Vapour – Sand, black in silk & wool
Vapour: A beautiful flowing design! It is the modern personification of vapour smoke as a work of art, that dances through the air. The rhythmic movement of the design combines with warm tones capturing your imagination floating through the breeze while displaying tranquil balance and harmony. Splash: A stunning abstract design based on the ocean waves hitting the rocks and ebbing back to the sea. It’s serene presence comes from the ability to be seen in many forms. Colours of sand are woven into the highlights of ivory, midtones of grey and shadows of black silk creating depth and movement.

SUMMER 2022
PRES I DE N T ' S L E T T E R Welcome to the Summer edition of The Collection. We hope you are gearing up for a fun and relaxing season. Whether you plan to take advantage of the city’s many cultural activities and sporting events, or head to cottage country for fresh air and downtime, we hope you have a great summer. For the market watchers, we’re obviously seeing a shift in housing activity following the busiest sales run in Canadian history. Now, with rising interest rates, inflation, and supply, the market is changing. At a recent panel discussion, the host remarked how we’re transitioning from a period of ‘free money’ to a period of ‘cheap money.’ This may be true, but after a long run of rising housing prices, rate increases are affecting affordability. Many buyers are sitting on the
sidelines as they track pricing and explore inventory. You’ve likely heard this referred to as a rebalancing or a normalization, and these are important words. That said, despite year-to-date sales being down roughly 30% as of May, it’s interesting to note that sales of $2 million priced homes are up 18%, $3m homes are up 12.5%, and $5m homes are up 2% year-over-year. This just illustrates how hyper-local the Toronto market remains, and how every area behaves in its own unique fashion. As for the decline in total sales volume, I don’t view it as the bottom falling out of the market. Rather, I interpret is as activity that is pulling back a little bit. Prices couldn’t continue to rise unabated at 30% per annum. Today, buyers find themselves in a stronger position than at any time since the start of the pandemic. Though technically it remains a ‘seller’s market’ with 2.1 month’s supply, buyers are now able to influence terms, pricing, and closing dates. Moving forward, sellers will have to readjust their expectations and appreciate that buyers will have a greater say in the transaction. But for anyone interested in real estate, whether seller or buyer, know that Greater Toronto remains a city of neighbourhoods, and that no two communities behave the same way. You will always be best positioned for success by working with a knowledgeable and experienced Realtor. Enjoy the summer and we look forward to speaking with you soon!

The Collection: Can a new building stand alone, or should it conform to the existing space? Jeanne Gang: I think it has to work with what's already there. Start with what's there, start with the city, with the people, how do they behave? With One Delisle, one of the things we did was set the building back and make a wider sidewalk. Something as simple as that…yes, it's taking off some of the land that you can build on, but it’s giving it back to the public space and realizing that there are more and more people here. We need more public realm, and more generosity with the streetscape.
always first and foremost. But cities are different…in Amsterdam there's a very strong urban design group that wants to meet with you and have discussions about the history of the city. Other cities, like Chicago, there are no rules at all. In Toronto, we had some nice conversations with the city about the form of the building. We originally wanted to make it round all the way down because that will give the least shadow, but the city really wanted to see it coming more to the urban form. So, we made this transition between square footprint to circular, and it’s pretty interesting. TC: How do you approach reuse?
TC: How do you balance the client needs with those of the public? JG: I feel lucky that I'm working with developers that have the city first in mind. Yes, they want it to be taller because that gives more return on the land, but the discussions about public realm are
JG: I’m not into tabula rasa at all. Start with what’s there…that’s like our motto…what’s worth building upon and continuing and extrapolating from? With the Arbor in San Jose, we looked at existing buildings around the site…can we use these, can we reinvent them? This is research I've been doing at

Harvard with my students on Brutalist era buildings that people love to hate, except for architects…we love them. They're just so unique, so let's hold on and celebrate it. They are socially progressive, they’re formally progressive, but they also have problems… they’re not energy efficient. So, I like to invent a story when you approach reuse. We started calling it "The Life of Pi" because it looks like a Pi symbol, and we tried to make the pi symbol more relevant in this next iteration. I think it's a worthwhile endeavour. TC: You’ve expressed concern about the impact tall buildings have on birds.

