As we bask in the glory of our well-earned 2nd place on the Rio 2016 medal table (and our attention now turns to cheering on GB’s Paralympians), those tell-tale signs that suggest we’re fast approaching autumn are beginning to emerge. Darker evenings, cooler temperatures and of course the kids are back to school, but a far bigger give-away for us here at Beacon HQ is the much anticipated start of The Great British Bake-off and the recent unveiling of the Strictly stars who will grace our screens and see us through all the way to the festive season! The start of a new season always brings change and although we might miss the warmth of the sunshine, in its place are beautifully crisp, fresh autumn mornings and the rustle of leaves underfoot. And talking of leaves, it’s also that time of year when our gardens are in need of a little tlc – so luckily Goscote’s Frances Hunt is here on page 71, to offer her expert advice on how to plan ahead with some great tips and tricks for your winter prep. Our wardrobes also tend to undergo a transition around now, and our very own fairy clothes mother Cleo gives us the low down on what’s hot on the catwalk in her AW16 runway report on pages 16 & 17. ou may well already be aware that I specialise in pregnancy and postnatal fitness and as such, I work with one of the most sleep deprived population groups: mums and mums-to-be. In fact sleep – or lack of – is a hot topic in my working life and I spend quite a bit of my time saying “it’s a phase”. I say this because when one is profoundly short of sleep it can feel like being stuck in a very dark, interminably long tunnel, a tunnel with barely a pinprick of light at the end of it. And when I describe that sensation it’s really to highlight the very negative effects of sleeplessness on emotional wellbeing. Those with whom I work will often hear me pronounce that “sleep is the key to everything” and what I really mean by this is that when we have had sufficient sleep we can usually cope with most things that the day throws at us. Remove the restorative powers of sleep and even the most minimal of daily hiccups can suddenly seem insurmountable. When it comes to emotional well-being, I am utterly convinced that good sleep is pivotal. In fact, I would go further and say that in some cases persistently interrupted sleep could go as far as to tip some new mothers beyond the baby blues and into postnatal depression. That’s how important sleep is to our health and to our ability to cope, in my view. It’s our daily safety net allowing the body and mind to recover from the rigours of life.
The real question is how exactly to get enough good quality sleep? Here are some thoughts drawing on my own anecdotal experiences: 1.

CAN YOU TELL I’VE BEEN THERE? My own relationship with sleep has been a delicate and finely balanced one for many decades: in my teens and early 20s I was beset by insomnia, sleep in my late 20s and early 30s was troubled by what felt like an endless succession of wakeful babies, and in my late 30s I was diagnosed with sleep apnoea which, I have read, can reduce life expectancy by up to 10 years. All this to say that the importance of sleep lies close to my heart, and also to highlight the fact that sound sleep and good mental and physical health are inextricably intertwined. You don’t need me to sell you the benefits of sleep: we all know that sleep is necessary for our body to heal and to repair, our brain to create order out of disarray and our mind to re-centre and establish tranquillity out of turmoil. There also happen to be lesser known benefits, such as the regulation of appetite: lack of sleep adversely affects our appetite regulating hormones which, in turn, means we are more likely to put on weight if we don’t get enough shut eye!

From personal experience I’d say the first thing is to avoid thinking about sleep – or lack of sleep – as a problem. In fact, banish all thoughts relating to sleep and sleeplessness (immediately after reading this piece)! Secondly, a noisy environment can be most intrusive to those of us who find sleep hard to come by: invest in excellent earplugs. Wax ones are extremely effective, mould to the shape of the ear and will cut out all those sounds that penetrate your consciousness and keep you from falling sound asleep. Darkness is, in my view, pivotal to a good night’s sleep. Invest in blackout blinds and curtains lined with blackout material. If you are a light sleeper, any daylight that creeps in round the edges of the blinds is liable to wake you up at the crack of dawn – quite literally. So an easy solution (no, I’m not obsessed, really…) is to invest in black sheets which you can then stuff round the edges of your blinds. This can make a huge difference during the summer months. If you have young children I’d suggest doing the same for their bedrooms too. You might well get an extra 2 or 3 hours of peace every morning! Do you find your head crowding in with inexhaustibly long “to do” lists when you surface in the early hours of the morning? If so, then I find that having pen and paper next to the bed and jotting down all these hugely “urgent” things you need to do will enable you to free your mind, switch off and fall back to sleep. Interestingly, the following morning you’ll discover that the “to do” list wasn’t that vital after all. The mind plays tricks on you at night… Finally – and of course I would say this – I am a great believer in the power of exercise and healthy eating when it comes to promoting a good night’s sleep. I am convinced that it is not just caffeine that is liable to interrupt your sleep but also processed foods that are filled with weird and not-verywonderful additives and sugars. As for exercise, it has been proven to encourage good quality sleep even if the only slot you can find to keep fit is in the evening.
Now before I round off, think back to the first point I made and banish all thoughts surrounding sleep and sleeplessness – they will only keep you up at night!

