About The List’s Latest Culinary Experience Spring has finally arrived and the restaurant business is blooming taking root in downtown Bay Shore. Its newest addition, Verde Kitchen and Cocktails, opened its doors this past October. Now in full bloom, the guests of this new, authentic and most anticipated Mexican restaurant are giving rave reviews.
The moment we entered this restaurant we were enamored. The inviting greeting we received, the urban chic décor and the wonderful visuals of the dishes created an immediately noticeable good vibe. The owners Anthony and Andrew Tartaglia, and their Chef Zach Rude are veterans of the restaurant business. Understanding what a dining experience is meant to be, they designed and crafted Verde Kitchen. The three men traveled extensively through Mexico City, Oaxaca, and Puerto Escondido, for weeks to do the ground work of expanding their knowledge of true Mexican culture. The dining experiences included eating and drinking in the most high end restaurants, to local street food, which inspired the trio to bring Long Island the taste of Mexico. Verde, Spanish for green is not only the name of the restaurant but a “green” concept that expands to encompass their everyday business. Anthony told The List, “We grow herbs, peppers and other produce in our 700 square foot greenhouse/ dining room and are able to use those in a lot of our cooking and crafted cocktails, as well. Fresh local and many times, organic ingredients are used in our cooking.” Sticking to the rustic chic trend, the eco-friendly décor is the perfect mix of city in the suburbs. Nearly all of the décor at Verde has been recycled, repurposed and brought back to life. During the rebuild they used primarily reclaimed building materials including old brick, barn wood and lumber. To give you an idea of the imagination that went into this restaurant, you may find yourself seated at a table which was once an old barn door, amongst other creatively used
materials. The 3000 square foot restaurant, softly illuminated by candlelight, offers two dining areas. We arrived around 6pm on a weeknight. The front section, which includes a 29 foot bar, high tables and bar chairs, was lively with patrons sipping on the craft cocktails and casually dining. We chose to sit in the Green house room and took in the picturesque ambiance of the fresh herbs growing. Now that you have a feel about what Verde looks like, it’s time to get hungry. They refer to their food as authentic and new age Mexican cuisine with an emphasis on Mexico City and Oaxacan (wa-ha-ken) style. They offer steak, chicken, pork and seafood dishes, but have many vegetarian options as well. Anthony shared with us that they use masa corn tortillas and specific ingredients that has opened them up to a large health conscience population of foodies. Anthony also expressed that their cocktails are amazing but they’re also approachable. They use a lot of fresh fruits, simple syrups and purées that they make in house, some of which come from their greenhouse. In addition they offer an extensive wine and beer list, the Tartaglia’s aim to please. Our dining experience was perfect from our pleasant and attentive server Alyssa to the delicious meal we ate. Here’s a snapshot of our experience: For our starter we had the guacamole trio, which consists of traditional, chicharron and rajas. The traditional guacamole has onion, tomato, lime and avocado leaf. At Verde, the rajas guacamole contains roasted poblano pepper, pomegranate seeds, pepitas and almonds. My favorite of the three,
chicharron, has chiles, lime, house made chicharrones (deep fried pork fat), and red chorizo oil. It has a kick from the chiles, but just the right balance of cool and hot. Next up, we tried the Mexico City Street Tacos, which are served two on a plate. We shared the pescado tacos, lightly battered local fish (fluke was being served that night), cabbage, avocado, crema, and house-made grapefruit habanero hot sauce, as well as the rajas tacos, which are filled with roasted poblanos, potato, onion, kale, crema, almonds and lime. The pescado taco was light and flaky with a hint of heat and the rajas taco, great for vegetarians, was tasty, filling and spicy. We then delighted in the cerviche del dia, which again featured deliciously fresh, locally caught fluke, along with the zest of fresh citrus (either blood orange, grapefruit, or lemon) and garnish. It was a delicious mélange of clean, crisp flavors and hearty pieces of fish.