JG: In one of my first projects, I looked at how to reduce bird strikes on building glass, and it’s become an issue that I've been drilling down into. Toronto and Chicago are on waterways and are really susceptible to bird strikes during migration. As architects, we need to work with clients and cities to address this thing that’s problematic for the ecosystem. It's about reducing reflectivity, or below 50 feet - where the trees are and where you get a lot of strikes - using fritted glass and railings that are not just made of glass.
TC: What unique features stood out to you about the site at One Delisle? JG: It was the presence of older buildings and the one facade that we really wanted to keep in the project and relate to. There was the aspect of it being a very connected intersection with transportation, so that we could bring more density. We also looked at the ravine landscape, as an inspiration, and explored that. It's a good site and a very good candidate for a tall building. TC: How did you decide on the shape? JG: We were working on the project in Hamburg, and Hamburg has a climate that's beautiful when it’s beautiful, and cold when it's cold, not unlike here. And they have these beach chairs that you can modify to protect from the wind. That was kind of the inspiration…could we make a building that can protect from winds but also create different types of balconies and outdoor spaces. I think it's a good model to try to do even more of…how can you modify your buildings for climate and comfort on the outside? There's a lot of buildings that have balconies, but we were thinking about sightlines, seeing your neighbours,

and modifying the climate so it's comfortable. For the benefit of the people living there, how could they enjoy outside for longer period of time over the seasons. TC: What inclusions are you bringing to One Delisle that we haven’t seen previously in a Toronto building? JG: We're bringing balconies, differences between units, different orientations, a building that has animation to it when you look at it from afar. And, how it touches the ground. It’s bringing this public space, the new park, and human scale to the streetscape. These things have maybe happened before, but this really brings them all together into one project, that's more than just the building…it's about how it knits into the city.

MOCA provides a range of
By Jordan Z. Adler Toronto’s Museum of Contemporary Art (MOCA), now in its 24th year, is not just a space to experience boundary-shifting creativity. Its current home, the bottom floors of the Tower Automotive Building, is beginning to resemble a work of art itself. A new, steel, sky-blue installation entitled “Mashrabiya,” made by Tehran-born, Toronto-based artist Ghazaleh Avarzamani, now juts out from the museum’s walls. The name refers to a work of architecture common within traditional Islam, an oriel window that helps to stream air into the space. The mashrabiya is a tool for privacy as well, shielding women from public view while allowing them to see activity outside. Depending on which side of the installation one stands, you are either the observed or the observer. “The owners of the building have acquired that piece,” says November Paynter, MOCA Toronto’s artistic director, on this new addition to public art in the city. “It is now available to see indefinitely on the façade.” Avarzamani’s work reflects the globality of the city where it is exhibited. But the presence of “Mashrabiya” is not the only way that MOCA Toronto is reframing its purposes as a museum. The building’s south stairwell acts as a concrete connector of exhibits. The passageway also exists as a kind of studio space for Toronto artists who work with sound design. The sonic rhythms in the stairwell serve to transform this industrial walkway into its own kind of hypnotic environment. 16 | the COLLECTION

Sound-based artist Debashis Sinha, a secondgeneration South Asian Canadian, is currently bringing the melodies and textures of Kolkata, India into the stairwell. What makes the audio so evocative and unusual for those who listen is the way these spiritual sounds have been partially determined by machine-learning algorithms and AI. The artists that were commissioned to create sounds for this setting are all Toronto-based. Sinha’s recordings can be heard vibrating through the building until July 31.
When MOCA moved to the new space in 2018, the shift also coincided with a name change: the former Museum of Contemporary Canadian Art (or MOCCA) excised the word “Canadian.”
“You can feel the history of the building,” Paynter says of this multi-storey art space. “The way people are mixing the sound in the space, you kind of move up through the soundwaves. I think it’s quite a beautiful, uplifting experience.”
For instance, one of this season’s exhibits, the first solo Canadian show from Felix Gonzalez-Torres, is entitled “Summer.” But the show is not static…as the temperatures warm in Toronto, the pieces will rearrange. The show’s title also changes, appropriately, to “Winter.” “I feel that Felix’s work is just so generous, the way it somehow embraces you and allows you to imagine how your everyday environment can hold so much potential and speak to so many complex ideas,” Paynter says. “[The exhibition] embraces people, I