or me there aren’t many things in life that feel as relaxing as a long soak in a bubble bath, and many others agree. A look through the history books reveals the ritual of bathing can be traced back for centuries. The oldest bath tub yet discovered dates back to 1500BC, it was made from fired clay and was discovered in Knossos, Crete. In Roman culture bathing was one of the most common daily activities and became a communal activity. It is said that Cleopatra, the Queen of ancient Egypt, took baths in donkey milk to preserve beauty and the youth of her skin. Whilst donkey milk bath soak is not a popular choice today we do spend a fortune on products that will enhance our bathing experience. A recent survey revealed us Brits spend over £600 million on soap, bath and shower products each year. The latest research shows that baths in particular are not only a great way to unwind they can also play an important part in boosting our immune system. Warm baths between 90-95F or 32-35C open the pores and encourage sweating which helps to release toxins. Warm baths can also help lower blood sugar levels, relieve painful joints and muscles. 3-5lb of Epsom salts mixed into bath water can be a great tonic to soothe aching muscles. he industry is in a major state of reworking, the concept of ‘see now and have to have now’ is increasingly demanding (well who wants to wait?). Many designers and brands are rethinking not only how they present their collections, but when and to whom. The old-school fashion calendar or idea of the runway show is being pinched and tweaked into new forms and this overdue disruption has sparked an inventive energy. Some of the most talked about labels of AW16 didn't even have fashion shows. Some hyped-up names create limited-edition runs only and are challenging the norm with super-high price points or controversial trends. But all fashion editors are in agreement that now is the time to be you, take AW 16's trends and make them your own.

DUVET DAYS - Oversized Outerwear and Quilting It probably won't come as a surprise that coats are going to be important this autumn winter, after all it is going to get cold! The coats that sauntered down the London Fashion Week catwalks were oversized, slouchy, long, huge sleeves and collars. Anything goes as long as it’s big, bold and beautiful. Move one size up this season because oversized is the way to go, the puffa jacket is back and I’m guessing you’ll see quilting everywhere. SPARKLING SEQUINS – Metallic Madness Although this trend reappears every autumn winter, all things that glitter are back in a big way this season. Think sequins, sequins and more sequins. Sparkle and shimmering metallics were a mainstay across the London Fashion Week catwalks. It doesn't matter whether you choose full-on, head-to-toe sequins or a more subtle shimmer, as long as you're shining, you're doing it right.
MILITARY FORCE – The Iconic Trench We all know that trench coats never really go out of fashion and are an absolute wardrobe staple, but they've been given a renewed lease of life this season, whether in navy buttery leather at Celine, pulled off the shoulder to show off your collar bone at Balenciaga or in black patent at Lanvin. The trench coat is definitely the winning coat of the season. Burberry, Prada, Joseph and Miu Miu each injected military influences into their autumn winter 2016 collections, so be sure to invest in a heavy-duty armylike coat this season, look for oversized gold buttons, red piping or utility pockets. Every woman should own an iconic trench.
VA VA VOOM VELVET Velvet was everywhere this season; the options are endless, it’s soft, elegant and beautifully lustrous. It is the most sumptuous of fabrics and was seen down the catwalk in opulent jewel tones - take inspiration from Princess Diana in her velvet cocktail dress.
CHUNKY BOOTS These boots were truly made for walking… Prepare for an influx of utility styles for the new season as designers favoured more heavyduty, practical styles as seen by Louis Vuitton, Alexander Wang, Prada and Valentino. I’m predicting the high street heroes will case a riot.
MAKE A STATEMENT - Earrings From Valentino and Marni to Stella McCartney and Gucci, earrings were once again the jewellery of choice for autumn winter 2016. They're big, bold and the ultimate way of dressing up your look without having to try too hard. LOVE YOUR INNER LEOPARD Release your spirit animal thanks to this cool classic. Having been rescued from the sin bin, leopard is now sophisticated for both night and day. It’s the ‘go with anything’ print that just became purrrrrfect.
THE GREAT OUTDOORS - Reality Check There is a serious resurgence of Scottish fabrics this season, featuring timeless tartan and tweeds but also those warm and tactile pieces in classic autumn colours of elegant butterscotch, shades of camel and yellow browns that make for a very sophisticated look. Checks are also a great way to add a non-scary pattern

