THE PRESIDENT’S LETTER It is just over a year now since the COVID-19 pandemic forced the sudden closure of the Club on March 14, 2020, just as the Arbutus 2020 construction project was nearing an end. Although the full closure only lasted two months, Management and the Board had to grapple with ensuring that the Club would be able to reopen safely and quickly with new protocols in place and continue to be financially sound under very different operating conditions.
However, even though we have excellent Management and Staff who run things on our behalf, it is important to keep in mind that The Arbutus Club is a Member-owned private club. If it is going to continue to operate and evolve in ways that meet the needs of most Members most of the time, it is key that we continue to have Members willing to volunteer to serve on Committees or on the Board to provide guidance.
Throughout this COVID year Management and Staff have responded carefully yet swiftly to ever-changing Public Health Orders and guidelines and have adapted the Club’s offerings so that as many facilities and programs as possible have been available to Members. Recognizing that COVID has added stress to our lives, many of the offerings have been focused on health and wellness. We are very fortunate to have such a dedicated and creative team. Some of the more popular and innovative adaptations to COVID times at the Club have included:
Hats off to the Board of Directors and all the Member volunteers on Committees who continued their meetings and made excellent progress on their mandates through this crazy year without being able to gather in person. This time last year most of us had never heard of Zoom or other online meeting platforms. By now, most of us have come to love Zoom (and dread it) as it has become an essential tool that has invaded all aspects of our lives. One of the best parts of volunteering on Club Committees is having the opportunity to meet and work with other Members who you may not have previously known well. This took more effort meeting by Zoom than in person, but it was amazing to see camaraderie develop on Committees even via online meetings. The Arbutus Club at Home provided online suggestions for games, crafts, teaching tips, and fitness challenges.

Classes in dance, fitness, and cyclefit flipped back and forth between live and online formats as Public Health Orders changed.

25 Year Club Members could travel the world from home in monthly Zoom workshops.
•
Family bookings in the Gymnastics and Childminding areas allowed families to enjoy the Club in a safe way.
•
Our online Halloween costume contest for families resulted in some very cute and hilarious photos posted online.
•
On Winter Pond with lights and decorations was redesigned to provide safe winter fun for household groups.
•
Monthly Make and Take craft sessions in the Shaughnessy (Youth) Room have each participant masked and at an individual table making creations such as snow globes or pom-pom animals.
•
First rate hockey development classes became an instant hit when the Minor Hockey season was cancelled.
•
A virtual dance recital comprised of professional videos of 165 children will replace the usual live show.
The Club’s Annual General Meeting of Members is coming up on Thursday, April 22, 2021 at 7:00 pm (via Zoom for the second year in a row). You will receive an official notice that will explain how to participate. I hope you’ll attend. Another great opportunity for Members to provide feedback about your level of satisfaction with the Club will be to participate in the Club’s first annual survey of Members which will take place in June. The survey will be deployed online and will provide helpful feedback to Management and the Board. The survey results will be reviewed in aggregate and all individual responses will remain completely confidential. Watch for an email that will explain how to participate and provide a link to the online survey. Finally, as this is my last President’s Letter in The Bark, I would like to thank Members, the Board of Directors, Committee volunteers, Management, and Staff for the civility, patience, and compassion you have shown through the past year. This is truly an outstanding community. I would also like to thank you for the opportunity to serve the Club on the Board for the past 8 years. It has been an honour. Sincerely,

North Gymnasium Renovation
fresh new look The renovation of the North Gym is complete, adding refinished floors, acoustic panelling, more storage, and an overall modern feel
T
he second stage of the facility improvement project began in mid-December 2020 and was fully completed in February 2021. The North Gymnasium is now more cohesive with the rest of the Club and the Arbutus 2020 Project, sporting a neutral colour palette and wood panelling that echos the decor of the South Gym. To help reduce noise, sound absorbing acoustic wall and ceiling panels have been added, as well as decorative millwork feature panels. The wood panels also create a softer element in the space connecting the South Gym and Exterior Fence walkway into the Club.

When entering the gym, you will also notice gleaming refinished flooring as well as glass panels and doors between the Gymnasium and Squash Lounge creating a more open concept space and increased light flow.

