THE PRESIDENT’S LETTER
As this is my first written correspondence to the members, I want to thank you for the opportunity to serve as your Club President for 2021/22. It is truly an honour. As I shared at the 61st Annual General Meeting, The Arbutus Club has been an extension of my home for myself and my family since we joined in 1989. We have taken full advantage of the facilities since then, be it skating, tennis, children’s programs, fitness, wellness, dining, and special events, and I’m happy to say that my children now hold their own memberships. This year has been long and difficult for all of us. However, it’s encouraging to know that if everything goes well, we will return to somewhat normal service come September. I look forward to our halls bustling with families again; seeing children and adults alike enjoying the Club as we know it. Please watch out for more information as we roll out our restart plan. The House Committees haven’t wasted any time getting started on their special mandates this term, which I will touch on below. For me, the single most important item is to get through the pandemic; working alongside our staff to fully reopen our facilities, so the members can finally enjoy our fabulous new facilities. This fall the Finance Committee will manage the tendering process for the Club’s audit services and review our credit agreement and related bylaws to determine if our demand operating line remains relevant. The Committee will also evaluate our current capital funding model to ensure sufficient funds for the next long-range plan and explore alternate funding channels, such as charitable and legacy endowment. With the help of Management, the Membership Committee will develop a House Committee recruitment and engagement plan to increase committee participation and effectively educate and prepare new committee members. The Committee will also assist in the development of post-COVID policies, particularly related to COVID-19 vaccinations if required.
Completing online facility bookings was one of the greatest frustrations for our members over the past twelve months, particularly when using a mobile device. Many of those issues will no longer exist as facilities become available for drop-in. However, our software still poses some challenges, so we have put together a task group to review alternate registration and booking solutions and evaluate the cost-benefit of replacing our current system. As we look to the future it is important to start thinking about the potential redevelopment of our existing tennis building, outdoor courts (5-7, P1, P2), surface parking, and Club entrance. I appreciate that we just completed a major renovation project, but we must consider the tennis building's useful life and the time and funds required to execute a project of this magnitude. Therefore, the Executive Committee will begin discussions this fall. Lastly, Brent Elkington and I will be working closely with the Tennis Committee to address several items that arose from the Tennis AGM in support of our vibrant tennis program. Thank you to everyone who filled out the membership survey. The response rate was exceptional. Club Benchmarking will present the results to the Board in September, which I will address in my fall letter. Normally, I would be kicking off the summer flipping my famous pancakes alongside my fellow directors and staff at the Canada Day Pancake Breakfast and Fun Run and then welcoming everyone back in September at our Parking Lot Party. Unfortunately, neither event can take place this year, but I assure you we will make next year’s events that much better. In closing, Let’s make this year a special one – celebrating our member community and rediscovering what we love most about the Club. For me, it’s time with family and friends and a few solid wins on the court. If you have anything you wish to communicate to me or the Board, please don’t hesitate to contact me.
The Planning and Facilities Committee will soon conclude its oversight of The Lounge renovation, scheduled to reopen in September. The Committee has now turned its attention to the 3rd floor catering renovation, interviewing three design firms and making its recommendation to the Finance Committee, who in turn, recommended Board approval. The project will take place in early 2022. More details to come. The Recreation Services Committee has been tasked with assisting staff in developing post-COVID plans for recreational programs, services, and facilities. They are also working with the Club’s pros to better understand each activity area, monitor facility usage, and approve seasonal facility assignments.

raising the bar The renovation of The Lounge has begun early, seeking to provide a unique, individual character for a favourite member area
T
he spring health restrictions put in place by the Provincial Health Officer had an undoubtable impact on the food & beverage industry. However, they inadvertantly provided a silver lining for The Lounge. The capital improvement project was able to begin in April, over a month ahead of the original construction schedule. The Lounge has a storied history of hosting countless special events, spirited member functions, and is an integral part of our sense of community at The Arbutus Club. As a