HOWEVER, DESPITE THE IMMEDIATE REACTION, WE BELIEVE THAT THERE IS NO NEED FOR INVESTORS TO PANIC ABOUT THEIR LONG TERM INVESTMENT AND PENSION PORTFOLIOS SAYS KELLY TREES, FINANCIAL ADVISER AT SMITH & PINCHING
A good investment strategy is normally based on balance. When we build investment portfolios for our clients, we make sure that any risk is spread across a range of investment sectors and sources. In practice, this means mixing UK and overseas investments and cushioning investors from sudden changes in currency values. For example, it might mean using absolute and target return funds in a lower risk portfolio as they are designed to perform irrespective of what’s happening in the markets. We ensure that the overall risk profile of the investments in a portfolio matches the client’s own attitude to risk, although the portfolio itself may contain elements that have both higher and lower risk profiles. The key to a good investment strategy is to be selective and to have a diverse mix of investments. However, it is also important to ensure that your portfolio is monitored and adjusted as conditions change. hat tends to happen at times of pressure such as we have now is that the market reacts strongly at the outset then settles. While the market storm rages over the shorter term, there is no need to make any sudden moves: indeed, doing so would crystallise temporary losses. There is a strong possibility that after the initial reaction, markets will recover and stabilise. The reality is that demand for goods and services hasn’t gone away as a result of the referendum and “UK plc” is still doing business at the same levels as before. There may be some repositioning but we can be sure that both Government and the Bank of England will be working hard to regain, if not improve upon, our pre-referendum position. It’s also worth remembering that, in the heat of the Leave or Remain campaigns, both sides made claims that took an extreme view of possible outcomes. In reality, the actual outcomes are likely to be less dramatic after the initial reaction and all sides will be working together to ensure that the economy gets back on track.

ttending the opening were featured artists John Newling and Annie Descôteaux, alongside special guest Nick Hamilton, of Barnsdale Gardens, son of BBC Gardener’s World legend Geoff Hamilton.
The exhibition, which is free to attend, focuses on the special relationship between humans and plants with selected works from the British Arts Council. It is the first time that these pieces – a mix of contemporary sculpture, installation, photography and illustration – are being shown together in the Midlands. Other featured artists include Turner Prize winners Gilbert & George and Simon Staling, as well as a live installation by sustainable artist Louis Weinberger. The exhibition is taking place in Attenborough Arts Centre’s new gallery, which was funded by Arts Council England and more than 1,000 public donations through the Breaking Barriers appeal. Supporters included University of Leicester alumni, as well as local philanthropists who support Sir Richard Attenborough’s vision to create a welcoming and inclusive space for everyone to engage with the arts.

Arts Fresco is one of the largest, free street theatre festivals in the UK and an array of popular UK and international performers will transform the streets of Market Harborough at this year’s event. For the first time this year, visitors to the Festival will have the opportunity to vote for their favourite performer via the Arts Fresco website and on social media. The winning act will be presented with their award at a special ceremony to be held in the town after the Festival. he Stand Up Challenge show is part of Leicester Business Festival and is supported by Leicester Castle Business School at De Montfort University. Being held at The Kube at Leicester Racecourse on Wednesday 2nd November the show will see 12 brave contestants take to the stage to perform their first ever 5 minutes of stand-up comedy. The contestants are all being supported by their colleagues, friends, clients and family to raise as much money as possible for local registered charity, Big Difference Company. The charity runs the annual Leicester Comedy Festival but also works throughout the year, using comedy and humour to improve health and wellbeing of people across the Midlands and the UK. edding dresses come in a variety of colours but, aside from the more flamboyant alternatives a bride can enjoy, the traditional options remain ivory, oyster, champagne or white. A wedding dress will, arguably, be the most important item of clothing a woman will ever wear, which means it is imperative that brides choose the best colour for them. The style is important, but the correct colour dress will make the difference between the bride looking fine or fabulous. Whether you are looking for yourself, or with someone else, focus on finding the right colour first. This will enable you to discount others very quickly, making wedding dress shopping far easier. For most, the wedding dress is a block of colour, yes perhaps with some added detail, but it’s a lot of dress to wear in the wrong colour. Start by comparing and noting down the colour of various wedding dresses. If it has slight pink undertone, then compare this to a dress with a yellow hue. For example, compare a white dress to one in a champagne colour. Which looks best? Keep comparing dress colours until you are set on which makes your skin glow, the white of your eyes sparkle and the colour of your iris’ stand out. It’s not only the colour of the dress that you need to consider, but the material too. The majority of wedding dresses will have a certain amount of sheen. Consider the material carefully as this can have an impact on your skin tone. Compare various different material types and make a decision based upon which works best. As a general rule, if a fabric has a degree of shine, it will look better on a bride whose skin doesn’t – a bride with a shiny complexion should opt for a matt fabric. Compare, compare, compare! So, then bridesmaids… how to choose a colour that will suit the red-