To make better use of the North Gymnasium we added six powered portable basketball hoops, as well as newly organized sports storage. In addition, paneling has been installed to create a larger viewing area. We are incredibly proud of the enhancements and are excited for the North Gymnasium to be a centre for sport and activity for years to come. ♦

The past year has tested our resiliency and perseverence. From a temporary Club closure to adapting to health and safety protocols, one thing that has remained is our truly indiminishable community spirit. Take a look back at the journey we have been on together. We hope for a near future where we can all be together once again.
T
he past year has been an unprecendented time. Despite the pandemic, The Arbutus Club staff has and continues to work tirelessly to create programs that are both safe and enjoyable for members. With the ever changing nature of the pandemic, adapting is a top priority for all programs at the Club. Although things looked different this year, we are so glad that we have been able to connect our community in creative ways either at the Club or virtually from home. Some programs that we adapted this year include: Zoom fitness classes, The Arbutus Club at Home YouTube videos, digital display menus for our Food & Beverage outlets, online music lessons, socially distanced racquet sports, socially distanced swimming lessons, online Recreation Services bookings and the Chef To Go touchless, curbside pick-up meal program. We take a look back at how we adapted to health and safety restrictions and the amazing milestones we were able to accomplish despite the virus. Thank you to our amazing membership for your continued support, incredible perseverance, participation, and community spirit.

Members of Excellence
medical marvel Dr Julio Montaner reflects on his world renowned work in the treatment and prevention of HIV/AIDS, a multitude of accolades, and the sense of community at the Club
O
ur Club is a varied, but close-knit community that encompasses a multitude of cultures, faiths, backgrounds, professions, perspectives, and lived experiences. Our diverse membership is one of our most distinguishing characteristics, with many being admirable ambassadors for our Club within our walls and beyond. The Arbutus Club seeks to honour the individuals that have shown significant achievement as community leaders and created positive change with our Members of Excellence quarterly feature. In the inaugural article we speak with physician, researcher, and decades-long member of The Arbutus Club, Doctor Julio Montaner. As the Director of the BC Centre for Excellence in HIV/AIDS and the Chair in AIDS Research & a Killam Professor of Medicine at UBC, he is a leader in the field of HIV/AIDS and his contributions have been recognized globally. Montaner's innate draw to creating a positive social impact has driven his successful career and personal life. Most importantly, his wife Dorothée of 37 years and their 4 children have supported him every step of the way. We are humbled to have such an amazing changemaker among us.
Growing up in Argentina, Dr Montaner was inspired by his father’s career as a Pulmonary Specialist. He was always drawn to the social aspects of health and the ability to positively influence peoples lives through medicine. Beginning his career in Respiratory Medicine, Montaner met Dr James Hogg, then Director of The Pulmonary Research Lab at St. Paul’s Hospital, while at a conference. Dr Hogg took a young Montaner under his wing and encouraged him to revalidate his credentials in Canada. He began his residency training again at St. Paul’s Hospital in July of 1981. “Being the youngest member of the respiratory team, I was asked to spend a lot of time in the Emergency Room looking after people dealing with respiratory complications of AIDS," says Dr Montaner. “We were seeing lots of people with what turned out to be HIV, but at the time we didn’t know.” The rise of the epidemic redirected the budding doctor’s career. “I dropped my respiratory ambitions and focused on HIV, which was an acute and very significant challenge at that time.”

