Both broadcasters have hearing issues that they will be discussing. In addition, leading industry professional and clinical paediatric audiologist, Josephine Marriage, PhD, will be presenting alongside the national children’s charity Auditory Verbal UK. “HearClear Expo 2016 is truly the first interactive hearing convention ever that’s been held for the general public in Cambridgeshire and its aim is to give people the opportunity to touch and experience first hand some of the most advanced hearing solutions available to them,” explains Mike Stanley, Managing Director of Healthy Hearing Ltd (the main sponsor of the event). “This event will bring together hearing aid manufacturers, medical experts, charities and celebrities to present the latest in hearing technology, high tech accessories, information and offer help and advice to anyone with a hearing need - of any nature. “Whatever their situation, whether they have difficulty hearing, are completely deaf, suffer with tinnitus or simply need wax removing help, advice, direction and solutions will all be available under one roof on the day.” Young children, teens and adults are all being urged to come along and try out some of the latest gadgets and equipment supplied by top global manufacturers and suppliers of specialist hearing equipment. t’s fair to say (and I am sure my family wouldn’t tell you otherwise) that I am very keen on breakfast. In fact the kids might well say that I am a little overenthusiastic when it comes to getting them to eat what I consider to be an optimal meal to start their day. Cereal offenders Yet what really does constitute a good start to the day when it comes to food? If the aisles of the supermarkets are anything to go by then the answer is cereal. You can even see the way they tacitly organise the shelves along the lines of “really unhealthy stuff but the kids’ll love it”, “designed to make you think it is healthier but it isn’t really”, “significantly better for you” and “we’re telling you this box is super healthy, so it is”.

But does any of this commercial cereal make for a good start to the day? I would go as far as to say that a pack of bog standard rolled oats is worth investing in – not the powdered types with added this and that but just plain ol’ broken oats. They are definitely worth having as part of a nutritious breakfast – part but not all. Granolas tend to be positioned in the good-for-you section of the breakfast aisle but one look at the nutritional values is enough to dispel any notion of health. Sugar content is invariably through the roof and fat levels, of the palm oil variety, are frequently sky high too. If you love granola then make your own – it’s so easy and I’ll show you how later. So in short, I’d suggest skipping this aisle next time you are doing a big shop.
Although this still doesn’t answer the question I asked earlier of what exactly does make for a nutritious start to the day? Breakfast bread fest If it isn’t cereal that’s in the breakfast bowl then the likelihood is that it’s bread and jam on the breakfast plate. What’s noticeable is that all these morning foods are heavy on carbohydrates. Whilst it is true that carbs are the body’s favoured choice of fuel it is also the case that having an undiluted dose of stodge first thing in the morning is not the best way to sharpen the mind and prime you for a day’s work or study. A carb-dense breakfast can make you feel sluggish and sleepy, quite the opposite of what’s needed first thing in the morning. The body and brain also need vitamins, minerals and protein to get going after a night of fasting.

Protein perfect So let’s examine what a great nutritional start to the day might look like. We’ve consigned commercial cereals to the breakfast outbox but given natural oats a thumbs up. The body also needs a wide array of nutrients from plant sources. This could be achieved through the addition of a mix of colourful fresh fruit to your oats. Or perhaps you are one of the current smoothie aficionados and have invested in a power blender? In which case you could make a vegetable and fruit smoothie to accompany the rest of your breakfast: note the emphasis on “vegetable” and implement please otherwise it’ll be another sugar-rush breakfast… But there’s still a crucial element missing to the above and it is protein. A protein-rich start to the day will really set you up and also keep you going for longer, helping you avoid sudden energy crashes resulting in a dash for the biscuit tin mid-morning.

Total Greek yogurt is one of my all-time favourite ways of starting the day. With around 10g of protein per 100g you’ll be giving the body a great protein boost if you have a bowl of traditional Greek yogurt (not Greekstyle) along with mixed fruit and a sprinkling of nuts and seeds. Recently a number of low fat strained yogurts have come onto the market boasting their high protein levels: it is interesting that they have latched onto the fact that protein is a great marketing tool. Avoid the sugary varieties and opt for plain ones, adding your own natural sweetness.

Lastly but not to be discounted, if breakfast is a rushed affair for you and you find yourself leaving the house having had no time to eat properly then I would recommend investing in a high quality protein shake that is as natural and un-messed-around-with as possible. Food is always going to be better but a protein shake is most certainly an improvement on no food.

he men's side looked set for relegation just over 12 months ago, but since King Richard III was buried, the luck has turned and the team has been experiencing the best period in its 132 year history. This good fortune has been spreading to the Leicester City Women’s teams, but whilst they may wear the same kits as the men’s teams, their successes have not quite gained the world wide spotlight of their male counterparts.

The truth is, all of the ladies who pull on the royal blue shirts, emblazoned with the yellow fox’s heads - the very same shirts that kids around the world are now wearing, actually need to work every day before going to training ground twice a week. I met up with Leicester City Women’s FC manager Jonathan Morgan down at the King Power stadium to find out a little more about the most successful season ever for the ladies. Jonathan himself has to work, and the immense extra out of hours effort that is needed at this level is an amazing achievement by all at the women’s club, as they run on a professional standard, on a very part-time basis. I settled down with Jonathan and asked him a few questions about their amazing season. Finally I asked Jonathan, are the club on the lookout for fresh talent? “It has been a fantastic season and [so far] we have won 22 games out of 22 and are crowned Champions of the FA Midlands Premier League and promoted into the Northern Premier League and been scoring goals for fun. It has been a phenomenal season!” I asked Jonathan to be honest; the Leicester City Women’s team had literately stormed the Midlands League, and must now have their eyes set on achieving some very high goals. “Yes, I guess so” Jonathan laughs and is clearly enjoying the end of season glow of victories. “One of our greatest joys this season has

BOOMING I
t won’t be long before we’re enjoying our obligatory strawberries and cream, all washed down with a chilled glass of Pimm’s, as we settle in to watch the world’s elite fight for a fortnight to lift the coveted Wimbledon trophy and reign supreme at SW19. But a little closer to home, there are some great opportunities for young up and coming players of Leicestershire – so it’s over to our very good friends at Tennis Leicestershire to explain more. It is estimated that there are over 4,000 adult members and over 3,000 juniors at our various local clubs. The game is now played all year round on the artificial surfaces. It is run locally by Tennis Leicestershire, part of the Lawn Tennis Association. Tennis Leicestershire organises inter-club leagues for over 500 adult teams and 300 or more junior teams. Age categories of teams range from under 8s to over 60s. The league season starts in the last week of February with the over 60s veterans, running through nearly a whole year to the end of the following January with the conclusion of the adult winter leagues. A new winter indoor league has recently been instigated at the refurbished Loughborough University tennis centre, so in effect organised tennis in the county never really comes to an end. Casual play also enjoys high participation rates, perhaps not surprising given the game can be played from as young as 4 to well over 80. Tennis is truly one of the few physical sports capable of being played over a whole lifetime. Group coaching is available at most clubs for around £5 per session. Typical club membership fees are around £150 for adults, £30 for juniors. Look out for club open days during the spring and summer. On a recent tour of the county, LTA President Cathie Sabin, witnessed a hive of tennis playing activity in the depths of winter and declared her visit one of the most inspiring she had made in her three years in office. In recognition of this high level of interest in the game, Leicestershire has been rewarded with three display venues on the Davis Cup legacy tour. We are the only county in Britain to host more than one display event. The enormous trophy will be the centrepiece of special event days at Rothley, Victoria Park in the city and at The Leicestershire club in Stoneygate, one of the oldest clubs in the world. This will take place in late September and early October with members of the public welcome to come along, not only to view the trophy but also to join in tennis related activities. In addition, up to 100 local children under the age of eight who are new to the game will receive a batch of six one hour tennis lessons entirely free of charge under the Davis Cup coaching legacy scheme.