headed best friend, the cousin who is a brunette and your blonde sister? Well fortunately help is at hand, as there are a number of colours that are considered ‘universal’; teal, purple, turquoise and lavender. This is a relief as, trust me, there is such a thing as a bridesmaidzilla! A bride certainly doesn’t need the added stress of bridesmaids feuding over their dress, so it is best to choose a colour that will work with any combination of hair (natural or not) and eye colour. Universal colours are great for wedding themes as they can also be used for floral arrangements, including the bouquet, and venue decorations. This ensures that the primary colour used complements all guests’ skin tones, which makes a real difference, not only on the day but, when looking back at the photographs. Whilst most brides know they are the most important person at the wedding, we do need to consider the men. Black suits the least amount of people, though it has to be said men tend to wear it more easily than women. However, when looking for a suit that works well for your groom and groomsmen, try to choose a softer colour. If your groom has blue eyes, then choose a blue suit as this will make him look great. Grey suits a lot of people, but be careful to choose the right grey. Initially they all look the same, but when you compare them closely they can have a yellow or blue undertone. The groom is of course the most important man, so obviously pick the grey that best suits him and the others will follow ‘suit’. Consider using one of the ‘universal’ colours to complement the wedding theme as a useful accent – ie for waistcoats, ties and handkerchiefs. Not to forget the flower girls or page boys, but age is on their side. The younger you are, the easier it is to wear any colour so don’t worry too much; they will look adorable whatever you put them in. As long as the colour works with the rest of the wedding party, then they will be just fine. Last but not least, guest outfit colours… aside from the etiquette of not wearing cream, black or the colour of the bridesmaids, the one rule wedding guests need to follow is that you want to be remembered for looking wonderful… not for ‘that’ outfit!

omething old, something new, something borrowed, something blue and a sixpence in your shoe - we’re all familiar with this old traditional saying, which still proves popular with today’s brides. Each line represents a good luck token for the couple with meanings that have held true for centuries; none more so than natures gems and precious metals that have played a central part in important occasions and ceremonies since the beginning of civilisation.
“Something Blue”

or years now the kitchen has been the key social room in a modern home being used for food preparation, eating with friends, parties, the children’s homework, informal supper party’s the list goes on. As this room has to be so versatile, it is important to set the appropriate scene for each function. Whether your kitchen is modern or traditional this can be done very effectively with lighting.

It is so important in the kitchen to achieve a good working light but at the same time be able to dim the lights for a supper party or even change the colour to create a snug feel on a winters evening or a cool look on a barmy summers evening. Lighting can also be divided into several categories, for example it is very effective to have feature lighting either over a table or an island but often task lighting needs to be as discrete as possible as you only want to enjoy the benefit of the light not see all the fittings. With the advent of modern LED lighting there are three benefits, they are small and discrete, available in a huge range of styles and functions and finally an infinite number of different colours. This means we can even put lighting in areas previously out of bounds for example inside your cupboards and drawers making it a pleasure to use and making everything clearly visible.

e call them ‘islands’ if they have cupboards with storage, maybe a dishwasher or a fridge and sometimes they can even have a sink or hob. If your room is big and wide then an island can be the main part of the kitchen, the place where you cook and prepare your meals, where you sit up on a stool with a glass of wine and chat to family and friends, a kind of meeting point within the room.

Big islands, if designed well, can really make a room, you can see why they are called islands, they are sort of middle ground between the walls! Somewhere to land when moving about the room. I love the idea of this place in the middle of a room where everyone gravitates to, kids doing their homework with laptops plugged in, someone unloading the shopping and distributing the wares into their rightful places. In fact there have been kitchens with nothing but an island, an all-encompassing piece of furniture that does everything, including being positioned so you can have the best view to the outside while doing your chores. Imagine a room filled with light from floor to ceiling glass windows, a beautiful big island facing towards the sea, yes I know, not very likely but still, it gives you something to aim for!

