The Holidays, Beachside Style I have always enjoyed the holidays. I grew up in a small town in the southern part of Maine. Every year during the holidays, we would drive about two hours north to see my grandparents. The trip usually took place on a Sunday, and being in late December it was generally pretty dark. So dark that the few-and-far-between homes that were decorated with lights would glow for miles. My sister

and I would “ooohhhh” and “ahhhhh” at all the houses. We would only spend a couple of hours at my grandparents and then head back home. Those lights and those visits were what made up our family Christmas tradition. I loved those holiday trips. Today I celebrate the holidays in a different way. No more snow shovels and climbing into a snow suit to blow my driveway before I drive to work. Oh, those were the days. Now I enjoy a beachside lifestyle and I am extremely grateful during the holidays. In this month’s issue, Team Bside

On The Cover Who would think the most crowded beach day of the year is December 24? On the cover, Java John works his magic to create something special for that special time of year. Can you find a worm, two racoons, a sea turtle, Jeannie’s bottle, an orange, a shark, a parrot, a salt shaker, a Santa with a clown nose, the Space Shuttle, Waldo, a ship’s’ wheel, and an iguana? “Java” John Goldacker is a graphic artist, illustrator, and photographer. He was born in Newark, NJ, but raised in South & Central Florida. He’s a proud father of a talented 18-year-old son. Most of the artwork John has done over the years has been centered around his love of Rock and Roll, but “Java” John has also illustrated children’s books including “River Dragon” and “Bud The Spud”. John’s been featured in PhotoShop Creative Magazine, in the 2009 books - “PhanArt: The Art of Phish Phans”; and “HOPE: A Collection of Obama Posters and Prints”. He’s been featured in The Beachside Resident and has photography on display at The King Center in Melbourne. He also does design work for local events and businesses.

I enrolled in the Southeastern Culinary Academy here in the U.S. where my passion for the culinary world was solidified. For the last 15 years, my American dream has become a reality. As young chef, I was always thinking of colorful foods, as well as different and exotic flavor combinations. My vision became a reality when I cofounded the Green Turtle Market with Tim Dwight and his family. I have the pleasure of offering seasonally inspired, unique products with the freshest ingredients available. This recipe is a delicious, healthy and a contemporary Mediterranean dish. It can be used as a salad course, main entrée or as an appetizer. It is very versatile.

Roasted Eggplant with Garbanzo Bean Salad

Prep Time: 20 minutes, Roast for 25 minutes at 425° (Makes 6 servings)

Step 1 1½ lb of Japanese eggplant, cut into ½ inch pieces 2 cups of wine ripe tomatoes, diced 15 ounces of garbanzo beans, rinsed and drained 1 medium red pepper, diced 4 cloves of garlic, minced 6 tablespoons of olive oil 1 tablespoon of chili powder 1 teaspoon of kosher salt 1 teaspoon of black pepper

1 teaspoon of smoked chipotle pepper

Step 2 ¼ cups of flat leaf parsley ¼ cups of cilantro leaves, chopped 3 ounces of crumbled feta cheese Juice of 1 lime ½ teaspoon of cumin seeds, toasted ½ teaspoon of coriander seeds, toasted

Step 3 6 bib lettuce leaves 2 watermelon radish 6 fresh mission figs, sliced in half 6 ounces of broccoli sprouts 18 pieces of English cucumber, thinly sliced 6 pieces of a wine ripe tomato, thinly sliced Instructions: Preheat the oven to 425°. Combine the ingredients from Step 1 in a

mixing bowl. Toss together and place in a 10”x15” pan and roast for about 25 minutes. Remove from the oven. Sprinkle ingredients from Step 2 on top and allow to cool for about 30 minutes.

Step 4 Raspberry Walnut Vinaigrette

1/3 cup of raspberry preserves 3 tablespoons of fresh raspberries 2 tablespoons of raspberry vinegar ½ teaspoon of Dijon Mustard 1 tablespoon of honey 1 teaspoon of kosher salt 1 teaspoon of black pepper ¼ cup of walnuts, chopped Vinaigrette Instructions: Place all of the ingredients into a food processor except for the walnuts and blend well. Add the walnuts and pulse the processor a few more times. Plate Assembly: Using the ingredients from Step 3, place the bib lettuce first then the sliced tomatoes. Next use a small portion of the eggplant salad followed by the broccoli sprouts, sliced cucumber, sliced figs, and watermelon radish. Serve with the raspberry walnut vinaigrette.

We love to make New Year’s resolutions. Americans try to change often according to University of Scranton, Journal of Clinical Psychology (2015). 45% of us make New Year’s resolutions but only 8% keep them. Winston Churchill once said, “To improve is to change; to be perfect is to change often.” We’re great at making long lists of things to change and enjoy making them. However, it’s mostly fictional fun. It’s like planning what type of superhero you’re going to be for Halloween. This year, you’ll be a multilingual, vegan, early morning riser, once a month-at-a-time cooking, flawless gardener. But two or three days into the resolutions trouble brews. You’re tired and realize it’s better to learn one language at a time. Vegan crock-pot recipes aren’t always as delicious as they sound. The gardener on YouTube, who promised that anyone can grow new celery from scraps, is a liar.

Creating New Year’s resolutions is one thing but actually accomplishing them is another. Most of us make these lists and lie to ourselves. We set goals too lofty to accomplish. This year instead of focusing on what could be done with endless time and energy, consider creating a new list. A more realistic list of things to be a marginally better gardener. Sculptor Henry Moore once said, ”I think in terms of the day’s resolutions, not the years.’” Instead of over-promising and under-delivering to ourselves, here are smaller resolutions to ponder:

GOAT CHEESE SALAD 1. I will not buy more plants than I can plant in one day. 2. I will not buy something that is finicky just because it’s beautiful and then be surprised it died. 3. I will not covet my neighbor’s beach daisies. 4. I won’t get suckered into the newest gadget no matter how cool it looks on TV. 5. I’ll compost everything I can. Even when I don’t feel like it. Unless it’s raining or cold outside. 6. I’ll keep insecticide and fungicide handy so I can spray at the first sign of trouble. 7. I’ll wear gloves even if I’m just weeding my yard for a few minutes. 8. I won’t buy any new plants until I prepare the soil. 9. I’ll appreciate my gardening successes and learn from my failures. 10. I’ll ask for advice for gardening dilemmas. Garden centers and Master Gardeners can be your best friends and allies. Careful, deliberate small changes over time yield big results. Just remember, ”An inch is a cinch but a yard is hard.” Here’s my holiday wish for you. As Benjamin Franklin once said, ”Be at war with your vices, at peace with your neighbors and let every new year find you a better man.”