In the height of summer, the county's junior and senior closed tournaments continue to attract record entries, again amongst the highest in Britain. Autumn sees the annual professional tournament held at Loughborough University, part of the Aegon Pro-series tour. Entry is free to the public. At inter county level, Leicestershire is represented by both men's and ladies' teams at the annual county week. Players are often pitted against full time touring professionals but we still manage to retain our position in the higher divisions of the tournament. The junior county teams often feature in the later stages of national age group competitions.

At veterans level, the county's players have an international reputation, lead by county president Mark Cox (former world no 13 in his younger playing days) and Richard Tutt, a former world no 1 veteran. Despite being the local arm of the LTA, Tennis Leicestershire is mainly self-funding and in part dependent on the support of local sponsors. There has been a long association with the Greenshires design and marketing group initiated by Greenshires’ chairman, Tony Yell, 25 years or so ago. Greenshires felt strongly that the future of British tennis lay in the widespread encouragement of the game to young players in the county. The relationship between Greenshires and county tennis continues to flourish. Significant funds are donated and each year Claire Oliphant of Greenshires presents the Greenshires Cup to the most promising junior player at the county's awards evening.

J OH N McENROE How often do you travel? About 15 or 20 weeks a year, doing a handful of senior tennis events such as Royal Albert Hall, and covering others like the French Open and Wimbledon. What do you need for a perfect holiday? I like to be close to water and the ocean particularly. I love to get out

and body surf. I like mountain biking too. The views are beautiful and I can still stay in shape, so it’s the best of both worlds. Your earliest memory of travelling abroad? I went to play in Brazil when I had just turned 18 and was the world’s top junior player. I got to the airport and no one knew who I was. I couldn’t speak any Portuguese and no one spoke English. Then someone said something that resembled “tennis”, and I went with that. I was taken to a car, driven through a downpour at 100mph by a driver, who didn’t speak English, and miraculously made it to the destination. Your most adventurous travel experience? It was on my way from San Franciso to Perth to play in the Davis Cup in about 1980-81. On the Sunday night we flew from San Francisco to Hawaii and had to stop over there for several hours and we finally boarded this flight to Perth. Then about 90 minutes after take-off, the

pilot came on and said we had engine problems and had to go back, but first we had to jettison fuel for safety reasons. So we had to circle for another 90 minutes, then we had to stay in Hawaii. We finally got to Perth on Wednesday night and I had to play on Friday morning. Luckily adrenalin got me through.
I was able to play soccer, tennis and work out, so I had the best of both worlds.
The most memorable place you’ve competed? Wimbledon Centre Court. There is no place like it.
Favourite city for nightlife? New York would be number one, then maybe Paris.
Where would you rather spend 48 hours: New York or London? London is great but New York is the greatest city in the world. I live there though, so I suppose if I had a couple of days, there are probably more things in London that I haven’t done.
Favourite hotel? London’s Jumeirah Grosvenor House Apartments.
“Flying first class feels like a cattle drive” Favourite airline? They’re all so homogenised now. I used to fly Pan Am and it was just incredible what you could do on those things. Concorde could get you anywhere so quickly and you had so much space in a first-class lounge. Now they’re all so similar it’s not easy to choose a best, or a worst. It’s become more of a cattle drive even if you fly business or first. Best piece of travel advice? Drink a lot of water. But it’s that fine line between drinking just enough to be hydrated and not so much that you keep going to the bathroom.
Your most relaxing destination? Because I travel so much, I like to stay at the places that I own: we have a place in Malibu with unbelievable views and I find that really relaxing. Have you ever been on safari? I went on safari in South Africa just after apartheid had ended. More recently I have been on safari in Tanzania, which was even more magical. I had three of my children with me and my wife, Patty. I went straight from the Wimbledon final, so talk about a culture change. Within a minute of arriving we got stopped by a bunch of elephants and I was like, “Is this a set-up, or is this real?”
Best grooming tip to keep fresh while travelling? I always bring moisturiser as my skin is dry to begin with. What do you hate about holidays? The pressure to have to come up with the right vacation destination takes some of the fun away, or buying the right gift. Where next? I’d love to visit the Holy Land – there is a lot of history there. I am not very religious, but it would be interesting to see if that changes after visiting places like Jerusalem and Bethlehem. uying new underwear can significantly improve your confidence and self-esteem. How much nicer would it be to open your underwear drawer and find an array of pretty bras with matching knickers, different cuts to suit different outfits? Rather than knickers that are 5yrs old with no elasticity left in them and grey bras! Actually looking at yourself in the mirror whilst you are getting dressed and liking what you see. It is so important to start with a foundation of flattering underwear - Christian Dior once said “without foundation, there can be no fashion” and he was certainly not wrong. Great underwear will make you feel so much better when you are putting outfits on and you'll go through the day feeling like an empowered woman. If a confidence boost is what you need, then treat yourself to some fabulous new underwear. Your underwear provides the base upon which your entire style and appearance is centred upon. It is so important that we get the basics right as it is where the start of looking and feeling good all begins. In my experience as an image consultant and personal shopper, it is possible that the first item of clothing you will probably need to buy is a bra.

Have you ever been measured for a bra only to be told that you’re a totally different size from the one you thought? Don’t you worry, it is a fairly common complaint to the point that 99% of my clients discover they have been wearing the wrong size! Most people buy too small in the cup and too big in the back. It is vital to get the right bra size, not only to support the breasts properly, but also to ensure that your clothes lay properly on the body. The wrong shape or size bra can create unsightly bulges and

can add weight. The most important thing when choosing your bra is the fit, you should also demand comfort, support and suitability for your clothing. I recommend that you always visit a good local independent lingerie shop, rather than a department store. Consult them as their advice and knowledge is far superior, it is their speciality and they will be able to tell you your exact size as well as the style of bra you should be looking for. Remember when it comes to bras, in the words of the late Ronnie Corbett, they need to have the ‘sheepdog’ effect… round them up and point them in the right direction!
A LITTLE EXTRA HELP Whether you want to have a bust for the first time in your life or just to enhance your cleavage or shape, silicone gel implants are widely available to give you the look you’ve always coveted, without the need for surgery. Full implants create a bustier look for those who were not given them by Mother Nature, or they can enhance the shape of an existing bust. They look particularly good with close fitting garments. Alternatively, use half silicone implants to give you the cleavage you’ve always wanted, or to create a younger looking cleavage, replacing the ski slope appearance we get as our bust heads south!

