EDITORS’ NOTE: New Chapters & Beginnings The energy that comes with a New Year is infectious. It allows the opportunity for people to start over in some way, even if it’s just something small. Big things too. As a matter of fact, 2017 will have many new things in store for me personally, and for this magazine. After a short trip to Denver in February of 2016, I haven’t been able to shake the feelings that those mountains stirred inside my soul. Therefore, I’ve decided to move out west, and this is my last issue as editor. (I love to eat, so I couldn’t be happier that it’s the Food Issue!)

In the past two years that I’ve worked with The Beachside Resident, I’ve learned and grown so much. It was the best possible platform to get to know the people, businesses, and culture of the beachside. It helped me to learn more about myself and clarified a little further what I’d like my future to hold. I’ve been put into contact with the most amazing people and made directly aware of how much beauty there is here. How lucky I am. Now, the reins are being passed on to the wonderful Natalie

Beginnings are strange beasts.

Sometimes they are as exciting and terrifying as a roller coaster ride. Other times they seem as routine and common as every day. Luckily for me, I got a great start and learned a lot through working with Rachel. Our editor-inchief will be deeply missed. She’s already up north, probably snuggled up to roaring fire, Harry Potter book in hand. The Beachside Resident has been my writing home since 2013. I’ve been a writer most of my life. I wrote my first book in the 4th grade. It was a detective story called, ”Sammy the Snail, Private Eye” -not a runaway bestseller. But writers are built one word at a time.

Palmadesso, who I have worked closely with over the past year and a half. I’ve never met someone more warm, creative, and dedicated to grammar as she is, so I know TBR will be in good hands. Readers, thank you for maintaining this wonderful conversation with me. The power of words never ceases to amaze me and should never be underestimated. I couldn’t be more thankful that I’ve been able to use them in this capacity. Cheers to a new year, and new beginnings.

After countless interviews, articles, and more editing than I care to admit; I’m now the editor-in-chief of the Beachside Resident. I’ve enjoyed writing under the pen name Nataleigh Palmer. But as the editor-in-chief, I will use my given name. 2017 will be an exciting year. I look forward to sharing it with you. Sincerely, Natalie Palmadesso

3ON THE COVER

This month’s cover was inspired by Julia Child’s famous cookbook, “Mastering the Art of French Cooking.” Our issue is all about eating on the Space Coast, and much like Julia’s recipes, it promises to bring fine dining to the home chef. Brevard’s dining is as varied, dynamic, and seasonal as its residents. So, if you have an appetite for culinary adventure, read on. This issue is for you.

CONTRIBUTOR SPOTLIGHT Samantha Deebel, Assistant Mgr/Buyer, Sunseed Coop I started writing for The Resident in June of 2008. I had approached the editor with my wish to write the column, and my opportunity came true in the July issue. I have lived all over the world and have a huge passion for good food. I became a chef at The Black Sheep Cafe in 1990 when theirs quit, and my boss threw me in the kitchen. It was love at first sight! My all time favorite food is Thai Green Papaya Salad. market by my house in Udorn, Thailand when I was in third grade. The sweet, fiery goodness, my friends and I ate it with our fingers out of a plastic bag. My last meal would be at a table at restaurant Noma in Copenhagen eating whatever gorgeous creations Chef Rene Redzepi made for me! My free time is spent painting, sewing, writing, reading, singing, cooking and dipping in the ocean.

CROSS THE

CAUSEWAY Bingo & Garden Parties in Well, another new year is upon us. Wasn’t it just 2000 and we were worried about Y2K and the end of the world? It’s been mathematically proven that time does seem to go faster as we age. Scientific American reports there are five reasons:

1. We gauge time by memorable events (first kiss, first baby, etc.). 2. The amount of time passed relative to one’s age varies. For a five-year-old, one year is 20% of their entire life. For a 50-year-old, however, one year is only 2% of their life. 3. Our biological clock slows as we age. 4. As we age, we pay less attention to time. Kids count down the days until Santa arrives. Adults focus more on family life, bills, deadlines and boring adult stuff and notice less the passage of time. 5. Stress, stress, and more stress.

The great news is nobody ages in the Eau Gallie Arts District. We keep it young, hip, and fresh. All that creative fun keeps our stress level down. Get ready for Friday the 13th of January when EGAD hosts Drag Queen Bingo for the third time at the Eau Gallie Civic Center. It’s just bingo, but with bigger hair, money and more prizes. The doors open at 5:30pm and food and beverages will be available. The games begin promptly at 7pm. Admission is $20 and includes a full set of games and one ink dauber. Tables for 10 may be reserved (a smart move for friends that want to be guaranteed seats together). Beverages and extra games can also be purchased ahead of time

or on game night. Buy your ticket online at egadbingo.com as this event always sells out in advance. It can be a fun night out for an office or a bachelorette party, as well as tons of older folk who just want to play bingo and be entertained by the shenanigans. Attendees must be 21, and we promise you won’t hear the same dialogue at church on Sunday. Otherwise, prepare to have a blast. Maybe you’ll win! On March 8, EGAD will host its second annual Women We Love Garden Luncheon at the Historic Rossetter House Gardens. Presented by Clevens Face and Body Specialists, this luncheon is back by popular demand. We invite you to bring a woman you love for a beautiful lunch in the garden under a big tent and introduce your guest to the group. We love to hear the stories of serendipitous meetings turned into lifelong friendships, or someone wishing to honor a mentor, friend or even family member. There are plenty of opportunities to celebrate motherhood; this is about the value of women’s friendships over the years. Tickets are $50, and it will be sold out so act quickly. Sponsorships are also available. Everything happens online – womenwe.love.

Onion Cakes 8 scallions, finely chopped 1 cup flour ⅓ cup hot water ½ egg, beaten Pinch of salt Fry the onions in a ½ tablespoon toasted sesame oil. Drain on paper towels. Make a well with the flour in a bowl and add the water, egg and salt. Work into a dough with your hands and then let sit for 30 minutes. Divide the dough into six balls. Roll them out into a little circle and brush some toasted sesame oil on the dough and then some of the cooked scallions. Roll into a ball and then flatten to make a little cake. Fry in coconut oil, crisping both sides. You will probably want to double this recipe!