Nevertheless, there is still plenty of arresting work by the country’s best artists on display. The decades-old industrial building also offers artists a wealth of flexibility. Part of the fun of working in this building, Paynter says, is its ability to adjust the audience’s expectations.
think, and brings them into the conversation.” It’s that attention to experiencing art in new ways that helps MOCA attract repeat visitors. “With [Gonzalez-Torres’s] show in particular, [curators] are spending a lot of time navigating and talking about the work with people coming into the space,” Paynter says. “On a personal level, it feels so good to see people back and engaging with any kind of cultural expression.” Ever since its genesis as a not-for-profit space in 1999, MOCA Toronto has found much acclaim as a launching pad and experimental venue for local and Canadian artists. For more than two decades, the museum has shown works by more than 1,000 artists.

In its first decades, the museum included many exclusive works of fine art, filmmaking, and photography. In 2010, the museum even collaborated with the National Gallery of Canada (NGC) to co-curate that gallery’s extensive repository of contemporary art, among other programs. One of those innovators whose work was featured in a co-presentation between MOCA and the NGC was Thomas Demand. The German sculptor and photographer also has a MOCA show planned for the near future. Also on the horizon are shows from Kapwani Kiwanga, from Hamilton, Ontario. Kiwanga, a multidisciplinary artist whose work explores the histories of Africa and the African diaspora, won the prestigious Marcel Duchamp Prize in 2020. Another Canadian poised to create conversation in future seasons is Montreal’s Kelly Jazvac, who focuses on a sustainable visual art and practice. This dual interest in the artistic and the scientific invites a repurposing of existing work. Apart from these national treasures, MOCA Toronto’s staff is also working to expand its curated repertoire to include more works from non-Canadians. Part of that re-branding is meant to shift MOCA to its desire of being more than simply a local museum, but an international destination.

“We actually had somebody who mentioned to us the other day, they had come all the way from L.A. just to see the exhibitions,” Paynter tells The Collection. “It’s amazing. They routed their flight through Toronto so they could see it.”
His work – posters, stickers, paintings, beadwork – is also flooded with saturated colours, foregrounding aesthetics, materials, and messages of Indigeneity. The art exists on 15 movable platforms, and those attending the exhibition can even sit on them.
Among the recent shows luring out-of-towners are exhibitions by filmmaker and photographer Shirin Neshat, and interdisciplinary artist Jeffrey Gibson. In Neshat’s show, she attempts to capture portraits of exile among new arrivals in the United States and Muslim women in Iran. For the former series, the media-maker photographed more than 100 people from New Mexico, searching for evocative portraits that could reveal something about their dreams.
“We have a lot of programming that is participatory to some extent,” Paynter says. “[For Gibson’s exhibition], we worked with a local publisher in a local bookstore to include 100 books by authors for children within the space.”
Meanwhile, Gibson focuses on the histories of various Indigenous cultures in the United States but brings this subject into the contemporary with flair.
Neshat, Gibson, and Gonzalez-Torres’ exhibitions all run until July 31. For more information, visit moca.ca