The use of strategically placed lingerie tape or self-adhesive cups for those skimpy little numbers can provide truly remarkable results. Dieting, exercise and liposuction are unnecessary, all you need is an amazing combination of good tailoring and some clever nip, tuck and smoothing. CLEO'S TOP TIPS: • Make sure your bra fits securely around your body and that your bust is contained within the cup not spilling over. • An everyday bra should be well constructed and not too dainty. A good bra will lift your bust and give your waist definition (my favourite brands are Lejaby and Marie Jo and Curvy Kate). • Always put your top back on when choosing a bra. It has got to fit but also give you the right shape for your clothes. • Most important colours to buy when bra shopping are nude and black. Buy two of each (wash one, wear one). Nude is a must, whatever your skin colour, to wear under white garments. It gives a totally natural appearance. Black is optional and white is unnecessary. • Variation in cup shape gives your bust a different look, which you’ll need depending upon the shape of your garments. Always make sure your bra straps are adjusted so your bust is positioned in the right place. Do this frequently as they tend to slip down after washing. • You should always hand wash your bras in a soft detergent and not in the washing machine. It ruins the shape of your bra and halves its life span. It could also potentially ruin your washing machine in the process! Alternatively use a bra saver (like a structured mesh bag) in the hand wash cycle. • G-strings are ideal for trousers and close fitting items because they don’t give you a VPL (Visible Panty Line). • Always buy knickers bigger size than your dress size, which will make them so much more comfortable. • High waisted big knickers with a control tummy do wonders worn under close fitting dresses or skirts. • Always choose knickers or tights that have a narrow waistband as this prevents the “Michelin” effect, which is not attractive! • Seamless bras are good for t-shirts, knitwear and close fitting tops. Lacy bras are fine if you want to show your underwear, wear them under shirts that you can see through, under loose fitting garments or keep them for the bedroom! • An alternative to a g-string is a skimpy short in a very fine fabric, this will stop it being seen through certain fabrics.

his recognition is because of a few important factors; we are very passionate about the hairdressing industry, we realise that you never stop learning and we want to share our artistry, encourage and inspire. I also think that due the UK being leaders of fashion, the majority of clients are more savvy, want that individualism and have a demand for a high standard of work which keeps us on our toes. Years ago, clothes fashion and hairstyles were dictated by new season’s collections and if you didn't have that current look well… you were so yesterday Darling! Now clients don't want to be the
same as everyone else. They want to look stylish and fashionable they know exactly what they want. As a stylist you have to be progressive, ambitious and dedicated, that way your clients won’t outgrow you. I am involved with training on a big scale, not only within the salon but I’ve also had amazing opportunities to work throughout the UK and Europe, along with various staff members who share a likeminded drive to constantly be the best. I have just returned from the Revlon Global Stylemasters show in Paris where there were 4400 people from about 40 countries – and as well as a show there was a competition. My amazing educator Monique worked backstage and our artistic director Leigh-Anne entered to represent the UK, we were runners-up in our category. A UK salon won the Global event with another representative from the UK winning the men’s American Crew competition. So this proves that we are the best in the industry and will hopefully endeavour to stay there. To recognise the talent of the UK hairdresser we have the British Hairdressing Awards. The awards are something extremely close to us here at IndyHair. Not only is it a wonderful show, but it also presents key people within the hairdressing industry. Individuals that best embody the role of British Hairdresser of the Year. Are stylists who have an exceptional professional reputation with an extraordinary creative and trendsetting ability. With the knowledge shared from these people we better ourselves as a salon, pushing upcoming trends and techniques. As well as attending most years we have now started to enter annually with a new collection that represents IndyHair. With competition at the highest level, to compete we always dedicate a significant amount of time to the idea and organisation of the collection and we always invest heavily by using the best models, photographers, stylists and make-up artists. The hair photography is incredibly inspiring, not only to hairdressers but in all areas of fashion, especially for clients who want to stay bang on trend. The styling may be a touch avant garde, but they become far more wearable once tamed down, which comes back to individualism and the stylist personalising to suit each person. So look out for our up and coming entry to the awards. To be part of this amazing event is an honour, and one year it really would be a dream come true for IndyHair to be recognised for the hard work done by my fantastic and loyal team.

Summer Vegetable Paella with Saffron & Lemon Riverford Organic Farmers - Bringing you inspiring seasonal ideas from veg box to table.
Serves 2
Ingredients
Method
sunflower or light olive oil, for frying
1. Heat 2 tablespoons of oil in a heavybottomed paella pan or large frying pan.
1 onion, finely diced
2. Add the onion and fry gently for 10 mins, stirring occasionally.
2 garlic cloves, finely chopped, grated or crushed 1 red pepper, deseeded and cut into 5mm-thick slices 1 yellow pepper, deseeded and cut into 5mm-thick slices 200g paella rice
4. Pour in ¾ of the stock and season with salt & pepper and bring to a gentle simmer, cook for 30 mins, stirring occasionally. Top up with a little more stock or water as needed. The paella shouldn’t be sloppy at the end so add liquid sparingly during the last 10 mins.
100g mushrooms, finely sliced 3 tomatoes, diced ¼ tsp smoked paprika
5. While the paella is cooking, boil the green beans for 3 mins, then refresh them in a bowl of cold water. If you are using sugar snaps, you can simply throw them in raw towards the end of cooking.
¼ tsp paprika 2 pinches of saffron threads 1 litre of good veg stock 100g green beans or sugar snaps, or a mixture of both (if using beans, top, tail and chop into thirds) good handful of parsley, chopped 1 lemon, cut into wedges salt and pepper
3. Add the garlic & peppers to the onion, stir for 2 mins, before adding the rice, mushrooms, tomatoes, both types of paprika & saffron.
6. After 30 mins of cooking, check the rice is tender, then cook very gently without stirring, to create a crust on the bottom. 7. Stir in the beans & parsley. Turn off the heat and leave to stand for 2 mins, then check the seasoning and serve with wedges of lemon.