BBQ CHINESE SPARERIBS with Sesame Salt

2 pounds pork spareribs 4 tablespoons soy sauce 3½ tablespoons plum sauce 1½ tablespoons Chinese Rice Wine 6 cloves garlic, finely chopped 1 tablespoon palm sugar Simmer the ribs for 20 minutes, drain and rinse. Combine ingredients and pour over the ribs. Marinate in the fridge overnight. Bake at 350-degrees for 45 minutes, turning halfway through until caramelized. Serve with thinly sliced red and green chilies and sesame salt. Garnish with roasted sesame seeds, scallions, and sea salt.

A Glimpse of What’s Possible It was an actual miracle that a portion of the Dakota Access Pipeline was halted by the Army Corps of Engineers. This miracle contains a recipe for the kind that we need to heal the planet. A miracle is a kind of a gift, an occurrence that is beyond our capacity to make happen. It is something beyond the normal rules of cause and effect as we have understood them. These include the rules of political and economic power that determine what is practical and “realistic.” This portion of the pipeline was intended to pass through a lake on a Native American reservation with the potential to pollute their water supply. Native Americans have traditionally practiced a way of life that emanates from nature and when it is endangered they, and every other living organism, are as well. The Standing Rock Sioux Tribe brought a lawsuit against the Army Corps of Engineers that alleged that the Corps violated multiple federal statutes, including the Clean Water Act, National Historic Protection Act, and the National Environmental Policy Act, when it issued the permits. This decision sets an amazing precedent for defending our environment and clean water supply. Much closer to home, construction is underway for a $3.2 billion, 515-mile-long gas pipeline. The pipeline runs from central Alabama through southwestern Georgia, and into Florida going south into Osceola County just bypassing Orlando. The Sabal Trail Pipeline is a project of Duke Energy, NextEra Energy, and Spectra Energy. Although all federal permits for the pipeline construction are in place, a joint lawsuit filed by the Sierra Club, the Gulf Restoration Network, and Flint Riverkeeper has challenged that permitting process. There is opposition to the pipeline in the three states in which construction is occurring. The Sabal Trail Pipeline, also known as the Sinkhole Pipeline, threatens clean water supply and will damage our environment. As Sierra Club’s Michael Brune

puts it, “It’s not a question if a pipeline will malfunction, but rather a question of when.” The situation at Standing Rock is that of our whole planet. Everywhere dominating forces seek to exploit what remains of the treasures of earth and sea. The usual pattern has been one land grab after another, in which resistance has been futile. But at Standing Rock, something different happened. The whole planet is in need of similar miracles on a massive scale. Around the globe, powerful interests are destroying ecosystems and landscapes, clearcutting, strip mining, and polluting. In every case, the destroyers have more military, political, and financial power than those who would resist them. If this planet and our civilization are to heal, we need to exercise a kind of power that makes money less relevant and doesn’t reduce nature from a sacred, living intelligence into a collection of insensate things: mere resources to be exploited. We must instead invite a change of heart by being in a place of heartfulness ourselves– of courage, empathy, and compassion. We too easily forget the sacred, whether in relationship to human beings or to non-humans like trees, soil, and rivers. Victory at Standing Rock will have far-reaching significance. It established an ideal- if it can happen at Standing Rock, why not globally? If a pipeline can be stopped against great odds in one place, similar violations can be stopped in every place. It will shift our view of what is possible.

START THE NEW YEAR OFF RIGHT AND CALL

New Year’s RESOLUTIONS

KABRAN AIR

WE’LL KEEP YOU COOL ALL YEAR LONG.

2016 is gone. We can’t get it back. Nor do we particularly want any of it–– the politics, the lousy surf, the stress-ridden lead-up and clean-up around Hurricane Matthew. The best thing to do, now, is keep our chins up and hope for a better year in 2017. In that spirit, I’m going to make some surf-related New Year’s resolutions right here in this column. We’ll see how many of these I can keep.

1. Always wait for the set before declaring a spot unsurfable. 2. Work on my rail turns. 3. Ride deeper in the pocket. 4. Straighten my stance. 5. Take time on the outside to breathe in the scenery. 6. Give the kooks a break. 7. Go for more walks on the beachwith a trash bag. 8. Plant some native vegetation in the dunes. 9. Teach a kid to surf. 10. Stop complaining about the sandbars. (Might be impossible.) 11. Stop complaining about the tide. (Probably impossible.) 12. Stop complaining about the wind. (Definitely impossible.) 13. Don’t curse (out loud) at standup paddleboarders. 14. Ride a variety of boards in a

variety of conditions. 15. Take at least one surf trip. 16. Give a few set waves to the shortboarders As for non-surf-related resolutions, maybe I’ll try to keep off of the news sites for a while. Here’s this month’s update from the Florida Surf Museum:

Swap Meet We had a successful swap meet last month. The Museum acquired this surfboard that hung over the bar at the historic Brassy’s Nightclub- a stop for many of the most important rock bands of the late 70s and 80s. The board is a Lightwave surfboard in excellent condition and a great addition to the museum collection.

Christmas Party/ Parade We ran a float in the Cocoa Beach Christmas Parade, which is always fun. Also, I’m assuming the party with Surfrider at the Surfinista Cafe was a good time. Since I’m writing this beforehand, who knows? What can I say? It’s a slow news month.

As always, follow us on Facebook (Florida Surf Museum) or go to our website (floridasurfmuseum.org).

