Editor’s letter FIRSTLY, THANK YOU to everyone who has written, phoned and emailed to congratulate us on our 50th edition. We are justifiably proud to have reached such a significant milestone, and obviously many of you share those sentiments. In more exciting news, starting from this edition we have increased our print run by 25 per cent, and will now be expanding our distribution base to include Isle of Capri, Sorrento and Benowa Waters. So what do our new and existing readers have to look forward to in Issue 51? While we have labelled this our ‘International’ edition, it could just as easily be called ‘Gold Coasters taking on the world’. Having owned over 30 Porsches, John has a great passion for all prestige sports cars, with his personal favourites being the original Aston Martin Vanquish and the 1958 Porsche Speedster. “Living now in Sanctuary Cove I find there are no enthusiast car groups this side of Brisbane,” he says. “I would like to form a group of local, European sports car owners who may not be catered for by other car clubs. “The aim of the club would be to enjoy some drive days in the country, as well as other low key events such as restaurant visits and display days.”

Targeting breast cancer
Fashion designer Karen Walker and online fashion retailer, THE ICONIC, have joined forces to support the Garvan Institute of Medical Research for the 2015 Fashion Targets Breast Cancer (FTBC) fundraising campaign. Ralph Lauren created FTBC in 1994 in memory of fashion editor Nina Hyde who died of breast cancer. I’m a worrier by nature and I think a lot of women are. I am constantly aware of trying to watch what’s going on in my head so walking, whether at the beach or anywhere, is good. How often do you do yoga? If I wasn’t working so much I’d go three times a week but I can’t fit that in. I’ve done all types of yoga – Kundalini, Hatha, Lyengar, Anusara. I try to find classes where the teachers have a spiritual approach so it’s not just physical, but engaging the mind, your soul, your spirit and the physical. Then you really take an hour where you’re not worrying which is great, especially for women because we’re so engaged in working things out, getting things done, that we don’t stop and click it off. Another reason I love yoga is because they say beautiful things to you about how we’re all one, about how to take care of yourself, give gratitude – all these beautiful thoughts. It’s a peaceful environment and all of a sudden you let go and take a break. Cooking will also do that for me – but you have to be conscious with the preparation and process.

Do you still do that? I have done a variety of cleanses, seeing as ultimately the way I look is a big part of my job, but also because I like to feel and be healthy. I’ve studied all kinds of techniques on how to stay healthy. I’ve done ayurvedic cleanses which are nice. There’s a place in Ashville, North Carolina where I used to go and you eat lentils, rice and vegetables for a week or more ... a lot of quiet time. You even go whole days without speaking.

You’ve actually gone days without speaking – I don’t know that I could do that. (Loud laugh). Without saying one word. Some people have gone for years without speaking … then I might go crazy … but a day is an amazing experience. You should try it some time. Just be quiet for a day … it’s really good for you. It helps you get to know yourself a little bit better. It can help you be more attuned with yourself. Try it for an hour a day even. >>

Do you drink or sip various teas throughout the day? I still get a little nervous when I fly so I drink chamomile right before I take off and it really does knock me out – relaxes me totally. For me it’s the greatest chill pill. It also helps me sleep at night. I also like drinking sleepytime tea at night. It helps me decompress later in the day around dinnertime. In the morning I love a great chai tea or black tea. Green tea too. But I try not to have any caffeine past two or three in the afternoon because it interferes with my sleep and I’m constantly working on having better sleep patterns. What would I always find in your kitchen as far as nutritional staples? I eat a lot of nuts, as do my kids, so we always have a little variety of walnuts, sunflower seeds, almonds, pecans. They are mainly vegetarian but will eat some fish, and we also eat a lot of fruit. I buy a salad dressing with jalapenos in it that’s really good and different specialty salts including one called Ghost Salt – it’s spicy. And you’d find yogurt – Greek plain yogurt. Loads of vegetables. Right now I’m on this crazy kick of eating lots of fresh veggies. Plus I read recently that eating potatoes with the skins at night helps build serotonin which makes you sleep better. They say red potatoes but personally I prefer the purple potatoes. What I do – and this takes all of 10 minutes because I have no time in my life – is I cut up a variety of vegetables including brussel sprouts, eggplant, asparagus or any vegetables that I like and potatoes, then steam it all very quickly. So I eat a huge amount of vegetables with the Ghost Salt. That’s a pretty usual dinner for me, and it’s very filling. What is your guilty food pleasure? Definitely chocolate but I don’t even feel bad about it because there are so many studies now that say chocolate is good for you. And I’m healthy because all the other stuff I eat is so good and I exercise so I have a little bit of chocolate, mostly dark chocolate, every day. Any foods you’ve completely omitted over the years and if so why? I have a gluten problem. It doesn’t mean I won’t eat bread. If we end up going to a really great restaurant and somebody orders a nice bottle of wine and they plop down the best bread you’ve ever tasted, I’m going to eat it, but my stomach will blow up like a balloon. It’s more with bread than any other gluten food, and it’s gotten worse for me over the years.

You seem to have a very positive attitude about taking care of your health not just for your looks. Does this empower you as a woman and make you feel strong about yourself? I’m very enthusiastic about staying active. I did an hour of hard level aerobics this morning. My mother died of heart disease at a young age so it’s important to me – I want to stay strong. I hiked with this man back in North Carolina who’s 83 and I loved to go with him. There was a young guy with us one time in the back of the sweep making sure nobody fell behind and I’m sure he thought ‘this old man can’t do this – it’s going to be a miserable hike’. But we hiked about 12 miles that day and you had to go fast to keep up with this man. So truly age is a number because you would find someone who’s 43 or even maybe 23 who could not keep up with him. As far as being able to continue to hike, do yoga, perform handstands, or whatever it is, it’s up to each individual. I want to be hiking when I’m 83 (laughs) let’s put it that way. What do you think ultimately keeps you happy and ensures your longevity? The most important thing I think you can do for your health is to have a good community of friends. Isolation is the most dangerous thing for anybody’s health. Another is obviously what you eat and how active you are. Also good sleep is important, and you need to have a great spiritual life. But #1 for me, from what I’ve read and what I do in my own life, is you need to know people love and care for you and that you love and care for others. If you don’t have that, you have a big fat problem. Do you think your positive thinking and spirituality make you a happy person? I think the reason I’ve probably done the work I have done is because I have an intense need inside me. The reason I’ve worked so hard on finding the answers – looking for cortisol, looking for serotonin, looking for longevity, looking for what makes me happy – is inside of me there is a very sad piece. I think it comes from a broken family, an alcoholic mother, a difficult childhood, going through divorce, losses, disappointments, struggles – just like anybody else. Having to overcome all of those things will always be a part of me, but it’s up to me to choose to be happy and I do think I have that choice. Every day I have to choose do I want to let all the disappointments or the pain or the hard things that happened to me control my life or do I want to choose to look for the good. There is more good there than there is bad. I don’t have everything all figured out. It just means I’m working on it.

