Coronavirus (COVID19) affects all of us in some way or another and we don’t know what lies ahead. It is crucial that we all act as a community that looks out for one another. During these trying times, we still band together as a community even if it’s six feet apart or through electronic devices. In our lifetime, we have never seen such an impactful global occurrence affect the world like this. Coincidentally, this year we launched The Green Issue to share our love for our environment. We can all agree that we love our planet: the deep blue ocean, the sky above, the grass below and the air we breathe. However, what are we doing to keep it beautiful? At this time, I challenge you to find a way to do your part to protect our planet. Whether it’s reducing your carbon footprint or volunteering your time with an organization, find a way to give back. Grab a pair of gloves and a trash bag and pick up the trash left on a busy beach. Start utilizing reusable bags when you buy groceries. We have more examples in this issue and on our website on how you can go green. Many of you may be out of work, worried about how your business will survive, stressed about the unknown or getting stir-crazy. We are too. We are all in this together. Use this time to check in with others, connect, find reasons to be grateful, step outside for sun and air, move your body, find a creative outlet, and to cross off things from your dusty to do list that you never had time for. Leaders throughout Brevard County have been going green in their communities in all kinds of ways. In 2019, the City of Melbourne offered a composter rebate program, the City of Satellite Beach banned single-use Styrofoam at city venues, and the City of

Cocoa painted storm drains to help educate residents on Lagoon health. Sustainability is important because it not only protects the earth but also improves our quality of life.

Our choices affect our environment and community. For the most part, it is relatively

simple to maintain a “green” lifestyle. It’s just a matter of adjusting your awareness and habits. One way you can start making a personal difference in the world today is by using the zero waste philosophy: refuse, reduce, reuse, recycle and rot.

A majority of your trash is sent to a landfill and by 2021 we will only have 10-15 years of landfill capacity left in the United States. Every purchase we make is a vote for the

world we want. Start refusing things you don’t need like freebies, bottled water, junk

mail, and disposable products. All those things you are not using had to be produced at one point.

Another way to minimize clutter is by reducing your consumption. Opt for things like

bamboo instead of plastic, bar soap, and multipurpose products. Material things do not make us happy in the long run and thankfully there are reusable alternatives for almost every single-use item.

Reusing is an important step in learning to live more sustainable because it cuts down on consumer purchases and saves us money. Find yourself a reusable water bottle,

shopping bag, container, batteries and secondhand items. This way, we do not have to waste our scarce resources on producing more stuff.

Now that you’re rethinking your consumption, put your recyclable waste in the right

place and reduce your food waste by composting. Rotting waste will provide you with nutrient rich fertilizer for your garden and help reduce dangerous chemicals in the environment.

Saving the planet requires individuals to make lifestyle changes that take the environ-

ment into consideration year round. By working together, we can make our community a cleaner and greener place to live and to pass onto our future generations!

FISHING REPORT OFFSHORE

April is typically a better month than March and this March was the best we have ever seen. The perfect storm for phenomenal fishing is happening and those who are not scared to get out and take advantage of fresh salt air and vitamin D will be rewarded. Deep drop fishing for golden tile fish is also going to be great and is the perfect plan to combo with a day of mahi fishing. It really doesn't take any effort at all to make a few test drops if mahi fishing happens to be slow the day you are out in the deep water or if you want to put a little bottom variety in the fish box. The key will be to stagger your drops by depth between 500 to 700 ft of water. Once you get a bite that will be the depth you want to stay in the rest of the day. Live bait trolling the main reefs and wrecks with pogy's or threadfins is hands down the most action packed and consistent fishing we have. This is almost always the case no matter what time of year. April just provides a greater chance at a wide variety of species. King mackerel will be the most aggressive but you will also catch mahi, cobia, tuna, sharks, sail fish and wahoo. King mackerel might be 10 to 1 on the other species but if action and ease is what you want then live bait trolling is the way to go. I am writing this a few days ahead of time and I do not know what this virus is going to allow everyone to do. If we still have our freedom to be out and about or it quickly passes, I highly suggest getting the family on the water, in the sun, breathing in fresh salt air and taking advantage of the unbelievable fishing this month. We can expect a very good mahi run this year. The bait has pushed in and a lot of nice fish will be on this side of the Gulf Stream because of the long stretch of very calm sea conditions we have had. Sailfish and black fin tuna will also be in the mix so your very best bait is going to be small select ballyhoo rigged naked and leave it up to your teasers to bring everything into the spread.

