Publisher’s Note FOOD FOR CONVERSATION This month President Donald Trump signed into law the fiscal year 2020 National Defense Authorization Act, the yearly bill that sets Pentagon policy.The NDAA directs the Pentagon to create the Space Force, which is the first new branch of service since the Air Force was carved out of the Army Air Corps in 1947.The Space Force will become the Sixth branch of the U.S. Armed Forces. Patrick Air Force Base, and Cape Canaveral Air Force Station, is now designated as a Space Force Base. The personnel of the 45th Space Wing overseeing space operations at Cape Canaveral Air Force Station are among 16,000 active-duty airmen and civilians now assigned to the U.S. Space Force. We could potentially see a name change coming in the next couple months. Other re-designated bases are Peterson, Schriever, and Buckley Air Force Bases in Colorado and Vandenberg Air Force Base in California. Space Force now exists in writing, but it is staffed almost entirely by troops who, for now, will remain in the Air Force. The law provides for planning up to 18 months so changes will roll out gradually over time. Decisions on uniforms, insignia, marketing strategies, rank structure and even who exactly will become a member of the Space Force all have yet to be made. President Trump appointed Air Force Gen. Jay Raymond, the head of Air Force Space Command and U.S. Space Command, he will lead the Space Force until a chief is confirmed by the Senate. “Let there be no mistake, the United States is the best in the world in space today, and today we’re even better,” said Air Force Gen. Jay Raymond, the commander of U.S. Space Command, who has led Pentagon efforts in space for months and who Trump picked Friday to be the first commander of the Space Force. “The United States Space Force will ensure that we compete, deter and win from a position of strength in securing our way of life and our national security.” Those details are “not something we’re going to be able to roll out on Day 1,” Raymond said. “This is really important for our nation. I can’t foot stomp that enough … It’s critical that we get this right.” “There are, as you can imagine, thousands and thousands of actions that are going to have to take place, everything from what is the uniform look like to a logo, all the way up to who’s in the Space Force and who’s not in the Space Force,” said Raymond at a Pentagon press conference on Friday. “You know, back in the day when I was a little kid I sat on the floor and watched a man walk on the moon.Today, with this Space Force and with the earlier stand-up of U.S. Space Command and with NASA’s moon-to-Mars, and with commercial industry -- this is an exciting time to be in our business, “ Raymond said. FISHING REPORT INSHORE
CAPTAIN ALEX HUGHEY @capt.alex.hughey The cold is here but the fishing is red hot! Most think of winter as cooler air, Christmas gifts, bonfires and all the festivities that happen along with the holiday season. I personally think of all the awesome fishing opportunities the cool weather brings to the Space Coast! Winter is a fantastic time of the year! When it comes to fishing these cooler months, I really try to get out along the beach (weather permitting). Having more west and north winds in between fronts usually creates some great opportunities for a plethora of tasty fish from pompano, whiting, to even triple-tail and cobia. Casting small 3/4 oz goofy style jigs with teasers tipped with shrimp or sand fleas along the surf is the best method whether by boat or even the land-based angler. But, what I really love is the tripletail fishing! The best way to catch tripletail is by using a 1/8 oz jig head with a jumbo shrimp. Tripletail is found often around buoys, weed lines or even just floating debris; not only are they a great fish to catch but they are flat out delicious! When it comes to preparing tripletail I prefer to use three simple ingredients. Grab a large bowl and put a generous amount of mayonnaise, lightly mix the mayonnaise with garlic powder, and teriyaki sauce, try to get a pretty good balance of each… no measuring required. Next, soak your tripletail fillets in this mixture for 20 minutes and coat the fish repeatedly as it cooks. The best way to do this is on a flattop or grill; serve with mashed potatoes, shrimp and garlic bread for a delicious meal! Happy New Year everyone! We will still have all the great fishing opportunities this month as we did in December so please refer back to the December report at www.thebeachsideresident.com and select (The Holiday Issue) for that information. The only thing different from last month is that groupers are closed off until May. I know everyone is setting goals for the New Year and I bet catching their first sailfish is a goal for many anglers. January is a great time to target sailfish out of Canaveral and our fishery for them is severely underrated. Our water temperature rarely dips below or exceeds what sailfish can tolerate so the key to narrowing your search will be to find the bait they are feeding on. Flying fish are for sure the easiest to spot but you will also find sail fish in the same area where the king mackerel are feeding heavy on suspended bait fish or color changes and current edges that always hold a variety of bait fish. Water clarity need to be anywhere from a clean green to cobalt blue and in addition to bait fish you have other indicators that will also help narrow your search for sailfish. Always be sure to keep a look out for free jumping sailfish because they are very common to see if you keep your eyes scanning the horizon. Schools of bonito, working birds, and seaweed in small or large amounts as long as it is in a formed up line. Once you have located an area that looks promising, you will need to deploy your trolling spread. Teasers and dredges are your very best friend when it comes to catching sailfish. You can keep it as simple as you want or you can get elaborate, however you absolutely need to be pulling something that draws attention. Truth be told, the more elaborate you go the better your odds at raising sailfish. You have many options to choose from when it comes to teasers and dredges, so do a little research and experiment with different options. Natural bait will always outperform artificial in my opinion but rigging a dredge sucks so don’t suck all the fun out of it by going that route until you reach a level where you are trying to record a serious number of sail releases. Starting out I suggest artificial teasers and dredges to get your first sailfish release under your belt and to keep the frustration level down.