ONCE UPON A TIME there was a young man who opened a small jewellery boutique on the Gold Coast. He worked hard, and people loved his beautiful designs. With a growing circle of loyal and enthusiastic customers, he moved to a bigger store by the sea, and eventually opened two more – one in Sydney, one in London. Then one day he designed an exquisite range of jewellery with the Queen’s granddaughter … It sounds like a fairy tale, but every word is true. Unbridled Elegance, a unique range of equine inspired fine jewellery, is the fruit of a two-year collaboration between Zara Phillips and John Calleija – the young man from the fairy tale. And as so often happens in fairy tales, it all began with an unexpected but auspicious meeting. “I first met Zara on the beach at Surfers Paradise when she was here in her role as Ambassador of Magic Millions Racing Women,” John recalls. “She was wearing some of our jewellery for a photo shoot, and I could tell she really liked our designs. There is a certain look in a woman’s eye where, no matter what else she sees, it will play second fiddle to the mesmerising sparkle of our jewels.

“So in conversation I suggested we could do a design collaboration – you say these things and, generally, that is that. “But Zara really liked the idea, so we decided to take it further. That was how the seed was planted. “And from the beginning, this was a true collaboration,” he says. “Zara was not simply using her face to market our product – she was involved in the process constantly, and was instrumental in getting the designs right. “One of Zara’s original stipulations was that this jewellery would be wearable, not just for glamour occasions or after-five. “Not all Unbridled Elegance ladies are involved in the equestrian industry, but they are real women who work and have children. “They can wear this jewellery with confidence, knowing it has been designed to wear – not just to be put in a jewellery box,” he says. To ensure the designs captured the essence of both the equestrian industry and Zara herself, John travelled to her home, Gatcombe Park, before putting pen to paper with the designs. And it was the English countryside, resplendent in Autumn hues at the time of his
visit, that provided the initial inspiration for the earthy toned theme that’s intrinsic to the range. Even the Unbridled Elegance presentation boxes exude style and class. Crafted in the range’s signature shade of rich deep brown, they celebrate the range’s co-designer’s initial in two ways – with a pattern of interlocking ‘Z’s on the lining and a uniquely designed lid that forms the letter on the side of the box. Unbridled Elegance pieces are based around two styles – a saddle and a coronet. “The saddle makes a statement,” he says. “It is quite wide, and the twinned underside of the ring design also symbolises unity and partnership. The coronet style is more open and delicate. But while they’re different styles, they share similar elements of design. “While I usually tend to design with a lot of flair, during this design process Zara had to pull in the reins, so to speak, to ensure the pieces were kept simple but stylish,” he says. “This range has been designed to have a wearability and a nice, easy feeling to it, and I think we have achieved that beautifully.”
From the success of the collection’s June launch in London and its immediate popularity with clients, it would seem that’s a widely-held view. “The launch was very well received by the London journals and by the city’s finest jewellery critics, who really know their stuff,” says John. Which begs the question: are we likely to see more Unbridled Elegance designs in the future? “Time will tell,” says John. “We have lots of new designs coming through, and Zara is very excited about them. “The process of bringing this range from drawings to the boutiques really has been a wonderful experience of collaboration. “Zara represents a lot of women who move to their own beat. They are elegant but unrestrained. They are not fickle, and they like good quality that lasts a lifetime,” he says. Many may be surprised to learn that, although all Calleija boutiques retain in-house manufacturing jewellers to create bespoke orders, the bulk of the manufacturing for all boutiques is still undertaken at the Gold Coast workshop. As such, Calleija’s continued global success has seen the demand for its pieces outgrow its
current premises – so a new, expanded workshop and store is being created and is due to open at Marina Mirage in 2016. It all sounds very like a fairy tale ending for the young man who opened that small boutique jewellery store all those years ago, with endless opportunities ahead.

WITH THE SPRING RACING SEASON upon us and the ‘Race that Stops the Nation’ nigh, designers are offering an array of fabulous floral prints to suit every style and personality – bold and beautiful; minute and abstract; detailed yet simple; classic and romantic. This trend was everywhere on the Spring 2015 international and national runways, from metallic floral motifs at Louis Vuitton and delicate blossoms at Simone Rocha to the romantic bouquet patterns featured by Carla Zampatti. Three of my favourite designers when it comes to frock form are Leona Edmiston, Sacha Drake and Talulah. This season, these Australian labels have not disappointed with all featuring original floral prints in their collections. Leona Edmiston and Sacha Drake offer form flattering, classic, chic dresses, no matter what your shape or size, while Talulah is always on point if you are looking for that sexy, youthful edge to your outfit. Mixing prints is a trend that has endured for several seasons and shows no signs of abating. This spring and summer it is all about mixing floral and gingham prints. Gingham has an interesting sartorial history. Mostly associated with Dorothy in the Wizard of Oz, the check print harks back to the American barn dance, however, it was sultry French screen siren Brigitte Bardot who gave the tablecloth fabric a glamourous twist when she wore a pink gingham (Vichy in French) dress to wed actor Jacques Charrier in the summer of 1959. This spring, the chequered print was seen on several catwalks. At Altuzarra the look was sexy; Diane von Furstenberg was young and flirty; playful at Karen Walker; and innocent at Bottega Venetta. Of course no race day ensemble is complete without a show-stopping headpiece. Dieting deconstructed 21st-century dieters are under the impression that their regimes are admirable, interesting and morally binding.

