IN HIS LATEST movie American actor Kellan Lutz plays a MacGyver-type hero who battles funnel web spiders opposite the likes of Shane Jacobson, Stef Dawson, Kelsey Grammer and Chinese sensation Bingbing Li. We spoke to the 32-year-old actor fresh from the Village Roadshow Studios set of Kimble Rendall’s star-studded action adventure Guardians of the Tomb.
If it’s Australia my foot is already in the door. I’m a traveller and whenever I wrap on a movie I always schedule different things that I want to do and just enjoy the experience. I’ve been really lucky because I do what I love and what I’m passionate about and connected to. I never work because it’ll ‘better my career’. The main reason I do something is because the life experience that I gain from it is more enjoyable and at the end of the day I can sleep peacefully at night, regardless of if the movie does well or not because that’s something you can’t control. I’m excited for this one and my last Australian one too, [science fiction thriller] The Osiris Child because they’re both amazing films.

You’ve shot two films in Australia recently. How are you finding that? I love working in Australia. I’m in Surfers Paradise. It’s beautiful. My view is the ocean. I live in Venice Beach [California] but I don’t live 40 or 50 stories up where you get the vastness and the beauty that is Gold Coast. It reminds me of Miami. Then you have all this beautiful coastline with the smallest population and it blows my mind. I want to live here – it’s stunning. I’m waking up really early because the American football has been on so I’m up at 4am to watch the football and catching the most beautiful sunrise. It’s paradise. I wonder whether the experience of filming on the Gold Coast will influence your future filmmaking choices? Going from Hercules and The Expendables 3, which we shot in Bulgaria … now anytime I have a film offer I ask: where are you shooting?

It sounds like you have your feet well and truly planted on the ground … I’m passionate about acting but it doesn’t define me. I don’t really care about the money. I don’t care about the fame. A movie takes out a big chapter of your life [and] you’re removing yourself from your real life and making this new chapter. Then you build all these amazing friendships with the crew and with the cast. I get deeper with cast members than I do with some of my friends who I’ve known for ten years in LA. It’s a fascinating lifestyle that actors live. Then I go and implement [myself] back into my life in Venice and you’re playing catch-up and it’s very weird … >>

How do you find working with a predominately Aussie cast and crew? I love this cast and I love working with Australians because they’re genuine. They’re just awesome actors. Bottom line: when I’m working in Australia there’s talent. There’s raw [and] there’s scholarly talent. Stef Dawson is a brilliant actress and really stepping into this character and she’s brilliant to work with. It’s fun to see her come from The Hunger Games and being her partner to go and see the latest movie because I love supporting people in the industry. And there’s a real family unit here. Shane [Jacobson] and I just shared the most beautiful story about how he met his partner. I didn’t know that Shane was a part of one of the most massive movies called Kenny so they said that I had to sit with him and watch it and hear stories about how he and his brother came up with it. I’m like ‘Dude you’ve got to take this to America!’ and he’s like ‘Oh, we tried [and] Brad Pitt’s company was interested in it and then it stuttered’.
So you accompanied Stef Dawson to see The Hunger Games … I hadn’t seen the final one and she said ‘You wanna go and see it?’ and I was like ‘Yeah!’ and she said ‘That never happens here. You know that I’m in the movie [so] why do you wanna see it with me? I have friends who don’t want to see it because they know me’.
But I hope I can be in the fourth Expendables. (My character Smilee lived by the way.) So working with him here was a no-brainer. It’s great that he’s doing this one, however, that means I can’t really use him for some of the other movies that we’re producing because this one came first. Then we have Bingbing Li, and she has like 36 million Weibo fans – we are in the presence of greatness. She’s been amazing to work with. I knew that she was a super star but she was willing to step outside of her comfort zone and we would play on the set and contribute different ideas.
NOT AVAILABLE ONLINE Was it hard not to become star-struck by working with such an action hero line up on The Expendables 3 ? I wasn’t scared I was more blown away. What kind of helps me in this industry is I don’t know the actors for who they are, I know them for what they’ve played, so I don’t get scared or intimidated, I get fascinated and excited.

You also worked with Kelsey Grammer in that film and reteamed with him again here for Guardians of the Tomb. How was that? Kelsey is a brilliant actor. Watching him, especially in something like Frasier, he just embodies what an actor is. I loved working with him on this every day. I didn’t get enough of Kelsey on The Expendables because we only had a few scenes.
and how you became involved? This production is larger than life and way larger than I expected it to be. The set design is especially impressive. I’ve known [director] Kimble Rendall for about four years now [because] he directed Bait and my girlfriend at the time, Sharni Vinson, was in that. I came to the press [conference] with her and we went all around China and I got to know Kimble quite well. When he approached me about Guardians of the Tomb, I thought ‘Yeah, I like this and I like kooky in a brilliant way and I like what he did with Bait.’ >>

I love that there’s more female heroes now and to be the supporter of them … any day throw that at me. I don’t mind being the Hercules, the He-Mans … those are great … but there needs to be more of these female lead characters. They’re just strong movies and I enjoy watching them.
Can you tell us about the character you play in Guardians of the Tomb? He’s called Jack and he’s very much a MacGyver: he’s very good with his hands and
Do you love this sort of genre? I just love action movies. Guardians of the Tomb is very much like Indiana Jones, where it’s situational action. I love the Jason Bourne movies more than the James Bond movies because Jason Bourne has weakness; he’s a human and he’s lost his mind and he gets shot and stabbed. James Bond is just a badass at everything. That is entertaining but I relate more to the humanistic qualities of the hero and the hero’s journey. Jack is ex-search and rescue. I was like ‘What have I not done yet?’ I’ve played a marine. I’ve played in the Navy and in the army ... I saw San Andreas quite recently and I was like ‘That’s where Jack would be’. He’s such a strong character [but] what’s his weakness? What’s his kryptonite? What makes him human? He’s afraid of spiders in a spider movie: easy. Then you have Gia [Bingbing Li] who’s the scientist who works with spiders, so it’s funny to be able to trade off who’s leading the expedition …
he’s a problem solver. The other characters are trying to solve the puzzle pieces and I’m like let’s just build a battle ram and shove it into the door and let’s light it on fire with some fluid and that’ll weaken the door … but then they've already found a way out using logic.
You wouldn’t say you’re the lead in this then? No, I’m not the lead in this, I’m second in command and supporting Bingbing Li. That’s really cool too because this is going to be amazing for her.
‘For your characters, you’re like a lone wolf. What if we create like a jail cell for you to live in?’ I was like ‘I like that idea!’ It was just a very unique experience, which I’m very proud of.
How does this production compare to something like Twilight? I’ve done some big movies, however I’ve got to be honest: Twilight has nothing on this movie. There’s a lot of green screen on those five movies but on this we have physical sets that you walk around in and the level of detail is amazing. I’m amazed how quickly they did it and how they did it. Two days ago we shot this horse chariot scene and I’m like ‘How did you make this guys?’ And all they do is shave it out of styrofoam but the detail is so meticulous. As soon as we shot the first day and Kimble walked us through the sets I got really excited because the production value just blew me away. I don’t know how they do it in Australia but this would cost a lot of money in America.
Tell us a bit more about the film you shot in Sydney: The Osiris Child. That one will be my most proudest movie to date. If I could work with [director] Shane Abbess for the rest of my life I would. He knew that I had stuff in me that no one had ever been able to see because people can be like ‘Oh, Kellan should be this guy from 90210 … this Jock’. I’ve got a lot of depth in me that he saw and wanted to show onscreen. It was such an amazing experience. It’s a real family. We lived on set and had our jail cells. It was a smart way that Shane did it [as] I don’t think we had the budget for trailers so he kind of used reverse psychology:

Sister act Rhonda Oxnam chats to Tania and Fiona Kernaghan about their new albums, their ongoing success and their sisterly bond.

TANIA AND FIONA KERNAGHAN are warm, chatty and remarkably down to earth. They are also incredibly talented, with successful music careers that have spanned the past two decades. Growing up as part of the legendary Kernaghan family, Tania and Fiona have written and performed together since they were kids, even sharing a flat in Sydney in the early stages of their careers. “I wouldn’t have the success that I’ve had without Fiona,” insists Tania, who has been at the top of the Country Music charts for over 20 years. “She knows exactly what I want to sing about and the style that suits me and she’s just nailed it from the very first song we wrote.” “We do work really well together,” adds Fiona. “Tania motivates me when I get too dreamy.” These days, while Tania has stayed true to her country roots and Fiona’s music has a much more spiritual feel, the bond between the two sisters, both personally and professionally, remains stronger than ever.

This is particularly evident in their recently released albums, Tania’s All Australian Girl and The Art of Being by Fiona, with both records reflecting the sisters’ growing maturity and happiness. “It’s been about five years between albums for me and in that time I’ve done a lot of self development,” explains Tania. “That’s lead me to a place where I have a greater inner peace, and when we were writing songs for this record everything flowed so well. “There’s one track in particular called Light in the Window. It’s about our grandmother and the love she always had in her heart for us kids. It was amazing because Fiona had written the words about two years ago and when we were working on the material she said ‘I’ve got this lyric but I don’t have any music’. Coincidentally, I had written a piece of music about eight months ago that went perfectly. And it was very special how the words and the melody just came together. “I think when you listen to the album everything about it leaves you feeling really happy.”
“It’s probably the first country record without a break-up song,” adds Fiona. “And it’s quite feel good where mine is more meditative and contemplative.” Which bring us to The Art of Being. “We are releasing it as world music because there is so much exotic instrumentation,” explains Fiona. “There is Irish bouzouki, Greek mandolin, Indian drums, some Middle Eastern percussion. And I think because of the philosophies and spiritual traditions that the lyrics touch on all the way through, it’s truly global.” “I just wish the whole world could hear The Art of Being because it is a healing album on so many different levels,” insists Tania. “It doesn’t matter what type of healing you need, it might be a broken heart or an illness or the loss of somebody, this album will help you.” Perhaps that’s because Fiona has laid her emotions bare in each and every song. “You have to know yourself, that’s the trick, and you have to be brave enough to tell the truth about what you are really thinking,” she says.

People often say artists can only create from a place of pain and suffering and The Art of Being is living proof that it’s just not true. “This time around I didn’t pay any attention to trends, or being commercially viable, I just wrote and recorded the music I wanted to make and that I loved. It’s scary but liberating.” “The same thing happened with my album too,” adds Tania. “It was just from the heart. Not that the others haven’t been that way but I think I’m at an age now where I just do what comes from deep within and it seems to resonate with a lot of people.” So do your past achievements free you up? Or is there more pressure to keep being successful? “It’s not about success for me,” says Tania. “Maybe it’s this age thing again but I think it’s about having a go and if you fail or you don’t achieve greatness out of something you release, it doesn’t matter, at least you were being true to yourself. >>

“It’s not about the accolades, it’s not even about the album sales, it’s about bringing a happiness and a joy into people’s lives,” Tania adds. “I think if you affect one person’s life in a positive way through your music then I feel personally satisfied and my job’s done.” “What I’ve learned from different degrees of success over the years has given me the courage to take more risks,” Fiona says. “I used to think you could figure out a formula to succeed and that would be it but I’ve realised success is unpredictable and non formulaic. Now I’m much more willing to try new things because you never know where it will lead.” One of those new things is Fiona’s monthly Mountain Kirtan. “It’s a community event at Mount Tamborine with meditative singing and a blend of mantras and songs,” she says. “I’m also going to be doing a few little house concerts and I’ve been asked to join the Glimpses Think Tank again this year as well, which is pretty cool. “It’s a multi-disciplinary exploration of human potential conducted by Dr Andy Walshe, who is the Head of Red Bull High Performance, and I participate as a representative of the music industry and multi-genre artists.” Meanwhile, Tania will spend the majority of 2017 on the road. “Most of this year I’m either doing my own shows or joining my brother Lee on his 25th anniversary tour,” Tania says. “I’ll also be doing some filming for Channel 10’s What’s Up Downunder. I’ve been on the show for ten years now and I love that work.” And with Fiona back in Australia after living in America for the past 17 years, the sisters will be spending some quality time together. “It doesn’t matter where we are in the world, we still have a connection,” Tania says. “But, now, after being two countries away for almost 20 years, we are two kilometres apart and isn’t that a beautiful thing.”

Dare to dream With less than one year to go, the 2018 Gold Coast Commonwealth Games are on track to leave a lasting legacy for the city.

BACK IN 2008, the idea of the Gold Coast hosting the 21st Commonwealth Games (GC2018) was a pipedream shared by a few passionate locals and powerbrokers. Fast forward to 12 November 2011 and thousands of Gold Coasters gathered at the Broadwater Parklands to watch live coverage as the final presentations were made and the Commonwealth Games General Assembly voted to decide the next host city. The resounding cheer that went up as GC2018 became a reality could probably have been heard back in St Kitts and Nevis where the voting was taking place. The next few years were spent in the planning stages with much happening behind the scenes … committees were formed, organisers appointed, sites and venues identified and the Games mascot, a surfing blue koala named Borobi, was introduced. Then on 4 April, 2017, as the giant surfboard clock on the Surfers Paradise foreshore clicked under one year to go, the excitement levels in the city seemed to ramp up a gear.