In today’s fast-paced world, eating on the go or during a short window is becoming more prevalent. The need for a high-quality bite and exceptional service is a now a necessity. Luckily for you, I’m taking the hard part out of this daunting task by locating establishments that adhere to my standards and informing you, the busy on-the-fly professional. Today I enjoyed a 24-minute lunch at one of my favorite little Vietnamese restaurants, Mamasans. Mamasans looks like what you would expect from a restaurant quickie; self-seating, small tables, tile, hardwood ceilings, open kitchen, lots of windows, and a chalkboard menu (my fav). I dined in on Wonton Wednesday, which means my large bowl of soup was only $5. Normally, that would have been plenty considering there are about 10 wantons in the soup, but I was extremely hungry, so I also ordered the roll sampler ($7.95) #gains. Both were phenomenal! Just to clarify, this isn’t the same wonton soup you get from your neighborhood Chinese takeout joint. This is the real deal. A well-seasoned broth with dried pork bones, chives, ginger and packed with chicken or pork wontons. If you’re a wonton soup fan, you’ll enjoy it. The roll sampler just happened to be a combination of my favorite rolls; fried egg roll, cream cheese roll, one shrimp spring roll, and one

pork spring roll. I crushed all four before my server could even set the plate down; they’re that good. The cream cheese roll is probably my favorite I’m a sucker for anything cream cheese. I concluded my meal with a traditional Vietnamese iced coffee ($5.25). Vietnamese iced coffee is coffee mixed with condensed milk, so it’s pretty sweet. It’s kind of like a Cuban coffee minus the foam and temperature, but just as sweet. Grand total $19.38 + $4 Tip = $23.38 in and out in 24 minutes.

OPEN for

BUSINESS By Nataleigh Palmer

This year’s Florida Key Lime Pie Festival is pie-packed with activities. Street performers, musicians, exhibits, contests, food trucks, and other attractions will ensure that you’ll never have a dull moment or an empty stomach.

Alan Shepard Park The event will encompass Alan Shepard Park from north to south. The main entrance gate is at the end of 520. You can also get in by way of Sandbar Sports Grill; their key participating partner. They’ll be supplying all of the alcohol-based mixed beverages. Florida craft beers will also get the spotlight, with 15-20 varieties available for purchase. The event will include everything on tap from the Florida Beer Company, as well as craft beers from Tampa and Orlando.

Pie Eating Contest Naturally, Florida Key Lime Pie is an essential ingredient to all of the festivities. Louie Morehead, event coordinator and owner of the Florida Key Lime Pie Company, designs all the events. Every year he hosts their legendary Key Lime Pie Eating contest. He usually keeps the details secret until the time of the festival. “Last year, you had to eat the slices with big plastic clapper hands or ping pong paddles. Everyone wore googly eyes, feather boas, and silly cowboy hats. Just things that make good press. It was a real fun mess.”

Other Contests This year will be the first to include a Key Lime Pie Toss contest. They’ll also have a

Key Lime Pie Hula Hoop contest where participants hold a pie while hula-hooping. The top prize is $100 with different divisions for adults and children. The Miss Key Lime Pie Contest is a beauty pageant for ladies age 18 and up. All rules and regulations are listed on their website.

Hermit Crab Racing Hermit crab racing is actually a real sport. These hermit crabs are carefully trained thoroughbreds sanctioned by the Florida Crab Racing Association. Their multicolored painted shells are individually numbered to help identify your favorite racer. “You pick out your crab, and give it a name. Normally we do about eight to 18 peaks throughout the day and one grand finale race. Winners are photographed with their team crab and awarded a certificate. It’s a lot of fun.”

Performances The Festival will also host street performers from all over the country. Klass Klowne, a stilt walker, fire breather, and chainsaw juggler is bound to amaze. They’ve got a slight of hand magician to confuse, a contortionist who can bend himself through a tennis racket, and a tumbling act. “We have a total of five performers, and they’re all world-class.” Karalyn Woulas, one of Cocoa Beach’s

City Commissioners, will perform with her band Karalyn and the Dawn Patrol. Hypersona, Diamond Dixie. Part One Tribe and That Captain will also provide some tunes.

Food Vendors All of the on-site vendors use all Florida-made products. Everything is handcrafted; nothing you would find in a chain store. There’s an array of food trucks from both central and south Florida. Some of them serve exotic items like grouper cheek tacos or soft-shell crab tacos. Local restaurants will also be participating, such as Mama Jane’s and Longdoggers. There’s also a man who can fry anything, including butter. You’ve got to try it. Apparently, a whole stick of butter deep-fried

tastes just like french toast. Anything you can think of, he’ll deep-fry it. Of course, the world-famous Key Lime Pie in a cup will also be available. “We have it by the slice, and there’ll also be key lime wines, key lime yogurt-covered pretzel, and our flavored popcorn.”

Food Drunk Have you ever tasted something that was so mind-numbing, mouth-watering and delicious that you literally lost control of your motor skills? You lean back in your chair, wrists limp, head rolled back, and all you can do is make incoherent noises instead of actual words? You know the sensation. We like to call it “food drunk.”

For our Food Issue, we couldn’t bear to focus on just a few culinary establishments in Brevard County. The Space Coast has so many restaurants, delis, cafes, and specialty shops that are bursting with flavor, and we wish we had the space to cover each and every one of them. Alas, print has its restrictions. Regardless, we wanted to showcase as much food as possible.

What better way to do that than to have local restaurants send in some of their favorite recipes? Here, you have the chance to attempt some favorite dishes at home to whet your appetite. Hopefully, they’ll be so delicious that you’ll want to go to the restaurants and try more of the menu for yourself. Bon appetit!

Reggae Shrimp

1lb peeled & deveined shrimp (31/35 or larger) Vegetable oil for frying Chopped scallion For breading: 1 cup cracker meal 1 cup fine cornmeal 1 tbsp Cajun seasoning For sauce: 1 pound mango chutney 8oz Mascarpone Cheese (can substitute cream cheese) 1 tbsp curry powder (or to taste) 1 oz water A dash cayenne powder Mix all sauce ingredients in a blender or food processor until smooth. Toss shrimp in breading mix. Fry shrimp in 350-degree oil until done and drain on paper towels for a moment. Add shrimp to a large bowl and toss with sauce. Top with chopped scallion and serve immediately.