4 cooked lobsters 8 tablespoons butter 4 shallots, chopped 4.5 cups fish stock 1 cup white wine 1 cup double cream 2 teaspoons Dijon mustard 4 tablespoons fresh lemon juice 8 tablespoons fresh parsley 1 cup Parmesan cheese

reduced by half. Mix in the mustard, lemon juice and parsley. Season with salt and pepper. Place the lobster halves in a baking tray and divide the meat evenly. Spoon the sauce over each lobster half. Generously sprinkle with the Parmesan cheese and a couple pinches of nutmeg. Broil for a few minutes until golden brown. Super Stealthy Giving By Nataleigh Palmer

My friend Amy used to share a lunch break with a co-worker, Debbie, who was struggling. They sat at different tables and never spoke to each other. Amy overheard that Debbie was going through a divorce and worried about an upcoming birthday that no one ever remembered. A few days later, Amy gathered up her son’s semi-deflated Mylar birthday balloons and refilled them at the store for free. She went to work an hour early, dropped them off at Debbie’s desk and went home. Then she returned at her scheduled time. When she arrived, Debbie was beaming and interrogating most of their coworkers. The whole office debated the identity of the birthday miracle worker. Amy never spoke to Debbie, sat at her table or even worked in the same department. When Debbie greeted her at the door she simply asked Amy if she saw anyone with balloons. Amy shook her head. Debbie floated on a cloud that day and through the next few weeks. She thought that her lunch group brought them. The more they denied it, the bigger the mystery grew. Sooner or later someone would drop their guard and claim the glory. But they never did. Debbie blossomed into a joy to be around and someone the whole company adored. She even learned

and celebrated everyone’s birthdays or triumphs, eager to repay the favor.

Giving without expectations You’re going to hear a lot of pitches this holiday season: who to give money to, why they need it and what wonderful services your money will provide. Consider an additional way to give: anonymously. The motive is to give with no personal agenda. No pats on the back. These are Christmas moments you give others. Pay it forward Pay for the car behind you in the E-Pass Lane. Buy ice cream for the tourists in line. Slip a $20 in your college-aged relative’s purse. Drop a gas card in your nephew’s car. Fill out a comment card at a restaurant or take part in a phone survey to reward someone for a job well done.

Muscle power Weed your neighbor’s yard when she’s not looking. Clean up garbage that’s blowing around the parking lot. Bring your neighbors trash cans to the house when you bring yours in. Wash your parents car while they’re sleeping on the couch. Gas up your spouse’s car for them Sunday night.

The Power of Stealthy Giving Sometimes the joy of giving is lost in thank yous and debts of obligation. It can become a balance sheet of debts and credits that feel more mathematical than heartfelt. All He Wants For Christmas Is You By Christine Eveker | friendsforanimalssanctuary.org

At a little over two years of age Sully is barely past a puppy, but his life has shown him enough difficulties to last a lifetime. A Boxer/pit bull mix who looks like a mini Scooby Doo, Sully was originally brought to South Animal Care and Control (SACC) in Melbourne last October. Sully was confiscated as part of a local arrest involving criminal activity and possible dog fighting. The intake picture on Sully’s kennel card shows a scared, crouched dog who had spent most of his life outdoors with a notvery-bright future ahead. To give Sully the chance he deserves, local rescue Friends for Animals Sanctuary (FFAS) pulled him from SACC and saved him from almost-certain euthanasia. FFAS volunteers soon realized that once Sully knows you and is comfortable, he remembers you, and is a loving, cuddly dog who just wants to be his human’s Velcro. So FFAS placed him into a foster home where he made great strides, in good company with three other dogs running the gamut

of ages and sizes. He learned about a host of new things – how soft a couch is, what a microwave sounds like, how comfortable sleeping on a bed can be – and most importantly, he learned that trusting humans can be a good thing. While in his foster home, Sully and the senior male dog couldn’t work out their differences. So with no other available foster

homes Sully was forced to go into a boarding facility. FFAS and Sully’s former foster family are working diligently to get him adopted into a home without dogs after behavioral testing showed he must be an “only dog.” Getting Sully exposure is no small feat, considering he shrinks away when anyone but people he already knows approach him.

Sully has had a rough beginning in life, but FFAS and his former foster family refuse to give up on him. Fran Molloy is a local artist with a lot of heart. Not only has she been taking care of people as a Licensed Massage Therapist for over 22 years, but she takes care of the community by giving back through her artistic capabilities. Perhaps you’ve been to the Green Room Cafe? She made the serving plates. She donates various items to the Barrier Island Center for their silent auction. She also crafts all-natural soaps and cleaning products to protect our environment. She took some time out of her busy day to have a heart to heart with The Beachside Resident. How long have you lived in Brevard County? I grew up in the Outer Banks of North Carolina, moved to South Florida in the early 90’s, and settled in Cocoa Beach with my husband 19 years ago.

You started Red Dog Pottery 15 years ago- what sparked your interest in pottery? I always had an interest in clay and wheel throwing since high school. When I moved to Cocoa Beach, I signed up for a few pottery classes at different studios around town. It really didn’t take off until 17 years ago my husband bought me a potter’s wheel for my birthday. Needing a name, I looked over at my golden retriever who hung out with me in my studio and thought of Red Dog Pottery. Tell us something about your signature style. It seems inspired by heartfelt notions.