The Bark s u m m e r 2021
The Planning and Facilities Committee and the Board of Directors worked closely with Box Interior Design to ensure the space straddled the line between a traditional sports bar and a relaxed, modern lounge. The team determined the project needed to retain the general layout and mood of the room, but provide an operationally better experience for the membership. As one of the Club's most popular service areas, The Lounge has recently been in need of an upgrade that would improve

functionality challenges, ensure the facility has long lasting durability, and integrate it with the contemporary design aesthetics of the Arbutus 2020 infrastructure and expansion project upgrades that were completed last year. Come fall, The Lounge will provide more flexible seating options that can accommodate large groups, while still allowing for one-on-one get togethers. Members will find generous booth seating, long banquette/high top tables, and free-standing tables for 4. Function-oriented design solutions include the creation of a more effective bar area and a discrete service station that allows staff to remain in the restaurant. Additionally, the space will have more effective lighting, acoustic ceiling tiles to help better contain sound, and retractable window screens that will mitigate glare from the Main Rink and Pool. In an effort to be environmentally conscious and cost effective, the Club sought to find green solutions for the construction process. The AV system will reuse television monitors and a considerable amount of the bar equipment will be retrofitted into the new design. With the renovation well underway, the Club looks forward to a late August or early fall opening for The Lounge.♦

A
lthough it will take a few years before the herb garden fills in fully, it is encouraging to see the first plantings establishing themselves in the late spring weather. Next time you’re up on The Rooftop patio, check out the 18 different, labeled herbs and see what inspires you for your garden. Here is an introduction to the herbs we are currently growing.
ROSEMARY Rosmarinus officinalis This perennial has linear dark green leaves that are highly aromatic. Rosemary ‘Ingauno Blue’ is one of the hardiest varieties and can withstand colder winters. It is highly versatile and can be pruned as a single specimen plant or shaped into a hedge. If it’s grown in the garden, it will be drought tolerant once established, but if you grow it in a pot, it will need more frequent watering.

FRENCH TARRAGON Artemisia dracunculus ‘Sativa’
MINT Mentha x piperita, peppermint (cross between water mint & spearmint), Mentha x villosa mojito mint, and Mentha x piperita chocolate mint Mint is a low growing perennial characterized by its serrated leaves in all shades of green. It originated in moist habitats, so keep the plants well watered. Mint is also notorious for being aggressive; dividing it regularly will not only keep it healthy, it will keep spreading in check. For this reason, planting mint in a pot is a popular choice. There are so many varieties of mint to choose from and they are an incredibly versatile kitchen herb.
Although it looks like rosemary at first glance, you will notice the leaves of French tarragon are narrower, longer, and slightly twisted. It is a full-sun perennial that grows up to 2 ft tall and has a bold anise flavour. It can be cut to the ground throughout the summer season to maintain a fresh supply of foliage. Whether grown in a pot or in the ground, its vigor and maximum flavour come from regular root division and replanting.

BAY LEAF Laurus nobilis This small evergreen tree does well in partial to full sun. Bay leaf is desired for its leathery dark green and aromatic leaves. It will reach heights of 12-15 ft tall and as wide, but pruning can keep the tree contained to your desired dimensions. It responds well to shaping into topiary or a hedge and it also makes a beautifully classic ornamental in a pot. ♦