Coasters Pub & Biergarten

Coasters Pub & Biergarten is one of those establishments that’s hidden in plain sight. Coasters is tucked in the corner of the WalMart and Winn Dixie plaza on the intersection of A1A and Eau Gallie Boulevard in Beachside Melbourne. Though owners

Dave and Wendy Swartz claim that, based on their research, it’s Florida’s oldest craftbeer focused restaurant, customers that have lived nearby for years are still discovering it today. Dave and Wendy are world travelers and enjoy bringing the best of what they find back to Coasters. You’ll find standard pub fare like burgers and wings, but you’ll also find twists on everyday food like their

Exotic Burger, a half-pound burger with a rotating meat selection based on what’s in season or available. Camel, Elk, Bison, Kangaroo, and Alpaca are items that regularly show up on the menu. The motto is “Real Food, Real Beer.” Coasters’ capable kitchen staff does as much in-house prep as possible, and attempts to minimize the amount of pre-prepared foods on the menu. On it, you’ll find items like Truffle and Bacon Deviled eggs, homemade She Crab Soup, and a unique shrimp dish called Reggae Shrimp. “It’s a recipe that Wendy and I found at a café in Paris a few years ago. It was a flavor combination that we’d never tasted before and it went amazingly well with shrimp. The sauce can be prepped ahead of time. Frying shrimp only takes a few minutes, so it’s a dish that works really well as an appetizer at parties,” said Dave Swartz. Coasters’ Reggae Shrimp is an item that you’ll find at Coasters Pub & Biergarten in beachside Melbourne as well as their new location, Coasters Taphouse, on A1A in Cocoa Beach.

Coasters Pub & Biergarten is located at 971 E Eau Gallie Blvd, Ste A, Melbourne. For more information visit coasterspub.com or call (321) 779-2739.

Spicy Minced Basil Chicken (Pot Ka-Pow)

6 oz minced chicken (preferably dark meat) ½ cup red and green peppers ¼ cup of white onion ¼ cup of minced Thai basil leaves 1 cup cooked rice 1 egg over easy 1 cup of Thai brand stir-fry sauce (instead of Chez Quan’s Magic Sauce) 1 tablespoon diced Thai chili peppers

Chez-Quans Spicy Minced Basil Chicken, or Pot Ka-Pow, is our best seller. This is something my mother has made at home for years, and people seem to really enjoy the way we serve it here. I think it has something to do with the egg, personally. (It’s not that big of a trick. But nowadays, when you put an egg on something, it’s kind of what “sets it off.” Putting an egg on top of the rice is just how it’s traditionally eaten in Thailand.) The spice we use isn’t for the faint of heart. We use real Thai chilies for our in-house heat. Of course, when you come into the restaurant you can choose to dial it down a notch if you’d like or even have

it with no spice at all. But then, you would be missing the best part. A little heat always helps. The seasoning for the dish is a mixture of different spices and sauces that we use to make Chez Quan’s Magic Sauce. Our Magic Sauce is the base sauce for 90% of what we serve. I would have never have predicted this would be a popular dish, let alone our hottest item. If you get a chance, come visit us. We would love for you to give our version a try. Here’s how you can make your own Pot Ka-Pow at home. Instead of Chez Quan’s Magic Sauce, you can use store-bought Thai Stir-Fry sauce.

Chez Quan’s is located at 1470 Aurora Rd in Melbourne. For more information visit chezquans.com or call (321) 622-6979.

In a wok, stir-fry the minced chicken until cooked. Then add the onions, peppers and Thai brand stir-fry sauce. Reduce and let simmer for a hot second. Then add the basil and the chili peppers. Cooked together until the basil is almost wilted. In frying pan cook an egg over easy. Plate your jasmine rice. Place the over-easy egg on top of the rice. Then, add your minced basil chicken mixture and dig in.

Indialantic Seafood Co.

Four brothers began Indialantic Seafood for a simple reason, the love of food. Local legend has it that these fishermen flew stone crab claws home to Melbourne after a serious seafood craving. These Bahamian stone crabs were just the start of a fresh market focused on seafood delivered daily. They also offer an array of prepared foods such as salads, wraps, and sandwiches to take home or dine in-store on picnic tables.

Indialantic Seafood Market is located at 826 N Miramar Ave. in Indialantic. For more information, visit their Facebook page or call 321- 914-3989.

Garlic Sriracha Seared Wahoo 1½ pounds of fresh wahoo (skin off, bloodline removed) Garlic Sriracha Seasoning Dry Rub (available at most grocery stores) Spicy Mayo ½ cup of mayo 2 tablespoons of Sriracha Dash of pepper 1 teaspoon lemon juice Lightly rinse fish under cold water and then pat dry with paper towel. Cut into one-inch portions, or about three ounces. Season fish with garlic Sriracha dry rub. Heat olive oil in a pan or cast iron skillet over medium heat. Sear wahoo for thirty seconds on each side. Let fish cool for five minutes. Serve fish with spicy mayo or soy sauce. Makes for a great appetizer or a quick, easy, tasty meal!

Ossorio Bakery & Cafe

Ossorio opened in June of 2003. We wanted to create a coffee shop that could provide a place for people to gather in the Village and feel like home. It just grew from there. We found a French pastry chef and our hand-rolled croissants were added to the menu. Then we found an ice cream case with parrots on it, and our homemade ice cream was born. Next, we added a wood fire oven, so we became a pizza and wood fire sandwich shop too. So, 13 years later, here we are as your neighborhood coffee, ice cream, bakery, and cafe. We are pretty casual. You order at the register and then choose your table, and we bring your food out to you. We strive to make all of our customers comfortable and feel like family. We make everything here from scratch,

from our ice cream to our pastries. We even roast our own coffee beans. We have loved to see the Village grow and blossom in the last 13 years, and are excited for the direction that the area is taking. We feel that we were on the precipice of that growth, and can continue to be a hub and center point for the Village for years to come. When items in the mixer are fully combined, slowly add dry ingredients to form a dough. At this point, you should mix in your favorite additions. Some of ours are: Substitute vanilla extract for orange, add in 10oz bag of white chocolate chips and one cup of dried cranberries. Add 10oz bag of milk chocolate chips and 1 cup of chopped pecans. Substitute 1 tablespoon of vanilla extract for lemon, add in one jar of poppy seeds.