Every year, the Barrier Island Center has a silent auction fundraiser for sea turtle conservation. So donating soap baskets for the fundraiser was an easy decision. It also led to an opportunity to sell my product in their gift shop. Please tell us about your recent venture, Feeling Green Soap Company. This collection of soaps, sprays and cleaning products seem like they would make great gifts or stocking stuffers!

Our products are handmade with 100% pure and natural therapeutic grade essential oils. No added chemicals or preservatives. No junky stuff ! The base of my soap is coconut, palm, olive, and rice bran oil with pure essential oils. Yummy for the skin! I have a variety of soaps and Aromatherapy Room and Body Sprays. The favorites of consumers are Cocoa Beach Blend & Mama’s Blend. I also make a spray hand sanitizer called Clear Your Space and a great all natural bug spray called Don’t Bug Me.

Everyday, water full of detergents and chemicals found in over-the-counter synthetic products are released back into the environment. It eventually reaches our rivers, streams and oceans. Founder of Surfing Santas Event How did you come up with the idea for Surfing Santas?

Legend of the Surfing Santas Six years ago, George Trosset Sr. convinced his son and daughter-in-law to go surfing with him on a chilly Christmas Eve. Bedecked in Santa and elf costumes, the Trosset’s started what is now a citywide tradition. Today, Surfing Santas brings in thousands of spectators, raises money for charity, and puts a surfers’ spin on the holiday season. 20

My mom wore a t-shirt with a Surfing Santa and my wife bought some Surfing Santa ornaments before I ever thought of it. Then In November of 2009, I saw a car commercial for Honda with daybreak surfing Santas. That Christmas Eve, my son, daughter-in-law, and I went out and surfed in costumes. The only two spectators were my wife and grandson. My beard was made out of blanket. I remember how water soaked it got and I couldn’t get air in my lungs. Perfect wrong combination! I was exhausted after a few waves. But the newspaper had us on the front page on December 25th. People came up to me later and asked, what’s this Surfing Santa thing? The second year, we wore full blown Santa suits. The soaking wet costumes were almost eighty pounds. We learned we needed red rash guards and that beards don’t work out well in the ocean. I wasn’t looking for 300 Surfing Santas or 3,000 or 4,000 spectators. I just wanted a family day at the beach and this is what it turned into. How did the Skydiving Santas get involved ? In November 2012, I met a guy called named Chuck Julian. He’s a skydiving specialist and offered to sky surf into our event. In 2013, six people landed on the beach in full Santa suits. The crowd was screaming! Last year, 19 skydived. How much have you raised for charity? We raised over $20,000. Grind for Life has had a donation jar and we’ve had people donate and rally around us. We sell t-shirts every year and we have a surfboard auction to raise money. The giving that comes out for this event is magical, really magical. Where would you like to see Surfing Santa next? I have no idea. Deerfield Beach and places across the world want to do their own event. It starts with five or ten people. I see this happening in lots of coastal communities. They’ll have fun and it will grow into people helping people. If we inspired them, so be it. I don’t want to claim that we’re responsible. I don’t want to control Surfing Santas. I just want to have fun and share what worked for us.

Six years ago, my dad called me in the middle of my last minute Christmas shopping trip. He said, “I need you to buy two or three elf outfits, hats, and tights and meet me at the beach tomorrow at 10am.” wWhen I asked him why he couldn’t explain. It was December 23rd at 7pm! Where was I going to find costumes at that time of night? Luckily, I found everything in almost five minutes at Party City. The next day was Christmas Eve. It was cold and windy, not a great time to surf. My dad didn’t care. He convinced my wife and I to surf in elf costumes while he paddleboarded as Santa. What’s your role? At first I played lifeguard and stuck around and made sure my Dad lived. That first suit was heavy velour. The following year I surfed and looked out for his friends. I’ve moved up the ranks from elf to Frosty. I like Frosty a lot better. It’s not as restrictive a costume to surf in. What do you love about being a part of Surfing Santas? It’s the most fun I’ve seen my dad have. The satisfaction of watching him has uniquely changed my holiday. It’s the perfect segue to Christmas and it’s so uniquely Cocoa Beach. Last year we were blessed with good weather and waves. But it’s still cold water. From day one to now, I can’t believe how big we’ve grown. What is your wish for Surfing Santas in the future? I’d like to become more involved. It’s tough with family and responsibilities. I’d love to see it on every coast. Cape Hatteras, the Hamptons, California, Tampa. Good will toward man and involved surf communities. I’d like to make it something that’s not just Cocoa Beach or Brevard but around all our coasts nationally, if not internationally.

What is you wish for Surfing Santas in the future? I loved to see it grow into something special for Grind for Life. I like that they offer cancer patients and their families the chance to go where they need for treatment. I hope it grows as much as possible to help our charities get what they need.

Singer of Surfing Santa Parodies How’d you get involved in Surfing Santas ? I started as a spectator on the beach. I participated for a few years in costume. In 2014, a local photographer, Roger Scruggs, introduced George and I. George had dreamed up the idea of a Surfing Santa parody music video to spread the joy of Surfing Santas at Cocoa Beach with everyone! What’s your role?

Clifford “Peanut” Kuehner Surfing Santa How’d you get involved in Surfing Santas? I retired three years ago. I think I was chosen because I can grow a nice beard. I told George, “I’ll grow my beard as long as you let me play Santa.” I’ve always wanted to play Santa Claus. It’s a dream come true. What’s your role? Last year was the first year I was a Santa. Now my beard is down to the middle of my chest.

I am honored to be the Secretary of Silly Surfing Santas Songs. I write and perform all the YouTube parodies and help raise awareness about our event. Behind the scenes, I’m one of many Surfing Santas’ helpers aiming to make this event fun and successful! What does it mean for you? Surfing Santas has a “wave of joy” effect! People laugh and smile when they watch our productions. Everyone feels the same joy whether they are spectator or participant. I’m fulfilled by that “wave of joy” and it’s a great outlet for me to connect and give back to my community during the holiday season. What is you wish for Surfing Santas in the future?v

My biggest wish for Surfing Santas is for great waves every year in Cocoa Beach, especially on December 24th!