Naughty Nigella
It was nearly 20 years ago that the prominent MP’s daughter first arrived on our TV screens, after working in publishing and later as a restaurant critic. Her debut cookbook ‘How To Eat’ published in 1998 sold 300,000 copies in the UK and featured culinary tips on preparation and saving time. The Sunday Telegraph dubbed it "the most valuable culinary guide published this decade”. One of her most successful TV series was ‘Nigella Bites’ which was filmed at her West London home and included Christmas specials. Her use of descriptive vocabulary, coupled with her sensuous intimations, exude an appealing dynamic to her creative dishes as can be witnessed by her comments made whilst responding to a basic cheese and onion strata she was cooking for her festive diners when Nigella enthused “I love the way the little circles of bread become scorched and infused with egg & cheese – like a toasted cheese sandwich but a celestial one, as if eaten by angels”. Nigella’s mother loved to cook and was heiress to the famous J. Lyons Tea Room dynasty, so it would appear that cooking is in the

genes. Nigella accepts that she is not a trained cook but is a food obsessive. She says “I love food – I’ve eaten a lot and I carry on eating a lot”. The joy of her cooking methods appeals to certain busy working households who despair when heading to the kitchen fridge to be confronted by limited resources as Nigella has launched a ‘Quick Collection’ cooking app. The App contains around 70 recipes taken from her favourite cookbooks and one of the useful features what’s in your fridge lets you browse recipes around basic items that most of us have in the kitchen. Ms Lawson has also created nine bestselling books to her name, to include How to be a Domestic Goddess, Nigella Bites, Nigella Express, How to Eat and an Italian inspired cookbook entitled Nigellissima! With the renaissance of home cooking resulting out of popular TV shows like Great British Bake Off, it would appear that baking at home has become trendy again. Retail analysts predict a huge area of growth in the baking industry, which is expected to reach £1.15bn this year. Irrespective of the glamorous persona that Nigella portrays and her tongue-in-cheek saucy remarks, she willingly champions the overall enjoyment that food can bring. When she took part in a British cooking game show and was asked about her guilty pleasures, she responded “I don’t feel guilty about any pleasure. I think you should only feel guilty if you don’t take pleasure”. That’s the naughty Nigella we all love and adore!

orn in Essex in 1975, as a child Jamie earned his pocket money by working in the kitchen of his parents’ pub, before leaving school to attend Westminster Catering College. After graduating, his career led him to The River Café where he was spotted by a BBC documentary team and a brief appearance on screen soon resulted in an offer for his own show as The Naked Chef in 1999.

The documentary Jamie's Kitchen followed three series’ of Naked Chef, and witnessed the setting up of his restaurant Fifteen – which continues to train young adults with a disadvantaged background for careers in the restaurant business.
However, trials are proving that childhood obesity can be affected by practical food education. If given the knowledge of where their food comes from, and how it affects their bodies, combined with the practical skills to cook, kids make healthier choices. It is clear that the world’s health is in bad shape, so if we want to change these shocking statistics, we have to do something about it now.
His endless desire to educate and campaign for healthier food, particularly in British schools not only resulted in the government pledging to address the issue, but it was by delving into politics to push for nutritional change, that earned him a people’s vote as the ‘Most Inspiring Political Figure of 2005’, according to a Channel 4 News annual viewer poll.
According to the World Health Organisation, there are more than 42 million children worldwide under the age of 5 who are either overweight or obese. Worldwide, obesity has more than doubled since 1980, and by 2030, it’s predicted that 41% of the world’s population will be overweight or obese.
Jamie’s emphasis is always firmly on cooking fresh, nutritional meals, so whether it’s comfort food, 30 minute or 15 minute meals, with more than twenty recipe books to his name, there is certainly plenty to inspire us all.

Jamie’s passion stretches further afield than the British Isles and Food Revolution Day, Jamie’s global day of action, is now in its fourth year. The day is a celebration of food education, focused on teaching kids about where their food comes from, how to cook it, and how it affects their bodies. On March 29th, Jamie launched the petition with change.org/jamieoliver to persuade governments of G20 countries to provide their nations’ children with the basic ‘human right’ of food education at school. Jamie said: “I’ve been campaigning in different countries for a while now and we’ve begun to see real change in some countries with cooking lessons in schools, but now I’m taking it global. Obesity is preventable and I believe that by educating our children about food and where it comes from and how to cook it and how to shop, we can turn the tide on the obesity epidemic that affects most of the world today.” Speaking about his global petition, (which has seen over 685,000 supporters sign up since its launch), Jamie said: “This change.org petition is a way to give a voice

MARY BERRY'S ROASTED SAUSAGE AND POTATO SUPPER | SERVES 4-6 This will become a firm family favourite as it can be cooked in one dish and is so quick and easy to put together. If you’re making this for young children, you can replace the wine with stock, if you prefer. Choose your favourite type of local, British sausage for this recipe – my family loves leek and sage.
• 2 tbsp olive oil • 2 large onions, sliced lengthways into wedges • 2 red peppers, deseeded and cut into large dice • 2 garlic cloves, chopped
• • • • •
1 tbsp chopped thyme leaves 500g (1lb 2oz) baby new potatoes 12 sausages, pricked with a fork 200ml (7fl oz) white wine Salt and freshly ground black pepper
1 Preheat the oven to 220°C/200°C fan/Gas 7. 2 Place all the ingredients except the wine in a large, re-sealable freezer bag. Seal the bag shut and shake well to coat everything in the oil. Alternatively, put everything in a large bowl and turn the ingredients until they are fully coated in the oil. Tip into a large roasting tin, spreading the ingredients out into one even layer and ensuring that the sausages aren’t covered by any of the vegetables. Season well with salt and pepper. 3 Roast for about 30–35 minutes until golden, then remove from the oven, turn the sausages over and toss the vegetables in the cooking juices. Pour in the wine and return to the oven for a further 20 minutes or until browned and the sausages are cooked and the potatoes tender. 4 Serve hot with a dollop of mustard on the side.

GENNARO CONTALDO'S POLLO ALLA CACCIATORA - HUNTER’S CHICKEN | SERVES 4 This classic Italian dish is renowned all over the world and often seen on the menus of Italian restaurants. Here I have recreated it in the way it is normally made in my region of Campania, using lots of herbs and fresh tomatoes. I like to serve this rustic dish with slices of toasted country bread drizzled with extra virgin olive oil.
• 750g/1lb 10oz chicken thighs and drumsticks • salt and freshly ground black pepper • 3 tbsp extra virgin olive oil • 1 large onion, finely sliced • 1 garlic clove, crushed and left whole • 1 small red chilli, sliced • 2 sprigs of rosemary