Ossorio Basic Biscotti Ingredients: Sift together: 6 cups flour 2 teaspoons salt 1 tablespoon baking powder

The Tiny Turtle

Years ago, when Chef Moises imagined a name for his restaurant, he actually had another in mind. A friend suggested Tiny Turtle and a restaurant was born. The name instantly connected his food with the flavor of the area- a place known for varied sea life. With Chef Moises’ signature flare, the Caribbean-fusion menu offers something for everyone. Fresh ingredients, special sauces, and his super not-so-secret-anymore recipe provided here offers home

Instructions: After all ingredients have come together, turn out dough onto floured surface and form into a ball. Separate into four equal parts and form each of those into a log. On two (half-size or standard residential kitchen) sheet pans, covered with parchment paper and sprayed with non-stick spray, place two logs each. Each log should run the length of the sheet pan and then be patted down to a thickness of roughly an inch. Bake at 350-degrees for 30 minutes (we turn ours halfway to ensure even cooking). Remove from oven. Allow to cool so you can handle them easily, then slice each into one-inch strips at a diagonal cut. Should yield roughly 48 biscotti. Then place biscotti (cut side down) back on sheet pan and bake for

another 10 minutes at 350 (again, we turn ours halfway to ensure even cooking). Once your biscotti have cooled, you can dip them in chocolate or white chocolate candy coating if you like. Top that with candy pieces. Have fun and make them as interesting and tasty as you like!

Ossorio Bakery & Cafe is located at 316 Brevard Ave, Cocoa Village. For more information visit ossorio.com or call (321) 639-2423.

Saute pepper and onions (and add bacon if desired!) until browned. Add collards. Saute until well-combined. Add two tablespoons of water. Cover and simmer until tender (10 to 15 minutes). Cibo Neighborhood Eatery

Here is Chef Anthony’s recipe for ceviche. It is one of his signature dishes and very easy to make. This was the recipe used at the Jazzoo celebrity fundraiser that was such a hit! Chef Anthony is one of the chefs that came over to Cibo from Mango Tree with us, and we feel very blessed.

Cibo Neighborhood Eatery is located at 3100 S Fiske Blvd in Rockledge. For more information visit ciboeatery. com or call 321-206-8099.

Chef Anthony’s Ceviche 2 lemons 1 lime 1 medium sized orange 4 oz of fresh white fish 1 tablespoon cilantro 1 tablespoon red onion 1 tablespoon mango 1 avocado 1 small pomegranate 1 thinly sliced jalapeño

Squeeze and zest all citrus. Save a small amount to make an avocado puree. Cut all vegetables to desired size, and fish into small cubes.

Clean avocado by taking off the skin and seed, and put in blender. Add a small amount of lemon juice that you saved earlier; add salt and pepper to taste. Keep cold and wrapped, otherwise it will oxidize and turn color. Put diced fish into the rest of the citrus juices. Let it soak in there until they are “cooked” fully by the citrus. Mix fish with the rest of the vegetables that were cut earlier and make a nice mix of all the crudites that were done. Grab a bowl, place avocado puree on the bottom. Make sure you season with salt and pepper or to your taste. Add the mix of the fish and the crudites. Finish with fresh cilantro and enjoy!

Taste

COCOA BEACH

When it comes down to it, one of the most talked about aspects of any town is its dining scene. Despite its small size, Downtown Cocoa Beach packs a serious culinary punch. Within a span of eight blocks, there are over 30 restaurants. That’s right, more than 30 places to indulge your every craving. Spanning multiple cuisines, atmospheres, and price ranges, Downtown Cocoa Beach has a menu for all. Taste Cocoa Beach is a weekly dining blog that the staff at The Beachside Resident has been working on for about nine months. The goal is to showcase Downtown restaurants in a way that will appeal to everybody. People who live here may want an insider’s review of a place that they haven’t got around to trying yet, and tourists love to hit up places “where the locals go.” Craving Asian food? Check out “Rolling Along” about Cocoa Beach Thai and Sushi. Need to know where to find the best Bloody Mary in town? “Drink Your Breakfast” will tell you everything you need to know about the Bad A$$ Bloody Mary Bar that Hunkerdown Hideaway offers every Sunday. No matter what you’re hungry for, odds are you’ll be able to find it in Downtown Cocoa Beach. Taste

Cocoa Beach has covered almost every establishment between the Kelly Slater statue and Minutemen Causeway. As the new year begins, we’ll be going into themed blogs and lists, and we’re also asking for suggestions from our readers! We want you to tell us about the most delectable dishes in town, or let us know if there’s something so to-diefor that we have to stop in and give it a taste. This feature gives you just a sample of what Downtown dining has to offer. The next time you’re deciding where to go out to eat, go ahead and take a look at Taste Cocoa Beach. There’s only one rule- come hungry.

To learn more about the Downtown dining scene, visit tastecocoabeach.com.

SURFINISTA At Cafe Surfinista, you can be sure that everything on the menu is organic and GMO’s simply don’t exist. Owners Diane and Bruce have created a relaxed, art-filled environment where they can serve their customers. JOHNATHAN’S PUB Johnathan’s Pub claims to have “The World’s Worst Sandwich,” but don’t believe a word they say. Famous (or infamous) for their Fresh Squeezed beverages, they also have some of these things on earth that can go between bread. A word to the wise- the French Dip can’t be missed.

JENNA’S BREEZEWAY SLOW & LOW BAR-B-QUE BAR & GRILL At Slow & Low Bar-B-Que in Downtown Cocoa Beach, the name tells you everything you need to know. They smoke their meats over low heat for hours on end to ensure that every bite of pork, chicken, turkey or beef is packed to the max with flavor.

Jenna’s is a place dedicated to casual comfort- it’s actually been nicknamed the “second beach.” As welcoming and relaxing as the atmosphere at Jenna’s is, the real selling point is the food. They buy only the freshest ingredients and source locally as often as possible. Whether you’re getting a salad or a burger, it’s a guarantee that you’re getting some of the best that Brevard has to offer.