spinning for gold Mckenna Durbin details how The Arbutus Club has helped nurture her love of figure skating and why she stays committed to her craft
C
hallenging herself daily and always encouraging her peers, Mckenna Durbin illustrates the heart of the The Arbutus Club Figure Skating program. Her ethos involves working incredibly hard, but also having a tremendous amount of fun. From participating in all Club skating functions to serving as a Team Leader, Mckenna volunteers on a regular basis, helping all of our younger, up-and-coming skaters. Mckenna recently completed her Gold Freeskate in the Skate Canada National testing program. She also added the prestigious Diamond Dance qualification to her list of accomplishments and is the Club’s first skater to attain this feat. Normally skaters are asked to dance in pairs due to the difficulty of this level. Due to social distancing practices, partnering was not allowed and was completed virtually. The diamond dances were all composed by world and Olympic dance champions and first performed at these international events. Prior to the pandemic, Mckenna won gold in the overall Star 6 Singles, BC Coast Winterskate event. She was competing against 3 groupings and approximately 45 skaters from all over the Lower Mainland. Her love of being on the ice and of the sport are illustrated as she dances across the Main Rink.
When did you first start participating in figure skating? Mckenna: I started figure skating when I was 2 or 3. My dad played hockey growing up so it was one of the first sports I was put into.
What is your favourite part of your sport? My favourite part about skating would have to be the people or the competitions. We have a sense of community in skating and many of the other athletes are some of my closest friends. The coaches also make coming to practice really fun and inviting. Plus, I love the environment at competitions. The adrenaline and excitement, while in a super sparkly dress, make it so much fun.
16
The Bark s u m m e r 2021
Meet the Athlete
How have you adapted to changes in figure skating throughout the pandemic? Throughout the pandemic, I have actually realized how lucky I am to have picked figure skating. The nature of the sport allows for us to be able to stay socially distant and the only major change is that we can’t hug each other.
What aspect of your sport has inspired you to stay committed throughout this unprecedented year? Honestly, my love for skating is what has inspired me to stay committed.
How is participating in skating unique at The Arbutus Club? Definitely our coach, Pam Greenslade. She is an amazing person, cares about us, and loves us not only as athletes, but as people. Both inspiring and motivating, she is one of the main reasons why I love this sport so much.
What skill have you mastered in figure skating that assists you in other areas of your daily life? I would have to say perseverance. I have fallen on jumps countless times at skating and the only thing to do is get back up and try again. It sounds cliché but it’s honestly an amazing skill to have.
In your opinion, what is the key to perseverance in sports? Loving what you do. The motivation to keep going and persevere can only come from within yourself. When you love what you do it's easier to find that motivation.
What is your 2021 goal? My goal for this year is to land my first few triple jumps, which will most likely be a triple salchow and triple toe loop.
Are there any teammates, partners, opponents, coaches, staff or trainers at The Arbutus Club that have positively enhanced your experience? How so? My teammates have positively enhanced my figure skating experience. We all know how to have fun, while still getting in our training. They are like my second family. My teammates always know how to cheer me up and are always ready to provide some healthy competition.
If you could describe playing/participating in figure skating with one word what would it be? Beautiful ♦

defying gravity Alexandra Olson takes her gymnastics journey from athlete to Junior Coach at The Arbutus Club
A
lexandra Olson began her gymnastics journey at The Arbutus Club 14 years ago. Through the years Alexandra has experienced all levels of gymnastics at the Club, while working her way through the Winit recreational levels and then onto the competitive program to partcipate provincially at the Junior Olympic Level 7. Three years ago, Alexandra started the Coach in Training program and has since then completed her Level 1 National Coaching Certification Program and is now a Junior Coach. She inspires a love of gymnastics among the younger members of the Club, while coaching a sport that gives her so much joy. Now, graduating from high school, Alexandra reflects upon her journey through The Arbutus Club Gymnastics Program.
How old were you when you started to participate in the Arbutus Club Gymnastics Program? Alexandra: I started gymnastics at the age of 3 in a parent and tot class. When I was 6, I joined the mini kip program, moved up to Winit Twice, and participated in my first gymnastics meet at the age of 8.
What is your favourite part of the program? My favourite part of the program is that I am continuously learning new skills and accomplishing things that I thought I would never be able to achieve. Travelling for competitions is also a highlight.
How has your training changed throughout the pandemic? I was very disappointed when all sports were cancelled at the beginning of the pandemic. When gymnastics was allowed to restart in July, I was grateful. We now train in smaller groups, with a lot of time spent on cleaning protocols. Virtual competitions have also replaced in-person competitions.