Lever drag reels are preferred so you can set the drag just right so that while you are trolling no line lets out except when you get a hit or even snag grass then the bait falls back easily. The reason for this is most the time sailfish will hit the bait with their bill and the bait drops back into their mouth. You might drop and reel back a ballyhoo several times on a strike in your attempt to hook up a sail. You will also pick up the occasional mahi or black fin tuna while doing this style of fishing. If you are continuously getting clipped off from king mackerel you need to position yourself a little further offshore the reef until you start getting less king fish strikes. You also have the option to run a wire rigged select ballyhoo on a planar or downrigger for that occasional shot at a wahoo but if sailfish is the main goal I would leave the wire and downriggers in the boat. All of your actual trolling baits should be small ballyhoo rigged naked with mono. The one exception is the bait being pulled from the up wind side of your out rigger. This bait will need some sort of skirt to add a little weight so everything tracks correctly. Remember this is strictly to increase your odds at

Denver is always top in the rotation of cities I love to visit and there are always so many delicious options for food. As soon as you get out of the airport, you’ll notice the crisp clean air and mountains in the distant horizon. Colorado is also a legal state, so what better way to explore good food than with the inspiration of munchies. You can find an Airbnb that notes “420 friendly” if you plan to smoke where you sleep. Not all hotels have balconies, and though it is legal, you can’t really smoke in public. My husband and I once stayed at Aloft Downtown Denver. There is also an Aloft in Downtown Orlando and other metropolitan cities. It has a very artsy boutique vibe and is linked to Marriott. It is one street o v e r from 16th Street, which is a popular area to shop, dine and play tourist. We had a corner view of downtown. The Big Blue Bear is an iconic tourist attraction: a 40 foot blue bear peeking into the Denver Convention Center. It’s a free Denver must-see. You can also have dinner at the Downtown Aquarian and take a tour after. Denver Art Museum always has a great exhibition and a cool view of the city. The building itself is a work of art. The Denver Zoo is HUGE and they also have pineapple whip, my favorite dairy-free ice cream. It’s basically frozen pineapple juice. There were tulips everywhere and honestly, the zoo was so big that I don’t even think we saw it all but we really enjoyed it. Let’s get to the food, shall we!? I highly recommend and demand that you have breakfast or brunch at Snooze Eatery next to Union Station. Union Station itself is really cool. You have a market, bookstore and many shops inside a 100-year old historic landmark. Snooze Eatery is unforgettable. You can get a breakfast potpie, breakfast tacos, (my favorite) huevos rancheros, Denver’s famous Chile Verde and a selection of breakfast cocktails. If you are looking for gluten-free or vegan options, City O’ City is Denver’s favorite vegetarian food hub, open from 7am-1:30am! The food is delicious, creative and there is something for everyone. 12

Orange peels: wall coverings and water resistance for waterproofing/flashing. Cellulose fibers can be used for carpets and upholstery. Potato peels can be compressed into a wood substitute for wall panels and interior framing (fire resistant and light weight). Rice/grains: straw bales from these can be used in structural exterior walls and provide insulation. I may have over thought it a bit, but I can do that from time to time.