I HATE PEOPLE ON DIETS. Not people with high cholesterol or other health issues, obviously. Not anyone seeking to downsize because they are genuinely overweight. Not skinny people, or people who don’t eat a lot. Just people on diets. There’s a big difference. Not that I haven’t been on plenty of diets myself. Before I went on holiday to Greece in the late Seventies, I ate nothing but cottage cheese and Ryvita for two weeks. I’ve been on the soup diet and the banana diet – also motivated by bikini fear (or, rather, fear of being the fattest girl by the pool). In the late Eighties I went out with a man with the physique of a malnourished jockey, so I stopped eating buns and biscuits (in those days we didn’t call them carbs) and later on I had a stab at the Hay Diet, and the Atkins, and the Dukan (once word spread that Dukan was the reason Carole Middleton was looking fit as a butcher’s dog in the lead-up to The Wedding). I never tried the Fast Diet (the most recent one). I sensed that this one was different to the whacko diets that you dive into for a week now and then, never expecting it to work long term. This was a diet with no end date, and who wants anything to do with that? I don’t know if you’ve noticed, but people on diets (with very few exceptions) are the opposite of life-enhancing. If they’re not tired and moany, they are mean. When they drink (as they will do) on a stomach containing three pints of black coffee and a portion of mango salad, they get weird. They are unrelaxed and therefore unrelaxing, reek of self-denial and vibrate with unfinished business. For obvious reasons they tend to have a short fuse (who wouldn’t, with the day stretching ahead and only three litres of Evian to look forward to), and God help you if a long-anticipated meal is held up for any reason. There’s no dwelling with people on diets. No aimlessly drifting, or idle sharing or going with the flow and seeing where it takes you, because they are wired and restless and keen to get to the next stage, and then the next stage, before

they finally collapse into bed and lie there, jaws clamped tight, hoping they are getting thinner. If someone says to me now, “I’m on a diet,” I have to fight the urge to reply, “Well, you’re no use to me then. Come back when you’ve got over it. Come back when you can give me your full attention (as opposed to being preoccupied with thoughts like, ‘I wish I hadn’t had the dried fruit with the nuts … I’ll just have steamed fish later … I don’t even need that …’). Get back to me when you are ready to be human again.” People on diets think nothing of: 1. Refusing to eat a piece of their 13-year-old daughter’s birthday cake, even when she looks perplexed, then crestfallen and then – guess what – wonders if she should have eaten any birthday cake. 2. Not trying one of the spectacular fried dough ball things that they make in this one village, in Italy, only at Easter. 3. Skipping the bread sauce and the roast potatoes on Christmas Day. 4. Picking the batter off the fish, and leaving all the chips, on the family outing to the fish and chip shop, and in so doing making everyone else feel differently about their fish and chips. 5. Assembling a lavish lunch and then watching you eat it while they pick gingerly at a single slice of smoked salmon. These are all decisions I would call Killing the Joy, but your 21st-century dieter is like your modern cyclist – single-minded, driven and confidently ensconced on the high ground. They have health and self-discipline on their side; they have life-prolonging and Alzheimer’s-deflecting in their sights, and nothing is going to steer them off course. Not their child’s graduation. Not an unsolicited amuse-bouche in the restaurant on holiday. Not a home-made with love Easter egg. It used to be generally accepted that it was boring, antisocial and deeply unsexy to be on a diet. You certainly weren’t going to advertise it. If you happened to be on a diet, and you got asked out to dinner, you adapted on the understanding that eating good food with friends is one of the
cornerstones of civilisation and life is too short. Now it’s the opposite: dieting comes first, and everything and everyone else fits in around it. (In an emergency – when their unbreakable regime is about to put the cook to real inconvenience – the dieter will dress it up as an intolerance. Mostly they don’t feel the need to.) Even worse, diets never end now. They aren’t diets in the old, crash-bonkers sense (I’m eating only grapefruits every four hours – I set my alarm!); they’re eating regimes for life. No wheat. No dairy. No carbs. No raw after four. Intermittent fasting. Sugar-free. They’re all positions you sign up to forever. ‘I’m no carbs’ is like saying ‘I’m vegetarian’, or ‘I’m teetotal’. This means you can no longer avoid dieters while they’re dieting, and you also can’t assume that by the time you go on holiday together, they’ll be back to normal eating. They won’t! Because scraping the tomato off the bruschetta and leaving the toasted bread is their normal. They are Never Eating Bruschetta again – not in the home of Giorgio Locatelli, not at their daughter’s wedding, not if it’s all there is to eat in the airport and the flight’s been delayed for five hours. Never. This is the part that drives me nuts. You can’t tease the ‘I won’t, thank you’ brigade about their rigid eating habits, you can’t shame them for being neurotics, because in 2015 that’s like berating them for being AA, or recycling. Dieting is still dieting, make no mistake; it’s still motivated by the desire to keep your weight down. But now it’s dressed up as a lifestyle choice that demands respect. Dieting is what people do when they grow up, get informed and stop treating their bodies like dustbins, apparently. Dieting is eating for thoughtful people. You might say, why not just let them get on with it? Let them not have their cake and you get on with eating yours. But this lot are ruining the fun for all of us. Food turns to ashes in your mouth when you are around dieters. They make you gibberingly food-conscious so that buying a burger becomes some grunty act of ignorance, like queuing up to see dwarf-tossing or swallowing
a goldfish. Now, when I buy churros and chocolate sauce (which is not that often), I am either the person who thinks she is thin enough to risk it, or making a statement – but never just someone who fancied some churros. Dieters have done that: they’ve made us self-conscious about food. They’ve taken one of the most enjoyable things in life and made it awkward. That’s why I hate people on diets: because they affect the way I feel about food and the role food plays in my life. Eating normally – maybe a piece of cake on a Saturday afternoon – seems like showing off. Not eating a piece of cake on a Saturday afternoon similarly is freighted with meaning: am I slowly turning into one of them? The funny thing is, it’s only now that dieters seem like an alien breed. Between the ages of 24 and 44, I worked on fashion magazines where I was immersed in some of the most bodyconscious environments on Earth. As a fashion assistant on Harpers & Queen in the Eighties, I used to scoff submarine sandwiches out of sight, in the fashion cupboard, when it was made clear to me that there was no room for lunch in the life of a fashion assistant. But the editors ate lunch, boxes of it brought to their desks, by me, from far-flung Chinese or Lebanese restaurants. On Vogue, in the pre-waif Nineties, I went on a shoot with Linda and Christy and Naomi (the video for George Michael’s Freedom) and returned with tales of their fantastic physiques relayed to an audience sucking down Cokes and munching on Twixes. (Nowadays Vogue has its own chic canteen where you can nibble on edamame beans, but back in 1990 the healthiest fast lunch you could buy within reach of its office was a tuna mayo sandwich with no butter.) Fast-forward to Elle in the mid-Nineties and then, post 2000, covering the shows for Marie Claire, I don’t remember a single person being ‘On a Diet’. Everyone worshipped at the shrine of slim. Everyone wanted to look lean and mean in their black trousers and black Crombie coats, and sometimes we forgot to eat because we were so stuck into the Negronis. But no one ever talked about weight or diets and we didn’t have the necessary mindset for committed food monitoring. In Paris, we would pile into a brasserie after the last show of the day, hoover down the contents of the bread basket, order wine and steak-frites and more wine. Fashion girls – back then, anyway – were hedonists who understood that fat is the enemy but around food (and drink) is where the fun always happens. You skipped a meal here or there, and that was it. The prevailing view was that the coolest girls were having the best of both worlds. Now I suspect it’s a bit different. There’s one really big difference between then and now: men. They’re all dieting, and they’re naturals. They enjoy the routine, the rules and, most of all, the simplicity of it, especially a Banned Food List (oddly the foods on the Good For You list, they find far less interesting). No woman, however diligent, ever preferred dieting to eating normally, but apparently men do. I am married to a man who has become No Carbs and proud of it. We’ve had the scrambled egg with no toast argument (who eats scrambled egg with no toast?); the patatas bravas argument (if he doesn’t eat any, I have to eat all of it, which feels like him sabotaging my weight). I’m not crazy about being the greedy one in the relationship and the only crisp-eater left in the house. I don’t like the way he eyes up my chips sometimes – like he could take off my hand – but many of the (middle-aged) men I know are doing something similar. And what’s really annoying is that they’re even more obsessive than the women.