2 sprigs of thyme a handful of parsley, roughly chopped 2 bay leaves 4 sage leaves 125ml/4fl oz/½ cup dry white wine 1½ tbsp tomato purée (paste), dissolved in 3 tbsp lukewarm water • 175g/6oz cherry tomatoes, halved
1 Rub the chicken pieces all over with salt and pepper. Heat the olive oil in a large saucepan, add the chicken and seal well all over. 2 Add the onion, garlic, chilli and herbs and cook for a couple of minutes on a medium heat. Add the wine, increase the heat and allow the wine to evaporate slightly. Add the diluted tomato purée, then stir in the cherry tomatoes. Reduce the heat to low, cover with a lid and cook gently for 1¼ hours, until the chicken is cooked through; the flesh should come away from the bone and there should be no sign of pink when you pierce the thickest part. Serve hot. For a slow cooker: Heat the oil in a large deep frying pan and cook the chicken as above. Continue as above, add the tomatoes, plus 300ml/10fl oz/1¼ cups chicken stock. Bring to the boil, then transfer to a large slow cooker pot. Cover and cook on low for 7–8 hours.
TOM KERRIDGE'S MONKFISH SCAMPI | SERVES 4 This is my take on that 1970s pub classic, smartened up a bit with the lovely, meaty monkfish and a proper lemony mayonnaise. This makes a nice, casual lunch or you can serve it as a starter or a canapé that’s guaranteed to please a crowd.
• • • • • • • •
Groundnut oil, or vegetable 200g semolina flour 100g tapioca flour ½ tsp bicarbonate of soda Cayenne pepper & salt 330ml sparkling water 500g monkfish, cut into 3-5cm cubes Finely grated zest of 1 large lemon
FOR THE LEMON MAYONNAISE • • • • • •
3 egg yolks 1 tbsp white wine vinegar 1 tbsp dijon mustard Juice of 1 large lemon 500ml vegetable oil Freshly ground white pepper
1 To make the mayonnaise, whizz the egg yolks, vinegar, mustard and lemon juice in a food processor, then slowly pour in the oil through the feed tube, processing until the mayonnaise is emulsified and thickened. If it’s too thick, thin it slightly with some warm water. Season with salt and white pepper and refrigerate until needed. 2 Slowly heat the oil in a deep fat fryer until it reaches 180°C and meanwhile, quickly whisk together the batter. Put the flours and bicarbonate of soda into a bowl. Season with salt and cayenne pepper. Pour in the sparkling water and whisk to form a loose batter. 3 Dust the pieces of monkfish in semolina flour and then dip them in the batter. Fry for 3–4 minutes or until the batter is crisp and golden. Don’t crowd the fryer. You may need to do this in batches. Use a slotted spoon to remove the monkfish from the oil. A Day at
River Cottage HELEN PARKER, CREATIVE DIRECTOR AT deVOL & HER DAUGHTER ZOE WHO MANAGES deVOL’S PR & SOCIAL MEDIA, WERE RECENTLY INVITED FOR A DAY OF COOKING AND EXPLORING THE BEAUTIFUL GROUNDS AND BUILDINGS AT RIVER COTTAGE HQ – ZOE SHARES THEIR INCREDIBLE EXPERIENCE ABOUT WHAT THEY GOT UP TO ON THE DAY
I
remember growing up watching the River Cottage programmes, my mum (Helen) absolutely loved them, and any other cooking programme for that matter. You know when you see something on the TV and you think it looks so lovely and peaceful and simple, and you hope that if you ever got to see it in real life, that it would be exactly how you imagined and remembered it? But in the back of your mind you’re thinking there’s just no way it can really, actually, truly be like that. Well the River Cottage was, it was everything we hoped it would be; so authentic and simple, nothing fancy or showy or false, just a beautiful place filled with cool and passionate people, the real deal. Hidden away in a rural spot in the Axminster countryside, and surrounded by nothing but green fields, trees and the odd farm animal, River Cottage HQ is a far cry from the busy London life I’m used to, it’s a lovely little getaway. The whole idea of the day was for us to learn how to use and cook on the beautiful Esse stoves, which are littered throughout the cottage and barns - they looked so at home there, the perfect match. The first treat of the day was a hot cup of tea and freshly baked biscuit in the Yurt. It was so cosy in there, we sat on hay bales topped with sheepskin rugs and warmed our hands by the beautiful log fire. The Yurt has been there ever since the River Cottage began, and often plays host to tea parties and wedding parties and festivals and summer gatherings. The best bit was that we were allowed to just wander about and

explore the whole place to our heart’s content. It wasn’t busy or hectic, it was quite quiet actually, just every so often you’d see a chef nip out of the farmhouse to collect some fresh greens from the garden, or one of the lovely front of house staff prepping for the evening dinner service. The lovely big garden is something I very clearly remembered from the programme. Everything they grow here is used for their cookery classes and daily meals, absolutely nothing is wasted. The crops had already started to sprout, there was cabbage and spinach and kale and every kind of herb you could imagine, plus row after row of fresh produce. After our hot cup of tea down at the Yurt it was time for our first little cooking class with River Cottage Group Head Chef, Gill Meller. Gill was showing us how to cook on the Esse Fire Stone, which is a very cool wood-burning outdoor oven that you can pretty much cook anything in. We fell totally in love with it and what it does and are hoping to get our very own Fire Stone for Cotes Mill, it would look so cool sat out in the courtyard. Gill was teaching us how to make the perfect pizza - it was so quick and easy, the bases were thin and crispy and the cheese was all melty and delicious in just a couple of minutes. Helen went for a classic tomato base, creamy buffalo mozzarella, a sprinkling of cheddar (something we wouldn’t typically put on a

pizza… but Gill told us that adding just a little bit along with your mozzarella will make your pizza that extra bit cheesy and rich and yummy), a few fresh mushrooms, some zingy garlic and nettle pesto and a generous helping of River Cottage’s handmade British salami. Something that I think is really cool about this oven is that you can place your food directly onto the stone, you don’t need a tray or a shelf or a plate. Doing it this way means your food gets those authentic smokey, woody kind of vibes, mmmm. Next we got to explore inside the beautiful farmhouse. The farmhouse kitchen is truly lovely, full of quirky old bits and bobs, vintage utensils and pots and bowls, a beautiful big antique table and a huge open fireplace. A room that reminded me so much of the Mill, authentic, charming and unspoilt. Our lesson in the kitchen was with Andy Tyrrell, Senior Sous Chef at River Cottage, and Helen was the very willing helper again… she loves cooking so much and any chance she gets to cook she takes it, oh and she’s so good… I think she could give the River Cottage chefs a run for their money any day!

First up Andy showed us how to make the perfect Kale crisps. I know these things are pretty trendy and in right now, they’re healthy and they taste really good too, but buying a packet of these at the shops will cost you about £3. Trust me, you don’t need to buy them from the supermarket any longer… they’re so easy, so cheap and much tastier if you make them yourself. Give the leaves a quick rinse, add a dash of soy sauce and a pinch of chilli – or whatever you fancy – and pop them in the oven to crisp up. Keep an eye on them, as they’ll burn quickly, but 5-10 mins should cook them to perfection. The best snack! Andy then whipped up some little cups of Asian broth, a sweet and sour tangy mouthful of utter loveliness. He added some chopped up greens, carrots and mushrooms to the bottom of the cups and poured the steaming broth over the top. So good! Next up we made some English muffins with crispy bacon, spinach and homemade hollandaise sauce. I never knew it was so easy to make English muffins and I was fascinated when Andy popped them straight onto the top of the Esse hot plate and shut the lid.
These little guys came out looking and tasting just perfect, they were slightly browned on each side and all fluffy in the middle. Andy added the final touches to the toppings and popped them onto the fluffy muffins, adding a good dollop of creamy, rich hollandaise to the top. The tastiest little mouthful ever. And for our final lesson of the day we sat down in the farmhouse lounge where Gelf Alderson, River Cottage Head Chef, was waiting for us. Firstly Gelf whipped up a super quick and super simple bread dough. He shaped it, scored it, and again, placed it straight onto the bottom of the hot stove, no tin or tray needed…. the bread was perfectly baked within about ten minutes and it tasted so good. After all of our cookery classes were complete and we’d had a really good nosey around the grounds, Esse took us to see their lovely new trailer which they’d parked up outside River Cottage. The trailer has been fitted with a beautifully simple deVOL Shaker Kitchen and a classic white Esse. We are so happy that Esse picked one of our kitchens for their trailer, it’s going to travel all over the country to fairs and festivals and showrooms to spread the word about this lovely company and their lovely products. What a cool idea. To top the already amazing day off, we were invited back in the evening for a meal cooked by all of the River Cottage chefs and it was the most amazing meal, so good in fact, I’d eaten it all before I remembered to take any photographs… sorry!! CHOCOLATE-COFFEE MOUSSE WITH RASPBERRIES | SERVES 4
• • • • • • • • •
85g (70-85% cocoa) dark chocolate, broken into pieces 85g unsalted butter 30ml (2 tbsp) freshly brewed coffee 2 eggs, separated 60g icing sugar, plus an extra tablespoon 1 tbsp of Madagascan bourbon vanilla extract 1 tbsp water A pinch of salt Fresh raspberries to serve