Rainbow “Chicken”
Eating the rainbow is an easy way to ensure that you are getting quality nutrients in your meal. To do this, you must locate a leprechaun… just kidding! It’s much easier than that. Really, it’s as simple as throwing fresh fruits and vegetables into your meals. Phytochemicals are known to have healing powers and are rich in antioxidants, vitamins, and minerals. We wanted to spare our Pet of the Month, Ms. Lily Pulitzer, the carnage of using a more traditional ingredient and offer a chicken alternative for this recipe. The brand I would suggest for this is Gardein and can be found at your local Publix. You can also substitute the protein for shrimp, real chicken (sorry Lily), or roasted sweet potatoes.
Ingredients: · Gardein “Chicken” Strips · Avocado Oil (or oil of your choice) · Red Cabbage · Red Onion · Green Onion · Publix Pineapple with Juice · Apricot Jam · Sriracha · Jasmine Rice · Black Beans · Red and Orange Bell Peppers · Soy Sauce Directions: Heat up a searing pan and drizzle a small amount of avocado oil into the pan. Cook jasmine rice as instructed in a pot. For one cup of rice, use 2 cups of water and bring to a boil, reducing heat and covering with a lid for 15 minutes. Heat up a pot of black beans, seasoning with salt, pepper, garlic and cumin. Put the Gardein strips into the hot pan, or your choice of protein or meat alternative. When it is almost cooked and seared, add the chopped red cabbage, onions, soy sauce drizzle and peppers into the pan. In a small bowl, combine a large tablespoon of apricot jam, a drizzle of Sriracha, and juice from pineapple and mix. When everything is cooked and nearly finished, deglaze the pan with the mix. Serve with beans and rice and top with freshly chopped scallions. JANUARY 2020

Open Mike’s is a coffee shop, café, and entertainment venue in Melbourne, Florida. They are closed on Sundays and open the rest of the week from 11AM-10PM. It began as Florida Discount Music and morphed into a local hub for entertainment, inspired by local musicians and artists. This cafe fuels the masses with good food and in-house organic coffee (roasted by Mike’s wife Lisa), but also fueling the local creatives with a community and scene. Comedians Christian Moore and Paige Possanza are running Open Mike’s WTF Wednesdays. It’s a free event every week where you can check out the local comedy scene, have a craft beer or herbal tea, try an appetizer and get your laugh on, starting at 7pm on Wednesdays. Christian Moore says, “Way Too Funny Wednesday at Open Mike’s is the city’s longest-running comedy show, and helped spawn a local comedy scene that has now been going on for seven years strong. Whether it’s touring headliners, hometown comics, character roasts, or sketch comedy, there’s sure to be something fresh and original for anyone looking for something to do after dark during the week.” January 8th is the 7th anniversary and fellow comedians choose to roast Mike Della Cioppa. There is another facet of this hidden gem, and that is the upcoming birth of Summerland Gallery and Shop. They are aiming for the grand opening around the 1st of February. Esoteric earthy vibes inspired Summerland’s vision of creating a space for local artisans by offering art classes, make and take herbal botanical classes, gallery events, and art get-togethers, as well as a small local
pop-up market. Summerland Gallery and Shop is curated by Mike’s sister Christine Della Cioppa (IG @cdellacioppa.art) and her husband Justin Mjurphy (@mjurph), both just recently back to the Space Coast after living in Los Angeles. Stay tuned for a new mural painted by the curators and Tuesday night sketch parties where you can have some good food, draw and listen to music. Karli Hecklinger from H&D Roadhouse Karli Hecklinger Crane is a seasoned bartender with 16 years of experience. She is from Merritt Island and works at H&D Roadhouse. H&D is all about the community and helping others out. Sure, it’s a good time and everyone has fun but they all give back and have each other’s back. They raise money every week for a good cause or to help someone out. The owners are very caring and generous and Karli is too. She has been a loyal bartender with H&D for nearly 10 years! Karli tells us how proud she is to be employed at H&D Roadhouse and that she loves everyone there.