Giving to others spreads joy to the world. My wife and I both love giving. She makes my Santa costumes. I also teach surfing to anyone who wants to learn. I love to see the smile on someone who jumps up on the board for the first time.

Get Out of Town

Asheville, North Carolina The Mountains Are Calling By Rachel Bilchak Modern transportation never ceases to amaze me. Being able to traverse hundreds or thousands of miles in a matter of mere hours is a joy that I shall always revel in. I grew up an avid reader Harry Potter, and I was always envious of these fictional characters who had the ability to magically transport their corporeal selves over great distances in the blink of an eye (Apparate and Disapparate, if you will). Whilst this form of transportation isn’t available quite yet, we can still jump on planes, trains and automobiles to spirit us away for a change of scenery. I did just that a couple weeks ago when

my sister and I boarded a plane headed for Asheville, North Carolina. The Travel Gods were smiling upon me and sat me next to a delightful lady who was heading home to Asheville after a visit with her son and his family. We ended up chatting the entire flight, and she gave me some pointers for my three day visit. Mrs. X directed me to a little place called Tupelo Honey Cafe for lunch on our first day. After a cursory perusal of the menu I knew we’d been steered in the right direction.


Upon arrival there was a 45 minute wait- pretty impressive for 11:45. We put our names in then strolled through a few shops and stopped into a pub called Jack of the Wood for a beer. A very special thank you to Jason of the Bar and Jason of the Kitchen for being such excellent hosts. Lunch at Tupelo Honey consisted of many small plates that added up to quite a big meal. All I can say is our eyes were bigger than our stomachs. I’ll also add that sightseeing on foot after lunch was significantly slower. After a couple hours it was time to go back to the airport, meet up with my father, and

make our way to our rented cabin in nearby Maggie Valley. An hour or so outside of Asheville, our little place was the perfect location to keep a comfortable distance from the city and provide amazing views of the remaining fall foliage and rugged peaks. We grabbed some barbecue from a spot called Fat Buddy’s on our way up. That meal turned into about six throughout the course of the weekend. Our second day we reserved for exploring. First we went gem mining. We were giving a bucket to sift through, and it yielded some beautiful pieces of quartz, obsidian, citrine, and sodalite. We drove on to the Blue Ridge Parkway. It was a rainy day, and plenty of fog kept us keen to pay attention to the twists and turns. There were spots to pull off every few miles so that you can take in the breathtaking views. We stopped at a few roadside shops and collected jars of pickles, jams, and butters. Soon the fog got so thick that we called it an early day and spent the evening watching football and drinking beers. Continues on Page 42

Florida Beer Company From Grain to Glass By Nataleigh Palmer

Florida Beer Company’s brewery smells like brownies fresh out of the oven. This local Regional Craft Brewery has 28 different brews with 16 different beers and three ciders on tap. A spotless 100 foot (plus) window grants guests a view of how their beer is born.

Schultz is the Yeast Wrangler and Bacteria Whisperer in residence at Florida Beer. In more technical terms, she is a microbiologist with a passion for science and a taste for beer. “I first visited as part of a tour on a cruise ship excursion. I started talking possibilities to Florida Beer staff and six months later I’m here. I’m living the dream,” she says. Essentially, she carefully monitors the care and feeding of the yeast who weave malt into delicious beer. Schultz describes her alchemy of hops and yeast in scientific terms. “My analysis program includes “per product batch” quantification of IBU (International Bitterness Units), ABV (Alcohol By Volume), SRM (Standard Reference Method) in degrees Lovibond aka the beer color scale, pH, dissolved CO2/O2 content, calories per ounce, degrees Plato and ...more. I also overview the management of our yeast and fermentation program... for storage, propagation and pitching.” She also checks the beer at all stages of development to make sure that it’s hitting specific milestones in taste and texture. The analysis of these qualifiers provide a consistent, high quality product. “I manage the quality program across each step in Florida Beer Company’s brewing process from raw materials to final product - what we like to call “grain to glass”.


Luke Erdody, Director of Brewing Operations Erdody has worked at various breweries since 1999, in small pubs and has received his Diploma in Brewing through the London-based Institute of Brewing and Distilling (IBD). “I provide direction on everything from raw materials to final product including daily operations and scheduling. I oversee all brewing operations, transportation, and packaging. There are a lot of things to look out for from raw products to final product. All of our beer standards and specifications are steps that we take every time to ensure that each bottle is the same. It’s hard work but we enjoy it.”

Horan has spent the last nine years learning about beer. “I started with the Indian River Beer Company in Melbourne (which is now Florida Beer Company) and learned about the process and studied research.” After the brewing process, the beer is packaged in either bottles or kegs and prepared for shipping. “We bottle between 80 and 90 bottles an hour, five days a week. I oversee from bottle to finished packaging. We basically have three stages to packaging: filling and capping the bottle, air drying and labeling, and finally they’re packed into cases and kegs then loaded on pallets.” “At the end of the process I test and compare the oxygen and carbon dioxide levels. We want enough foam down the headspace. We have a high pressure jet that agitates the beer as it adds the caps quickly to minimize the oxygen and preserve shelf life.” The bottles are run through an air dryer to ensure that the labels don’t fall off.

“One label on the neck and one for the bodies that’s applied by the machine by a rubber mallet and brushes that turn the label around the bottle. We place a code that shows the date it’s produced called the Julian date. The bottles then drop into the cardboard packages in a 4-pack or 6-pack and into the box for shipping.” Continues on Page 42

Rib Shack If you’re driving down US1 in Rockledge with your windows down, there’s a good chance the delicious smell of smoked barbecue will waft into your car. Follow the aroma to JR Rib Shack. There you’ll find JR himself, his shack, and his smokers. Customers can order ribs, chicken, turkey and a multitude of sides from a walk-up window. But he enjoyed grilling barbecue the most, so he focused on mastering the craft. He started grilling professionally by the age of 20.