maintain your new shape yourself. Use a good pencil for outlining the border and powders for filling in any gaps. A sun-kissed effect warms up your skin tone. Apply a good matte bronzer to your cheeks and forehead. Avoid sparkles (this goes for eyes as well), especially on mature skin as it can look unnatural and accentuate any lines and wrinkles. If you want perfect make-up that still looks natural, go for flawless-looking foundation with contoured features. Contour with a matte finish powder – this accentuates facial features and really complements different face shapes. Achieve a glowing spring look by using soft pastel colours. Try mauve or mushroom-coloured eyeshadows, or experiment with brown tones. Brown eyeliner works well during the day. For night time, black is more dramatic. Create a smudged effect with your eyeliner (especially if you are not applying eyeshadow). Apply plenty of lengthening brown or black mascara to complete the look. Valrhona Chocolate Sphere White chocolate sphere Ingredients 2kg Zephyr Cacao Berry chocolate 200g cocoa butter Method 1. Melt 1.5kg of the white chocolate up to 45°C, then incorporate the remaining 500g. 2. Melt the cocoa butter and whisk into the white chocolate. 3. Temper the chocolate to 28-29°C and pour into half dome moulds. Strawberry gel Ingredients 500ml strawberry puree (boiron) 125ml water 325g caster sugar 40g dextrose 15g citric acid 15g yellow pectin Method 1. Bring strawberry puree and water to 40°C and stir in dextrose and 225g of the sugar. 2. Once it has reached boiling point, add in the pectin and the remaining sugar. 3. Boil to 105°C and whisk in the citric acid. 4. Remove from heat and set in the fridge. Sorrel sorbet Ingredients 500ml water 500g sugar 20g glucose 1 tbls xanthan gum 100g woodland sorrel Method 1. Bring water, sugar and glucose to the boil. 2. Add in xanthan gum and whisk for 1 minute. 3. Cool mixture, blend in sorrel and set in the freezer.

Compressed watermelon and strawberry Ingredients 100ml water 100g sugar ½ watermelon, diced to 1cm cubes 3 strawberries, hulled and halved Method 1. Bring water and sugar to the boil. 2. Remove from heat and cool. 3. Place watermelon and strawberries in separate cryovac bags, sealing until the air has been taken out. 4. Set aside. White chocolate powder Ingredients 100g Zephyr Cacao Berry chocolate 10 tbls maltodextrin powder Method 1. Place chocolate in a mixing bowl over a saucepan of simmering water and melt. 2. Add in maltodextrin powder and mix until a powdery consistency forms.
Watermelon espuma Ingredients ½ watermelon 1 tbls xanthan gum Method 1. Juice watermelon and bring to the boil. 2. Add xanthan gum and whisk for 2 minutes. 3. Take off the heat and set aside to cool. 4. O nce cooled, transfer to a siphon gun and charge with two gas bulbs. Strawberry jelly Ingredients 1kg strawberry puree (boiron) 8g agar agar Method 1. Bring strawberry puree to the boil. 2. Add in agar agar and whisk for 2 minutes. 3. Set in tray then cut the jelly into 2cm cubes. To serve 1. P lace bottom half of sphere on white chocolate powder. 2. Fill with strawberry gel, compressed strawberry and watermelon and a quenelle of sorrel sorbet. 3. Siphon the watermelon espuma into the sphere. 4. Place other half of sphere on top.

Give up the ghost Chilies … the hotter, the better? WORDS TONY HARPER
WHEN IT COMES to munching chili I kind of rate myself, after all I’ve been devouring Scotch Bonnets and habaneros for decades, and the hotsauce shelf of my fridge rarely drops below a half dozen different bottles. I kind of scoff at Tabasco and so-called hot curries at the local Thai, and when I order a vindaloo I ask for it Indian hot. But I think I’ve met my match. A friend gave me a paper bag with a halfdozen chilies rattling around – three chocolate habaneros and three wicked looking red things: awesome! I grilled a nice piece of steak and sheared off a few very fine slivers of each and laid them on the steak, the nice brown harbenero at one end and the mysterious red fellow at the other. The first bite was terrific, with enough chocolate harbanero to bring out a sweat and get the endorphins flowing. It had the kick to make me understand – without any palaver – that it was no ordinary harbanero. It really kicked.

