Devil and the Deep Brewing: A Hoppy Dream Come True By Terry Card

Behind every business, there is a story. Its parts may be the building, the location, or the entrepreneur who started the business. The story behind the Devil and the Deep Brewery is unusual in that this story is populated by all three. First, there is the entrepreneur. Eric Walker was born 35 years ago in Tucson, Arizona. His father was a mechanic who restored classic cars. He attended high school in Oregon and upon graduation crossed the width of the country, ending in Maine. He was a patriot who wanted to contribute to keeping our country safe, joining first the Navy and then the Army. While in the Army he arrived to do battle in Iraq. Finally, he was transferred to Ft. Hood just outside Austin. In 2011, he moved to Galveston. He had always been interested in brewing beer starting with home brewing, then learned the trade by volunteering at different breweries, which allowed him to get to know another mid 30 year old, Mark Del’Osso, the founder of Galveston Island Brewery. Finally, by 2016 he decided that it was time

6 • GalvestonIslandGuide.com

for him to go ahead with his dream. He interested financial backers in his project, found a location for his brewpub in the Hendley building, and was excited to finally bring everything he had dreamed about to fruition. Suddenly, the rug was pulled out from under him when foundation problems with the building were discovered. Everything he had worked for disappeared overnight. He was devastated! This young patriot and war veteran, his dream shattered, received a phone call a week later from a buddy of his, Jimmy McClure, the owner of Jimmy’s On the Pier. Jimmy said he had heard what had happened and offered to lease him a building he had just purchased. Location? It had been the old Loading Dock Bar, a popular and well-known location. The building? It was perfect because prior to being The Loading Dock, the building had been used for fabrication and had bay doors, ideal for his concept of not just a bar, but a brewpub, with a need for delivery access, and space for brewing equipment. It was even better than the Hendley building. Sometimes good people do get rewarded. As Eric said, “It was unbelievable! It just came out of the blue! How do you explain it?” However, he did not need to be prodded to take advantage of his good fortune. He applied to the City for a variance in May 2017, and by August 22nd took delivery of his Brite Tank, and by December 1st had created his first experimental batch. By December 7th, he and his partners, Chris David, Landers Weakly, and Daniel Torres had the gas lines and a new 4” water main installed. The bathroom had to be renovated and rebuilt, a new bar installed and general painting done, but by February 2nd, 2018, the Devil and the Deep Brewery was opened for business, completely self-financed with the help of their investors. Fortuitously, this was just in time for Mardi Gras! Since the large breweries like Anheuser-Bush essentially control the domestic beer market, the only way to compete is to craft your own beer. This was behind the decision to open a brewpub. When he first started he turned to friends like Mark Del’Osso for advice on how best to proceed. He decided that he wanted to brew beer that used a single hop recipe. This allowed him to

create clean middle of the road beer with a style that balanced the bitterness of hops with the malt used in the beer process. The beer ranges from 4.4% alcohol to 8% which Eric brews in 5 barrel tanks, all named after his investors, or in one case, after the investor’s dog. The next five tanks will all be named after dogs. The pub is dog-friendly as one would guess. Two of the more popular clean beers are the Blonde and the amber, both of which have a wonderfully balanced taste. His customer mix has no social or demographic delineation. Right now, his clientele is about 70% local and 30% tourist, but he expects that to change over the summer through hotel advertising and creating liaisons with bar managers, in order to allow him to install a craft brew tap in their bar. His future plans, besides getting his product into bars and restaurants, is to follow some of his compatriots in the craft beer industry by having canned beer distributed in stores. He also wants to create new specialty beers, such as traditional Belgian beer and sour beer, for which there is a viable niche market. The sour beer is not clean like the beer he now brews. To produce it, he would require a new brewhouse because the bacteria required to create the lactic acid for sour beer needs more time than in the clean beer process. The advantage of the sour beer is that entirely new

