Corn Exchange, followed by two weeks offering hundreds of fringe events ranging from pop-up dinners to sour dough master classes. This is all part of contemporary Cambridge and long may it last.

Sour Dough The bread we use in the Café has given rise(!) to huge interest from our regulars. We are very unusual in that we make all our own bread by hand, daily. Even our croissants are hand-made in the Café and one or two French guests have declared them “the best I have had outside France”. With the interest in artisan bread growing, our weekend bread making work shops are packed with novice bakers young and old, male and female, eager to learn how to make great bread at home. No bread attracts more interest than sour dough. The virtues of the naturally leavened, slow-risen, chewy, crusty, deeply savoury bread have given it almost mythological status. Not the easiest thing to master: temperamental, prone to changing with humidity, make of flour, ovens and even the mood of the baker, sourdough is nevertheless worth getting to grips with. Starter Dough Day 1 mix 100g water with 60g organic, strong flour Day 2 add another 100g water and 60g flour Day 3 add another 100g water and 60g flour Baking a loaf 175g starter dough (keep the rest) 250g water 420g flour (all white or 320g white and 100g rye or spelt) 7g fine sea salt 1. 2. 3. 4. 5. 6. 7. 8.
Mix then knead the dough for 5-6 minutes Place in the fridge for 12 hours Tip out the dough, shape it into a tight ball Flour a proving basket or shallow bowl and tip the dough in the basket, tucked side up Cover loosely with clingfilm and prove in a warm kitchen for 3 hours Set the oven to 210C Gently tip out the bread onto a floured baking sheet. The “tucked” side will now face down Score and bake for 45 minutes.