Eager to follow in his parents’ footsteps, JR owned and operated Rib Shacks in both North Carolina and Georgia. Upon moving to Florida five years ago, JR was pleased to find that people everywhere enjoyed good old fashioned smoked barbecue. Armed with this knowledge and

Can you recommend a tried-and-true hangover cure? If you’ve had a little too much at the holiday times, I would suggest to just keep on drinking and celebrating the next day to prevent any unwanted hangovers. What is your favorite holiday movie and why? My favorite holiday movie is “Elf ”. I like this movie because It shows the inner child in all of us.

Funkle Fester By Kelsie Sandage

At Rick Piper’s November reception of his new Big Art Studio in the Mai Tiki Market, five of the seven members of Funkle Fester turned up the heat of the cool rain that gently misted over the assembled crowd behind the Tiny Turtle. We enjoyed thumping bass and guitar chords, a crisp saxophone, and a variation of beats from their two percussionists. Funkle Fester began in 2012 as a jam band in Satellite Beach with John Alison (Guitar), Keith Capizzi (Drums), and Michael McCutchan (Bass) playing every other Thursday at John’s house. “It wasn’t until we met these guys that it really became a band,” says Mike about the other four members of Funkle Fester. He is speaking of Patrick Riordan on saxophone, Mark Sunderland on trumpet, Bill Hanney on keyboard, and Reid Siljestrom on percussion. The result is a full-flavored band brimming with talented musicians who fully enjoy the music they are playing. It shows in the way they feed off of each other’s performances to enhance the song and atmosphere of their set. As soon as Funkle Fester started in on their first song, people from all walks of life streamed into the courtyard at Tiny Turtle to enjoy a fun evening with the community. Funkle Fester did not disappoint. They played through the rain and had most grooving to the tunes. Some are instrumental variations of songs by other bands, and at other times they are just building off a tune another member is playing. Sometimes they even switch instruments mid-set just to try something different. Each song showcased their talents along with the influences of New Orleans bands, funk, rock, blues, and melodic worldly tempos. I spoke with them during their set break to find out how Fester got so Funky. “John suggested Funkle Fester as a joke, and

then I took the idea to my house and put a picture together and I thought it looked so funny that I had to figure out how to use it,” says Keith. “Then we put a poll of Facebook and let the people decide.” Keith is referring to the Funkle Fester logo that uses the original Uncle Fester’s head with an illuminated light bulb in his mouth superimposed over the body of James Brown. With their embodiment of Funk in place, they decided to take their jam sessions to local audiences. “Really it’s an excuse to get together and drink beer, and you know, hang out every other weekend and play music,” jokes Patrick. “Every time [we play] it’s different,” says Keith. “If it gets kind of quiet, one of us will start something, like he [Reid] will start playing the timbales or I’ll start playing the drums louder, or we’re quiet on the drums and they’ll pick up.” Things are definitely picking up for Funkle Fester. They are playing more shows locally, with a show at Rusty’s in the Port coming soon. As John put it, they will take the shows as they come, and keep having fun whenever they can as they keep their eyes towards the horizon. What’s on that horizon, you may ask? “We jam in John’s home studio, so that works out really well, but we have studio time at Full Sail in Orlando, in the near future, sometime in January,” says Patrick. “But it’s hard to get us all together. There are seven of us, and we have to all collaborate to get in there,” explains Keith. One thing is for sure, when they do come together, the collaboration is a unique blend that is easy to listen to and fun to dance to.

Sarah McLachlan The Classic Christmas Album Sony, 2015

This was originally titled Wintersong, and this year is re-released as Sarah McLachlan’s all-inclusive Christmas album. With tracks going as far back as 1994, it’s a great representation of her artistry. Christmas albums aren’t meant to convert new fans. They are designed to give the fan base something tailored for their long ingrained tastes. This collection gives us some interesting choices and probably the best alternate reading of John and Yoko’s “Happy Xmas (War is Over).” She plays it straight and removes the bits you never wanted to hear in the first place. (This is a Christmas review, and I won’t be negative.) And in light of the state of the world, it’s a nice thought.

Joni Mitchell’s “River” is a great choice for her voice. “Wintersong,” an original composition, sounds close to her 90’s hit “Angel.” The stand out track comes from a Canadian TV collaboration with Barenaked Ladies. “God Rest Ye Merry Gentlemen/We Three Kings” is lively, fun and easy to hear too many times. But really, you won’t mind it. McLachlan duets with Diana Krall on the Peanuts TV special ditty “Christmas Time Is Here.” “I’ll be Home for Christmas” has a New Orleans’ horn thrown on it to make it swing differently. This is a great disc for hangin’ out once the Thanksgiving

turkey has been reduced to bone, or if you want to decompress from shopping stress. Plenty of people have done the upbeat rock/rap Christmas thing. Pour yourself a double eggnog and chill out. It is Winter after all.

The Complete Concert by the Sea Sony Legacy, 2015

In the house where I grew up, there was a copy of the original on vinyl and at least two on cassette. When I came back to visit as an adult, I found a copy on CD. It was a popular recording to say the least. “Concert by the Sea” is one of those magical recordings that transcends time, place and genre. People who

wouldn’t identify as jazz fans made this required listening. The single disc release has been lovingly restored, cleaned up and re-released in it’s entirety in this three disc boxed set. The reissue doubles the amount of music with 11 previously unreleased tracks. Originally muddy, the sound is greatly improved. “Mambo Carmel” is a bright eyed number made fresh once more. “April in Paris” winks slyly for still holding up as the soundtrack of many a great swingin’ bachelor pad. From the newer material, “Bernie’s Tune” is a stand out. Starting off playfully, it soon enough launches into a double quick bop feel. “Lullaby of Birdland” strides with a confident playfulness. This is not just an album for purists. It’s here to be discovered and delighted in by new listeners as much as old, this time with a more clear picture of all that transpired in that sleepy seaside town.