But the other side of the steak did more than kick. For the first time in decades I made a bee-line for the yoghurt, sour cream and milk in a rather feeble attempt to save my tongue from exploding. It was the tiniest sliver, but the size didn’t really matter; I was eating Bhut Jolokia … the ghost chili. Not so many years ago it was the hottest chili on the planet (its position has been usurped by the likes of the Carolina Reaper and Trinidad Scorpion varieties). Chili-power is rated in Scoville units, and – to put things in perspective – your standard Birdseye or Thai chili weighs in between 100,000 and 250,000 units, Tabasco sauce a mere 400. The jalepeno barely scrapes 20,000. The harbanero – a chili I love for its fruitiness and power – smashes them both with a rating that reaches 350,000. But the ghost chili (oh dear) passes a million. It’s so potent that it is being developed as a defence aid – hand grenades and pepper spray. And if you lived in rural India
you might see folk spreading it on fence posts and trees to ward off rogue elephants. Why then would you want to eat one? The quick answer is endorphins. These are our inbuilt painkillers that not only rush to our aid when we are hurt, but also leave us feeling a little elated. Chili lovers learn to crave the endorphin rush and the slightly buzzy feeling that follows in the wake of spicy food. The trouble – at least where I am concerned – with the ghost chili is that the burn is thirty times more powerful than the endorphins and I was too focused on the pain to feel any pleasure. Whoops! But there’s more to chili-eating than just the natural high. There’s flavour. And every different breed has a different taste and a different burn. Thai chilies, for example, hit hard but fade quite quickly, and their flavours are quite subtle, while the harbanero is distinctly, deliciously fruity, and even though it hits hard, its heat builds and builds;
the unwary eater can find themselves in deep water. Bhut Jolokia has its own distinctive flavour that lies somewhere in between the two – slightly fruity and slightly vegetative, but without the tropical notes of the harbanero. And there is no denying its heat. Prior to 2007 it was a relatively obscure fruit, little seen outside its home in India. But the Guinness Book of Records changed everything by naming it the hottest chili on the planet. Now its fruits, sauces and plants are in global demand. I’m growing some, using the seeds from the fruits I was given. Exactly what I’ll do with the resulting chilies I have no idea, but I’m determined to fold them, somehow, into my life. Ultra-hot salsa perhaps? My own hot sauce? Chili oil, chili paste, or simply sliced fresh? How about cat repellent or rust remover? There are plenty of recipes and opinions on the web, so I won’t be stuck for ideas. But whatever the recipe or end result, I’ll be donning gloves before I cut, and clearing the house before I heat them; the fumes can be outrageous and the oils even worse if you touch your eye or visit the bathroom. If you’d like to put your toes in the ghost-pepper waters, look for Richmond Hill Sauces. Based on the Byron Bay hinterland, they make a range of rather delicious hot-sauces including a couple from Bhut Jolokia. And while they are definitely hot, the truly fierce heat has been tamed, so you can appreciate the flavour – and the endorphin rush – without the need to go blubbing into a tub of yoghurt. Good luck.

Yes, chef For restaurateur Gary Jones, food is a way of life not a way to make a living. IT IS THANKS to the foresight of his father Hubert, that Gary Jones spends his days cooking awardwinning food at his restaurant Jonez on Food in the beautiful surrounds of Sanctuary Cove rather than working in an underground coal mine. As a child, growing up in the UK village of Rossington, south Yorkshire, Gary’s options seemed to be limited to working in the mines, or joining the army. Neither was the future Hubert wanted for Gary, so he urged him to find a career that would provide more opportunities. “My dad just said ‘nope, you’re not working down in the mines, go find something that makes you happy’,” Gary recalls. Luckily for the thousands of diners who have since had the pleasure of enjoying Gary’s fare, he found his calling in the kitchen. “I went to London and started an apprenticeship,” says Gary.

“It was just the right fit for me. I remember going home and Dad asked me how it was going; I told him I was enjoying the work, and he said ‘well I’ve got 1,200 men down in the mine who don’t enjoy what they do, so that’s all you can ask for’. “That has stuck with me, and I’m always grateful that I get to do something I love.” Since those early days in London, Gary has become a celebrated and award-winning chef. Now calling Australia home, he has operated his own restaurants including Lorenzo Perth and Jones Restaurant Melbourne, where he has won numerous awards and accolades including Gourmet Traveller restaurant of the year. For the past four years, Gary has been head chef and owner – with his wife Belinda – of one of Sanctuary Cove’s favourite eateries, Jonez on Food.
The fare is modern Australian, using fresh, seasonal produce. His dishes are sophisticated and innovative, with a focus on quality and taste, rather than jumping on each new foodie trend. A classically-trained, old-school chef, Gary is always aiming to create stunning dishes that his customers will relish. “When I first opened a restaurant in Perth, I really started building and perfecting my recipes; fine tuning them until I got them to be what I think is perfection,” he explains. “Some of the dishes on my menu, I have had for 20 years. Once I get it right I really don’t mess around with a recipe too much. “I understand that chefs want to try new things, so we see a lot of deconstructed foods or dishes that have a lot of bells and whistles. But cooking something really well is a great skill, and it’s important to always remember what we are
here for is to serve fantastic food that people love, which requires great produce, an understanding of what works and what doesn’t, and a great technique to create the dish. VOLVO XC90 VOLVO’s new XC90 might be an SUV, but it boasts the ultimate city-driving aid – automatic queue crawling. Called Queue Assist, it controls acceleration, steering and braking in stop-go traffic. It’s just one of the extraordinary technologies in the Swedish maker’s new flagship seven-seater. The superseded XC90 was one of Volvo’s most successful models and featured in showrooms for many years. So the new car needed to be a technology and luxury tour de force; and it is. Where before the XC90 had engines of five, six and eight cylinders, the new model has 2.0 litre turbo fours that banish the idea that big capacities and many pots are needed for power. There’s a 235 kiloWatt petrol, 165 kW/470 Newtonmetre diesel and a petrol-electric hybrid with a combined 300 kW, 640 Nm and fuel consumption as low as 2.1 litres per 100 kms. It wouldn’t be a Volvo without advanced safety. The XC90 knows if it’s running off the road and tightens the front seat belts. To help prevent spine injuries, the seats cushion vertical forces in a hard landing. The car brakes automatically if the driver turns in front of an oncoming car. All this and much more is wrapped in a glamorous package that shouts cool Swedish design and tech, proving Volvo’s Chinese owners know not to interfere. BMW I3 Those who predicted electric and hybrid-electric cars would mean the end of enjoyable motoring have turned out to be very wrong. Instead, these vehicles have created a fascinating and rewarding new kind of car. Hybrids combining petrol or diesel engines with battery-powered electric motors are available now in everything from Porsches to Hondas. Their popularity as taxis and victory at the Le Mans 24 Hours race proves they meet the toughest economy and reliability tests in every type of driving. Electric cars are slower to emerge and remain compromised by their usually short battery ranges and high prices. But everything has to start somewhere and I salute those motorists who can afford to be pioneers with cars like the BMW i3. The i3 runs solely on a battery-powered electric motor. The claimed normal range is 160 kms, but you’ll see the charge-meter fall faster than the Chinese stock index if you use much of its lively acceleration. The list price is $63,900 for a four-seat hatchback. An optional version with a motorbikeengine generator is $69,900 and keeps going until you can plug in again. You’d be lucky if fuel savings made up the price difference from a Corolla in a lifetime, so why buy it? Well, plenty of people buy impractical or unsuitable cars just because they like them and there’s plenty to like in the i3. It’s short and tall, with minimal overhangs and doors that both open from the centre pillar for easy access. It also has the ability to carry out functions including remotely opening or locking the doors or preconditioning the climate control through a smartphone app. No special controls or techniques are needed to drive the i3, but its characteristics take a little getting used-to – it leaps from rest like a greyhound and engine braking when you lift off is such that it will stop without use of the brakes. Given the distance of most urban drivers’ daily meanderings, the i3 should be able to get from charge to charge without using petrol, for a modest saving in operating costs. It’s not a perfect all-round car, but outstanding as an advanced-technology commmuter if you’re willing to pay the price. >>