SO N OF ELSE WHE RE IN CONVERSATION WITH ELAMIN ABDELMAHMOUD Canada is a land of immigrants, but for those who choose a new life in the Great White North, the journey doesn’t end at the border. Culture writer and CBC personality, Elamin Abdelmahmoud, arrived at age 12 f rom Sudan. He spent his teenage years navigating race, language and religion, and discovering surprising and unexpected ways that connections can be found. From professional wrestling super fandom and nu metal bands to traveling the endlessly unfurling Highway 401, Elamin shares his immigrant experience in a remarkable new collection of essays, Son of Elsewhere. With humour and intellect, the pages reveal how we pick and choose f rom our experience and environment to ultimately def ine the person we become.
SUMMER 2022 | 25
The Collection: The memoir is titled, Son of Elsewhere. Where did that come from?
TC: You write that you ‘face an uncomfortable fact,’ that you love America. What do you mean?
Elamin Abdelmahmoud: I was born in Sudan but moved to Canada when I was 12. Moving to Canada, and specifically to Kingston, meant coming to a place where I was suddenly around people who didn't look like me, and I had to figure out my relationship to my new home in that context. One of the things I did, because I was 12, was try my best to disappear within certain aspects of my personality…not to highlight my blackness, not to highlight my immigrant-ness, not to highlight that I'm Muslim, in order to blend in. This idea, Son of Elsewhere, came when I wanted to return to what it meant for me to pretend those identities didn't exist. I don't feel at home in Sudan, I don't feel at home in Canada. Elsewhere is an attempt to claim that space in the middle.
EA: America used to be a threat that loomed all the time. At the same time, I have very strong memories of family and neighbours talking with reverence when someone they knew got their green card. When I was ten years old, America bombed the AlShifa pharmaceutical factory in Sudan. They said it made chemical weapons. There's no evidence that is true…there’s plenty of evidence that it was an aspirin factory, and a factory that made medicine that Sudan needed to fight malaria. I’m also a pop-culture writer. For a living, I write about American art. So, there's always been these contrasts for me between the roles that America has ended up playing in my life.
TC: The book reads as part memoir, part history lesson. Why did you take this approach?
EA: I wanted to grapple with the history of myself. I grew up in a place where I didn't have to think about my skin colour and so I didn't become ‘black’ until I came to Canada. At the same time, I come from a place that has a long history of discrimination against darker skinned people. People who are my skin colour have it quite easy comparatively because there's quite a bit of discrimination against people who are darker skinned in Sudan. So, this has a longer history than me running away from blackness in Canada. In fact, we can trace it to the history of colonialism.
26 | the COLLECTION
TC: Do you think the discovery of Western music is an important part of the immigrant experience? EA: I think it's one of the most significant doorways that you can open as a newcomer. I remember sitting with a pen and paper trying to understand why this lady is singing about wanting to be like a bird. Trying to not only understand what they're saying, but why this is the thing that's popular right now. For me, music has been a very significant key. It opened a lot of doors. I have a lot of gratitude for music for just being one of the crucial ways that I began to understand the new place I was living in. TC: You write about the band Disturbed and seeing yourself in their songs. I would imagine
that being central to an immigrant’s belief that they belong. EA: If you’re open to it…but with Disturbed, it wasn't that I naturally saw myself in it, at first, it was horrifying. This guy is singing about fighting with his parents. I didn't even know you were allowed to sing about this stuff. But you have to be open to the connection. Not everyone is. It’s also natural to arrive to this country and pull harder towards your roots. TC: You've said that you want your daughter’s name to be “a burden to her.” Can you elaborate? EA: Her name is heavy and long, it's my last name, and it's going to be something that she has to learn to memorize. She's only five, she knows how to spell her first name, but her last name is going to take time. Because she's born in a place like Canada, and her mother is not Muslim, her mother is a white woman from Hamilton, she is going to be reminded by her last name that a part of her doesn't come from here. One day, she'll have to sort out her relationship to her last name and that will open the door for us to have deeper conversations.
on genre, radio formats are based on genre, and it's doing us a disservice because we would like elements of a different genre if you could just be exposed to them. I think of Mustaffa the Poet…he shows up to interviews and people assume he’s a hip hop artist and he says, “No, I'm folk, I have more in common with Bob Dylan.”
TC: Who's making your favourite music today? EA: Brandi Carlile. She does folk and country, different roots music, rock ‘n roll. Incredible songwriting and an incredible voice. TC: Are you suprised at all by your affinity for country music? EA: Not anymore. When I really listened to country music, I saw similarities between it and Sudanese music, in terms of its fidelity to place, its fidelity to geography, its fidelity to describing the kind of people that you are. TC: Should there be genre in music? AD: I would flip that question to say what does genre serve? What do we get out of these borders? Probably very little aside from financial incentive. Genre is increasingly an idea of very limited use that really doesn't serve us well. Awards are based
TC: Is streaming helping to break down that barrier? EA: With streaming, the discoverability is so easy. It's easy for someone to say, ‘I don't know what kind of music this is, and I don't care.’ If it can find its audience, that's the important thing. I grew up in an era where young people categorized themselves in school based on music. That doesn't exist anymore. That's a deeply outdated idea for young people today. TC: Is streaming good for the industry? EA: If artists could be paid more, it would be the best thing ever. The promise of streaming was that this was going to be a way for artists to get a meaningful income as audiences find them. Instead, what’s happened is what always happens…record companies figured out how to centralize power and kept it to themselves. Suddenly this thing that was supposed to democratize an art form has become something really limiting. SUMMER 2022 | 27
TC: The system seems skewed to streaming… new cars and laptops aren’t even made with CD players. EA: And you are beholden to the quality of the upload. That is an unfortunate thing, and there have been plenty of artists struggling with this. Thank God for Neil Young. TC: Well, his Pono project didn't materialize...