INSHORE

Spring is in the air! Finally, a break from the cold, windy, and down right miserable weather! Spring is here and providing multiple options when it comes to fishing the flats. From Cocoa Beach, all the way to Mosquito Lagoon, spring typically has some great fishing; whether you want speckled trout, redfish, or even snook and tarpon, spring can be a great time. Thankfully spring is a little warmer and generally has nicer winds. Relatively dry winter water levels have stayed low and the water has been clean! These conditions can be some of the best for early season sight fishing snook and sea trout along the mangrove shorelines and docks. Look for areas with a slight depth change from shallow to deep and you’re sure to get on some good fish! Not only will the snook and tarpon start to make more of an appearance, but also the bull reds will gradually make their way to their typical spots. Larger sandbars with steep drop offs such as whale tail and tiger shoals are prime habitats. Large cut baits like ladyfish, black mullet, or whole blue crabs are the bait of choice when it comes to these giants! It’s not as common to catch these fish on artificial; most fish are 20 years old or more and have seen it all! Although, when the stars align it’s not impossible.Gulp shrimp, mirrolure lil johns, and d.o.a paddle tails are always great go-tos. The inshore bite should continue to improve and only get better as the weather gets warmer!

GET OUT OF TOWN

Springfield, Missouri By Misti Blu Day McDermott @mistibluday

You may have heard of Ozark on Netflix, an American crime drama with Jason Bateman that takes place in the Missouri Ozarks. Technically, the show was not filmed in the Ozarks or even in Missouri, but it did weirdly bring some interesting attention to the Ozarks. The Ozarks are located in the southernmost (and west) region of Missouri and even spills over into Arkansas and Oklahoma. A popular must-see spot is Table Rock Lake, near Branson, Missouri. Everyone comes here to get some sunshine, take a spin on a jet ski, swim, boat rides, fishing, or just enjoying the view from their tent or cabin. Branson is quite an interesting place. It’s very touristy and very country. My favorite part about the area is that there are many caves. Missouri is actually known as the cave state due to the 6,300 known caverns. Missouri, the Show-Me-State, is a major center for beer brewing and home for Anheuser-Busch, which is the largest beer producer in the world. As many know, besides Trump, Kansas City Chiefs are from Missouri and they won the Super Bowl this year. Springfield, MO is home to Missouri State University and has a population of 168,122 (in 2018). The original Bass Pro Shop is massive and originates in Springfield. When you go downtown, you’ll see great food spots with one-of-a-kind flair owned by locals, artsy salons (Blu Skies Salon), local art galleries, and coffee shops. Springfield is home to A Beautiful Mess (@abeautifulmess), once a small local art, fashion, and baked goods shop owned by two sisters that has flourished into a huge successful blog and business. Brad Pitt also went to high school at Kickapoo High. The donuts are better than anywhere else, Andy’s Frozen Custard is a must, and Cashew Chicken is famously from Springfield. The food is good, the people are sweet, and the seasons change. Expect the heat to hit the triple digits in the summer, snow in the winter, beautiful changing leaves and hot apple cider in the fall, and tulips, daffodils and peonies growing on the side of the road in spring. Missouri may not be on your bucket list but it’s a charming little gem.

OSSORIO Bakery and Café is located in the heart of Histor-

ic Cocoa Village. They provide Breakfast from 8am-11a, M-F, till noon Saturday and Sunday. Lunch starts at 11am Daily and they are open until 8:30pm, with the exception of Sundays (9AM-6PM). Everything is made from scratch with the freshest ingredients available. There are no additives, preservatives, artificial colors or flavors. Their omelets are to die for! My personal favorite is the Asparagus & Brie with fruit and a side of salsa. Their coffee makes the larger name chains take a back seat. For lunch, the Sara’s Salad is a popular option. It’s a chicken salad with sautéed onions, celery, tomatoes, raisins, black olives, in a lightly curried mayonnaise over a bed of spring greens, served with a toasted croissant and balsamic vinaigrette. My favorite is the Connor’s Catch, a house salt cured salmon (lox) with goat cheese and cream cheese blend, mozzarella and asparagus, stuffed with baby spring greens, red onions, and a lemon vinaigrette. The sandwiches are wood fire roasted, folded and sliced in half and served with a roasted sweet potato. OSSORIO also serves ten-inch thin crisp flat bread pizzas, also baked in the wood oven. OSSORIO Bakery and Café have something for everyone. They have been open since 2003 (17 years) and have become quite the village hot spot for locals. They recognize their regulars because some of us have been frequenting for many years. It’s a home away from home vibe where you can get fresh home-cooked style meals while running into your other local community members.