Suddenly we were seeing ticketing programs being released, our televisions and newspapers were carrying inspiring Commonwealth Games messages and new venues were emerging along the length and breadth of the Coast. The fact that in just a few short months the City will be hosting one of the biggest events on the world’s sporting calendar had become very real. As the first ever regional Australian city to host the Games, the Gold Coast not only has a great responsibility but also a great opportunity. The organisers are planning for 11 days of fantastic competition, keeping ticket prices affordable to ensure as many spectators as possible attend the 18 sports and seven para-sports events. But they are also focused on providing venues and infrastructure that will continue to benefit the Gold Coast community long after the medals are awarded and the athletes have gone home. Perhaps the most significant is the Games Village which will be home to over 6,600 athletes and officials during the competition.
Located adjacent to the Griffith University Gold Coast campus and the new Griffith University Hospital, the purpose-built village is set to morph into a state-of-the-art Health and Knowledge Precinct post-games. Another two significant ‘legacy items’ are the newly-built Coomera Indoor Sports Centre and Carrara Sports and Leisure Centre. Designed to world-class competition standards, the Coomera venue will host the GC2018 netball finals along with artistic and rhythmic gymnastics. Opened in August 2016, and servicing one of the Coast’s fastest-growing regions, the multipurpose stadium is already attracting around 4,500 locals each week. The 16,500m2 multi-purpose community facility at Carrara comprises two mixed-use indoor halls connected by a pedestrian plaza and also provides world-class facilities for a variety of court sports including basketball, netball, indoor soccer and badminton. As an integral part of the Carrara sporting precinct, this stadium is set to be utilised for generations to come.

In addition to the new buildings, many existing sporting complexes including the Gold Coast Aquatic Centre and the Gold Coast Hockey Centre are undergoing a major redevelopment ahead of GC2018 which will also benefit the community long term. As the venue for the Opening and Closing Ceremonies, as well as all athletics events, Carrara Stadium will have its capacity temporarily increased from 27,400 to 35,000, while the Gold Coast Convention Centre, home to the world’s media along with the basketball finals and netball preliminary matches, will get a technology upgrade which is set to stay in place after the Games. GC2018 organisers have also been mindful not to over capitalise, electing to stage some events in satellite venues rather than build unnecessary infrastructure. Townsville and Cairns will host the preliminary basketball matches, with the shooting and track cycling taking place in Brisbane. Back on the Coast, the region’s natural resources are set to be the star of the show for a number of sports … mountain biking in the Nerang hinterland, race-walking along the Currumbin foreshore and road cycling through the Southern suburbs’ picturesque beachs and valleys. The marathon and triathlon races will start and finish at the iconic Broadwater Parkland, while beach volleyball has been added to the schedule for the first time ever and will be held on the pristine Coolangatta sand. With a global viewing audience in the millions, if not the billions, this is set to be a huge tourism boost for the Gold Coast. Another aspect high on the GC2018 agenda is equality … never before in the history of a major multi-sport Games has there been an equal number of medal events for men and women. And the integrated Para-Sport program will set a new Commonwealth Games record by hosting up to 300 para-athletes and 38 medal events across seven sports. The non-sporting public will also be catered for with Festival 2018 delivering a 12-day arts and culture program supporting the Commonwealth Games Federation’s values of Humanity, Equality and Destiny. According to the organisers, Festival 2018 will feature extraordinary and memorable artistic events that celebrate the spirit of the Commonwealth, reveal Queensland’s lifestyle, culture and creativity and capture the authentic spirit of the Gold Coast and its communities. COMMONWEALTH GAMES FAST FACTS he Commonwealth Games is an international T multi-sport event involving athletes from the Commonwealth of Nations. T he event was first held in 1930 and has taken place every four years since then, with the exception of 1942 and 1946 which were cancelled due to World War II. The Commonwealth Games were known as the British Empire Games from 1930 - 1950, the British Empire and Commonwealth Games from 1954 - 1966 and British Commonwealth Games from 1970 - 1974. The games are overseen by the Commonwealth Games Federation (CGF), which also controls the sporting program and selects the host cities. 18 cities in seven countries have hosted the event. A lthough there are 52 members of the Commonwealth of Nations, 70 teams participate in the Commonwealth Games, as a number of dependent territories compete under their own flags. The four Home Nations of the United Kingdom – England, Scotland, Wales, and Northern Ireland – send separate teams.