COCONUTS ON THE BEACH Whether you’re a local or visiting Cocoa Beach for the first time, odds are you know that the best crowds and beach views are at Coconuts On the Beach. They also happen to have some of the best beach food and beverage! A town favorite is the Pain In The Ass, a strawberry daiquiri and pina colada mix that is the perfect refreshment for a hot day.

JAZZY’S MAINELY LOBSTER In Downtown CB, there’s a great variety of seafood options for every palate and price range. One of our favorite places is Jazzy’s Mainely Lobster, which brings the flavors of New England to Cocoa Beach. LO CAL

AMP By Kelsie Sandage

Music is a way of life on the beach. Maybe it’s the constant rhythm of the sea in the background. Or maybe it’s the grit of the sand that pushes our local musicians to build a scene for the many music lovers living on our coast. Whatever the reason, bands continue to grow and thrive on our slice of Florida. Coastal Breed represents why people want to live in Cocoa Beach- a good vibe, and a relaxed approach to enjoying life by the beach. A ska/reggae/punk rock band, the guys have known each other since middle school. Guillermo “Mo” Lopez [drummer] has known and played music with Matt Hunt [lead guitar and vocals] since sixth grade. The entire band bonded over their love of playing drums. Chris Jefferies [bass player for the past year and a half ] said, “Austin [vocals] is a drummer at heart. He was never a singer until Matt pushed him into singing.” Matt explained that he had heard Austin Lerch singing at a party and encouraged him. Austin played guitar and drums growing up. He said he “(has) to give credit to Matt, he definitely gave me the push that I needed when I first got into singing.” Coastal Breed’s plans for 2017 are focused on writing their third album. A lot has changed since 2011 when they began, and their new album shows that progression. Chris came in as the bassist towards the end of their second album. The third

album, Mo said shows, “how’ve we’ve evolved and matured.” Matt agreed and said, “(Coastal Breed) started as a house party band. No clear directive, still curving the edges. The new album is more of our real sound of who we are as a band.” Coastal Breed has been playing up and down the east coast of Florida so they can stay close to family as well. Recently, Badfish played at Milliken’s in November and Coastal Breed was direct support. The band frequently play shows with WRRJ since their station always shows Coastal Breed love. They are looking to take that step to bigger shows, but their first goal is completing the new album. The guys said they would be scheduling time in the studio once January hits; probably at Zone Productions again because of the positive experience they had last time. All of the members are helping to write the album. They bring their ideas to the group and the songs spawn from the cross of musical diversity and the way they can jam together. The chill community of friends coming together with ideas, instruments, and encouragement seems to keep these guys together. It’s something they remarked about the local music scene altogether.

Boardrider Month of the

Jenny Bilchak Now, the hustle and bustle are over. There are no more weekend ugly sweater parties or last-minute gift buying, and we all get a chance to recharge and start over. January will be the month of reflection and the beginning of new habits that hopefully won’t be forgotten by the end of the month. January for me is a complete reboot. By the time you read this, I will be sitting by a fireplace with snow falling, landlocked and 1,500 miles away from my number one love, the ocean. We never know how the world works and where it’s going to take us, and at this time it’s taking me away from the place that I’ve called home for almost a decade. So, this month’s article is my farewell to writing for the Resident and a reflection on what it meant to me to be a boardrider. I moved to Cocoa Beach in October 2008. At that time, I’d never stood up on a surfboard or rode a skateboard, or even expected to. I grew up as springboard diver and had a Clark foam board that I would use as a boogie board on Lake Erie. That was the extent of my board experience. As a kid, I lived to jump off the diving board. Every summer we spent at our small lake cabin, we played on that foam board until it was torn to shreds. There was a sense of fear, freedom, and courage that kept me always going back for more. But as I got older, diving was put on the shelf, and the Clark foam board ended up being thrown away without even a second glance. Not long after becoming a resident of Cocoa Beach, I began to change on the inside and

28

out. I became three inches shorter because I stopped wearing heels as much, and started feeling a fire inside me that I had not felt in some time. I was craving adrenaline, and it came from watching locals doing their everyday activities. I would watch as residents of all ages cruised around town on their skateboards, crossing the streets in groups to catch a few waves or even just getting out to support one another during the many local events held here every year. I have witnessed a camaraderie and family unit within our community that circles specifically around “boards,” and I couldn’t be more proud to be part of it. Over the years my courage and thrill for adrenaline went in and out. After surfing for a year, I tried surfing a hurricane swell in Virginia Beach and got in way over my head. I ended up on the shore in tears for many reasons; I was embarrassed, scared, and disappointed in myself. That same year I was cruising down the street on my longboard and clipped my back wheel while kicking. The pavement and I became well-acquainted that evening. It took me some time to get back on the boards, but I knew every day that went by without getting out there, my fear would keep building. So, day by day and little by little, I worked on it, and my fear was replaced with respect. I realized that fear is more real than anything and

it can hold you back from being your true self. Trust me, my fear is not gone, but I’ve learned to value it. So in the end, being a boardrider is like having a sibling to me. Some days you’ll be in sync, other times you’ll get pounded in the face. But really, in the end, you know the love is everlasting, and you’ll do anything to share time together.

It’s been an absolute pleasure being a beachside resident. I loved meeting and sharing so many of your stories with the community and far beyond. As always, I’m ending with some advice to all. “Feelings are much like waves, we can’t stop them from coming, but we can choose which ones to surf.” Till next time my friends, take care of you, and I can’t wait to see you all back in the water.