Members of Excellence Since the early 1980s, Dr Montaner has authored over 800 scientific publications and created internationally recognized HIV management strategies. He is credited as playing a key role in the development of highly active antiretroviral therapy (HAART), a revolutionary breakthrough that allowed patients with HIV to maintain function of their immune system, minimize opportunistic infections, limit transmission of the virus, and reduce the burden of the disease on the patient.
We changed what was once a devastating life sentence to a chronic but manageable condition. “We changed what was a devastating life sentence to a chronic, but manageable condition," says Dr Montaner as he humbly reflects on his noble impact on HIV/AIDS. Dr Montaner's remarkable dedication to HIV/AIDS is reflected in the many lives he has effectively saved and the multitude of honours he has earned. He became a member of the Order of British Columbia and an officer of the Order of Canada in 2010 and 2014, respectively. Dr Montaner explains, “My greatest honour is that we have been able to implement our innovations in British Columbia and abroad for the benefit of those most affected.” As an Argentinian born Canadian, Dr Montaner expressed gratitude to both Canada and BC for the support he has received. “I couldn’t have done anything without the support of my province and country. For that I am extremely grateful.” Recently, Dr Montaner was selected by Canada Post to be a part of the Medical Groundbreakers stamp series which honours his wide-ranging contributions to the field of HIV/ AIDS. This award came as an enormous surprise to Montaner who explained, “It was a very touching recognition. Some of my friends joke that this thing doesn’t happen until after you have died," he continued, adding his particular brand of humour and modesty to the conversation. With a long list of accolades, Dr Montaner proudly considers his greatest accomplishment the Treatment as Prevention® (TasP) construct. “It essentially means, if everyone with HIV in a specific jurisdiction is treated, HIV infection will not progress to AIDS and premature death will be avoided ; even most critical, the same treatment will fully prevent HIV transmission”. His concept is embraced globally by the United Nations and the World Health Organization as the new global strategy to end the HIV pandemic by 2030. After achieving many of his ambitions on a global scale, Dr Montaner retreated to a more local scope taking an active role in the development of harm reduction policies and safe
supply resources in Vancouver’s Downtown Eastside. The local proximity to his work has allowed him to visit the Club more regularly. The Montaner family joined The Arbutus Club in September 1993. Dr Montaner confesses he hadn’t reaped the same rewards as his family members following their initial acceptance into the Club. “My wife and kids used the benefits of the Club since, in those days, I was a little busy," he says with a genial chuckle. However, the Club has since been an important social and recreational outlet for the entire family. He reflected on his experience saying, “We are very close to several families who are also members. We have spent a lot of time visiting with them at the Club, that is really what it’s all about right?” highlighting the proud sense of community the Club affords its members. Dr Montaner’s exceptional career has been aligned with his conscientious commitment to create a positive social impact. When asked to impart some wisdom on the youth at the Club as they embark on their journey becoming the next generation of change makers, he said “If I have learned one thing in my life, it’s that the key to success in my work has been remaining faithful to the fundamentals of my vocation, while remaining open to new opportunities.” Montaner continues, “In the early stages of careers, academic or otherwise, it is common to be fixated on an outcome as opposed to the principles. If I had been narrowly focused on my respiratory medicine vocation, I would have found it difficult to ultimately meet my goals.”
We need to do more – not just for ourselves – but for everybody. Doctor Julio Montaner ends the conversation on a poignant, albeit hopeful, note. “Similar to the HIV/AIDS epidemic, it is our responsibility to end COVID-19," Dr Montaner pronounces. He uses an anecdote centring around his father’s work in Tuberculosis (TB) research to drive the message home. “He always told me that in 1956, the year I was born, they had the fundamentals to cure TB, but life is more complicated than that.” To this day, TB remains a public health threat in many areas of the globe. Though, this somber comparison fails to make Dr Montaner downcast. “We need to do more not just for ourselves but for everybody.” Thoroughly humble, conscientious, and brilliant, Montaner’s determination and passion to positively impact the lives of others is unparalleled. His contributions to the field of HIV/ AIDS have transformed the way we manage the widespread occurrence of an infectious disease. We thank him for sharing his marvelous talents and being a true embodiment of a Member of Excellence.♦

Geoff is a master athlete who began his fitness journey focused on road cycling. Since 2017, he has expanded his athletic horizons and now competes around the globe in triathlons. Well, not just any triathlon…The Ironman! Geoff’s commitment to personal improvement and consistency of practice is inspiring.
and competed at Ironman Canada in Whistler, followed by the Ironman World Championship in Kona the same year. In 2018, with race partner Jamie Armstrong, we won the Masters Category (over 40) at the 7-day, Tour TransAlps. In 2019, I competed at the Ironman 70.3 World Championship in Nice, France.
When did you first start participating in Endurance Sports/Triathlons?
What is your favorite part of participating in triathlons?
Geoff: I began participating in endurance sports 12 years ago. My initial focus was road cycling. I completed 7, 7-day road bike races in Europe between 2010 and 2018. In 2017, I diversified into triathlon
I had to learn to swim as an adult to compete in triathlons. It has been very humbling and I enjoy the challenge of learning something new. Despite swimming being my weakest discipline, I love the water and the balance it provides to the other activities.
Aquatics
How have you adapted to changes in your sport throughout the pandemic? For me personally, the biggest shift throughout the pandemic has been to set goals that didn’t require participating in organized events. Swimming has been a great activity as there’s so much room for improvement.
What aspect has inspired you to stay committed throughout this unprecedented year? I believe regular training provides a great structure to maintain health, fitness and mental wellbeing. We also had our first child this spring so, I am looking 20 years into the future and want to ensure I still have the physical ability to do the activities I love today, with my son when I’m in my 60s. The thought of doing a bike race in Europe or a triathlon in Hawaii with junior is very motivating.
What skill have you mastered that assists you in other areas of your life? Well, I’ve certainly not mastered anything in the pool. In many ways, that’s what assists me outside of the pool. It’s good to continue to learn and challenge the body to improve, even as a master athlete. It’s a great metaphor for challenges outside of sport. At any age, continue to work on what you’re not good at.
How is your training made unique at The Arbutus Club? There is a great group of master athletes at The Arbutus Club. Each member has their own goals and life circumstances, but there is comradery when you show up at the pool before 6:00am and see others also working hard to fit in training for their big goals between family and professional demands.
Are there any teammates, partners, opponents, coaches, staff, or trainers at The Arbutus Club that have positively enhanced your experience? How so? All the swimmers who are regularly in the pool early in the morning are very motivating. It’s always hard to get out of bed, get to the Club and into the cold water well before it’s light out. Seeing others, at all abilities and stages of life, doing this every week creates accountability. I don’t want to be the one who missed the morning swim.
In your opinion, what is the key to perseverance in sports? It’s all about consistency. Setting a weekly rhythm and sticking to it. Make missing a workout, or failing to complete a workout harder than seeing it through. Even when it’s not your best day, in training, or at an event, do something and finish. I’ve drawn more confidence from getting
through my worst performances than from celebrating my best days.
What is your 2021 goal? I’ve yet to run a marathon outside of an Ironman. Fingers crossed that some of the major marathons go ahead this fall. Swimming is a great recovery and helps balance out the pounding of run training.
If you could describe playing/ participating in your sport with one word what would it be? Participating in swimming is humbling. ♦