Australia has been the highest achieving team for 12 games, England for seven and Canada for one. C osting around $77 million, the 2010 Commonwealth Games at Delhi, India was the second most expensive opening ceremony of any international sporting event in the world after the 2008 Olympic Games in Beijing. Scottish lawn bowler, Willie Wood, was the first competitor to have competed in seven Commonwealth Games, from 1974 to 2002, a record equalled in 2014 by Isle of Man cyclist Andrew Roche. G reg Yelavich, a sports shooter from New Zealand, won 12 medals in seven games from 1986 to 2010. Nauruan weightlifter Marcus Stephen won 12 medals (including seven gold) between 1990 and 2002 and was elected President of Nauru in 2007. His performance helped place Nauru (the smallest independent state in the Commonwealth with a population of fewer than
9,400 in 2011) in 19th place on the all-time Commonwealth Games medal table. In April 2018, the Gold Coast will host the 21st Commonwealth Games (GC2018). It will be the fifth time Australia has staged the event following Sydney (1938), Perth (1962), Brisbane (1982) and Melbourne (2006) – making Australia the nation that has hosted the most number of Games. Over 6,600 athletes and team officials from 70 nations and territories are expected to attend the 11 day GC2018 sporting and cultural event. GC2018 will mark the first time a Commonwealth Games will be held in a regional Australian city. Fashion comes strutting back to Brisbane this August, with the return of the Mercedes-Benz Fashion Festival. BRISBANE’S MERCEDES-BENZ FASHION FESTIVAL is returning with a bang in 2017. Expect a program of stylish events spotlighting Queensland and Australia’s best design talent, and an exciting new initiative that will make newseason shopping fresher than ever. A fresh approach calls for a new venue, and this year’s Fashion Festival will be hosted at the magnificent Old Government House. The fashion shows themselves will also look different to previous years. The runway will be taken outdoors, with the sandstone exterior of Old Government House providing the backdrop and models strutting the paved pathway. With garden style seating for show-goers and a setting that is intrinsically Queensland, it will be fitting for a display of Spring/Summer fashion from the State’s best. And, with more designers across fewer shows, ticketholders are in for a fashion spectacular each night.
Mercedes-Benz Fashion Festival Brisbane is staged with the intention of supporting and promoting local fashion designers, and cementing Queensland’s place on the fashion map. The Festival provides a platform for designers and retailers to present their collections before an audience of fashion lovers, industry insiders and influential media representatives. Lindsay believes this platform helps Queensland designers to compete alongside the ever-growing presence of big international brands and fast-fashion powerhouses. “People do want to buy local but they need to know who the local designers are and they need to see what’s on offer,” he says. “The Fashion Festival helps local designers break through the saturated market.” By connecting designers with customers, the Festival works to generate sales for the designers and retailers involved each year.
“Fashion is exciting. When you see a really great campaign, or a fabulous runway show, you’re inspired. And the Mercedes-Benz Fashion Festival Brisbane directs that excitement and inspiration towards sales for our designers, by showcasing fashions that the audience can go out and buy the very next day, or instantly online,” Lindsay says. Taking this to the next step is the brand-new ‘Shop the Runway’ market introduced to this year’s program. Following each show, guests are invited inside Old Government House to meet the designers, browse the racks straight from backstage and place orders for their favourite pieces. The new concept is intended to create connections between the designers and audiences, and offer fashion lovers the chance to buy direct from the runway. It combines the ‘see now, buy now’ method being utilised by various brands at fashion weeks, with the personal touch of meeting the designers and enjoying a detailed look at the clothing before buying. “The Fashion Festival is a consumer event,” Lindsay says. “It has always been for the fashionable public, and it has always showcased collections when they are available to buy in-store.
“Our new Shop the Runway initiative will really take the concept of buying local and buying fresh from the runway to a new level. “You can meet the designers behind the clothes, ask questions, and place orders immediately after you’ve seen the pieces on the catwalk.” Among the changes and new additions, what remains the same for Mercedes-Benz Fashion Festival Brisbane is a strong line-up of Queensland’s best designers, as well as leading Australian designers. Smooth moves Leading Dermatologist, Dr Michael Freeman, has some advice for keeping your skin happy and healthy.
THE SKIN is our largest organ, yet many treat it like an old piece of clothing. We forget to protect its softness, we let stains sink in, and most of us never iron it. So how do we combat this wear and tear? Leading Dermatologist, Dr Michael Freeman, has specialised in this area for over 20 years, and has some good advice to help us wind back the clock, not just for the purpose of improving our look, but to improve the health of our largest organ. “There’s a daily program I recommend often to patients,” says Dr Freeman. “It includes Actinica sunscreen (a superior liposomal formulation) as well as daily use of vitamin B3 nicotinamide, which is scientifically proven to protect the body’s immune system from the sun’s ultraviolet radiation. “This must be in addition to sunscreen, it cannot replace it.” The third step is Vitamin D. It can be obtained through diet, however the most effective form of delivery is with ultraviolet B from the sun. “In general, anything from five to 20 minutes in the sun depending on your skin type between 10am and 2pm weekly can help you achieve the

optimal dose,” Dr Freeman explains. “Try not to put sun damaged regions of your body in the sun though.” There has also been a new discovery which provides an alternative source for Vitamin D levels, without sun exposure. Dr Freeman says it’s a simple yet amazing fact. “If an average mushroom is placed in the sun between 10am and 2pm for half an hour, then used in cooking as normal, we will ingest the daily dose of Vitamin D without exposing our skin unnecessarily to the sun,” he explains. The simple steps above – sunscreen, Vitamin B3 and Vitamin D – help our skin to stay as damage-free as possible, reducing the stains on our skin and underneath. But what can you do to nourish and ‘iron’ out the skin? If you follow the recommended three-step plan, then with only a few quality products at home, and the odd treatment here and there, your skin will remain healthy and happy for the long haul. To help you, Dr Freeman has created his own line of skincare, BLOC Cosmetics.
The products combine quality natural ingredients with the latest technology to deliver great results. And for smoothing the skin? There are many treatments on the market that achieve this. Some involve injectables, others laser or ultrasound, and some people undergo surgical procedures. A new classic This delicious Laurel Roasted Swordfish is on the menu at the renewed Vue175 at Ruffles Lodge & Spa. Laurel Roasted Swordfish with Celeriac Pont Neuf and Purée, Brandade and Salsa Verde Serves 6 LAUREL ROASTED SWORDFISH Ingredients 1kg swordfish loin 120g butter 1 bunch bay leaves Olive oil Method 1. Cut the swordfish loin in 6 portions. 2. Dry with a towel. 3. Season with sea salt. 4. Pour oil into a hot pan. 5. P lace the fish into the pan presentation side down. 6. Add butter and bay leaves and baste both sides. 7. Place the fish into preheated oven. 8. Bake for 7 minutes at 180°C. 9. R est the swordfish at warm temperature before serving. CELERIAC PONT NEUF AND PURÉE Ingredients 375ml full cream milk 375ml vegetable stock 1kg celeriac, peeled and chopped 1 red Desiree potato, peeled and chopped 1 brown onion (small), chopped 30g butter 2 garlic cloves Salt and white pepper Method 1. Cut 500g celeriac into 24 sticks (1cm x 1cm x 5cm) and blanch them in hot water. 2. D eep fry the Pont Neuf (celeriac sticks) to order. 3. Melt butter in a pan over low heat. 4. Sauté onions and garlic until translucent. 5. A dd milk, vegetable stock, remaining 500g celeriac and potato. 6. Reduce heat to low, stirring to prevent milk from curdling. 7. Strain vegetables over a bowl. 8. Purée vegetables and strained liquid in a blender, to desired consistency. 9. Season with salt and white pepper 10. Pass through a fine mesh sieve to ensure purée is silky smooth.

SWORDFISH BRANDADE Ingredients 125g swordfish trim 1 egg (separated) 30ml full cream milk 30g plain flour 1 tablespoon baking powder ½ red chilli seeded, brunoised 1 red onion (small), brunoised 1 teaspoon chives, chopped Salt and pepper Method 1. Place fish, milk and egg yolk in a blender until coarse. 2. Fold in flour and baking powder. 3. Season with onion, chilli and chives. 4. Whip egg white to medium stiff peaks and fold into fish mixture. 5. M ixture can be fried to order as is or can be frozen and panko crumbed.
SALSA VERDE Ingredients 1 bunch parsley, flat leaf 1 bunch basil 3 garlic cloves 1 tablespoon capers 1 lemon, juiced 1 long red chilli, seeded 187ml extra virgin olive oil Salt and pepper Method 1. Place all ingredients into a blender. 2. Blend until desired consistency. 3. Season with salt and pepper. To assemble 1. Using a tablespoon make two offset pulls of celeriac purée. 3. Place the fish in the centre. 4. Place two swordfish brandade on top of the celeriac puree on each side. 5. Place celeriac Pont Neuf perpendicular to the brandade. 6. Place salsa verde on top of the fish and the brandade to add aroma and colour. 7. Garnish with micro coriander.