Our entrée was the Oaxacan-style carne asada. The marinated skirt steak was cooked medium rare as per Chef Rude’s recommendation. The steak was virtually fork-tender and very flavorful, and was accompanied by charred onions and chiles, fried plantains, avocado relish and toasted garlic rice. Muy delicioso! We can’t wait to come back to try the churro bread pudding, Mexican chocolate cake and the house-made doughnuts with canela crème anglaise, whipped cream and Mexican chocolate sauce. We had a sweet ending and can’t wait for our next dining experience. Our Verdict: Verde is cooking up authentic Mexican food and flavors without GMO’s or steroids and 75% of their menu is gluten-free. Open for lunch & dinner, Happy Hour and Sunday Brunch. Deliveries to the ferries are available for a $25 minimum and they do on and off premise catering. There is something for everyone at Verde Kitchen and Cocktails!

When I was asked by someone from the List magazine to write something in the Talking Back column on the subject of mothers I thought I would give it a shot since it’s an appropriate time. The Talking Back column is from teenagers and young adults who want to express themselves to its older generation. I am now a junior at Marist College and want to write this for all moms. I speak for many of us kids who I am sure feel the same way. You need a mothers love. It often does not get the recognition it deserves. Especially in those earlier years when you are unsure of whom you are but think you know it all. Hearing the voice of your mother in your ear, whether you take it in at
that moment or not, seems to penetrate within your soul. The echoes of a mother’s words help to define you. Don’t give up on us moms. As a young adult now thinking back I would not be who I am today if it wasn’t for my mother’s unconditional love. Mom, you always have my back and my best interest in mind. You are my biggest fan and at times best critic. I just want all the mothers out there to know you are doing a good job. Although at times we expect you to be superheroes we have to remember you too are just people. We know if you could you would move mountains for us but when you can’t well that may be a good thing too.

The admiration letters written and displayed inside a glass bulletin board confirmed my feelings as they had wonderful things to say, as well. One letter in particular from a grown college student wrote how the early days at Chatterbox were some of her fondest memories and how it provided fundamental building blocks that she now appreciates. Also known as garbanzo beans and the main ingredient in hummus, chickpeas have a low glycemic index, which means they won’t raise blood sugar levels significantly. They’re also a source of protein, folate, manganese and fiber, which aids in digestive and colon health.
This true powerhouse is a good source of fiber, vitamins c and k, folate, potassium and calcium. At only 56 calories per cup, Brussel sprouts also contain many phytochemicals, which studies show may reduce the risk of cancer, heart disease, high blood pressure and diabetes.

HUMMUS WITH PITA CHIPS For the Pita Chips
INGREDIENTS • 4 Pitas, cut into quarters • Olive oil, salt, and dried herbs. I like garlic, and oregano and a very small amount of curry DIRECTIONS Preheat the oven to 400 degrees. Lay the pita wedges out on a cookie tray and spray or drizzle them with olive oil- one side is fine. lightly sprinkle with salt and herbs of your choice; do this sparingly, as you don’t want to be overpowering with the taste of the pita. Bake until crispy- approximately 8-10 minutes.
For the Hummus INGREDIENTS • Two 15-ounce cans ceci beans, drained with juice reserved on the side. • 1 large garlic clove • ¼ cup lemon juice- try to use fresh lemon. • 1 heaping teaspoon ground cumin • ⅛ teaspoon curry powder • ¼ cup tahini • ½ cup extra virgin olive oil - you may be inclined to use a little more depending on desired consistency • 1½ teaspoon salt • Smoked Paprika • Fresh Parsley BEETS AND CECI SALAD RECIPE (CHICKPEAS) ON PAGE 30