1 Heat a saucepan of water and set a large heatproof bowl on top. Add the coffee, chocolate and butter into the bowl, warm slowly over simmering water until melted, stirring occasionally. When the mixture has melted, remove from the heat and allow to cool over a large bowl of lukewarm water with a small handful of ice. 2 Using the same saucepan of water, place a new heatproof bowl on top into which add the 2 egg yolks, icing sugar, water and vanilla essence. Using a hand-held electric beater, whisk for about 3-4 minutes until the mixture becomes pale in colour and thickens in consistency. 3 Remove from the heat and place the bowl into another larger bowl filled with iced water. Be sure to not let any water into the smaller bowl. Continue whisking the mixture for a further 5 minutes until it thickens considerably and is cooled down. Add the previous chocolate mixture into the beaten eggs and fold to combine. 4 Next, place the egg whites into a large clean, dry bowl with a pinch of salt. Using a hand-held electric beater, whip to a foam. Once the egg whites are almost stiff and frothy add the tablespoon of icing sugar and continue to whip until firm. 5 Using a rubber spatula, add one spoonful of egg whites into the chocolate mix by gently folding, (by starting with the spatula in the centre of the bowl, working up the side and bringing back down towards the centre). Add the remaining egg whites, folding in until almost fully combined. Do not over whip as you will lose all the light, airy texture of creating a light mousse. 6 Transfer the mousse into individual serving bowls and garnish with a few raspberries and refrigerate for 3 to 4 hours and serve.

A good quality coffee, has a rich and decadent chocolate aftertaste. But if you are like me forget hot drinks that attempt to reproduce this unique flavour by adding chocolate to less exotic coffees. This combination works much better in mousses, cakes and indulgent confections like truffles. A little coffee taste goes a long way by enhancing chocolate dishes to simply make them taste chocolatier.
VANILLA AND COFFEE-CHOCOLATE TRUFFLES MAKES ABOUT 20-25 (DEPENDING ON THE SIZE) Accident or not this combination works and it’s the perfect palette pleaser. Both coffee and vanilla add strength of flavour. Be it cakes biscuits or ice cream, coffee and vanilla work beautifully as background flavours but why not extract them both to create an exclusive culinary role as independent ingredients. • • • • • •
15ml double cream 2 tbsp crushed coffee beans 2 tbsp Madagascan bourbon vanilla extract 1 tbsp unsalted butter, softened 225g (70-85% cocoa) dark chocolate, broken into pieces 100g unsweetened cocoa powder, for dusting
1 Heat the cream in a saucepan over a low heat, be careful not to simmer or boil. Remove from the heat and add the coffee beans and vanilla extract and leave to slowly infuse for about 5 minutes. 2 Place the chocolate pieces into a bowl. Gently reheat the cream and once warmed through pour it through a strainer over the chocolate. 3 Using a spatula, gently stir until combined to emulsify the ganache and fold in the butter to create a smooth, silky texture. 4 Set aside to cool completely. Cover with cling-film and refrigerate for 24 hours. 5 Line a baking tray with parchment paper. Take generous spoonfuls and shape the chilled ganache into walnut-sized balls and set on the baking tray. 6 Finally, roll the balls in cocoa powder, gently shake in a strainer to remove any excess and enjoy! 7 Store the truffles in the refrigerator in an airtight container for up 7-10 days.
CHOCOLATE ORANGE & COFFEE ZABAGLIONE | SERVES 2 Orange and Coffee are undoubtedly the perfect breakfast companions but aside from breakfast these flavours are perfectly balanced in just about anything and everything; from liqueurs to crêpes and tea cakes to confections. Traditionally Zabagliones are made with spirits but who could argue with coffee. This sweet dessert is much lighter in texture and in colour yet still smooth with lingering flavour of coffee/orange that proves to be as good at finishing off a day as it is beginning one. • • • •
2 egg yolks 2 tbsp of caster sugar 25g Lindt Orange Intense chocolate 60ml freshly brewed coffee - chilled
1 Place the egg yolks and caster sugar in a large mixing bowl, using a hand-held electric beater, whisk away until the mixture is a pale yellow. 2 Finely grate the chocolate, using a spatula gently fold the chocolate into the egg mixture and then fold the chilled coffee into the chocolate mixture. 3 Place the bowl over a saucepan of gently simmering water, using the hand-held electric beater (on the lowest speed) gently whisk the mixture as it slowly cooks being careful not to overcook as it will curdle. 4 Once the mixture thickens, spoon into small coffee cups and serve warm with delicious biscuits - ideal for sharing.

“I forgot how good this is place was” Review of The Case Restaurant and Champagne Bar I came to The Case after a gap of 10 years, and boy was I impressed! Even though it was a business lunch, the food was outstanding. I had the soy glazed salmon and every mouthful was bursting with flavour. My wife is a vegetarian and even she can’t stop raving about the food. I can’t wait to go back here to have a proper 3 course dinner! In fact I don’t even know why I stopped frequenting the place - I guess it was just about trying new places elsewhere and then forgetting that it was there. Simple furniture, beautifully made here in Leicestershire The deVOL Shaker Kitchen shown here is so refreshing and reminds us that less really is more, the clean crisp Scandinavian feel is a perfect antidote to grey days. This Victorian house in Brighton was uncluttered and calm, large well proportioned rooms and perfectly preserved floorboards. These wide pine boards had been sanded and finished with clear matt varnish that didn’t colour the pale wood. It’s these features that really give a room its character; big sash windows, high ceilings and a beautiful floor, things you can’t often recreate but may be lucky enough to have inherited in your home. The cupboards in this kitchen were all from our ‘Real Shaker’ range, standard sized modular cupboards that are made here in Loughborough. The customers chose our ‘Mushroom’ paint colour, a perfect match with the Carrara marble worktops and aged brass fittings. We have nine paint colours to choose from and also offer the option to have bespoke cupboards made if you have an awkward spot where a standard piece won’t fit.