In Victorian times the kitchen would have always had an island or probably more appropriately called a prep table. This piece of furniture would be long - a little like a big refectory table, it would often have had some wood and some marble as a worktop, so there was a place for rolling out pastry and kneading dough amongst other things. A prep table, unlike an island, would be open at the bottom, but unlike a table it would have a slatted area towards the floor for storing all the big pots and pans and really big platters. There are similar pieces of furniture in Mediterranean kitchens, marble topped big expanses of work surface right in the middle of the room. NOW THAT SUMMER IS SLOWLY PETERING OFF AND THE NIGHTS ARE REALLY DRAWING IN, IT’S TIME TO THINK ABOUT HOW TO PREPARE THE GARDEN FOR THE ARRIVAL OF THE COMING SEASONS – OUR TRUSTED HORTICULTURAL EXPERT FRANCES HUNT OFFERS ADVICE WHEN PLANNING AHEAD FOR AUTUMN & WINTER
All the LeAaRveEs B R O W N I am a real sucker for burying my head in the sand and denying that winter is around the corner, with the inevitable result that I then have to rush around like a headless chicken to try and complete all the jobs in the garden before the cold sets in!
RE-SITE PERENNIALS. It is so frustrating to have to sit through the whole summer, knowing that one of those Eryngium is just in the wrong place entirely, stuck behind something far too big, or too far to the front of the border so that the lawn mower inevitably bashes it on a weekly basis. Now is the time to do something about it. Make sure you give the plant a good glug of water before lifting, and leave as much soil (and as a result, root) on the plant as possible. Now is also the time to split perennials if they are getting too large or if they are unhealthy. You can tell if a perennial needs splitting if it ‘flops’ in the centre (very common in Crocosmia).
PLANT BULBS. Choosing bulbs in autumn always fills me with ‘faith’, reminding me that spring is just around the corner. Do try and get some unusual bulbs rather than the bog standards, try some Snakes Head Frittilaries, Pheasant Eye Daffodils, and, last but not least, Eremerus, the Foxtail Lily. Plus, the very best part of planting bulbs is that I for one have always forgotten what I’ve planted until they start emerging, pushing through the soil in the spring with so much hope and promise.
PRUNE DECIDUOUS SHRUBS. Wait until shrubs go into their dormancy, once they have dropped their leaves, now is the time to give them a tidy up. Pruning is a minefield. Some shrubs can be cut right back to a few inches from the ground, such as Sambucus and Cotinus (the Elder and the Smokebush), whereas other shrubs needs a very light trim over, such as Pittosporum. If you are unsure, I would advise consulting an expert; you can’t ‘undo’ pruning!
LIFT TENDER BULBS AND TUBERS, and move tender pots inside or to a sheltered spot. Bulbs and tubers such as Dahlias, Begonias, and Gladioli need to be lifted from the ground and dried out before being stored for the winter. It is also time to clear all the summer bedding, and pop into the compost to rot down.
PREPARE YOUR BONFIRE PILE. This is the time of year when typically lots of clearance occurs in the garden. Any plant material that you generate from this tidying can go straight on the bonfire pile, but do make sure that you check the bonfire before lighting it for our furry friends, such as hedgehogs.

he Langton Greenhouse and Garden Centre is a long established, family run business that boasts a wonderful array of delights for visitors - comprising a large, family café, an extensive food and gift centre, a well-stocked garden centre, a dog grooming parlour, a family butcher and the Langton Stone Company, with its beautiful range of stone and porcelain tiles. Spice Up Your Life

or many the word “spices” means spicy heat but on the contrary they come in many different forms, such as seeds, bark, roots, fruit or stems from a variety of plants and trees. Spices are full of unique and wonderful flavours and used to enhance both sweet and savoury dishes. I prefer my spices in both forms. Whole spice is known for being vigorous but like a caterpillar comes alive into a beautiful butterfly when sizzling in hot oil creating wonderful, wholesome, earthy aromas. Whereas ground spices are bold and warming, and when used in sauces release an intense burst of flavour. It is no secret that spices lose their oomph as they sit, so those pretty and colourful jars lingering on supermarket shelves just won’t cut it. Look for stores that specialise in spices and herbs or markets that sell in bulk and have a high turnover of produce. Store spices in airtight containers and definitely away from direct heat and sunlight; preferably in a cupboard, pantry or drawer to avoid reduction in quality to the essential oils. When in doubt purchase smaller packets of spices and place them into a spice dabba (spice dabba is an airtight Indian spice container that has separate compartments keeping spices organised and fresh.)
Another easy solution is to put your most frequently used herbs, spices and seasonings at the front and centre of your cupboard or draw. There isn’t much need to fit cinnamon sugar into a spice rack if you only use it once a year.

These are just a few well-loved and frequently used ideas that will avoid squirreled away spices in bags and over flowing spices stuffed into tiny jars, spilling loose powder either on the floor or the cupboard every time you go to use it.
MASON JARS: They are inexpensive, perfect for everyday use if you are using large quantities of spices. DRAWS: Storing spices in draws is perfect if you want to be organised and if you use less spices and don’t need large containers like, mason jars. An additional bonus is to label the tops of the mini jars or tubs so you can find something with ease.
MASALA DABBA (INDIAN SPICE BOX): This is my favourite and my kitchen must-have. They are practical, airtight and keep your frequently used spices fresh and organised. MODERN SPICE RACK INSIDE A CABINET DOOR: Whether or not you're involved in an organisational overhaul you may find some inspiration in a simple, spice rack inside a cabinet door… because they make so much sense and you aren’t digging around in a cupboard while in the middle of cooking.
MAGNETIC SPICE JARS: Ideal for small kitchen and can go anywhere, on the fridge, on a cooker splashback or a metal spice rack. These are super clever and they just stick to the fridge creating a rather lovely and colourful beehive pattern.