The Bark s u m m e r 2021
Meet the Athlete
What has inspired you to stay committed throughout this unprecedented year? Knowing that many people have had to give up so much due to the pandemic, and that I am fortunate enough to still be able to train, has inspired me to keep going and give 100% every time I step into the gym.
How is participating in the gymnastics program unique at The Arbutus Club? The gymnastics program at The Arbutus Club is unique due to the great coaches. They treat every athlete as an individual and coach to their abilities. They know exactly what we are capable of. The coaches do not set unrealistic expectations, but at the same time, push you hard enough that you don’t let yourself down.
What life skills have you gained through the sport of competitive gymnastics that assists you in other areas of your daily life? I have learned the meaning of hard work, perseverance, and commitment. These life skills have helped me in everything I pursue, such as academics and cello.
In your opinion, what is the key to perseverance in sports? The key to perseverance in sports is to set goals and keep a positive mindset. These practices and tools will help you keep going even when you feel frustrated, tired, or sore.
What is your 2021 gymnastics goal? My 2021 gymnastics goal is to enjoy every minute of my last few months in the gym as an athlete.
Are there any teammates, partners, opponents, coaches, staff or trainers at The Arbutus Club that have positively enhanced your gymnastics experience? How so? I feel extremely fortunate to have both Nicole McNaught and Gord Bennett as coaches throughout my gymnastics journey. Nicole laid down the foundations when I was young and Gord has been an amazing coach, bringing me to the next level in my teen years. I feel very appreciative of both. I have created close friendships with the girls I train with, especially Mara and Riley Baxendale, as we always support each other. I also feel fortunate to train with my younger sister Ava who always challenges and motivates me to do better.
Describe in one sentence what gymnastics means to you? Gymnastics is a way of life. ♦

LIGHTS, CAMERA, DANCE! The Arbutus Academy of Dance performed its first-ever Virtual Dance Recital in May 2021
U
nder normal circumstances, The Arbutus Club dance families would be seated in the Michael J. Fox Theatre to watch their children put on a show. With over 20 dance performances through the years at the Club, this year’s recital was certainly going to be missed as it is one of the highlights of the year, especially with all the COVID-19 restrictions.
However, Marlene Hershfield our Dance Director, with her indomitable spirit, insisted that the show must go on, and so The Arbutus Academy of Dance presented its first-ever Virtual Dance Recital on May 2 and May 8. By all accounts, it was a huge success. The dance community just loved it and felt they had a front row seat for the performance. Everyone enjoyed the added touches with video of the performers dancing in the parkade, in the parking lot, and on stairways throughout the Club. It was so much fun to watch! From the moment that Miss Marlene introduced herself, members were completely invested in the performance. She wanted the students to be able to put on their costumes, do their hair and makeup and feel like they were getting ready for a show onstage. For Marlene, it was also a time to display how the performers are resilient and the dance program is not going anywhere! After all, it is all for the love of dance. For years, the Club has watched children perform their first preschool dance, and then progressing through the levels to become accomplished ballerinas, and super cool hip hoppers. It’s a moving experience to watch the dance performances live, or virtually streaming live, with an array of routines causing many in the audience to have emotional experiences from start to finish. The very young children are just so adorable, and often laugh-out-loud funny, the tap dancers are so stylish and into the vibe, the hip-hop dancers never miss a beat, and the ballerinas glide and soar. And, one must not forget the Musical Theatre crew! They certainly know how to put on an exciting show; and one sure thing about The Arbutus Academy of Dance, there is a class and style for everyone. The Arbutus Academy of Dance is thankful to all the students who were able to spread the joy of dance virtually. Every dancer should feel proud of the perseverance and determination they have shown while continuing their dance education here at the Club. A big thank you to Miss

making an impact Group Fitness instructors, Daniela Tempesta and Hana Weinwurm, are named among this year's top fitness instructors in Impact Magazine's recent Inspiration Issue
T
hey make us bold when we want to be strong or build us up when we are on the edge of falling apart, fitness instructors serve as the backbone to many of our Recreation Services programs. Our team of instructors keep us healthy, confident, and motivated to stay on course with our fitness journeys – a demanding undertaking we can all greatly appreciate. This year, Impact Magazine – one of the nation's leading health, fitness, and sports performance publications – named Canada's Top Fitness Instructors of 2021. Amongst the bevy of national talent were some familiar faces. Arbutus Club Group Fitness Instructors, Daniela Tempesta and Hana Weinrum, were honoured in the semi-annual list.
I can’t speak enough of the love I feel here at the Club. There’s such a strong sense of family. - Daniela Tempesta
Group Fitness & Pilates Coordinator
Both tirelessly exude positivity and their shared can-do attitude is contagious, keeping our members in shape and a great state of mind. We chatted with the duo to find out how they feel about Impact Magazine's designation, the impacts of COVID-19 on fitness programming, and what keeps them motivated. Congrats on being named one of Canada's Top Fitness Instructors. How did it feel to find out? Daniela: Surprised! Honoured! Humbling!