EA: No, it didn't, but there are options. Apple Music has slightly higher sound quality than Spotify. Tidal is around, and Tidal’s whole pitch is this highfidelity sound. Tidal isn’t in the picture in terms of competition, but they’re at least forcing the conversation around what kind of quality we’re willing to settle for. TC: You grew up in Kingston, music is central to your life, but in your book there's not one mention of The Tragically Hip. EA: That's something I think about a lot because they played a significant role in my musical orientation. Funny enough, this book wouldn't exist if I hadn't written an obituary for Gord Downie in BuzzFeed News. After I wrote that, my now-editor, Jared Bland, called and said, ‘have you ever thought about writing a book?’ TC: Where are you today? Are you still Elsewhere, or are you at home in Canada? EA: This is as ‘at home’ as it's ever going to get. But I owe part of myself to another homeland and the calculus is, every day, how much should I be allotting to that. 10 percent? 25? 65? I think that's home. Home is a sort of waking every day to be like ‘how Canadian, how Sudanese are we feeling?’ and then learning to live in the middle. How your home garden can help urban pollinators By Vicki Wojcik and Jordan Phelps
By now, most of us have learned about the plight of pollinators through the reporting of honeybee declines. While the honeybee is undoubtedly important, people are often surprised to learn that it is only one member of the diverse community of pollinating animals on earth. Even among bees, the honeybee is one of over 20,000 species, over 800 of which inhabit Canada in the city and suburbs, just like us. Whether you live in a single-family home, row home, or a condo, in the city centre or near open space, you can help all these bees and other pollinators. People are also often surprised to learn that the vast majority of the world’s bees live a solitary life, nesting underground or in small cavities, rather than in a bustling social hive. When you think about it further, bees make their homes much in the same way we do. There are some bees that are looking for
open space (for them it’s soil or sand), while others prefer the condo lifestyle, looking for holes in wood or other taller vegetation to nest in. Like us, bees also select their homes to be commuterfriendly and close to food. When we make those choices, we look at homes close to work or near shops and restaurants. A bee’s work is collecting pollen and nectar, and for them that local grocery store or great restaurant is a nice patch of native flowers. When most of us think of protecting pollinators, supporting honeybees is the first thing that comes to mind. While the honeybee is critical to agriculture, it’s important to acknowledge that it is a domesticated species brought from Europe, and should be thought of as livestock rather than wildlife (cows, sheep, chickens, etc.). Honeybees are not considered to be a threatened species. On the other hand, there are other wild, native pollinator populations that our ecosystems depend upon, facing rapid and widespread declines, largely due to the effects of habitat loss, pesticide exposure, climate change, and disease. In fact, keeping urban honeybee colonies can even exacerbate the stresses faced by our native pollinator populations. If urban honeybee populations get too high, they may overcrowd our native pollinators and reduce food availability.
trees that provide bees and other pollinators with nectar and pollen — the critical food sources that they need to survive — and providing nesting spaces that solitary bees can call home. We need to build neighbourhoods for bees, just like we do for ourselves.
So, if keeping urban honeybee colonies isn’t the solution to protecting our pollinators, what is? The best thing that we can do to support all pollinators, including native bees and honeybees, is to create habitat. This means planting perennials (plants that grow from year to year), shrubs and
They have evolved with native pollinators to provide valuable pollen and nectar resources, and to thrive in your climate without the need for excessive watering and chemical inputs. For plant suggestions, check out Pollinator Partnership Canada’s ecoregional planting guides.
Here are some simple guidelines that you can use to create your own pollinator-friendly landscape at home:
1 Prioritize plants that are native to your region.