Jaguar XE We’ve been waiting a long time for the first true baby Jag, but from the outset it will demand consideration if you’re buying a car in this class. With no history of its own, the all-new Jaguar XE – which went on sale on 1 September 2015 – faces a big task to convince buyers they should go British instead of the proven German-designed models that have been selling up big for decades. Training in Spain The Cove Travel cycling team – Doc, Johnno, Buck and Blocker – conquer the Spanish mountains.
WHERE DO FOUR CYCLING MATES go to ride their bikes when previous trips have been to Italy & France? Spain was decided upon as that would complete the trio of European countries that host the Grand Tours – the Giro d’Italia, the Tour de France and the Vuelta a Espana. Excellent research by routemaster John (aka Blocker) resulted in two separate destinations … Sierra Nevada (Snowy Range) in the province of Andalucia, where the high peaks make skiing possible close to the Mediterranean, and the Picos de Europa (Peaks of Europe) in the northern Spain province of Cantabria near the Atlantic coast. First step was to book good value flights and vehicle rental through Leslie at Cove Travel, with extra baggage allowance for bike cases. Second step was to ride every available hill in the Gold Coast hinterland and Northern Rivers in the next eight months as preparation. With kits kindly sponsored by Cove Travel and Derek and Rhonda, from DocRox Communication, our final task was to climb the Spanish mountains.

Day 1 After 41 hours door to door travel we arrived at Hotel Puerta Nazari in Orgiva, southern Spain. Situated at 450m above sea level in the valley of the Guadalfeo River this bohemian town features a beautiful twin-spire 16th Century church and more than its fair share of backpackers and hippies of all ages. The beers and tapas served on the hotel terrace, coupled with jet lag, lead to a great welcome to Spain. Day 2 Distance 40km Ascent 1081m Assembled the bikes, which were all in good condition after long haul flights, and set off along the undulating road overlooking the river. Sunny, blue skies and beautiful mountain scenery. Arrived in the historic village of Torvizcon with its traditional whitewashed houses. Enjoyed a delicious meal of fresh bread, ham, cheese and tomatoes, washed down with a certain carbonated cola drink (when bike riding the red wine has to wait until the evening).
Day 3 Distance 70km Ascent 1543m We were only 500 metres into the ride on a narrow uphill road with a line of oncoming cars when one driver decided this was a good time to overtake. A close shave but we survived. I will say that this incident was out of the ordinary and mostly we found the drivers showed great respect for cyclists. We passed through the village of Sorportujar where, according to local legend, witches used to hold night time meetings … or maybe that is just local lore made up by disgruntled husbands. We summitted at Trevelez which at 1476m is reputedly Spain’s highest village and renowned for its ham, Jamon Serrano, which we enjoyed for lunch. Day 4 Distance 60km Ascent 1510m Did a loop from Orgiva, Haza de Lino, Torvizcon, Orgiva … a superb ride suggested by one of the owners of our family run hotel. Downhill out of town, then a long, long uphill before summiting a ridge and capturing spectacular views of the Mediterranean 30 km away.

As usual, our return to town was mid afternoon. Being regional Spain everything was closed from 2 - 5.30pm then reopened until 9pm. To my eyes a strange way of doing business, but, as they say, when in Rome ... To date we had faced challenges finding good food in the evenings but this night we found Juan at Nemesis restaurant who served the best paella for 9 Euros per head. Buen provecho! Day 5 Distance 47km Ascent 1559m Today involved driving 50km to Granada and then riding Montana Sierra Nevada. As many have discovered, satellite navigation systems can sometimes be misleading. Notwithstanding this we found ourselves in the narrow, twisting back streets of Granada looking for the highest peak in the region. After seemingly going around in circles for some time, and folding in the wing mirrors to squeeze through some narrow laneways, we eventually stumbled on a main road and navigated old school with road signs. 26km to the summit, first class road, smooth surface, wide with sweeping bends, minimal traffic and absolutely stunning views. At the summit there was a film crew making a documentary on a young French cyclist, Warren Barguil. We hope that film will feature four Aussie cyclists, arm in arm, singing Waltzing Matilda, but I fear that footage may end up on the cutting room floor. >>

Day 6 Distance 70km Ascent 830m As one of our party had never been to the Mediterranean we decided on a ride to Salobrena on the Costa del Sol. A challenging route taking us up the valley sides of the Guadalfeo with beautiful scenery overlooking a large dam, then through a stunning gorge before the road flattened out to the beach. Stoney with a multitude of beach umbrellas and sun lounges, placid water with not even a ripple for a body surf. We are truly blessed in Australia with our beaches. Day 7 Bike Free Day Rest day so we drove to Malaga on the coast, a town apparently founded in 770 BC by the Phoenicians and famous for being the home of Picasso. For a change we had a normal tourist day. Coffee in the main square followed by a visit to the castle and a magnificent cathedral nicknamed La Manquita, one armed woman, because one of its towers was left unbuilt. A perfect week in Orgiva was completed with the usual delicious paella at Juan’s restaurant then drinks with the locals in our hotel bar watching Barcelona beat Juventus in the final of the European Champions League.

Day 8 11 hours driving on excellent toll free motorways took us from the olive, lemon and orange groves of Andalucia to the bucolic scenery of the Picos de Europa, home to the Cantabrian brown bear, wolves and Griffon vultures. By 8.30pm we were booking into the bike friendly Hotel Infantado, Potes. Day 9 Distance 69km Ascent 1266m Destination Camasobres via Piedrasluengas, height 1355m. Good roads, birds singing and stunning views always eases the pain of climbing. Summited Piedrasluengas then dropped down 5km to Camasobres for coffee in the one cafĂŠ in town. Part of the beauty of travel is the people one meets. We had a lovely chat to a young Cuban woman who was married to a Spaniard and who spoke excellent English. She naturally agreed when we mentioned what a beautiful part of Spain she lived in. But, as she pointed out, this was June and life is a lot different when there is snow up to the first floor of the house, so we all agreed there are tradeoffs in life.
Day 10 Distance 60km Ascent 1430m Our destination was Puerto San Glorio, which featured in the 2014 Vuelta a Espana. Invariably the climbing starts straight out of town and this was no exception. The weather was overcast but did not detract from the magnificent view. As always, in unknown towns there is the challenge of deciding where to dine. Most guide books recommend the menu de dia, a set price 3-course meal including water and wine served at both lunch and dinner. The price is reasonable but I have to say we found the quality very ordinary. Day 11 Distance 85km Ascent 895m Having previously ridden to the Mediterranean coast we decided we should ride to the Atlantic coast, the Costa Verde. A rare 5km downhill out of town and then 20km beside the River Deva through the stunning La Hermida gorge. Prior to arriving at the coastal village of Pechon we had wonderful views of the estuary, rugged cliffs and the Atlantic ocean. Magic. Lunch in a cafe with friendly locals, them attempting to speak English and us the same with Spanish, but language is no barrier to having a good time. >>