Album Reviews LiveAmerican Outlaws

The Highwaymen Legacy, 2016

If you like country music (you know the kind, chock-full of cowboys, whiskey, heartache and real loss), this is all you’ll need for a spell. Captured live in 1990, it’s a three-CD set with a concert DVD of The Highwaymen when all four of these legends were at the top of their game. The Highwaymen, for all ya’ll who might be too young to recall, were Johnny Cash, Waylon Jennings, Kris Kristofferson, and Willie Nelson. You’ll be hard-pressed to find a stand-out star or slouch in the bunch. These four keep each other on their toes, and it’s hard to nail down a single stand-out track as the next is as good, or better, than the last. The sheer number of hits on this disc is impressive. There was a time years ago when you’d hear a collection like this complete advertised as “not available in any stores!” Each artist gets his turn at bat performing some of their best-known material. “Mammas Don’t Let Your Babies Grow Up to Be Cowboys,” “Folsom Prison Blues,” “Sunday Morning Coming Down,” “Me and Bobby McGee,” and on, and on, and on. On disc three, we’re treated to performances from Farm Aid V and VI. One is a version of Bob Dylan’s “One Too Many Mornings” recorded by Cash and Jennings on their 1986 duets album, “Heroes.” Here it’s performed by Nelson and Kristofferson, sharing lead vocals on the sole studio recording in the collection. Watching the DVD reveals what one already suspects from the discs; they’re having a great time on stage. If contemporary country music leaves you underwhelmed by its never-ending cycle of mediocrity, and it should, look back. To heroes that were screw-ups, malcontents, and entirely disreputable. Look back and see how well this suits you.

Keep Me Singing Van Morrison Caroline, 2016

30

Fifty years and 36 albums on, it wouldn’t be wrong to refer to Van Morrison as a lion in winter, but you’d be wrong to count him out. With a sense of remarkable ease, Van Mo has pulled a quietly beautiful album out from that place where his best songs dwell. The music is always soulful, aching with love, loss, and sincere yearning. “Every Time I See A River” unfolds slowly, full of nostalgic lament. “Too Late” gets the elegant countrypolitan treatment. “Out In thebeachsideresident.com

J A N 2 0 17

by M.A. Rivera the Cold Again” (and much of the album) plays like after-hours musings once the club has closed and the band feels like playing a few more. “The Pen Is Mightier Than the Sword” has a spring in its step. It struts briskly, with determination. His staid, comforting voice occasionally boils over. Covering “Share Your Love With Me,” his emotions get away from him momentarily. The song is filled throughout with horns, warmly accentuating his pleas. “Look Beyond the Hill” is playful and sly, meandering the way a great Mancini number does. It’s hard not to like this disc. It sounds and feels like catching up with an old friend. Some of the stories you think you’ve heard before. But it’s OK; you like hanging out just the same. And the new stories, well, they bear repeating as well.

World Gone Mad Suicidal Tendencies

Suicidal Records, 2016 Suicidal Tendencies have seen it all. They were skate punks before the term existed. They were hardcore and naturally mutated into a thrash act; blurring the lines where punk and metal meet. These days, they are all this and more. They kick this disc off with “Clap Like Ozzy,” a warily optimistic blast of speed and attitude. “Death is knocking, don’t answer the door/ There’s never a good time, we need so much more/ Can’t pick the moment, no time will ever be right/ But while we’re breathing, we’ll give it a hell of a fight.” This is one of those songs where everyone gets a chance to shine. Legendary drummer Dave Lombardo, now a full-time member, unleashes his considerable chops every chance he gets. “The New Degeneration” displays some inspired interplay between the frantic lead guitars and Lombardo’s punishing attack. Title track “World Gone Mad” is a controlled deeper groove, downshifting to allow for some breathing room after the blasts of speed that start this party. “One Finger Salute” is as subtle as you’d expect it to be. It’s a solid reminder that sometimes all you have is anger, so don’t hold back. “This World” closes out the collection. The more subdued and reflective number is musically out of step with the rest of the disc, but works just fine. Mike Muir and company have gone the distance and prove they’re still psycho after all these years. suicidaltendencies.com

ATLAS V ECHOSTAR XIX LAUNCH CAPE CANAVERAL AIR FORCE STATION, Fla. --The U.S. Air Force’s 45th Space Wing supported United Launch Alliance’s successful launch of the EchoStar XIX spacecraft aboard an Atlas V rocket from Launch Complex 41 here Dec. 18 at 2:13 p.m. ET. EchoStar XIX was designed and built by Space Systems Loral, and will be the world’s highest capacity broadband satellite in orbit, dramatically increasing capacity for high-speed satellite internet service to homes and businesses in North America. The launch is the 23rd major launch operation on the Eastern Range this year. Before any spacecraft can launch from CCAFS, a combined team of military, government civilians and contractors from across the 45th Space Wing provide the mission assurance to ensure a safe and successful lift-off for range customers.

FISHING REPORT By Capt. Jamie Glasner

Slow Trolling in the New Year The New Year is here! I hope everyone had an amazing Christmas and new year. The fishing the last couple weeks has been awesome both inshore and offshore. Hopefully, it will stay that way for us throughout the month. The redfish bite has been extremely good both on artificial and cut bait. Gulp shrimp and the gulp jerk shad in the new penny color are the way to go with a 1/8oz jig head or jerk bait hook. Try concentrating on fishing the sand holes with these cooler water temps; you can also find sea trout in the same area. I’ve been seeing a lot of nice schools of big sea trout ranging from 3-7 lbs on the flats, so don’t be surprised if you come across some big ones! With cooler water temps we will also start to see schools of black drum that fight just as hard as redfish. Black drum can be a very dumb fish, but like I said, they’ll put up a good fight too. When they’re chewing good, it’s fun to get them to eat a fly. My favorite fly to use on them is just a simple black clouser with a little crystal flash and purple in it to give it some contrast. It has worked well for me so

give it a try! They’ll also eat jigs and dead shrimp. The offshore fishery has been a lot of fun lately. I’ve been having some good days catching kingfish, cobia, and tripletail. The tripletail bite has been pretty steady. There’s been a lot of small fish caught, but there’s been some big ones as well. Shrimp and finger mullet are the way to go. If you prefer jigging for them, then I would recommend using a 5/16oz jig head with a live shrimp on it. You can also find them on weed lines and in garbage debris that’s floating around. The kingfish bite has also been extremely strong, some fish around the 10lb range and even a few in the 25lb range. Slow trolling live bait and dead cigar minnows will do the trick. I also caught a few fish on ribbon fish, but the best was on the live bait. That’s all I have for you guys, til next month good luck on the water and have a safe and happy New Year!