2 Incorporate a range of plants that provide food 5 Leave hollow stems and bare soil patches as for pollinators from spring to fall. Early Spring and late Fall can be difficult times for pollinators to find blooming plants, despite being critical periods in many pollinators’ lifecycles. For example, many bumble bee species emerge from hibernation in early Spring and produce new queens in late Fall. Aim to have at least three plants blooming all year.
3 Include pollinator host plants. Many pollinators
nesting space. While honeybees live in hives, the vast majority of bee species (>90%) nest underground or in hollow stems.
6 Leave the leaves in your garden over winter. Many pollinating insects lay eggs or hibernate beneath leaves, so removing leaves from the environment can reduce pollinator populations.
have evolved specialized relationships with particular plant species, and depend on them as a source of food and a place to lay eggs. A well-known example of this is the reliance of monarch butterflies on milkweed.
7 Provide a water source. Like most animals,
4 Avoid insecticides. Insecticides can harm
But what if you live in a condo? While it’s true there is a maximum height that bees will fly for their food, a mid-rise balcony can be a wonderful spot for a bee

pollinators require water. Integrate a water source that allows pollinators to drink without drowning, such as a shallow water dish filled with rocks as landing sites.

garden. You can pick plants that grow well in containers and follow the same guidelines for home gardeners. And who knows…you might also see bees nesting in the soil of your planter. You can also engage your Home Owners Association in making sure that the gardens and planters that are landscaping your building are better for the bees. Help get native plants into the gardening plan, and make sure that your building isn’t using harmful insecticides. Work with your HOA on the landscape maintenance plan, and leave some habitat for nesting.

By following these guidelines to create pollinator-friendly landscapes at home, you will be making a meaningful difference for all pollinators. Over 85% of flowering plants are animal-pollinated – meaning that most flowering plants on earth rely on pollinators to reproduce. Most of our commonly grown crops also depend on or benefit from pollinators, and this accounts for a third of our diet. So, when we think about making our home a wonderful place to live, let’s think about making a wonderful home for the bees and other pollinators.

CELEBRATING CANADA'S NATIONAL COCKTAIL By Aaron Harowitz & Zack Silverman
Zack Silverman. Photography by Tanya Pilgrim. by arrangement with the Publisher. All rights reserved.
In the fall of 2013, we spent our life savings producing our first batch of Walter Caesar mix, with the idea of trying to reinvent Canada’s national cocktail. We knew Canadians love Caesars, and that Caesar culture in Canada runs deep. We also recognized that Canadians had only one option for Caesar mix on the market, and that we had an opportunity to do something different — offer Canadians a premium, all-natural mix made here in Canada. We named it in honour of Walter Chell, who invented the Caesar in Calgary in 1969. Our company now sells enough Walter Craft Caesar mix in a year to make more than 6 million craft Caesars. We’ve travelled the country talking Caesars, learning about Caesars, meeting people who serve Caesars, seeing people push the boundaries of what a Caesar is and can be, and of course, making and consuming many thousands of Caesars (some better than others). When we started Walter Caesar, we recognized that we were walking on hallowed ground. We were trying to reimagine a drink that is so much more than a drink: it’s part of our national heritage. But the Caesar’s more than just the most popular cocktail in Canada (roughly 400 million are consumed each year), it also ranks among the country’s most iconic and recognizable symbols. In a 2007 CBC series on great Canadian inventions, the Caesar placed 13th; not as high as insulin or the telephone, but higher than the Canadarm, basketball, and the snowmobile. So, how did this come to be? It was 1969…a year for wild innovations, unexpected upheavals, and bold leaps forward. Led Zeppelin released their first album, the film Easy Rider roared into the theatres, and roughly 400,000 people travelled to a dairy farm near Woodstock, NY, for a music festival. In Canada, Trudeaumania (father, not son) was in full swing, the Montreal Expos played their first game, and John Lennon and Yoko Ono recorded “Give Peace a Chance.” In the middle of all this, Walter Chell stood behind the counter of the Owl’s Nest, the fine-dining SUMMER 2022 | 45
lounge of the Calgary Inn. Unbeknownst to him, he was about to secure a spot in the history books. The owners of the Inn had asked Walter, their food and beverage manager, to create a signature drink to celebrate the opening of the hotel’s new Italian restaurant. The request got him thinking about spaghetti alle vongole, his favourite meal from years living in Italy, and wondering if he could recreate its flavours in a cocktail. He cooked clams and strained tomatoes, adding and subtracting ingredients until he found the perfect combination. Behind the bar in the dimly lit Owl’s Nest, Walter got ready to serve his new cocktail. He poured some celery salt on a plate, rubbed the rim of a highball glass with some lime, and rolled the rim into the salt before placing a couple of ice cubes in the glass. In a cocktail shaker, he combined his house-made mix of clam juice and tomato juice with a shot of vodka, four dashes of Worcestershire sauce, pepper, and what he later says was his “secret ingredient”…a dash of oregano. He filled the shaker with ice, stirred the mix gently with a bar spoon, and strained the drink into the glass. He garnished the cocktail with a wedge of fresh lime and a celery stick, and served it for the first time. The price was $1.80. (continued on next page).