New Pilates Equipment Pilates complements many forms of exercise and treatment modalities such as Swimming, Weight Training, Tennis and Physiotherapy. The Arbutus Club Pilates Studio is utilized to enhance member wellbeing and peak curiosity while gaining knowledge about the broad spectrum of health and wellness. Developed by Joseph Pilates and originally called Contrology, Pilates focuses on an integrated approach to physical and mental health through a series of corrective exercises on an apparatus (commonly known as a reformer).

Since our last equipment upgrade five years ago, Peak Pilates reformer equipment has served participants well. Hundreds of members found strength, elongation, and confidence through each Pilates session completed. Now it is time for another apparatus upgrade to continue to best serve our members.

the benefits of running Running is a wonderful way to stay active, get stronger, and experience our beloved city, beautiful Vancouver Especially during the last year, many people have been turning to running to maintain their fitness goals. With any sport there is always a risk of injury, and running is no exception. With smart training and supplemental exercises, it can be a safe activity for many. Here are a few tips and tricks to keep you healthy and injury free.
SLOW & STEADY The most common way that runners injure themselves is by doing too much, too soon. Just like any other exercise, starting gradually to build your body’s strength and tolerance is important. For new runners, start with a walk-run program that changes the intensity throughout the workout. For experienced runners, a common guideline is to increase mileage by 10% per week, and ensure to have ‘down weeks’ allowing recovery time. therunningclinic.com is a great resource that has training programs for a variety of distances and experience levels.
CROSS TRAINING & STRETCHING Running is a very linear sport; strength is built in a forward/backward motion, but lacks sideways and dynamic motions. Strength training is a great way to keep other muscle groups strong; think squats, deadlifts, planks, and everything in between. A regular stretching program is also important to maintain the length of muscles being heavily used while running. If you aren’t confident with some movements, working with a Personal Trainer or Physiotherapist to help design a program can be very helpful.

ZINC is crucial for the development and function of immune system cells. Zinc can be found in oysters, poultry, beans (black beans and chickpeas), pine nuts, peanuts, and whole grains.

Typically, an individual knows inflammation as these four characteristics: heat, redness, swelling and pain. However, inflammation is a protective mechanism that isn’t always helpful for the body. Although inflammation serves to protect, it can damage healthy cells and tissues in the process. Acute inflammation is a very important ability our body has to protect itself. However, chronic inflammation can manifest into diseases such as: 1. Inflammatory airways: Asthma 2. Inflammatory bowel disease: Colitis and Crohn's Disease 3. Inflammatory joint disease: Arthritis
So, what can you do? CL E AN UP YO U R D IE T Invest in yourself Buy organic and local when possible. Organic foods are grown without hormone disrupting pesticides and herbicides. Indulge in anti-inflammatory foods like fatty fish, nuts, avocados, and olive oil. D E - S T R E S S Make time for yourself Although this past year has been stressful, taking time for yourself to decompress is important. Stress causes oxidative damage within the body which can lead to digestive issues, headaches, fatigue, etc. We recommend finding 5-10 minutes a day away from your phone, and the news, to decompress. Think about the aspects of your life that you feel grateful for. The daily practice of gratitude can lead to an increasingly stress free life. SL E E P Improve your sleep Getting 7-8 hrs of sleep a night not only reduces inflammation but allows the body to pause and detoxify. To improve sleep, try to place your phone far away from your bed and try to limit screen time prior to sleep. An outdoor walk, warm bath or shower can also help calm the mind and body for sleep. AT HOME EXERCISES The new normal this year, exercising at home - it can be as fun, efficient and effective as working out in the gym using items around the house To maximize your workout, simply make sure you have a towel, a bottle with a handle, books, and a couch or chair with a cushion nearby. Transform your living room into a gym using simple equipment! CORE WITH SLIDERS 1 On a wood or tiled floor, place a towel under your hands or feet to use as a slider. 2 Complete abdominal exercises such as: mountain climbers, knee tucks, and pikes using the slider for an added challenge. Paper plates or thick socks are also a great alternative.