Ultimate Pantry Essentials
Gujarati curry paste (fits a 500ml mason jar) - 1 cinnamon stick - 3 bay leaves - 1 tsp green cardamom pods - 1 tsp cloves - 1 bulb garlic, peeled - 4” fresh ginger, peeled & roughly chopped - A small handful of fresh red chillies - 3 tbsp olive oil
- 2 medium red onions, finely diced - 3 medium tomatoes, roughly chopped - 1 tsp turmeric powder - 1 tsp red chilli powder - 2 tsp sea salt - 2 tsp coriander-cumin powder - 1 tsp garam masala powder - 1 tbsp tomato purée - ¼ juice fresh lemon
1 First prepare the fresh ingredients, place the ginger, garlic and red chillies into a blender. Squeeze in the lemon juice and blitz into a fresh paste and set aside. 2 To make the paste, heat the oil in a large saucepan. Add the whole spices (green cardamom, cloves, cinnamon and bay leaves) and fry until they start to crackle. Once crackling carefully spoon out the whole spices using a slotted spoon and discard. (the purpose of the whole spices is to flavour the oil, keeping them in will only overpower the other ingredients, therefore losing the freshness and the subtle flavours of the paste) 3 Once the whole spices have been removed, add in the onions and gently cook until caramelised and dark brown. 4 Once caramelised, add in the fresh ginger-garlic-chilli paste and fry gently for 5 minutes. 5 Meanwhile place the tomatoes into a blender and blitz to a fine pulp and add to the onions. Add the salt, red chilli powder, cumin-coriander powder and garam masala powder and simmer on a low heat. 6 When the tomatoes begin to melt down and the oil comes to the surface of the sauce add the tomato purée and mix well. 7 Allow to cool and spoon into a mason jar and refrigerate.

If you like to try new recipes and explore new cuisines from around the world it can be easy to fall down the rabbit hole when stocking your spice rack, but lucky for you we have covered the essentials. Here are some of my essential spices, which are perfect for savoury cooking and seasoning. • Crushed red chilli pepper: Perfect for roasting meats and vegetables and especially for seasoning anything carrot or parsnip related. • Fennel seeds: Great with literally any meat or poultry dish and delicious when toasted and added to vegetable soups and stews. • Mustard seeds: Used for their poppy texture and bitterness; ideal when sauteed in butter when making in legume, rice or vegetable dish. • Garlic powder: Don’t hate the smell, it’s especially delicious in breaded mixtures for meat and fish. • Dried oregano: It is the only dried herb I will support; it is flavoursome in a yummy tomato sauce. • Chilli powder: It’s versatile and brings depth and roundness to anything you cook because a little bit goes a long way. • Coriander seeds: Incredibly fragrant, floral and flavourful - toasted or ground, coriander is a staple for me in most of my cooking with its gentle aromas. • Cumin seeds: Toasted, ground or crushed, cumin brings nutty freshness and flavour to just about everything and magnificent when paired with curry leaves. Great as a rub and ideal for anything veggy. • Cayenne: A little goes along way – my favourite way to add some heat to dishes. • Spanish Paprika: Adds colour and a sweet peppery chilli flavour bringing out sweetness, especially with tomatoes, sauces and rice dishes.

Barbecued sweetcorn with burnt lime & sea salt |
serves 4
A mix of sweet and sour makes an interesting departure from butter and pepper on your corn on the cob. We saw this being done in north India on roadside charcoal burners. If the weather isn’t good enough, or you don’t have a barbecue, use a cast-iron griddle or heavybottomed frying pan and fry the corn in their husks, with no oil. Leave them until the husks cook to a dark brown/black colour, then turn every few minutes so the whole husk is coloured, about 15 minutes in total.

4 sweetcorn cobs with the husk still on 2 limes pinch of brown sugar butter flaky or coarse sea salt

Fire up the barbecue (or see above). Soak the sweetcorn cobs in cold water for 20 minutes. Throw the cobs on the barbecue and cook for about 15 minutes, turning frequently. The husks will burn but you should be left with perfect smoky corn underneath. Cut the limes in half, sprinkle the cut side with a little sugar and rub it in with your thumb until dissolved. Press the lime on to the bars of the barbecue until lightly caramelised. Strip the corn from the husk, slather over some butter, squeeze and rub the lime over the corn and sprinkle with salt.