I went to shake the Bloody Mary mix but the cap was already off and it went all over them! Surprisingly, they were nice to me and we actually still laugh about it today.

Greetings from Paradise!
My name is Lilly Pulitzer (the Silkie Chicken) My sparkling life is inspired by the bright happy colors of Lilly Pulitzer. I’m a very tropical chicken but I was born in Kentucky. I arrived to my Florida island home as a tiny baby with my sibling, Coco, a black Silkie. We were best friends and the cutest chicks ever... until at about 5 months Coco started to cockadoodledoo.. We had been in denial.. We thought Coco was just big boned. The first, adorable crow was caught on video on insta. Coco was a he.. aka Rooster, which is not allowed in our neighborhood... it was a sad day when he moved to a local farm.. We adopted Sugar who then became my new best friend.. Sugar and I start our day watching the dolphins and the sunrise over the Banana River. Breakfast is either a mango, coconut, papaya or bananas ~ all picked fresh from our own trees. Every once in a while we even grow a pineapple! Please note, this is after we each lay an egg. We pay rent - how many of your pets do that?? Our eggs have way more vitamins and make the best creme brûlée ever. Not bragging~ just a fact. Sugar and I play all day in the garden among the many monarch butterflies, red cardinals and Cinnabun, a wild bunny that eats our leftovers. We always have Alexa playing our favorite songs. We like a lot of current music but The Beatles and Motown are our favorites.

I go on a lot of local adventures. Sugar stays home because she has extreme anxiety and is super fast and hard to catch... She really should practice yoga like I do.. namaste Sugar. I love south Cocoa Beach at sunrise... it’s so calm and peaceful. I like Ron Jon’s and The Pier when I’m in the mood to meet chicken fans... they say “Is that a chicken? ”... rude but I forgive them. I hear “The Fat Snook” and “Longdoggers” are amazing.. Have yet to be invited #chickendiscrimination. I love “Moo’s Soft Serve” ice cream in Indialantic and going through the drive thru at Starbucks in my Tiffany blue Jeep creates a lot of Instagram fun. Those employees know how to treat a chick - with a puppuccino! Sugar and I end our day watching the amazing, colorful sunset over the Indian River. We are grateful every day to live in such a beautiful, tropical paradise. Lucky Chicks for sure. As my idol and namesake said “ Style isn’t just about what you wear. When the wonderful staff here at the Beachside Resident told me that this issue was going to be the “Food Issue,” I stopped and thought about how the food industry has been in my life. Well, first of all, when people would ask me how I got to Cocoa Beach, my reply was always “Highway 79.” That was because that road went right thru my Mom & Dad’s restaurant Sarby’s, named after a combo of their names Sam & Barbara. So we packed up the station wagon and went back to where my Mom and Dad honeymooned, COCOA BEACH! The first Sarby’s we opened up was just north of the pier next to the Dunkin Donuts (Which was not there). Times were tough because the Apollo program had shut down. My Mom cooked a mean red sauce and my Dad stole the idea from KFC that we would serve a bucket of spaghetti and meatballs in a bucket. We moved from there and took over the snack bar on the pier. That is where I learned to surf and shark fish, and those were good times. We finally made it downtown in the mid to later 70’s when we
opened up the Sausage Hut. It really was the only show downtown other than Key West Taco and Jonathon’s. My sisters Cathy and Susie, and my brother Mark also worked; it truly was a family business. The downside to being in high school and working in your family’s deli is that you had to serve your friends. Nothing like getting an empty drink cup shaking from one of your friends who wanted a refill. The upside was that I had a key, so many nights me and my friends would make a pizza and put a few cold ones in the icemaker. How many people reading this remember the after school special? A half a sub, a bag a chips and drink for $1.25. So, how did we get into real estate? Well, my Mom got her license and started doing pretty well but she would always have to leave work and come to the Deli. After a few years, she came home one night from the office and my Dad asked her
sarcastically if she sold anything that day? She said, “yes, in fact I made a big sale!” He asked what she sold and she replied that she sold the Sausage Hut and signed his name on the contract. She told him that he would not have to work and she was going to open up her own real estate office. So I continued on in the real estate field and my brother Mark has two restaurants up in Boston; so, that’s my food story now… go out and enjoy the many great places we have downtown.