Day 12 Distance 50km Ascent 970m Had to wait till after lunch for weather to clear so set off for Fuente De at 2pm. It doesn’t get dark till 10pm so there was still plenty of riding time. A beautiful afternoon ride finishing at a cable car that takes visitors to a viewing station at Aliva. The Alpine-like country is truly majestic. Although there weren’t a lot of cyclists, the area is popular with motorcycle tourists, all very friendly on the road as if we are part of a two wheel international brotherhood, the only point of difference being they ride further than us and get there a lot quicker. Day 13 Distance 40km Ascent 800m Inclement weather was not a problem as one of the bikes needed a new chain. Again it was a mid afternoon start, destination Cucayo – a route suggested by our hotel receptionist, Carmen, who was a mine of local ride information. As is often the case what we thought might be a pretty ordinary ride turned out to be one of the most picturesque so far. Hard climbing from the green valley up to the stark peaks where the road ended at the pretty hamlet of Cucayo. Hot chocolate is our drink of choice in the mountains, which we had while watching at least fifty Griffon vultures flying overhead. Day 14 Distance 80km Ascent 1255m Good weather so we had a 9.45am start to La Hermida gorge. Magnificent mountain scenery as usual, with craggy peaks similar to the Dolomites in Italy. Back at the hotel a wedding reception was in progress so we were able to observe how they do it Latino style. Noisy, vivacious and lots of fun. Day 15 Distance 40km Ascent 840m Said farewell to a bunch of English motorcyclists who I’m sure shook their heads after our departure, wondering why, at our age, we choose pedal power over horsepower. Headed out on the Camasobres road but at 13km took a right turn to Caloca. Cool temperatures for our last ride but a real beauty to finish with. A final meal at Pacos Mexican restaurant where we left it to the owner to decide what he would like to serve us. The result was a magnificent five-course meal washed down with Pacos’ sangria, the ingredients of which looked to include most of the top shelf of the bar. A wonderful end to a cycling trip that went far beyond all expectations. Riding 711km. Climbing 13,979m. Memories immeasurable. Hasta la Vista Espana.

IT IS AMAZING how good a change of scenery is for the soul. We are fortunate enough to live in a beautiful part of the world. Sometimes we might need a nudge to venture further than our own piece of paradise. With a short drive northward to the Sunshine Coast, my husband, Nathan, and I did just that. Bags packed with resort wear and perhaps a few too many pairs of shoes, we journeyed to the beautiful village of Noosa to escape our winter blues. As parents of a 16-month-old toddler, we were eagerly looking forward to some quality adult time. And by that I mean a late morning sleep-in in a deluxe king-sized bed. Nothing seemed more divine to me than an uninterrupted night’s sleep. Oh, and I was also looking forward to spending time with my husband. However, with last minute pangs of parent guilt how could we leave our little angel for two whole nights? our romantic weekend away was crashed by said angel, and we embarked on what was to be our first family holiday.

I must admit, I was feeling a little apprehensive how an energetic toddler might be received by our 5-star destination. These feelings were quashed with each encounter I had. The staff at the Sheraton Noosa Resort & Spa were, above all, welcoming. In fact everybody we met in the tourist hub of Noosa seemed to be happy. I mean, really happy. Strangers smiled and said ‘Good Morning’ as you passed them; people held the door open for you; cars stopped in the street for us to cross. It felt clean and safe. The overall vibe was of good old-fashioned courtesy in a modern and vibrant setting. This place knows how to welcome tourists. With breathtaking views of the meandering Noosa River, our balcony was the perfect place to wine and un-wind, watching the sun set over the mountains. I was impressed with how well the resort was designed to make the most of the natural landscape. Our luxurious room was also spacious and comfortable. The kind of luxury
without the haughtiness – as you would want and expect on a coastal vacation. Although already on my way to feeling relaxed, Nathan insisted I indulge in some ‘much- deserved’ spa treatments while he had some bonding time with Tilly – and who was I to disagree? I chose the ‘revitalise’ pamper package and as the name suggests, it didn’t disappoint. Winter had not been kind to my skin. The facial, using products derived from the sea, was just what the proverbial doctor ordered. After an hour-long massage to soothe my aching muscles (caused by carting around a 13-kilo human) I headed back to my room as if the world had been lifted off my shoulders. Footloose and child-free, for a moment I contemplated taking a detour via the nearby Noosa Beach House bar for a cocktail. However, after my treatments I decided drinking water would be a wiser choice and, perhaps I had better check the success of the daddy-daughter bonding. My mum-skills may be required.

Positioned in the heart of Hastings Street, the resort’s location was convenient to say the least. It was only a short walk to the iconic Main Beach, fine dining and cafés. Hours were spent in the glistening waters of the resort pool and spa, making sandcastles at the nearby beach, and the occasional visit to one of the plethora of ice cream shops dotted along the strip. Boutique stores seem to cater to your every holiday-need. Virtually on the doorstep, there is a book store to grab a new read to enjoy lazing on a sunlounge poolside. In our case we kept our toddler entertained with the colourful pages of Dr. Seuss and the toy store came in handy. Lovers of fashion wouldn’t be disappointed, nor would those who enjoy a ‘good drop’ with a boutique wine cellar a stone’s throw away. There are various homewares, art pieces and handmade relics to take back home as a reminder of time well spent; all of these, within close proximity of the Sheraton. >>

With our little Tilly fed thanks to the convenience of room service, Nathan and I would wander out to ‘Hastings’ for dinner, with our rugged-up bub in her pram. Thousands of fairy-lights cover the trees that stretch the length of the retail precinct, making for an enjoyable stroll. We dined at the stylish Noosa Beach House which boasts the flavours of renowned celebrity chef, Peter Kuruvita. The signature-dish of Snapper Curry was simply divine. We even received a recipe card for us to put our culinary talent to test at home. Unfortunately, my kitchen skills wouldn’t do the recipe justice. I will have to be content with my new threads and coconut-scented candle as reminders of our time away. That, along with the memories of our successful first family holiday. One day we will return. I shall plant the seed to ‘Grandma and Grandpa’ that perhaps next time we head to Noosa, they might like to join us. The boys could play a round of golf while us girls hit the shops. Furthermore, what a great way it would be for them to spend some quality time with their grandchild, while Nathan and I have a little time to ourselves.