Dine like a King at the Queen’s
T
he Queen’s has been a village pub for over 200 years and continues its long standing traditions of serving delicious food, real ales, lagers, wines and spirits. Having recently undergone a refurbishment to celebrate its relaunch, the new décor is incredibly stylish. With a contemporary tone throughout the internal renovation has been carried out to a very high standard and oozes class, which makes for a very comfortable and relaxed environment; whether you’re dining or enjoying a drink in the bar area. With future plans to enhance the decked veranda and increase the seating area, this modern style will soon seamlessly continue outside. Priding themselves on fabulous pub classics, all prepared from scratch, using only the finest local ingredients the food on offer at The Queen’s Head really is superb. Beautifully presented and expertly cooked this is unquestionably some of the finest pub food in Leicestershire. With so many mouth-watering choices on the menu, deciding was definitely the most difficult part – although Daisy our waitress soon whittled it down for me, with a couple of personal recommendations. Feeling adventurous and in a mood to try something new, I took Daisy’s advice and opted for the roast marrow bones with sourdough toast, parsley, shallot and caper salad to start, followed by roast rump of lamb, swiss chard and pickled gooseberries with mint sauce and finishing off with Belgian chocolate mousse, summer berries and strawberry sorbet. My lunch partner Lisa, ordered sauteed mushrooms on homemade sourdough toast with parmesan to start, monkfish tikka, beetroot, dhal and Asian slaw for main and sticky toffee pudding, roasted pineapple and vanilla ice cream for dessert. Every course was utterly delicious! Neither of us were disappointed, in fact my only slight gripe was Lisa beating me to the monkfish tikka; it was like an exquisite piece of artwork on the plate, simply stunning and definitely my first choice when I next visit. The Queen’s Head is a dog-friendly pub (we can vouch for that as we met Spencer, the adorable resident pup), and all furry friends are welcome both in the bar and overnight; there are four very comfortable bedrooms just a short totter up the stairs.

“Consistently delicious” Review of The Case Restaurant and Champagne Bar
This was the first restaurant I visited when I met my now husband, 13 years ago. I still remember the rosemary and garlic roast new potatoes from back then. Anyway… since then we’ve enjoyed many special occasions at The Case. Last week was our 9th anniversary so spontaneously we dropped in for dinner. It has finally dawned on me that we’ve always reserved The Case for a special occasion yet it’s so reasonably priced we should be visiting more often. A delicious, freshly cooked 2 course dinner only costs £16. You’d pay that at Pizza Express! The restaurant is laid with crisp white linen and silver table ware and while you might think it’s only for those special days, it’s so relaxed we’re going to make it a regular. The whole area around The Case is fantastic, have a cocktail at 33 Cank Street, dinner at The Case, ice cream at Gelato Village and wrap up with champagne back at The Case champagne bar. B
uilt in America for Americans, the all-new Ford Mustang has arrived in the UK and on paper it makes very little sense. As a practical motor, despite the car’s length, rear seats are for occasional use only and the trunk – sorry, boot – is distinctly modest. As an outright performance car, it is reasonably quick but rather a handful and trying to edge its considerable hood – er, bonnet – out of small British side roads is positively lethal. It has a bit of a drink problem too. So why did our car receive so much positive attention, so many smiles and people pointing? And why do I love it so much? Quite simply, the Mustang isn’t just a car but symbolises the might of the all-American dream. Arguably the most famous of the stars-and-stripes muscle cars, the ‘Stang boldly presents some of the original car’s features, albeit in a thoroughly modern format. There are the three-bar rear lights, the shark-like nose and inside, the dashboard is
dominated by the two large ‘brows’. It is fully up-to-date with Ford’s 8" touch screen and the trim is well put together with a gently retro feel. Ford has been sensitive with the new Mustang’s overall profile too, and the brawny silhouettes of both the GT and Convertible are delightful. The Convertible is the one for summer cruising but the slightly stiffer shell of the GT coupé makes it the better driver’s car. Both ride surprisingly well on British roads and unlike many transatlantic machines, the new Mustang actually goes round corners. It is hard to consider a Mustang without its 5-litre V8, but Ford also offers it with a 2.3-litre EcoBoost 4-cylinder option for greater economy and lower emissions. It is only slightly slower than the V8, is happier when it comes to changing direction due to its lighter nose, and to make up for those four missing cylinders there is an effective V8 soundtrack piped through the audio system. It’s all very effective – and marginally less thirsty - but when all is said and done,