flavors can be created. The inside area is populated by picnic tables which allows plenty of space for hosting parties and wakes, which with the Irish turns out to be a party anyway, and for inviting young lecturers such as Dr. Anna Lepley, who talked about the health benefits of beer in her presentation last month. Plans are also underway to bring in vintage video games, a pool table, two foosball tables, followed by a foosball league. Although food is not available, patrons can bring in food from anywhere, by food delivery or take-out. The pub staff is easy going and super friendly. Art Director and partner, Daniel Torres, is busily preparing for the next ArtWalk June 2nd. Artists are invited to place their works in the pub. Unlike most arrangements where art is shown in a gallery, the artists get to keep all of the proceeds. The advantage to the Devil and the Deep Brewery is that the art community gets to know them and ArtWalk visitors become familiar with their establishment. Located at 2425 Postoffice St. on the southeast corner of Postoffice and 25th Street, The Devil and the Deep Brewery is open Wednesday-Thursday 3-10pm, Friday 3pm-12 midnight, Saturday 12 noon-12 midnight, and Sunday 12 noon-10pm. For more information call (409)220-3313.

This view looks South from below the Buffalo Bayou Bridge at Allen’s Landing toward an old Houston Water Works tank and stacks. “The Life and Times of Charles Goodnight” on Exhibit June 30th-October 22nd Innovator, entrepreneur, conservationist Charles Goodnight left his mark on the West. With his partner, Oliver Loving, he pioneered the Goodnight-Loving cattle trail. He invented one of the earliest food trucks, the chuckwagon, and the survival of the American Bison also owes much to his and Molly Goodnight’s conservation efforts in the Texas Panhandle. “The Life and Times of Charles Goodnight” looks at the story of Goodnight’s life through the lens of contemporary Western and Wildlife artist Lee Cable. Cable’s series of 13 paintings is a conscious balancing act between solid historical research and artistic license. As Cable says, “In the case of Goodnight, much is written, not much is illustrated.” This body of work aims to change that. The paintings are complemented by a display of authentic Charles Goodnight artifacts from institutions across the state.

in Downtown Galveston. For more info events call (409)750-8200 or go to galvestonbookshop.com. Saturday, June 23rd (2-4pm) - “The Cruiser Houston (Images of America)” by Mark Lardas Galveston Bookshop will host a book signing with Mark Lardas who returns with his newest book, a history of the cruiser Houston. The cruiser Houston was the first warship named for the Bayou City, and the ship proved a favorite of the city for which it was named. It was also a favorite of President Franklin D. Roosevelt, who traveled on the Houston no fewer than four times. Houston was twice the flagship of the US Navy’s Asiatic Fleet. In the opening days of World War II, it battled the Imperial Japanese Navy, culminating in its midnight loss at the Battle of Sunda Strait. Mr. Lardas’ book tells the story of this magnificent ship and the city of Houston’s reaction to its namesake’s loss. Mark Lardas is the author of numerous books on maritime, naval, and Texas history including “The Battleship Texas,” a history of the battleship USS Texas. A resident of the Houston area, he has maintained a longtime interest in the cruiser Houston. With generous assistance from the Houston Maritime Museum, the University of Houston, Sam Houston Park, and individuals equally enthralled by the cruiser, he has assembled a fascinating collection of images illustrating the life and death of this storied warship, from the first plans

to build it, until its dramatic end in unequal combat. He also documents the reactions to the ship’s loss and how its memory has been preserved. Copyright 2017, Arcadia Publishing Saturday, June 23rd (2-4pm) - “Texas Style Justice” by Susan P. Baker Galveston Bookshop will host a book signing for local author and retired Texas judge, Susan P. Baker with her latest legal thriller, “Texas Style Justice.” Devastated by divorce and the death of her child, Torie Van Fleet is rebuilding her life around her goal of succeeding in the justice system, and ultimately working her way to the U.S. Supreme Court. Vowing to do whatever it takes, she risks her relationship with her new husband by refusing to bear him a child. Further, she jeopardizes her friendship with her best friend by competing with her for the first major hurdle toward her goal, appointment to the Texas Supreme Court after the sudden death of one of the justices. Not until she realizes what her backers demand of her does she understand what an exorbitant price she must pay to achieve her dream. Will she risk everything, come to terms with her priorities, or does she even have a choice? Susan P. Baker, a retired Texas judge, is the award-winning author of two nonfiction books and seven novels including “Ledbetter Street” (2015) and “Unaware” (2017), all related to the law. As a judge, she dealt with a wide range of cases from murder to divorce, involving both adults and children. Prior to this, she practiced law for nine years and, while in law school, worked as a probation officer. Her experience in the justice system is apparent in her writings. Currently, she has three novels in progress. Susan lives in Galveston. Copyright 2018, Refugio Press