DIRECTIONS In a food processor, combine the ceci beans, the garlic, lemon juice, tahini, cumin and curry. Pulse it until the mixture is a smooth consistency. Keeping the food processor running on a low setting, add the olive oil slowly, in a steady stream. Add the salt and puree until desired consistency. If you want a thinner result, add some of the reserved liquid from the ceci beans. After you put your hummus into a serving bowl, drizzle a little olive oil on the surface and sprinkle a tiny bit of smoked paprika and chopped parsley on top. GET MOVING. In order to shed a few pounds you need to burn more than you consume. It’s that simple. We have become a society that can accomplish almost anything with the push of a button as well as outsource our dog walking, cleaning, yard work, and even shopping. Our lives of leisure can easily become lives of laziness if we let them. So get moving. Whenever possible, take the stairs, quickly even. Park far away. Put your sneakers on and let the dog walk you. Find a co-worker in your office building and walk briskly for 20 mins. during lunch. Commit to more movement. A body in motion burns more energy. All movement counts! PUMP UP THE VOLUME. Intensity is a must to keep your workout effective. Aim for 30 to 60 mins. of cardio exercise 3 times per week. Walking, running, biking, swimming, and fitness classes all work. During your cardio workout, increase your intensity for 1 to 2 minute intervals, and then back off for a few minutes. Do this your entire workout. Not allowing your body to adapt to a set pace and constantly demanding it to repeatedly perform at increased levels of intensity will enhance your workout burning more energy and boosting your metabolism. Be consistent. Consistency is mandatory unless you are sick, healing, or in need of rest. Honor thy body. RIDE ON THE STRENGTH TRAIN. The quickest, most effective way to build muscle and reshape your body is with resistance. Defining your arms and toning your legs and abs requires weight training. Aerobic exercise burns fat; resistance training helps build muscle. When you gain muscle your body needs more energy to maintain it, thus
giving your metabolism a boost. Your body doesn’t use any energy to maintain fat. Incorporating resistance machines and/or free weights as part of your workout at least 2 to 3 times a week will help get your body ready for tank tops and short shorts. YOU ARE WHAT YOU EAT. I have to say it because it’s true. Make good choices when it comes to meals. Stop eating bagels for breakfast; switch to a healthy hot or cold cereal and a piece of fruit (that goes for your kids as well). Whip up a high-protein fruit smoothie for lunch alongside a slice of whole-grain bread spread with almond or peanut butter on it. The protein will keep you feeling full; beware of carbs for they do just the opposite. Dinners are tough, I know. After working a full day and then running the kids to football, soccer, swimming, piano and homework (see Common Core), who really feels inspired to prepare a healthy, appetizing meal for the family and actually have it ready to eat before bedtime? Dinner in a pinch can be a ready-to-eat rotisserie chicken from the market and some frozen vegetables cooked and thrown over 10-minute boil-inthe-bag brown rice. Do your best to keep it healthy whenever possible and limit the pizza to one night a week. If you are contemplating a weight loss plan, look for one that teaches healthy eating habits based on nutrition and balance. Excess weight comes off at a slow, steady pace and is more likely to stay off. Beware some of the popular fad diets. They can be effective initially but weight regain is not uncommon once “normal” eating resumes. There are many good weight loss plans to choose from; I believe Weight Watchers is still the best at what they do.

DRINK UP ME HEARTIES! Let’s talk about water. It is the single most important thing you put in your body. It acts as your body’s internal coolant, garbage removal service, and nutrient taxi. It is what gives your cells life. The average person needs about 64 oz. of water per day. Your age, health, activity level, and where you live are just a few factors that can influence how much water you need to stay properly hydrated. It is important that water (not juice, coffee or soda) is what you drink. Yes, 64 oz. is a lot to get down in a single day, so start early and dress it up if it helps you get it down. Fill your first 24 oz. cup immediately after you get out of bed and get started on it. Toss in a lemon or lime wedge, some berries or cucumber slices. Float a splash of fruit juice (just a splash!) on top. I love the V-8 Splash fruit juice blends. Proper hydration will help keep your energy levels up and toxin levels down. Consuming water will discourage you from loading up on sugar-laden beverages (empty calories) and help reduce meal portion size because water fills you up. So make the most out of the next two months and commit to making permanent changes for a more fit and healthier you. Make progress your goal, not perfection. We are surrounded by so many beautiful beaches and parks on Long Island. It is one big summertime playground. Don’t get hung up over your bathing suit…just get out and play! Michaela Connors is a fitness instructor at World Gym in Bay Shore and lives on the south shore with her husband and two boys 7 and 9.