Hana: Having the opportunity to standup in front of participants, guide and take them through a fitness routine and watch them follow your instructions and then return again-and-again, this is an award that comes to me as a fitness instructor daily. It is a true highlight. [This award] feels like a divine acknowledgement for following my truth and the service I offer while on this earth. What inspired you to become a fitness instructor? D: Getting rejected for a receptionist position at my gym. The Coordinator saw my dance experience and offered me an apprenticeship instead - the rest is history! H: I started attending group fitness classes with my Mom at the age of 12. By the time I was 16, I was the one in front of the class teaching and since then I haven’t stopped teaching—it’s been over 25 years. Social distancing has undoubtedly caused some challenges to group fitness. What keeps you motivated when we are apart? D: The energy members bring to class. Feeding off each other is one of the amazing benefits of a class experience. When you’re starting to lack energy, you can rely on a friend’s encouragement to keep going. Do you have any advice for those people not knowing where to start in their fitness journey? D: Something is always better than nothing. It can be so overwhelming but truly, just starting with super small changes can together make a lasting impact overall. H: The best advice is to reflect on all the movement activities you enjoy doing. Whether it’s dancing, walking, group fitness, running, biking, tennis, pickleball, swimming, golf, yoga, etc. Make it a priority to include your favourite movement activities every

H: My biggest inspiration is that the participants continue to be committed to their practice and they enjoy returning to class again and again.
What sets The Arbutus Club apart from other places you have instructed at?
What are you most looking forward to this summer?
D: The members! I can’t speak enough of the love I feel here at the Club. There’s such a strong sense of family here, not just community. The relationships developed over time speak to the reason I’ve been here 12+ years.
D: Travelling!! Let’s go!!!! H: One of my favourite ways to spend my time when I am not teaching is to go into nature. Summertime is the best time to be outdoors — soaking up the sun, hours of daylight, a picnic evening with a star gazing finale. ♦

IMPORTANCE OF VITAMIN D Best known as the “sun-vitamin”, vitamin D is essential to maintaining good health. Personal Trainer and Regstered Holistic Nutritionist, Rachel Prystay, provides tips for our members
SMART SUN
What we know about vitamin D?
Exposure Facts:
Unbeknownst to many, our body creates this vitamin as opposed to absorbing it from different sources. Because of this, vitamin D is often considered a hormone rather than a vitamin due to it being produced by the kidneys.
Why is vitamin D so important? Vitamin D is needed to keep teeth, bones, and muscles healthy. It regulates calcium and phosphate within the body. Without this balance we would experience confusion, altered mental state, muscle weakness, and muscle damage. It fights depression and aids in weight loss due to its appetite suppressing effect and ability to reduce adipogenesis (the formation of fat-cells).
What happens with too little or too much vitamin D? Lacking in vitamin D can lead to bone deformities, bone pain that can soon lead to osteoporosis. Other signs include fatigue, viral infections, mood changes. Having too much vitamin D can also mimic the exact same symptoms, bone pain being the most prominent, produced by the kidneys.
30
The Bark s u m m e r 2021
Always wear sunscreen. Yes, it protects you from the UV rays we need to make vitamin D, but not completely. Always wear a minimum of 30 SPF.
How to increase our vitamin D without going overboard First thing to mention, over-exposure is pretty difficult to obtain. Where you live has an impact on how much vitamin D you are getting. Depending on where you live in Canada you could have as little as 3 to 4 months sun a year. Taking a vitamin D supplement during the darker months is a great alternative. Use the summer months to obtain Vitamin D from our daily dose of smart sun exposure and food sources like egg yolks, salmon, tuna, and fortified foods.
Stay hydrated. Staying hydrated makes sure your body is able to withstand the heat that comes with sun exposure. Sun exposure also helps elevate your mood and regulates your melatonin levels. Do you ever wonder why spending a day in the sun makes you tired after? It regulates your sleep cycle as well as boosts your serotonin levels. For paler skin types, all you need is 15 mins of exposure to the sun as your skin and body will absorb it quickly.