New York’s Long Island on the East Coast is famous for its iconic tea, which contains exactly zero tea but almost all the spirits in the world. As an homage to that arguably illconceived but highly effective cocktail, we offer a Vancouver Island version, which also happens to contain zero tea. These should not be consumed unsupervised. SERVES 1
GLASSWARE 1 Collins glass
GARNISH 1 cherry tomato 1 lemon wedge
COCKTAIL ½ oz (15 ml) white rum ½ oz (15 ml) tequila blanco ½ oz (15 ml) triple sec ½ oz (15 ml) gin ½ oz (15 ml) vodka 6 oz (180 ml) Caesar mix, Classic ½ oz (15 ml) lemon juice
METHOD
1/ Skewer the cherry tomato and lemon wedge on a sword pick.
2/
Pour the rum, tequila, triple sec, gin, vodka, Caesar mix, and lemon juice into a cocktail shaker (or other mixing vessel). Fill the shaker with ice to just above the top of the liquid and stir with a bar spoon until the outside of the shaker is very cold to the touch.
3/ Fill the glass three-quarters full with fresh cubed ice. Strain the contents of the shaker into the glass and top with additional ice, if desired. Garnish with the sword pick.
SUMMER 2022 | 47
In the 50 years since, the Caesar, relatively unchanged, has become our national cocktail, and ranks among the country’s most iconic food-and-beverage items. But how did it happen? Admittedly, it’s an unusual combination. Tomato juice, clam juice, and vodka. It’s not an obvious hit….and yet, it is. Our theory: As the Caesar started to gain recognition, people started to sense that the drink was something that bound us — and only us — together. We started to see the Caesar as one more peculiarly Canadian phenomenon, something that we cared about in the same way we might care about things like junior hockey or curling, far more deeply than people anywhere else do. We started to enjoy our Caesars just a little more with the knowledge that drinking one in our hometown bar somehow connected us to all sorts of strangers across Canada. Canada is huge and varied and always changing. So it’s all the more amazing that we should have this one drink that unites us all. And if the Caesar is our beloved national secret, we’re happy for it to stay that way. Aaron Harowitz & Zack Silverman are the co-founders of Walter Craft Caesar. Their book, Caesar Country, is available for sale wherever books are sold. 48 | the COLLECTION

REAL ESTATE REDEFINED Real estate is about so much more than buying & selling houses. Home is where we eat, sleep, relax & play. When you’re considering a move, you need to factor in how you want to live your life & what will make a house feel like a home for you. I could use this opportunity to talk about real estate news/stats or homes I’ve helped others buy & sell, but instead I simply want you to know that if we work together, your needs, wants & goals will be at the forefront of everything I do to support you. BUYING A HOME IS NOT ONLY A FINANCIAL DECISION, IT’S ALSO A LIFESTYLE DECISION.