HOROSCOPES By Marie Moore

CAPRICORN

Watch your emotional self this month; you have too much water in your third house. The focus is more about updating yourself with career or business for some of you. For others, the focus is more towards the people in your life who are overstepping boundaries or you wanting the respect that you think you deserve from them. Watch this part of your ego, and allow the good that you do to speak for you.

AQUARIUS It’s nice the energy is on your money, but the problem is Mars is in your second house. With that cluster of planets, you could be very forgetful and not remember where all your money went. At this time it’s good to have someone you can trust handling your money at this time. You do have Mercury direct after the sixth in the month of January, but unfortunately, you’ve got another month of sleepless nights and restless leg syndrome.

PISCES

It’s a busy month for the fishies. You have so much going on with career and business, so you have a lot of events this month happening with money. I feel for some of you; this means the rich will be poor, and the poor will be rich. For others, this energy can really turn your career around for the better and bring growth.

ARIES

This month you are quieter and keeping to yourself. You have a lot of energy in your tenth and twelfth houses, so this is a time of being social and moving forward. But, you are also creating a disconnect in many of your close relationships. Make sure to keep those close and

34

thebeachsideresident.com

J A N 2 0 17

emotionally connected to you this month.

TAURUS

At this time, you are more about what other people think about you. For some, you need to be careful because you can be susceptible to a group mentality way of thinking. So, try to be more of an individual. Many of you will benefit from friendships or networking, and you could even find love through a friend.

GEMINI

This month you could be more involved in other people’s lives. This is a very social time for you, being more out and about than usual. For others, you’ll be focusing more on your career. Finally, some of you could have a difficult time with those in authority. You could end up butting heads with them because you’d rather be playing than working.

CANCER

Time to focus on your New Year’s resolutions. With some planets still in the sign of Capricorn, you should have the willpower and motivation to make things happen this month. For others, you have a lot of water in your ninth house, so try to keep the energy positive. This would be a good time to get your juju, voodoo, Santeria and hoodoo on, just saying.

LEO

This month, you should be focusing more on your health. With so many planets moving into your eighth house, you could be more focused on spirituality or going cold turkey with your bad habits. You may also try some new healing techniques this month.

VIRGO

Your focus is more on your relationships this month. At this time, you’re learning about how to treat others, so pay attention to the challenges you’re experiencing. This will give you an opportunity to change the emotional self which can lead to growth. Towards the end of the month, the planets start moving into your eighth house, which can give you some balance.

LIBRA

Health issues may come up with this energy. Try not to overexert yourself, and make sure you take breaks. It is full speed ahead with career, and you could find yourself moving forward and guided by your intuition. Try not to confuse the emotional self with this intuition.

SCORPIO

You are keeping quiet about your feelings, and maybe look a bit anti-social this month. Try to connect with others, and go out even though you don’t want to. You could also be more focused on your career, or your new love relationship.

SAGITTARIUS

I feel the focus is more towards the home, family, and your personal life this month. So, this can be a very quiet time for some of you. There can also be relationship issues because you are too busy doing your own thing instead of being about other people’s problems. Try to acknowledge them and their needs so you can create more balance and peace in your life

INQUIRE of

Juliet By Juliet Pomodoro

Dear Juliet,

Over the holiday season, my FWB and I went all out incorporating sweet treats into our sexy time. Powdered sugar, chocolate syrup, even egg nog… you get the picture! The problem is, I’ve gained 10 pounds, and now he doesn’t want to touch me! I’m trying my best to get rid of it, but how do I tell him that this has really hurt my feelings?

-Eating My Feelings in Melbourne Dear Feelings, My first instinct is to tell you to ditch this guy. He tasted every little bit of you and didn’t complain, did he? He had his cake, and now he’s being a jerk about eating it too. Never let someone make you feel down about yourself- it just means he doesn’t deserve you. Work it off if it makes YOU feel better, but remember… It never hurts to have a little extra to hold on to!

Love, Juliet

Dear Juliet,

For Christmas, my wife got me an assortment of naughty presents. It was the first time that I’ve ever added toys into the mix, and now I’m obsessed! I can’t believe I’ve been missing out for so long. What is the likelihood that the novelty factor will wear off soon?

-Happy Hubby in Merritt Island Dear Hubby, Hooray for partners who know how to properly stuff a stocking! I have good news for you- this is the type of gift that keeps on giving. Now that you’re willing to try new things, the options are endless to keep the fire going. My only suggestion is to return the favor to your lady, and get some things specifically for her to unwrap.

Love, Juliet

Dear Juliet,

Normally, the New Year is a time to want to better yourself and start off with a clean slate. Unfortunately, I’ve found myself in a funk and can’t think of anything that would make me happy. Can you suggest some resolutions that will put some pep back into my step?

-Plain Jane in Cocoa Dearest Jane, Oh, I have a million ideas that are guaranteed to put a smile on your face, but let’s start with something quick and simple. Every single day, pencil some “you time” into your schedule. What I mean by that is a little one-on-one date with yourself. Daily hand play is actually quite beneficial to your health! If you do it during the day, the endorphins released will put you in a better mood. If at night, you’re almost guaranteed to have a better sleep. Remember, nobody knows what you like better than you do! Love, Juliet

Dear Juliet,

I recently moved to the area and heard a lot about the little stretch of Playalinda Beach that is clothing-optional. It’s been a longtime dream of mine to let loose without fear of judgment. Do you think this is something I should try?

-Barely There in Titusville Dear Barely, Of course you should! Most folks who frequent clothing-optional beaches do it for their own comfort and happiness, not to gawk or point fingers… or anything else. How lucky are you that you moved to a place that encourages people to literally let it all hang out? Let go of your inhibitions, and your bathing suit.

Love, Juliet