Grace Potter Midnight

Hollywood Records, 2015 Grace Potter, best known for her earthy, bluesy jam band leanings, has decided to put on some kicky heels and go to the club for this latest disc. Keyboards and synths take center


about how, “There’s gold in them there hills.” A man obsessed with the unobtainable, he is finally resigned to a life of want, “Under a stone you cannot roll/Beneath the leaves of the trees/The ghost, the dark and the breeze/I hear it calling me.” On “Sleeping When” the guitars scratch, deep rough angular slices against the rhythm, trying to find their way out. “Cloud Fight” is animated and more forceful in its delivery. Exploring the darker side of their psyche without going all doomy-metal (it’s been done to death everybody, please take note), Heart of the Whale vacillate between stark, tension filled and visceral indie rock. Lou Reed and Sonic Youth’s overblown stage, instrumentally speaking, bolstering her expressive and steamy vocals. Lively and soulful, Potter hasn’t done a complete 180. “Empty Heart” is a rock song dressed up and pushed through a pop filter. “Nobody is Born with a Broken Heart” is a standout track. Hopeful with anticipation, this a narrative song where she hints at gospel and lets the guitar player do his thing. This is a breezy collection of numbers, Potter is tapping into a different part of her musical personality than we’re used to seeing, and that’s fine. She’s good at it and it’s a pleasure to hear her challenge herself.

guitar freak-outs are obliquely referenced, with thankfully brief squalls of art house noise. Focusing on creating an atmosphere, not unlike a psychological horror film where the protagonist is at odds with himself. There’s a captivating restlessness at center of this album which deserves to be explored.

From Ukraine comes this exceptionally beautiful and elegantly understated electronica duo, Lakeway. This four song EP, Heartbeat, flits and dances

easily, with arrangements which leave a lot of breathing room. It would be easy to focus on Dima’s velvety, soulful voice, but Alex, credited with guitar and synth, allows the arrangements to serve the song first. Lush and as sweetly optimistic as the first blooms of spring, these songs yearn hopefully for more. The sense of restrained desire Alex and Dima serve up is palpable. “Heaven” and “Late” are both stand-out tracks. “Heaven” opens tastefully, quietly, while the vocals tender delivery speaks of longing. Lakeway offer a sensuous sophistication and refreshing break from manic 240 bpm electronica.

You want something sweet? There are lots of great ways to satisfy the cravings with cakes, ice cream and other treats. And if all else fails remember that money cannot buy happiness, but it can buy a skateboard and that is almost the same thing.

This might just be the biggest event of the year for the Cocoa Beach surf community. The 7th Annual Surfing Santas will have spectators from all over the country, and breaks attendance records every year. Come join Santas, snowmen, Christmas trees, and elves in the water, or just watch a group of Santas parachuting from a plane! The event raises money for Grind for Life, and was the brainchild of George Trosset, Sr., a Cocoa Beach local who just wanted to have some fun surfing on Christmas Eve Day. Coral Schuster This month I sat down with a young boardrider who is wise beyond her 13 years. With love, thoughtfulness, compassion and faith pouring out of her, Coral Schuster is on a mission to bring light to many. Coral was born and raised in Cocoa Beach and is the youngest of four siblings. She’s a 7th grader at the local Junior/ Senior High-School and is happy to have one of her older sisters there as well. Growing up in Cocoa Beach, Coral has salt water flowing through her veins. With all her accomplishments, you can tell the ocean has been calling her. When Coral was eight years old, she watched a friend surf. From that point on, she decided it was time to become a surfer. Coral went home and asked her older brother to show her how it was done. By the next morning she was up and riding. Only a few days after learning, Coral entered in the local National Kidney Foundation contest. She made it to the finals and took 6th. After that competition, she decided she wanted to stick with the sport. Recently, Coral and her personal chauffeur (Mom) have been doing a lot of traveling up and across the coast. During the summer, they traveled to Huntington Beach for Coral’s first national event. She took 3rd in her open division heat. A few weeks ago, they were in Nags Head, NC for the Easterns Championship. Next was the inlet for ASF Championships, where Coral took 3rd in the Under 14 Division. Another trip to Nags Head for Surfing America Prime had Coral place 2nd in the 16 and under finals. This busy bee also keeps her feet on the ground with being

a member of the Cocoa Beach’s cross country team. They made it to regionals before finishing their season for the year. Coral’s other main passion is her faith. She recently started a local group called “Groms for God,” and her goal is to help groms find faith. Coral holds a bible study with Randy Nolan of FLOW surfers at the local “School of Surf ” every other Wednesday called “Walk in the Light.’” Coral has a blog, Facebook and Instagram page where she inspires and encourages all to be the best they can be. Her mom mentioned how proud she is of Coral. “Coral has been recognized by people when we are in other states because of her blue cross on the bottom of all her boards. It’s been crazy to have kids and adults mention that they follow her and how they love the role model she is for the kids.” With the end of the year fast upon us, I asked Coral if she had any goals for 2016. She simply said she would like to get straight A’s for the rest of the school year. I asked her to end our session with some shout-outs and advice for the groms. Coral said, “Thank you to my many sponsors, and my parents who kept me surfing and support what I love. To all the groms, stick with it! Have your mind, thoughts and heart toward God and he will direct you and help you find your way.” It was a pleasure to sit with Coral and learn more about her passions. They are strong and good-natured. To you all and your families, I wish you peace and love in the holiday season, however you might find it.

Winter Fishing!