Chef profile BRIAN DEAN, CHEF DE CUISINE, VUE175 I HAVE LOVED SWORDFISH since the first time I had it when I was about 7-years-old. Since then it has been a staple on our barbecue in the summer. I enjoy swordfish in general because of the texture and mild flavour. It tends to be meatier than other white fish, like the snapper/grouper complex or other flatfish such as flounder or sole. It stands up well to bold flavours without losing its identity, which is why the salsa verde pairs so well. With cooking you have the unique opportunity to affect people’s memory. Perhaps a dish you make brings them somewhere they remember with great affection. I hope that someone who has chosen to dine at VUE 175, may be brought back to the time they spent with me, when they have a meal elsewhere. There are few careers more intimate than preparing someone’s food. It’s nourishment, fuel and an experience all at once. I couldn’t picture myself doing anything else.

Share plates Move over fine dining … the collective experience is gaining in popularity. WORDS & PHOTOGRAPHY MARJ OSBORNE
“THE HOTTEST foodie trend isn’t on the menu,” said Time magazine in 2007. They were referring to communal dining which had become the new norm. It was the continuation of a trend begun in the 1960s, when Benihana popularised the idea of food as entertainment, with communal dining around a teppanyaki grill providing the perfect setting. Strangers shared the spectacle of food, collectively amazed at the theatrics of the chefs. As we entered a new millennium, Melbourne’s Longrain opened, espousing the communal eating philosophy of the Asian table. A scattering of fine dining establishments followed suit, moving from tables for two and four to communal ones, gathering diners onto long tables to share space with strangers. Communal dining was a win for restaurants, adding an infectious energy and maximising profits through shared seating, however it worked best when lubricated by a common purpose, such as a festival or special event. The trend of communal dining not only travelled from Asia, but also from Europe, where villagers would gather for tapas and drinks or extended family celebrations which would last for hours. This sort of community dining contained the ethos that we in Australia were missing. Feeling uncomfortable with sharing a meal and conversation with a group of strangers, we’ve taken the best bits of communal dining to create a collective experience where groups share common dining areas or food outlets, where tapas food and shared

plates prevail and while communal tables may be present, they are not mandatory. The Gold Coast’s collective dining scene began with farmers’ markets. With increased emphasis on provenance, weekend markets offered a new experience where shopping, dining and entertainment went hand and hand. This experience was expanded when the already thriving arts precinct, Rabbit + Cocoon, began the Miami Marketta in 2013. In a mix of traditional and alternative, the precinct launched weekend evening street food dining with entertainment and creative stalls thrown in. Miami Marketta embodied a new style of eating out: a place where locals, mostly Millennials (many with strollers in tow), could enjoy a night out with friends eating top notch casual food, their favourite local bands on stage as entertainment. From vegan delights to box-sized lamingtons, and Greek souvlaki to Venezuelan arepas, the venue houses a ‘United Nations’ of food with an emphasis on healthy, alternative and regional world cuisine. Now well established as a Gold Coast institution trading several nights a week, the Marketta clearly marked our transition from valuing intimate dining to seeking quality, unique food experiences in communal spaces. 2013 also saw Brisbane’s Eat Street open. A joint project founded by John Harrison, John Stainton, Jacki MacDonald and Peter Hackworth, the container-housed food markets were an overnight success.
Aiming to replicate the night-time food markets of Asia, Eat Street broached the question: Would people want to go out at night, braving the elements to get a bite to eat out of shipping containers? How could they have doubted Brisbane’s appetite for adventure? In fact, Eat Street has been so successful that in April 2017 they opened on a larger waterfront site in the Northshore Hamilton precinct. Besides 1,200 free car parks, the market includes a variety of new attractions and uses. With so much culinary activity being focused on the central and southern Gold Coast, the northern suburbs rejoiced when NightQuarter opened in 2015. Located on an empty block adjacent to the Helensvale Rail Station and Westfield, NightQuarter brings the Gold Coast its own ‘Eat Street’, music venue and night market shopping all in one. Inspired by markets around the world, the concept is the brainchild of Ian Van der Woude and partner Michelle Christoe. Two huge purpose-built dome-tented arenas form the hub of the market as undercover dining areas, with over 120 different vendors housed around them in a land-based dock of 146 upcycled shipping containers. For the Gold Coast public, NightQuarter is a food, arts and entertainment precinct squarely aimed at the whole family. With a choice of world food to please every palate, there’s also a VIP area that looks down over the performance stage of the big dome. Named as the Gold Coast’s best live music venue, NightQuarter is also a greenhouse for business expertise; a huge winner for the northern Gold Coast.
With shopping centres morphing into lifestyle centres, food is a winning card, encouraging customers to include dining as an essential part of their retail experience. Late in 2016, Robina Town Centre unveiled its remarkable new dining precinct, The Kitchens. ‘A bustling urban marketplace, a community epicentre where artisans, chefs, providores, purveyors and food lovers come together,’ dining is divided into discreet areas to maintain intimacy. Moving away from the vastness of food halls, The Kitchens instead feels more like a meandering village marketplace of intertwined shops. The first of its kind in Australia, The Kitchens combines over fifty retailers whose restaurants, cafés and bars bring us flavours from around the globe. From fine dining to street food, The Kitchens is an immersive experience, ‘a place to gather, browse, shop and sharpen your skills with … pop-up events, workshops and tastings’. “The Kitchens ... not only supports and showcases local producers, suppliers, chefs and restaurateurs, but also provides customers with an educational, inspiring and activated space where they can socialise, experience, eat, drink, shop and immerse in incredible food,” curator Daniel West says. Picking the trends to a tee, The Collective has also opened recently. This is the Gold Coast’s first restaurant collective, bringing together great chefs in five kitchens, transforming the old Palm Beach Post Office into a multi-level 300-seat, seven day a week dining venue. There’s outdoor communal tables providing casual dining with a rooftop bar, while the main undercover area boasts full restaurant service. In this dining mecca, there’s a space for everyone – families, groups, singles and couples. Have no doubt, though, that it’s Millennials driving the food dollar. These children of the Baby Boomer generation are changing what we eat, how we eat and where we eat. “Food isn’t just food for Millennials,” Buzzfeed tells us. “They want their dining experiences to help them feel like they’re part of their communities.” Cool, open and sophisticated with an ‘on point’ menu, several well-stocked bars and well-presented hip wait staff, The Collective is the ultimate 21st century diner for Millennials. IT’S UNFASHIONABLE, seen more as a cooking ingredient than the sort of wine you’d give top spot in the cellar, but there was a time that madeira was the most sought after wine on the planet. Even today it remains the most long-lived with bottles from the 1800’s still being traded and drunk with relish. And it was born almost by accident. Madeira – the island that lends its name to the wine – lies in the North Atlantic Ocean a