Natural selection Sanctuary Cove photographer Neil Goodes has captured global attention with an amazing sequence of images. WORDS RHONDA OXNAM
IT’S A LONG WAY from the refined atmosphere of Sanctuary Cove to the wilds of Africa but for amateur photographer, Neil Goodes, the journey resulted in a stunning series of images that have captured attention around the world. “I’ve had a life long interest in photography and birding,” explains Neil. “When I retired a decade ago, I decided to turn that interest into a hobby because it’s something I can do each and every day. “The birdlife here at Sanctuary Cove is so spectacular, and I love to go to Africa to take wildlife shots.” It was on a recent visit to Londolozi in Sabi with his wife Elaine, that Neil came across a once in a lifetime photographic opportunity. >>

“We were on an early morning safari and the ranger we were with heard a cry,” Neil recalls. “He said, ‘that’s a wildebeest and I suspect its been taken by a crocodile’. “So we drove to the dam and saw this wildebeest which had a crocodile locked around its jaws. It was awful really because it had a calf next to it and a few other wildebeest around. “We parked up and as we were watching, suddenly a hippo came over and took a bite out of the poor creature as well, almost like a wildebeest sandwich.” Over the next hour or so, Neil captured around 300-400 pictures, which he subsequently uploaded to a photography website. “The following morning a UK press company contacted me and asked if they could handle the images so I sent though a sequence of shots,” Neil explains. “Over the next week the images went global, appearing in the Daily Mail, Telegraph, The Sun, Paris Match, African Geographic and New York Post. “The photos are a bit gruesome but it was just amazing to see them appear in so many papers and magazines around the world,” he admits.

WELL TRAVELLED
Nice try Patsy and Bill Rowe had some interesting experiences during a recent visit to Europe. SOMETIMES HOLIDAYS get off to a rocky start … our trip to Nice in May certainly did. We arrived in Rome Airport at 7am to discover a fire and terrorist scare had closed the airport. Our flight to Nice was cancelled. Being Italy, no one knew what was happening, or indeed if anything was going to happen. Since the lounges were closed we tucked ourselves in a coffee shop in a corner of the departure area to be at the ready should the airport open and flights resume. And that’s when my overnight bag was stolen. How, I’ll never know as I had it right beside my leg. But it was gone and what ensued were three trips to the Carabinieri to ask, plead, beg for a statement to be taken that confirmed it had, indeed, been stolen.

By 6pm I’d given up because we had to find somewhere to stay … and with hordes of people stranded, finding a bed wasn’t easy. Eventually we booked into an airport B&B. It was 35 minutes away (I must remember in future to ask which airport). After a sound sleep I returned at 7am the next morning like the energy bunny, recharged and ready to prise a formal statement for insurance out of the Carabinieri. To say they were unhelpful is an understatement, but after Bill gave the policeman wearing the most gold braid a toy koala, and I batted my false eyelashes until they were in danger of falling off, I got my statement just in time to sprint for the flight to Nice where we were to meet our cruise ship.
We’d given ourselves two days in Nice. Bill booked Le Grand Hotel which the internet described as ‘on the water’. And then he booked a bus to take us from the airport to the hotel, a short ride. It was, Bill said, a big bus that took luggage. And there would be a big strong driver to help us with that luggage. The bus which stood at Stop 19, however, was not a big bus, nor was there an accompanying big strong driver. What there was, was a small irritable man with ears the size of croissants who looked barely strong enough to lift a hatbox. He sat rolling a cigarette as we struggled to hoist our suitcases up onto the bus. Fortunately, sympathetic travellers helped. When I dared to ask where we got off for the Grand Hotel he told me at Le Petit Chat Café.

I pointed out I didn’t know Nice so wouldn’t recognise Le Petit Chat Café. His Gallic shrug indicated it wasn’t his problem. Again sympathetic travellers came to our rescue by calling out the stops. It wasn’t, as Bill had assured me, a short ride. In fact the bus trip was starting to feel longer than the flight from Australia. Finally it lurched to a stop. We were at Le Petit Chat Café. The sympathetic travellers helped us lift our luggage off the bus onto the pavement and then the bus drove off in a black cloud of diesel fumes. According to the map we should now be standing in the foyer of Le Grand Hotel. Since we weren’t, we decided Le Grand Hotel must be just a little in from the water. We grabbed two suitcases each – just as it began to rain. I had an umbrella but I also had a handbag, a carry bag and my suitcase. This left me with no hand to hold an umbrella. After many directions from sympathetic locals when we arrived at Le Grand Hotel (which was not ‘grand’ and not ‘on the water’ but three blocks behind) there was not a single part of my body that wasn’t waterlogged. We sloshed into the foyer to be faced with a sea of orange jackets, standing, sitting or reclining on the sofas. It seems that a grateful wealthy industrialist in China had brought 5,300 of his employees to Nice to thank them for their hard work. Clearly most had chosen Le Grand Hotel. It took us some time to wend our way to the Reception Desk where a haughty young woman poured into a long black column of crepe de chine and sporting a butterfly tattoo informed me we had no reservation. “Oh, yes, we have,” I assured her fumbling in my handbag to produce the confirmation. She glanced at it. “Well, we are, how ees eet said in English, we are ‘aving no places.” “Well,” I responded somewhat tartly, “it is said in English, that we have a booking for two nights and we are not leaving this desk until you find it.” I declared this as loudly as possible. Although etiquette requires one doesn’t raise one’s voice in public, I was wet, tired and irritable and had no intention of relinquishing my position at the head of the queue. Within 15 minutes we were handed a key (somewhat ungraciously may I say) and our little contretemps was over. I don’t know who didn’t sleep in Le Grand Hotel that night, but I know we did. When it was time to leave, my sunny mood was reflected in blue skies as we lounged back in the limousine Bill had felt it wise to arrange. I must admit I respond well to luxury and so it was that we arrived at the ship two happy travellers ready for our cruising adventure.

Tips for paying off your home sooner MOST PEOPLE expect to pay off their home over a term of 25-30 years. But what if there were ways that you could own your home sooner?