KETTLEBELL SWINGS 1 Using a detergent, orange juice, or any bottle with a handle 2 you can perform kettlebell swings. Always make sure to squeeze your glutes 3 at the top of each movement and move slowly 4 with control for best results.

WEIGHTED BACKPACK 1 Simply throw a few soup cans or books into a backpack and 2 you can add weight to any exercise. Start slowly by taking a walk around the neighbourhood or even a hike on local trails with your weighted backpack. You can also execute squats 3, 4 or lunges 5, 6 with the backpack and add weight as you see fit. HELPFUL TIP: Weigh the full backpack on your scale before excercising and slowly increase the content weight as you build strength.
BOSU STABILITY Use a couch cushion like a Bosu. A couch cushion can serve a similar purpose to a Bosu when standing on it, as it adds an element of instability. Always engage your core to find balance. 1 Your front foot can be on the cushion and back leg on the ground. 2 Try a forward step with a high knee. This will challenge balance and stability.

DOORWAY BURPEES Burpees are an effective full body workout. Proper burpees are only complete when you jump at the top of the movement. 1 From a high plank position bring feet towards hands 2 (squat position), stand up, 3 bend knees and jump with arms going towards the ceiling. 4 Add extra oomph to a standard burpee by jumping to tap the top of a doorframe or ceiling between each repetition. HELPFUL TIP: Smiling makes burpees easier!
ELEVATED HIP RAISES 1 To start, lay on your back on the floor and rest your heels on the edge of your couch or chair. Engage core to remove any sway in the lower back. 2 Squeeze through your glutes and raise your hips, creating a straight line from shoulders to knees. Lower back to starting position. Repeat.

WEIGHTED LATERAL LUNGES Fill a duffle bag with a bunch of clothes and use it like a sandbag. Try the sandbag lateral rotational lunge: 1 Start the exercise in a lateral lunge position: feet wider than hip distance apart, 1 leg bent to a right angle, toes face forward. Hold the sandbag on the same side as your bent leg. 2 Grabbing the handles, swing the bag from the start position all the way across your body to end up above your opposite shoulder (diagonal line). 3 Using your core and arm control, bring the bag back down to the starting position and repeat. ♦ HELPFUL TIP: This exercise gains momentum fast so moving slowly with control is key.

ew to The Arbutus Club Fitness Centre, the InBody Body Composition testing device is a new scale with the ability to measure body composition and is available to all members.
What is the measurement of body composition? Body composition analysis is a method of examining core components, such as fat, protein, minerals, and water in the body. This scale measures your weight more accurately and provides a better glimpse into your overall health than traditional methods (i.e. scale, waist circumference and BMI). Body composition analysis can accurately show changes in fat mass, muscle mass, water, and body fat percentage. With New Year’s resolutions behind you, your fitness goals may require a renewed focus and vigour. Strategies such as accurate body composition data provide immediate feedback and help ensure success. Monitoring progress is vital for establishing a baseline, setting appropriate and attainable goals, and tracking changes over time.

teen health transformation Lucy Jagger is an ambitious teenager balancing the demands of school, work, physical activity and social interactions along with the added challenge of a global pandemic Lucy initially reached out to the Fitness Centre to have a personal trainer design a program for her to do in the gym. “I started training with the Club's Personal Trainer, Leah Ruppel in September. I was already spending time in the gym and knew the weight room orientation but still, wasn’t sure how to use my time efficiently to get the best results.” says Lucy. After doing an initial assessment and a lifestyle checklist, Leah determined that Lucy’s fitness routine needed to be fun and compliment her busy schedule so it did not feel like a chore. We designed a program that aligned with Lucy’s abilities and health goals. We set out a plan to meet once per week to get the best results from her personalized program.
When life is busy, it is common to let healthy habits slip. Resorting to meals that are not nutritionally dense is very common. To manage Lucy’s energy levels throughout the day, we implemented some healthier meal options at scheduled times of the day to maximize her productivity and exercise performance. “Fitness and food planning have become not only routine in my life, but also something I enjoy and look forward to,” explained Lucy. Working closely with a personal trainer on a consistent basis is one of the best ways to meet fitness goals because there is a science to training. It is not what you are doing at the gym, but how you are doing it.
Lucy has been such a joy to coach. She follows her program, incorporates the new routines and nutritional habits and as a result we witness how consistency shows up in her assessment numbers. By week eight, Lucy had already gained lean body mass and exceeded her own expectations. It is remarkable how much strength and stamina she gained by working smarter and not harder. ♦