Positions Dance Studio Director, Kelly Peckholidt Former student & instructor bought her childhood dance studio In 1991, a young mother took her daughter to Positions Dance Studio for her first ballet lesson. The little girl was timid in class at first but was so excited to put on her tutu and ballet slippers. She absolutely loved dance class, and through the years began to train in more and more dance disciplines. Ballet, however, was her first love. She continued to dance at Positions until she graduated high school, and by then she had made several life long friends in the process. Her college did not have a dance program, but as soon as she could have a car on campus she started taking lessons at a local ballet school to keep up with her passion. A few years later, with a Bachelor’s degree under her belt, Kelly Peckholdt returned to her childhood dance studio as an instructor. In June 2012, as the staff was practicing for the teachers’ recital dance, the then-owner pulled Peckholdt aside and asked her a very important question: Do you want to be the next owner of Positions Dance Studio? Peckholdt immediately began to cry, because she felt as though her dreams had just landed in her lap. She still gets emotional thinking about this moment. After some careful consideration, she bought her childhood dance studio in July 2012 and became the fourth owner of Positions Dance Studio, which was established in 1971. At first, Peckholdt was still working as a high school social studies teacher while running her
new business. Running a business is sometimes a 24/7 job, so two full time jobs began to take their toll. Knowing that the only way to earn a living from the studio would be to expand the space to bring in more people and programs, Peckholdt began looking for a new location in January 2014. She knew that she didn’t want to open up a second location but rather find a larger building, and she knew that she wanted to try to stay in Babylon Village where people had come to know her business for decades. Within weeks, her realtor showed her 264 Deer Park Avenue, Babylon, the location of the old Babylon Paint and Hardware store. As soon as Peckholdt stepped inside, she knew it was the perfect place to continue to build her dream. In August, Positions Dance Studio’s new location opened its doors, offering an even wider array of children’s and teenager’s dance classes and now expanding a once fledgling adult dance and fitness program. The adult program began a couple of years ago as just an Adult Ballet or Zumba class here or there on Sunday mornings, since that was the only time the space was available. During the 2014-2015 season, Positions had nine weekly classes, both in the evenings and on weekends. Classes were at much more convenient times, either in evenings after work or on a weekend morning. Some moms were even able to come to a fitness class and
put their child in a dance class that ran concurrently. Positions hopes to continue to expand its program in the future as interest grows. Adults and children alike immediately see what sets Positions Dance Studio apart as soon as they walk through the door. The studio has a very relaxed, friendly atmosphere that puts anyone at ease. It is nicely decorated, warm, and inviting. The staff is professional, friendly, and non-judgmental. Most of the staff is comprised of people who Peckholdt has known for a long time in the dance industry and knows that they will carry on the studio’s mission statement. Each staff member is highly trained and educated in dance and is truly gifted at what they do. The instructors who teach the adult classes hold multiple fitness certifications and are experienced fitness instructors and personal trainers. Intimidated by the gym atmosphere but looking for a great workout? Try one of Positions’ adult dance or fitness classes. All new students are entitled to one free trial class! Positions Dance Studio currently offers the following dance and fitness classes: Ballet, Jazz/Lyrical, Hip Hop, Tap, Piloxing, Zumba, Sculpt/Stretch, Pilates/Yoga, and Ballet Barre Fitness. All classes are designed for any level of experience, so do not worry if it’s been a while since you last worked out or if you have never danced before!

RECIPE
ROASTED BEETS & CECI BEAN SALAD Fresh and organic are always best, but sometimes we don’t have the time to soak dried beans and roast and peel beets. Most grocery markets carry vacuum packed beets which are great but if you can try roasting fresh beets and fall in love, canned ceci beans (chick peas, garbanzo) are everywhere. Honestly, canned or jarred beets will always do when you have to pull together a side dish in a flash.
How To Roast Beets Trim stems, rinse, rub beets and bottom of roasting pan with canola oil. Put beets in pan on middle rack in 500 degree oven for 30-40 minutes, depending on size. When they’re cool enough to touch, remove skins.
For the Salad INGREDIENTS
• Approximately 15 oz. fresh beets (or vacuum packed- approx. 12 small beets) Cut in half so that they are bite size. • One 15.5 oz can of Ceci beans, drained • 3 Tablespoons extra virgin olive oil • 2 Tablespoons red wine vinegar • ½ teaspoon kosher salt • ¼ teaspoon sugar • 1 teaspoon Litehouse brand dill, or 2 teaspoons finely chopped fresh dill • ⅛ of red onion, very finely chopped • ½ teaspoon finely chopped parsley

DIRECTIONS Put all ingredients in a bowl in the order listed. Gently mix until they are all combined and coating the beets and ceci. Serve and enjoy!