Last month was pretty insane. We caught a lot of fish, especially those giant bull redfish. The redfish bite has been awesome due to the amount of bait that has been holding on the beach. Most of the fish on the flats have been in the slot but every now and then you’ll catch a couple fish that are well over the slot. Jigs, jerkbaits, and cut bait have been the ticket for them. Make sure to keep your cast net in the boat. My favorite jig to use is a 1/8oz jig head with a 3” gulp shrimp, for you jerk bait lovers a 1/8oz jerk bait hook matched with a gulp 5” new penny jerk shad will be deadly. As it gets colder the trout bite will get better, a lot smaller to your mid slot fish. You’ll find large quantities of them in deep drop-offs and inside deep creek mouths. You can pretty much catch them on anything but my favorite is the mirrodine. This lure looks exactly like a small injured mullet that they can’t resist but strike at it. Redfish

will bite it also. Jigs and live shrimp will also work just as well. Snook season is just about over so for you snook lovers you only have a couple more weeks. Sebastian Inlet has been the place to be. Buck tails, bombers, live croakers and pigfish have been working best. There is also redfish mixed in with the snook so you never know it

could be a red or a snook you hook. The kingfish bite has also been good slow trolling live pogies. There are other species

that we also catch sometimes while targeting kingfish like cobia, sailfish, mahi mahi, and triple tail. Well, that’s all I have for you this month so be safe and good luck on the water. Oh yeah, I forgot to mention that duck hunting just opened up so for you duck hunter junkies be safe in the marsh!

As I sit down to write this article, Thanksgiving is rapidly approaching. Ergo, I have little time to write as there are foods to prepare, and more importantly, to eat. I’m thinking about stuffing some shrimp into a sardine. Stuffing the sardine into Spanish mackerel. Stuffing the Spanish mackerel into a mahi mahi. Then stuff the mahi mahi into an amberjack. Once it’s all put together, I’ll smoke the whole thing for several hours. Once it’s smoked, I’ll cover it with a grilled octopus, a lemon butter sauce and serve it on a giant serving tray. I think I’ll call my creation “Thanksgiving Kraken”. And at dinner everybody will get chopsticks and a blindfold. Anyway, at least a man can dream... As far as fishing in November went, it had its ups and downs. Both the fishing and the ocean. There were a fair number of rough days and some fishable days following. On the fishable days, the fishing was hit or miss. It seemed like the offshore fishing was on one day, off the next. The nearshore fishing seemed to be the most steady. The big breeder reds were the best bet for the majority of last month. The best fishing was the days the pogie pods were balled up in the bight. The redfish were schooled up under some of the pods. When you found the right pods, you could literally catch one on every cast. If the bait pods were missing, the reds could be caught by anchor in up and fishing cut baits. If the bait stays around for

December, there should still be a good chance at the reds. As the water cools a little bit, there should be a good chance at some sharks like blacknose, blacktip and finetooth. The best bet will be fishing around

the bait pods with live bait on a slide sinker rig. If the bait is not around, try anchoring close to the cape shoreline and fishing live or cut bait. Cut bonito, bluefish, Spanish mackerel and lady fish are all excellent bait for both the Reds and sharks. Although it was an on-again, off-again bite, November did bring in a bit of a kingfish run. With the kings were a decent number of dolphin, a few sailfish and an occasional blackfin tuna. For December, I would expect to see this action continue and to get better as the month goes on. We should start to see better numbers of the kings, sails and tuna,

while the dolphin numbers are likely to remain about the same. I have to say that the bottom fishing last month was less than spectacular. Most everything on the bottom was hard to find. Hopefully, December will bring some big changes to this fishery. Normally, December is the best bottom fishing month of the second part of the year. I’m going to cross my fingers

and hope the groupers and amberjacks start to show up like they should be. If you like to troll, December can be a great month to target the sailfish. The sailfish will be from the kingfish grounds on out to deeper waters. The problem with trolling on the kingfish grounds will be the cost of the ballyhoo you will go through. You may want to concentrate your efforts away from the inshore reefs. Whatever the case, get out there and get you some fixins’ for the Kraken. It’s going to be the new tradition!! The next time you are walking along the beach look closely at the lines of debris left behind by the receding waves. Notice the tiny bits of multicolored particles? Upon closer inspection you will find that a large portion of it is plastic, referred to as microplastics. Why is this a problem? According to the The Florida Microplastics Awareness Project, the microplastic particles contain toxins that are harmful to life. Also, according to the University of Florida Sea Grant project, other toxins in the environment are attracted to and easily adhere to their surfaces. These tiny particles are then accidentally eaten by marine life, threatening their health. They may also impede an organism’s ability to eat. Microplastics are formed in several ways. Polyethylene microbeads used in toothpastes, facial scrubs, etc. are one source. Plastic bottles, bags, toys and tools that end up in the ocean from ships or shore don’t biodegrade. Instead, they photodegrade into smaller and smaller bits of microplastic. All of these tiny plastic particles wouldn’t be such a big problem if they quickly broke down into simpler chemical forms. But plastic molecules are very resilient and could remain intact to threaten the environment for thousands of years. And of course, if you eat seafood you may be getting some of these microplastic particles (along with their toxins) in your diet too. The Florida Microplastic Awareness Project (FMAP) is a citizen-science project funded in

2015 by NOAA’s Marine Debris Program. Volunteers are collecting coastal water samples, filtering them and looking for microplastics. This data is being put into a Google Maps database to show the concentration of these particles visually. 11/13/2015 - TYNDALL AIR FORCE BASE, Fla. -- The Air Force Civil Engineer Center’s Asset Visibility Team worked with base civil engineers at Malmstrom Air Force Base, Montana, and Patrick AFB and Cape Canaveral Air Force Station, Florida, recently to identify energy-saving opportunities and provide substantial savings for the Air Force. One tool used by the AVT to identify energy conservation measures is the “spearfishing” methodology. The AVT coined the term “spearfishing” to describe an expedition that involves taking a deeper dive into rediscovering and harvesting previously-realized energy and water saving opportunities. The spearfishing initiative is part of the AVT concept of operations which was put into place in 2014. Energy-saving opportunities that are