squash for children There is lots of new energy in squash thanks to this group of young squashers. This is the youngest group of squash players in The Arbutus Club program and they are hitting the ball like champs. Watch out adult squash players, this group is getting better fast and they like to win.

He has been playing competitive squash for over 13 years and is excited to join the team. Has over six years of coaching experience and has worked with many of the top junior players in BC. Matthew is great at working with players of all levels and has learned from some of the best squash coaches in the world.
bubble buds One of the silver linings of the COVID-19 pandemic is that we are seeing lots of same-household family members enjoying playing squash together. Jane Walwyn has been working hard in her junior programs and is now giving her mom, Michelle Harrison, a tough match on court. Jane and Michelle are great members of the squash community and we are lucky to have them at the Club.

s we reflect on the winter session, the biggest stand out for us has been the number of new faces and families we have seen out on court together. We reached out to some of these members and asked them to share how playing tennis at the club has positively impacted their lives during the pandemic. We hope you enjoy reading and can relate to their experiences.

The pandemic left me yearning for ways to stay both physically and socially active while adhering to social distancing guidelines. As a newer member of the Club, I thought it was the perfect time to start playing tennis. I first joined a tennis group chat with some wonderful members and then began playing weekly games. I quickly fell in love with the sport, however I realized I needed to improve my skills and technique to get better. I signed up for weekly drills classes at the Club. Here I met a friend turned doubles partner that inspired me to play in The Arbutus Club Doubles Tournament; it was such a fun experience! I am so thankful for Tennis at The Arbutus Club as it has allowed me to get a great workout while socializing safely at a distance. – Marina A. Katusa

Thanks to the amazing tennis community at the Club, I’ve been able to improve my singles play and fitness while fine tuning my groundstrokes. When little league season was delayed, my boys developed a new passion for tennis, pickleball and badminton. As a result, we’ve had many spirited pickleball matches as a family since then. This Mother’s Day it’s your turn to show Mom how appreciated she really is. Chef Michael has created a mouthwatering Asparagus, Ham and Boursin Cheese Frittata paired with Avocado Toast for your family to make and enjoy with Mom. Fresh, healthy ingredients and easy to follow preparation make this recipe delicious and rewarding. While mom relaxes, follow the steps below to create a restaurant worthy ‘at home’ brunch that the whole family will love.

Asparagus, Ham & Boursin Cheese Frittata and Avocado Toast Recipe Avocado Toast
Frittata
•
•
10 large eggs
•
3 tbsp half & half cream
•
½ cup asparagus, tough end snapped off cut on bias ½ inch thick
•
2 tbsp diced red onion
•
2 tsp olive oil
•
½ cup deli cooked ham, cut into ½ inch cubes
•
Salt
•
Pepper
•
¾ cup Boursin herb cheese, crumbled
•
Toast of your choice (we recommend a baguette, sourdough or multigrain loaf) 2 ripe avocados, halved, pitted and diced
•
2 tbsp extra virgin olive oil
•
1 tsp lemon zest
•
Salt
•
Pepper
AVOCADO TOAST TOPPING: Whisk olive oil, lemon juice and zest, ¼ tsp salt, ⅛ tsp pepper together in a small bowl. Add chopped avocado and mash into dressing with a fork.
FRITTATA:
Add scrambled egg mixture and cook. Using a rubber spatula, stir for approximately 30 seconds and scrape the bottom of the pan until large curds form and the spatula leaves a trail through the eggs but they are still very wet. Remove from heat.
Adjust the oven rack to the middle position and preheat to 350 degrees Fahrenheit. Crack eggs in a medium sized bowl. Whisk together with cream and salt until well combined.
Scatter the Boursin cheese over the eggs. Transfer pan to oven and bake until frittata is slightly puffy and surface bounces back when slightly pressed, 8-10 minutes.
Using a 10 inch nonstick (oven safe) frying pan, heat oil over medium-high heat until simmering. Add asparagus, cook, stirring frequently until it is crisp-tender about 3 minutes. Add the red onion, ham, ¼ tsp of salt and ⅛ tsp pepper.
Using a rubber spatula, loosen frittata from skillet and transfer to cutting board. Let stand for 5 minutes before slicing and serving. While the frittata is resting, place the bread slices into the toaster.
Toast the bread until golden on both sides. Spread the mashed avocado topping evenly over the top. Sprinkle with salt and serve with sliced frittata.