it’s the V8 which feels like the authentic choice. One really oughtn’t to consider a Mustang if regular visits to petrol stations aren’t your thing. The Mustang has a couple of tricks up its sleeve too. Not only does it have Launch Control for those cheeky track days but a feature called Line Lock, which holds the front wheels and allows the rears to spin. We are assured it is to warm-up the back tyres but we all know it is there entirely to show off. So, we should celebrate Ford for bringing the beautiful Mustang to the UK. We should also praise the accountants who agreed to pay to put the steering wheel on the correct side. And don’t forget the health and safety advisors who decided it was perfectly fine to hand this wheel-spinning monster to the general public. This car is both completely irrelevant and truly fantastic. Just consider it in the abstract and it all makes sense.

SHOPPING FOR SCHOOL UNIFORM CAN BECOME A BIT OF A HEADACHE, ESPECIALLY IF YOU HAVE SMALL CHILDREN WITH YOU. IT NEEDN'T BE, HOWEVER; THE SECRET LIES IN THE PREPARATION. WE HAVE THE INSIDE INFORMATION ON UNIFORMS, FOR MUMS WHO MAY HAVE FALLEN INTO THE PITFALLS OVER THE YEARS

BACK 2 SCHOOL WHERE TO BUY Some schools insist you buy from a specialist school shop that stocks uniform with the school logo. This can be rather controversial as is always much more expensive than the high street. Next, M&S, John Lewis & Debenhams are just few of the shops where you can buy school uniform – as well as many of the supermarkets. Many mums opt to buy just the logo sweatshirts, cardigans and items the school insists must be logo-ed from the school shop and then get plain polo shirts, shirts and the rest of the uniform from generic stockists.

PE KIT WASHING & IRONING School shirts get filthy. Invest in some stain remover to soak stained polo shirts or shirts before washing. If you are unlucky enough to have a uniform with white shirts, get an in-wash whitener which will help keep them white rather than turning grey. Easy-iron trousers and shirts work well and are well worth it (unless you love ironing!)
QUALITY VERSUS PRICE There is always a great debate about quality versus price, but bear in mind that a single polo shirt could be worn between 50 and 80 times (and therefore washed just as many times too!). Sometimes the cheaper shirts just aren’t strong enough quality to

SEASONAL DRESSING If your child needs proper shirts rather than polo shirts, the short-sleeved shirts are often better for use all year round... they are more comfortable for the child and much easier for dressing/undressing.
Check with the school whether your child needs it in Reception before you go out and buy it. In many schools, the youngest children simply wear pants and vest for PE lessons, and have bare feet. If children need to bring in trainers on PE day, buy a cheap pair of trainers or plimsolls for their PE bag so they can stay in the bag - one less thing to think about each week! If your school specifically asks for plimsolls for PE try to find the ones with an adjustable velcro strap across the front.
COATS You'll need a warm winter coat of course, but this may well be too warm until late October. A lightweight raincoat will be really useful this autumn and next spring/ summer.
SOCKS The best-laid plans can be foiled by the absence of a pair of matching socks! If your school asks for a particular colour of sock, then buy all (or most) of your child's socks in that colour and in the same style. That way you'll always be able to match any sock with any other. Girls often like short socks in summer and longer socks in winter - often instead of tights which can be annoying. If you have a choice between white and any other colour socks, choose the other colour. Even if white socks look smart they are almost impossible to keep white as children kick off their shoes all over the place and walk in their socks.

ENGINEERING WIN - RATCLIFFE
S
even Year 9 physics students from Ratcliffe College won the ‘Best Overall Project’ award in the science and engineering competition Go4SET, a nationwide scheme designed to get students involved with engineering projects. The triumphant students were James Howling, Jacob Dawe, Dominic Baggott, Ben McCahill, Robyn Warwick, Charlotte Langford and Tess Duffin. Their ‘Eco-Hotel’ project was an inspirational piece of work, and was highly commended at the Celebration Event, held at the Ricoh Arena back in June. Their spectacular model and insightful report impressed all the judges, who stated that the project “ticked all the boxes”! Six other Year 9 students who also took part in the competition received much praise for their project ‘Station of the Future’. These were Luke Millett, Alex Pickering, Tom Neuberg, Elliot Kelly, Joseph Summer and Edward Smellie, whose unusual idea to use hydrogen for train power, in their ‘hydrail’ scheme, attracted lots of attention. Mr Adam Chorley, Head of Science at Ratcliffe College said, “Taking part in the Go4SET scheme has given the students an insight into how engineers work and the problems that they have to overcome. Both teams deserve much credit for their efforts, and indeed, winning the ‘Best Overall Project’ award is a fantastic achievement by our students and we are very proud of them.”