identified can be funded either through AFCEC’s “Just Do It,” or JDI, funding list or the integrated priority list, or IPL. The JDI funding initiative opened the door for the AVT to fund “micro” energy projects that are of work order scope, rather than project scope, while the IPL focuses on larger, longterm savings projects. “Spearfishing has become effective because of the way the civil engineering enterprise has changed the business rules and

added tools to give more flexibility for implementing savings opportunities. Rediscovering previously identified opportunities can now provide a real benefit, where previously there were obstacles to their implementation,” said Michael Clawson, AFCEC Asset Visibility Division chief. Base civil engineers and the AVT have collectively identified and validated $15 million in investments that could yield the Air Force over $51 million in potential operational energy savings across the 20 bases visited by the AVT. Since 2013, the $1.2 million of JDI funding invested at 20 bases will yield approximately $20 million in discounted operational and energy savings over its life cycle, Clawson said. Members of the AVT have extensive Air Force base level experience as well as working knowledge of the Automated Civil Engineering System, or ACES, and Interim Work Information Management System, or IWIMS, software programs. They work closely with base energy managers, engineers and maintenance personnel to discover and validate opportunities. “I work diligently with the base personnel to find those opportunities and dive deep into any avenue possible to find those projects that are eligible for JDI funding for long term

The spearfishing team collects data from the assessments and reports to evaluate energy data

and perform comparative analyses of report findings. The team also looks for new energy products and opportunities for using renewable energy and innovative technologies. While spearfishing, the team looks at buildings on the demolition list to see if there are high payback opportunities associated with consolidation of base facilities. They look at light-emitting diode, or LED, technologies for both interior and exterior applications such

as street and parking lot lighting as well as other energy-saving devices that would produce energy or operational savings for the base.

Day three brought us back to Asheville to explore the Biltmore Estate. Those Vanderbilts did not mess around when it came to their living accommodations. Needless to say, the largest single family home in America was breathtaking. Exploring the gardens, grounds and house itself transported me back in time. I imagined myself a guest in the vast American palace. The house and grounds had just been decorated for Christmas, and a 30-something foot tall tree in the Great Hall didn’t even tickle the ceiling. Now normally I don’t think Christmas should be celebrated until Thanksgiving has had its due, but the decorations

were stunning. I even found myself humming some carols. The tour of the house itself took more than two hours, and we had spent roughly that amount of time at the estate winery beforehand. By 8:00pm we were all exhausted. We made our way back up the mountain for our final night’s rest in North Carolina. We left our cabin at 6am. That miracle of modern transportation had us out of the cool mountain air and back in the balmy Florida breezes within four hours. It’s not Apparating, but it’s not bad. Not bad at all.

Spectre

Dir: Sam Mendes

Stars: Daniel Craig, Léa Seydoux, Christoph Waltz James Bond (Craig) uncovers a shadowy organization and his past comes back to haunt him. After enduring his early “brutish 00 novice” and “retirement” career stages and gaining his MI6 family (M, Q and Moneypenny) Craig’s finally settled into the 007 role. Though Waltz’s villain roles tend to be similar, he’s perfectly cast as the head of Spectre. Seydoux plays a Bond girl with personality and conviction instead of a helpless damsel. Attempting to shine light on Bond’s past, the personal plot device fails to strike an emotional chord but it does lead to a clever character reveal. A subplot involving the possible shutdown of MI6 unnecessarily lengthens the film and the story’s third act and contains an intense encounter between Bond and his nemesis. However,

it fails to follow the action precedent set earlier in the film. “Skyfall” set the bar so high for Mendes that it’s difficult to replicate strong storytelling. The story includes references from both Craig’s tenure and classic Bond films mixing the old with the new (i.e. Spectre being a name rather than an acronym.) The characters are rich, the introduction (including a three minute tracking one shot) is spectacular and the action scenes are

incredible. From another memorable opening sequence to Bond making off with the girl, Craig makes his possible exit from the franchise in stylish James Bond fashion. Grade: A-

The 33

Dir: Patricia Riggan

Stars: Antonio Banderas, Rodrigo Santoro, Juliette Binoche

Based on actual events in 2010, 33 Chilean miners (including Banderas) are trapped underground when a gold and copper mine collapses. Family members of the miners (Binoche) united with Chilean officials (Santoro) press for government aid until help arrives. When the survivors are finally found, the trouble doesn’t end there as the process of getting them out begins. When dealing with a dozen or so characters

(let alone 33), the typical Hollywood decision is made to mainly focus on a handful of characters but the individuals are unique. At first, the characters are just seen as recognizable actors but throughout the movie, they evolve into people you actually care for. Contrasted between the underground darkness and the light of the surface the film features a unique camera style. Ironically, the doubt and worry lies mostly above ground whereas the miners below remain strong through brotherhood. For 69 days, the men were afraid together, they starved together and most importantly, they hoped together. Grade: B-

Love the Coopers

Dir: Jesse Nelson

Stars: Diane Keaton, Ed Helms, Olivia Wilde Various members of the Cooper clan (Keaton, Helms, Wilde) prepare for their traditional family Christmas. It isn’t an overly done Christmas movie like “Christmas with the Kranks” or “Deck the Halls” but more like “August Osage County” with decorations. It has comical moments but mostly dramatic and

depressing. All the talented actors starring in the film are wasted and only advertised so the film can make a buck. What appears to be a sweet romantic comedy ends up being intertwining stories about trying to hide divorce, lying about who you really are and putting on a fake smile for family. Instead of a cheery Christmas film, we get a film based in reality that’s depressingly honest with people arguing and expressing how unhappy they are with their lives. Normally, actors like Diane Keaton, John Goodman and Ed Helms are pleasant to watch. A subplot involving Wilde and an army soldier keep you hopeful as it is the only story with any real resolution. Narration from funny man Steve Martin and some cartoony exaggerations from some characters keep the tone light but there really isn’t anything to love about these Coopers. The film is 90% “bah humbug” and pretension with only 10% “happy holidays” and heart. Grade: D