SUCCESS OF CHEF TO GO Chef To Go has created a convenient way for families at the Club to eat a delicious, healthy, and well balanced meal any night of the week Don Robinson began his role as Director of Food and Beverage at the Club in September 2020 in the midst of the COVID-19 pandemic. He and Chef Michael brainstormed how to relieve dinner time stress from members' households. Due to the nature of the pandemic, combined with the business of everyday life, ready to eat meals seemed like the perfect fit for the Club this year. With many families juggling busy schedules between work, kids activities, school, and social time it can be difficult to get dinner on the table. In the restaurant industry prepared foods are often referred to as HMR or Home Meal Replacement. Chef To Go has taken ‘HMR’ to a whole new level! Chef To Go has created a convenient way for families at the Club to eat a delicious, healthy, and well balanced meal any night of the week. Touchless, day-of, pick-up between 4:30pm - 7:00pm from the Chef To Go portal on P1 makes picking up your online orders safe and hassle free. The seamless Chef To Go system is the result of collaboration between many teams at the Club including: Food & Beverage, the kitchen, Communications, and IT. Chef To Go has been a huge success and will continue making dinner time simple, enjoyable, and delicious long after the pandemic.

Project RE-BOUNCE A multi-club initiative and part of Metro Vancouver’s Waste-To-Energy program helps keep used, non-recycleable sports equipment out of our landfills. Project Re-Bounce approved items are collected by Urban Impact and delivered to the Burnaby Waste-toEnergy facility. The renewable fuel made through the program produces electricity that is purchased and used by BC Hydro. 100% of the plastic from tennis ball cans and badminton shuttles is consumed during the process leaving no residual microplastics behind.
Presently, The Arbutus Club ammonia plant runs on approximately 300lbs of Ammonia compared to 1300lbs -1500lbs in previous years. This upgrade has made the Club and surrounding neighborhood safer and more energy and earth friendly. New chillers and brine pumps have increased efficiency and saved energy by pulling heat from ice surfaces quicker using shorter compressor run times.

The Bistro SUSTAINABILITY TIPS PAPER TAKE-OUT BAGS: Can be reused as shopping or gift bags! When tattered they work as great liners for compost containers. HOT BEVERAGES: We encourage members to use ceramic mugs, if possible, reducing our waste of to go cups.
DON'T FORGET: our disposable utensils are compostable, including straws. However, we encourage members to use metal utensils vs. disposable whenever possible.

cutlery sets in compostable bamboo fibre napkins.
TAKEOUT CONTAINERS: All of the take out containers are fully recyclable (please use the plastics bin).
EVEN GREENER Club Grounds
SHOP LOCAL: We source local suppliers and continually support the Vancouver community. Currently, we have Hoochy Booch Kombucha, Max Frut fruit popsicles and Good Stuff smoothies.
We are transplanting certain areas of the Club grounds with more drought resistant and pollinator friendly plants. In an effort to be even more environmentally friendly, we don't use pesticides for weeds or pests. Instead, our gardener practices hand and flame weeding. Furthermore, we've built a compost and utilize it to nurture our garden bed soils. This means, we purchase less new soil and produce much less garden waste overall.
Rooftop HERB GARDEN The idea of creating an herb garden has been in the works for some time. It's exciting to see this idea come to fruition this spring! We are so fortunate to have the rooftop garden at the Club as it is the ideal place for growing herbs. The garden is situated in full sun, has built in irrigation and is easily accessible to the kitchen. Perennials like bay leaf, rosemary, and sage were planted in March, while

annuals like basil and shisho will be planted later in the spring as the weather gets warmer. Chef Michael decided on the initial herbs to be planted based on herbs that are frequently used in The Fireside, Bistro and Chef To Go recipes. Moving forward, Chef and Gardener, Allison Luke, will work collaboratively to add to the edible garden and create delicious garden to table meal experiences. ♦

arah Logan is passing the pruners back to Allison Luke, who has returned from maternity leave. As we bid adieu to Sarah, we wish to thank her for her incredible work on the gardens this past year at the Club. “My experience at the Club was fantastic and enlightening. Such a great group of people to work with, and the members are so grateful for the work that is accomplished. Putting together full annual displays was challenging, but so rewarding. From here I am moving on to Figaros Garden Centre in East Vancouver, working on small, residential landscape designs and installations. My favourite part about my work is being outside, giving back to the earth, and helping to provide healthy ecosystems for our pollinators.” As Sarah moves onto her new job, Allison will be working in the gardens, “I look forward to things getting back to normal post COVID. Our first child was born in March last year, so 2020 was full of changes and very memorable. Currently, I'm installing the rooftop herb garden and upgrading other areas. I get to do everything from pruning shrubs, creating the pots, and caring for the lawns and indoor plants. The plants and the people are my favourite things about my job. Wherever I go, I run into a member or coworker and those interactions always make my day!” ♦