The only slight problem with the ‘wow factor’ Show Gardens is that they seem so entirely out of reach and disconnected from our own gardens. Even the shape, at around 10m x 10m, almost always in a regular square or rectangular shape is one very rarely found in our gardens back at home. (Although a disused tennis court would make rather a good spot for a Show Garden!) So how can we relate to the Show gardens at Chelsea, how can we bring a piece of Chelsea Flower Show home?

t is that time of year again, when our televisions are overtaken for a week by the glitterati of the gardening world, alas still missing Alan Titchmarsh after his fallout with the BBC a few years ago. Chelsea Flower Show is a fantastic showcase of high quality construction and design, really showing that landscaping in the UK does not just consist of banging up a few fence panels and laying some block paving. There has been a fashion in the last few years for the Show Gardens at Chelsea to include indigenous stone, native plants and wildlife and eco friendly elements, and this year certainly seems to tick all these boxes too. If you have a chance to visit Chelsea Flower Show in person, do take it, whilst you most definitely get a better view of the details within the Show Gardens on the television, the way that space works in reality can only be truly appreciated by bustling through the crowds to catch a glimpse of the real thing.

leve West is my favourite designer closely followed by Dan Pearson and vista mad Arabella Lennox Boyd. Designers are all different. Each has their own style. Everyone can tell a Diarmuid Gavin from a Roy Strong but fundamentally they share an underlying set of principles that comprise the art of designing gardens and it is a form that can be taught. It is in the use and combination of these principles that cadence and style are created and from where an extraordinary range emerges from busy cottage gardens to the symmetrical layout of Hampton Court. All designers manipulate form and space.
Designer John Brookes first coined the idea of an ‘outdoor room’ and suggested we could use the internal space of a site in any way we wished, moving lines from the external boundaries across the space with
dramatic and freeing results. Why put a lawn in the middle and beds round the outside? Liberate your thinking and see the garden as a completely blank canvas. In his book ‘Garden Design’ Brookes clearly outlines the stages of developmental design from historical evolution through to your own plot: pattern and style, surveying, scale measurements, graphics and principles of design and planting. Try to temper the urge to rush to the garden centre in the first sun of spring and buy whatever you fancy. It is always productive in the long run to know your soil and aspect and to have considered your likes and dislike and the demands of site and family. One of the first questions a designer might ask is, ‘what do you use the garden for’ rather than ‘what plants do you like?’ In design it helps to be both practical and creative. It is in combining these skills and gaining an
understanding of the site and client requirements that a fusion occurs and the development of a garden is born. Choice and informed knowledge are key. Why is the patio here when the sun is over there? How do I screen my neighbour’s children shouting at me from the trampoline without a ten foot leylandii? These questions and more are answered on design courses where you can learn why we make the decisions we do, what materials and plants best suit your site and how to navigate the plot to best effect. All you need to do is decide which level you wish to learn. In the meantime go to Chelsea Flower Show for the ultimate in inspiration (24-28 May). Cleve West has a show garden. t’s early summer and your lawn grasses will have started growing as the soil warms up, so your mowing needs to start in earnest. Regular mowing is a vital part of lawn care. A quick whiz with a sharp and well-adjusted mower will only take you a few minutes if you do the job every week. Mowing as often as you can will encourage the fine grasses and allow the grass enough energy to thicken up to be an area to be proud of. Lawn cutting can be simplified into the following rules: • Never more than 1/3rd off in any one cut • Mow frequently - weekly is best when the lawn is actively growing • Check your mower regularly for cutting height and blade sharpness Regardless of your mower’s cutting action being Cylinder, Rotary or Hover, the principles remain the same.
THE 'ONE THIRD RULE’ Never remove more than one third of the grass blade on any one mowing. Therefore, if your lawn mower is set for a 3cm (1”) cut then you must mow at or before the grass gets to 4cm (1½”) whether that’s 4 days or 8 days between cuts. Regardless of the mowing height, we recommend never leave your lawn more than 10 to 14 days between cuts.
The chances are that if it is very dry in the summer you won’t need to cut the grass too often, as there will be little growth. However, don’t go over 2weeks between cuts because some weed grasses will take advantage of the lack of lawn mowing and spread or seed profusely.
WHY MOW LITTLE AND OFTEN? For many of us little and often means once a week. This will produce a much denser and more aspirational turf than if your grass cutting is every 2 weeks. A dense turf is the best looking and a great form of natural weed control as it prevents weed seeds from contact with the soil. If the seed doesn't contact the soil then there is a very good chance that no weeds will grow; perfect!
IF I DON’T FOLLOW THESE RULES, WHAT HAPPENS? Thin patchy lawns are often the result of infrequent mowing or removing too much of the grass when you cut. The best position in any Jaguar is of course the supportive, leather-clad driving seat. Looking forward over the deeply recessed dials, there is a commanding view over the low dash and out beyond the beautifully humped bonnet which defines the driver’s horizon. Jaguar has achieved a careful balance of classic cabin design with contemporary touches. On pressing the start button, the outer air vents swivel into place and the knurled metal rotary gear selector rises from the centre console. Sitting neatly beneath the leather-topped facia, the touch screen media display is one of the easiest to navigate. The new XF is a whisker shorter than the outgoing model yet the longer wheelbase means greater interior space, especially in the rear. It is also lighter due to greater use of aluminium: better for

performance, handling and economy. Our test car, the attractively hunkered-down R-Sport trim, is graced with sports suspension, subtle body kit and understated red and green badges adorning the wings and grill. At the rear, the boot lid now rises into a neat integral spoiler above the leaping cat badge. Fearing the sports suspension, a feature which simply ruins the ride of many cars, we found it pliant and poised in the XF. Settling down well on the motorway, it is also precise on the twisty bits and encourages the driver to press on. The V6 petrol and V6 diesel the engines of choice for both power delivery and sound but the punchier of the new two-litre Ingenium diesel engines fitted here is perfectly respectable for performance and the emissions won’t frighten the tax man either. With its tuned exhaust, it makes a determined sound and fitted with the slick eight-speed automatic, progress is extremely smooth. The new XF just feels right. The whole car seems to fit like a glove and gives the impression of being smaller than its real dimensions would suggest. It also has a suppleness and dynamism to its ride that is simply missing from much of the competition. It is available with all-wheeldrive for the first time, too. hat a challenge then to keep Jaguar cars looking contemporary without losing some of this evocative past from the mix. The step change came with Ian Callum’s careful designs which brought a new face to Jaguars back in 2007, a look which has since become both instantly recognisable and appreciated. Now Jaguar has taken a further gentle step along the evolutionary highway with the all-new XF, a very fine looking car indeed. Its lines are cleaner, crisper and the nose is most certainly bolder. In particular, the waist line sits lower so the whole car appears more slender.