CONSIDER ACUPUNCTURE Acupuncture is part of the ancient practice of traditional Chinese medicine and the Physiotherapy & Wellness Team are now offering it at the Club, where it is most convenient Acupuncture is the practice of penetrating the skin with thin, solid, metallic needles which are then activated through gentle and specific movements of the practitioner's hands or with electrical stimulation. Traditional Chinese medicine practitioners believe the human body has more than 2,000 acupuncture points connected by pathways or meridians.
How long will my appointment be?
These pathways create an energy flow (Qi, pronounced "chee") through the body that is responsible for overall health. By applying acupuncture to certain points, it is thought to improve the flow of Qi, thereby improving health.
Wear loose, comfortable clothing that can be pulled up to expose your lower arms and legs.
Does acupuncture hurt?
To put this in chemical terms, acupuncture triggers the release of biochemicals, such as endorphins and enkephalins, from the brain and nervous system. These natural proteins are the body’s own morphine, which inhibit pain and produce feelings of euphoria and deep relaxation.
Acupuncture doesn’t have to hurt to work. Your treatment is not something to suffer through. Quite the opposite. We want you to relax because that’s when healing happens, and you can’t relax if you’re bracing against pain. Most patients say they either don’t feel the needles going in at all or they feel a slight pinch. On the off chance you do experience discomfort, the needle will be adjusted right away or taken out.
32
The Bark s u m m e r 2021
The needles need to be kept in for a minimum of 30 minutes. This is what we call a complete cycle. Thirty minutes gives the brain time to check in with each needle and help them jumpstart your inner healing. What should I wear and bring for my treatment?
What’s happening once all the needles are in?
Why don’t you put the needles where I hurt? The Physio & Wellness team will be practicing a style of acupuncture called the Balance Method. We tap into your body’s energy superhighways (called meridians or channels) to cause change somewhere else. You might show up with a sore lower back and get shockingly immediate relief when we treat your hands
Physiotherapy & Wellness
During my treatment, how do I know the acupuncture is “working”? Here are some things to watch for during your treatment. The following indicate that the needles are doing their job: ACUPUNCTURE CHILL You feel a chill rushing over you even though you’re fully dressed and have a blanket or sweater on. This is your Sympathetic Nervous System (SNS) shutting down and your Parasympathetic Nervous System (PNS) chiming in to get the healing party started. TEARS For no reason at all your eyes might start to water. Again, this is your SNS shutting down and your PNS turning on. SLEEP OR FEELING LIKE YOU’RE ASLEEP You may be able to hear noises around you, but they sound far in the distance. TIME PASSES QUICKLY This occurs when we relax, so enjoy your downtime. YOUR LIMBS JUMP AND “WAKE YOU UP” The nervous system is doing its job. PAIN LEVEL DROPS If your pain drops from a 9 to a 3 out of 10 before we even get all the needles in, you know you’re in good hands.
What parts of the body do you usually put needles in? We mostly use points on your head and ears, and below your elbows and knees. Just dress in a shirt and pants that can easily roll up. Then let us send you off to acu-nap-bliss-land. I’m fidgety at the best of times, what if I can't lie perfectly still? Lucky for you, we don’t expect you to lie perfectly still. Once the needles are in, you can adjust your position, bend your legs, or scratch your face. We are inserting very fine, flexible needles. What if I don’t know how to relax? Why is relaxation so important? The nervous system relies on your body’s ability to rest and relax. When you relax, your Parasympathetic Nervous System (PNS) takes over. The PNS is also called “rest and digest” mode, and for good reason: when you’re in this state, your body’s healing response is activated. Can I go on my phone? We ask that you do not. An acupuncture treatment allows you time to step away and disconnect from daily distractions. Are your needles as big as hypodermics and other needles I’ve been poked with? No, it’s natural to feel anxious about being poked with giant, painful needles. But that’s not going to happen. The teeny, tiny needles are a similar width to a strand of your hair! I thought acupuncture needles were rigid, but are they flexible? Yes, many people expect something more like sewing needles, but the ones used in acupuncture are extremely fine and bendy for optimal comfort.