The pure form requires the wine being stored in ceiling lofts where the wine slowly bakes. Faster, less precise, is a gentle cooking in heated tanks. Both approximate the ship’s journey: like blue cheese production, it is intended spoilage. I am fascinated by the wines of Madeira, and have been since I tasted my first in 1989
For the really fancy stuff – birth year, parent’s birth year, grandparents birth years – you need to look further afield. I often stare at the pages of Finest and Rarest (finestandrarest.com) that has the best selection of old wines I’ve ever seen. Here’s a snapshot … Madeira Terrantez 1715 Believed to be the oldest dated Madeira bottle in existence. From the Kassab collection. Kassab
mere 650 kilometres from the coast of Africa due west of Marakesh. It’s owned by Portugal and has been since 1419. Madeira is a fertile island, its soils volcanic (the island is, in fact, the top of a volcano that formed five million years ago and rises six kilometres from the ocean floor), humid, rainy and – considering its proximity to the equator – comparatively cool. Madeira had its golden years during the Age of Discovery/Exploration when it became an important stopover for ships travelling to and from the East Indies, providing citrus (for the scurvy), other fruits and vegetables, animals on the hoof and wines to replenish the ship’s supplies. It didn’t take long to work out that the wine didn’t do so well, sloshed around in the hold of the ships, enduring the heat of the equator: it spoiled quickly. The answer was to fortify it with spirit – following the lead of the folk in Portugal’s Douro Valley. It did the trick. Soon people in England, America, Europe and Africa sought not merely the madeira wines, but especially the ones that had been on sea voyages, because of the complex, rich, singular characters provided by the slow cooking in the ship’s bowels. Pipes (barrels) of madeira would make their way to the cellars and tables of wealthy buyers, labeled with the name of the ship that took them on the tour (Catherine Banks, Red Jacket, Liberty), sometimes with the name of the merchant, and quite often the name of the collector (bottling from his pipe) or a fanciful stand-in (wife, cousin, greyhound). Space on the ships was limited and expensive. Eventually the madeira growers created a way of
on a dreary (weren’t they all?), grey London winter’s day. It was malmsey, the richest and fullest of the madeira set. Bual is a little less rich and generally less sweet; verdelho and sercial are tart and dry … sercial the driest. There’s a wildcard called Rainwater – usually quite dry but a little more rustic than sercial. The pride of my dwindling cellar is a lone bottle of d’Oliveira’s 1900 Moscatel – a nearly extinct variety where madeira production is concerned – and it’s one of the many talked about, written about, semi-famous bottlings. It made its way from cask to bottle in the 1970’s, after 70-plus years in barrel. Should I open it? One day perhaps. I hear and read tales of bottles being traded and drunk that date back to the early 1700’s – 300 years old. I’ve tasted wines from the late 1800’s and they are astounding: intensely acidic but also sweet and rich, complex and concentrated. Madeira has the power to last far beyond any other wine style, and – at least while it sits in barrel – it evolves and improves for decades, even centuries. It tastes a little like port, but more like old Australian muscat and tokay (now called topaque … blah!), but less sweet, more acidic and endowed with the wonderful toffee/brulee characters that come with the slow cooking process. Top that off with the incredible complexities gained over a century or so and you have an extraordinary glass of wine. Australia is a mean country when it comes to finding decent madeira. A couple of importers bring in the basic wines from good producers.

Believed bottled by João Carlos d’Aguiar, a highly reputed merchant that no longer exists (although descendents of the family still live on the island). Braheem Kassab was a Syrian embroidery merchant who put his personal seal, embossed B.A.K. on the bottles he collected in the first decades of the 20th century. His collection was partly dispersed in the 1930’s, and the balance sold by Christies in the 1980’s. All recorded bottles are crudely stencilled like this one ‘TERRANTEZ / 1715 / J C A & C’. Excellent level for the age. Bual/Malmsey Solera 1808 Leacock bottling 1808 is one of the very greatest Madeira vintages, and the 1808 solera is legendary, regarded widely as the finest ever. There is some uncertainty as to whether this solera should be classified as Bual or Malmsey – my own feeling is that it’s likely Malmsey. Michael Broadbent’s notes are: ‘Medium deep, warm tawny, pronounced apple-green rim indicating age and high quality; distinctive, scented, harmonious bouquet with a whiff of caramel, very sweet, very rich, soft lovely flavour, 5 stars *****. These Madeiras have the finest possible provenance, coming directly from the Leacock private family cellars in Funchal, they has never left the island until now.’ And my wine, the 1900 Moscatel? Here’s a note from another site … “If decanted before drink, the fragrance of prunes and nuts gets really intense, followed by notes of ripe melon, pine needle, potpourri, raisins, prunes, dates and nuts. “Amazing. Delicate sweetness with a serious acidic core. Nutty notes, dried fruits and slight brine. Really intense.” One day I’ll open it … one day.

An underground exposed brick wall bar filled with vintage armchairs and rustic chairs, you can enjoy a delectable array of supper treats from midday til 10.00pm, then a selection of stuffed Chinese-style breads are available until 2am. Adjourning for the evening, I enjoyed the night lights of the Story Bridge and looked forward to seeing the sunrise over this big city. In what would have to be described as ‘Californian dreaming meets European outdoor alfresco style living’, in the morning you awake to the buzz of James Street, with locals and tourists alike seeking out one of many breakfast choices. The laneway right beside Sage has been renovated and if you want to try something extraordinary get into Botanica, a fresh foodie heaven with everything made from scratch. Jocelyn’s Provisions, again just minutes walk from Sage Hotel, invites you to be enveloped in the fragrance of decadent sweet treats, pastries

On this day we also experienced TWFINEART, one of many galleries now situated in the area. Located in Robertson Street it is a great opportunity to enjoy some of the latest offerings in modern art. Another real find is Julie Tjiandra’s Scrumptious Reads, a tea café specialising in books on food. Dive into a good read or perhaps try the Afternoon Tea special. They also have a divine selection of Ugly Duck preserves in jars. Oh so yum on cheese, scones, almost anything. In another treat, our Sage town car picked us up and delivered us to New Farm Confectionery
where Jodie greeted us with an insanely delicious homemade blended boutique milkshake, yum. This is a grown-up type of lolly shop, with tastes that appeal to a more discerning sweet tooth … decadent salted caramel, handmade peanut brittles, and sweet, sweet sherbet. Back at the hotel, it hit me our mini break was over and I can only anticipate my next visit which I’m sure will include some retail therapy at Fortitude Valley’s new David Jones Boutique Store … I must remember to book the Sage Hotel town car for all my shopping.