TheEveryBeach Band Starts Again Tuesday beginning June 5th-August

21th, 7-9pm, the Galveston Beach Band will perform a free family-friendly concert opposite Rosenberg Library, 2310 Sealy St., Downtown Galveston. Also, there will be a concert on Sunday, July 3rd to celebrate the holiday! Starting in the 1920’s, the Galveston Beach Band’s free concerts were an important summer Island attraction, often boasting audiences of 2,000 and featured on the newspaper front page. By the 1960’s, the Band had declined and was revitalized, thanks to its core of loyal musicians and then new leader, Frank Incaprera. Fast forward to today and the free concerts continue as much loved as ever. Now a proudly family evening, concerts are a diverse mix of much loved show tunes, big band numbers, and jazz influences. Housed in Sealy Pavilion, concerts are a mixture of family, fun, and summer relaxation. The band’s playlist includes music from Broadway shows, movies, and dance bands. Besides mixing the types of music performed, the band also features a singer and draws from its 18-24 members that form the dance band. This band is a favorite for all ages. Frank Incaprera, age 94, is the driving force behind the Galveston Beach Band. From annual quest for funding, to music selection, conducting, and playing solos, Frank is always front and center stage. He is a man of monumental commitment and under his nearly 50-year leadership, the summer concerts continue to bring pleasure to so many. Presenting family entertainment ranks highly with Incaprera who adds, “I want the children to be at the concerts.” At most concerts, 20-50

children are handed maracas and climb the stage. “It’s fun playing music this way,” said Incaprera. “It’s one of the highlights of my summers still to this day.” The typical concert can include the Hokey-Pokey for kids as well as a parade of flagcarrying children who come up on stage while the national anthem is played. GIB is a family friendly, dog-friendly brewery. Chairs and tables will be set out. on the Austin music scene — laughs and tells you that he “hardly ever takes sideman gigs anymore,” you can take it with a grain of salt. Yes, it’s true he’s made a concerted effort to carve out more time for his own solo career ever since issuing his breakout second studio set, 2016’s “SoulSlide” - and he aims to find even more of that “me time” now with the release of his latest album, “Sleeping Dogs.” For the better part of the last 17 years, ever since he first moved to Texas with nothing to his name but a Geo Prism, $100, seven guitars, and the generous hospitality of Ray and Judy Hubbard, the gifted multi-instrumentalist, Columbus, Ohio native, has proved himself not just being able and willing, but above all worthy of playing with the best of the best. And the reason so many song poets like Hubbard and Joe Ely like having “Plank” at their side is not just because of his prodigious chops on all things stringed (especially those played with a slide), but because of his intuitive knack at knowing when to hold back, always allowing the singer room to land a lyric and go for the proverbial kill. “That’s just part of the skill set I learned very early on: ‘When in doubt, lay out,’” Plankenhorn explains with a chuckle. “That joke about knowing when not to play? It’s true.” And should he find himself second-guessing his conviction on that solo sojourn, well, he’s already written his own anthem to sing his way through the doubt. “When I wrote ‘Sleeping Dogs,’ I got this image of sleeping dogs lying and how I need to let that go,” he explains. “I literally took a lot of things that I’m really bad at, or think I’m really bad at, and told myself, ‘If I sing this for a year or two on tour, it may make me better at these things; maybe I won’t take stuff personally, won’t let things get me down.’ And I thought, ‘Maybe somebody else will hear this song and maybe it will help them, too.’ And I really like that idea. I like the idea of writing songs that have a little moral imperative to them.” Some would call that a sense of purpose. Or, as Hubbard put it best to Plankenhorn way back at the start of his journey, “There’s your proof!” This will be a legendary concert - and a guaranteed sell-out show. Tickets are $20 at prekindle. com. Get them early!