Hi! Ever eaten shrimp and grits? As a chef, one of the things I've always been known for is Cajun cuisine, and my signature dish was a New Orleans-style Shrimp and Grits.

NEW ORLEANS SEAFOOD ‘N GRITS (THE VEGAN AND GLUTEN-FREE VERSION!) 4 oz oyster mushrooms (gray, yellow, or pink) 4 oz king oyster (king trumpet) mushrooms 4 oz lion’s mane mushrooms 2 cups fresh spinach

I've done my best to replicate that delectable flavor profile into a more healthy and sustainable dish that would excite the palates of both vegans and individuals that have to be wary of gluten (as I do). I chose to share this recipe because mushrooms are: 1) a sustainable food, 2) full of health benefits that we are only beginning to comprehend, and 3) low in calories and can aid in weight loss if desired.

1/3 cup red bell pepper (or orange or yellow or a combination), chopped 1/3 cup onion, sliced ¼ cup celery, thinly sliced 1 ½ cup vegetable stock, divided (1 ¼ cup & ¼ cup) 3 T vegan butter or olive oil, or a combo of both, divided (2T & 1T) 2 tsp cornstarch ¾ tsp Fishalicious Seafood Seasoning 1 tsp Bayou Voodoo Cajun Seasoning, or more to taste Heavy splash white wine

Tell us a quick horror story about a bartending mistake you’ve made. When I worked at Le Petit Paris in downtown L.A., I bent down to grab a bottle and ripped my pants at the seam and was going commando. It was a long, cold night.

Hodor is a very sweet potbelly Hampshire mix. He loves tomatoes and watermelon. His tusks grow throughout his entire life and he files them by running them across the chain link fence. Local Scribe Steve Romano

Well, the staff informed me that this article will be going digital and I can still make the "Green Issue". The problem is I can't think of a thing to write. I hope by the time you read this we have turned the corner on this virus and it's in our rear view. It does give you a lot of time to think... I consider myself lucky to have grown up in Cocoa Beach. My family came down like the Beverly Hillbillies from Bridgeport, West Virginia. Highway 79 took out our Italian Restaurant and we came to Cocoa Beach in 1972. My Mom and Dad had honeymooned in Cocoa Beach in 1960 and I was born in 1961, so there is a good chance I could have been conceived here. I know these kids today get tired of hearing how we would get up in the morning and head outside and not come back until dinner time but it's true. I grew up on the north side and learned to fish and surf around the pier. Back then, the Pier was a pretty rough place and we had the snack bar across from the real bar. One of my first friends was Dean Wasdin, whose dad Tom was part owner of the Pier, so we acted like we owned the place. When the movie Jaws came out in 1975 people ran away from the ocean, but not Dean and I. We copied the two old guys who used the rope and chain in the movie, but instead of mom's pot roast we caught fish during the day to use for bait. I would tie the rope to the corner and slowly swing it in a circle and then toss it out as far as I could. One of the first nights we went, the rope took off like a bat out of hell (Meatloaf reference) and we had us a shark hooked. He swam back and forth and when he got tired with the help of a few other fishermen, we were able to pull up close. We had another rope, which we got down and looped around his tail and slowly pulled him over the pier. This monster was just over 7 foot long and we thought we caught Jaws! I ran into the bar and told the group of bikers and other regulars to go check it out. I grabbed the phone and called Florida Today and got the Sports Editor. The call went something like this... Me: "Hi, this is Steve Romano and I am 14 years old and me and my friend just caught a HUGE shark on the Canaveral Pier!" FLORIDA TODAY: "Well kid, how big is it?" Me: "It's over 7 foot long and has to be close to 300 pounds!" FLORIDA TODAY: "Call us back when you catch a 10 footer" and HANGS UP. Man those were the days! KEEP FLORIDA...SAFE Social distancing is the new norm and crowds are to remain six feet apart and less than ten in one space. Businesses are closed, people are out of work, and stress levels are high. It’s important to focus on remaining cool, calm and collected throughout this hectic situation. Personally, I need to have a little routine to keep my mind on track. Being productive is good for my mental health. I created a daily schedule that (I printed and hung up) to ensure that I eat breakfast, workout, work on my projects, study, and not melt into bed numbly isolated as minutes go by one hour at a time. I also made a to-do list to cross off tasks that I never have time to do, such as clean my vehicle or make candles. @mistibluday