The Gold Coast International Boat Week The 29th annual Sanctuary Cove International Boat Show (SCIBS) will coincide with three globally significant boating conventions, attracting influential delegates from more than 30 countries to the Gold Coast. Leaders of marine industry associations and managers of leading boat shows from around world will converge on the Gold Coast from May 22 to 28, for what is being hailed ‘International Boating Week’. The Australian Superyacht and Marine Export Conference (ASMEX), May 22 to 24, is expected to involve as many as 300 delegates and includes the 2017 Australian Marine Industry Awards dinner and presentation. Pace car Chris Nixon takes to the track in the spine-tingling Lamborghini Aventador S. IT’S EXTRAORDINARY how motoring choices at the top end have changed so dramatically in the past five or so years. Famous makes that once mightn’t be seen on an ordinary street in a lifetime are all now on a showroom floor near you. Our taste for luxury goods has taken off faster than Daring Dan Ricciardo in a Formula 1 race, especially when it comes to cars. Maserati sold 483 new vehicles in Australia last year, Bentley 190, Ferrari 188, Lamborghini 127, Aston Martin 115, McLaren 93 and Rolls-Royce 37. More than 1,200 units at prices between $300,000 and $800,000 is massive business to share between fewer than 30 retail dealers

Australia-wide, so it’s no wonder owners and potential owners are treated like royalty. This explains why I’m at Victoria’s magnificent Phillip Island racing circuit undertaking some white-knuckle reader research in Lamborghini’s latest road monster, the Aventador S. The S is the updated version of the Aventador flagship introduced to the Italian maker’s line-up in 2011. Each one accounts for $788,914 (plus on-roads) of that business mentioned above. It’s one of the fastest, most exciting and most dramatic-looking cars on the road. But with a top speed of 350 kilometres an hour, ironically you can’t really enjoy it on the road at all; only places like Phillip Island will stretch its legs.
If you’re lucky enough to own a Lamborghini or interested in buying one, you might be invited to the automobili Lamborghini Esperienza, a supervised VIP track day where you will discover why such cars are worth their money. Helmets are provided, along with instructors to guide you around the course and marker cones to help you aim the car at the correct points. The only other matter before you fire up the thunderous 12-cylinder engine is to pick a colour. Bright colours are Lamborghini’s point of difference in the supercar world and here today we have one each in metallic pearl, electric blue, very yellow or very red. Lime green is also available.
That’s nearly $3.2 million dollars worth of cars at your disposal. I’ve loitered until the yellow one, complete with yellow leather upholstery highlights, is free. The Aventador S is meticulously styled like a fighter aircraft for aerodynamic efficiency and dramatic effect. Every edge, plane and angle complements the others and the effect extends to the engine starter button beneath a flick-up red cover. That button is about to catapault you to hyper-pace, but let’s hold a moment and examine what we’re strapped into, like Dr Strangelove riding the rocket. The new beast from Sant’Agata Bolognese has a 6.5 litre V12 engine that produces 740 horsepower (take it from me, that’s a lot) and will run to 8,500 revs per minute (also take this from me – that’s deafening but enthralling). It has all-wheel drive and automatic transmission, but with fingertip paddles behind the steering wheel for manual shifting if you prefer. The performance of the engine, steering, transmission and suspension shock absorbers can be fine-tuned at the touch of a button to suit driving conditions. There’s Strada mode for pottering, Sport when you want to press on, Corsa for the track and the aptly-named Ego, which stores your personal preferences. >>

Aerodynamically-refined bodywork helps push huge Pirelli tyres harder into the road, but at the same time cuts wind resistance on the way to that awesome top speed of 350 kmh. Lastly, the Aventador S now has rear-wheel steering to improve manoeuvrability. This allows a tighter turning circle at low speeds – useful for parking, we’re told; but, honestly, who cares about that in a Lamborghini? – and sharper turning response at high speeds. Back to the button under the protective cover. Whirr-whirr-whirr-kaboom. Twelve cylinders shout they’re ready to rumble. Engage first gear, and our convoy of four rolls on to the track and quickly up to a speed the instructor in front thinks we can all match. It’s not about going flat out, but as fast as you’re comfortable with while having fun. You don’t need to be Daring Dan – it’s an esperienza, not a race. The laps fly by far too soon.

Fun? Oh yes! The acceleration pins you to the seat and assaults your ears, enormous brakes throw you against the seat belt and when you exit the left-hand sweeper on to the straight and open the taps, the Lamborghini Aventador S charges toward the bitumen horizon and Bass Strait beyond as if the symbolic raging bull on its badge has been sprung from its pen and is damn angry. It’s an immense experience. Someone built this thing of striking beauty with skill and passion and it can do this? The world doesn’t need diamond rings or Rolexes – or Lamborghinis. The Aventador S is ultimately a toy. It will grudgingly take you to the shops or on a school run, but its real purpose is to excite and inspire. It’s performance art as dramatic as Pavarotti. On wheels.

And it has a massive motor show, which I have just attended in Bangkok. Thailand has become the auto-making powerhouse of south-east Asia. Last year it built two million cars and utes, of which 1.2 million were exported. It even builds BMWs and Mercedes-Benzes. The national government drives the industry with a substantial incentive program, of which the motor show is the showcase. The balance of Thai production is soaked up by an increasingly prosperous, middle-class population.
In 12 days, 1.6 million Thais visited the 38th Bangkok International Motor Show at the lavish Impact exhibition centre and bought 36,000 cars on the spot. Moreover, Bangkok does it in style. It’s a return to old-fashioned razzamatazz, with sparkling automobiles, pretty girls (demurely dressed), song-and-dance car reveals on the half-hour and lots of noise. The Bangkok event previewed some of the stunners heading our way, including the Rolls-Royce Wraith Black Badge, Aston Martin DB11, McLaren 720S and Lamborghini Huracán Performante. The Bangkok International Motor Show is worth adjusting your Thai holiday schedule to see. I’m going back next year.