Rooftop Beds GRACEFUL BEAUTY ALLIUMS These bloom in late spring to early summer and will have the Rooftop looking like a field of flowers in no time! The tree circles running down Arbutus Street will have an assortment of dwarf daffodils as well as white, orange and yellow emperor tulips; ready to brighten everyone's day as they walk down the street. ♦

MUSIC THROUGH THE AGES
The Club's music program offers children engaging fun and effective instruction with variety of instruments Studying music is beneficial for children as it utilizes all four learning styles: tactile, auditory, kinesthetic, and reading/writing. The Yap family has been actively learning the piano from instructor Djina Stojkov for many years. Christopher, Catherine and David all started playing piano at the age of five. They began studying the Suzuki piano method along with learning to play by ear for a number of years. After learning to read music, the trio advanced from playing by ear to the Royal Conservatory of Music (RCM) repertoire level 3. Currently, David and Catherine are moving to the RCM repertoire level 8 and Christopher has graduated. The Arbutus Club offers piano, guitar, and voice lessons. From the very beginning all three children have attended piano lessons every Tuesday at the Club. Practising diligently and attending their lessons with a smile,
they listen to each other play, absorbing the tunes and learning from one another. It really is a family affair. Playing the piano is rewarding as it takes practice, concentration, and repetition to master. Through the years, Christopher, Catherine, and David have performed as soloists, duets and trios while playing one piece of classical music and one popular song.

Music instructor Djina Stojkov says, “I am very proud to recognize the Yap family and their commitment to The Arbutus Club Music Program. They have and continue to demonstrate determination, curiosity, and engagement towards learning and playing the piano”. The determination, encouragement, and involvement Christopher, David and Catherine demonstrate in each other's achievement is inspiring and we look forward to their next, musical performance. ♦

Children's Centre
big line, little line
In the Children’s Centre Preschool Program, the team uses fun and interactive ways to teach language arts skills. A favourite learning game is a simple creation that we like to call “Wood Pieces”
Learning letters is an important aspect to preschooler’s development. Names of the alphabet, phonetic sounds, letter formations, printing, cursive, creative writing...the list can be daunting to young children, but it does not have to be that way. Our Children’s Centre Preschool Program uses a simple creation called “Wood Pieces” to teach preschoolers language art skills. There are four fundamental pieces in this set including: Big Line, Little Line, Big Curve and Little Curve. These pieces can form every upper-case letter in the alphabet and most lower-case letters, patterns, shapes, and even the basic shape of the body.
The children are first introduced to the name of the pieces through song. Once they recognize the name of each piece, we teach the correct formation of the letters. We begin with easy letters like ‘C’ which is just a ‘Big Curve’ and move onto harder ones like ‘S’. Once they master the concept, we complete the alphabet with the hardest letters to make such as ‘R’ or ‘M’. As children play with the wooden pieces, they learn many academic skills directly and indirectly. Directly, the kids learn the correct formation of each letter. While playing with the pieces kids also develop fine motor skills, how to grip a pencil, and how the shape of the wooden pieces can be translated
to line strokes with pencil on paper. After children practice making letters, they often become inspired, creating unique shapes and patterns. Playing while learning sparks joy. We love to see them beam with pride when they form a letter or cool pattern. We often hear, “Look what I made!” or “Look! I made an S!”. We believe in positive reinforcement to build confidence so, when passing by the Children's Centre you will often hear, “Wow!" or “That’s fantastic!” We believe that successful learning is positive, fun and rewarding. Wood pieces certainly help us offer all those qualities during language lessons in the Children’s Centre. ♦

Youth Summer Camps With summer fast approaching and the school year coming to an end, our youth summer camps will be the perfect opportunity to get the kids out of the house for a safe, fun, and engaging activity. We've worked hard to create a schedule that adheres to COVID-19 guidelines, ensuring children remain safe while still engaged in lots of exciting games and activities. With lots of different events planned, there is something for all interests and ages! We are bringing back some of our most popular themed weeks, such as Mad Scientist and Water Mania camps.