While the financial implications can be daunting, the key to affording school fees is to plan as early as you can. Saving soon after a child is born gives ten years to build a fund for when they go to secondary school. Generally, parents looking to fund school fees fall into three categories - those who want to invest a lump sum, those who would like to spread the cost of fees, or parents wanting to set up regular savings scheme to provide funds to cover future fees. There are several schemes available to help school fees more affordable, and an experienced wealth manager can draw up a bespoke investment plan that can be
both tax efficient and flexible. For example, you could consider using your annual tax-free ISA allowance. By investing the maximum amount permitted in an ISA and selecting funds run by full-time professional investment managers, a tidy sum could be accumulated in the space of ten years. am impressed at how often those visiting my office for the first time are accompanied by a friend or family member, it is not essential but a great help to many.
You may have experienced friends appearing increasingly burdened with life only to announce they are separating from their husband or wife and considering divorce. Divorce and separation is one of the most stressful experiences a family can go through and my role as a legal adviser is very different to that of a friend.

AVOID TRYING TO GIVE ADVICE Whilst the cycle of bereavement following divorce is similar to many, all cases are unique and to start advising friends, “you should get this…” or “you deserve at least 75% of the house” is not constructive or helpful; in fact, it may be damaging and increase their anxiety. Instead try listening, active listening without interrupting to give your own view or share your own experience.

WHAT DOES YOUR FRIEND REALLY WANT?
Becoming single again or becoming a single parent brings many challenges. Your friend will be upset so try to be there for them, you could take them out for supper, enable them to get out to the gym by babysitting the kids or doing the school run. Don’t try to match make or make things better give your friend the space to find themselves again.
I encourage my client’s to consider what it is they really want. Very often after an initial meeting with a client I find that they don’t actually want a divorce and I can refer them to relationship counsellors who will help. For others there is no way back. If we are clear what we want in life decision making is so much easier and helps reduce stress.

ine months ago, New Forest based artist Sally Mackness was inspired to paint after watching a TV documentary about London’s Royal Academy of Art. It was this light bulb moment that motivated her to pick up a paintbrush and Sally enthuses “I’ve no formal art training but I suddenly had this overwhelming urge to paint; I just couldn’t stop”. A visit to the RA’s summer exhibition a few days later further cemented this previously hidden passion & talent. Her work consists of bold, bright, contemporary acrylics but it was her floral collection that resulted in over 200 paintings selling in her first few months of selling.

Sally’s home studio is in fact her unfinished extension at home in Christchurch, which is filled with an abundance of colourful paintings, from her sunset collections and powerful abstracts of nautical scenes to a multitude of varying sized floral images. Sally says “My husband Paul and our three children have been so supportive and understanding, as they witness their home being transformed into a temporary pop-up art gallery. I love welcoming people into my home and my biggest reward is seeing their positive reactions to my work. However, we’re all ready for me to move into the new art studio we’re planning.” A successful career in corporate marketing with strong business skills helped build exposure

for her work and soon drew the attention of art connoisseurs in New York; leading to an invitation to submit pieces to a prestigious art foundation. Several visits to New York later, and Sally is receiving significant interest from Manhattan private collectors. “The New York interest has been an incredible opportunity and very exciting. Never underestimate the power of social media, hard work and enthusiasm: it just goes to show that small businesses have no excuse not to harness the opportunities that are out there.” Sally’s ‘Poppies’ paintings have caught the eye of The Royal British Legion who adored the stunning, yet simplistic, quality of her work. A number of limited original ‘Poppies’ will be sold as part of their fundraising campaign this year. With commissions to paint coming in on a daily basis, Sally relishes a new challenge and appreciates the therapeutic values of art. Her work has already been acknowledged by the likes of Alex Jones from BBC’s The One Show and ITV’s Lorraine Kelly and she has also contributed to Macmillan Cancer Support. Sally summarises by saying, “My paintings and the colours I use are a reflection of my personality and the influences of coastal and city living. I am grateful and overwhelmed with every painting I sell. It is deeply touching to hear how loved my work is”. “ATTENTION”ALL PARENTS OF GCSE STUDENTS ENTERING YEAR 11/YEAR 10 IN SEPTEMBER
The GCSE Maths exam has changed. For a start, your child will no longer receive a grade between A*- F, instead a numbered grade from 9-1. But the real changes run far deeper. The exams will contain never-before-seen Maths topics. The order of learning your child has grown up with has been scrapped. And most importantly of all – the actual way of answering questions has changed. These changes are radical. Not since 1982 has there been such an overhaul. Those late to adapt will pay the price. However, those who get it right will have an almost unfair advantage.

oughborough High School students have been recognised for their business acumen after being named Young Enterprise Leicestershire Company of the Year. The Company Programme is Young Enterprise’s ultimate business challenge for 15 – 19 year olds. Over the course of a year students find out what it’s really like to set up and run a business – from raising share capital to designing their product or service to selling directly to customers. This event sees companies from across the East Midlands battling it out to become East Midlands Company of the Year 2016. Since September, ‘Endeavour’, the Loughborough High School team of 19 girls from Year 12, organised themselves as a business with specified roles, identified a market and a product, produced the product and generated sales and profit. Throughout the process they benefited from the guidance from the Head of Economics and Business at LHS, Robert Needs, and business advisors, Eric Bradley, formerly of Procter and Gamble and Nicola Harlow, formerly of Leicester City Council. The product is an exam preparation book for both pupils and parents, entitled 'Frank says, Don't Freak Out' retailing at £3 per copy. Its cover is cleverly designed with one side aimed at pupils and when flipped over, the other aimed at parents. The sixth form team entered the national Young Enterprise competition against other Leicestershire schools and have progressed successfully through the first two rounds in February and March. Along the way they also picked up awards for innovation, best product, best report, best presentation and best financial performance. At the Leicestershire final, held at the School of Business and Economics at Loughborough University on 21st April, they were named Young Enterprise Leicestershire Company of the Year, which will see them represent the county at the East Midlands finals on June 28th. A very proud Mr Needs, said:- ‘’This achievement puts Endeavour in the top 5% of Young Enterprise companies in the UK. They attained this through their own efforts and worked exceptionally well as a team employing a range of business related skills including creativity, financial management and leadership”.

he ‘Get Busy Living!’ Centre has always been a dream of mine, a place for the Foundation’s beneficiaries to visit and to help in their rehabilitation after a life changing injury through sport.
This dream is now set to become a reality. However we need further help to achieve our goal, so that we can continue to support our ever-increasing number of beneficiaries. The Centre will be a focal point for the Foundation, a place where our beneficiaries and their families will be able to share their experiences, be motivated to move on with their lives and allow them to 'Get Busy Living' again.

and going out and spreading the Foundation’s positive message of ‘Get Busy Living!’ I believe the Centre will be so important because people who have suffered catastrophic injuries and have got busy living can become role models and mentors for newly injured individuals and their families. We will be able to provide a useful insight and vital life experiences in to what it is like living with a catastrophic sporting injury: as well as helpful information on travel, nutrition and equipment needs etc.. The Centre will also be a place for specialist companies to exhibit state of the art equipment and technology. We want to offer our beneficiaries the chance to sample the best rehab equipment without having to endure the astronomical costs.
The Matt Hampson Foundation is now inundated with requests for help on a daily basis. The ‘Get Busy Living!’ Centre will enable us to support even more people and their families and friends, not just physically but more crucially to provide that peer support that is so important in overcoming these injuries.