With his guidance, tennis was able to restart after the initial COVID-19 closure in Spring of 2020, because of Mark's response to new and changing protocols. His admirable work ethic and can-do attitude resulted in keeping our doors open and our tennis community safe. Mark has left the Tennis Department with the groundwork to ensure that The Arbutus Club Tennis program will remain strong and continue to develop.Through his leadership and support, he has inspired the department to effectively grow as they work together in reaching shared goals. As a team, they have improved the structure and quality of the Tennis program. Not only did Mark bring knowledge, confidence, and passion on court, but he also built relationships with members off court. The Club will fondly remember his diligence and the positive achievements that he brought to the tennis community and team. T
his is my go-to recipe for lamb, especially for the barbecue. I like to marinade overnight to seal in the flavours. I have used it on fresh BC salmon as a glaze and it’s amazing as well!
Ingredients
1
2
•
1 3-4 lbs boneless lamb leg
•
2 tbsp real maple syrup
•
Maple mustard marinade
•
•
½ cup grainy mustard
2 cloves of garlic finely chopped
•
2 tbsp balsamic vinegar
•
Salt & pepper to taste
Instructions Remove any strings or netting around lamb leg. Open the lamb up by butterflying the leg so that it is even thickness (about 1 ½ inches). Prepare the lamb by removing any sinew or undesirable fat.
3
Mix all ingredients for marinade and add salt and pepper to taste. Rub marinade on both sides of the lamb and cover overnight.
4
Preheat all burners on high, covered for 10 minutes. Sear lamb on a lightly oiled grill rack and cover with lid. Turn over the leg once, until well browned for 8-10 minutes in total. Turn off a burner (middle burner if there are three) and place the lamb on the shut-off burner. Reduce heat on the remaining burners to moderate and grill lamb covered with lid, until thermometre registers 135°F for medium rare. Transfer lamb to a cutting board and let sit for 15-20 minutes, loosely covered with foil. Thinly slice lamb for serving. There's nothing else to it, simply enjoy. arbutusclub.com

4 ½” by 8 ½” loaf pan
Food & Beverage
Preparation
1
Preheat the oven to 300F. Add 1 tablespoon of hot water to the gelatin and leave aside.
For Caramel
2
Bring the sugar and water to a boil in a small saucepan, swirling the pan gently until the sugar has dissolved, about 3 minutes. Reduce to a simmer and cook, gently swirling the pan occasionally, until mixture has caramelized to a deep, dark mahogany color, 7 to 10 minutes. Carefully and slowly pour the caramel into the loaf pan being careful not to splash any on yourself or outside the loaf pan, allow to cool.
For the Flan
3
Whisk the eggs in a medium bowl. Add mascarpone cheese slowly to the eggs and mix well.
4
In a saucepan, warm the ingredients, (milk, whipping cream, sugar) to a simmer. Dissolve the gelatin. Slowly pour the hot milk mixture to the egg mixture. Strain through a fine sieve into the loaf pan with caramel.
5
Bake the custard in the water bath until the edges are set but the centre still jiggles slightly when gently shaken, about 60 to 70 minutes. If the center is more wavy than jiggly, cook it a bit longer.
6 7
Carefully transfer the pan to a wire rack and cool completely. Cover with plastic wrap and refrigerate for at least 12 hours. To serve, run a small knife around the edge of the pan to loosen the flan. Cover top of the container with a large flat plate facing down. Quickly invert the flan onto the plate. Remove loaf pan. Slice the flan and serve. ♦