THE LEGAL PROFESSION is being thoroughly challenged by demand for progressive, agile and dynamic practice from increasingly savvy and sophisticated clients and the way in which law firms practice is being driven in new, innovative directions. PROPERTY OWNERSHIP – Joint Tenants or Tenants-in-common ONE OF THE IMPORTANT decisions to be made where two or more buyers are purchasing a property is whether to purchase the property as joint tenants or as tenants-in-common. The difference is important as there may be legal implications depending upon the decision made. Tenants-in-common Tenants-in-common allows two or more individuals to own a specified share in the property. For example, two people may hold property in equal shares or in some other specified shares e.g. 70% and 30% totalling 100%. Tenants-in-common allows property to be held in equal or unequal shares to reflect different financial contributions by the parties towards the purchase price, or any other basis upon which the parties have agreed that the shares held in the property should be in equal or unequal percentages. The major effect of owning a property as tenants-in-common is if one of the owners dies. In that event, the deceased’s share does not
automatically go to the surviving co-owner/s but must be dealt with in accordance with the terms of the deceased’s Will. For example, if one of the owners as tenant-incommon dies then his or her share in the property could pass to a third party. Ownership as tenantsin-common is often popular with buyers who do not want their share in a property to go to a co-owner/s upon their death e.g. friends or business partners. Joint tenants A joint tenancy allows two or more people to own property jointly, the owners together being regarded as one single owner. Both owners jointly own 100% of the property. No shares are specified. Joint tenancy is the most common form of ownership between married couples or those in long-term relationships. The reason for this is that in the event of the death of one of the joint owners, his or her interest in the property automatically passes to the surviving owner/s by survivorship. The deceased’s interest
in the property passes to the surviving owner/s by operation of law and without regard to the terms of the deceased’s Will regarding the distribution of his or her assets following death. As can be seen, there can be significant differences and implications in the treatment of a person’s interest in property following that person’s death dependent upon whether their ownership in the property is as a joint tenant or as a tenantin-common. For that reason, legal and financial advice should be sought in regard to the most appropriate form of ownership in the particular circumstances of the parties involved. On with the show A gifted and versatile artist, Todd McKenney spends his life transitioning from one incredible project to the next. WORDS MADISON JILL HEBBARD
IN A CANDID Meet and Greet, Todd McKenney’s love of entertaining and sheer exuberance for life is contagious. He is a genuine person … honest and caring but straight shooting. You will get the truth if you ask for it and sometimes even if you don’t. His flamboyance transforms to the stage which he has shared with many well-known names including Nancye Hayes who starred beside Todd in Six Dance Lessons in Six Weeks. Performing since the age of three, Todd’s career began in his mother’s Perth dance studio where he trained in jazz, tap, acrobatics and ballroom. Representing Australia in both Ballroom and Latin Dancing – winning many International titles and well-deserved accolades and awards along the way – this ‘maracca shaking Boy from Oz’ is a well-recognised, accomplished and admired performer, actor and host. His first professional musical was Andrew Lloyd Webber’s, Song and Dance, in 1983. After that Todd took the stage by storm in multiple shows including Cats, 42nd Street, West Side Story, Pirates of Penzance and Strictly Ballroom to name a few. He then rose to fame playing Peter Allen in the Australian production of The Boy from Oz, a role he performed 766 times between 1998 and 2000.

With a beaming grin, Todd admits that he was not always the golden performer loved and adored by many. “I didn’t always have the stage presence and that one on one with the audience,” he confesses. “I believe I learnt that from performing as Peter Allen … I discovered people loved Peter’s flamboyance. “Also, when I met Mark Bramble, an American theatre director of Barnum and 42nd Street fame, he suggested I see Carol Channing on Broadway to experience her electricity with the audience. “I was spellbound and realised what I had to do to make that connection.” Todd put that knowledge to good use on the popular television show, Dancing with the Stars. “We had 170 celebrities go through the show and I had so much fun,” Todd says. “I tried to be the eyes of the people at home. I watched the monitors so I could judge the way they saw it.” During the show’s 15 seasons Todd developed a strong bond with fellow judge Helen Richey. “Helen and I were great, She would give me a challenge to try and put a word into my critique, and just before we would go to air she would say, ‘Toddy, at some point tonight you have to say ‘aardvark’.
“I would think ‘how the hell am I going to do that’,” Todd recalls, laughing. “‘You’re like two little aardvarks running around the floor’. “I once gave Helen ‘unctuousness’. Do you know what it is? It’s like slippery, Then a girl came out and did a Rhumba and she said, ‘You have such an oily, unctuousness’.” Todd bursts into laughter again. These days, Todd is still very much in demand and his commitments this year are simply breathtaking. In addition to the Peter Allen 20th Anniversary Tour, he is currently rehearsing 25 songs for Duets, a dancing and singing stage show with his best friend Georgie Parker. He is also taking on the role of Captain Hook in Bonnie Lthygoe’s production The Adventures of Peter Pan and TinkerBell in Return to Pantoland at The Arts Centre Gold Coast. While Todd admits it’s a big challenge, it is also ‘doable’. “I find I am doing less dancing, because my body doesn’t move like it used to when I was younger,” Todd explains. “So I am doing more singing and talking. It’s more chatting to the crowd and doing comedy.”
Away from the stage and screen, Todd says family is very important. His connection with his Mum is a special one. She now resides on the Gold Coast, where Todd visits as often as he can. Todd is also incredibly proud of his daughter Charlotte, who will be 10 in June, although she has been kept out of the spotlight as he believes she needs to be her own person. “She is already showing potential as a singer and is a natural on the piano,” Todd says. “But we want Charlotte to be who she wants to be without the pressure of celebrity as she grows up.” As for partners, Todd has not had one for several years now. While he confesses he doesn’t want to have to tell someone where he is going and when he will be home, Todd also ponders, ‘do I work too much so I am single or am I single because I work too much?’. Speaking of work, another of Todd’s endeavours centres around his magnificent property at Pymble on Sydney’s upper north shore. The glorious heritage home built between 1896 and 1901, is the setting for his elegant High Tea Soirées. These old fashioned musical days are filled with anecdotes, laughter, music and song with guests sipping on sparkling Italian champagne and enjoying decadent canapés while chatting to some of Australia’s foremost theatrical performers. Todd also has plans to teach other upcoming artists the gift

of entertaining. “I have all this knowledge from putting my shows together for so long, and dealing with some of the biggest producers in the world, so now that Dancing with the Stars is in hiatus I thought that’s what I could do,” Todd explains. “We are going to look for acts that are really great and just need some polish, experience and marketing, and we will work with them, nurture them and place them on a main stage.” Todd has also launched Centre Stage Tours, a unique theatrical experience to Broadway, Las Vegas, the West End and Paris. “I hope to have the first tour leaving towards the end of 2018,” Todd says. “We will take people to a show, back stage to meet the stars, and we will include many extras that only insiders know how to get. “I have to have plans. I can’t keep dancing the way I have at the pace I have,” he admits. As my interview closes, Todd’s beautiful greyhounds, Joey and Nancye, approach and remind him it’s time to go home and start rehearsing. On with the show Mr McKenney.
